Island cooking the Caribbean way
Dominican chef prepares dishes for St. Helena Library patrons By Ruth Ragland Associate Editor
Chef Jairol Diaz recreated the tastes of his mother’s Caribbean comfort food recently for members of the Cooking Club at St. Helena Branch Library. Diaz is a native of the Dominican Republic and is a sous chef at the Dataw Clubhouse. He seldom has the opportunity to prepare Dominican dishes at work but said that Lowcountry cooks should have no problem finding the ingredients necessary to prepare authentic Caribbean cuisine. Diaz opened his presentation by sautéing onions, oregano, thyme, cilantro, garlic and celery to flavor a favorite Dominican side dish, pigeon peas and coconut. Also on his menu were fish in coconut sauce, chicken croquettes and white rice. The croquettes (or croquetas de pollo in Spanish) are typically sold by street vendors in the Dominican Republic and are as much a staple as French fries are here. Diaz said that he grew up in an urban part of the Dominic Republic but his mother hails from the countryside where there’s “nothing but real good food,” that’s quick and easy to prepare. Among his favorite dishes are tostones (fried plantains that are twice baked); asopao (soup with rice, beans and any type of meat); and batata 6 • WWW.EDIBLESMAG.COM
(a type of sweet potato). “I’ve been craving that since I got here,” he said. He shared several tips with the Cooking Club: • Use vegetable oil or butter rather than olive oil to keep the flavor of sautéed dishes light. “I don’t know about you all but I like a little butter in my cooking,” he said. • It’s not necessary to wrestle with a whole coconut; canned coconut milk is fine for flavoring Caribbean dishes. • When creating a roux as the base for a sauce add the flour little by little. “Take your time to make sure it’s well blended,” he said. • Soak and drain white rice before cooking to make it less starchy. • Use a ceramic coated frying pan for sautéing because it’s less likely to scorch the food and is easier to clean. Eve Heaton, a Beaufort County School District employee and Cooking Club member, found the Dominican fare tasty and said that the fish in coconut sauce would be
“easy enough to duplicate with local fish.” Her colleague Nichelle Tyson said the dishes reminded her of her mother’s cooking from Jamaica. The new library has a lightfilled and airy auditorium equipped with a kitchen where Cooking Club events can be recorded for television. Branch manager Maria J. Benac thanked the Friends of the Beaufort County Library for providing funding for programs like the Cooking Club. She urged everyone to attend the Friends’ annual fundraiser, the Fall Book Sale, set for Sept. 26-28 at Beaufort’s Waterfront Park.

A line from my favorite commercial airing right now, goes “This is the summer to compare all other summers too”. So true! I was lucky enough to spend quality time with my beautiful family and friends this summer in the Beautiful Lowcountry. Shout out to Chef Tony & Nicole, Chef Nick Borregine, and last but not least my mentor Chef Richard Wilson. But Summer is over now, and I hope you all had a blast. I’m taking back to Vino Volo with some inspiration from all 3 of these phenom’s whom I have the pleasure and good fortune to call friends and colleagues. On my menu this fall, you’ll catch Grilled Ribeye, Grilled Mussels topped with Gruyere, and also Grilled Lamb Meatloaf Skewers.
Grilled Lamb Meatloaf Skewers 5 # Ground Lamb Mix 1.25# Marscapone Cheese ½ cup Polenta 1.5 tsp cinnamon 6 tsp Hungarian paprika ¾ tsp cumin 3 Tbsp salt 2 Tbsp black pepper 3 Tbsp coriander seed (ground) ¾ tsp cayenne 3 eggs
Combine all ingredients in a Kitchen Aid mixing bowl or any mixer with a paddle attachment mix until well incorporated. Lay out a sheet of plastic wrap about 12 in wide and 12 in long. Using a scoop or a large spoon, place 2 oz portions along the edge of the wrap facing you to create a continuous line from end to end, leaving about a 1 in space from each end. Roll the lamb mixture as is you were rolling a cigar or compound butter. As your rolling, be careful to smooth out any gaps in the mixture that would detract from creating a continuous, sausage like appearance. When you come to the end of the wrapping process twist the creation to tighten and compress the mixture. This will help to ensure a better cutting process. Place the meatloaf in the freezer for approximately 1 hour. Remove and slice into 2 in pieces. Grill for 8-10 minutes or until the internal temperature reaches 155 degrees. Serve with your favorite Tzatziki Sauce, or other minted condiment.

Caramel Apple Pound Cake With carmel glaze and cream cheese icing
Recipe by Heather Mitchell Ingredients: 2 cups granulated sugar 1 1/2 cups vegetable oil 2 teaspoons vanilla 4 eggs 3 cups all-purpose flour 1 ½ teaspoon apple pie spice 1 teaspoon salt 1 teaspoon baking soda 2 cups golden delicious apples, peeled and finely chopped Pecan for garnish Caramel Glaze 1/2 cup butter 1/2 cup packed brown sugar 2 teaspoons milk Cream Cheese Icing 1 (8-ounce) package cream cheese, softened 2 cups confectioners’ sugar 1/4 cup whole milk 1 teaspoon of vanilla extract Directions: Heat oven to 350°F. Spray a 12-cup fluted tube cake pan with nonstick cooking spray. In large bowl, beat granulated sugar, oil, vanilla and eggs with electric
mixer on medium speed until light and fluffy. Mix salt, flour, pie spice, and baking soda together in a small bowl then combine your wet mixture until smooth. Fold in apples. Pour into baking pan. Bake 1 hour to 1 hour 20 minutes or until toothpick inserted in center comes out clean and cake is firm to the touch. Cool for about 15 minutes and remove from pan place on a cooling rack. In a small saucepan, heat all glaze ingredients to boiling, stirring occasionally for 2-3 minutes. Remove from heat and spoon glaze over warm cake. For cream cheese icing, mix together the cream cheese, confectioners’ sugar, and the vanilla extract until smooth. Mix in milk to until smooth and creamy. Spoon cream cheese icing on cake so that it drips down the sides. Garnish with pecans.
Chipotle yogurt dip
Ingredients: 2 cups yogurt 1 6 oz can tomato paste 2 canned chipotle peppers, whole Juice of 1 lime 3 scallions ½ cup cilantro leaves, chopped Salt and pepper to taste Directions: Add ingredients to food processor and
puree until smooth. Season with salt and pepper to taste. Serve with tortilla chips and raw mixed veggies.

Green Bean and Pea Salad Recipe by Eric Sayers Executive Chef/ Beaufort Memorial Hospital
Ingredients: 1 1/2 cups green beans, cut into 1/2-inch pieces 1 1/2 cups green peas 1/2 teaspoon coriander 1 teaspoon mustard seeds 3 tablespoons olive oil 1/4 cup diced red onion 1 clove garlic, minced zest and juice of one lemon Sea salt and fresh cracked pepper Directions: Fill a medium pot with water and a big pinch of salt and bring to a boil. Blanch the green beans and peas for a minute, until
they’re bright green. Immediately drain and shock them in an ice bath Toast the coriander and mustard seeds in a small dry skillet until fragrant and the mustard seeds begin to pop. In the same skillet, sauté the red onion in the olive oil until softened. Remove from heat and whisk in the garlic, lemon juice, and lemon zest. Combine tasted seeds, dressing peas and bean; season with salt and pepper.
Pumpkin Roll Recipe by Brittney Owen B’s Sweet Treats Linton, IN Ingredients: For the cake: 3 eggs 2/3 cup pumpkin 1 cup sugar 3/4 cup flour 1/2 tsp cinnamon 1/2 tsp nutmeg 1/2 tsp baking soda 1/2 tsp baking powder 1/4 tsp salt For the filling: 8 oz cream cheese; softened, 6 Tbsp butter; softened, 1 cup powdered sugar and 1 tsp vanilla Directions Preheat oven to 375°. Line 18x12 greased jelly pan with parchment paper. Grease and flour paper. Sprinkle cotton towel with powdered sugar. Directions: In a mixing bowl, combine
eggs and pumpkin until mixed thoroughly. In another bowl, sift together all dry ingredients, then combine wet and dry ingredients together. Pour into parchment lined jelly roll pan and bake 13-15 minutes. Meanwhile, in another bowl, beat softened cream cheese and softened butter until smooth. Next, add in vanilla and powdered sugar. Beat again until smooth. When cake is done, turn it out onto the powdered sugar covered cotton towel and roll cake up in towel until cool. Once cool, unroll, spread filling evenly on cake, and roll back up. Refrigerate until filling has set or enjoy warm. WWW.EDIBLESMAG.COM • 13

Who Said School Lunch Is Gross!

While many students weren’t keen on more nutritious school lunches when their districts first began complying with new federal meal standards in the 2012-13 school year, they eventually warmed up to the healthier fare, complaining less and eating as much as they did before the rules went into place, according to two national surveys of school administrators released. The pair of surveys--one of elementary school administrators and one of middle and high school administrators--was funded by Bridging the Gap, a research program of the Robert Wood Johnson Foundation, which supports the standards, created through the Healthy, Hunger-Free Kids Act of 2010. “Policymakers at all levels should be encouraged by these findings and should continue to support schools’ efforts to provide students with healthy meals and snacks,” Tina Kauh, a program officer for the Robert Wood Johnson Foundation, said in a statement. The research was released as debate continues over the standards, which have been gradually implemented since the fall of 2012 and require schools to serve more fresh fruit, vegetables, and whole grains and to limit calories, fat, and sodium in their federally subsidized meals. Supporters of the standards, including first lady Michelle
Obama, have argued that they are necessary to address childhood obesity and related illnesses. The U.S. Department of Agriculture has countered claims of increased discarded food by pointing to a March study by researchers at Harvard University that found that students are now eating more fruit and vegetables, and that, while plate waste is a concern, levels are not any higher than they were before the standards were adopted. Research included in the Bridging the Gap brief shows that respondents, who were either principals or food service providers, have seen fewer complaints since students first began eating meals prepared under the new rules.
