The latest fashion trends from The Bunbury Life’s resident fashion expert.

Keeping our cool whilst remaining stylish during our hot Aussie summers can be challenging – but certainly not unachievable.

Bare shoulders

Attention is fully on the shoulder this summer so there is no excuse not to indulge in some blatant skin baring. This versatile trend is incredibly feminine and flattering to wear and there are plenty of pieces featuring either cut outs or completely off the shoulder styles. Plus, with hemlines veering towards mid to long for skirts and dresses, showing off a bare shoulder or two is a less daring way to show off a bit of skin for the more modest among us. For daytime casual, look out for shoulder grazing tops in white cotton or pale blue chambray. Details that take a top to a fresher summer level are delicate pinstripes, a shirred and frilled yoke, or a statement sleeve with a ruffled or tied cuff, cute flare or billowy fullness. Soft silk and lace are perfect for evening off the shoulder pieces. Colours that work well are blush, black and navy.

Midi dress

Easy to wear and available to suit every kind of body shape, these dresses are essential for surviving soaring summer temperatures. Again, keep with the shoulder theme and wear an off the shoulder midi in a senorita style or go for a playful slip dress. These are 8

beautiful for evenings too, especially with a little lace detailing. Add a metallic accessory to bling up a midi dress, like an iridescent clutch, oversized shoulder brushing earrings or beautiful arm-wear.

Swimwear

When it comes to swimwear, there is a wide variety of one-piece styles to choose from with clever and imaginative cut outs. These designs will not only suit different body shapes but will mean that baring some flesh will be more flattering than covering up completely. They’re also perfect when teamed with a pair of shorts, pants or a midi skirt when moving on from the beach for a casual lunch or drinks. Stripes and monochrome are always in fashion but this summer, there are beautiful tropical prints as well as sporty pieces too. Take time to consider what already suits you rather than opting for swimwear in the most on-trend design or colour. In other words, don’t go for a plunging neckline if there isn’t one hanging in the wardrobe and go for a block colour if prints are not your normal style.

Colouring The Home

ot brave enough to step outside the neutral comfort zone? Using colour doesn’t have to feel overwhelming. Getting the colour palette right throughout the home can be a difficult and time-consuming project. Committing to the latest in-vogue shades can, in turn, leave a home looking dated and out of fashion quicker than expected. But playing it safe and resorting to the same neutral tone everywhere can also make rooms feel cold and boring. 20 HOME

Strong bright yellow walls, for example, will appear garish and dazzling in sunny rooms so either tone the colour down with a pastel or paint the walls in a less showy colour and save the strong shade for accessories. Adding a stylish chair, piece of crockery, clock or cushions in a vibrant yellow is all that’s needed to bring interior spaces to life. Currently, there is a clear trend influenced by Nordic and Scandinavian interior design ideas with the focus on functionality, excellent craftsmanship and subtle elegance. Muted natural colours are the shades of choice, particularly when paired with saturated dark blues. Walls in stone and soft grey-beige tones are a perfect backdrop for inky blue accents. There will also be tones of neutrals working together, such as shades of 22 HOME

beige or the palest of champagne pink, and this adds a touch of welcome warmth to a home. For more impact, selected walls in deep blue-greens, khaki or dark blue will be ideal for showcasing framed black and white artwork. Or add shots of colour with pieces of furniture and accessories. The year ahead will certainly bring plenty of new colourful opportunities for the home. But if going bold still feels too daunting, try concentrating on painting around two-thirds of the wall space with a neutral shade. Then, use a darker or lighter tone of the neutral shade for features, such as an alcove, indented wall or skirting board, and accessorise with bursts of yellow, deep green or blue.

New store now open in Bunbury

ocated on the corner of Albert Road and Strickland Street, Freedom Bunbury is the first WA franchised store to be owned and operated by south west locals. Having opened its doors in May, it is also the first Freedom franchise in over fifteen years. Summer collections are now in store and include Bayside Luxe, a collection of furniture and accessories inspired by cloudless skies and endless days by the sea, Intrepid Modernist, stylish homewares ranging from both graphic to organic and simple to detailed, and Nostalgic Revival, mid-century-style modern pieces that draw inspiration from the cool vibes of yesteryear. Aside from its beautiful furnishings and décor, Freedom Bunbury has already established a strong connection with the local community. Each quarter, its Community Matters programme supports three local charities or not-for-profit groups. sborne Park-based Mataka Stone is one of Western Australia’s leading suppliers of dry stone wall cladding and natural stone pavers. Supplying Perth and greater WA, the business works primarily with travertine pavers, a highly durable stone that was extremely popular in the heyday of the Roman Empire. Celebrating fifteen years in business this year, Mataka Stone is run by founder Gary Neylan, who stumbled upon stone manufacturing in Malaysia while on a surfing holiday in 2001. The initial inception of the business proved to be anything but conventional as Gary explains. “During my surfing holiday, I decided to look at a map of Malaysia and caught a bus to some stone quarries. After speaking to the factory owners, I negotiated a price and began importing containers of the local marble into the Sydney auctions. Next, after a chance meeting with an Iranian stone importer, I swapped my attention to concentrating on importing travertine from Iran into my hometown, Perth,” says Gary. “My growing business then led me to Southern China to look at the feasibility of manufacturing stone baths and basins. There, I met a lady who became my interpreter and we travelled to the outer areas of Beijing to buy some wall cladding. However, two days later she ran away with her boyfriend, leaving me stranded in a hotel. Unfortunately, no-one spoke English in the hotel or the area so, very quickly, I had to learn how to order local food and local beer. I also had problems getting the locals to understand me in the town’s launderette, which was not helped by my attempts at explaining myself with various hand movements. I think they thought I was insane! This situation went on for another four days before I was rescued by a guy who spoke no English. He just handed a mobile phone to me with a lady on the other end, who said, in perfect English, that she would meet me there in a couple of hours. I then ended up working with her company for many years!” “These days, things are certainly less complicated with my suppliers as I use a number of respected companies from Italy, Iran, Turkey and China.” Often referred to as travertine limestone or travertine marble, travertine is technically neither. A terrestrial sedimentary rock from Italy, travertine has been used in construction since Ancient Roman times and is responsible for some of the world’s most historical buildings. Both durable and long lasting, it is easy to repair and keep clean and doesn’t absorb heat, making it an ideal choice for outdoor paving, indoor flooring and pool areas. It’s available in a variety of different colours, including white, cream, grey or coral red. unbury skater Andrew Beattie is definitely one to watch. A product of The Rink and Coach Susan Brooks, at just 14 years old he recently won two gold medals and a silver at the 2016 Oceania Championships, having won six medals at the 2016 Australian National Skating Championships in Victoria in July. The Bunbury Life caught up for a chat with this future star of the sport. How long have you been skating and what prompted you to start? I came to a birthday party at The Rink just over five years ago and was immediately hooked. At first, I had some trouble mastering the skills but I managed to gradually get better with regular lessons and training. What do you enjoy most about skating? There’s plenty to enjoy. Rolling around, having fun and spending time with all the girls and my dance partner, Jasmine Williams, who is 16. I also love learning new dances and taking on new challenges. Competing in competitions in different venues around the country is also a lot of fun and, of course, winning lots of medals! What do you consider your greatest achievement to date? That’s a tough one, but I think I would have to say the 2016 Oceania Championships in Whangani Bay, New Zealand, that were held in September. I came first in Cadet Solo Dance and Cadet Figures despite still being in recovery from a broken arm sustained five weeks before leaving. What are your goals for the future? My immediate aim is to qualify for the 2019 World Championships to be held in Spain. Ultimately, one day I would love to become a world champion dance skater. How do you relax when not skating? I hardly have much time to relax as my days are so full. However, sometimes over the weekends and the holidays, I do manage to find time to hang out with all my skating friends. Watch this space. VISIT BUNBURY CRICKET CENTRE The outdoor cricket season might be in full swing but indoor cricket is an all year round sport. In Bunbury, indoor cricket is played at Bunbury Cricket Centre on all weekday nights. Under the supervision of qualified umpires, games run for 75 minutes with three start times of 6pm, 7.15pm and 8.30pm. Monday and Tuesday nights feature an 8-a-side competition and on Wednesdays, teams of 6-a-side compete. Friday nights are set aside for junior cricket with games running for 60 minutes and start times of 4.30pm, 5.30pm and 6.30pm. Two seasons run during the year with the summer competition starting in early October and the winter competition in early April. Register a team now for the next winter season. Bunbury Cricket Centre also offers net hire for local clubs, coaching from ACB accredited coaches and bowling machine hire. Lexus NX200t F Sport

F

ollowing in the footsteps of its larger SUV sibling, the RX, this decidedly stylish compact crossover from Lexus was a relatively late entrant to the small, luxury SUV sector. However, since its launch at the Beijing International Motor Show in 2014, the NX has certainly been making up for lost time. Offering two-wheel-drive and allwheel drive options, buyers can choose between the refined 2494cc petrol hybrid version, the NX300h, or the sporty NX200t, propelled by its outstanding 1998cc petrol engine with 6-speed automatic transmission. Both come in Luxury, F Sport or Sports Luxury trims and both provide an undoubtable visual feast for the eye. According to Lexus, this was a car that, rather than taking its design cues from other similar vehicles, sought out inspiration from trend setting fashion labels, watches and even running shoes. The result is a stunning eye-catching design melded with the very latest auto technology. It’s bold and unashamedly unique. Given the opportunity to take the AWD NX200t F Sport out for an extended test, it was the versatility, performance and driver-focused technology that really hit home to us. Triumph Bonneville Bobber

T

here has been a noticeable resurgence in interest for the classic bobber or hardtail style custom motorbike in recent times. For many, of course, the bobber is seen as the quintessential form of motorcycling with its stripped away bodywork and completely removed or, at the very least, shortened fenders. Triumph is the latest manufacturer to introduce a bobber in its range and the Bonneville Bobber has been designed to be even more retro than the classic Bonneville style. It might be built in the UK and be 100 per cent British but the inspiration from this bike clearly comes from those classic Americanmade bobbers, which first came to prominence in the 1930’s. Stripped back to the bare essentials, it shares the same Bonneville engineering and design ethics but with its lower, minimalist yet muscular stance it carries a purposeful and distinctive presence on the road.

At the heart of the bike is a 1200cc high-torque engine tuned to deliver more power lower down the range. It also features twin slash cut, sawn-off peashooter silencers together with a unique twin airbox and filters to provide that instantly recognisable Bonneville hot rod sound. The latest electronic ride-bywire system has also been incorporated for enhanced throttle control with two riding modes and liquidcooling incorporated to achieve greater fuel efficiency. To complete the bobber look, Triumph has included a battery box with stainless steel strap, bar end mirrors, a wide handlebar and rear mudguard loop. The bike also has a rear shock mounted underneath the seat, similar to the set-up used by Harley Davidson but with a more appealing swing cage in view. Black wire-spoked wheels, 19-inch by 2.5-inch at the front and 16-inch by 3.5-inch at the back, are fitted with custom Avon Cobra tyres, specially developed for the bike. Despite all of the retro styling, this is, however, a bike very much for the here and now. As expected from Triumph, there’s plenty of the latest technology available, including switchable traction control, ABS and a torque-assist clutch. Plus, there are over 150 additional accessories to choose from, such as a Vance & Hines exhaust system, different seat trims, cruise control and heated grips. Notwithstanding a number of different colour options, including Ironstone, Morello Red, Competition Green with Frozen Silver and Jet Black. The Bonneville Bobber is an exciting eye-catching addition to the Triumph range, built by a company with the heritage and know-how to be able to really pull it off. arious parts of the property market may have experienced challenging times over the last 12 months but it seems the south west of WA is bucking the trend. As the fastest growing region in the state, population continues to grow at above average rates while the rest of the state has seen slowing growth. So what are the drivers of this growth? Well, firstly, the region continues to be an extremely desirable place to live, boasting a good climate, great beaches, modern local amenities and a relaxed way of life. These characteristics have struck a chord across the demographic spectrum with families wanting to give their children a safe outdoor upbringing and young adults working in hospitality attracted to the area’s

How long have you been involved in property management?

A

I first started in real estate in 2002 as a receptionist assisting in property management and soon progressed to the role of property manager. Since then, I have gone on to become a qualified residential and commercial property manager, strata manager and sales representative. I believe that understanding all aspects of the business makes a more well-rounded property manager.

What are the advantages of using a property manager?

A

There are a number of advantages to be gained. These include, access to professional advice; remember, property managers are employed to act in the best interest of the owner; and the opportunity to have someone with extensive experience to deal with complex issues. A property manager will also ensure the property meets the requirements set out by the Department of Commerce and the Residential Tenancy Act. Don’t forget, all property management fees are also tax deductible.

Q How do you set the correct rent for a property? A We conduct a current market analysis and a profile

of properties that have leased in the area in order to establish a market rent. We then discuss our findings with the owner to establish the level of rent he or she would like to obtain based on the market statistics.

What advice would you give to an owner preparing a house to let?

Present the property as if presenting the property for sale. Tenants are attracted to a well presented home. When there is a lot of competition, the better presented properties traditionally attract a better quality application.

Tip 2 – If it’s broken, fix it

Carry out any repairs that need to be done prior to a tenant moving into the property. A small repair or some maintenance now could save a bigger problem in the future.

Tip 3 – Clean the property

Cleaning the property initially is essential for a tenancy to run smoothly. Owners want a property handed back in good condition so set the initial benchmark high.

Tip 4 - Don’t forget the exterior

Neatly presented lawns and gardens make a great first impression. When a prospective tenant drives past a property that has a neat exterior, it makes them want to know more about what the property has to offer inside.

Tip 5 – Insurance

The insurance company needs to be notified that the property will be tenanted and Landlord Protection Insurance should be looked into as a safeguard.

Tip 6 – Pricing

Be realistic with weekly rental values particularly when there are plenty of other properties for lease.

t’s no secret that times are tough in business right now so, instead of getting carried away with the general malaise, use this time to take stock, revisit your business and prepare for the new year ahead. Here are some areas that can be addressed when finetuning any business. Let’s work through the list and discover some potential areas of improvement:-

Is your business carrying too much stock? With overnight delivery now available for many items, is it necessary to be carrying it on the shelf? Plus, is some of that stock now obsolete?

Are there many company assets currently on finance? It might be possible to refinance existing items to spread the term of the loan. This could lower repayments and assist with cash flow.

When was pricing last reviewed? Do a check on profit margins.

Is your business advertising and is it effective? I recently spoke to a client of mine who spends over $50K a year on radio and TV advertising. When asked if it was working, he couldn’t tell me. I then asked where his new customers were coming from only to be told mainly from referrals or word of mouth. I ask again, is it effective advertising?

These, however, are often time consuming and, therefore, fall into the category of active engagement. For example, to see a post on Facebook it will need to be found by someone scrolling through the newsfeed. We recommend enhancing engagement through a passive approach. In other words, the message gets to its audience without them having to search for it. An example would be having an app that sends out a push notification directly to its target audience. The Joy Of Fragrance

t’s all around us from blossom to fruit, sand to the ocean, and meadows to forests and has been adored by people since early civilisation. But why is wearing a favourite fragrance so important to us? Much like a particular song, a particular fragrance can trigger memories of a favourite place, an exotic holiday, times with friends or a first love. The scent takes us back to a moment in time and we experience associated memories of happiness. French author Michael Proust commented that once a scent has been experienced in a person’s life, “let them smell it again and it will liberate and awaken previously forgotten feelings.” There is also something about a favourite perfume that is impossible to define, pulling us back to experience more. The layers within each waft are hard to truly explain and encapsulate into words but they can be intoxicating and compelling, willing us to enjoy the fragrance over and over again. Despite the hype and imagery created by the USD$40 billion global fragrance market, the fact remains; the pleasure of enjoying scent is very real. Alchemists travel far and wide around the world, seeking out the best and finest ingredients to concoct new formulas and, maybe, a fragrance worth millions. Despite their search, it is the rose that has often been at the heart of the most successful and internationally loved perfumes. It has been used for scent since Egyptian times and we have certainly not tired of it yet. It is said that Cleopatra had the sails of her barge scented with rose along with jasmine and patchouli, all known for their aphrodisiac powers. A good example

of a modern-day, rose-influenced fragrance is Dahlia Divin Le Nectar, new from Givenchy; it has rose and jasmine at its core. Or for a timeless sophisticated air, that is both bold and lively, try Chanel’s new No5 L’Eau with its lemon, mandarin, rose and soft musk. Whether to evoke feelings of special memories, or to attract and seduce, there are many other reasons as to why we wear perfume. Certain scents can boost confidence and feelings of control. Others stir up frivolous and playful feelings, or they can be provocative and striking. Wearing a fragrance allows each of us to have our own sense of individuality enabling us to choose different scents to reflect different intentions and different moods. Ultimately, our choice of fragrance will depend on how we feel or how we want to feel. The Effects of Sunlight

esearch has shown that a minimum amount of sunlight exposure is required for us to function properly. Like a plant needs sunlight to grow and thrive, the human body needs sunlight for correct cellular functioning. It’s a wellknown fact that excessive sunlight exposure can cause ageing and skin cancers, however, there is now clear scientific evidence that shows daily sunlight exposure is actually good for human health. The information below highlights both the dangers of excessive sun exposure along with benefits achieved from moderate exposure. Some are widely known and others are not. Written from the perspective of a skin health professional, I have tried to explain how we might give advice to patients about the sun, its dangers, the correct protection from it and, indeed, its benefits.

The current hot topic (particularly in Australia) of exposure to ultra violet radiation, i.e. sunlight, will often lead people to think only of its downsides; skin cancer, cataracts, ageing, wrinkles. However, science is now saying that wearing sunglasses may severely weaken the body’s defences. There are strong indications that sunlight through the eyes stimulates the immune system. There is no question that UV light in large amounts is harmful but in trace amounts, as in natural sunlight, it acts as a beneficial life-supporting nutrient. While too much sunlight can be harmful to the skin, the right balance can also have mood lifting benefits by increasing the brain’s release of the hormone Serotonin. This mood-boosting hormone also promotes feelings of calm. Low levels can also create a higher risk of Seasonal Affective Disorder (SAD), a form of depression triggered by changing seasons. Sunlight benefits sufferers of non-seasonal depression, anxiety and premenstrual tension, according to the Journal of Psychiatry and Neuroscience. Sunlight exposure also has a further health benefit. UVB radiation in sunlight causes a person’s skin to create vitamin D for bone health whereas low levels of sunlight are linked to bone-wasting diseases, such as osteoporosis. over-exposure but moderate amounts of sunlight actually have cancer preventive benefits. According to an interesting study by Environmental Health Perspectives, areas with less daylight are more likely to have more people with a number of cancers than those who live with more sunlight hours.

On record as saying sunlight can treat several skin conditions, including psoriasis, eczema and acne, The World Health Organisation recommends getting five to fifteen minutes of sunlight two to three times a week. This should be between 10am and 4pm when the sun’s rays are more direct, and on the arms, hands and face only. For vitamin D-boosting benefits, the sun must penetrate the skin and, therefore, sunscreen or protective clothing should not be worn. However, if spending longer in the sun than a brief 15-minute period, the skin should always be protected! Apply a strong sunblock and wear a protective hat, shirt and sunglasses. A little bit of extra sunshine can have wide-ranging benefits for everyone. Just don’t overdo it. SHOULD I WORRY ABOUT A LUMP ON MY DOG? BY DR BRADEN COLLINS

I

have found a lump on my dog. Should I get it checked by a vet or just keep an eye on it for a while? It feels like another lump my dog has. Is it possible to tell what it is just by feeling the lump? The short answer to all of the above is that lumps on dogs need to be checked by a vet and the sooner the better. The problem with self-diagnosis is that it is impossible to be certain whether it is cancerous. Even very experienced vets can sometimes be mistaken and, therefore, without looking at the cells in question under the microscope and taking samples, it is extremely difficult to get an accurate prognosis. The questions we always ask ourselves when we see any sort of lump is - what is it and where is it? So on examination, we first need to work out what type of lump it is (inflammatory, benign or 60 ANIMAL HEALTH

malignant) and, after determining how the lump might behave, we can then work out a treatment plan. The first thing I will do with most lumps is to carry out a fine needle aspirate. This involves inserting a small needle into the lump (the needle I use is the same size used to vaccinate pets) and removing some cells for examination under the microscope. For many types of lumps, we can tell there and then what type of lump it is and what the best treatment options are. For cases where we can’t tell what type of lump is present, we may send the sample to a specialist pathologist or recommend a larger sample (a biopsy) be sent to the lab for examination. For many lumps, we may feel that doing nothing is the best course of treatment. For example, the most common lump we diagnose on dogs is a lipoma, which is a benign tumour (the good type) of the fat

cells. For these tumours, we rarely recommend surgery as they don’t spread and will normally stop growing at some point. Therefore, they can be left and monitored. The surgery may also cause the animal so much pain or dysfunction that it is not in the animal’s best interests. If we are concerned that the lump is malignant (the bad type), we may recommend a process called ‘staging’. This is where the rest of the body is examined for signs of the tumour having spread using tools such as ultrasound, x-rays or CT scans. There is no point removing the lump if it has already spread to other parts of the body. Cancers tend to be fairly predictable in where they spread so, having identified the type of lump that is present, we usually know where to search for signs of spread. The location of any lump can also influence treatment choices. For example, a lipoma on the side of the


abdomen may not cause problems and might be left but one under the armpit might cause discomfort and need to be removed. A malignant tumour on the side of the chest where dogs have more skin might be quite easy to remove but the same type of lump near the paw might be very difficult to treat due to a lack of spare skin close to the wound once the lump is removed. So why do we need to examine a lump quickly? The two things that may change with time are the size of the lump

and whether it has spread. If the dog’s owner has been keeping an eye on the lump, it may well be bigger by the time we see it. This makes any surgery to remove the lump more difficult, more painful and more expensive. Most tumours take a certain period of time to spread to other parts of the body. By waiting to see what a lump does means it can spread before we have a chance to treat it. This could cost the life of the pet.

The Natural Temptation Café FOR OVER 25 YEARS, The Natural Temptation Café has been serving up its delicious range of heavenly locally-produced delights. Quite simply, it’s a Bunbury institution. Using only fresh natural ingredients, the tempting highly creative menu includes natural fruit smoothies, inspiring fresh salads, delicious burgers, free range chicken and healthy, hot tasty dishes. It’s also home to an increasingly popular breakfast menu served from 7.30am Monday to Friday and from 8am on Saturdays. High time we gave it a try! We are told that breakfast is the most important meal of the day but in today’s hectic world it is rarely savoured. For most of us, it’s either a quick piece of toast or a bowl of cereal before the dash to work. Well, perhaps a trip to The Natural Temptation Café might change all of that. One look at its enticing breakfast menu should do the trick. Sipping on my latte and after a studying the various

options, I decided to order a relatively new dish on the menu, Green Scramble served on sourdough toast. Using free range eggs sourced from Capel, the dish contained a mix of pesto, spinach, oregano and basil and was full of flavour and just tasted, well… really fresh. Fresh is an overused word when it comes to food but here you can taste the freshness of the food in every mouthful. It’s also a dish that comes with a kick. There’s a Chilli Scramble on the menu too served with capsicum chilli relish. Maybe next time! Other highlights on the menu included Turkish Egg (I nearly ordered this), a fragrant mix of lentils, pumpkin and mushrooms topped with a soft fried egg; Avocado Smash, avocado on toasted sourdough with roasted cherry tomatoes and homemade dukkah; and Natural Temptation Omelette, a protein-packed dish with 3 free range eggs, filled with spinach, fresh herbs and cheese. Or why not just drop in for some homemade toast, some muesli, a coffee or a Chai Pot? Try the Chia Muesli, fresh fruit served on a chia seed muesli and nut mix with apple juice, soy or nut milk or perhaps The Natural Temptation Organic Oat Muesli and Fruit. A touch of France has also been added to the menu this summer. Le French Toast with Oh La Jam is a delicious combination of café-baked sourdough with strawberry rose rhubarb jam. I tried some of this jam and it is fabulous! Finally, bacon lovers will be delighted to hear that naturally smoked bacon from Margaret River is now available to add to many of the café’s breakfast dishes along with homemade bacon and egg burgers. My Favourite Dish

Slow Roasted Lamb Shoulder with Basturma Spices By Bec Pyke, Market Eating House

lamb is a staple dish on all Middle Eastern and Mediterranean menus so naturally, given our influences, it has always graced our menu in some form or another. Plus, with the south west producing some of the most delicious, pasture-fed lamb available, how could it not be one of our favourite dishes? At Market Eating House our food is best enjoyed sharing style; the way we eat at home with our closest family and friends. This dish truly epitomises this

sharing experience as tucking into a meal of roast lamb with those closest to you evokes plenty of nostalgia in people from so many different cultures. The preparation for this dish begins by bringing in the lamb shoulders whole and then partially boning them out. We brine them for twenty-four hours to lock in the flavour and then generously rub them with a basturma-spiced yoghurt. Basturma is a spice mix that includes smoked paprika, mild paprika, fenugreek, garlic powder, cumin and chilli. It originates from the Ottoman Empire and there are many regional variations throughout the Middle East. The lamb shoulder is then slowly cooked for a further eighteen hours before being finished off in our wood-fired oven. This gives it a smoky crunchy crust. The wood-fired oven and charcoal grill take centre stage at Market, exploring one of the most honest relationships, that of food and fire! THE Sacred Beetle By ANNIE MALONE

summer is here and my thoughts turn to dung beetles…I am a farmer’s daughter after all. It wasn’t an immediate thought, more a progression from hotter and longer days, check the reticulation for the vege garden, put the shade covers up, fly screens on the windows and then…I wonder if those trusty beetles will do a good job this year. The sacred Scarab beetle was revered in Egyptian mythology as a good luck icon. Pharaohs would wear jasper stone-carved scarabs and be buried with scarab amulets. The Greeks saw the scarab as a symbol of selfrenewal and the Christians regarded the little chaps as a symbol of resurrection. This lowly dung roller has played an important part in bringing fertility, prosperity and peace of mind to many cultures over the years. Every eco system needs its workers to support the system in the long term. I have always been a champion of grass roots mentality. You can’t grow good crops just from reading books, although a little bit of knowledge is helpful. The real experience comes from getting your hands on the shovel and doing the hard work. This brings me to First Principles theory; the understanding of fundamental truths. Aristotle the ol’ Greek philosopher born in 384BC was onto something big back in the dark ages when he was pushing this theory. Learning the fundamentals is a principle I worry we are losing sight of in today’s society. In past years, to get to the top of a profession you would usually start at the bottom and work your way through the ranks, taking the experience and knowledge with you until ‘hey presto’ you were the fountain of knowledge at the top of the tree, or close to it. So, if the ‘proverbial’ hits the fan, you knew how to solve the 66 FOOD & WINE

problem from your experience with first principles. Increasingly now, I see the process as go to university, get the knowledge and a bit of experience, then get the degree, put on shiny shoes, sit at the computer and make those spreadsheets that give all the right answers to put in a report, go and get a latte double shot with coconut milk, job done, onto the next project. If something goes wrong on site, you can always have an enquiry, discuss things some more, hire a mediator, professor or someone with another title and work through to some positive outcomes until more people are happy than unhappy. Until some younger university students, who want to change the world (as every proactive university student worth their salt should) decides that the project or industry is detrimental to planet earth so they protest to try to close you down, putting all the workers out of a job until there is a more sustainable industry to support them. Meanwhile, those companies that were making the big bucks ravaging this planet's resources but also providing training for trades and practical skills, like mechanical fitters, boiler makers and welders, were also giving funding to the universities to train their future CEO’s, business managers and lab technicians. Now the universities need foreign students to help fund them and Australian kids can’t afford to pay for higher education because they can’t work part-time to support themselves, like people did years ago, and study at the same time. Things are so much harder now


and, besides, everyone needs to be happy and have a social life, otherwise we will need counselling to work out why we aren’t happy. And if the counselling doesn’t do the trick, there are always drugs and alcohol to ease the pain, and, if you get hooked on either of those, then it’s back to counselling you go. This, of course, is all a hypothetical rant so all is not yet lost. Watching Landline on ABC TV one Sunday afternoon, my faith in human resilience and endeavour was restored. It seems that there are still many areas where we are getting back into touch with our ‘first principle grass roots dung rolling’ mentality in our primary production sector just like those Egyptians of old. We are learning from our mistakes of mono cropping and heavy chemical spraying and developing more sustainable industry practices. Consumers with an appreciation for more ethical products are driving the demand and creating the market. While not everyone wants to be a little dung roller of society, if you are good at it, you might become a sacred symbol of the future. So watch where you walk with those shiny shoes, you may step on someone iconic.

elcome to our latest update on the news and happenings around the Geographe wine

region. The recently held Geographe Wine Show culminated in a Gala Award Dinner held at the Bunbury Regional Entertainment Centre. Providing an opportunity for local producers to showcase their latest releases, this year, the show also offered the chance for wine produced by alternative grape growers within WA to enter. The show proved to be a triumph

for Ferguson Valley-based winery Willow Bridge Estate, which picked up a raft of awards together with six gold and three silver medals. The awards included Wine of the Show and Best Red Wine for its 2015 Gravel Pit Shiraz, Best RosĂŠ for its 2016 Rosa De Solana together with Trophies for Most Successful Producer and Excellence in Winemaking. in touch to announce that its 2016 Sauvignon Blanc Semillon is now available for tasting at the cellar door. The cellar door will, incidentally, be closed from 24th December to 4th January. Its gallery is currently hosting a photography exhibition by Lindsey Nelligan until 12th December and will then be showing works from Donnybrook local Sue Dennis until the middle of January. Bonking Frog Wines has also enjoyed success at recently held wine shows. The still to be released 2015 Winter Merlot and 2012 Paterson Reserve both picked up medals at the Perth Royal Wine Show and Qantas Wine Show, which bodes well for these vintages. The standout, however, was the 2016 Summer Merlot, which received a Gold medal at the Perth Royal Wine Show and was the top scoring wine in the Annual Winestate Magazine’s RosÊ Tasting. With its stunning views over the Ferguson Valley from its cellar door, Green Door Wines is now open from Thursday through to Sunday. The winery has simplified its menu and now offers a range of gourmet platters, ideal to share as a light lunch accompanied by a glass of wine on the deck. The winery also welcomes Vanessa Carson as its consultant winemaker.

T

here have been some exciting new Chardonnays coming out of the Geographe wine region of late. One I had been eagerly awaiting was the new vintage release from Wellington Mill-based, 52 Stones. This little vineyard on Stones Road has been consistently producing some of the best Chardonnay in the Ferguson Valley for some time and, with the genius of Peter Stanlake at the winemaking helm, there are no signs of this level of quality slowing down. The 2015 vintage saw the release of two Chardonnay wines under the 52 Stones banner, one labelled as Chardonnay and the other a barrel select edition. The 2015 regular Chardonnay has a collection of lemon aromatics; zest and myrtle, vanilla cream and toasted hazelnuts. The palate is fresh and lively with an attractive continuation of citrus, caramel and a subtle smattering of baking spices. This is a wonderfully textured wine with bright acidity and a balanced finish. The 2015 barrel select is an example of six barrels that were showing particularly interesting and delicious characteristics. Looking at these wines side by side, it was an interesting exercise to see the difference that oak selections have on a finished wine, something wine nerds will also enjoy. The wine was another fresh

and bright offering with zesty mineral aromatics, bacon fat and peach scents coming from the glass. The palate immediately showed greater complexity with a broad spectrum of flavours and textures from grapefruit, ripe nectarine and guava through to crushed quartz. A palate-coating buttery texture and a zesty acidity make this wine very appealing and also quite a different wine to its counterpart. Another great producer of Chardonnay from the Wellington Mill area is Talisman Wines, which recently picked up Best White and Best Chardonnay at the Geographe Wine Show for its 2015 Gabrielle Chardonnay. Recently, however, I have been working with an older edition of this wine from its 2013 vintage. After a couple of years of aging, this wine is really hitting its straps. With freshly baked brioche, apricot, chamomile and honey suckle dominating the nose, the palate is complex but by no means flabby with lemon curd and buttered popcorn. Layers of ripe stone fruit with a medium, almost mandarin-like citrus acidity finish a lengthy palate experience. This wine still has the potential to age for some time but I think most will find it hard to stay away from such an offering. Chardonnay from the Ferguson will definitely be one of my favourite summer tipples.

2015 Tempranillo El Toro The hand-picked Tempranillo fruit was destemmed into ferment vats and cold-soaked for three days. Some further whole bunches were then added to the vat at this stage. When dry, the fruit was pressed off into old oak for malolactic fermentation and cellared for 12 months before bottling. Tasting Notes Dark cherry and purple red in colour, the aroma is dusty and earthy with a hint of violet. The palette shows rich ripe fruit characters, dark cherries and fine tannins. This Tempranillo is a medium to full bodied wine. Available from the cellar door at $25

2015 Tempranillo Amphora Again, using hand-picked Tempranillo fruit, this was then destemmed into amphora clay pots lined with bees wax. Whole bunches were also added to the pots at this stage with the ferment initiated using wild yeast. When dry, the ferment was once more pressed off into old oak for malolactic fermentation and cellared for 12 months before bottling. Tasting Notes Dark cherry and purple red in colour, the aroma is earthy and spicy with hints of cacao. The palette is soft with a touch of rich plums. Savoury with finesse. His acclaimed childhood memoir, Working Class Boy, has certainly struck a chord with readers and is already onto its fourth reprint with Harper Collins Australia. Ending the 10 week chart-topping rein of authors JK Rowling and Andy Griffiths on its release, it has become the biggest Australian non-fiction debut in the last five years and the biggest in the publisher’s history. “I’ve spent the last few weeks traveling around Australia talking about the book in various ways so that’s given me a good starting point that I will be building on with the live show”, Jimmy explains. “I’ll be talking about the years that shaped me - the good stuff, the bad stuff and the funny stuff.
