However, we believe there is still something quite unique and special about print media. Yes, we live in an increasingly digital age but glossy, high quality magazines continue to thrive through their unique way of interacting with their audience. Magazines are portable, don’t take an age to re-boot and don’t run out of battery power. They are entertaining, informative and wonderfully tactile. It was once said that TV would kill off radio and video hire shops would kill off the cinema. Neither has happened and the truth is that all media will continue to co-exist. However, for us at The Mandurah Life magazine, ink on paper will always be the medium for luxury and highly photographic content.

Dressing for c o o l e r d ay s The latest fashion trends from The Mandurah Life’s resident fashion expert.

The cooler weather has arrived but this is not the season to be dull and drab. This year’s fashion has turned up the volume on colour with new collections bright and unpredictable. Over the coming months, expect to see bright red, soft pink and metallics interspersed with midnight blue, purple and military green. For prints, there are flouncy, sheer florals with dark backgrounds on shirts and midi dresses with deep necklines, which may at first seem more appropriate for springtime but, with long sleeves, they suit the season perfectly. Another current feminine trend is the romantic blouse with Victoriana embellishments, such as lace, bell sleeves, ruffles and ribbons. It’s a take on a look that we have seen before during past seasons. Keep it simple with a pair of jeans or high waisted, wide leg pants for a classic and pretty look. Or embrace the Victoriana trend to the max and pick out a beautiful ankle-grazing dress with just the right mix of OTT and playfulness. Swap out the romance for more high impact, glitz and drama and revisit the 80s. Statement pieces, such as pointed toes on heels, gorgeously dramatic and fluid metallic fabric, mirrored sunglasses and big shoulders are being welcomed back and reimagined. So instead of garish colours and voluminous pants, pieces will come in both strong and neutral shades, teamed with contemporary skinny

jeans or smart outerwear. And for footwear, it has to be white – in pumps, loafers, mules or boots. In complete contrast, there is a reemergence of the Normcore trend. Officially given its name around two years ago, it originally featured generally unremarkable pieces, such as logoed tees and baseball caps with understated casual jeans. The blank ‘anti-style’ look was adopted by wearers who didn’t want their clothes to pigeon-hole them yet, ironically, it has now turned into a

major fashion trend. The new way to wear Normcore is to add bold accessories, like a tote or heeled boots. Bomber jackets are still popping up every season with new textures and colours, and this wardrobe staple never loses its edge. Bright colours, floral embroidery and gorgeously expensive looking fabric, this season’s bomber can be worn with favourite jeans, tailored pants or a midi pleated skirt. Remember puffer jackets? They are back again this season but with an updated shape. Puffers, in every colour imaginable as well as metallic, look better unzipped and, oversized with a wide crop, look great with any kind of pant.

SUE KALAB SPECIALISING

IN WATERCOLOURS depicting Australian nature, Bunbury artist Sue Kalab began her professional art career in 1981 after moving to Mallacoota in Croajingolong National Park, Victoria. Here, she took inspiration from the natural beauty of the area, observing birds, nests, bush orchids and dolphins, her work a response to the power of natural images found during bush walks and beach wanders. After moving back to WA, Sue lived and worked in an Aboriginal community in the Pilbara before moving to Bunbury in 1995 where she established her beachside studio.

Her style of work has been described by Perth arts writer Julie Prott as “cultivated rusticity,” while art critic Judith McGrath suggests the viewer “lingers and takes the time to engage with these powerful works of gentle beauty”. Others comment about its timelessness and meditative qualities whereas Sue herself describes her work as soft realism. "My work endeavours to portray the peaceful and serene qualities one finds in nature – the timelessness, the sense of perpetuity, and nature’s unobtrusiveness. I see great loveliness in the things I choose to paint and I try to touch a deep part of people’s nature.”

Nature Diaries – Tuarts, Terns and Time Bunbury Regional Art Galleries Ends Monday 17th April Bunbury Regional Art Galleries plays host to Sue’s twenty-third solo exhibition this autumn. The opening event was on Friday 17th March with Hon. Melissa Parke, former member for Fremantle and UN lawyer. Described by Sue as historic, geographic, anthropologic, community-building, entertaining and educational, the exhibition will focus on trees, birds and nature’s antiquity. “I conceived this project because many people sometimes don’t appreciate the wonderment of nature, the layers to biodiversity, or how thrilling it is to learn about the intricacies of the life of a Fairy Tern. It’s also important to appreciate the feeling of traveling in time when comprehending the great age of our forest trees and balgas or grasstrees and to know they hark back to the days before Da Vinci painted “Mona Lisa”. And why forests are crucial to our endangered black cockatoos. It

Situated in the beach side suburb of the same name and a quick 10 minute drive from Mandurah, Secret

Harbour Golf Links boasts 18 superbly designed holes set against the panoramic setting of the beautiful Indian Ocean. Another local links course, the experience here is more of a traditional Scottish links course with small pot bunkers and rolling fairways amid the natural sand dunes and wonderful ocean views. The signature hole for many is the par four 17th where a wide fairway is littered with pot bunkers before coming to an abrupt halt at a lake. Over the lake sits a small two-tier green, again surrounded by bunkers with bushland behind. Distance control is essential here.

MANDURAH COUNTRY CLUB

Nestled between the Indian Ocean and the Peel Estuary in Halls Head, the course consists of professionally designed fully grassed fairways and superb grass greens. The fairways are lined with many varieties of natural flora and majestic eucalypts. Open to the public, this is an 18-hole, par 72 course, 6142 metres in length.

i golfers! I hope you are all playing well and enjoying your golf. There’s a famous old saying in golf that you drive for show and putt for dough. Now, this is often likely to be true for the elite players and professionals that already have a very high skill set but it is certainly not the case for all. For the average weekend warrior, golf can become a very demoralising game when time is spent continually chipping out of the trees or, even worse, when losing the ball and not even getting a chance to putt on a hole. So to consistently drive the ball long and straight we need to achieve a few things:1 We need to launch the ball up into the air with slightly less spin rate.

We need to increase club head speed. We need to have the club face and path married up.

To help with all of these things, it’s necessary to have the correct set up for the driver. It is important to play the ball forward in the stance just inside the front heel. We then need to move our chest and head behind the ball and feel like our front shoulder is a little higher than our back shoulder. This will then move the low 46 SPORT & RECREATION

point of the swing to slightly before the ball, help deliver the club head slightly on the way up thereby launching the ball up into the air with less spin to give maximum carry and run. With set up correct, the focus should be on rotating through the shot with our pivot and creating as much club head speed as possible. Simply relaxing grip pressure can also help with speed as most golfers have an overly firm grip when swinging. A great practice drill is to do baseball type swings up at belly button height. The goal is to turn through on the downswing and create a whoosh noise. The faster the club head speed the louder the whoosh. With a subtle change in set up and a bit more whoosh, everyone will be able to drive the ball a whole lot further. Good luck and good golfing!

f you dream of achieving your full potential and achieving real results in your chosen sport, the sport of roller skating is no different to any other. Like any competitive environment, it will all come down to the little things you do, the small choices you make, the way you move your body and the daily commitments you make. These factors will help shape the big results in the future. The first lesson to take on board is that you need to show up. That’s all of you – both your mind and your body. Today, everyone wants to acquire new skills and wants them now. However, remember that nothing happens overnight. Dedication is required to learn and master skills - without distraction. Dedication must, of course, come from the skaters themselves but we find parents that encourage and show an interest in the practice routines and training greatly help to install the required disciplines in their children. From a coach’s perspective, we encourage our skaters to go through the process of practice so that they learn it for themselves. Self-learning and discovery provides an amazing

sense of self-esteem in any skater, and the sport is also a great way of improving physical movement, one-onone communication and confidence within a group situation. Here are my 5 tips on how to become a successful artistic roller skater:-

Turn up consistently and commit the time. Question whether you have the flexibility, strength, and stability for a particular skill. If not, how do you go about developing it?

Question whether you have enough understanding to follow through on the stages you are learning. Do you understand how various steps link together or do you need more lessons? If so, seek out a class where someone clearly explains this process. 4 Ensure you are always revisiting the learning process. Physical bodies require repetition, so are you practising this often enough for it to flow and become natural? For skaters, this can be done both on and off skates - there is always something new to discover. 5 Finally, do you have a regular measurement process in place or even a coach? If not, look for someone with the ability to take you to the next stage. Putting your trust in a coach is a key step in the process. A coach is a technician who has a different perspective; a coach can see what you can't. A good coach will become a friend who will stand by your side, cheering you on and celebrating successes. They will also break down weaknesses and point out where you need to improve. While they can't do it for you, they will provide all the required knowledge while pointing you in the right direction. They will also be someone who cares deeply about you and your wellbeing, someone that is highly skilled with the tools to help guide you at the moment you most need it. The right coach should also be someone who is highly qualified with strong accreditations, a strong track record and respect for others. elieve it or not, it’s now six years since the launch of the hugely popular Range Rover Evoque and perhaps the true mark of its success is in the number of competitors now occupying its market space. Hardly surprising as on its conception it ingeniously turned the idea of a chic, city-focused, luxury SUV on its head. Famously codesigned with Victoria Beckham, as polished as its bigger siblings, and about as cool as an SUV can get, its sumptuous lines and unmistakeable looks turned it into an overnight sensation. JOHN TONKIN COLLEGE Surf Science Program

S

econdary students of the Peel Region have an exciting opportunity to be part of the John Tonkin College Surf Science Program. As an approved specialist program, students from any school in the region can apply for the 2018 intake in Years 7 to10. Providing students the opportunity to participate in a challenging and exciting course, the Surf Science Program allows students to closely link all learning to the marine environment and various outdoor activities, such as surfing, swimming and marine science. It is an academic extension program with a strong focus on marine outdoor pursuits, projects, research and collaboration with community groups and aims to create successful learners, confident and creative individuals and active and informed citizens through its project based learning. The projects are collaborative across the main learning areas of Science, Mathematics, Humanities and Social Sciences, English and Outdoor Education and each year group has at least one major project in which they are involved with per year. Year 7 and 8 groups focus on the impact of marine debris whereas year 9 and 10 students focus on the dolphins of the Peel-Harvey Estuary and the organisation of a Dolphin Forum. Hand-in-hand with the projects, a number of community relationships has been initiated. Parties involved include Murdoch University Cetacean Unit

(currently studying the dolphins of the Peel Harvey Inlet), Peel Harvey Catchment Council, Mandurah City Council, Mandurah Cruises, Canoe Trails of Mandurah and Pinjarra, Mandurah Environment and Heritage Group, Dudley Dolphin and Dolphin Buddy Club and Tangaroa Blue. The program has also initiated the formation of its own community group known as Estuary Guardians. Estuary Guardians is a whole community organisation modelling itself on the River Guardians of the Swan River. With representatives from each organisation meeting together, sharing ideas and finding ways to pitch in and help each other, members become confident of achieving objectives more effectively. Surf Science students also take on an active leadership role in working with primary school students to increase awareness of our local waterways and how we can work together to keep them in pristine condition. The program is a great platform for students who wish to pursue university entrance or work in areas associated with the environment or community. Students and community members are invited to the Surf Science Expo to be held at the Maritime Centre on 19th May. This is a great opportunity to see the program in action. not-for-profit provider of disability services to the Peel Region, Diversity South has experienced huge growth since its inception in 1994 and recently celebrated its 21st anniversary. In this edition, we get an insight into the role of CEO Jill Liddelow. What are the key services Diversity South provides? Diversity South offers Lifestyle and Community Access programs. The Lifestyle program offers opportunities for individuals with intellectual, physical and neurological disability to share a home in their community. Homes are staffed 24 hours a day to support each individual in all areas of their lives with varying levels of support depending on requirements. The Community Access program revolves around community participation in activities of the individual’s choice to develop skills and relationships. Community Access also supports individuals living with family to participate in their community, giving the family a break and the individual opportunity to develop independence. All individuals are supported to make their lifestyle choices around their interests, friendships and opportunities in the wider community.

What does your role entail within the organisation? As they say, the buck stops with me. There are many facets to the role of CEO; first and foremost the dignity, safety and security of our individuals and their families. This is achieved by a strong staff support team who have ongoing access to the latest information, up to date policies, procedures and guidelines and administrative and organisational support. I have every confidence that our management team provides this, which allows to me to conduct a general overview of the agency, enabling me to advocate and negotiate on the organisation’s behalf. This allows me to ensure we are able, by way of funding, training and professionalism, to provide the services we are contracted to provide. Keeping the Board of Management updated in all aspects of the organisation is also a large part of my role. How many homes do you know have and how many residents? We currently provide Lifestyle Support to 43 individuals in 10 homes, and the Community Access program currently supports 32 individuals.


Where does the funding for Diversity South come from? Diversity South is funded by the Disability Services Commission and the funding is based around each individual’s support requirements. Occasionally, we receive grants from other organisations, such as Alcoa, Peach, Mayday and Helping Hands. These grants give us the ability to provide much needed equipment to allow individuals to develop skills in different areas of their lives. For example, the last grant from Mayday assisted with the purchase of an iPad and communication program to improve an individual’s speech skills. Do you plan any further expansion of the organisation? Over the last 9 months, we have purchased two new homes. These homes have accommodated the changed needs of a few individuals and have also given us the ability to welcome several new individuals and their families. We now have an opportunity to offer individuals and families the option for an individual living at home to take a break with us. We currently have a few vacancies and my feeling is we will look to fill these, take a breath and consolidate. Having said that, the roll out of the WA NDIS in July may increase demand for our services and, if that is the case, we will, as an organisation, need to make decisions about the future. What do you find the most satisfying part of your role? Knowing that every day, Diversity South staff at all levels from all areas are supporting people with disability to lead fulfilling lives. It sounds a cliché I know but the reason we are here is because people live with disability and I do whatever it takes to ensure the wellbeing of individuals and all staff to maintain a high level of flexible, professional and excellence in service provision. How do you manage to relax when not running Diversity South? I spend time with family, exercise daily, kayak and crab in the summer and I take any chance I have to ride my motorbike. Being on my bike is the best way to blow out the cobwebs and relax. It also gives me plenty of thinking and planning time for my role as CEO.

Diversity South is a flexible, innovative and professional provider of support to adults with intellectual, physical and neurological disability. The Diversity South Lifestyle Program offers shared living arrangements giving each individual opportunity to live their own lives. Whilst being supported to develop skills in all areas of their lives, including social, emotional, physical and spiritual, individuals are supported to participate in and become valued members of their local and wider community. Individuals are members of both social and recreational clubs and groups in their local and wider community. Independence and active citizenship are both prized and promoted across all programs. Run by the Messineo family, the restaurant specialises in homemade pastas, wood-fired pizzas and traditional dishes and, over the years, has been the recipient of numerous awards. Head Chef and wine enthusiast Damian has also put together an extensive wine list, featuring both local and imported varieties together with some rare vintages. The continued popularity of Paparazzis was more than evident on our arrival for lunch, as was the close rapport between customers and the staff. Although sorely tempted by the Harvey Beef Fillet served with truffle mash and a mushroom or peppercorn sauce, in the end, I plumped for a house speciality, Spaghetti Marinara served with prawns, mussels, calamari and local shellfish within a Napolitana sauce. Having said that, the Penne Campagnola served with chicken sundried tomato, mushroom and tomato cream sauce ran it a close second! If you had to name one classic Italian sauce, then it would have to be Napolitana. Taking its name from the Italian city of Naples (the birthplace of pizza), it’s an ever present sauce in a number of different Italian dishes and it works beautifully with fish. Full of fresh tomato flavours with a hint of chilli, it was the perfect accompaniment to the fabulous fish and excellent pasta, as indeed was the chilled glass of 2015 Pinot Grigio from Italian winery Tiefenbrunner with its unobtrusive bouquet and hints of pear and candied fruit. With attentive service and a welcoming atmosphere, this gem of a local restaurant is the ideal place to enjoy a relaxing lunch or dinner with friends and family. Café MOKA

LOCATED IN PICTURESQUE Mandurah Ocean Marina and boasting sublime waterside views, Café Moka has long been a popular spot for diners. However, its reputation has soared since husband and wife team Gorkem and Effie took over the business in 2013, becoming a firm favourite amongst locals and visitors for its delicious coffee, sumptuous breakfasts and enticing and creative offerings. With a mix of modern Australian and MiddleEastern influences, there are plenty of must-try dishes on the menu. Take our word for it, the Shakshouka, a Middle-Eastern style breakfast with baked eggs in a harissa-spiced tomato ragout served in a pan with ciabatta, goat’s cheese, Turkish chorizo, sumac and fresh parsley, is definitely one of them. Don’t miss this if visiting for brekkie or brunch. However, our visit, this time, specifically coincided with lunch service. This was to give us a chance to sample from a different side of the menu although we

still had our heart set on trying one of those fabulous coffees. For lunch, diners can choose from a selection of fresh fish dishes, burgers and salads. There’s also a Pulled Steak Sandwich served with braised beef, spinach, chorizo, fetta, capsicum relish, kewpie mayo and chips which, incidentally, almost won us over. Foodies will also enjoy the Organic Quinoa Salad with maple sweet potatoes, poached egg, roasted peppers, fresh mint, roasted almonds and pepper dressing – a healthy yet filling alternative, particularly when adding either free range chicken or smoked salmon. However, for us it had to be the Crispy Skin Barramundi. Added to the menu at the start of the summer, this dish has gone down a storm and it’s not hard to see why. Topped with stir-fried strips of leek, the firm yet beautifully moist barramundi was placed on top of a sensational Japanese-style potato salad and fresh vinaigrette salad. Wow! This dish with its wonderful array of flavours and textures really hit the spot and for those that enjoy the versatility of barramundi, the pan-fried, skin-on serving was, in our view, the best way to eat it. Stylishly presented, reasonably priced at $26 and generous in size, this dish was an absolute winner. With lunch served from 11.45am and the breakfast/brunch menu available all day, every day, you will be spoilt for choice! Highly recommended. Not one but two dishes actually, both glutenfree and both have been on our menu since we opened Food + Drink in February 2015. Here’s introducing our delicious Persian Love Cake and our fabulous Triple Chocolate Brownie. Ever since we opened our café in Dawesville, we have always tried to offer treats for customers with special dietary requirements. My mum, like many of our regulars, is gluten intolerant, and this has made me more conscious of the fact that options are often limited for those that either choose to, or have to, eat gluten-free. However, with our treats freshly made on the premises we, of course, know exactly what goes into our dishes and can keep our customers fully informed. The Persian Love Cake was first developed during my time at Raven Wines in Pinjarra and it has since been a huge hit on the menu here. Layered with almond meal, the cake features a tasty mix of fragrant Middle-Eastern 62 FOOD & WINE

spices, including nutmeg, cardamom, cinnamon and pistachio nuts together with eggs, sugar, yoghurt and butter. Available at $6.50 a slice, it’s one of our most popular items. Our Triple Chocolate Brownie is another favourite amongst locals and particularly with my mum! It’s also popular with customers who don’t have specific dietary needs. It is made with both dark and white flakes of chocolate, which is this then mixed with glutenfree flour, sugar, butter and eggs. Passionfruit, Mango and Coconut Muffins A deliciously tangy snack – try stopping at one…! Makes 12

Ingredients

Method

2 eggs

Preheat oven to 180˚C. Grease a 12-hole muffin tray and line with baking paper. Whisk eggs and caster sugar together until mixture is frothy. Add yoghurt and melted butter and mix. Add the passionfruit pulp, mango juice, desiccated coconut and self-raising flour and mix until just combined. Spoon mixture into muffin pan. Sprinkle with extra coconut. Bake for 15-20 minutes or until golden. Enjoy!

Sweet Potato Chipotle Chilli Chunks of seasonal sweet potato are a delicious surprise in this chilli. Add more heat as desired and serve with rice or tortilla chips. It’s easy to personalise this dish to your own taste, just use fresh tomatoes, cauliflower, broccoli or any other fresh veg of your choice. Serves 4

Ingredients 2 medium sweet potatoes, peeled and cubed 1 large onion, chopped 500g beef mince 2 garlic cloves, crushed 1 small zucchini, chopped 1 green capsicum, seeded and chopped 1 jalapeno, seeded and chopped 250ml chicken stock

1 can whole peeled tomatoes 1 tbsp tomato paste 1 tbsp chipotle sauce 1 can black beans, drained and rinsed ½ tsp ground cumin ¼ tsp cayenne pepper ½ tsp ground chilli

Method Preheat oven to 200˚. Place potatoes in a lined baking tin and toss in 1 tbsp oil. Bake potatoes for 20 minutes or until tender, stirring halfway through. Remove and set aside. Meanwhile, fry the onion until softened. Add the beef, garlic, zucchini, green capsicum, and jalapeno chili and fry until the vegetables are tender and the beef is cooked through.

Add the stock, tomatoes, tomato paste, chipotle sauce, black beans, cumin, cayenne pepper and chilli and bring to a boil. Reduce the heat, cover and simmer for 30 minutes. Add the potato for the last 5 minutes.


tips Swap the black beans for any other type of bean, such as chickpeas, kidney or borlotti beans. Stir through a knob of butter for a silky and rich finish. Add a dollop of sour cream when serving.
