WINTER FASHION

The latest fashion trends from The Bunbury Life’s resident fashion expert.

With so many trends hitting the stores this season, dressing up for the cold couldn’t be more fun. Intriguing, romantic and feminine, Victorian-inspired pieces are just as much in demand this winter as they were in the autumn. The trend involves high necklines, ruffles, velvet, lace and bell sleeves for shirts, tops and waisted dresses. Even the classic white shirt – a wardrobe staple for any season – has undergone exquisite transformations with lace and statement sleeves. As well as white, the Victoriana trend favours black, burgundy and pale blush, and the footwear of choice – laced up boots. Denim, another classic, has also experienced major makeovers in preparation for a cold snap. There are different washes available and new cropped cuts for jeans that have straight legs or flares, and hems that are raw and frayed. And it’s clear that the seventies vibe is still around with the revival of the denim skirt. It now comes high-waisted in a maxi length as well as in shorter subtle A-line styles that sit either above or below the knee. A throwback to the nineties, look out for beautiful sleepwear in the form of silk slip dresses and pyjama-style pieces. It’s a trend that has been stolen from spring and summer runways but by adding a

leather jacket, wrap coat or trench, these luxurious delicates are perfectly wearable in our mild WA winters. As for coats, fashion always demands a leather jacket and this season’s offerings are reinvented with interesting punky zips, rivets, studs and even a little embroidery. The bomber – another fashion mainstay – has been redesigned in soft fabrics that also feature embroidery as well as zip detailing or a print. And, usually saved for functionality on the ski slopes, the quilted puffa jacket is making a welcome appearance on the high streets this winter in lots of bright colours. There are also longer length coats around

in the cocoon, classic wrap and military styles. These will be primarily seen in navy, deep rust and burgundy but there are other colour options too, such as mustard, red and pastels. For footwear, there are currently plenty of flats to choose from, for example, sneakers, loafers and

brogues. However, the footwear of the season will be the boot. Overthe-knee boots, whether block-heel or stiletto, pointy toe or almond, are set to be hugely popular and work perfectly with an A-line skirt or under a long jacket.

ARTGEO C U LT U R A L C O M P L E X W H E R E A R T A N D H E R I TA G E M E E T THE COMPLEX OF BUILDINGS now known as ArtGeo once played a vital role in Busselton’s history and growth as a port. Today, it’s a creative hub for the visual and performing arts, featuring ArtGeo Gallery, the Courthouse and Old Post Office Tea Rooms, Stables Studios, Acting-Up Academy of Performing Arts, Weld Repertory Theatre, Busselton Art Society, Busselton Woodturners and a series of life-size bronze sculptures commemorating the town’s settlement in 1834. Step back in time

According to the Australian Heritage Commission, the old Courthouse has considerable significance for its contribution to the social and economic history of Busselton. With its earliest structures dating from 1860–61, the judicial site contains some of the oldest buildings in Busselton. For these reasons, the Courthouse was classified by the National Trust in 1972, assessed for the National Estate in 1983 and listed

on the State Heritage Register in 1993. The early buildings include a Bond Store, courtroom and nine gaol cells where prisoners were detained for misdemeanours, like being drunk and disorderly, petty theft or vagrancy. One cell with bars and shackles is a stark reminder of how Aboriginal people were treated in the past. At one time, a tram-line linked the Bond Store with Busselton Jetty so that imported goods, like tobacco, beer, wine, salt, rice and canvas, could be dispatched from ship to store in horse-drawn wagons. Nowadays, the Bond Store is used as a retail outlet for South West arts and crafts. In 1897, a new courtroom was constructed. The brick and timber building designed by WA’s principle

Investment Property Tax Breaks Don’t miss out on your entitlements By Theo Krinos

C

orrectly claiming deductions related to an investment property portfolio is an essential part of property investing. For would-be property investors, it’s also imperative to know exactly which items can be claimed for and to maximise these entitlements. Recently released figures by the Australian Tax Office (ATO) for the 2012-13 tax year suggest, however, that many property investors are failing to claim depreciation correctly on their properties. This could mean many thousands of dollars of tax entitlements are going unclaimed each year. An analysis of these figures has been undertaken by BMT Tax Depreciation and the firm is confident that many investors, including a number of Self-Managed Super Fund (SMSF) property investors, are missing out.

The analysis has shown that of all investors just over one million received an average capital works deduction of $2113, while almost two million investors claimed an average deduction of $1179 for plant and equipment depreciation. This made the total average depreciation claim made by investors who claimed both in the 201213 year to be $3292. When compared to the statistics released by the ATO for 2011-12, there was an increase of almost 100,000 in the total number of investors claiming deductions on rental properties. However, despite this, there was very little change in the average deductions claimed for capital works or plant and equipment assets. It also appears that many of the investors that could be missing out are the new breed of SMSF property investors, many of which may not be entirely aware of the depreciation

benefits that can be claimed. It is also likely that many of these investors have not got an up to date depreciation schedule in place. Many investors may also not be aware that, as a rule, investing in newer properties often allows for a large depreciation claim. This can make purchasing a nearnew house or apartment potentially more worthwhile, in a taxation sense, than an established home, at least for the first five years or so of ownership. For example, a brand new residential home valued at $500,000 could potentially provide a landlord with cumulative depreciation claims of $40,000 over a five-year period.

Cloud ACCOUNTING ...and year-end planning By PHIL DI CANDILO

I

t’s now eighteen months since I first wrote about cloud accounting in The Bunbury Life and, while it wasn’t new then, at the time there was a lot of publicity about the benefits of moving bookkeeping functions onto the cloud. As accountants, our core business is not to get involved in bookkeeping but increasingly we are becoming more and more involved in this process. Accounting firms are now gearing up to take on more of this type of work and, through the easy availability of data, it has enabled us to be more competitive in this space. We can process data without the visitation costs and, through the utilisation of junior staff, we can keep our rates at bookkeeper rates. This then leaves senior accountants to deal with the data once entered and help analyse what it means for businesses. This is a shift in how accountants now do business. Rather than operating in the traditional way that we have been accustomed to, we can now meet business owners and discuss what is actually happening in the business right now. This is very important in today’s economic climate.

profitability is expected. For those that qualify as a small business entity, an immediate write-off is allowed for capital purchases under $20,000. With the large number of vacant properties and the increasing number of commercial precincts, it’s also a time for a business to consider whether it is located in the best area. Would relocation provide an opportunity to freshen up the business by locating to a more prominent position, or perhaps rents could be reduced? Does the business have the right mix of employees and are leave provisions under control? A good rule of thumb is to not allow employees to have more than one year’s equivalence of annual leave accrued and, if certain staff are in long service leave territory, push to have this used within two years of it being accrued. Employee leave accrual is a real expense and it can add up to a significant amount if not monitored. There is no point in letting it sit as a business liability if the capacity is there to allow staff to go on leave. It may well save possible redundancies if work picks up in the meantime.

We are heading towards the end of another financial year and there will be plenty that needs discussing with your accountant before 30th June. Items to consider might include a possible variation of your quarterly PAYG instalments if reduced

write this article having just returned from the 2016 State Championships in Perth, and what a weekend it was! I am delighted to announce that of the 20 competitors from Bunbury who took part, all 20 have been selected to represent the WA state team in the national championships in Victoria being held during the first week of July. This is a fantastic result for all concerned and gives our centre and all who work and train here a tremendous boost. The sport of artistic roller skating continues to grow and its benefits are well known; a fact that was recently highlighted again to me by the parent of a regular skater. She wrote that one of her friends had asked why she was paying so much money to send her kids skating. Her reply to her friend was that she wasn’t actually paying for the sport she was paying for her kids to learn how to be disciplined, to take care of their bodies, to work with others and to be good team mates, to make and accomplish goals, to deal with disappointment by working harder to achieve the grade, to make life-long friendships, to be active and not sit around in front of a screen all day long, and to appreciate that to make it in your chosen sport, you have to put in hours and hours of practice, i.e., success doesn’t happen overnight. In other words, she wasn’t paying for a sport; she was paying for the opportunities skating provides and developing attributes that will serve her kids well throughout their lives. She ended by saying that so far she thought it had been a great investment! Mercedes-Benz C-Class Coupé

German giants deliver a masterpiece

I

t’s now almost two years since the launch of the stylish C-Class sedan and with the car flying out of dealerships all around the country, there’s never been any doubt about its huge popularity. Setting a benchmark within the mid-size luxury sedan market, its combination of performance and economy, together with its strong visual appeal, has clearly give the luxury German car manufacturer the recent edge over its rivals. So, with the C-Class sedan continuing to be a huge hit with the car-buying public, anticipation has been slowly building to a frenzy for the coupé variant. Yes, for those buyers who prefer the sportier-looking incarnation of the class, there has been the traditionally slightly longer wait for the 2-door model, as is the case with all Mercedes-Benz coupés. But boy, has the wait been worth it! Take one look at the new C-Class coupé and you will be captivated. This stunning vehicle looks sensational from any angle with its sweeping, aero-dynamic lines, poised front end and beautifully moulded rear. Longer than the outgoing coupé and riding lower than the sedan, it’s not only a massive step up from the previous model, it’s indisputably a game changer. But it’s not just its looks that will wow buyers. Thanks to its new aluminium body and lightweight suspension system, performance-wise it knocks spots off the outgoing model. Available with five engine choices, the entry level C200 and C300 both come paired with 7G-Tronic transmission

This propels the car from 0-100 km/h in a mind-blowing 3.9 seconds and, for those brave enough to give it a try, it reaches a top speed of 290 km/h. Phew! Despite all of these impressive numbers, there’s no compromise on the coupé’s economy ratings. Starting with the C200, with its browser beating consumption of 6.0 litres per 100kms, the C250 diesel manages to consume just 4.4 litres per 100kms whereas the C63S still manages to achieve a combined cycle of 8.7 litres per 100kms. All models pass the latest European emission regulations and their efficiency optimised powertrains use up to 20 per cent less fuel

than the previous model. Standard features on the C-Class coupé include LED headlights, electric front seats, satnav, parallel and reverse parking assistance and blind spot assist. Premium models add extra software, 19-inch wheels, adaptive cruise control, active lane assist and full leather. With nine airbags as standard and an array of cameras, including rear view and overhead view, the car also has a lane departure warning system and the very latest early crash avoidance technology, including a fatigue-detection system to monitor steering behaviour. With its exceptional finish, sophisticated ride and perfect balance between performance and economy, it’s going to be a mighty hard act to beat.

Refinement personified

uxury, refinement and unbridled comfort; we all know what to expect from BMW’s flagship model. However, the launch of a new 7 Series has always been equally as much about the new and the unexpected. Over the years, this luxury sedan has been at the forefront of the very latest motoring technology, showcasing a number of new motoring firsts. ABS, onboard computers, Satnav and electric cruise control all first saw the light of day on the 7 Series before filtering down through the range. So what can buyers expect from the all new, sixth edition of the 7 Series? Well, as expected, plenty of new technology. In fact, according to BMW, the car comes with no less than 13

Luxurious touches and clever features abound on the new 7 Series and the car’s new smart key is another impressive addition. Fully chargeable and featuring an LCD display, the screen includes swipe functionality, flicking from one page to the next, alerting the driver


to a range of notifications. It can even set the climate controls to remotely heat or cool the car so that the cabin is at the perfect temperature before driving. New additional technology in the cabin includes a touch screen function on the iDrive operating system, a 3D sensor that allows for interaction through predefined hand movements and a removable 7-inch tablet computer integrated into the centre armrest or rear console to control comfort, infotainment and communications functions. Not surprisingly for a model of this stature and importance, the list of safety features on the 7 Series is long. Rear collision prevention, lane change warning, steering and lane control assist together with the standard Driving Assistant Plus are just some of the many features available. BMW Selective Beam are also fitted as standard on all models and on the 750i and 750Li, anti-dazzle laserlight technology that doubles the beam range from 300 to 600 metres is available for the first time since its world premiere on the BMW i8. HOME SCHOOLING Classroom vs Lounge Room By Louise Clark

I

t’s a fact that the concept of teaching started off at home. However, over time, as populations grew, it became easier and more sensible for a few adults to teach large groups of children. The notion of school had begun. So the responsibility for educating children moved from the parents over to people specifically trained for the job – teachers. Parents could get on with their own lives while their children were off their hands, learning all the necessary knowledge, skills, values and traditions at school. However, over time, education started to go full circle. Some parents started to doubt whether school was an effective learning environment for their children. They felt it was too rigid and too based on rote learning. Thinking they could do a better job if their children came home to be taught, for some, it was back to home-schooling. Home-schooling started off in earnest in the 1970’s, and most home educators worked with their local school boards to ensure home education plans were in line with those of the schools. Then and today, home-schooling parents are generally keen to allow children to follow their interests rather than stick rigidly to a formal curriculum. This is, of course, one of the main advantages of homeschooling; parents can control the pedagogical content. Other perceived advantages of home-schooling are more practical, such as to avoid bullying or to control the standard of teaching. Going to school in the past may well have involved too much rote and passive learning. But what about today’s schooling? Current thinking in education supports active learning within real life situations, curiosity, engagement and enjoyment. It supports playing, cooperative learning, digital learning, developing life skills, community interaction and sport. Students 46 EDUCATION & TRAINING

have access to the workplace from small business professionals through to major corporations, and there are partnerships with universities and schools overseas. Can home-schooling provide all this? It’s a tall order for just one lone parent and also for home-schooling communities. However, like-minded parents working together may offer a solution by devising learning opportunities collaboratively and sharing out the teaching among themselves. This may give their children a chance to access a variety of experiences. I’m not convinced. I believe that what is important in a child’s education isn’t just about getting the curriculum right. Let me explain. A group of school students working together is a tiny community that changes every day. These tiny communities belong to class communities, which belong to the year group – another community within the whole school community. Being at school is full of a variety of social experiences that allow children to learn more than the pedagogical outcomes. They learn how to accept and get on with others, no matter what their ability, background or culture. This major life skill is something that home-schooled children, in their small and stagnant groups and structured extra-curricular clubs, have less opportunity to learn. Education has come a long way both at school and in homeschooling settings too but it will always be a work in progress. Education is absolutely about ‘what’ children learn – not just knowledge and skills but values, traditions and communities too. And that’s exactly why where they learn is so important. n the continuous search to find new treatments that defy all the rules, clients regularly ask me if there are any new dermal therapy treatments available. Perhaps a laser treatment or a peel treatment that will magically take 10 years of their appearance - with no downtime! Or, perhaps a skin tightening treatment that will make facelifts obsolete? Of course, we are all looking for the holy grail of aesthetic procedures. Over the past decade or so, there has been a great deal of new technology released, often claiming to better previous technologies. Therapists can often get caught up in the excitement only to find at a later date that this new technology is no better than before. Marketing often drives these new releases due to a period of stagnation in the market. It’s an effective way to keep the consumer interested. Looking back, there’s no doubt that my industry has come a long way but there have been very few revolutionary changes in both clinical aesthetics and medical aesthetics. Instead, we have gradually evolved into what we do today. For me, the biggest change has been in the formal education now available for professionals working in this field. We have access to the best and most up to date evidence-based treatments and modalities together with topical nutritional information. However, I believe it is far more important for the therapist to focus on what is important, i.e., the patient experience and the outcome, rather than focus on the technology. We need to use our technology as a tool and not be a slave to it. After all, a good photographer should focus on taking good pictures, not just buy the latest technology for the sake of it. Using evidence-based dermal therapies in combination with formal clinical-based training (specific to the industry) while keeping skills and knowledge up to-date will bring the required results not the technology alone. Treatments also need to be based on clinical evidence backed by science, published in reputable medical journals. If you are currently considering contacting a dermal therapist, here are five traits that I would consider essential:-

1. GENUINENESS AND HONESTY

Establishing a rapport with your therapist is imperative. It’s also important to feel that the therapist has your interests at heart at all times.

2. SENSITIVITY TO THE PATIENT’S NEEDS

A therapist should be aware of the vulnerability of certain clients when discussing skin health and appearance-related issues.

3. AN EYE FOR DETAIL

An experienced dermal therapist should be able to determine what is healthy and functioning well and what isn’t.

4. FORMAL TRAINING

A therapist should possess the proper skills, formal training and knowledge to perform the treatment safely and effectively.

5. GOOD COMMUNICATION SKILLS

A therapist should be able to correctly explain a particular procedure or treatment as well as its aftereffects and outcomes. They should also be aware of and explain the risks inherent with any treatment. B U L L D O G S A N D B R E AT H I N G PROBLEMS

ver the last few years, I have seen a large increase in the number of British and French bulldogs visiting our clinics. Classed as brachycephalic dogs, a word with Greek origins that describes an animal with a skull shorter than typical for its species, anyone who has ever met one of these dogs will instantly understand why they are so popular. These great little characters possess an extremely friendly nature and always seem to be in a good mood. There is also a theory that their short faces and big eyes make them look almost humanlike, which, in turn, triggers a strong emotional response in people. However, unfortunately, the very thing that makes their faces so cute is also the thing that creates a lot of problems. When the face of a dog is bred to be shorter, the tissues in the nose and throat are compressed into a smaller space and this can create a serious breathing problem called Brachycephalic Airway Syndrome. The main things we see with Brachycephalic Airway Syndrome are smaller nostrils, a long soft palate (the fleshy bit at the back of the throat) and laryngeal problems. All these issues combine to make it very hard for these dogs to breathe normally and almost impossible for them to effectively cool themselves 50 ANIMAL HEALTH

by panting. Some dogs we have seen have needed surgery at only a few months old to allow them to breathe comfortably. We also see a lot of issues with the skin in these dogs, particularly in the skin folds around the face. This leads to uncomfortable eye problems as their eyelids often struggle to properly protect their large eyes. For those considering a British or French bulldog for a pet, I would always recommend detailed research is undertaken. Try and visit the parent dogs to ensure that they are breathing well and have healthy skin. I would also encourage contacting breeders who breed them with a slightly longer nose than normal as this reduces the risk of breathing problems.

Once the new puppy arrives home, book an appointment with a vet within the first 48 hours to check for any pre-existing health problems. Also, take out pet insurance on the puppy as many of these problems can be difficult and expensive to fix. Bulldogs are great little dogs and owning them can be an absolute pleasure. However, breeding for such extreme characteristics has caused a number of serious health issues. Owners that already have a bulldog that has some breathing problems should have it checked by a vet as soon as possible. Early treatment of breathing problems gives a much better outcome and quality of life for the dog.

Run by Craig Lyons, one of a growing number of young Bunbury restaurateurs, the idea for the business came about during a period of extensive overseas travel. Having visited a number of different countries, immersing himself in a range of different cultures, Craig had a vision to bring something new and fresh to Bunbury, taking influences from the different continents and cuisine experienced. With a passion for great tasting coffee, The Townhouse

sources its beans from West Perth-based boutique roaster Mano a Mano and is currently the exclusive stockist in the south west for the brand. Specialising in traceable coffees of the highest quality, Mano a Mano has been training staff at the Townhouse to get the very best out of its beans and has even hand delivered batches to Bunbury. The result has been spectacularly good coffee and lots of happy customers. The unique and highly creative menu also has a strong focus on sourcing fresh local produce and both the breakfast and lunch menu are regularly updated with new imaginative dishes. Arriving for lunch, we tried the Steak Sandwich served with caramelised onions, mixed leaves, homemade tomato relish, bacon, beetroot and hand cut chips. A favourite choice for diners, this well presented plate is a must-try lunchtime indulgence. With the crunch of the fresh greens combining perfectly with the fabulous caramelised onion, relish and tender steak, we thoroughly enjoyed this classic dish. Part of the brand new winter menu now available, it’s one of a number of tempting options. Another new dish to catch our eye was the Buddha Bowl. This warm and healthy salad is served with spinach leaves, sweet potatoes, broccolini, Moroccan spiced chickpeas, roasted garlic and roasted onions with either rice or quinoa. Maybe next time! And, on the subject of new dishes, a new addition to the breakfast menu will be worth the trip alone. Check out the French Toast served with thymeinfused clotted cream, mixed berries, maple syrup and spiced walnuts. Or there is always the café’s signature breakfast dish - Smashed Avocado, Feta and Poached Eggs with lime and sea salt on Yallingup sourdough bread. Wow! With its stylish, contemporary décor, friendly service and fantastic coffee, it’s no surprise that The Townhouse is fast becoming one of Bunbury’s most talked about eateries. DRIVING TO WORK on our well-made bitumen roads into a town that has shops and offices that provide all types of services, I often reflect that this country has a lot going for it. We have running water at the turn of a tap, lights at the flick of a switch and roadside rubbish collections, which are full of useable items that we deem as last year’s trends that need to be replaced by this year’s trends! It’s budget time as I write this, and on the radio talkbacks I hear people complaining about how much more the government should be doing for us. “What’s in this budget for me?” many people are asking. Sounds like the Me revolution to me. We sometimes forget to embrace how lucky we are that we actually have a government, whichever party it is, that provides all the things that we take for granted. We complain about tax rates and fees but forget to look at how many services we get for our money. So, I think this a good time for me to be embarking on my annual pilgrimage to the Gibb River Bike Challenge. Here, a group of three hundred or so riders partake in five days of eating dust and enduring corrugations for a worthwhile charity. No handouts, no tax rebates for getting fitter and healthier, no reward except the joy of doing what we can for a cause. The ride begins in Derby and ends some 700kms later at El Questro Station. Travelling with my number one coach and husband, one and the same person, the Natural Temptation Café duo are part of a group that will be raising money for this year’s charity, Sirens of Silence. In the past, it has been other equally worthwhile charities, such as RFDS and the Kyle Andrews Foundation, which provides respite support for families of children undergoing cancer treatment. support our triple zero heroes. It is concerned about the increase in depression and suicide within the WA ambulance service and has recognised that a broader safety network is required to provide help for all emergency personnel within Australia. Now, what I love about this group is that in the true spirit of selflessness, Lyn and Ian Sinclair, both paramedics themselves, made this charity happen through their own initiatives. Some people see a need and just get on their bikes and literally pedal with purpose until they get it rolling. Before they knew it they had a whole peloton behind them in the Gibb River Bike Challenge family. When I spend time with people like this, my faith in humanity is restored. I am reminded that, essentially, most people are keen to lend a hand, if given the chance, for no personal gain. It’s comforting to the soul to know that the art and joy of giving is not yet lost. Yep, sometimes it’s not about you or I ……. it’s about us.


WHO’S NEW? THREE RIVERS BREWING COMPANY a small, family-owned microbrewery has recently opened its doors in Mandurah and, after just a few months in operation, has quickly attracted a loyal and increasingly large following. Run by Mark Rivers and Trina Youchak, Three Rivers Brewing Company takes its name not only from the family name itself but also from the three rivers of the Peel region; the Serpentine, Murray and Harvey. Adding to the significance of the name, the city of Pittsburgh in the USA where Trina grew up is nicknamed the Three Rivers City. A qualified Environmental Scientist with a PhD in Catchment Science, Mark is a former home brewer who, having won a number of amateur awards (including the James Squire Trophy for Champion Amateur Brewer at the 2014 Perth Royal Beer Show), decided to pursue a commercial brewing career. The sales and marketing side of the business is carried out by Trina and the business operates out of a unit on Harlem Road in the suburb of Greenfields, Mandurah. With a total of eight standard beers now being produced, plus an occasional seasonal specialty beer, the philosophy behind the business is simple. Three Rivers Brewing Company believes the general public has had enough of mass-produced poor quality beer and to address this, they produce great-tasting, traditional-

style beers from the finest available ingredients. Using just water, malt, hops and yeast, the awardwinning beers are unfiltered and contain no additives, preservatives, colours or sugar and all are brewed to the strict German beer purity law, the Reinheitsgebot. Plus, some beers require extra ingredients, such as coriander or citrus, and these too are of the finest quality. Featuring an American-style malt-driven stout, a classic ESB-style English bitter and German influenced Kölsch, further beers in the range include a Belgian-style white beer and a traditional brown ale affectionately known as The Duck’s Nuts. Many of the brewery’s beers are now available around Mandurah and stockists can also be found from Perth to Bunbury and many places in between. The brewery has also recently announced the opening of its cellar door, which is open for tastings and retail sales only on Friday and Saturday from 12pm to 6pm. Winter Recipes

Chicken and Chorizo Casserole A hearty casserole – surely everyone’s idea of perfect, home-cooked comfort food! This recipe uses the Spanish sausage chorizo, which, with its earthy robust spiciness, takes the dish to a whole new level of deliciousness. Serves 4-6

Ingredients 200g chorizo, sliced 1 red onion, chopped 1 whole chicken, jointed 400g new potatoes, halved 1 small punnet cherry tomatoes

250ml white wine 600ml chicken stock 2 tbsp tomato purée 2 tbsp chopped parsley freshly ground black pepper

Method Place the chorizo in a large flameproof casserole dish and fry, without oil, over a medium heat until it starts to crisp and its oil is released. Remove from the dish. Add the onion and fry gently in the chorizo oil for 5 minutes until it softens. Add the chicken and stir to coat it in the oily onion mixture. Brown the chicken on all sides. Return the chorizo to the dish and add the potatoes and the tomatoes. Stir in the white wine, stock, tomato purée, parsley, and black pepper. Bring the liquid to the boil and then place the lid on top. Reduce the heat to its lowest. Cook for 45 minutes or until the chicken is cooked through and the potatoes are tender.

Sweet Potato and Blue Cheese Soup

The richness of this indulgent soup belies its simple ingredients and method. Serve it up straight away or freeze in portions for quick go-to lunches.

Ingredients 1 tbsp olive oil 1 leek, chopped 2 sweet potatoes, peeled and cubed 1½ litres vegetable stock

salt and freshly ground black pepper 150g blue cheese, crumbled

Method Heat the oil in a large saucepan. Add the leek and cook until softened. Add the sweet potato and stock and bring to the boil. At his stage, taste and season with salt and pepper, if necessary, but remember that the blue cheese adds saltiness too. Turn down the heat to low, cover the pan and simmer for 10-15 minutes or until the sweet potato is tender. Blend with a hand blender for a smooth consistency. Pour into bowls and serve with a little blue cheese crumbled on the top. Next time, try this soup with pumpkin instead of sweet potato, and swap the blue cheese for feta. 56 FOOD & WINE

elcome to our latest update on the news and happenings around the Geographe wine region. The days are getting shorter and winter is well and truly here but Barton Jones Wines is offering the perfect antidote. On Saturday June 18th, the Donnybrook-based winery is staging a special Winter Solstice Fire Feast from 6pm. Shelter from the cold amongst friends and enjoy a seasonally-inspired spread as part of an exciting night of sumptuous food, delicious wines and fiery entertainment. The evening begins with a welcome drink in the cosy cellar door before guests sit down for a five-course meal developed by local chefs Beck and Daryn from On The Pass. Limited tickets are available at $95 per person. Throughout the winter months, Barton Jones Wines is also continuing to offer a range of vineyard platters showcasing local produce, designed to complement the wines available through the cellar door. A range of hearty homemade soups have also been added to the

menu. And, finally, the winery is delighted to announce that it is now exporting a selection of its wines to the UK with the first delivery available for sale in June. Be sure to tell friends and relatives! Bonking Frog Wines recently got in touch to share the news that Andrew Frazer from Six Two Three Zero has painted a mural on the winery’s cellar door wall. A well-known local artist, Andrew is the driving force behind ReDiscover Bunbury, the annual street art festival that showcases new and established Australian and international artists through the painting of exterior murals on the streets of Bunbury’s CBD. “I have never looked at a plain wall the same way since I was first exposed to the possibilities through ReDiscover. So, the long garden wall bordering our cellar door seemed the perfect place for an art project. I love Andrew’s style and find his murals have a touch of whimsy which really appeals to me. Our wall is not completely finished but already I’ve fallen in love with the result. Andrew and I discussed the project and a range of possibilities were suggested. Together we

I am sure visitors to the cellar door will be captured by the creativity and fun of the project,” explained winery owner, Julie Hutton. Ferguson Valley winery Green Door Wines has recently released its new autumn menu at the cellar door. Warm up with a range of fabulous dishes, including a Spanish Style Chicken Casserole served on a bed of cous cous with roasted cauliflower and pine nuts, Pulled Pork Sliders with an Apple Slaw served with a side of crisps or try the Garlic, Paprika and Lemon Marinated Lamb Cutlets served with a warm potato salad. Yum! The winery has also announced the release of its 2016 Rosé and Late Picked Verdelho and the 2016 Fiano is also now available for sale.

Mandalay Road Estate, located at Glen Mervyn, has recently been awarded a four and a half star rating for its 2014 Durif by Winestate magazine. This little known variety has proved extremely popular with customers and is excellent with meat dishes. Also known as Petit Syrah, Durif was developed in the 1870’s by Dr Durif, a French nurseryman who crossed the Syrah grape with the Peloursin variety to create the resulting grape named after him. Durif was common in the southern French regions of Languedoc, Provence and Vin de Pays although it is rarely seen today. Dr Durif was experimenting with grapes that had natural resistance to powdery mildew, however, the new material formed very tight bunches, did not perform well in its native France and is now rarely grown there due to disease pressure. It is still, however, a popular variety in California, widely blended into a number of red wines and, today, a number of wineries are producing Durif as a varietal in its own right, creating quite a resurgence in the popularity of the wine. The Rutherglen region in Victoria is well known for its Durif and the variety is being grown successfully in other Australian regions. The wines made from Durif are usually firm, full-flavoured wines, rich in tannin. Depending on the style that the winemaker chooses, the wines can vary from soft and short lived to robust and flavoursome and are able to age for a decade or longer. Durif wines are always more enjoyable when served with hearty foods, such as roast beef, stews and full-flavoured, mature cheeses. Mandalay Road Durif is at the robust and 60 FOOD & WINE

flavoursome end of the Durif spectrum. Drinking well now, it will age spectacularly! Exciting news from Donnybrook winery Oakway Estate is that Gourmet Traveller WINE magazine has recently named the winery as Geographe’s Best Small Cellar Door. In addition to the award-winning wines available, the winery is also now offering a range of beers on tap with the idea to rotate the choice of beers depending on the season. Currently, the choice includes a pale ale, an amber ale and a lager. Oakway Estate has also announced the next date for its popular Long Table Lazy Lunch as Sunday August 21st. Pétanque at Whicher Ridge Wines

Chapman Hill-based winery Whicher Ridge Wines has a new attraction for visitors - the game of Pétanque. The winery has built two gravelled Pétanque playing areas, one large enough for nine playing areas (pistes) in a fenced paddock to the west of the winery and a single Pétanque piste located adjacent to the winery building. The Pétanque pistes are open 5 days a week from Thursday to Monday from 10am to 5pm. Pétanque is a form of bowls, or boules, where hollow metal balls are thrown as close as possible to a small wooden ball, which is the jack, or chochonnet. The name Pétanque is derived from a French phrase meaning ‘feet fixed’ or ‘feet planted on the ground’ as the game requires the player to throw with their feet together inside a 25 cm circle with both feet on the ground. The game is normally played on hard dirt or gravel but can easily be played on any surface. A truly inclusive outdoor game, Pétanque is one of the fastest growing participant sports in the world and the game is closely associated with wineries and cellar doors in other wine growing regions both throughout Australia and in Europe. Originating in the Provence region of France, this relaxing and highly social game is best enjoyed with a glass of wine in hand. With sets of balls available for visitors to use, owners Neil and Cathy will be only too happy to run through the rules of the game while giving a quick lesson.

Fifteen years ago while holidaying in Spain, my husband David and I were in the final stages of getting ready to plant our own vineyard in the Preston Valley. However, as we sampled the fantastic local wine with the stunning vineyards of Rioja stretched out before us, we began to question the choice of grapes we intended to use. All set to plant Merlot and Shiraz, our visit to Spain inspired us to do something different. After researching our climate, we realised that our farm could be the perfect place to grow Tempranillo and Graciano, the two main varieties used to make Rioja wine. David had already discovered his love of Portuguese wines from earlier travels and that led us to source Touriga Nacional, Tinta Cao, Bastardo and Sousao. And that’s how Mazza Wines came to grow alternative wine varieties. The Australian Alternative Varieties Wine Show classes an alternative wine variety as any type of grape that is not considered mainstream or widely planted. Believe it or not there are actually around one and a half thousand varieties of wine grapes grown in Australia, although we usually see the same ones over and over again in bottle shops and on restaurant menus. This is slowly starting to change. Many wine producers are embracing the opportunity to experiment with the hundreds of different grape varieties available to them by choosing vines more suited to their local climates and soils. Australian wine producers are free to grow any variety of grapes anywhere unlike their

European counterparts, who are bound by strict rules of their appellation, or wine region, which governs which grapes can be grown and how wines must be produced. We also have a new generation of wine makers who are better travelled than ever, who have completed many vintages overseas and have brought their grape growing and wine making discoveries back home with them along with a passion to experiment further. One of the better known alternative varieties in Australia is the Spanish red grape Tempranillo, which is becoming increasingly popular. The Geographe Region is recognised as an area that can consistently produce excellent quality Tempranillo. The Geographe Wine Show now also has a well-established awards category for highlighting the alternative varieties coming out of its own region and other parts of Australia. Our region is predominantly made up of small boutique wine growers. Small producers are an adventurous lot, often willing to try something new and different. Our wine is very personal. Most of us live at our vineyards and if we are producing an alternative style of wine there will be usually a story behind it, often revolving around a passion to produce something unique. So don’t be intimidated next time you see a variety that you don’t know or that you are unsure how to pronounce. Ask about it. Give it a try. It might be your next favourite wine. FOOD & WINE 65

It’s time to bring out the winter reds and warm the soul! If there is one thing that the Geographe does well, right across the board from Harvey in the North to the Whicher Ranges in the South, it is a gutsy hearty red. With a broad range of styles and flavours for the picking and choosing, here are a couple of wines that will be on my consumption shortlist this cold season. First up is a release from Talisman Wines of the Ferguson Valley. Its 2011 Cabernet Sauvignon Malbec is a perfect testament to show the potential and reward of laying down a classy red for a little while. The wine shows fragrant black currant aromas, cigar box and char roasted capsicum. The palate is as seamless as a velvet glove, with a fine amalgamation of textures and flavours.

It saddens me to report that this winery along with quite a few other producers in the Harvey and Myalup area lost its 2016 vintage to the massive bush fires at the end of last year. The smoke was so thick and present that there was no question that smoke taint was going to be an issue for Fifth Estate. However, its latest release, the 2014 Shiraz, is an absolute cracker! Rich, bold and ripe plums and cake spice jump from the glass, with a palate of brooding red fruits and star anise and a long lingering, yet smooth finish. This wine has serious drinkability now and like the Talisman offering, with a little time in the cellar, will reward for years to come.
