bed in the morning, keen to tackle the day ahead? Or do you reluctantly roll out, still half asleep, in no mood to jump, skip or even stroll into the daylight until you’ve downed your first coffee? If you’re a roller like me, I have something that might help. I call it my “Sherbet Zest Bomb” and it’s guaranteed to give your life a sense of excitement, energy and adventure when combined with a lovely early morning black coffee. First, some prep. Planning for the zest bomb starts the night before. Switch off the news, or football, or bachelors in paradise, and put on some chilled music. I go for a bit of John Mayer, Terence Trent D’arby or maybe Pharrell Williams choose your own playlist. Next, get the ingredients together for what will be a lemon breakfast brownie mix: • 1 cup white flour; ¾ cup sugar, ½ teaspoon salt, ¼ teaspoon baking soda, • ¼ cup porridge oats, ¼ cup desiccated coconut, 2 eggs, ½ cup plain Greek yogurt, • 3 tablespoons vegetable oil, zest of 2 lemons, • 3 tablespoons fresh lemon juice, 1 teaspoon vanilla extract. For the extra zing and zest we’re looking for in the morning, we need to add my famous lemon sherbet glaze topping; • ½ cup icing sugar, zest of 1 lemon, 2 tablespoons fresh lemon juice, • 2 tablespoons citric acid powder, 2 teaspoons lemon jelly crystals. OK, we’re ready to mix. With the music grooving, open a nice, crisp bottle of Riesling, or maybe a buttery Chardonnay. Sip your first glass, and it’s on with the prep: • Preheat your smart electric oven to 180° C, • Coat a 20 x 20 cm square baking pan with cooking spray (coconut oil if you have it), • Put all brownie ingredients into a bowl and stir by hand until smooth (about 30 seconds), then spread batter in the pan and bake for about 25 minutes. • Remove from oven and cool in the pan for 5-10 minutes. You’re well on the way, so reward yourself with another glass. Now stir all the glaze ingredients together in a bowl until spreadable. When the brownies are completely cool, spread the glaze over the top. That’s it – well done! But no eating yet, not even licking the spoon – that will ruin the taste of the third glass. You could slice the brownies into edible portions tonight – just be careful with that sharp knife. Slosh what’s left of the bottle into your glass, sit back in the lounge and croon along to the Mayer blues. When you wake up in the morning, first things first – time to turn that wine into water. Next, put on the coffee pot and chomp into the first slice. Those taste buds will be alive. Go on – have another – the Quest for Zest is a success - chow down and chill out - you’ve earned it.
