Mucho Margaritas Mexican Restaurant By Ruth Ragland

Chef Jose “Pito” Leon promises patrons of Mucho Margaritas authentic Mexican food to accompany a beverage of towering proportions. The specialty of the house is a 100-ounce margarita fueled by half a bottle of tequila and flavored with real lime juice. The tower is typically ordered by tables of three or four diners — but don’t expect a to-go cup. Leon was born in Guadalajara, Jalisco, Mexico; he and his family moved to Atlanta when he was six. His parents have always been in the restaurant business so he grew up in it and it’s still a family affair. The family moved to Columbia in 1989 and established their San Jose restaurants there. Leon and his wife Maria, who is his partner in the restaurants, have three children. He opened his first Mucho Margaritas in Columbia and has been feeding hungry Gamecock fans in the Five Points area for four years. His brother helps manage that restaurant.

Leon’s favorite dish on the menu is the pollo super bravo — a grilled chicken breast with onions, mushrooms, chorizo and jalapeños smothered in cheese. He has worked in restaurants throughout the Southeast including Atlanta, Tennessee and North Carolina and he’s incorporated the best of what he learned along the way into the menu at Mucho Margaritas. hanksgiving and Christmas are my favorite holiday’s. It’s the time of year where you spend special time with family and friends. A time to make new memories. Thanksgiving is the holiday to give thanks for your family, friends and the blessings that we received throughout the year. It’s also a great time to eat that special Thanksgiving dinner with all the great items made with pumpkin. Pumpkin pies, pumpkin nut bread and pumpkin spice martini’s (for the grown ups). See recipe page 19. Christmas is a time to celebrate the birth of Jesus Christ, Santa Claus, the smell of fresh cut Christmas trees, and drinking egg nog. Egg nog dates back as far as mid-evil times. The recipe has changed quiet a bit over the centuries. Most families have their own special recipe that has been passed down by greatgrandmother. Egg nog has been made with light or dark rums, bourbon or vodka. Some recipes call for real cream where others use imitation. It all comes down to preference. See recipe page 19. For the on the go people, you can purchase egg nog that contains alcohol and real cream such as Mother’s, McCormicks and Pennsylania Dutch at your local liquor store. Non-alcohol egg nog’s can be purchase at your local grocery store. Have a safe and Happy Holiday.

Thanksgiving

hanksgiving is right around the corner. This year I will be a private Chef for a family of 22 the week of Thanksgiving. I look forward to seeing this family because over the past several years we have come to know one another very well around what else... the dinner table. Todays busy lifestyle almost demands us, I believe, to make this day extra special. The meal and presentation do not have to be elaborate just special. In other words break out the dishes and leave the paper plates for the leftovers. I have often said I would rather have a bologna sandwich on a real plate than filet mignon on paper. I will forever hold true to the saying “you eat with your eyes before your mouth”. I know I will get it on this statement but, Thanksgiving is my least favorite holiday in regard to food, but I do love the presentation. I can remember my mom setting a table with her fine china and water glasses, making special dishes

and just beaming with a strong sense of accomplishment as she stood looking at the table she put her heart into. It was always her way of making us feel loved and treasured. It is always my intention to do things that others haven’t thought of or break something down so it is easier for others to do. I recently did a food demonstration at the Beaufort Christian Women’s Connection. I showed them how to make a beautiful bread cornucopia for their thanksgiving dinner table as it is fun, practical, cost effective, and a great way to create conversation among guests! While flowers are always a nice addition to a table, I get a real sense of accomplishment making edible centerpieces. You can fill the cornucopia with breads, cheeses, meats, and crudites. Remember you are only limited by your own creativity. Another favorite I like to make is Shrimp Spires. Don’t be a bear!

5 things you can do NOW to rev up your energy during the hibernation months ​By chaundra white

S

oon we’ll be setting the clocks back an hour and the days will seem shorter as the daylight hours begin to escape our grasp. The colder, darker days will trigger a shift in our activity and our eating habits. We will move into a more sedentary lifestyle filled with days of indulging in the comfort foods of the holidays. If we’re not careful, we’ll end up like bears…literally. It doesn’t have to be that way. There are easy things you can do to ward off the bear in you. Take your vitamins- During the gray months of fall and winter, we don’t get as much sunlight or nutrients from fruits and veggies. A good way to ward of stress, fatigue, and other health issues is with a good multi-vitamin. Do some research and talk with your doctor to find the best vitamins for you. Keep moving- When the weather is blah, we tend to lose our motivation to move. Bad weather doesn’t have to be a hindrance. You can walk in place

while watching your favorite show or purchase an expensive exercise DVD to work out along. You can even make it a family activity by joining the kids in one of the various dancing or exercise games available on gaming systems. Just say no…sometimes- Its okay to indulge in the comfort foods of winter, but make choices like baked sweet potatoes, winter squash, apples, and oranges the main staple of your diet. Wash your hands- seems easy enough but many people just don’t do it. We are touching doors, products in a store, and shaking hands all day. We are picking up germs everywhere. A simple thing like washing your hands throughout the day, will keep your body healthy and strong. Get out and socialize- Being around good, positive people is good for your mental health. My favorite dish is version of plantation shrimp curry, served over rice. 50 years ago, Chef Biff Cappelmann taught me how he made this dish. Since that time understanding the science of ingredients and spicing, I came up with the flavor that I now enjoy today! I’ve never been afraid of bending the rules while cooking, and coming up with a dish to enjoy.

minutes more until most of the liquid has cooked away. Add salt and pepper to t a s t e . Also add 2 tablespoons of yellow curry powder and blend well. (you have to be the judge). Add 3 lbs of medium peeled and deveined local shrimp, blend nicely. Add 3 cups of heavy cream, cook gently until cream is reduced slightly thickens. Now add (to taste), about one cup of coco-lopez and mix well. Now serve this dish over rice. Placed around this dish in small bowls, serve toasted coconut, toasted peanuts, (or toasted sliced almonds), chutney, pickled relish, and fresh bacon pieces. I also enjoy chopped spring onion which is a great addition to this recipe. Top your shrimp curry with any or all of these additional ingredients. Pumpkin Panna Cotta with Pecan Praline Hash Recipe by Sue Ade for Edibles Magazine Photography by Sue Ade for Edibles Magazine Ingredients: 1½ cups half-and-half 1 cup heavy cream 1 envelope (1/4-ounce) unflavored gelatin 1 cup canned 100 percent pure pumpkin, like Libby’s (do not use pumpkin pie filling) ½ cup granulated sugar ¾ teaspoon cinnamon ¼ teaspoon nutmeg Pinch ground cardamom Pinch sea salt Pecan praline hash, for garnish (recipe follows) Place ½ cup of the half-and-half in a medium-size saucepan. Sprinkle the gelatin over the half-and-half and allow to soften for 5 minutes. While the gelatin is softening, blend the remaining half-and-half, cream, pumpkin, sugar, cinnamon, nutmeg, cardamom and salt in a blender and blend until smooth. Heat the half-and-half and gelatin over low heat, stirring until the gelatin is dissolved. Add the cream/ pumpkin mixture to the saucepan, raising heat to medium-low. Whisking occasionally, cook the pumpkin mixture until steam rises from surface and tiny bubbles form around edges. Turn off the heat, cover, and allow to sit for 15 minutes. Remove cover, then divide mixture among 8 dessert dishes, or custard cups. Chill until firm, about 3 hours. Serve Pumpkin Panna Cotta from dessert dishes, or unmold custard cups onto a shallow saucer. Top each portion, with a tablespoon, or two, of pecan praline hash.

Ingredients: Pecan Praline Hash 1 tablespoon granulated sugar 1 teaspoon ground cinnamon 1 large egg white 1 tablespoon water ½ cup light brown sugar, packed 1½ cups coarsely chopped pecans Non-stick cooking spray Preheat oven to 325 degrees. Lightly spray a rimmed cookie sheet with non-stick cooking spray. Mix the granulated sugar and cinnamon; set aside. Place sheet of aluminum foil on a second baking sheet; set aside. In a medium mixing bowl, with a rotary beater, lightly beat egg white until foamy. Add brown sugar, mixing until the sugar dissolves. Stir in the pecan pieces, tossing to coat. Spread the pecan mixture on the non-stick cooking spray prepared baking sheet. Stirring occasionally, bake pecans until they are golden brown. Remove pecans from oven and with two forks, stir to loosen nuts from baking sheet. Remove nuts to aluminum-foil lined baking sheet and sprinkle with reserved sugar and cinnamon mixture. Cool nuts completely on sheet. When cool, store praline topping in an airtight container for up to two weeks. Makes about 1½ cups.

Directions Toss thoroughly, put into greased casserole- grate cheese on top or can cheddar cheese soup. Bake at 350 oven about 30 mins or until well heated.


Chocolate Peppermint Ice Cream Pie

Recipe by Eric Sayers-Executive Chef Beaufort Memorial Hospital

Ingredients: 1 1/4 c. chocolate wafers or Oreos, crushed fine 3 tbsp. melted butter 4 c. chocolate ice cream, softened 1 tsp. peppermint extract 2 Tbsp. confectionary sugar 1/3 c. heavy whipping cream 2 peppermint candy canes, finely crushed Directions: Mix chocolate crumbs and melted butter. Lightly grease sides of 9 inch pie pan. Press crumb mixture onto bottom and sides of pie pan. Fold peppermint extract into chocolate ice cream and carefully spread into cooked pie shell and freeze until firm. Sprinkle half the crushed candy canes over the ice cream. Beat the heavy cream until stiff; add confectionary sugar. Spread or dollop over ice cream pie, sprinkle rest of crushed peppermint candy on top. Serve with chocolate and caramel sauce.

drippings optional) 1 egg 2 Tbsp. peanut butter Pinch sugar 1 ¼ cup whole wheat flour Directions: Combine milk, egg and sugar, mix. Add half or the flour start to form dough, add peanut butter and rest of flour until dough is formed. Roll out and cut into desired shapes. Bake 350 F for 11 minutes, turning halfway through baking time. Cool and share with your furry friend.

Easy Egg Nog

Recipe by Dorothy Colter, Dot’s Red Dot/Ridgeland Ingredients: 2 eggs beaten 3 Tbls. sugar 2 & 1/3 cups of low fat milk 1 tsp. vanilla extract 1 dash nutmeg Directions Blend together and serve chilled.

Pumpkin Spiced Martini

Ingredients: 1.5 fluid ounce Vanilla Flavored Vodka 1.5 fluid ounce Irish Cream (McCormick’s) 1.5 fluid ounce Pumpkin Spice Liqueur 1 pinch each of nutmeg and cinnamon

Directions Pour first 3 ingredients into a cocktail shaker with 1 cup of ice. Shake until the shaker has frosted. Pour into a martini glass and garnish with nutmeg and cinnamon.

Getting Around the Lowcountry

It’s easy to get to beautiful Beaufort County - just a short drive from I-95 or US 17. Both roads run north-south along the east coast of the United States and connect to other interstates and major highways. Driving south on US 17, exit onto US 21 at Gardens Corner and enjoy the scenic marsh views going approximately 20 miles east into the downtown Beaufort area. Driving south on I-95, take Exit 33 at Point South and connect to US 21 for a direct route into the center of Beaufort. Driving north on I-95, take Exit 8 onto US 278 toward Hilton Head Island and directly into the Bluffton area and the southern part of Beaufort County. This route connects to SC 170, across the Broad River into the city of Beaufort in the northern part of the county.
