Leather sneakers will also still be an essential part of the shoe closet. As well as being extremely practical, they are contemporary and bring an edge to a long pant. Look for black, metallic or print uppers with white thick soles.

Spring is here and it’s time to inject some vibrancy into your wardrobe and rejuvenate your look. Choose from sleek and modern silhouettes, dreamy romance or from the battle of the prints. A must-have piece to get through crisp Mela Purdie spring days is a sleeveless jacket. With a at Beez Neez Boutique long line and deep V-neck, it is a great transitional piece and is perfect with softly tailored separates, especially if arms are left bare. Or opt for a simple boxy jacket with a straight silhouette with or without a collar, add a pair of culottes and heeled ankle boots with cut-outs for a lighter look. As well as culottes, super wide-legged pants that skim the floor are ideal for spring. They are fluid and voluminous so move beautifully in the outdoors. To avoid looking swamped by fabric, tuck in a top to accentuate your slimmest part and wear heels to make your legs look longer. For the true romantics, white lace tops, skirts and dresses are extremely feminine. For those who don’t want to wear lace from head to toe, try wearing a crisp white shirt with a midi length lace skirt. Add a piece of edgy jewellery in gold and some 70’s inspired tan accessories. Spring prints feature classic black and white – monochrome is going nowhere fast. The ever popular nautical theme with stripes is back again this season and can be mixed up with a print, such as a floral design. Just make sure that the same base colours are matched up. And, following on from last year, tropical prints will pop up on spring pieces too. As for shoes, there is a clear trend for gillie 10

Spring is in the air

Spring is the perfect time to get creative with your outdoor space. Put a few ideas into action now and your garden and alfresco will feel more personalised and inspiring for months to come. The Reading Race By Louise Clark

Welcome to my new, regular column for The Mandurah Life. For me, going to primary school was all about having fun and playing with my friends. I don’t remember any pressure to read better than my peers and wasn’t bothered by who was reading which level of books. It’s a different story today. As a former primary and secondary school teacher, and now that I have my own young children, I have seen that from very early on in their school life, children can feel quite inadequate with their reading ability if they are not progressing at the same speed as their peers. This feeling of underachieving is, of course, completely unfounded. We all know that, unless there really is a problem that demands help and support, all children will learn to read in their own time, eventually. Unfortunately, though, due to these pressures, some children start to ‘place’ themselves in the class and label themselves as slow if they don’t ‘get’ reading as quickly as others. This can cause frustration and issues with confidence in areas of their personal and school life as well as lowering their own general expectations. So why is this happening? My belief is that it is partly because our education system is more transparent. This is, obviously, a good thing as we want to know exactly what is being taught to our children, when it is being taught, and how it is being delivered and assessed. Our children also know what they are expected to achieve and this is vital to help them to take more ownership of, and have more independence in, their learning.

However, now that we are all armed with this information, it is not only us who expect our children to go through school proficiently, achieving all the necessary knowledge, skills and understanding, and thereby ticking off all the boxes in the correct order. Our children expect this too. We need to take the pressure off ourselves and our children and let them know that learning to read is not a race. Let’s focus instead on the enjoyment of reading to and with our children. Whoever learns to read first is not necessarily the cleverest or most able child. While one child may have succeeded in reading their first chapter book, another may have used spectacular spatial awareness in their construction work, managed to count back in 5’s from 100 or displayed amazing social skills by making up new games to play at recess. Let’s remind ourselves and remind our children that we are all different, and we all find our own successes in our own way, in the end. Greyhounds WA To enjoy family-friendly entertainment with a difference, head on down to Greyhounds WA this spring and soak up the atmosphere. Located in Gordon Road, Greyhounds WA is one of the most popular sporting venues in the Peel region and its modern stadium and restaurant has been operating from the same site for well over 30 years. If you haven’t experienced greyhound racing before you will be amazed by the speed and intensity of the racing on the track. This is heart-pounding excitement from start to finish and with races every 15 minutes there’s little downtime between. Greyhound racing is definitely something that has to be experienced firsthand. With the current redevelopment of Greyhounds WA’s Cannington site, racing has now been increased to four nights a week in Mandurah on Tuesday, Wednesday, Friday and Saturday nights. Full TAB facilities are available, including gaming tables on Friday nights, together with plenty of free entertainment and space for the kids to play. Friday night entry is priced at $6 for adults and $3.50 for concessions with free entry available on all other nights. The venue includes a fully licensed bar and the famous Chasers Restaurant serving great value

buffet meals. Available for private functions, the venue regularly stages end of season team wind-ups, school balls and wedding receptions. Each year, a well-attended Melbourne Cup function is also held. The main events at the course during the year are The Mandurah Cup, the premier sprint race in the Peel region and The Birthday Cup, which is next held in January 2016.

2015 Club Marine Mandurah Boat Show

October 9th - 11th

Billed as the most interactive show ever, the 2015 Club Marine Mandurah Boat Show has a wealth of activities planned for the whole family to enjoy. Once again held at the Mandurah Offshore Fishing and Sailing Club in the Mandurah Ocean Marina, this year promises to be one of the most entertaining shows to date with a range of exciting new attractions on offer together with a number of old favourites to enjoy. With new stage areas, new special guests and plenty of ways to get involved and have a go, it is a weekend not to be missed. As one of the most recognised faces in fishing, show ambassador Paul Worsteling will once again be sharing stories and entertaining the crowds along with celebrity chef Bart Beek and special guest presenter ex-Olympian and fishing author Emma George. The Fishing Stage, this year positioned outside the main marquee, will also host some of WA’s biggest names in the sport, including Scott Coghlan from Western Angler Magazine and Mike Roennfeldt from The West Australian plus Peter Anderton’s famous Fish Filleting Demos. Club Marine Lifestyle Stage will also be a hive of activity with cooking demos, fashion parades, safety info, product reviews and travel information. Meet Madison Bright (aged 13) and Andrew Beattie (aged 12)

At the recently held Artistic National Rollerskating Championships in Adelaide, The Rink Bunbury, the south west’s leading inline skating arena, entered no less than 18 competitors across a total of 33 events. In this issue, we talk to 2 rising stars of the sport both with a big future ahead of them. How long have you been skating and what prompted you to start? MB – This is my 7th year skating and it all began after a trip to Bunbury to watch a movie. We were 2 hours early so we came to a session at The Rink and I was hooked. AB – This is my 4th year skating. A few years ago, I was invited to a birthday party at The Rink and as soon as I got home I asked my parents to go again. My interest then continued to grow. What do you enjoy most about the sport? MB – I love meeting new people, learning new things and challenging myself. I also like the fact it keeps me fit and healthy. AB – I really enjoy the compulsory dance programme and skating with my dance partner. How do you manage to fit in other commitments, such as school work, family and friends? MB – I don’t find it a problem and I normally get all my school work done on time. AB – My family and friends have always been good at fitting in around my skating and I manage to do my school work at break times or on a Sunday when I’m not skating. What are your personal highlights so far? MB – My goal at this year’s nationals was to achieve top ten in all of my events, which I achieved. My personal highlight was finishing 5th out of 20 in Preliminary Figures. (Madison’s parents also skated at the event with her mother, Rhonda, finishing 1st in Masters Advanced Figures!).

AB – Highlights include learning over 70 dances, competing in 3 national championships and medalling at this year’s championships. (Andrew won a total of 4 silver medals, 2 of which he won with his dance partner, Jasmine Williams). What are your ambitions in the sport? MB – I hope one day that the sport makes it into the Olympics and I would also like to compete at the World Championships. AB – I would love to represent Australia at the World Championships. Susan Brooks (Coach) - Both kids are really talented and show tremendous commitment to the sport. Andrew had a very demanding week at the nationals but impressed me with his focus and determination. Madison, who equally shows great commitment, lives in Busselton and travels to The Rink to train and take lessons. Her family has even decided to move house to be closer to the centre! 34

Diving Around Mandurah By Nelson Pereira

Boat Access Just off the coast in Mandurah, we have two awesome reef systems, the Murray and Five Fathom Bank. I believe they are the best kept secrets of the Peel region and there are no commercial dive operations on these pristine reef systems. Accessible only by boat, they are well known by the locals but a mystery outside of Mandurah. With a huge range of fish calling the areas home, they are an absolute diver’s delight.

Mandurah and its surrounding waters are blessed with some of the best dive spots in the whole of WA. Here’s a few of the must visit locations for the keen divers amongst you. Just off Blue Bay Beach, Halls Head, the Blue Bay reef system is a weather dependent but lovely dive reef that runs parallel to the shore. With depths of up to 9 metres discover lots of little fish and the occasional snapper.

An hour south of Mandurah at Bunbury discover the Lena, a pristine shipwreck, perfect for diving. We regularly organise a dive charter on a comfortable boat for up to 10 so no big crowds. Diving in this wreck provides plenty of fun and besides the excitement of a dive on a big wreck, the Lena has also become a major reef with all sorts of fish, including massive bald-chin gropers and Samson fish. Usually, we do a dive on the Lena and a dive in one of the many reefs close by and there are always lots of creatures to play with.

Tim’s Thicket Reef off Tim’s Thicket Beach, Bouvard, is another good fishing dive, well known by locals. When conditions are good, all sorts of coastal fish can be seen along with good crayfish when in season. A four wheel drive is required to get to the beach. Point Peron in Rockingham is well worth a visit and its reef is situated about a 50 metre swim offshore. Discover an abundance of caves and passages through the limestone reef. Point Peron is good for all little fish, including the elusive leafy seadragon.

Our dive club dives most of these locations regularly and our members are always accompanied by an instructor and trained staff. The boat dives can be booked at our shop and we dive the Lena twice a month over the dive season.

The Rockingham Dive Trail is a beautiful artificial reef made up of small boats and airplane wrecks. It is full of sea horses, lionfish, leatherjackets, cardinal fish and dozens of other sea creatures. An easy site to navigate, it attracts hundreds of divers every weekend and is accessible all year around.

Hi everyone! I hope you are all hitting it long and straight. Thanks to the efforts of Adam Scott and Jason Day, golfing participation numbers are up by approximately 3.6% across Australia with Western Australia up by a massive 10%. This is bucking the worldwide trend with most countries reflecting minimal growth or a reduction in player numbers. So with spring here, now is a great time for all you keen golfers to be getting back into your golf. The footy season is over, the kids’ sports are finished and mums and dads now get to trade in their taxi service job and hopefully have a bit more quality time. Spring is also a great time to wipe the slate clean for the new golfing season and here is a list of things to do to ensure you enjoy your upcoming golf. 1. Book a couple of lessons with a PGA golf professional. The Peel area is blessed with some great coaches. If you haven’t had a lesson for some time, you’ll be amazed at how quickly and easily you can improve your swing. With the available technology and improvements in both clubs and balls, with minor changes to the ball position and swing path, most players can now make rapid improvements without making massive physical changes. 2. Check your equipment. Most players are always mucking around or changing drivers hoping to improve their scores. The makeup of your clubs, however, is probably more important. If you have a pitching wedge in the bag (44 degrees of loft) and your next wedge is a sand iron (56 degrees of loft), you have the equivalent of a two club gap. That’s like having a 5 iron with the next club in the bag an 8 iron! Get some advice and get yourself a couple of gap wedges to give yourself every chance of playing well. You might also want to consider throwing out the 3 iron and getting an easier hybrid to hit.

3. Learn how to putt. The putter face has 85% more influence on the starting point than the path of the putter head. So get the putter face square to the target line and you will hole plenty more putts. For years, most golfers have been worried about the perfect stroke that doesn’t necessarily equate to fewer putts. Allocate a small amount of time on the putting green, use some alignment aids, do a few drills and watch your scores come down. 4. Set some realistic golfing goals, i.e. winning the Australian Open against Jordan Spieth at the end of the year probably shouldn’t be on the list! However, improving your handicap by a couple of shots or trying to break your best score might be. For others, it might be simply getting through the round without losing a ball or without having a three putt. 5. Work on the mental game. Now this is an important one! Top line professionals know that they are going to hit bad shots so when it happens they don’t worry about it, and certainly don’t change anything. They also know that they are going to hit some good shots which will outweigh the bad ones. Club golfers hit a bad shot and then overcomplicate the situation trying to make instant changes. This interferes with them hitting their good shots. So, think about the mental game, expect to and don’t be afraid of hitting bad shots, play to your ability level and have some fun with the game. First launched in 1996, the Vito’s primary purpose has always been as a standard cargo van, albeit one with a three pointed star on its grille, whereas its sibling, the Viano or V-Class, substitutes part or all of the load area for passengers. Extra Early Repayments

The key to homeloan heaven $143,000. This is because in the early stages of a loan the majority of the repayments are consumed by interest whereas extra repayments go straight off the principal.

We would all like to make them and we all know the benefits to be had but, for many, making extra repayments on a home loan is not always possible. Everyday living costs, school fees, family holidays; there is always something for us to spend our hard-earned wages on. However, study the financial facts more closely and there are some pretty compelling reasons as to why we should.

So in short, getting on the front foot with extra repayments from the day the loan settles is a highly prudent strategy. Remember too that all home loans are based on payments in arrears, meaning that the balance of the loan is accruing interest from the very first day. Therefore, the earlier extra payments are made, the quicker the reduction in the interest paid over the term.

Take the example of a typical $400,000, 30-year loan at 6% interest with fortnightly repayments. The total interest on the life of this loan equates to a sobering $463,000. However, here’s where it gets interesting. By paying an extra $100 a fortnight from day one, a total of $104,000 is saved over the life of the loan whereas stretch to $200 a fortnight and the interest saved equates to $167,000! Put another way, this is equivalent to a 37.5% tax rate payer earning an extra $265,000 over the loan term!

Clever strategies to reduce interest can also include fortnightly payments to allow 13 months of payments instead of 12 in a calendar year. Offset accounts are also highly effective in reducing interest payments and these can be used for redirecting lump sums, such as tax rebates or bonuses.

The key here is not only regular payments but early repayments. By delaying the extra payments two years, the $100 payment would save just $88,000 and the $200 payment

One thing is for sure. Whatever your strategy, extra repayments off your home loan will lead to guaranteed and significant long term financial rewards. 48

Investment Advice 29% Gain Guaranteed! By Murray Blakers

29% guaranteed! Most of you probably think I’m in dreamland! But the strategy I describe below is real and simple. In fact, some of you are already using this investment opportunity and don’t even think about it! However, before I tell you how, firstly, I want to discuss some investor psychology. When looking for places to invest retirement nest-eggs or areas to get better returns, most of us expect there to be something magical about it. For us, as accountants, if it’s too simple then it’s always hard to sell. Investments proposals that I see are often highly promoted asset and property deals and don’t get me wrong, I love property, but not all property deals are worth considering. I have often been asked to explain negative gearing and internal gearing investment proposals. These proposals are often packaged up with exciting promotional material and include the asset placement as well as the finance. There is no magic here. Negative gearing means losing money now to hopefully make more money in the future. Some of these proposals are overvalued and are so loaded with additional costs by the promoters it makes it unlikely that the buyers will ever profit. Of course, there are less exciting, simple strategies we can all use. Paying off private debt is a simple but effective strategy. It’s free and boring but it works. Even at today’s low interest rates, the return in paying off a private mortgage compared with a pre-tax investment is worth considering even for an average tax payer in the 34.5% tax bracket. Credit card debt even more so. For example, every $10,000 of debt repaid at 5% interest will save you at least $500 per year. To have $500 to pay off the interest you need $763 of income before tax at 34.5%. So, simply paying off your home loan is the same as earning 7.63% before tax. Where can you get 7.63% per annum return on an investment? In today’s market, that is a very good return but not as good as the 29% gain I promised you.

Superannuation is now a significant investment for most of us. What your super is invested in is important and you should take control of who has it and what it is invested in. But I’m not talking here about the underlying investments inside your super. I’m talking about the simple act of putting extra into your superannuation fund. Compulsory super is paid by employers, but for most of us there is the opportunity to make additional contributions. (There are limits so please seek advice). Super is a way of investing with tax concessions and the effect is shown below:For every $1000 earned for an average taxpayer at a tax rate of 34.5%, you will receive $655 in your hand to invest. ($1000 less 34.5% tax = $655.) Or if you contribute $1000 to a super fund before tax it will pay tax at 15% leaving $850.That means that you are instantly $195 better off ($850 less $655). farmland, forest, rocks, trees, fungi and lichen and fauna, as well as visited beach scapes. It captures local colour palettes and shapes as well as inherent, natural patterns found within these places and forms.” Grey-Smith studied History and English at the University of Western Australia in 1969 followed by a diploma in Typography Design in London in 1971 from which followed a long career in graphic design. In 1995 Grey-Smith completed a postgraduate degree in Librarianship Studies and continued a dual career in libraries and freelance graphics until she became a full time artist in 2013. Exhibiting in group shows since 2010, Site Lines is her first major showing of new works. Using discarded maps of the north-west of Western Australia she combines the cartographic depiction or semiotic representation of the land in the maps with the colours and textures of the perceived landscape. “I am interested in the semiotic marks or sign-systems used in these maps as they are quite particular to the art of cartography - specific symbols are used to indicate scrub, breakaways, vegetation and so on.” Site Lines provided a platform for Briggs, Grey-Smith and Hines to individually define their most current and unique sense of place. Their affinity with natural landscape elements was apparent in the collective body of work which was supported by the sensitive use of chosen mediums.

Linking canvas, clay, paper and perspex, Western Australian artists Sue Briggs, Sue Grey-Smith and Patricia Hines presented their joint exhibition ‘Site Lines’ at CASM in September 2015. The three award winning artists have artworks in collections locally, across the state and internationally. Briggs graduated from Curtin University in 1979 and taught art in both secondary and tertiary institutions until 2006. She has exhibited regularly in solo and group exhibitions until 2007 and continues to facilitate various private workshops. Her new painted works reflect upon the equal opposites of the natural environment that we move through our everyday lives - light and shadow, sunshine and shade. Paralleling her own personal uncertainty of moving physically and mentally from the city to the country (Perth to Margaret River), the works mark the beginning of a new phase in her life and towards understanding transition itself. “Our moods can be deeply influenced by their transition between this broad spectrum, so perhaps it’s not surprising that we can project and reflect thoughts and feelings into the environment around us, whether it be city or open countryside.” Hines studied textiles and industrial design at Curtin University and Deakin University during 1968 - 71. She then worked across the textile industry from 1972 until 1994 when she retired from Fabric Design to take up painting full time. Included in her belt of experience are free-lance fabric designer, resident fabric designer and screen printer, workshop coordinator and gallery events assistant, curator, retail proprietor, special functions coordinator and public art consultant. Her enjoyment of juxtaposing print in combination with laser cut acrylic, led lights and clay is palpable throughout CASM. “This current collection relates thematically to my immediate sense of place – the hills landscape,

Skies-Scroll’. A suspended installation consisting of three multi-coloured and marked, encaustic monotype rice paper scrolls of four, five and six meter lengths. To the right, ‘Ephemeral Skies Installation’ featured five large sheets of mono-printed rice paper installed above head height. The installation encouraged viewers to slowly walk underneath whilst looking up to view glimpses of changing sky-scapes. Encaustic mono-printing and encaustic artwork are two different processes. The former involves painting and making marks with wax mediums on a heated surface then layering paper over the heated surface to take the print. Encaustic artworks are usually prepared on board and require the delicate heat fusing of drawn, painted and collaged elements between layers of bees wax combined with Damar resin. Sadler showed both her mastery and enjoyment of these processes through the installation works and fifteen of the exhibited two dimensional works. Layers of expressive mark making and subtle colour changes captured viewers imaginations, allowing them to personally experience the atmospheric conditions conjured in Sadler’s contemplative observations. Alongside the wax works were several darker and more ominous ink works, including ‘Estuary Skies’ and the exhibition titled work ‘The Sky as a Metaphor’. These works combined several panels of black ink wash sky-scapes with mono-printed textures, conveying a narrative of several sky lines in the one work. The Sky as a Metaphor was another gem in the CASM exhibition calendar offering viewers an experience of expression through abstraction. Sadler’s works can be viewed at www.jennifersadler.com.au

Jennifer Sadler with ‘Impending.’ Image by Roz D’Raine A sense of dramatic calmness infused CASM throughout August whilst local Mandurah artist Jennifer Sadler transformed its internal spaces with her exhibition ‘The Sky as a Metaphor’. “This exhibition explores our binding connection to the environment” explained Sadler. A change of creative context from landscape to sky-scape was revealed by Sadler, since her last solo exhibition in Mandurah during 2013. “Primarily inspired by sweeping terrains and ephemeral elements, in recent times the skies have captured my attention and focused my work on the intricacies of the natural system and an observation of its patterns, lines and colours.” Diversifying in this exhibition was Sadler’s choice of medium which encompassed works in acrylic, ink, oil, encaustic (wax) and mixed media on canvas, board and paper. Her pallet of colour was purposefully reduced creating a sense of connectivity throughout the exhibition. Holding the central floor space, flowed ‘Ephemeral

Joanne Duffy

Award-winning Perth artist Joanne Duffy was, it seems, always destined to be a successful painter. Growing up in the wheatbelt region of WA, as a child she was a prolific drawer, greatly influenced by not only her painting mother and creative family but also by the stunning landscapes that surrounded her. After studying graphic design at Curtin University, a change of state to Victoria saw her career move into publishing, training and staff management before progressing into software analysis. After having children, Joanne returned with her family to Perth where she balanced a freelance graphic design career with heading up a local charity organisation specialising in perinatal mental health. Her return to Perth, however, had awakened her passion for the region. Taking inspiration from her childhood experiences of rural WA and her love of native flora and its environment, her painting began to flourish. Using a combination of her Bachelor of Arts (Design) and self-taught experience, Joanne’s work depicts the Australian landscape in an unique Expressionist style. Key inspirations lie in interpreting the emotional response to memories of landscape and how this affects our character. “Growing up in WA’s wheatbelt holds so many wonderful memories that are the foundations and source for a lot of my works at present. Picking up the smells, sounds… the family picnics at Kokerbin Rock and road trips up north hold such a rich tapestry of emotions and sensations that are wonderful

inspirations,” says Joanne. With an intense use of colour and sweeping brush marks, Joanne creates a sense of movement within her paintings, evoking glimpses of Australia’s rural landscape. The resulting artworks are reflective, full of vitality, intense colour and emotion. Avoiding Heatstroke in Animals By Sarah Cooper

A rapid elevation in an animal’s body temperature, heatstroke is a life threatening condition and requires immediate treatment. More common in dogs than in cats, particularly obese, brachycephalic breeds (dogs with short muzzles), it most often occurs through exposure to hot weather, excessive exercise or when animals are left in hot cars. Signs to look out for include distress, excessive panting, restlessness, a drooling of copious amounts of saliva, unsteadiness, muscle tremors and a rapid heart rate. Gums may also be bluish, purple or red in colour due to a lack of oxygen supply to tissues and the animal may also vomit blood or have blood in the faeces. To administer first aid to your pet before contact with a vet, start by immediately immersing the animal in a cold bath or soak them with running water from a hose. After wetting, use a fan or air-con and keep the air-con on in the car while travelling to the vet to maintain cooling. On arrival, intensive care is generally required to save the pet’s life. The level of treatment will vary from case to case with intravenous fluids needed in most cases to help cool down the body, support the kidney system and maintain blood pressure. Airways will also need to be monitored and maintained and excess saliva kept clear at all times from the mouth. Oxygen is also usually required and sometimes the vet may sedate the pet to allow effective and safe ventilation. The vet will then closely monitor the animal observing body temperature, taking blood tests and conducting urine examinations to assess the damage and progression in its body. To avoid that unpleasant trip to the vet, we recommend the following tips:• Provide pets with cool shaded areas. • Provide plenty of clean fresh water.

• Bring animals indoors on hot, humid days if

the indoor environment is cooler for the animal (e.g. has air-conditioning). • Move small caged animals into cool, shaded, well-ventilated areas in hot weather. • Avoid exercising pets in hot, humid conditions. On hot days, walk dogs very early in the morning or very late in the afternoon and avoid the hottest part of the day. • Avoid leaving dogs in vehicles. Pets die in hot cars and even when the windows are down, dogs can still overheat and die. Even on mild days, the temperature inside a vehicle can rise rapidly to dangerous levels. High temperatures in cars combined with inadequate ventilation mean dogs are unable to thermo-regulate, leaving them vulnerable to a fatal over-heating. Celebrates 21 years in operation

Mandurah-based Diversity South was founded in 1994 after families and community members had a vision to develop a local agency that could provide the opportunity for family members with a disability to live closer to home. Now a highly respected, dynamic provider of disability support, the organisation operates 9 community based homes offering lifestyle support to almost 40 adults. A not-for-profit organisation funded by the Disability Services Commission, in October of this year, Diversity South celebrates another important milestone. On the day of this year’s AGM, Tuesday October 27th, the Peel agency will be celebrating 21 years of creating fulfilling lives for people with disability. Each year at the AGM, the organisation recognises staff who have worked for Diversity

My Favourite Dish

Our tasty Vegetarian Breakfast is an update on a previous dish of the same name that was originally designed for our winter menu. Now available on our new Spring/ Summer menu, I first cooked this light and delicious meal for my wife and after receiving nods of approval I was inspired to add it to our list of breakfast dishes. With the recipe’s ingredients sourced from local supplier Sunlong Fresh Foods, the dish features lightly poached eggs, pan-fried tomatoes, avocado, spinach and creamy Hollandaise sauce (optional) on top of fresh garlic mushrooms. Served up on a bed of spinach leaves, the dish is best seasoned with a sprinkling of black pepper. Enjoy it all day for $17. The Great Australian Cookbook was dreamt up and created by co-editors and food writers Helen Greenwood and Melissa Leong. Zucchini and Pancetta Tagliatelle Being in season, zucchinis are now at their best. In this dish, they add colour and texture as well as fresh spring flavours. Simple and quick to prepare, this dish is perfect for taking outside and enjoying alfresco. Use smoked bacon or chorizo instead of the pancetta, if preferred.

Ingredients olive oil 200g diced pancetta (or chorizo) 3 medium-sized zucchinis 2 cloves of garlic, crushed 200g Parmesan cheese, grated 200g crème fraîche 300g tagliatelle

Method Use a mandolin, wide grater or vegetable peeler to create ribbons of zucchini. Set aside. Heat a small glug of olive oil and fry the pancetta for a few minutes until it starts to get crispy. If using chorizo, fry gently in a dry pan as it will cook in its own oil. Add the zucchini ribbons and increase the heat. Add the garlic once the zucchini has started to soften. Meanwhile, cook the tagliatelle according to its instructions and then drain. Add the tagliatelle to the zucchini and pancetta and reduce the heat. Stir in the crème fraîche and the Parmesan. Add a little water if the mixture is too stiff. Serve in bowls and enjoy with a leafy salad.

Recipe Butternut Pumpkin and Feta Pie Who says comfort food is just for the winter months? Surprisingly light, this is a pie that can be enjoyed in any weather and being packed full of pumpkin and spinach, it’s a healthy dish too. Ingredients 1 butternut pumpkin, peeled, deseeded and diced into 2cm chunks 1 red onion, finely chopped 1 large bag of washed spinach leaves 100g feta cheese, roughly chopped ½ cup pine nuts 4 sheets filo pastry 2 tbsp olive oil 2 tbsp butter, melted Method Heat the oven to 220C or 200C for a fan oven. Place the chopped pumpkin and onion into an ovenproof dish (or four smaller pie dishes) with 2tbsp olive oil, salt and pepper and mix well. Cook for around 20 minutes or until the pumpkin is tender. As the onion roasts, it will brown at the edges. Remove from the oven. Stir through the bag of spinach leaves until they start to wilt. Then gently mix in the feta and pine nuts.

Arrange the sheets of filo over the top so that the filling is completely covered. Crumple up the edges if they overlap the dish. Brush the top with melted butter and cook for around 15 minutes until the pastry turns golden. A perfect dish served with a salad, for a heartier version why not share a shop-bought BBQ chicken? When cooking the recipe for a second time, try adding in a little broccoli and a sprinkling of chilli flakes. Or try replacing the pine nuts with chopped walnuts.

Roast Capsicum and Salmon Pasta Salad Considering the variety and depth of flavour of this dish, there is surprisingly little cooking involved. If you are able to cook the pasta and prepare the capsicums in advance, then it is just a matter of mixing together all the ingredients in a bowl. An ideal fuss-free salad for the time-poor chef. Ingredients (Serves 2) 2 red capsicums, halved and deseeded olive oil 1 can salmon, skinless and boneless ½ cup pine nuts 200g pasta (penne, fusilli or other choice) Method Heat the oven to 220C or 200C for a fan oven. Place the capsicums in a roasting tin with their skin side up and pour over 2 tbsp of olive oil. Roast for 35 minutes and then add the pine nuts for a further 5 minutes. Keep a close eye on the pine nuts and remove the tin from the oven as soon as the nuts start to colour as they can burn very quickly. Meanwhile, roughly fork the salmon to break it up into smaller flakes. Cook the pasta as per its instructions, drain and allow to cool.

1 tbsp balsamic vinegar 1 tbsp capers 1 bag washed salad leaves juice of ½ lemon Remove the skin from the capsicums, it should peel off, and slice the flesh. Pour the balsamic vinegar into a large bowl with 3 tbsp of olive oil and mix well. Add the pine nuts and any oil and juices from the roasting tin. Then add the salad leaves along with the sliced capsicums, drained pasta and capers and toss together gently. Add the salmon on top. Squeeze over a little lemon juice and enjoy!
