here is a well-known saying in sport that soccer is a game of two halves. It’s a phrase that always reminds me of Perth. Two halves north and south, divided by the majestic Swan River. In my decade of living in this fabulous city of ours, I have found that almost everyone I encounter shares this belief. Of course, I’m certainly not the first person to say it and it’s not the only city in the world like it but you’re nodding in agreement too, aren’t you? Welcome to the very first edition of South of the River Magazine. Historic Fremantle, vibrant Vic Park, leafy Applecross and cosmopolitan South Perth, just some of the unique and diverse suburbs that line the southern banks of the Swan. All vastly different in their make-up but all intrinsically linked by their close proximity to one of the world’s fastest growing cities. We will have a lot to write about. Our new bi-annual magazine aims to bring you the very best of life this side of the river. Don’t get me wrong we love venturing north of the river too but that’s for the pages of another magazine. Here, we’re focusing south. If you have ever come across any of our regional magazines, then you will know what to expect. Aviation Heritage Museum Attracting over 20,000 visitors a year and with over 7 thousand metres of floor display and facilities, The Aviation Heritage Museum in Bull Creek houses the largest collection of aviation history in Australia with over 30 aircraft and numerous civilian and military aviation artefacts on display, this remarkable and unique museum is an experience not to be missed. Created and maintained by The Royal Australian Air Force Association, the museum first opened its doors in November, 1979. For many years, the association along with various private individuals had been collecting an increasingly large selection of aviation memorabilia and in the early 1970’s a piece of land at the Memorial Estate in Bull Creek was earmarked as the site for a potential museum. The initial South Wing, however, proved too 32 WHAT’S ON
small for some of the larger aeroplanes and following a donation from the Government of Western Australia, the larger North Wing building was opened in December, 1983. With a range of displays and special tours on offer, the highlight for many visitors is a tour of the restored Lancaster bomber. This personalised tour of both the inside and outside of the plane runs for an hour to an hour and a half and includes a detailed description of the mechanics and workings of the plane as well as an insight into the crewmembers’ jobs and positions. Further tours are available of the museum’s Dakota C-47 and Spitfire Mark XX11. In addition to the many aircraft available to view, the museum also includes a huge selection of displays spread around the site. Many of these focus on a particular time in
aviation, a branch of an air force or on a particular set of artefacts. The Mists of Time display takes a fascinating look at how the conquest of the air was a major ambition for man for centuries whereas the RAF Bomber Command display is a tribute to the airmen and aircraft that formed the western front line for much of World War II. David Giles AFTER A NEAR DROWNING experience in 1993 whilst swimming in the Southern Ocean, David Giles felt propelled to follow his passion and began to paint. Since then, he has gone on to become a renowned artist with over twenty art awards and fifty solo exhibitions to his name, including shows in New York, Paris, Singapore, Bali and throughout Australia. Cited by The Sunday Times as “One of Australia’s most exciting contemporary painters” and the subject of an ABC documentary, How Art Changed My Life, Giles has also featured in the World Wide Art Books publication, International Contemporary Masters, and in numerous interior design and builders magazines. Based in Fremantle, he is also now the owner of two art galleries, The David Giles Art Gallery at 49B High Street, and Studio Eleven at 11 Captains Lane. EMMA BLYTH FROM GRAPHIC DESIGNER TO FULLY-FLEDGED PAINTER, Emma Blyth is fast becoming one
of Western Australia’s most sought-after artists. JOANNE DUFFY AWARD-WINNING PERTH
artist Joanne Duffy was, it seems, always destined to be a successful painter. Growing up in the wheatbelt region of WA, as a child she was a prolific drawer, greatly influenced by not only her painting mother and creative family but also by the stunning landscapes that surrounded her. After studying graphic design at Curtin University, a change of state to Victoria saw her career move into publishing, training and staff management before progressing into software analysis. After having children, Joanne returned with her family to Perth where she balanced a freelance graphic design career with heading up a local charity organisation specialising in perinatal mental health. Her return to Perth, however, had awakened her passion for the region. Taking inspiration from her childhood experiences of rural WA and her love of native flora and its environment, her painting began to flourish. Using a combination of her Bachelor of Arts (Design) and self-taught experience, Joanne’s work depicts the Australian landscape in an unique Expressionist style. Key inspirations lie in interpreting the emotional response to memories of landscape and how this affects our character. “Growing up in WA’s wheatbelt holds so many wonderful memories that are the foundations and 38 ART | ARTIST SHOWCASE

Picking up the smells, sounds… the family picnics at Kokerbin Rock and road trips up north hold such a rich tapestry of emotions and sensations that are wonderful inspirations,” says Joanne. With so many bold ideas appearing on international catwalks for spring and summer, we can expect a full-on season of extreme looks. Have fun with the trends and be prepared to be the centre of attention! Summer just wouldn’t be summer without showing off some flesh and this season it’s the turn of the shoulder. An off-the-shoulder top with a high waisted mid-skirt or pants is a feminine and chic combination. There are plenty of jumpsuits and dresses cut to bare shoulders too and an asymmetrical style will look great for the warm evenings. In contrast, expect to also see statement sleeves this summer. Big and voluminous in sheer fabric, sleeves add fluidity to an outfit whether bunched up to the elbow, asymmetric or bell. Fringing was around in the cooler months and is coming back 42 STYLE
with a 70’s vibe for summer. In the past, it has created an all-over bohemian look but this summer’s fringing adds a modern edge to simply and elegantly cut jackets, pants, dresses and skirts. With the launch of her label just 4 years ago, the Natalie Rolt brand is now worn by a host of Australian celebrities and has over 60,000 followers on social media. Her after-5 wear and resort and swimwear designs all designed and handmade in her own studio are the talk of the town.

When did you first think you could make a career out of fashion?
A
With my mum and nan both having worked in the fashion industry, I was always interested in fashion design and studied Applied Fashion Design and Technology at Polytechnic West in Bentley. However, it was when I uploaded my first design onto my social media site to such positive feedback that really inspired me to make it my career.

What process do you follow when designing a gown?
A
I see inspiration everywhere, from my morning walk to a browse through Instagram! This prompts me to take small pieces from different sources and draw my designs over a coffee in my studio. Once the design process is complete and I have the image of my design, the pattern making task begins!

Have your designs evolved over the years?

I have also been fortunate enough to dress and meet the likes of Renae Ayris, Samantha Harris, Brooke Hogan and Sydney Fashion Blogger Antoinette Marie.

he spring and summer months are the perfect time to get creative with your outdoor space. Put a few ideas into action now and your garden and alfresco will feel more personalised and inspiring for months to come. If new outdoor furniture is not in the budget, simply swap existing pieces around and find new ways of enjoying the area. Consider the ambience you want. For a contemporary outdoor living room, arrange sleek furniture around a coffee table whilst continuing the colour scheme from indoors. And, how about really creating the wow factor by building a brick fireplace or installing a fire pit? For a more informal and eclectic look add items, such as a rug, throws or even a mirror, which can be fixed to a wall behind a dining space to brighten up a dull space. Painting a boundary wall adds contrast to the garden
and helps plants, decorations and furniture to stand out. Colours that work well are aubergine, dark grey, bluey-grey, khaki and neutrals, such as taupe and offwhite. Lexus IS200t Exhilarating sports sedan ticks the boxes

uccessfully taking on the likes of the Mercedes-Benz C-Class, BMW 3-Series and Audi A4, not to mention a few others, in one of the motoring industryâ&#x20AC;&#x2122;s most competitive market sectors is certainly not for the faint hearted. The IS sports sedan from Lexus, however, has always had a strong following Down Under. Voted Best Luxury Car by numerous Australian motoring critics on its release in 1999, the model has built up a loyal and growing customer base through careful evolution. Despite plenty of past acclaim, however, we think that the new IS200t could well be a bit of a game changer. With fresh releases from many of its major competitors, it is without doubt a timely launch. automatic gearbox adds a completely new dimension to the car. Producing 180kW of power and 350Nm of torque, it offers significantly more power than the old V6, in fact, a highly impressive 27kW and 98Nm more. With acceleration from a standing start to 100 km/h in a
9.5 litres per 100km, the new IS200t achieves a bowser-beating 7.5 litres per 100km, thanks in part to its new stopstart technology that kills the engine when stationary. Available in 3 trims; Luxury, F Sport and Sports Luxury, we drove the F Sport and found the cabin awash with luxurious touches. Aside from the body-hugging plush leather-trimmed seats and opulent leather steering wheel, the centrally located 7-inch colour multimedia screen with its mouse-like pad allowed easy access to both audio and climate control settings and the car’s navigation system. Plus, perfect for the vagaries of the Perth weather, we also liked the heated and ventilated front seats offered as standard. Standard safety features now include adaptive cruise control, front and rear parking sensors, automatic wipers, a power adjustable steering column and a pre-collision warning system. A lane departure warning system and blind spot monitoring are also optional. With its sleek lines and imposing presence, improved performance and efficiency together with its numerous luxurious touches, the IS200t hits the mark on every level. ho would have thought that just 6 years ago the small luxury SUV market would become such a key battleground for the world’s leading car manufacturers? Back then it was a market that didn’t exist, that was, of course, until the launch of the Mk1 version of the BMWX1 in 2009. Now, in case you hadn’t noticed, we have the Audi Q3, Mercedes-Benz GLA and Lexus NX plus a few others all clamouring for your attention. Car Maintenance Tips with German Auto Centre

ant to keep your pride and joy running in tip top shape between services? Here are some simple steps to follow to ensure smooth stress-free motoring.
Tyres
To extend tyre life, regularly check tyre pressures to ensure pressures are as stated in the ownerâ&#x20AC;&#x2122;s manual. If the front and rear wheels are the same size, rotate tyres every 10,000kms for even wear. If the vehicle pulls to the left or right, book in for a wheel alignment.
Keys and Ignition
A common mistake that many owners make is to have too many keys on a keyring. The weight of the keys can cause damage to the lock barrel or even the ignition key itself. Both of these issues can be expensive to fix particularly on luxury vehicles. Also, remember to swap your spare key with your main key every 4 to 6 months as the battery in the remote is only charged through the ignition barrel.
Oil and Coolants
Regularly check oil levels regardless of the age of the car and only top up with the correct grade specified by the manufacturer. For coolants, again ensure that the correct coolant is used and never mix different types. If in doubt, top up with distilled water.

Air-conditioning
With many of us now starting to turn on our A/C systems after the cooler months, some owners may discover an unpleasant odour emitted after a winter of inactivity. If so, replace the cabin filter and apply a disinfectant treatment to remove any bacteria.
Petrol and Diesel Engines
Remember, it is recommended that diesel engines are given a good drive every 1 to 2 weeks. A simple 20kms drive down the freeway could save costly repairs in the future. For petrol engines, also try and use premium 98 octane fuels where possible. Yes, it is more expensive but it provides better fuel economy and is cleaner for the engine. It may well save you money over time.
Electrics
If a strange noise is heard when the window is moving up and down it could mean that the window regulator is about to fail. Beware as this could mean it may get stuck when open.
Servicing
Finally, always remember to service your vehicle at least once a year or every 10,000kms â&#x20AC;&#x201C; whichever comes first. A regularly serviced car will not only run more efficiently but its regular service history will also help the resale value of the car.

Be aware of what you are putting into your body. Keeping a food diary makes it easy to pinpoint how those extra kilos were added and at what times of the day you slip into bad habits. Plan and prepare snacks in advance. If there is a fruit salad, a smoothie, nuts or carrot sticks readily prepared, it is easier to bypass the biscuit tin. 74 HEALTH & BEAUTY
Eat breakfast to kick start your metabolism. This will also help reduce the cravings for a quick muffin or sugary snack while you are out and about.
Drink more water. Sometimes thirst can be mistaken for hunger so have a glass of water before choosing to snack. Cut back on calorie-packed alcohol and, of course, give up smoking.
Indulge more in food that is particularly good for you. Eat blueberries, raspberries and apples for their vitamin C and antioxidants (why not buy frozen fruit and use for smoothies), avocados for vitamin E, oily fish for omega 3, greens for calcium and potassium, and tomatoes as they can increase energy levels.
Whatever you eat, eat it slowly as it takes up to twenty minutes for your brain to register the feeling of being full. Consider how much is on your plate and, if necessary, buy smaller plates if it helps! Include a little of what you fancy every now and then. It’s unrealistic to imagine that you’ll never eat chocolate again. If treats are completely banned, they become all the more desirable and could lead to you falling off the healthy wagon completely.
Find time to get active. Schedule it – little and often - into the week. The cheapest and easiest activity is walking. Find a route with a hill and focus on putting energy into every step. Go swimming, cycling, or try something new, such as a team sport. Take a friend along so that you’re less likely to find an excuse not to go. Stress can lead to weight gain through increased appetite, and being stressed doesn’t help the way you look. Block off time in the week to meet up with a friend, take a yoga class, dance to a CD, or book in a massage.

hen was the last t i m e you felt stressed or heard someone say, “I’m stressed”? Perhaps you witnessed someone in the throes of stress and they didn’t realise it. One thing’s for sure, I can guarantee it was fairly recently. As we try and cram more and more into our busy lives, sadly, it seems to have become the modern-day catch-cry. Stress will mean different things to different people, shaped by personality tendencies and upbringing. How it is identified and managed will make a huge difference on day to day feelings and the quality of life led. Stress is a mental, emotional and/or physical response to an unwanted stimulus. It can be situational (based on a scenario that may be outside our control) or behavioural (being in contact with someone whose behaviour we find offensive or fearful). At its most basic form, even if this sounds harsh, stress is simply us reacting to and not accepting things the way they are. Often, it is the resistance to ‘what is’, or ‘who is’, that creates the stress. Rather than trusting in our
capacity to manage things step-bystep, our resistance reaction often becomes more of an issue that the stressor itself! Chronic stress, where the body goes into regular or constant states of ‘fight or fright’ (the body’s automatic stress response), has a very taxing and potentially dangerous impact. Eventually, because of inadequate time to replenish when rested, chronic stress places all of our bodily systems, including cardiovascular, respiratory, mental-emotional and digestive systems, under unnecessary pressure. And if left unchecked, eventually, we will burn out. Heeding to our body and mind’s signals that things are awry is always the first step in effectively managing stress. But what it you are so out of touch that you miss this? Well, that’s why yoga can be so effective. Firstly, yoga develops our overall self-awareness. We learn to hear the messages our body is trying to tell us. This places us in a good position to do something about it. Secondly, it also helps us to quickly recognise when we are resisting something. We learn to feel the difference between resistance and freedom in the body and mind and become able to relax

e’re retiring for longer, wanting a more stimulating post-work lifestyle and finding smarter ways to maximise our retirement finances, according to Chris Young from retirement planning firm CY Financial Advice. “For many, retirement is no longer about simply living off the age pension, slowing down, or enjoying a few hobbies and spending time with the grandkids,” he says. “People want a fuller retirement lifestyle with greater options and financial flexibility.” For Chris, the vital ingredient to having certainty, confidence and satisfaction in retirement is good planning and, while getting ready financially is a big part of this, it’s about more than just the money. “Many people are obviously kept busy with work responsibilities but it’s the social network and sense of achievement and identity that comes from work that’s so significant. So when they retire they feel lost or dissatisfied,” he says. “People need to consider their emotional, mental, social and physical retirement plans together with ways to keep learning and creating. They need to think in advance about what they want to do in retirement and who they want to be.” According to Chris, once the type of lifestyle in retirement has been considered, it’s time to think about the sort of income that’s required to sustain this. Recent research released by the Association of Superannuation Funds shows a home-owner retiree couple looking to achieve a comfortable retirement needs $58,784 a year. For those seeking a more modest lifestyle, better than the age pension but still only able to afford the basics,

Even if people can only get a small entitlement to the age pension, this may still provide other significant benefits, such as concessions on healthcare, rates, telephone and transport. How you arrange your assets and income can make a big difference to how much you might be entitled to in age pension so seeking assistance from a financial adviser can really pay off,” Chris says. “A good financial adviser can also help make the most of your finances by bringing a solid understanding of the complex rules around Centrelink, superannuation, tax and investments.” Chris believes that once people have retired, it shouldn’t be just a matter of hoping for the best. Regular reviews with a financial adviser can give people confidence that their plans are on track and provide opportunities to revise arrangements if circumstances change.

Q
Where do you think Perth and particularly the suburbs south of the river are currently at in the property cycle? IB It’s pretty clear we are at or close to the bottom. AB The top of the market volume-wise was March 2013 and since that time the number of transactions has reduced. We must be very near to the bottom of the cycle, in which case, it is a great opportunity for buyers to buy close to or at the base of the market. RC The short answer? We’re at the lower end of the cycle and rising slowly. The good news is it’s a great time to either enter the market or expand an existing portfolio by taking advantage of low interest rates and high housing availability.

Are there any suburbs south of the river that you expect to outperform the market over the next 12 months? IB I see Applecross as good value with it currently sitting at circa 2006 prices. The gap there has historically been between Applecross and Mount Pleasant prices simply isn’t there. In the past, prices in Applecross have been as much as 30 per cent higher. AB The secret to purchasing is not about trying to predict the next top suburb but to buy as close to the CBD as money can afford. This affords strong long term capital growth. RC Typically, the suburbs bordering the river and ocean always seem to be in demand along with new subdivisions and infill around South Fremantle, Coogee and Spearwood. I believe we are likely to see an increase in sales in these areas in the near future to accommodate substantial growth.

Where do you see land values going over the next 12 months?
IB At best, no more than steady. AB I see land values stabilising and in 12 months’ time when the building cost starts to reduce, land values will rise and there will be some good opportunities for capital gains with developments. RC We typically experience 7 year cycles in terms of a down turn in property values and growth. Given that we’re just now hitting the 8 year mark since the last boom, I’d say we’re due to see things trending upward. This is already evident in the eastern states that have typically led the way for us. Plus, interest rates are at historical lows so that’s going to encourage people to look at buying with a lot more enthusiasm!

What do you see as the key influences for growth south of the river?
IB In my area, it will be through an influx of new families seeking great schools, access to work and the excellent lifestyle afforded in the City of Melville. AB Access to and from the city is important as is the growth of neighbourhood shopping centres, such as Garden City shopping centre, which is doubling in size in the next few years. Fiona Stanley Hospital and planned major changes to infrastructure will also act as a magnet for buyers wanting to move closer to these facilities. RC Obviously, the proximity to the beach or river is a big draw card. The culture and beauty of Fremantle, in particular, will always make this area highly sought after. Suburb upgrades and new developments are taking place in a number of areas with developers focusing on the increased demand for apartment living and additional housing.

Looking into your crystal ball where do you think property prices will be at in 2025?
IB I prefer not to look that far ahead as there are too many possible variables between now and then. History says that even after large market corrections, the high of any market boom is always exceeded on the next cycle. So with the relative increase in demand expected through population growth, we should see consistent growth over the next decade. AB The good news is that everyone will be millionaires if they own properties in 2025! The median price will certainly be in excess of a million dollars. And your grandkids will be thrilled to hear what you paid in 2015! RC Very difficult to say but along river and ocean suburbs it’s a lifestyle choice that won’t change. With real estate cycles always on the rise over any 8 to 10 year period, we should be in for a bumper period either side of 2020. I doubt you’ll find too many properties under the million dollar mark.

Finally, name your favourite property sale of 2015.
IB 26 Strome Road, Applecross. Sold in a few days for over $2M to a registered buyer with multiple offers achieved. A strong, proactive marketing campaign matched the buyer to the property to create a win-win outcome for both the buyer and seller within a short time period. AB 52 Arlington Avenue. Sold for some dear friends to whom I sold the property 22 years ago. The property values have tripled since that time!

Perthâ&#x20AC;&#x2122;s population is projected to increase by 1 million people over the next 10 to15 years! The State Planning Commission has recognised that urban sprawl has placed huge pressure and costs in providing infrastructure to outer lying suburbs. They have recognised that inner city areas close to lifestyle hubs and in proximity to public transport need increased density to cater for the growth and demand. Almost everywhere else in the world has a majority of its residents living in high rise apartments and the Perth market is now becoming educated in this style of living.

Where do you think the Perth apartment market and particularly apartments south of the river are at in the property cycle?
Right now, the whole market is flat in line with a lack of confidence stemming from weakened demand for resources and the weaker economy. The market is patchy and demand varies depending on location. South Perth has seen mostly lower to medium density development over the past 40 years and this has led to a pent up demand for quality highrise apartments close to Mends Street shopping precinct. Demand in this locality is still strong as evidenced by the level of presales we have experienced in three high-rise projects we are currently marketing; Pinnacles, Aurelia and the Civic Heart.

How does the Perth market compare to the east coast market?
A
Sydney and Melbourne markets have experienced strong growth over the past 5 years fuelled by insatiable Asian buying. The Perth

The re-zoning of ‘The Train Station Precinct’ has facilitated redevelopment that is expected to transform The Mends Street precinct and see the creation of the shopping mall under the Civic Heart. Plus hopefully, in the short to medium term, we will see upgraded water taxis and ferries and even a train station. On completion of the proposed developments, South Perth will become a vibrant inner city locality with an abundance of lifestyle amenities all close to the CBD.

Looking into your crystal ball, where do you think Perth apartment prices will be at in 2025?
Prices and value growth are dependent on a number of factors, including quality, amenity, facilities, location and views. In South Perth, apartments that ticked all the boxes have increased by 100% over the last decade with some along the South Perth Esplanade seeing capital growth at over 300%. Who knows what to expect in the next 10 years but hopefully, with land and building prices continually increasing, we should expect better than CPI growth and, if we get an influx of offshore buying, prices could soar.

A
My favourite sale was a luxury apartment in a riverfront complex. Not just because it set a record sale price for an apartment in Perth at $15.2 million but because the buyer really appreciated what went into the creation of it and was willing to acquire at this level.

JACS Applecross Being a favourite haunt of mine, I certainly needed no second invitation to review JACS for the first edition of South of the River Magazine. OK, so I might be slightly biased but what’s wrong with sharing my love of this award-wining eatery with a wider, and hopefully equally appreciative, audience?! Located in the heart of Applecross Village, owner Michael Cikara has created a relaxed, welcoming ambience at JACS and it’s clearly a popular venue for locals at all times of the day whether it be for breakfast, lunch or dinner. Arriving on a glorious spring evening, we chose to eat alfresco on the decking and with the school holidays in full flow, the restaurant was a hive of activity. Serving up his take on modern Australian cuisine, Head Chef David Duff ’s menu is an enticing mix of tapas-style sharing plates, tempting mains and the restaurant’s famous steaks and pizzas. Signature dishes include the 200g Cape Grim Beef Fillet, the Lamb Rump served with roasted seasonal vegetables, the Baby Chicken with mild Moroccan Spice and a range of delicious salads. Menus get updated regularly at JACS so
there is always something new to try even for seasoned regulars. And, on the subject of choice, the wine menu at JACS never fails to disappoint with its fantastic selection of French Champagnes and Australian and European wines. We chose for starters the Corn and Manchego Fritters served with red pepper jam and the honeyinfused Crispy Chicken topped with sesame seeds and coriander and served with aioli. Aside from the delicious, perfectly balanced flavours, the presentation of each dish was a real standout, a theme continued throughout the meal. Other sharing plates that caught our eye included Quesadilla with Pulled Pork, and Cauliflower Rice with chilli, bean shoots, coriander and soy. For mains, we chose the JACS Pizza, a tasty combination of cherry tomatoes, goats’ cheese, rocket, fresh prosciutto and balsamic, and the Rare Tuna - the highlight of the evening. This exquisite fish dish with its combination of tomatoes, olives, herbs, rocket, wasabi peas, white anchovies, soy aioli and egg is a must-try for seafood fans. There really is no better way to eat tuna. Fabulous! For dessert, to round off a highly enjoyable visit, we tucked into a perfectly executed Soufflé before finishing off with a round of coffees. Don’t miss out on this local gem of a restaurant with its carefully thought out menu and beautifully presented flavoursome dishes. It truly is something to savour. Words - Mark Boden

Mini Chicken Pies
These mini pies are perfect finger food at parties and picnics.
Ingredients (Makes 12) small knob of butter 1 tbsp sunflower oil
1 tbsp tarragon leaves, finely chopped
1 garlic glove, crushed
2 tbsp plain flour
1 small onion, finely chopped
120ml chicken stock 60ml white wine
350g chicken thigh fillet, skinned, finely chopped
8 sheets filo pastry, thawed
50g brown mushrooms, chopped
100g butter, melted
Method
Preheat the oven to 180°C/160°C fan-forced. In a large frying pan, gently melt the butter with the oil. Add the onion and garlic and fry over a low heat until the onion is softened. Add the chicken and cook for a further 5 minutes. Add the mushrooms and the tarragon and continue to cook for 2 to 3 minutes until the mushrooms soften. Add the flour and cook for 1 minute while stirring. Add the stock and the wine and carry on stirring until the mixture has thickened. Remove the pan from the heat. Grease a 12 capacity muffin tin. Lay a sheet of filo on a flat surface and brush with melted butter. Add 3 more sheets of filo to the pile with butter brushed on each on. Cut the pile of filo sheets into 6 even parts. Press the cut filo into the muffin holes and repeat the process with the remaining filo sheets. Spoon the chicken mixture into the filo cases and scrunch up the sides. Pinch the sides together to seal the mini pie. Use the remaining melted butter to brush over each mini pie. Bake for 25 minutes or until the pastry is golden. Cool completely before packing in the picnic.
Chilli, Pumpkin and Feta Risotto
The tangy feta cheese in this risotto is deliciously creamy and works perfectly with the mellow pumpkin and subtle kick of the chilli. This is a very simple dish to prepare and you can concentrate on getting the rice just right while the pumpkin is slowly roasting in the oven.
Ingredients (serves 4)
900g pumpkin, peeled, cut into small cubes 4 tbsp olive oil 1 red chilli, deseeded and finely chopped 2 small cloves garlic, finely chopped 1 onion, finely chopped
300g Arborio rice 1 tsp dried oregano 100ml white wine 1 litre hot vegetable stock 150g Feta cheese, crumbled 2 tbsp pine nuts salt and freshly ground black pepper
Method
Preheat the oven to 200°C (180°C fan-forced). Place the pumpkin on a large baking paper-lined oven tray. Add 2 tablespoons of oil, the chilli and a little salt and pepper and mix well with the pumpkin. Roast for 20 to 25 minutes until the pumpkin is tender and starting to brown. Remove and keep the pumpkin warm. While the pumpkin is cooking, fry the onion gently in a little oil until it softens. Add the garlic and fry for 1 minute. Add the rice and oregano and stir well to ensure the rice is coated with the oil mixture. Add the wine, simmer and let it evaporate. Add the stock. Just add a ladle or two at a time, allowing it to be absorbed by the rice before adding more. Stir gently and frequently for 15 to 20 minutes until all the stock has been absorbed or until the rice is cooked yet still firm to the bite. Meanwhile, toast the pine nuts in a dry frying pan, stirring them around every few seconds until they start to colour. This should only take a minute or two. When the rice is al dente, remove the pan from the heat and gently stir in the pumpkin and feta cheese. Sprinkle the toasted pine nuts over the top. Delicious!

Book Review
The Great Australian Cookbook Helen Greenwood & Melissa Leong This generously-sized cookery book immediately impresses with its unique Australian artwork, supplied by Reg Mombassa, and its stunning photography by Lottie Hedley, which not only showcases the dishes but also their contributors and the beautiful scenery of Australia. The Great Australian Cookbook was dreamt up and created by co-editors and food writers Helen Greenwood and Melissa Leong. They compiled a list of 100 chefs, cooks, bakers and food producers and asked them one simple question, “What do you cook for the people you love?” The resulting recipes and thoughts were collected over 6 months of travelling on the road around Australia with Greenwood’s and Leong’s production team, and they paint an affectionate picture of the food that Australians love to share and eat. There are no sections to distinguish starters from desserts or one region of Australia to the next; instead there is an eclectic collection of dishes that follow one another, seemingly randomly, throughout the book. This means there is no quick zoom to a mains chapter or a section on the food of each state but surprisingly, and perhaps refreshingly, it is an approach that works. Together with the bold and honest photography, it’s a layout that encourages a slower and ultimately more enjoyable read of each page. However, for organisation and logic junkies, there is no need to panic! Within the book there is a comprehensive index that sorts dishes according to their main ingredients as well as several others that organise recipes into groups, 118 FOOD
such as dairy free, salads, baking and gluten free. The Great Australian Cookbook is a book to be treasured. There are 165 recipes contributed by 100 of Australia’s culinary legends providing plenty of experimenting to do with new dishes for the keen chefs among us. But more than that, it’s a visual celebration of food that simply makes people happy. Priced at $49.99, The Great Australian Cookbook is available at all good book shops.
