t’s an exciting time to be publishing The Bunbury Life. Despite some obvious challenges with our state’s economy, Bunbury is forging ahead and, if its eating out scene is anything to go by, it is positively thriving. Look at all of the new restaurants and bars that have sprung up over the last couple of years and, in addition to that, we have seen some of Bunbury’s most historic landmarks undertake hugely impressive renovations. In this issue, for example, we visit The Parade Hotel, its stylish interior now almost unrecognisable since its award-winning facelift. The food’s pretty good as well! With Bunbury’s cultural and artistic offerings also continuing to flourish, we thought that it was high time this was reflected in our publication. Mon 24 to Sat 29 July THE WINTER FILM FESTIVAL is once again set to take place at Bunbury Regional Entertainment Centre this July and there is a plethora of fantastic international films on offer. The Italian comedy, Perfect Strangers, will not only have cinema goers laughing out loud but also questioning the personal, public and private lives of their partners when lifelong friends do the unthinkable and share the contents of their smartphones. In sharp contrast, German drama Frantz explores the delicate emotional state 12 WHAT’S ON

of German citizens in the aftermath of World War I as they navigate loss and sorrow in rural Germany. Crime drama in the guise of Chilean film Neruda is also guaranteed to entertain. The film follows popular poet and Communist Senator Pablo Neruda as he denounces the communist repression and goes into hiding to avoid arrest. 2017 WA Performing Arts Eisteddfod Bunbury Regional Entertainment Centre

B U N B U R Y C O M E S A L I V E this winter with the 59th WA Performing Arts Eisteddfod, held at Bunbury Regional Entertainment Centre from May 25th to June 17th. Performers from all around the south west will be on stage in front of family, friends and professional adjudicators as they play instruments or entertain with song, dance or speech-based acts. The festival will conclude with a fabulous Gala Concert on Saturday 24th June when leading acts from the season will perform and final awards will be presented. The Eisteddfod began as the Bunbury Music Festival in 1958 with 137 entrants performing at a small local hall. It was formed by a small group of dedicated music teachers who wished to enhance their students’ capabilities and have them adjudicated by a professional adjudicator from outside the district. Due to the growing amount of interest in the festival, the then committee changed the name to the City of Bunbury Eisteddfod Inc. Double ovens are being replaced by steam ovens and convection ovens for baking and roasting. Today’s ovens produce better and fresher results than a microwave and although microwaves still play a part in the kitchen, typically these are no longer housed within the usual oven stack, instead they are now placed under the worktop alongside drawers. Fridges, too, are undergoing innovative changes. Instead of one large unit, it now makes sense to have separate refrigerator drawers as part of the kitchen’s streamlined cabinetry - situated where they are most needed. The freezer, for example, which is not accessed as often as other parts of the fridge, can be placed away from the main working hub of the kitchen, thereby freeing up more workspace.

In addition to providing plenty of content on the history of the area and great places to visit, the station regularly meets with, and tells the story behind, the various business owners, creatives and characters that make the south west of WA what it is today. Owner, Barry Green recently met up with wellknown Yallingup resident, John Miller of John Miller Design, who has been designing and manufacturing his stunning and very distinctive jewellery for over 45 years. The interview touches on John’s ancestral Kimberley heritage and his early family life growing up with his mother, Dame Mary Durack, a well-known author and historian, who drew great inspiration from the Kimberley for her work. “We had a lot of interesting people through our house at the time,” says John, “My mother loved entertaining guests and there was someone very interesting or very 30 TRAVEL & TOURISM

eccentric for dinner every night. That made for a very lively childhood for me.” John goes on to explain his move from Perth to Yallingup and how he set up his jewellery business, initially working in a shed before building his first studio. He explains how the success of the business and demand for his pieces has led to a business that now operates from a second studio in Margaret River, employing ten staff. With an overriding passion to create pieces that last a lifetime and will be cherished for generations to come, the segment is a fascinating insight into one of the south west’s most highly regarded craftsman. “Funnily enough I never really thought of myself as a jeweller,” says John, “And there are lots of other things I would like to have done, like being a rock star! But jewellery always called me back and everybody always bought everything I made. ousing affordability is without doubt one of the hottest topics in the Australian property market at present. And, with all the talk of a potential property bubble in some parts of the country, it would be easy to assume that the average homeowner is spending far more on mortgage payments today than a generation ago. In 1975, the average Australian mortgage was just $17,400 (ABS) and, by 2015, this had risen to a whopping $382,400. It’s only natural, of course, that with inflation, prices have risen and the median value of homes in Sydney’s inner suburbs in the current market, for example, is now well over $1million. 32 PROPERTY & FINANCE

However, although prices have increased dramatically over the last few decades, current median house values do not take into account variations in interest rates over the years. A recent article by Jamie Alcock, Associate Professor at the University of Sydney, highlighted the fact that mortgage interest rates were at record highs of 17 per cent in 1990, whereas today, rates are available at less than 4 per cent. Yes, lenders have recently pushed up rates, particularly on investment loans, but rates remain at record lows. The other factor to take into account is the ratio of the median house price to median salaries. Professor Alcock highlighted that mortgages in the 1990’s were

actually less affordable due to the fact that average incomes were considerably lower and the ratio of median house prices to median salaries significantly greater. Property prices have undoubtedly spiked over the last few decades but homeowners are earning more and enjoying much lower rates. he 2016/17 tax year has seen some of the most significant changes for small business in the last ten years. In short, we will effectively be going into the new financial year with completely new strategies on how to manage our clients’ businesses. With change there are positives but there are also negatives and some of these changes will take away a number of benefits and opportunities for small business. What this means is that it is essential that business owners review their position before 30th June with a trusted advisor. This will ensure all has been done for the current financial year and the business is well set up for the new era post 1st July. Our government always talks about its policy of simplifying taxation and taking all the complexity out of the system. However, it seems with every change, the system becomes more complicated. Great for keeping accountants in business but it does mean business owners are having to rely more on advisers to translate these changes and interpret how they might affect both the business and the family situation. Topics that will need to be looked into include superannuation contributions and relevant limits. Plus, it is now vitally important to understand the exact definition of a small business entity (SBE) and whether the business qualifies. If so, what are the benefits of being an SBE in terms of asset write off, company tax 34 PROPERTY & FINANCE

rate and Capital Gains Tax and Income Tax concessions. Along with the above discussions, there is still time for a general business review to see how 2017 is playing out. The banks are now very focused on current year to date results; they don’t rely on historical results a great deal anymore. The ability to give them accurate figures for the portion of the current tax year may go a long way towards helping with a bank review and the ability to restructure finance to secure some of the low interest rates now available. Tax planning is always on the agenda at this time of the year and so is the dreaded stock take. All important tasks for those in business. On a final note, paying superannuation to employees has become a lot more structured over the last two years with the introduction of super stream and the ability to pay employee super through a clearing house. While this has made it more convenient, it also means the tax office has better access to data about the timing of employers paying employee superannuation. Don’t be late as penalties are high. The standard procedure and starting point for each unique app idea that we encounter is that we ensure that the rights to the intellectual property of the idea are protected and follow that by signing a non-disclosure agreement with the client. Every idea is always safe with us. The next step is a collaboration of thinking, which includes bouncing ideas backwards and forwards together with a little bit of homework. For those who believe that they have an exciting new idea for an app, the following information below will help to keep the new idea ahead of the game.

QUESTIONS TO CONSIDER: Is there competition? Has someone created something similar or is the app improving on an existing idea? What is unique about the app idea? This opens up the research process for both us and the client. We can look at how an edge can be gained over existing apps or on future apps waiting to be developed. Who is the target market? What is the size of the target market? Return on investment will need to be considered, i.e. will enough people want what the app idea will provide? How can the target market be redefined through a few tweaks of the app?

How will income be generated? Time will be needed to think about the proposed business model. Will income be generated from the purchase and download of the app, from in-app purchases, or from membership income, income from ads, or commission based income? What is the budget? With any new app there will be a cost in both time and money to get it from idea to reality. How much time is there to spend on the idea? What is the deadline for its completion? What budget is available to start the development process? Will it be funded entirely by the creator or perhaps through crowdfunding? Or will a wireframe be created with a mock-up app to pitch the idea to investors and potential partners? All of these points will need to be considered further at each stage as the idea goes from private funding to raising capital from stakeholders. By going through the above questions, a clearer overall picture of the concept and how it can be developed will emerge.

n addition to the many health and social benefits gained from skating, for those bitten by the skating bug there are plenty of opportunities to further their skills and compete against the best. We spoke to Head Coach at The Rink Susan Brooks about the opportunities available. How do skaters get prepared for competitive events? In addition to on-skate group classes and personal training we offer a range of off-skate classes preparing our skaters through fitness-based sessions. These classes, again available as group or one-on-one sessions, focus on getting the body ready for the sport's physical challenges. Which disciplines are available to compete in? Skaters can compete in Figure Skating, a balanceorientated discipline where skaters perform various movements around a drawn circle on the floor, Freestyle which is set to music and features jumps and spins, Dance which is more ballroom-style skating and Free Dance which is more choreographed. There are also group, quartet and team competitions.

Do skaters have access to professional coaches? Yes, we offer all levels of coaching from development to elite and three of our coaches have fitness qualifications. We also get some of the sport's leading coaches visiting The Rink and recently Gawaine Davis joined us from NSW to help solo and dance couples prepare for the National Championships. What level of competition can skaters compete at and when are the next big events? Local competitions are held at The Rink four times a year with a big end of year show. From there, successful skaters can compete in the State Championships, the National Championships and the absolute elite skaters can progress to the Oceania Championships and onto the World Championships. The National Championships will be held this year in Queensland in the first week of July and the Oceania, which includes Australia and New Zealand and occasionally some Asian countries, is to be held in September also in Queensland. Plenty of training and private lessons are required at these elite levels but we offer over 35 hours of artistic skate time per week so there is a great deal of practice time available. This year, our very successful squad competed in 39 events at the state championships and all skaters were selected for the upcoming Nationals Championships – an outstanding result. Finally, later this year, we have an International Skating Symposium taking place in Perth from November 29th to December 3rd. Coaches Hugo Chapouto and Gabriele Quirini along with leading judge Nicola Genchi will be in attendance. Who have been The Rink’s most successful skaters over the years? Over the last decade, we have had three skaters - Aleesha Hanczakowski, Allira Hanczakowski, and Ebony Cassady compete at the World Championships in different events with Allira competing at last year’s event in Italy. t’s a well-known fact that regular exercise for teenagers is vital in maintaining physical and mental health. A combination of both aerobic exercise and strength training and at least 60 minutes of moderate to vigorous physical training each day is key in creating active healthy teens that spend less time being sedentary. SKIN AND THE AGEING PROCESS

t’s only natural that our skin will age over time and there are many factors that influence this process. Some of these we have no control over but others we can influence. Put simply, there are two distinct types of ageing.

1. Intrinsic (internal) ageing

A natural process that typically begins in our mid20s, our genes will control how the process unfolds and how the layers of the skin are affected. As cellular processes decline, the epidermis thins and Vitamin D stores reduce. Skin becomes paler and more prone to sunburn and other skin issues. The dermis becomes weaker, leading to sagging and wrinkles and, finally, changes in circulating male and female sexual hormones alter distinctive physical and facial features.

2. Extrinsic (external) ageing

This type of ageing is premature and is caused by environmental and lifestyle choices. Primarily caused by sun exposure, other external factors include our facial expressions, sleeping positions, gravity and smoking. Even short periods of exposure to sunlight and UV radiation can cause changes to the skin. Typical changes commonly associated with sun exposure include deep wrinkles, sallowness, pigmentation, vessel damage, discoloration and skin lesions. A breakdown and decrease in collagen, caused by UV radiation absorbed by skin tissue is one of the main reasons behind photo-ageing. Repetitive facial movements also lead to fine lines and wrinkles. Constant facial muscle movements form a groove beneath the surface and, as the skin ages, it loses elasticity and stops springing back to its line-free state. Today, we see more facial lines in young people due to 52 HEALTH & BEAUTY

regular frowning at computer screens and mobiles. With the effects of gravity working to pull our body towards the center of the earth, changes related to gravity become more pronounced as we age. As our skin loses its elasticity, facial features become more pronounced which, in turn, influence the appearance of our skin. Even resting our face on the pillow each night in the same way leads to wrinkles as sleep lines become permanently etched. Finally, we all know the dangers of smoking but did you know that as well as causing age lines, deep wrinkles, skin discoloration and damaged facial vessels, by the age of 70, a 30-a-day smoker can have aged up to 14 years.

Caring of Ageing Skin

We recommend wearing sunblock, particularly in summer, and avoiding outdoor activities in intense heat. Avoid smoking and avoid repetitive facial expressions where possible. Eat a healthy, wellbalanced diet with plenty of fresh fruit and vegetables and avoid alcohol. Participate in moderate exercise, regularly cleanse skin and moisturize every day.Â

N E W D O G G U I D E P U B L I C AT I O N N O W AVA I L A B L E little while ago, I was talking to my wife about how frustrated I was with the number of dogs not being adequately vaccinated, which, in turn, had led to an outbreak of

parvovirus. We had seen multiple cases in an extremely short period of time, which had led to the unnecessary death of several much loved pets. My wife pointed out to me that without being married to a vet, she would have little knowledge about which vaccines were required or when they should be given. This made me realise that, on the whole, vets are not particularly good at sharing with the public what we know. Sure, we

might put on our practice’s website that vaccinations are required, and when they should be given, but this relies more on people already knowing that they need to vaccinate their dog and searching for more details. There is a lot of information available on the net but much of this doesn’t apply to Australian pets and our particular conditions. There is also a lot of misinformation (Donald Trump might call it alternative facts), which might prevent pet owners from properly vaccinating or treating their pets. So to ensure that dog owners in Bunbury and the surrounding areas have all the information required, we have written a new, comprehensive publication called New Dog Guide. This book contains important information on vaccination and parasite control, council registration and basic training along with many other useful tips. PARADE HOTEL THE PARADE HOTEL ON AUSTRAL PARADE has long been part of the local entertainment and eating out scene. But for those that haven’t visited this iconic Bunbury venue for a while, there’s quite a surprise to be had. The subject of a major renovation at the back end of last year, which won an award for construction excellence at the 2017 South West Master Builders Building Excellence Awards, its all-new contemporary look and extensive menu have had diners flocking to its doors. High time that The Bunbury Life paid a visit! With breakfast served from 7am and all-day dining

from 11.30am, we arrived for lunch and positioned ourselves next to the sleek newly-designed bar. Almost unrecognisable from its original layout, the stylish, open plan restaurant flows out onto a fabulous decked alfresco area with stunning views towards Mangrove Cove across the Leschenault Inlet. The hotel’s function room with its panoramic water views and its sports bar with grassed alfresco area have also been completely transformed to complete the impressive new look. Manager Margie Korver and her team have put together an enticing array of dishes, and choosing from the well-stocked menu proved to be far from easy. In addition to a daily selection of specials, the all-day dining menu features a number of highlights, including a 4-point rack of Amelia Park lamb, 300g sirloin steak with sautéed mushrooms and local crumbed whiting. There’s a great selection of burgers and sandwiches, pizzas and sharing plates. Many of the dishes are glutenfree or available as a gluten-free option, and vegan and vegetarian options are also readily offered. In the end, we plumped for the Tasmanian Salmon served on a bed of creamy mashed potato with apple balsamic glaze and garden salad. Beautifully presented and perfectly cooked, the creamy mash was an ideal accompaniment to the tasty chunks of fish. Given the chance to visit again, however, the Parade Ruben-style sandwich would have to be high on our list. Featuring thinly shaved corned beef, cheese, sauerkraut and a Russian dressing, this toasted New York-influenced delight, topped with a dill pickle, has had diners raving. The friendly and efficient service and convivial atmosphere all added to the overall enjoyment of our visit. Highly recommended, the revitalised Parade Hotel is the perfect place to relax with family and friends. Don’t just take our word for it, though, try it for yourself. COMMUNICATION BUZZ By ANNIE MALONE

I HAD A DREAM ... of owning a beehive and, earlier this year, the dream became reality, and so I began to see our world through bee whisperers’ eyes. Yes, it’s weird the effect these little buzzy critters can have on a girl. A hive is organised like a monarchy with the queen being the head honcho. She works hard laying eggs and populating the colony so what she says goes. The queen bee can reign for up to two years if she plays her cards right. Her girls, or the worker bees, however, have a shorter life cycle of approximately six weeks but they get straight into work mode from day one, keeping the hive clean and helping to feed the new larvae. Imagine if every three year old child had the genetic imprint to know how to keep their toys neat and tidy at all times. How awesome would that be? The hive protocol is extremely orderly and every bee appears to be born knowing its exact purpose in life and happy to fulfil its allotted role. If any worker bee doesn’t pull its weight in the hive, they get kindly ushered out. Already I’m starting to learn a thing or two from this hive etiquette. One strike and you’re out. No counselling, second chance or “I will count to 3,” by the queen! Our society is rather like a big hive on our planet earth and there is a certain order to life and survival. When bees want to tell the hive where the best honey source is they all gather in a group and the bee scouts each do a dance called the ‘waggle dance’. That’s what we call 62 FOOD & WINE

it, bees just think of it as talking to one another. So they wiggle and waggle their bodies in the direction of the good stuff and the most energetic and best performance wins. Then off they buzz to collect the booty. Very democratic.


This got me thinking about how we communicate. Are we being conditioned to forget how to waggle? Is our human kindness slowly being eroded by technology? Communication can be voiceless in today’s world. Texting and emails are the norm now along with recorded messages. Too often we can’t see or hear the effect our messages have on people. This could be to our advantage at times but it can also serve to desensitise us. It’s easy to write comments about people we don’t even know on social media; kind words or unkind. Either way, it’s easy to do and can be done in an instant. Once upon a time, long ago, we wrote letters to exchange news and we would have to wait to get a reply. Then Mr Alexander Bell patented the telephone and sending letters by ship became obsolete. We have come a long way since then and we humans, being an inventive race, have progressed to other ways of voicing our emotions. Shigetaka Kurita invented the first Emojis to replace our real facial expressions. You know those tiny icons that, if you are over 50, require magnifying glasses to check that you are texting the correct one. Many a time I have sent a sad face when I meant to send happy happy happy. Now there are hundreds of them as well as the good old thumbs up or thumbs down that can express a sentiment perfectly. Maybe all is not lost yet. Still, what I’m buzzing on about in this written conversation is let’s not forget the importance of a good waggle, face to face. My Favourite Dish

Slow Roasted Sweet Potato By Bec Pyke, Market Eating House a custom-made charcoal grill and wood-fired oven takes centre stage in our kitchen, exploring one of the most honest relationships, that of food and fire. Our dishes are prepared so that all ingredients maintain their integrity and are best enjoyed sharing style, the way we all eat at home with our closest family and friends. Quite simply, there is no other dish that portrays our philosophy towards food so truthfully than our delicious Slow Roasted Sweet Potato dish. The process for this unique dish begins very simply with a whole sweet potato, which is then seasoned, brushed with olive oil and wrapped in tin foil. It is then buried in the leftover embers of the wood-fired grill and left to slowly roast overnight. 64 FOOD & WINE

The next morning the sweet potatoes are removed from the still warm embers, the skin is peeled off and the cooking process for the sweet potato is complete. We serve it with a sweet potato cream, sheep’s milk yoghurt, a fried curry leaf and puffed buckwheat. The beauty of cooking the sweet potatoes in this manner is that you get an almost custard-style texture to the potato as the excess moisture evaporates and the sugars caramelise. This, in turn, also greatly intensifies the flavour. Add to this the fabulously smoky flavour that the embers impart on the sweet potato flesh and you have one of our all-time favourite dishes. elcome to our latest update on the news and happenings around the Geographe wine region. Firstly, some news about the Geographe Wine region’s new logo. Last year, the Geographe Wine Industry Association and its members undertook a strategic view of its wine region, direction, branding and future plans. It was felt that the existing ship logo, associated with French explorer Nicholas Baudin’s ship, Le Geographe, no longer accurately reflected all that the region had become today. Local south-west artist Ian Mutch was subsequently engaged and after spending time with various members discussing and researching the soul and obvious vibrancy of the Geographe Wine region, a new logo was born. Linking the diverse and abundant natural beauty found within the area, the new identity aims to portray the journey and stories behind it and the

Award-winning Geographe winery rebrands regular readers of the bunbury life will be more than familiar with North Boyanup winery Bonking Frog Wines and its mix of delicious, mainly merlot varieties, welcoming cellar door and all things frog related. Well, after ten years, owners Julie and Phil Hutton have decided to undergo a rebrand, a decision that has been heavily influenced by the estate’s early beginnings. “We’ve got a lot of history on this property,” says Julie, “It’s been in the family since 1949, having been purchased by my grandfather with compensation money he received after losing his hand while a member of the Volunteer Defence Corps (VDC). It’s quite a story and one that deserves to be told! So we’ve decided a brand refresher is in order, whilst still maintaining a connection to the varied and celebrated frog population on the property.” Three key brands will head up the wines at Windfall Estate and first availability is expected in late 2017. Ivor is the estate’s Reserve Merlot and is named in honour of Julie’s grandfather, Ivor ‘Dah’ Williams. This is a wine of distinction and it is only fitting that it is named after Ivor, a loving grandfather, smart businessman and the very reason why Windfall Wine Estate calls both North Boyanup and Bunbury home. Single-handed consists of a Merlot, Rosé and Chardonnay. This collection of wines has been named

in honour of Dah’s achievements, who, despite the loss of his hand, successfully built a business of his own, amassing property across Bunbury and North Boyanup. It is also named as acknowledgement of Julie and Phil’s success, who turned a Lotto win into a thriving Merlot vineyard, producing award-winning wines. Julie and Phil have worked tirelessly, planting and grafting the vineyard themselves by hand to get it where it is today. Frog Song is the winery’s tribute to Bonking Frog and the diverse and healthy frog species that populate the property, featuring Sauvignon Blanc and Shiraz. Maintaining a healthy frog population has always been important to Julie and Phil and, over the last ten years, the winery has learnt to encompass a range of biodynamic principles. “It is our great joy to hear the variety of frog songs singing out, an indication of how our efforts are positively impacting the environment,” says Julie. From 1st August, the winery’s cellar door will be closing to the general public on a daily basis but exciting plans are afoot. Having hosted a number of successful events over the years, the extra free time will be used to organise bigger and more frequent events at the property.
