A Note From The Editor
W
elcome to a new year and a new look Mandurah Life! Believe it or not, it’s now almost nine years since the launch of The Mandurah Life and four years since the magazine underwent its last major redesign. So, while everyone has been relaxing on the Peel region’s glorious beaches this summer, our design team has been busy working away to come up with a fresh new look for the magazine. Magazines are much like any other form of media with colours, fonts and specific designs moving in and out of vogue. So we thought it was time for a revamp! As well as our fresh new look, we’ve also kept and improved upon what we know our readers love about our magazines with plenty of eye-catching photography and interesting local content. Our other news is that after publishing 34 editions of The Mandurah Life as a quarterly, we have recently decided to change the frequency of the magazine to twice a year. Some of you may have seen our new Perth-based magazine, South of the River, launched late last year, and with regular Peel content planned for this we will now be publishing an Autumn/Winter edition and Spring/Summer edition in Mandurah. It’s been a fun ride these last nine years, a time that has witnessed the rise and rise of the digital age and social media while at the same time various doom merchants have been predicting the demise of print media. Well, when it comes to magazines, I can assure you that any so-called demise couldn’t be further from the truth. Today, there are more magazines published than ever before, indeed more magazines are published now than before the advent of the worldwide web. Quite simply, there is still nothing better than the interaction achieved when picking up a high quality, informative, feature-based tactile product. In an era of increasing digital fatigue, a change is also playing out where customers are hankering after more traditional modes of entertainment. Take, for example, the strong comeback in sales of vinyl where customers don’t just get to listen to poor quality mp3 files but instead get to enjoy a complete musical experience. It was once said that TV would kill off radio and video hire shops would kill off the cinema. Neither has happened and the truth is that all media will continue to co-exist. However, for us at The Mandurah Life, ink on paper will always be the medium for luxury and highly photographic content. Hope you like our new look!

The latest fashion trends from The Mandurah Life’s resident fashion expert. Hurray for cooler weather! Now we can indulge ourselves with shopping sprees to find beautifully textured layers and warm cosy sweaters. However, this winter, seasonal fashion is much more than that; there are trends with elegant and modern lines that will definitely be hard to ignore. Sure to be a favourite trend is classic Victoriana. It is romantic and refined and features high necklines, buttons, intricate lace and gigot sleeves on shirts and dresses. Deep burgundy is the colour of choice but there are also pieces in soft blush and, of course, monochrome. It is a very structured look and helps to create stunning silhouettes but it can also be toned down by adding a pair of skinny jeans, for example, to a form-fitting lace shirt. The seventies look still works for winter but it has a definite contemporary edge. It is centred on feminine floaty blouses, turtlenecks - neat ribbed or cashmere, A-line skirts and wide-leg pants, and the palette includes burnt orange, tan, blue and deep navy. For footwear, add a pair of skinhugging ankle or over-the-knee boots – perfect with an A-line skirt or a dress. Or, if you’re looking for an athleisure vibe, wear a pair of white or buff sneakers with cool androgynous pieces, like oversized sweaters, softly tailored pants, jersey tapered joggers and long 10 STYLE
luxurious coats in restrained colours – monochrome or neutrals. For these cooler months, keep hair naturally beautiful - it’s a trend that follows on from spring and summer but it does require a little effort to pull off. Embrace your hair type and encourage its natural texture and movement with the use of thickening sprays before blow drying or by working in a little volumising powder. A carefree look with body and movement is in.

Shawl and roll neck cardigans are great over shirts, and perfectly acceptable for business-casual weekdays, or over a t-shirt for the weekend. For jackets, there’s a trend for shorter tailored styles as well as the bomber, which never seems to go out of fashion. This winter, the bomber jacket is shorter and streamlined, and goes perfectly with sleek pants or tapered joggers for any off-duty occasion.

If you’re thinking of updating your home this year, take a look at the following inspirational ideas. Mixing up materials is a trend that works throughout all living spaces, adding interest and a touch of homeliness. As well as colours and textures, think about pairing new items with old, traditional with quirky. Iron and blackened steel have been more
commonly seen in the framework for furniture or out in the garden but now they are being used for kitchen flatware, doorknobs and bathroom fixtures. The metals look stunning alongside wood and glass. When it comes to eating, the trend has gone full circle and the formal dining room is making a big comeback. Rather than eating in an open plan space, it feels special to dine at a beautifully dressed table in a room set away from the chaos of everyday life. Embrace this trend for family meals or for more formal occasions. Fireplaces are on the increase too and are becoming the main focal point in a room instead of the TV. Trending colours for interiors are leaning towards the pairing of Rose Quartz and Serenity, chosen as the Pantone colours of the year. The soft rose tone with the cool blue are perfect with mid tones of greens and purples and yellows. This colourful palette produces a softer and more airy house than the neutrals and greys seen before.

The space where family and friends congregate, it needs to feel special and homely as well as being well designed. So, if your kitchen needs an update, take inspiration from these on-trend ideas. Before getting stuck into bench tops and accessories, rethink the actual layout of the room. It’s no longer enough to have a kitchen that looks stylish; it has to work well too. Assess what kind of areas or ‘zones’ are needed to achieve the required lifestyle. For example, is a significant amount of storage required? On returning to Perth, Meryl set up Meryl Carter Interior Designs and Home Renovations and it was then that she stumbled upon the distinctive range of home furnishings from Melting Pot Studios. JOHN TONKIN COLLEGE SURF SCIENCE PROGRAMME
S
econdary students throughout the Peel region have an exciting opportunity to be part of the John Tonkin College Surf Science Programme in 2017. As an approved specialist programme, students from any school in the region can apply for next year’s intake in years 7 through to 10. Providing students with the opportunity to participate in a challenging and exciting course, the Surf Science Programme allows students to closely link all learning to the marine environment and various outdoor activities, such as surfing, swimming and marine science. It is an academic extension programme with a strong focus on marine outdoor pursuits, projects, research and collaboration with community groups, and it aims to create successful learners, confident and creative individuals and active and informed citizens through its project based learning. The projects are collaborative across the main learning areas of Science, Mathematics, Humanities and Social Sciences, English and Outdoor Education, and each year group has at least one major project to complete per year. The year 7 and 8 groups focus on the impact of marine debris whereas the year 9 and 10 students focus on the dolphins of the Peel-Harvey Estuary and the organisation of a Dolphin Forum. Hand in hand with the projects, a number of community relationships have been initiated. Parties involved include Murdoch University Cetacean Unit (currently studying the dolphins of the Peel Harvey Inlet), Peel Harvey Catchment Council, Mandurah City Council, Mandurah Cruises, Canoe Trails of Mandurah 32 EDUCATION & TRAINING
and Pinjarra, Mandurah Environment and Heritage Group, Dudley Dolphin and Dolphin Buddy Club and Tangaroa Blue. The programme has also initiated the formation of its own community group known as Estuary Guardians. Estuary Guardians is a whole community organisation modelling itself on the River Guardians of the Swan River. With representatives from each organisation meeting together, sharing ideas and finding ways to pitch in and help each other, members are confident of achieving objectives more effectively. The main focus of Estuary Guardians in 2016 will be to produce a Fin Guide for the identification of the Peel-Harvey Estuary dolphins, to eliminate the release of balloons and to encourage schools to become Estuary Guardian Schools. Surf Science students are also Bushranger cadets, and through this programme they are able to achieve a Level 1 by the end of year 10. In Year 10 they complete their Duke of Edinburgh Award as well as their First Aid Certificate. Extensive outdoor marine activities include sailing at the school’s purpose built maritime centre in Dawesville, learning to surf at local beaches, kayaking and swimming. Students and community members are also invited to the Surf Science Expo to be held at the Maritime Centre on 20th May. This is a great opportunity to see the programme in action. W
e regularly tell our children that if they want to land a job with a top salary, a great work environment and career outlook, then they need to have a sound education in order to achieve it. And, as parents, we can help towards this pathway to job satisfaction by both establishing a proper work ethic and by channelling interests. It’s a fact that most of the world’s top and best paid jobs that come with all the perks require a strong background in science, technology, engineering and maths (STEM). However, were you aware that due to sharp declines in participation and attainment in these fields throughout Australian schools, as things stand, many of our children may not be considered for these top positions? Why is this happening? To put it simply, students are no longer selecting STEM subjects when it comes to choosing options at senior secondary school and, in turn, are not going on to study maths or science at university either. So, not only are Australian children 36 EDUCATION & TRAINING
limiting their work options, they are also placing Australia out of the world’s ever-growing, fast-paced knowledge economy. There has been a steady decline among senior high school students taking on maths for around 15 years while students choosing not to study a science subject have remained at around 45%. It would appear that there is an obvious correlation with this and the fact that the fields are not compulsory at senior secondary level. So students are simply choosing other courses. The question, therefore, arises, should we make it a requirement to take a maths or a science subject? It is compulsory in many other countries in the world to do so and, in fact, England is planning on making a change to its curriculum to ensure students study maths up to the age of 18. But this is not enough. In order to ensure that our students are prepared for the best future careers, they must have the interest and drive to pursue maths and science too. This has to come from the way the subjects are delivered and the experiences that the students have within their learning. Funding needs to be focussed on creating excellent resources right from primary school level, learning outcomes need to be relevant to real life, and links with industry need to be reinforced so that students get to talk to and learn from the maths and science experts themselves. HILLY COUFREUR
Trev Blyth is a self-taught artist, late-blooming, possessing a passion to draw and paint emanating from childhood. He is influenced strongly by nature and has a keen interest in primitive art.
After a childhood upbringing and primary teacher training in Holland, then family life in New Zealand, Hilly Coufreur now lives and works as a full time artist in Mandurah.
Producing his first ‘serious’ artwork in 2001, Trev has since consistently worked towards building a body of work to communicate and share his passions.
Starting her painting career four years ago, Hilly quickly found her passion was for large abstract art consisting of bright and bold acrylic colours on canvas. “I seem to be drawn to colours and shapes, contrast and movement” she says.
“My imagery arises from an interest in medieval stories, an observation of nature and the exploration of man’s pure connection with the elements” reveals Trev. Recent renewed camping trips along the north and south coast of Western Australia re-invigorated his connection to earth and spiritual tribal cultures. “Startling topography, wonderful creatures of land and sea, amazing plant-life and breathtaking skyscapes inspired my latest paintings which also incorporate symbols of the forces of nature.” Working in acrylic on large canvases, Trev combines his own library of symbols with a blend of historical and more contemporary stories of personal relevance. “The main aim of my residency will therefore be to explore a practice for new works that identify with my life and my beliefs, resulting in a cohesive body of work I can be recognized for.”
Inspired and influenced by the Western Australian landscape, Hilly’s work takes direct reference from the colours, lines and patterns of flora, fauna and architecture, as well as textures and colours of food. Her works are a process of spontaneous gestures, adding, moving and subtracting paint. She builds up cumulative layers of paint, working on patterns and details as they emerge. “My manner of applying paint has been to drag it with a squeegee. I am also drawn to the idea of using stencils, spray paint, sand and collage. During my residency I would like to explore these processes on a large scale.” Hilly’s works are in private collections in Australia, New Zealand and Holland.

Mythopoeia: World Tales Reimagined by Belinda Joynes Local Mandurah artist Belinda Joynes delighted CASM audiences with her intriguing exhibition Mythopoeia: World Tales Reimagined in February and March. A beautifully engaging first solo exhibition, Joynes’ work confidently delivered a series of whimsical, highly decorative and figurative narratives. Describing herself as a story teller, Joynes’ body of work explored themes relating to identity and connection through a female perspective. “After immersing myself deeply in the spirituality, culture and traditions of Europe, I came home determined to explore my own relationship and sense place within the landscapes and character of the Peel” she revealed. The artworks shown were a merging of her strongly developed artistic style and personal symbology with her research of heroic female figures and iconic visual references. Joynes creates a series of layers within each work, often beginning with pages from books which are sprayed with stencil patterns then painted over before highlighting in pen. The works are bright and clean and eyecatching.
Unique within the exhibition was ‘Mother’. The work is collaged with textile and paper and is subltly painted on raw linen. It was inspired by ancient text supporting a theory that Earth may have once been worshipped as a living femila being and the local Thrombolites at Lake Clifton. A favourite fable from the show was that of ‘The Weaving Girl’ which tells a sad tale of love, loss and hope. Joynes’ image reveals the pinnacle of the fable where the heroine is about to be reunited via a bridge of magpies through the heavens to her husband and children. Conveying a sense of power, cheekiness and fun is the ‘Moon Bear’. Bright and colourful, surrounded by large flowers in bloom, the ‘Moon Bear’ was inspired by the idea of the bear goddess presiding over nature. Joynes favourite piece was ‘The Garden of Life’. She said “When I was working on this painting I felt that everything was coming together in my practice and life. When I look at her I cannot help but smile and feel happy. experience in 1993 while swimming in the Southern Ocean, David Giles felt propelled to follow his passion and began to paint. Since then, he has gone on to become a renowned artist with over twenty art awards and fifty solo exhibitions to his name, including shows in New York, Paris, Singapore, Bali and throughout Australia. Cited by The Sunday Times as “one of Australia’s most exciting contemporary painters” and the subject of an ABC documentary, How Art Changed My Life, Giles has also featured in the World Wide Art Books publication, International Contemporary Masters, and in numerous interior design and builders’ magazines. Based in Fremantle, he is also now the owner of two art galleries, The David Giles Art Gallery at 49B High Street, and Studio Eleven at 11 Captains Lane. Correct pricing is the key
T
here is no doubting Mandurah is a fantastic place to live. With fabulous beaches and waterways, great surfing and fishing, quality private and public schools, a wide choice of shops and our capital city just 40 minutes away by train, it’s a lifestyle comparable to anything WA has to offer. It’s the aquatic playground that most people living inland can only dream about. Having said all of that, the local property has not escaped the same fate that other markets have succumbed to all over Australia. Currently, we are experiencing low property values, a glut of listings on the market and super-cautious buyers, who painstakingly pore over the hundreds of listings before choosing their ideal home. It’s a market that reminds me very much of how the market was way back in the early 1990s. At that time, I was carrying over 40 listings and, again, there were very few serious buyers around. It was also a time when auctions started to creep in to help move properties that had been on the market for between 6 and 12 months. A few weeks ago, I decided to attend an auction run by a local agent and in the lead up to the event my anticipation was high. The agent was presenting 26 properties for auction and I was excited to see how this day would finish up. From the outset, I was extremely impressed with the agency staff, who were incredibly professional, immaculately dressed and obviously very much into the day. The event was well planned and executed
without a hitch - that’s until the auction itself began. Disappointingly, the first 6 properties presented were passed in without a bid and by the end of the afternoon just 2 of the 26 properties had gone under the hammer. It is worth pointing out, however, that the agency was anticipating further interest in some of the properties following the auction. The poor response to the auction and disappointing outcome reinforced to me that, in this market, it is essential to get the price of the property correct from the outset. This is the only way to attract current buyers who are super-sensitive to values and only looking for bargains. The current slow market is difficult to swallow for those who bought during the boom times, especially those who are carrying very high mortgages on overpriced homes. Some sellers are sitting tight and holding on, hoping that the market will improve soon, which, unfortunately in the current economic climate, is unlikely to happen in the near future. At times like these, choosing the right agent is paramount. Agents who overprice properties just to get a listing simply waste everyone’s time and, if the price is not adjusted quickly, all the property will do is sit there. Worse than that, it will probably help to sell the house down the road which is listed at the current market value. An over-priced property makes other properties look like good value, which is not the ideal situation. As I said earlier, price is everything in this market. During my career, I have seen the market rise and fall. I have seen amazing prices achieved in the high times and I have seen properties going for a song at other times. It is not the luck of the draw but dedicated hard work and effective selling skills that get property owners results.

NEGATIVE GEARING By Murray Blakers

O
ne of the subjects I am most commonly asked about is negative gearing. Over the years, the expression had become a term connected to smart investing, however, more recently, some politicians seem to be referring to it as the scourge of the economy and a tax scam used by wealthy tax dodgers. So what does it mean and what should we do? The Negative part of the phrase is used to describe an investment, typically, a rental property that loses money. Gearing, on the other hand, is used to describe the money borrowed to increase the amount invested. The tax system adds together all of our income and we pay tax on the net result. So Negative Gearing is far from being a dodgy tax scam. Instead, it is a way of using borrowed money to invest in assets that don’t always make a profit. A property is negatively geared if the income from it is less than all the expenses incurred. Typical expenses will include rates, repairs, management fees and bank interest. If a property is negatively geared, the tax saving will reduce the loss, in turn making the investment less negative. The opposite of this is, of course, Positive Gearing. Here, an investor buys a property and makes money from the rent; a position far more appealing, particularly if there is a profit from its sale. So what are the politicians up to? Painting negative gearing as the evil cause of the country’s budget problems may make it easier for voters to swallow change. But what is the real issue here and what will the effect be if the law is changed? With the introduction of GST, income tax rates were lowered, however, over time, inflation has caused average incomes to move into higher tax brackets. This effect known as Bracket Creep is caused by wages

increasing faster than the government increases the tax brackets. Today, taxpayers are again paying very high tax rates with the top tax rate being 49%. The capital gains tax rate, though, was reduced to allow 50% of any profit made from asset sales to be tax free. This has reduced the revenue from the capital gains tax as the maximum rate is now effectively 24.5%. Changing negative gearing is not guaranteed to fix the cause of the budget problem and may result in less revenue. There is strong argument that capping negative gearing will stop investment in property, cause property losses and slow the economy. In 1985, the Hawk government capped negative gearing. This proved extremely unpopular and the government reinstated negative gearing just two years later. Due to a number of factors affecting the economy at the time there was no clear outcome to the tax other than the fact that it was unpopular. Back then, interest rates were as high as 18% and the then treasurer was attempting to bring down interest rates by discouraging borrowing. However, today, interest rates are at record lows. As an investor in property, like most of us, I don’t want a change in the capital gains tax rate or to see the scrapping of negative gearing. But the government has to manage the economy and reign in the budget deficit. As a defence against change, I believe the best strategy is to look for positively geared investments. i everyone! Hope you are all making plenty of birdies. What a great time of the year to be playing golf! Autumn is my favourite time as a golfer. The fairways are lush, the greens are cut a bit lower and the wind factor in Mandurah starts to drop off, making it perfect golfing conditions. So, if you have been out all summer on the boat enjoying the waterways, it’s now time to dust off the clubs and get back on the course. However, beware! From my experience, most people tend to jump straight back in at the deep end. They book in for 18 holes, go straight to the first tee and then proceed to have 5 hours of misery swinging and, sometimes, hitting the ball all over the place. The clubs then get thrown in the boot, usually from a distance, and remain there until the frustration subsides – which could be weeks! The best and most enjoyable way to get back into the game is to have a comeback plan. I would start by heading to the golf course and going straight to the chipping

green. I would encourage a few sessions of just hitting a few bump and runs and a few standard chip shots before working up to some pitching and bunker play. This will help get some control over the clubface and path which is critical before moving onto the long shots. I would suggest sessions of about 45 minutes followed by maybe a beer or a coffee in the clubhouse to help make the experience an enjoyable one. After a couple of sessions, I would then suggest splitting the session into 2 parts, introducing some long shots after the time spent at the chipping green. And there is really no need to hit thousands of balls. Instead, I would limit the full shots to no more than a small bucket. Over a 2 to 3 week period, I would also suggest introducing some putting before finally work your way up to some drivers. Follow this programme and you will be ready to take it all to the course and have an enjoyable golfing experience.
To fast-track your golf, why not book a lesson with a PGA qualified professional? I know that in today’s world everybody gets on the internet to fix technical problems but for all the technology in club design the average golfer’s handicap has still moved upwards over the last 10 years. This is because most people go by feel to fix poor golf shots as they cannot see the problem themselves. This and listening to their well-meaning mate, who rarely has much of an idea, is the biggest handbrake to playing good golf. Golf tuition has gone through some amazing changes, especially in the last 2 to 3 years, so if you have not had a lesson in that time it might well be beneficial to book one in and enjoy the informative experience to better golf. Mercedes-Benz B-Class The premium compact with enduring popularity
I
t’s now eleven years since Mercedes-Benz first revealed the B-Class to an unsuspecting world, and it’s certainly fair to say that the current model is an altogether different car to the one that first saw the light of day back in 2005. Described by the German auto manufacturer on its launch as its first Compact Sports Tourer, the original MK1 model met with a somewhat lukewarm response, a reaction more than likely fuelled by problems experienced by the MK1 A-Class, a car it was often compared to. However, the launch of the MK2 version in 2012 was a huge step in the right direction for MercedesBenz.

Wider, lower, longer and sleeker than its predecessor, it took much of its design cues from the luxurious R-Class and featured a vastly improved cabin layout. It was also the first Mercedes-Benz to sit on the all new chassis that had been specifically designed to carry the next generation of new Mercedes-Benz small cars. In
short, it revitalised its premium compact brand and revolutionised the German brand’s small car fortunes down under. Building on that success, the current facelift model, launched last year, offered added visual impact and

plenty of extra features as standard. Its stylish new look included reshaped headlights in line with the current Mercedes-Benz design ethics, an updated front bumper with larger air intakes, revised tail lights with additional LEDs and a reshaped rear bumper elegantly housing the B-Class’s exhaust outlets. The cabin also got a makeover with all models receiving a larger, 8-inch tabletstyle display screen together with updated luxurious trims. The added standard features also really hit the spot. The entry level B180 now has satellite navigation and a push-button start whereas the B200 models have added keyless start, a new improved navigation system, LED headlights, and blind spot assist. The top of the range B250 was also fitted with the Mercedes’ 4Matic permanent all-wheel-drive system together with an ambient lighting package and anti-theft system. Current engine options on the B-Class include a choice of three petrol engines and one diesel. A series
of small modifications on the facelift model managed to improve both performance and fuel economy in some models with the 90kW/200Nm 1.6L turbo petrol B180 just over a second quicker from 0 to 100km/h while its combined cycle fuel economy figure improved to 5.5L/100km. Both the 115kW/250Nm 1.6L turbo petrol B200 and 100kW/300Nm 2.1L turbo diesel B200 CDI also improved their fuel stats by 0.6L and 0.5L per 100kms respectively from the previous models. With increased competition in the premium compact sector, The B-Class’s all-round impressive package still takes some beating. Practical, stylish and spacious, it remains a class act in its field.

Inspired by international runways, beauty trends are veering towards a more natural look for this winter. But don’t despair if you like to ramp up your look a notch or two every now and then. The forecast also includes a sprinkling of sparkle, drama and impact.

he winter look for hair is all about a beautiful ungroomed look. Windswept waves and natural movement are all the rage. It allows personality to shine through and individuality to come to the fore. Braids kept loose and carefree or even multiple plaits woven in together are part of the nonchalant ‘undone’ trend too but they take a little more practice to perfect. Sea salt spray helps to create a slightly dishevelled look. Hand in hand with natural hair comes natural makeup. In past seasons, the ‘no makeup’ look was just that – a look – and a lot of work went into it! This winter, it really is stripped back with a simple combination of under eye concealer, mascara and a healthy soft peach or pink blush to the apples of the cheeks. Add a dewy youthfulness with a pearly highlighter cream, lip balm or a little royal jelly. As promised, there are options to add impact to your winter’s beauty look. Spend more time applying mascara and create long and defined spider lashes or doll lashes for a wide-eyed ‘60’s appeal. Or use a black liquid liner to draw a thin line across the upper eye lids. Also creating an impression this season is vivid eyeshadow. Match it to your outfit or lips, or opt for the eye makeup colour of winter – blue. Find a shade with undertones that suit your skin colour and either draw a slither of blue across the upper eye lids or fill them in completely for a loud pop of colour. Sparkle comes in the form of glitter. Just a little dusting is needed for eyelids, cheeks or nails for either an angelic daytime look or for when wanting to add a different dimension to an evening look. Finally, as for the drama, that part is being played by the lips. Bold lips are back for winter in vibrant red. The main thing to keep in mind here is that the drama works best if all other makeup is pared back, natural and nude. To help bold red lips remain perfect for hours, use a lip liner in the same colour and line the lips before as well as after applying the lipstick. Very deep plum and maroon shades are striking too and, this winter, are being used to create a wine-stained look.

R
abbits and guinea pigs are herbivores with a similar gut to horses and constantly growing teeth. This means to ensure healthy guts and trim teeth they need a highfibre diet. The majority of the diet (over 80%) should consist of grass or fresh hays, such as Meadow, Oaten, Pasture/Paddock, Timothy or Wheaten. Timothy hay tends to be the tastiest whereas Lucerne, although also tasty, should not be fed in large amounts as this can be too high in protein and calcium. The remainder of the diet should consist of vegetables that are high in vitamins and minerals. These are the leafy greens and herbs and common examples include Asian greens, broccoli, sprouts, cabbage, spinach, parsley and capsicum. A small amount of high quality guinea pig or rabbit-specific pellets can also be offered. These can be ordered through our veterinary clinic. Pellet mixes and mueslis are best avoided as guinea pigs and rabbits will typically pick out their favourite bits; the tastiest and unhealthiest. Fruits can be offered as an occasional treat but never feed rabbits or guinea pigs cereals and grains, nuts and seeds or processed and sugary foods. A special note on guinea pigs: Guinea pigs are unable to produce

and store Vitamin C and, therefore, need dietary sources. Vitamin C deficiencies cause a variety of diseases, some very serious. Follow previous recommendations and those leafy greens should supply all the Vitamin C required. A special note on rabbits: A new strain of Calicivirus has been developed to maintain Australia’s feral rabbit problem. Please make sure that rabbits are up-to-date on their vaccinations!
R at s a n d M i c e Rats and mice are omnivores and need a varied diet of plant and animal sources. Good quality rat pellets or cubes are available and can be ordered through the clinic. A variety of fresh fruits and vegetables should also be offered daily. As with rabbits and guinea pigs, avoid feeding them a seed/grain mix as, again, they will pick out their favourite bits, predisposing them to vitamin deficiencies and obesity. Seeds, grains, cereals, bread and pasta can be offered as occasional treats or used in training sessions.
Ferrets Ferrets are strict carnivores, just like cats, and their diet needs to be high in protein and fat and low in carbohydrates and fibre. There are ferret-specific diets available and
these offer the best balanced diet. Alternatively, a ferret can be fed on a premium, high quality dry kitten food. Supermarket brand kitten food, however, should be avoided as it will not have the appropriate protein and fat content. For those brave enough, try feeding or supplementing with a natural ‘whole prey’ diet. It is important to offer raw meaty bones at least weekly to help prevent dental disease, which ferrets can be prone to. Ferrets also love fruit and vegetables although they can’t digest them easily so these should only be offered as an occasional treat and in very small amounts. Remember to keep up to date with distemper vaccinations and heartworm prevention. Before Kristina Gough became a veterinarian she was unaware of how specific our pocket pets’ dietary needs were! She thought she was doing the right thing and her Lop rabbit lived on a diet composed largely of rabbit pellets with daily carrots, iceberg lettuce and a handful of Timothy hay. Pork Chop lived a happy life but he developed obesity, severe dental disease and skin issues. Gezellig RESTAURANT There’s a new addition to the eating out scene in Mandurah and it’s a restaurant that is certainly bringing something fresh and different to the area. Located on Mandurah Terrace, a stone’s throw from Mandjar Bay, Gezellig Restaurant opened its doors just before Christmas and diners have quickly found there’s plenty to savour behind its colourful exterior. So, why the name? Well, ‘a feeling of well-being’ is perhaps the closest translation of the Dutch word gezellig into English and by naming the restaurant after this expression, it’s clearly a mood that the team at Gezellig want all diners to experience. After all, its moments like these that need to be enjoyed with family and friends so where better than in a relaxed welcoming restaurant? It might be named after a Dutch word but don’t assume that Gezellig is a Dutch restaurant. Although containing some Dutch influences, the menu offers up a far more diverse range of choices for its customers. In fact, its diversity is its strength and it’s a menu that has been thoughtfully compiled to reveal some wonderfully
creative and quite unique dishes. Arriving for lunch, we began by trying a selection from the Light Entrée section. The Halloumi and Leek Fritters served with thyme za’atar and honey were simply delicious; the combination of the honey and cheese was absolutely divine. And then the Bitterballen (a type of Dutch meatball), served with a mustard cress garnish, was not only beautifully presented but a great example of tasty, authentic Dutch cuisine. Next, we tucked into the Pumpkin Salad; a dish perfect as a light lunch dish or available with chicken for a more substantial meal. The pumpkin, together with the quinoa and beetroot served on a bed of hummus, offered up a mouth-watering selection of flavours and the minted yoghurt dressing was the perfect accompaniment. Excellent! However, for us the real highlight of the meal was the stunning Spicy Lamb Ribs. Served with naan bread and a wonderfully fresh coleslaw-style salad, the ribs with their infusion of harissa and ras el hanout spices were well worth the visit alone. With the meat literally falling away from the bone, this was a standout dish and comes highly recommended. With its stylish interior and water spraycooled alfresco area, Gezellig is the perfect spot to while away some quality time with friends. In addition to the fantastic lunch and dinner menu, the restaurant also offers up an extensive breakfast menu as well as a well-priced kids’ menu. With a range of dietary requirements catered for, the friendly staff are more than happy to accommodate any requests. Go pay them a visit.

Three Rivers Brewing Company A small, family-owned microbrewery has recently opened its doors in Mandurah and, after just a few months in operation, has quickly attracted a loyal and increasingly large following. Run by Mark Rivers and Trina Youchak, Three Rivers Brewing Company takes its name not only from the family name itself but also from the three rivers of the Peel region; the Serpentine, Murray and Harvey. Adding to the significance of the name, the city of Pittsburgh in the USA where Trina grew up is nicknamed the Three Rivers City. A qualified Environmental Scientist with a PhD in Catchment Science, Mark is a former home brewer who, having won a number of amateur awards (including the James Squire Trophy for Champion Amateur Brewer at the 2014 Perth Royal Beer Show), decided to pursue a commercial brewing career. The sales and marketing side of the business is carried out by Trina and the business operates out of a unit on Harlem Road in the suburb of Greenfields, Mandurah. With a total of eight standard beers now being produced, plus an occasional seasonal specialty beer, the philosophy behind the business is simple. Three Rivers Brewing Company believes the general public has had enough of mass-produced, poor quality beer and to address this, they produce great-tasting, traditional-style beers from the finest available

ingredients. Using just water, malt, hops and yeast, the award-winning beers are unfiltered and contain no additives, preservatives, colours or sugar with all beers brewed to the strict German beer purity law, the Reinheitsgebot. YO’ GOOD As Mandurah’s first and, currently, only frozen yoghurt shop, Yo’Good is the brainchild of a local couple, who, having discovered frozen yoghurt shops overseas, were determined to bring the idea to Mandurah. Based on a self-serve concept, customers create their own delicious treats by firstly picking a favourite flavour and then by adding as many toppings as they like. The price of the cup is based on the weight, $2.70 per 100g. Winter Recipe
Chicken and Chorizo Casserole A hearty casserole – surely everyone’s idea of perfect, home-cooked comfort food! This recipe uses the Spanish sausage chorizo, which, with its earthy robust spiciness, takes the dish to a whole new level of deliciousness. Serves 4-6
Ingredients 200g chorizo, sliced 1 red onion, chopped 1 whole chicken, jointed 400g new potatoes, halved 1 small punnet cherry tomatoes 70 FOOD & WINE
250ml white wine 600ml chicken stock 2 tbsp tomato purée 2 tbsp chopped parsley freshly ground black pepper
Method Place the chorizo in a large flameproof casserole dish and fry, without oil, over a medium heat until it starts to crisp and its oil is released. Remove from the dish. Add the onion and fry gently in the chorizo oil for 5 minutes until it softens. Add the chicken and stir to coat it in the oily onion mixture. Brown the chicken on all sides. Return the chorizo to the dish and add the potatoes. Stir in the white wine, stock, tomato purée, parsley, and black pepper. Bring the liquid to the boil and then place the lid on top. Reduce the heat to its lowest. Cook for 45 minutes or until the chicken is cooked through and the potatoes are tender.

Leek, potato and feta tart
This is a deliciously creamy vegetarian tart that makes for a hearty warming supper for cooler evenings. For another time, try using roasted pumpkin instead of potatoes or swapping out the feta for an alternative cheese of your choice. Serves 6

Ingredients 500g shop-bought 100g feta cheese, crumbled shortcrust pastry (thawed) 50g pine nuts butter 200ml thickened cream 300g potatoes, sliced
1 leek, sliced, rinsed and dried
100ml milk 4 large eggs
Method Preheat the oven to 200˚C. Use a little butter to lightly grease a 23cm loose-base tart tin. Roll out the pastry on a lightly floured surface and use it to line the sides and base. Trim off the excess pastry. Line the pastry base with baking paper and half-fill with rice. Bake for 10 minutes then remove the paper and rice and bake for another 10 minutes or until the pastry is golden. Remove from the oven. Lower the oven temperature to 150˚C. Place the potatoes in a pan of cold water and bring up to the boil. Lower the heat and simmer for 5-10 minutes until the potatoes are almost cooked through. Drain the potatoes and leave aside to cool. Meanwhile, melt the butter and fry the leeks over a gentle heat until softened. Remove from the pan. Add the leeks to the cooled potatoes along with the crumbled feta and pine nuts. Gently mix the ingredients together. Spread the mixture over the base of the pastry case. In a large bowl, mix tother the cream, milk and eggs. Season with salt and pepper and pour over the leek, potato and feta mixture. Bake in the oven for 30 minutes or until set in the middle. Stand for 5 minutes and then serve. 72 FOOD & WINE
