FALL INTO FLAVOR Eagle’s Autumn Entrée Guide Listen, who doesn’t love a good alliteration? Fall Flavors. Perfect. But it is even better when each of those flavors also starts with the letter F! Oh yes, we’re doing it. Whether you prefer the term Fall or Autumn, it is safe to say that everybody loves it. After the heat of season winds down and the cool evenings saunter in and the smoke clears up as the fires go out. The busy bustle of summer plans dwindle and are replaced with thoughts of hot drinks and hearty meals.

Put yourself there with us. It’s late afternoon, mid-Fall. The color of the leaves are in full force. Your eyes are enraptured by bright reds and stunning yellows. The sun hangs brightly overhead, it’s heat gently basking across your face. A cool breeze rises up from the east and ruffles your hair ever so slightly. You sip the last of your soothing herbal tea and your stomach begins to rumble. This day is so perfect, you want your next meal to echo the same sentiments.

CASA MEXICO

CRAVE

Since 1997, Casa Mexico in Eagle (and their other three locations) have been serving up delicious, authentic Mexican food to the Treasure Valley and beyond. Thanks to the Rocha family and their dedication to customer satisfaction, each meal is consistent and flavorful!

Doesn’t just saying the words filet mignon make your mouth water? Especially ones that are only available after 4 PM. There’s just something about it! This locally owned and operated restaurant in Eagle, Idaho works on three foundational principles: exceptional food, outstanding service, and creating a culture of excellence.

Fajitas are the perfect meal for a Fall lunch or dinner, making it a great starting point on our culinary adventure. Combined with the Eagle location’s full bar, Casa Mexico is one of Idaho’s must-try spots.

We crave Crave, and you will too after you eat there! You have to stop in for their fantastic Filet Fettucine, braised ribs, or of course… the Filet Mignon, a prime Double R Ranch filet loaded with smashed potatoes. Top it all off with your choice of bone marrow butter or brandy peppercorn sauce. Delicious! Learn more about them online!

They start with savory steak, chicken, and shrimp marinated with apple juice and orange juice for a subtle sweetness. Then on to Maggie sauce, garlic, bay leaves, and a few more spices. Cooked with onions, bell pepper, and carrots and delivered sizzling hot to your table! Served with rice, beans, guacamole, sour cream, and your choice of tortillas. YUM!

Fried Rice with Coconut

CACI

RICE

Pronounced “kaw-chee,” CACi focuses on bringing the culinary traditions of Italy to Eagle. By blending influences from both Sicily and Southern Italy, they have created such a delicious, mind-bendingly tasty menu that you will keep coming back for more. Again and again.

Rice is the place to be if you are looking for Asian fusion food in Eagle, Idaho. What kind of Asian fusion food you ask?! All of them. Well, a lot of them. Their extensive food menu and incredible cocktail selection are impressively stocked with Eastern flavors from China, Japan, Thailand, Vietnam, and Korea. A staple of the Eagle community for a while now, Rice has definitely earned a reputation for creativity and flavor.

Between happy hour cocktails and share-sized portions, CACi is a place for friends and gatherings. But it is also the place to just get down on some Fettucine Shrimp and Clams. While it might sound pretty selfexplanatory, you wouldn’t expect the fettucine and shrimp to be cooked and coated with lemon caper butter. That’s right. Lemon. Caper. Butter. Visit their webpage at cacigrill.com for more food choices.

While you may be thinking that Fried Rice is basic, we promise that this Fried Rice with Coconut is anything but. Delicious stir-fry rice with shrimp, peas, carrots, mushroom, onion, and of course, coconut is served in a “real” young coconut. Curious? Go see for yourself! Visit them online at riceeagle.com.

Moving away from the savory side of things, we’d like to introduce the next F food on our Fall Culinary Quest: Fruit Bowls! Besides being a tasty café, Bowl of Heaven also has an anti-aging section. What? Yes. They are able to use a “Pharmanex Bio Photonic Scanner to measure the levels of carotenoid levels in your skin.” What does that mean? The long and short: they can tell what you are lacking in your diet and make informed decisions about how to improve your long-term health.

When you think of Eagle, Idaho, nearly everyone automatically pictures Rembrandts and their iconic restaurant. A truly fundamental part of the downtown lifestyle, Rembrants has been serving up mouthwatering meals and energizing coffee for years. So naturally, they have it down to a science. Or an art. An artful science.

We all want longevity, energy, and health. Well, Bowl of Heaven is serving it up by the…bowl. And as for a specific fruit bowl to highlight, that is impossible! They all sound so good. From the Peanut Butter Passion Blast to the Popeye Bowl, you will feel healthier and happier after every bite! Check them out at bowlofheaveneagle.com!

FATHER DAUGHTER DUO DAVID DIGGS AND RACHEL DIGGS-SEYMOUR

T

en years ago, a road trip through Seattle, Portland, and several other cities brought Rachel Diggs-Seymour and her family to Idaho. They stopped in Boise to visit Rachel’s aunt and decided to make the move to Eagle themselves. Recently, her father, David Diggs, has moved to Eagle as well. “We are excited about the quality of life in Eagle, and for the chance to join our daughter Rachel, her husband, their five children, my wife’s sister and husband, and her mother, so it was a no-brainer,” said David. “We are loving it and find all the people so friendly!” Both talented musicians, Rachel and David have each accomplished great things in the industry. In fact, one of Rachel’s songs Hands of Time was featured on the hit TV show Pretty Little Liars and has amassed more than 2.4 million views on YouTube! David is enjoying the semi-retired life after 45 years in the industry, specifically arranging and producing music for Pat Boone and others. “I also had a top 10 Billboard jazz album in the mid-80s featuring major jazz stars like Lee Ritenour.”

18 / 0 56

M AGAZI NE

Being in the same state for the first time in nearly a decade gave the father-daughter duo an opportunity to perform together. On September 1, the duo played live at Rembrandt’s in Eagle and if you weren’t able to catch that performance, stay tuned as they have many more musical endeavors lined up. Another notable feat from the duo is the creation of the album “Black Coffee,” which is a jazz American songbook. (next sentence for digital version only) Check out the official video of the title song from Black Coffee on YouTube. “This was the first time we have played together in many years. It was great to be singing with my dad again!” Rachel reflects. “We have been performing live since I was about 17 years old, and it was hard not to be down in LA still playing music together. I have also been so busy raising these kids and have barely had time to even think about getting creative.” Back together again, each plan to try and make time for music. While Rachel’s primary focus is motherhood, she aspires to write and perform more frequently. David plans to do more arranging and orchestration and would like to give back to the community through music education. To learn more, visit David’s website at daviddiggs.com

Discovering Birds Capturing Wildlife Imagery

Light and patience are the delicate ingredients that make an inspiring wildlife photograph, according to photographer Rase Littlefield. Light to capture the subject in its truest form: the intricacies of feathers and fur, the expression in the eyes of the wild, and patience. Patience to first find the animal, if you may be so lucky, and the time it takes to hold your breath until the perfect moment comes. When you can capture that, it’s magic. Rase took an interest in photography in 2008, and he has been a professional photographer for many years. However, in early 2021, he discovered something entirely new and different from his earlier portfolio. Birds. Once he met a local wildlife photographer and started asking questions, Rase was able to learn how

to incorporate his passion for birds, especially owls, into his profession. He discovered places to find them, how to approach them carefully, and surprising vantage points, like floating blind down river and how doing so can capture wild birds in unique settings. Rase hopes that there are many years to come of discovering unique species of birds that visit for a short time as they migrate through Idaho. But he is also aware that a many natural water areas and marshlands in Idaho are drying up, which is unfortunate for the conservation of birds. Nevertheless, he is fascinated by what he sees out there so far: how many variations of birds flock, bath, eat, and preen together, and also how many shorebirds are in Idaho! Two things stand out to Rase as things to be grateful for during the challenging time of Covid. First, that “my beautiful wife Lanae and my son Malachi love to go on adventures with me to find birds.” And second, that more people found themselves outdoors, discovering the things they love: the sunrises, the sunsets, and surprises in nature.

Carrot-A-Lot About You If you find yourself in a quiet Eagle neighborhood, and see fresh produce on a park bench, you can thank Stephen Jones. Approximately five years ago, Jones began giving away fresh raspberries to families and their kids. Stephen said, “Kids love picking fresh raspberries. And why not? They are delicious for breakfast and on ice cream.” After years of watching joyful kids harvesting fresh raspberries, Stephen began to look for other ways to give back. He says, “Giving is just plain fun and paying it forward creates positive synergy with each other.” He expanded his gift giving by placing fresh cucumbers and tomatoes on the park bench near his home. In the near future Stephen will also start giving away pumpkins. “People have left me thank you notes, and it makes my day. People in Idaho are from a kinder time. We still care about each other,” he said. The people of Eagle demonstrate kindness and compassion for each other every day.

One Dog at a Time When we moved to the area last summer, there seemed to be an unusually high number of lost pets on social media. Sure enough, within a few weeks I found my twelve-year-old Linus detained by a good Samaritan on the busy road behind our house. He’d never been a flight risk, but somehow, he got out of our fenced yard. We were lucky the good Samaritan was able to grab him. What if she hadn’t been there? What if no one caught him?

People Doing Good

Enter Ladies and the Trap, three committed volunteers bringing in the elusive ones. Operating throughout the Treasure Valley, these heroines combine their love for animals with skills and patience. Creating an irresistible lure can capture a scared and hungry pup with compassion. “If you see something, say something” is the motto. Roger, a hound mix, lived in fields outside Eagle for 53 days last year before safe capture. “Dogs are remarkably resourceful and have a strong will to survive, but we need regular updates to help them. We don’t stop trying until there are no more sightings.” Ladies and the Trap are devoted to helping these scared dogs, but they often need to replace equipment, such as cameras on the traps. “We watch the cameras to know when to go bring them in.” You can follow Ladies and the Trap on Facebook and visit teresanickell.com for more information.

EAGLE RESIDENTS CREATING A POSITIVE WORLD

A Quilt of Many Colors Bobbie Littlefield began learning the art of quilting 66 years ago from her grandmother.

BY CORBIN WAGONER

Littlefield explains, “In today’s world there is much anger and frustration; quilting recharges my positive energy, transforming angst into action and sadness into joy.”

M AGAZI NE

Bobbie recently finished a beautiful custom quilt to generate donations for the Boise Bicycle Project, with one of the goals to recycle 2000 bikes back into the community in 2021. “Kids should have a bike,” she says. “If my quilt can generate donations to help more children and adults realize the joy of riding a bike, I’m happy.” Bobbie also plans to donate 30 custom quilts to Doctor’s Hospice of Idaho, in October. “When I am quilting in the colder months, I make dinner in the crockpot and get to work. If you come into my home and smell something cooking in the crockpot, I’m probably making a quilt for someone I care about.” The quilt funding drive is part of the Tour de Friends biking group in Eagle. Tickets for the quilt drawing are $5 each, or three for $10. For more information, or to make donations for the upcoming drawing on November 6, 2021, call Nancy Harvey at 208-630-4711.

Local Jeweler BRIDAL BEGINNINGS AND FAMILY HEIRLOOMS

BY FAY CASTRONOVA

They say a piece of jewelry can tell a story and Ann Westley of Eagle, Idaho couldn’t agree more. For her clients, she creates pieces that are “one-of-a kind-designs for once-in-alifetime moments.” Ann founded her company, Ann Elizabeth Jewelry, after graduating as a Graduate Jeweler Gemologist from GIA (The Gemological Institute of America) in Carlsbad, California. Ann Elizabeth Jewelry is a fine-jewelry, customdesign studio located in downtown Eagle (by appointment). “My love of jewelry started with my grandmothers, Ann Brockmeier and Elizabeth Bauer. In my childhood, I always admired my grandmothers’ jewelry and the special pieces they collected over the years,” shared the designer. “I was named after these two incredible women, so I decided to name my company after them.” Ann’s jewelry career began in Libertyville, Illinois, where she took a jewelry-making class in high school. That elective course sparked her interest in design. She traveled to Australia during a college-summer break to work with her cousin, Sara, who owned a boutique. Ann also spent time working with a fine-jewelry designer in Brisbane. “It was there that I discovered my artistic passion and began my path to becoming a custom-jewelry designer,” recalled Ann.

Ann Elizabeth Jewelry recently celebrated its 15-year Anniversary. You can schedule or book your appointment online: annelizabethjewelry.com/ or by calling 208-918-1889.

With a plan to become a Gemologist and Jeweler, Ann returned to the United States and enrolled in the Gemological Institute of America (GIA). As a student, she spent more than two years studying diamonds, colored gems, designs and jewelry-making. She then worked as a bench jeweler and Gemologist in a San Diego store that specialized in engagement rings. The retail experience led her to be a custom, bridal jeweler. She began making pieces for friends and her network expanded to clients in many states. In 2008, Ann was hired to teach Gemology at GIA, a position she held until moving to Idaho in 2016. As an instructor

and staff member at GIA, the world’s foremost authority on Gemology, Ann increased her own jewelry knowledge as she taught students from all over the world. As Ann Elizabeth Jewelry continues to grow, the demand for heirloom re-design and restorations has increased. “I am very passionate about jewelry restorations of vintage pieces as well as modifications to jewelry to update the style,” Ann explained. Clients may have special pieces that have been given to them by relatives and the clients often wish to retain the connection to the loved one. Ann works with these clients to incorporate the often sentimental, heirloom jewelry into a wearable design. “The jewelry I design has meaning and tells a client’s story. I love that I am able to create one-of-a-kind heirlooms. In my company’s success, I have found that choosing exquisite gemstones and fine metals, meticulous craftsmanship, and the participation of the client lead to beautifullyfinished pieces, unique to each client.” The process of creating dream pieces involves meeting with clients and handsketching their designs from the initial consultation. With client input, she’s then able to present a computer-aided design (CAD) that shows all angles of the new piece of jewelry. Afterward, a 3D-printed wax model is reviewed by the customer. “I love the moment I reveal the piece and I get to see my client’s reaction… thrilled, excited and sometimes tearful!” Ann shared excitedly. “It’s a special time for both of us.” “At every GIA graduation, I would tell my favorite quotation to my international students: ‘Go confidently in the direction of your dreams! Live the life you imagined’ by Henry David Thoreau. I dreamed of having a business of making jewelry and having quality time with my family. With my studio, I am now living that dream in Eagle with my amazing husband, our two sons, and a career and business that I absolutely love!”

ife just got sweeter in Sweet, Idaho! Or should we say life just got a lot more savory with the opening of Anderson Reserve— Sweet’s new combined butchery and market. The Anderson family has a long history in the meat industry, beginning in the early 1940s with Paul Anderson Senior. Before Paul Anderson Senior had even graduated high school, he had started working for a meat company in Colorado. And by the ‘70s, was able to start his own company with his three sons: the Anderson Boneless Beef Co. After the passing of Paul Senior, the business was given to his three sons, who each went their separate ways. But Paul Anderson, grandson of Paul Anderson Sr., had a different idea in mind. He took the combined knowledge he had inherited and opened Anderson Reserve—a fivestar steak house promising quality, satisfaction, and an experience that turns customers into friends. “Joining us at Anderson Reserve is more than just coming out for a meal, it’s an experience,” said owner, Paul Anderson. “From the start of your journey, it is a beautiful drive along the

A Haunted History of Idaho LOCAL TOURS THAT TELL TALES OF THE MACABRE BY JENNY K GILMAN

interests collided. Mark said this of the people to whom he would give tours: “These fine folks would ask me all types of interesting questions, and I’d tell them so many other strange, creepy, scary, gross, and just plain odd stories I had found in the old papers of Boise and in the old memoirs of long-gone residents.” His idea for starting his own tours grew from there.

“They’ve promised that dreams can come true— but forgot to mention that nightmares are dreams, too.” —Oscar Wilde

By starting Idahistory, he combined his natural interest in the macabre with actual historical research and transformed it into a tour. Mark said, “It is full of contextual elements at the core of American history — while also being fun and entertaining.” “My tour is unique in that it covers the development of Boise but from the gutter. Too often, we are taught an overly sunny history of our local towns. We learn about the do-gooders, the achievers… but we do not learn so much about the darker elements. Much of the sunny stuff is true, but in teaching only the positive, we leave balance out of what most people learn about the towns, areas, regions, and nations they belong to. I endeavor to add balance.”

The autumn season has a way of bringing the ghosts and goblins out in surprising places. Perhaps a walk down the street, bright orange and red leaves are underfoot, and you wonder, are those only my crunching noises I hear, or is there someone, or worse, something following me? Mark Iverson has a tale or two to tell about the macabre history of Boise. If you want to satisfy your spooky autumnal quest with real history, he knows a thing or two that can send some chills up and down your spine. Together with his partner Jeff Wade, they run Idahistory Tours. The macabre tour is not for the faint of heart, nor for children.

Idahistory has grown to add tours in Nampa, and Mark has been learning more about his hometown of Eagle. The small town had its own share of bloodshed, runins, disputes, and violence. It was startling enough that the United States Calvary had to come in and set up camp long enough to bring it back into some semblance of order and control. “Eagle,” Mark said, “was formerly referred to by Boiseans as, ‘That violent place downriver.”’ Idahistory expects that soon they will be bringing Eagle into their scheduled tours of the macabre.

“Our premier event is ‘A Macabre History of Boise: A Walking Tour.’ It’s a great time if you are a fan of true crime, the occult, and strange medical devices used in places you wouldn’t expect.” Mark is a historian. He graduated with a master’s degree in history from Boise State University. He then traveled to Bosnia, where he studied the ethnic tensions that led to war, violence, and genocide and started to look specifically at the violence against women. Eventually, he landed back in Boise. He worked as an administrator for the city cemeteries, including Morris Hill Cemetery, the Pioneer Cemetery, and Fort Boise Cemetery.

Currently, Idahistory is running tours in Boise on Tuesday and Thursday evenings. The tours are two hours long, and visitors should expect to walk over two miles. Masks are recommended, and the tours accommodate smaller groups to allow for the safety of everyone during the pandemic. Children are not recommended for these tours. You can book a tour on their website: Idahistory.com.

Mark took an interest in some of the people who were interred there and began researching them. He then started giving tours to the public for the Boise Department of Arts and History, and eventually, his

OLD, RESTORED, AND VINTAGE POLICE OFFICERS RESTORE 1955 CHEVROLET PATROL CAR

4 2/ 0 56

M AGAZI NE

People have always admired the history behind cars and as the years go by, obtaining a vintage vehicle has gotten a little more difficult. Finding history and artifacts is crucial to society and can help tell the story from the past. That’s exactly what Sergeant Michael Kinzel and Deputy Steve Kelch strive for. “So many people are drawn to restored cars and I think it takes people back to a simpler time that evokes positive emotions and feelings,” shared Kelch. Recently, they restored a 1955 Chevrolet Patrol Car that represents what it would be like to be a deputy in the 1950’s. Kinzel has been working in the Ada County’s Sheriff’s Office for over 24 years, and is a Patrol Sergeant. When he’s not at work he’s working on restoring cars. This has been a hobby for Kinzel since he was just 15 years old. Kelch has worked in the Ada County Sheriff’s Office for 16 years and is a part of the City of Eagle Police. Kelch also has a love for restoring vehicles. Kelch met Kinzel while doing research for his book that was published in 2014 that celebrates 150 years of the Sheriff’s Office, (1864-2014). They both found out they had a passion for vintage cars and history. Kinzel and Kelch are on the Ada Sheriff Legacy Council at the Sheriff’s Office. Their main goal is to preserve and research the history behind Ada County. The goal now for the 1955 Chevrolet Patrol car is to let the public enjoy it. Both Kinzel and Kelch plan to show it at parades, car shows, and anywhere else that people can appreciate it. “There’s a saying that goes, the best time to plant a tree is 20 years ago. The second-best time is right now. We try to preserve what we have now for others in the future,” shared Kinzel. The community donated 100% of the funds to bring this project to life. Kinzel and Kelch are also restoring a Police Crown Victoria that’s from the early 2000’s. This will be preserved for a decade then it will be revamped and used as a museum piece or shown off in parades. Kelch mentioned that their next project might be restoring a vintage late 1960’s Harley Davidson Police Motorcycle. Kinzel on his own time has been working on a 1953 Oldsmobile Rocket and Kelch has been working on a 1964 Alumacraft boat. However, the main focus for the last two years has been the 1955 Chevy Patrol Car and they’re thrilled to finally show the public all the work that they’ve done. Kinzel and Kelch hope that this story will urge the public to bring stories, items, photographs, and experiences to the Ada County Sheriff’s Office, Kuna, Star, or Eagle police. “Working on any project (mainly cars) has always given me a sense of purpose and accomplishment. Bringing something back from disrepair to its “glory days” is so cool,” said Kelch.

WELLNESS IN A JAR BY CHELSEA CHAMBERS

Brooks Broth

We spend most of our lives avoiding trouble and mishaps. We make calculated moves, plan ahead, and take care of our bodies in the best ways we know how. But try as we might, we just can’t prepare for everything, and the truth is—it is during hardship that we experience the most growth. Challenges often change the direction of our lives and remind us of what’s important. For Vicki and Brooks Haden, a car accident altered the course of their lives, but for the better. What began as a challenging, physical journey through months of recovery and surgery, resulted in the creation of an entirely new business with the help of their friend Deb Lester. Two years ago, Vicki was struck by a car while crossing the road. She was badly injured. Luckily, Deb knew just the trick—bone broth, proven to help speed recovery time and help the body heal. “My orthopedic surgeon recommended I up my protein intake to speed the healing process,” Vicki shared. The chicken bone broth not only provided the protein I needed, but a surprise bonus was the collagen in the broth that has helped my surgical scarring diminish in appearance!” The trio set to work, preparing and selling delicious bone broths with all-natural, organic, and local ingredients. Each broth is simmered for 48 hours, twice as long as most broths on the market, and is perfect for adding into recipes or drinking on its own. Thanks to the generous help of Rembrandt’s owners, Dale Willman and CJ Cacioppo, Brooks Broth was able to get their start in the restaurant’s commercial kitchen. This allowed them to develop their product and expand their offerings, including selling at local Farmers Markets. The team now has their own kitchen in Garden City and can now be found throughout the Treasure Valley, including Albertsons Market Street and Broadway, and Boise Co-Op. “We are humbled by the community’s support in our small business! We love the enthusiasm our customers have when shopping at local merchants to purchase our broth, including Maison Blue, Porterhouse, and Olive & Vine here in Eagle,” says Brooks. “As well as Choice Cuts Fresh and Smoked Meats in Meridian.” Brooks Broth also has products for your feathered and furry family members! Their natural, human-grade broth (Deb’s Gourmet Pet Broth) is great for all kinds of animals. “We have video testimonials of dog owners where in one case, their senior dog was not eating and in poor health. After adding 1/4 cup of Deb’s Gourmet Pet Broth to dry kibble, their dog gained its appetite back and has no more skin allergies or inflammation caused by its previous wet food diet,” Deb said. “We also have exotic bird owners who take the chicken bone broth and create a “mush” food that their birds devour! Results have been clear skin and glossy, softer feathers.” Moreover, Brooks Broth gives back; 5% of every dollar received from sales goes to help fund outdoor wilderness therapy programs that save the lives of teens and young adults at risk to suicidal tendencies and depression. The team plans to expand their operations onto the East Coast in the near future. For more information about Brooks Broth, visit them online at BrooksBroth.com.
