Summer Fashion

Stephanie Says…

The latest fashion trends from The Bunbury Life’s resident fashion expert...

Add some flamboyancy!

With so many bold ideas appearing on international catwalks for spring and summer, we can expect a full-on season of extreme looks. Have fun with the trends and be prepared to be the centre of attention! Summer just wouldn’t be summer without showing off some flesh and this season it’s the turn of the shoulder. An off-the-shoulder top with a high waisted mid-skirt or pants is a feminine and chic combination. There are plenty of jumpsuits and dresses cut to bare shoulders too and an asymmetrical style will look great for the warm evenings. In contrast, expect to also see statement sleeves this summer. Big and voluminous in sheer fabric, sleeves add fluidity to an outfit whether bunched up to the elbow, asymmetric or bell. Fringing was around in the cooler months and is coming back with a 70’s vibe for summer. In the past, it has created an all-over bohemian look but this summer’s fringing adds a modern edge to simply and elegantly cut jackets, pants, dresses and skirts. Look out for it on bags too for a more subtle way to wear the trend. Any lace pieces you picked up for spring will still be perfectly acceptable for summer. But it’s broderie in structured pieces that will be the hit of the season. It’s geometric and modern while lace can be flowery and delicately pretty. White and black are set to be the favourite for broderie in tops, skirts and dresses but expect to see bright colours too. And when it comes to bright colours, it’s all about orange. There are plenty of brights around but it’s the deep hues of burnt orange through to more vivid tones that will be the colour of choice for pieces this summer. Bags and shoes in tan complement perfectly. For summer beauty, faces get the pared back look so that makeup is natural and appears ‘barely-there’. Highlighters and illuminators do a great job in boosting radiance and if a little colour is required then add blush and balm with sorbet-like orangey hues. Hair should be effortless and perfectly ‘undone’. The major trend for summer is to embrace your own hair type and pull off a natural look without the use of heat styling. A regular conditioning mask is therefore a summer essential! 8

home & garden

Outdoor Living setting and provide an attractive finishing touch on dishes when dining alfresco.

Nothing beats the feeling of lazing in a private alfresco area especially if it’s full of colourful and fragrant plants. What’s more, it’s an easy morning’s project to plant up some pots for summer and an excellent activity to help keep children busy – they can even be in charge of watering duties!

When it comes to choosing the pots, make sure they all have plenty of holes for drainage. Avoid plastic as these pots become far too hot in the sun, leading to the roots of the plants getting damaged. Glazed ceramic and stone pots help to keep the potting mix and root system at a constant temperature and also don’t dry out too quickly. Terracotta pots, on the other hand, can dry out quite quickly so use these for plants needing good drainage. Just remember to water frequently.

The ideal flowers for summer include geraniums, marigolds, miniature dahlias, dwarf bougainvillea, frangipanis, nasturtiums, echinacea and Californian poppies. Go for an explosion of different vibrant colours or pick complementary shades to go with the home’s current outdoor furnishings and decorations.

Place the pots together in groups as this helps to help keep plants cooler as well as increasing humidity. Lightly mulch them and try placing them on saucers of moist sand as this will also keep roots cooler. When it comes to watering, it’s best done when the weather is at its coolest.

Consider incorporating fragrant flowers to add an indulgent resort-style feel to the area for the warm balmy evenings. Sweet gardenias, intense star jasmine, murraya with its orange blossom-like perfume and classic lavender all produce gorgeous scents as well as beautiful flowers. Plus, choose the herbs you plan to use when cooking and plant them up too. These will give a rustic feel to an outdoor table

As the summer goes on, rearrange the pots and add new additions so that your potted garden is constantly changing and evolving. 20

A Sense of Belonging and ConďŹ dence

at Bunbury Cathedral Grammar Primary School many to choose from, including hockey, netball, soccer, basketball, cricket, football, orienteering and cross-country running.

Bunbury Cathedral Grammar’s Primary School is a place where young minds are nurtured and confidence blossoms. Commencing with an enquiry learning approach in Early Learning, students actively contribute to the classroom experience, creating a sense of belonging and confidence in their abilities that continues to grow throughout their schooling.

Confidence and discovery of the outdoors is encouraged through nature play and the camps programme. Founded on the idea of promoting unstructured play in the outdoors, nature play promotes creativity and imagination in students. Provided with large grassed and tree-filled areas to play in, the young students actively engage with the world around them and let their imaginations roam free.

Within the classroom, professional and highly skilled teachers deliver an outstanding academic programme and all students are encouraged to work towards their academic and personal potential. Students enjoy learning from a diverse and exciting range of specialist teachers in Art, French, Sport, Library and Religious Education, extending their learning experience and promoting the discovery of new talents.

The Primary Camps programme commences in Year 1 and aims to enable students to develop their confidence through mental and physical challenges with the support of their peers, teachers and professional instructors. From the challenge of overnight stays without mum and dad to hiking, bike riding, canoeing, abseiling, camping under canvas and skiing, taking part in these activities increases the independence and resilience of each child.

There is something for everyone in the enormous range of co-curricular activities on offer at the school, whether it be joining an After School Club or taking golf or tennis lessons. Sport plays a very important role not only for the health and fitness of students but also in developing positive attitudes that will remain with students for life. All students are encouraged to play a team sport and there are

Learning Languages The benefits for all children

By Mariel Howard,

K-12 Languages Consultant, Swan Christian Education Association

Every child benefits from learning an additional language. The Australian Government recognises this and has included languages as one of the eight mandated learning areas. Not only is learning a new language fun but it also has several benefits for both the individual and society. Learning languages is for all children not just the bright ones. If we look at the whole world, monolingual people are a minority. Many countries in Europe, Asia and Africa expect all students to learn not one but several additional languages during their schooling. Several studies have also shown that learning a second language develops students’ overall literacy skills as well as their command of the English language. Children with more than one language have a better understanding of languages as a system and have better overall literacy skills. When students study languages they have added opportunities to practise literacy skills, such as skimming and scanning text, guessing new words from context and choosing the degree of formality needed. These skills apply to all languages and can be developed in any language context. In recent years, grammar instruction has again become a priority. In language classes, terms like “noun”, “verb”, “subject” and “predicate” are constantly explained and, by comparing and contrasting the sentence structure of the new language with that of English, the grammatical structures of English are highlighted.

Languages have huge cognitive benefits for the learner. Just like music, they engage the brain in new ways, making it work harder and more efficiently. This leads to higher achievement in all learning areas. Learning languages also teaches cultural understanding. Students learn not only cultural practices associated with the language they are learning but understand how people from different countries view the world. More importantly, they become aware of other cultural practices and beliefs. This leads to questions about our identity as Australians, such as who are we, what do we believe in and why? Finally, learning additional languages has wide economic benefits. In most industries, knowing another language is a real bonus and will lead to better employment opportunities. Having multilingual citizens benefits us as a country. Children need a high quality, well-rounded education that best prepares them for the opportunities and challenges of the future. In an increasingly global and multicultural society like Australia, learning languages is a core part of this vision. Geographe Grammar School has languages firmly integrated into its curriculum and offers both French and Indonesian from Kindergarten. Contact the school on 9725 8282 to find out how its language programme can help your child grow to be a global citizen. 24

Buying Property

Why the market is in your favour By Theo Krinos

Our economy may have experienced a few ups and downs of late but the property market has continued to underpin the nation. While the mining boom has come to an end and the global share market has faced difficulties, real estate has continued to give much needed support to our economy. Here are four good reasons why now might be the right time to apply for your first home loan. Owner-occupier lending is gathering strength The latest figures from the Australian Bureau of Statistics show a rise in home loan approvals for owner-occupiers. Between June and July the number of loans granted rose 0.3 per cent in seasonally adjusted terms. Lending to investors is being restricted Lending to investors has slowed, partly due to restrictions introduced recently by APRA. It’s no longer the case that investors are squeezing owner-occupiers out of the lending market. Interest rates are still low With the official cash rate still at 2 per cent, many analysts believe that it will be a while

before rates are significantly increased. This means there are plenty of good deals about for borrowers. Harley Dale, Chief Economist at the Housing Industry Association was recently quoted as saying, “Regardless of whether the interest rate gun stays in the rack or not, super low borrowing costs are here to stay through 2015 and 16.” Some capitals have seen price declines Perth, Darwin and Canberra have all seen year on year falls so for those with their eye on a capital city property, in some areas, prices are becoming more affordable. Play your cards right and this could mean buying a property in a key location now and benefitting from capital growth in the future. Remember, by engaging the services of a qualified mortgage broker you will ensure you are receiving the best available deal in the market. Theo Krinos is Managing Director at Smartline, Bunbury. Located at 32 Stirling Street, he can be contacted on 9791 4177 or by email at tkrinos@smartline.com.au

Claims on Investment Properties Don’t get into hot water By Phil Di Candilo

With interest rates on investor loans moving upwards and pressure on weekly rents to move downwards to help retain quality tenants, it’s a tough time for property investors. So in times like this investors need to ensure they are maximising claims on their investment property at tax time. The cost of repairs and ongoing maintenance to an investment property can be reduced by claiming back these costs when completing an annual tax return. However, before an investor can start to tally deductions, it is necessary to understand the difference between the claiming of repairs, maintenance and capital improvements. Repairs and maintenance Work undertaken to fix damage or the deterioration of a property is defined as repairs. For example, fixing part of a damaged fence. However, work completed to prevent deterioration to a property, such as servicing an air-conditioning system, is defined as maintenance. A deduction for expenses through repairs or maintenance on an investment property can be claimed in full within the current financial year. Capital improvements Improving the condition or value of an item beyond its original state at the time of purchase is defined as a capital improvement. Capital improvements must be depreciated or claimed as capital works deductions over time. Capital improvements are classified as either capital works deductions or plant and equipment. Capital works deductions include structural additions and renovations, such as adding and extending an internal wall, and also include items fixed to the property that cannot be easily removed. Plant and equipment items include removable or

mechanical items, such as carpets, hot water systems and stoves. To determine how expenses on an investment property should be claimed, an investor should consider the following questions:Has the property or item been improved beyond its original condition at the time of purchase? If an item provides something new or changes the character of the original item in any way, it is considered a capital improvement. Was the asset partially replaced or replaced entirely? Partially replacing an item due to damage or wear and tear is classified as repairs and maintenance. However, if an owner decides to replace the entire item to improve the property’s value, it is then considered a capital improvement. If you are about to incur an expense on your property and are unsure of the taxation implications, always consult your accountant. Phil Di Candilo is Director of RSM Bunbury, part of a full service, national accounting group, delivering expert corporate financial and advisory accounting services to clients across diverse industry sectors. BMW X1

All new SUV ups the ante

Who would have thought that just 6 years ago the small luxury SUV market would become such a key battleground for the world’s leading car manufacturers? Back then, it was a market that didn’t exist, that was, of course, until the launch of the Mk1 version of the BMW X1 in 2009. Now, in case you hadn’t noticed, we have the Audi Q3, Mercedes-Benz GLA and Lexus NX plus a few others all clamouring for your attention. With close to three-quarters of a million units sold to date, there is no doubting the X1 has been an unqualified success. So successful was the car on launch, in fact, that BMW was even rushed into creating extra production capacity to keep up with demand. So with the launch of the all new X1, has BMW come up with the goods again?

“a more robust appearance and chiselled front end gives added curb appeal” Visually, there is no denying its X heritage and, although slightly shorter than the outgoing model, a more robust appearance and chiselled front end gives the new X1 added curb appeal and a more commanding presence on the road. Extra height to the car and a raised seating position has also given drivers an improved view of proceedings. Inside, the driver-focused cockpit design, which has become a hallmark of the brand’s models, offers plenty of luxurious touches together with a modern contemporary feel. Standard equipment includes air conditioning,

an audio system with USB and AUX-in sockets, and the iDrive operating system with its 6.5-inch display integrated into the instrument panel. In addition, the Advantage, Sport Line, xLine and M Sport packages offer owners the opportunity to individually spec each car according to taste. Engine-wise, the second generation X1 line-up features a completely new selection of two petrol and three diesel units, ranging from 150

on the road to 231hp and delivering 110kW of power up to a maximum of 170kW. The most powerful engine used by the X1 xDrive25i provides an impressive combination of both performance and economy. With the car racing from 0-100km/h in just 6.5 seconds and up to a top speed of 235km/h, its combined cycle fuel consumption of 6.6L per 100kms represents a significant improvement over the outgoing model. An all new generation has also brought with it a raft of improved safety features. A new addition to the range is the BMW Head-Up Display which, as in the larger X models, projects driving-related information directly onto the windscreen. The new X1 can also be

specified with the marque’s Stop & Go function, Lane Departure Warning system, Traffic Jam Assistant, Collision Warning and Pedestrian Warning systems. Fans of the original X1 needn’t have worried. Now available in both front-wheel drive and all-wheel drive, the second generation X1 is an altogether better car than the one it has replaced on just about every level. Faster, more efficient, roomier and better looking, it has laid down an imposing marker for competitors to follow. Triumph Rocket X

Legendary cruiser gets stunning special edition

It’s now over a decade since the arrival of the much loved Rocket III. This classic cruiser from Triumph, launched to almost complete universal acclaim, is called the Rocket for a very good reason. Fitted with the largest engine of any available production bike, its liquid-cooled 2294cc, DOHC, in-line 3 cylinder motor delivers an impressive163Nm of torque at just 2750rpm. This year, to celebrate the ten year anniversary of one of the British manufacturer’s most popular bikes, Triumph has unveiled a special edition of the Rocket III. Named the Rocket X, this limited edition machine (just 500 are being released) is essentially a souped-up version of the Rocket III, featuring a number of unique stylised details not available on the standard bike. In short, it’s guaranteed to get diehard Rocket III fans swooning over it. With each bike featuring its own badging and unique number on its side panel, the finish of the Rocket X includes high-gloss custom paint,

black wheels with a hand-painted silver pinstripe and components, such as the handlebars, mirrors and brake levers, also finished in black. The bike additionally features an eye-catching custom race stripe running from one fender to the other that creates a stylish contrast to the black paintwork. Using the services of a custom paint specialist, a brushed aluminium effect was created before a further application of around 6 layers of lacquer and then a final polishing took place to create the desired look. To further distinguish the special edition Rocket X, Triumph has also installed a mini black fly screen over the chrome-edged instruments, and the large dual exhaust pipes are finished off with a coating of high temperature resistant paint. For further information and pricing on the Triumph Rocket X, visit exclusive Bunbury dealer Millard Marine and Motorcycle Centre at 5 Sandridge Road or call 9721 3033.

Mercedes-Benz GLC

Mid-sized SUV set to steal the show

With Audi and BMW having enjoyed huge success with their mid-sized SUV’s it has clearly only been a matter of time before Mercedes-Benz muscled in on this lucrative sector. Of course, the German luxury car manufacturer did launch a left hand drive model, the GLK, back in 2008 but with its rivals catering for all markets, the car was never fully competing on a level playing field. Enter the Mercedes-Benz, GLC, the long-awaited trump card. Using the same MRA (Modular Rear Architecture) platform as

the hugely successful C-Class, it also takes much of its design influences from its sedan sibling. In fact, around 70 per cent of the components found on the C-Class are used on the GLC. So with the car based on one of Mercedes-Benz’s most successful ever launches, whilst adding a liberal dose of versatility and practicality, it’s no wonder the GLC has got tongues wagging.

“the GLC’s visual appeal takes design in this sector to a whole new level” Gone are the days of dull looking SUVs and the GLC’s visual appeal takes design in this sector to a whole new level. Sporting coupé-style looks, the car’s extra-long wheel base, the longest in its class, allows for a lower stance and a class-leading drag coefficient for good measure. The effortless style also flows through into the cabin, again borrowing much of the interior and dashboard design from the C-Class. Drivers and passengers alike will also appreciate the luxurious, adjustable front seats, extra head and legroom in the rear, large boot space and easy access through its wide, chunky doors.

Currently, there’s a choice of 3 engine options for prospective GLC buyers each fitted with the new 9G-tronic 9-speed auto gearbox and all-wheel drive system. The GLC220d entry model features Mercedes Benz’s highly refined 2.1 litre twin-turbo diesel engine and delivers 125kkW of power and 400Nm of torque. Accelerating from 0-100km/h in just over 8 seconds it also claims an impressive combined cycle fuel economy of 5 litres per 100kms. For diesel fans after a touch more power, the GLC250d will be the preferred option. Speeding from 0-100km/h in just 7.6 seconds, this more aggressive vehicle delivers an impressive 500Nm of torque. Finally, completing the line-up down under is the GLC250 petrol. Using the same 2.0 litre turbo engine as the A-Class and C-Class, acceleration from 0-100km/h is even quicker at 7.3 seconds while fuel consumption remains remarkably low at 6.5 litres per 100kms. With a list of standard features as long as your

arm, there are plenty of toys to keep even the most fastidious of buyers happy. The entry level 220d features 19-inch alloys, keyless start, satellite navigation, electric front seats, a 360-degree view camera and side-steps whereas all versions come with 9 airbags and blind spot monitoring. The 250 petrol also gets 20-inch alloys, leather seats, tinted glass and the excellent Driver Assistance Package Plus pack featuring adaptive cruise control and steering assist. A game-changing SUV, the GLC might be a late entry into the mid-sized SUV market but it has certainly been worth the wait. Seemingly offering the complete package of looks, comfort, safety and performance, it will be a hard act to beat. sport & recreation term effects and core values that are instilled into the minds of those who compete. I have never once believed that succeeding is about the ribbon, medal or trophy. Instead, it’s the journey it represents, the people met, the challenges overcome and the self-discovery and friendships made. If you want to compete, you will need to believe in what you do and work hard but it’s also vital to love what you do. Surround yourself with good people who give honest feedback and focus on improving one thing at a time. The motto to remember is, ‘Each day, just a little more than the day before.’ A regular, sustained training programme is essential. No one excels at anything by bringing a half-hearted approach to a task. It breaks my heart to see children brought to practice, the week or even the day before an event, having previously not trained. Expectation and last minute rehearsals simply create more stress and anxiety. Conversely, it is the athletes who have set goals and worked hard towards these goals who are the ones that succeed. “That was so amazing, I’m so pleased with myself, I just skated and gave my best and it was so much fun!” was a quote from one my most successful skaters ever, Allira Hanczakowski, at the 2015 World Championships in Colombia. It’s also important to appreciate that if a young athlete is taught that winning is all that winners do, then dealing with adversity and the inevitable off days will be considerably harder. Making mistakes is part of life, whether you are a sportsperson or a businessperson but dealing with them is the key. By learning from them, we deal with the issue, improve from the experience and move forward towards our goals. Susan Brooks is Head Coach and the owner of The Rink, Bunbury. Located at Gibbons Road, Davenport, for further information on inline skating, call 9725 6999 or visit www.therink.com.au for general skating and class times.

A Coach’s Philosophy

By Susan Brooks

As Head Coach at The Rink, Bunbury’s very own inline skating centre, I regularly see how our coaches, officials, competitors, not forgetting friends and parents of competitors, all work together to create a positive culture in the pursuit of excellence. Our focus may just be on the sport of inline or roller skating but our coaching philosophy can, of course, be applied to all aspects of life, not just other sports. A key fundamental belief of mine is that by learning to compete we learn more about ourselves. True learning occurs through a process of hard and sustained commitment and a true understanding of each challenge, gain and loss along the way. The words we hear society use to label people, such as ‘winner’, ‘loser’, ‘smart’ or ‘dumb’ ignore the long

A Healthcare Guide For Puppies From purchase to 16 weeks of age By Braden Collins

A while ago at my practice, I saw a dog with parvovirus. This heartbreaking disease, with a high death rate, is incredibly painful for dogs yet very preventable. I went home and spoke to my wife about the dog and about my frustration that it hadn’t been vaccinated. Her response to this was, “Well, I wouldn’t have known that a puppy needed vaccinating if you hadn’t told me.” This got me thinking. How many dogs out there are either incorrectly vaccinated or not vaccinated at all simply because their owners are unaware of what needs to be done? How many have fleas, worms or heartworm because no-one has informed owners how to prevent these problems? In the hope of easing unnecessary suffering amongst our dog community, here is our recommended healthcare schedule for puppies. Vaccinations: Vaccinations should be done at 6 to 8 weeks, 10 to 46

animal health

12 weeks and at 14 to 16 weeks of age. These treatments will include vaccinations against parvovirus, distemper and hepatitis during all three visits, and normally canine cough at the 10 to 12 week visit. Worming: Puppies should be wormed fortnightly from 2 weeks of age to 8 weeks of age, then monthly until 6 months of age. After this, we recommend 3 monthly worming treatments. Flea Prevention: We recommend starting monthly flea prevention treatments from 8 weeks of age. If you find fleas on your puppy before 8 weeks of age, then please call us to discuss which products are safe for very young puppies. Heartworm: We use a long acting heartworm injection which is first given at 12 weeks of age and

then again at 6 months of age. After that, it is given when the dog comes in for its annual health check. My goal is to try to educate owners on how to correctly care for their pets. To this end, I have written a free 40 page guide to dog ownership that covers everything from choosing the right dog through to vaccinations, parasite control, training, local kennels, council registration and first aid for the pet. Copies of the guide are available at www.bunburyvets.com.au/ new-dog-guide/ and I hope you will find it both useful and informative. Fractional Radio Frequency A new technology in skin rejuvenation By Jeanette Elliott

What is Fractional Radio Frequency (FRF) and how does it work? A highly effective, cutting-edge treatment, FRF repairs damaged skin and reduces the signs of skin ageing caused by over exposure to the sun. Radio frequency electrical energy has been used in clinical and medical applications for more than 75 years, however, today it is playing an increasingly important role in the area of aesthetics and appearance medicine.

moderate wrinkles and in superficial skin discolouration. Skin texture will also become smoother and more elastic due to the collagen stimulation and the production of healthier skin cells.

FRF allows the removal of damaged skin cells and the resurfacing of the superficial skin layers. It treats mild to moderate wrinkles, post acne scarring and other pigment and textural irregularities. Simultaneously, volumetric deep dermal heating is also applied to the skin’s collagen fibres causing an immediate and long term skin tightening. This combined treatment effectively treats superficial areas and deeper layers of the skin for an optimal result.

What can be expected after the treatment and will it be uncomfortable? Topical anaesthesia is applied 45 minutes prior to treatment to reduce discomfort. Many patients feel a warm, prickly sensation as the energy enters the skin and a pink to red sunburn appearance with mild inflammation should be expected, lasting up to 48 hours. This is a common reaction and aftercare instructions are given following the treatments to ensure correct home care.

How many treatments are required? The typical treatment protocol is 3 treatments, 4 to 6 weeks apart, with the total number of required treatment sessions dependent upon the condition of the skin being treated.

During the treatment, FRF creates a number of microscopic columns (70-100 microns in diameter). This is necessary for the controlled dermal heating to elicit a wound response in order to cause tightening and collagen deposition. The process is non-ablative, although it still allows for dermal penetration, resulting in considerably less downtime and recovery and fewer risks and complications than ablative procedures.

The Alma Lasers Pixel Fractional Radio Frequency medical device is the device of choice at Jeanette Elliott Dermal Therapy and treatment packages are available now. Jeanette Elliott is a dermal clinician who has many years’ experience in helping patients to understand their skin and the conditions that may affect it, providing realistic expectations of the results that can be achieved. She is a member of both the Australian Society of Dermal Clinicians and the Aesthetics Practitioners Advisory Network and is actively involved in the dermal therapy professional community via her role as a student assessor within the The Australasian Academy of Cosmetic Dermal Science.

Who should be treated with Fractional RF? Treatment is safe and effective for all skin types, successfully treating acne scarring, wrinkles and pigmentation while improving overall skin texture. A thorough consultation is necessary to deem the appropriate parameters for each treatment.

Located at the Greater Bunbury Medical Centre, call her on 9791 7938 for a free no obligation consultation.

What results can be expected? Expect a reduction in post acne scarring, in mild to 48

Tokyo Jacks

Once in a while, on our travels sampling food around the south west of WA, we discover something quite special. We might sample a unique dish, receive exemplary service, discover a great wine or perhaps visit a new restaurant with a singular vision to do something a bit different. On a recent visit to Tokyo Jacks, I felt immediately compelled to add its name to this prized list. It’s often said that Japanese cuisine is difficult to produce and extremely time-consuming to get right. There may be some truth in that but with its food steeped in the cultures and traditions of a society that dates back centuries, it is certainly not always easy to find authentic Japanese cuisine in WA. Perhaps then one of the biggest compliments I can pay Tokyo Jacks is that on arriving for lunch, even before I had tasted the food, I felt like I had walked into a little piece of Japan. The stylish fitout with its clean lines, neutral colours and welcoming ambience could have been transported directly from Tokyo. The open kitchen area, where Head Chef Kim San works feverishly away, also adds another welcome dimension. Kim has been recruited from Sydney having worked at some of the city’s top Japanese restaurants where he specialised in sashimi and sushi dishes as well as various grilled, pan-fried and tempura dishes. So, onto the food itself! We began by trying one of the restaurant’s most popular starters, Beef Tataki. Wow! With its seared Black Angus eye fillet, garlic chips, shallot and onions this is a dish to be savoured. Served with a soy-dipping sauce, it’s the perfect way of sampling beef fillet Japanese-style. Next, we tried Crispy Chicken Karaage, marinated deep-fried chicken with mayo; and Gyoza, pork mince with vegetables and a ponzu dipping sauce. Again,

the dishes were simply delicious with the freshness of the ingredients and the skill of the chef evident in every mouthful. Time for some sushi. Our choice was the Double Salmon roll and the Fiery Katsu roll with its chicken, avocado, parmesan cheese, chilli, mustard, mayo and grilled tomato filling. Now, I can assure you that if you are partial to a bit of sushi, it really doesn’t get much better than this. The combination of flavours and freshness of the ingredients, not forgetting the immaculate presentation, were quite sensational. Try some sushi at Tokyo Jacks and I can assure you that you will never buy it from anywhere else again. With a range of sharing plates on offer and with many of the dishes designed to share amongst friends, the whole concept at Tokyo Jacks cleverly encourages diners to sample, experience and unearth the best of Japanese food. Signature dishes, such as Binningup White Tempura and Miso Cream Scallops, have been having diners continuously coming back for more and with a liquor license applied for, the restaurant soon hopes to be able to offer a wide range of Japanese beers and Sake. Having enjoyed a truly memorable experience, updated seasonal menus will give us a good excuse to visit again soon! Words by Mark Boden

Who’s New? Market Eating House

Now open in Victoria Street, Market Eating House is the latest addition to the fast-growing eating out scene in Bunbury. Run by husband and wife team Bec and Brenton Pyke, the couple has extensive experience in the hospitality industry and their new venture is set to add a unique and exciting dimension to the city’s food scene. Having originally grown up in Bunbury, Brenton first met Bec while part of the launch team for Anduluz Bar and Tapas, one of Perth CBD’s first small bars. Here, Brenton achieved considerable acclaim for his tapas menu before being recruited to be Head Chef of The Little Press in Melbourne, a restaurant owned by MasterChef judge George Calombaris. While in Melbourne, Bec also worked at Cumulus Inc., one of Melbourne’s most awarded restaurants owned by leading restaurateur Andrew McConnell. On returning to WA, the couple put their knowledge and skill to the test by managing Habitué in North Fremantle where they created a unique style of food and service.

With bucket loads of passion and a clear vision for their new venture, the couple is determined to create a welcoming venue where their values and way of life are showcased through their food, service and hospitality. With the focus on sharing-style dishes, the menu will be strongly influenced by the seasons whilst demonstrating the depth and quality of local produce. Brenton’s experience in working on wood-fired grills has led to him having one specially designed for the restaurant, and the open-plan floor space with its accessible kitchen, stylish bar and rustic vibe has created a distinctive charm. Signature dishes at Market Eating House include Whole Slow Roasted Shoulder of Lamb, a 600gm Sirloin, dry aged on the bone for 45 days and served with house made mustard and condiments and Wood Roasted Hasselback Potatoes with lardo, rosemary and sour cream. Restaurant Review Nino’s Fish Bar and Café

For those planning a trip to Mandurah this summer, a visit to the Mandurah Ocean Marina is always a must. With a growing selection of cafés and boutiques, the marina is also home to a number of waterside restaurants. In this edition of The Bunbury Life, we paid a visit to one of the most popular, Nino’s Fish Bar and Café. Located in Dolphin Quay and with plenty of seating both inside and outside on the decking, Nino’s is perfectly positioned to take in the marina views. It is also one of the most visited eateries in this award-winning development. Hardly surprising when you take a glance at the extensive menu! For fish lovers, there’s a huge choice of dishes and with daily seafood specials there is also always something new to try. The day we visited, the specials included Red Emperor served with chips and salad, Vietnamese Nam Jin, and a fantastic grilled Baldchin Groper served with a fresh broccoli salad and cashew dressing. The restaurant also serves a number of premium fish dishes, featuring different varieties of snapper, barramundi, dory, trevally and Tasmanian salmon, and there are plenty of classic mains to try, including Chilli Mussels and the popular Seafood Platters. Nino’s also serves up a selection of family packs, perfect to eat in or takeaway. The largest of these, the Deluxe Pack, includes a delicious selection of prawns, scallops, white fish, squid rings, chicken nuggets, dim sims, pineapple fritters, chips and salad. Diners can also tuck into a selection of burgers. Try the Fish Burger, the Steak Burger or the Nino’s Burger, a tasty beef patty served with egg, bacon, tomato, lettuce, onion relish and aioli sauce. Or, why not try one of Nino’s

fabulous daily salad specials? New on the menu this summer is a Thai Prawn Salad and a Chicken Salad served with feta and sundried tomato. Vegetarians are also able to tuck into a range of dishes, including Vegetable Spring Rolls and the recently introduced Crumbed Macaroni and Cheese Triangles. Kids have their own separate menu. We tried the restaurant’s classic Fish and Chips and thoroughly enjoyed the beautifully cooked Hake. All dishes at Nino’s are cooked in rice bran oil to add a healthy touch and the lightness of the batter was a real standout. Catering for a wide range of dietary requirements, chips are also served up gluten-free with all dishes and other glutenfree dishes are available on request. Don’t miss this gem of a restaurant on your travels north of Bunbury this summer. Bunbury Coffee

The home of great coffee

A love of quality coffee and a vibrant coffee culture continues to see demand for the bean flourish in WA and, in Bunbury, a local business is leading the way in helping meet the increasing demand. Located on Beach Road, Bunbury Coffee has been supplying the local retail and commercial coffee industry for over 15 years and is passionate about providing both quality coffee and the world’s leading brands. Owned and operated by Helen Hester, the company also includes The Barista Room on Victoria Street, the training division of the business, and Korong Vending, the vending machine arm of the business, servicing Bunbury and the towns of Harvey and Collie to the north and Busselton to the south. For anything coffee related, Bunbury Coffee is the place to visit. Apart from enjoying a selection of takeaway coffees, teas, soft drinks, milkshakes, ice coffees and cakes, visitors to the store can also purchase the finest coffee blends and beans together with the industry’s leading coffee makers. Find the highest quality

blends from Bonissimo, Yahava, Segafredo and Vittoria together with a huge range of coffee machines from leading brands, including Saeco and Gaggia for the domestic market and Sab, Wega, Boema, Nuova Simonelli and San Marco for the commercial market. Plus, shoppers can also choose from a wide selection of leaf teas, essences and syrups, browse the store’s kitchenware collection that includes glassware, mugs and teapots and purchase a range of tea and coffee accessories. As suppliers of machines to many of the local cafés, the chances are if you have enjoyed a coffee in one of Bunbury’s many coffee shops, then it was probably made using a machine purchased at Bunbury Coffee. The company also repairs and services all major domestic and commercial brands and delivers its range of products Australia-wide. Visit Bunbury Coffee at Unit 3, 119 Beach Road, discover a coffee lovers’ haven and breathe in that unmistakeable aroma that fills the air. After all, life’s too short to drink bad coffee! 56

Listen to the Words

same task a third time… dear me, you just haven’t been listening and we have a problem. Needless to say, this manner of teaching is thought to be very hard now in an age when we are told that we have to engage people to listen and learn. Make them feel good about themselves while they are learning. Be mindful of the tone in which we use our words of instruction. I’m not sure what the meaning of “engage” means in this context because surely if someone wants to learn then they would naturally be engaged in the process already. Anyway back to the “actions speak louder than words” case. Some years ago, a wise 18 year old employee, who was not highly rated academically but was a skilled and talented employee nonethe-less, commented that, “When you start a new job, you just have to watch and learn.” And that’s just what she did, this very downto-earth kid who didn’t get caught up in over-analysing the words of the world. One busy day in the café, she noticed an elderly lady trying to get salt out of the salt grinder by shaking it. Never one to waste time on too many words, Kylie said firmly as she raced

By Annie Malone

Words are a form of expression and I love them. Lots of letters strung together make words, language and generally help us humans communicate in varying degrees. With the advancement of society and communication modes, words are used increasingly more to motivate, educate and inspire. This is a wonderful thing. So, whilst I love the use of words, unfortunately, more often than not, I’m finding the power of them is diminishing. When I was growing up…not so long ago, what you said is what you meant. We were taught to use words in the correct context and it was important to choose your words wisely. So here is my dilemma. I’m observing a trend of word overload. A lot of “blah, blah, blah” without cutting to the chase. All talk and no action as my mother would say. Also increasingly, words aren’t even given the dignity of being spelt correctly. Simply thrown onto the page in the general direction of the reader with the hope that he or she will get the general gist. And correct grammar, well, don’t get me started on that one! Perhaps words aren’t the culprit here, more that the discipline of understanding words is now not as important. As a person who works in hospitality and spends a lot of time training staff, I have found that too many words often get in the way of learning. The reason being is I think we are losing the art of listening to information, digesting it and then acting on it. We are taught to question things. Well sometimes, you just have to do. “Actions speak louder than words” is a saying that often comes to mind. I work by the training rule of three. Which means, you get told and shown a task once, you can be told and shown the task a second time but if you need to be shown and told the 58

past the lady, “Just screw it!” It was only when she was in the kitchen thinking about the lady’s startled expression that she thought perhaps she could have used a few more words. Love that girl, straight to the point. So what I’m alluding to, in this age of mass communication where we can be bombarded with words in many forms, is let’s get back to the basics. Say what you mean and mean what you say. Give your words the respect they deserve. Treasure words for the gems that they are. Use them wisely with commitment and proper spelling. Thank you for reading mine. Over and out. Annie Malone is the proprietor of The Natural Temptation Café, 47 Stephen Street.

Geographe Gems By Jake Atkinson

Working within the Geographe region, I thought that I had a pretty good grasp on who’s who of the local producers. However, recently I discovered not one but two quality labels, both from the Ferguson Valley and both produced by small, family run wineries. Crooked Brook Wines and Iron Cloud (formerly Pepperilly Estate) had slipped under the radar but both producers offer a sublime array of red and whites. Crooked Brook Wines’ 2014 Chardonnay is a subtle but deep example of the quality of chardonnay fruit grown in the Ferguson Valley. Aromatics of peach, nectarine and grapefruit zest are evident and a generous palate comes into play from the workings of yeast lees and oak. A fine ginger bread and fresh acidity balances the finish of the wine. The 2014 Iron Cloud Rock of Solitude Chardonnay is perfect for those that enjoy a rich toasty classic style of chardonnay. The nose is laced with cooked pork fat, hazelnut and pear, rounding nicely into a ripe and broad palate. Ripe golden delicious apple flavours are a pleasant surprise together with a complex layer of caramel, cardamom and brioche. Iron Cloud’s 2015 Sauvignon Blanc Semillon is also a great pick for this summer. Bright, fresh and youthful, it has crisp herbal aromatics with a light touch of Kiwi fruit and lemon. The palate is bright citrus laden and clean whilst the racy acidity has enough kick to quench the most parched of summer thirsts! The Geographe Wine Region Welcome to another update on the news and happenings around the Geographe wine region. The 2015 ANZ Geographe Wine Show recently took place at Bunbury Regional Entertainment Centre where a total of 17 gold medals were awarded to local wineries at a well-attended gala dinner. The panel of judges included Glenn Goodall, Winemaker at Xanadu Wines, Peter Bradbeer from Liquor Barons, Brigitte Rodda, Assistant Winemaker at Willow Bridge Estate and Sommelier Michael Hartley. The 2014 Winter Merlot, described as an “Outstanding Wine” and the 2015 Summer Merlot, described as an “Extremely Good Wine”, both received silver medals. However, the star of the show was the 2015 Foreigner SSB which was awarded a gold medal and described as an “Extraordinary Wine.” Further news from the winery is that this summer also sees the release of an exciting new innovation – a wine sorbet! Working closely with a gourmet gelato maker in Perth, owner Julie Hutton said, “We are all extremely excited about this product, however, it will be an adult’s only sorbet as it is definitely alcoholic! Visitors will be able to enjoy individual servings of the sorbet in our garden and it will be a refreshing and tasty addition to our cellar door experience.” Bonking Frog Wines is also introducing a stylish new gift line for wine lovers. Visitors will now be able to purchase its Paterson Reserve Merlot packaged in a stunning timber box. The boxes are all handmade in WA. ... cont. pg 64

Patience and attention to detail is the cornerstone of any good wine and these same principles have been applied to creating the new cellar door at Green Door Wines. Now open to the public from 11am to 4.30pm Friday to Sunday, owners Kath and Ash Keefe have been working hard to create a unique cellar door experience to showcase their wines. With stunning views and, of course, its famous green door, the cellar door also features a simple fresh menu, featuring local ingredients where possible, designed to accompany its award-winning wines. The winery has also created a different twist on sampling wines. Visit the cellar door to find out more. New boys are given a mentor – an older student they can turn to for advice. Each of the three boarding houses has a House Mother and live-in House Master, also looking out for the boys’ wellbeing.

A Liberating Education within an Inclusive Community are two of the key touchstones of a Catholic education in the Edmund Rice tradition. They’re on display everyday in our boarding houses. To learn more call 9450 0600 or visit aquinas.wa.edu.au
