Cigar Lounge is a high point for Beaufort smokers

Lowcountry smokers have found a home at Beaufort Tobacco’s Cigar Lounge Ruth Ragland Associate Editor

I

t’s no puffery to say that the lounge affords a commanding view of the Beaufort River from its secondfloor perch above Bellamy Curve at 1100 Carteret St., next to Magnolia Cafe. The lounge is appointed with comfortable leather seating, a sound system for music, and a widescreen television for watching sporting events. There’s a shaded patio with water views as well for enjoying a smoke in the great outdoors. Additionally, smokers can use the custom-built cornhole set built by one of the shop’s very own customers. Proprietor Raj Patel, a staunch smoker himself, was visiting Beaufort a few years ago when he discovered the city’s lack of a tobacconist. “I drove an hour away to get a cigar,” he said. Recognizing the need he researched

the business potential for a cigar shop in town and decided to open his own establishment. The shop now features custom made artwork from local artists and customers upon entry before leading to a peaceful lounge and the multi-room humidor. The store’s walk-in humidor offers

a wide assortment of the finest-quality cigars in a range of prices. He also stocks briar pipes, hookahs, lighters and other accessories, as well as the tobacco-free e-cigarettes. Patel prides himself on providing a cigar lounge with an atmosphere where both guys and gals can relax and enjoy a smoke. Many customers describe Beaufort Tobacco as a splendid place to tailgate

Angel Oak Tree Park

Angel Oak Tree Park is located on Johns Island with no admission charge. On Johns Island stands the majestic Angel Oak. Estimated to be between 300-400 years old, the tree towers 65 feet high and has a circumference of 25.5 feet. Its area of shade is 17,000 square feet and its largest limb has a circumference of 11.5 feet, and a length of 89 feet. Live oaks are not particularly tall trees, but have wide-spreading canopies. Only in the very old specimens do you find massive limbs resting on the ground, as the limbs of the Angel Oak. The City of Charleston acquired the Angel Oak Park in 1991. The park also has a gift shop and picnic area. It is an absolute must see for anyone visiting Charleston South Carolina. Chef Talk

Orchid Paulmeier runs her kitchen like she lives her life—surrounded by family, friends and feel-good food. When Orchid Paulmeier was eight years old her grandmother moved from the Philippines to live with her family in Orland Park, Illinois and with that grandmother came an awakening of Orchid’s culinary senses. After graduating from the University of Illinois in 1994, Orchid married her high school sweetheart and relocated to South Carolina. Thus, it was there where her culinary career began. She worked at several restaurants in the Hilton Head Island area and served as a corporate trainer for Long Horn Steakhouse before shifting from the hospitality industry to an entrepreneurial endeavor in 2000 as a personal chef. Throughout those years she never lost sight of a personal life goal to own a restaurant by the time she was thirty years of age. Which she did in 2003 with the opening her first restaurant, One Hot Mama’s. Orchid is not a trained chef. She has honed her culinary skills over time as a research chef to deliver food that people want with an emphasis on taste, nutrition and kid applause. In 2011 Orchid was among the fifteen finalists in Season Seven of the Next Food Network Star reality series. Bob Tuschman, General Manager of Food Network spoke of Orchid as “…the standout, and I have to say, I agreed with them, you are effervescent, luminescent every ‘escent’ I could think of…” In the same year Orchid’s signature line of barbecue sauces Perfect 10 and One Hot Asian went public under the One Hot Mama’s label. The sauces were featured in 2012 on the Southern Women’s Shows Celebrity Cooking Stage where Orchid embarked on a journey to bring her culinary experience to the public. In that same year the signature label of Orchid’s dry rub called Backyard BBQ Rub was launched at the

Atlantic City Food & Wine Festival. Orchid gleans enthusiasm from her public appearances and participates annually in the Savannah Asian Festival, the Atlanta Food & Wine Festival and Palmetto Bluff’s Music to Your Mouth. Orchid’s broadcast experience did not end with her elimination in the Next Food Network Star reality series. She launched a partnership with WHHI-TV in 2012 that continues today as the host of a local culinary program, The Restaurant Show that receives airtime seven days a week via a twenty four hour broadcast. Between a weekly shoot schedule for the culinary show, annual festival engagements and actively serving in the operations of her two restaurants One Hot Mama’s and The Lodge it can certainly be said that Orchid has achieved the American Dream. However, her entrepreneurial spirit sees her continuing to reach forward. She is profiling a product line of One Hot Mama’s pies and sides that she hopes will gain an endorsement from a major broadcast outlet with national distribution. Mint leaves or known by the scientific name Mentha piperita is an herb that is well known throughout the world, especially since many are used for a variety of products such as breath fresheners, chewing gum, toothpaste, mouthwash and oil wind. One of the major health benefits of mint leaves is the effect on the body’s digestive system. Mint oil is a stimulant, so it may be useful in treating depression, stress and headaches. The mint leaves are also used as a condiment and decorative items that are used in a variety of culinary dishes and drinks.

There are literally hundreds of different tomato varieties. Loaded with antioxidants, low in calories, and packed with anti-cancer benefits — tomatoes can be considered a triple threat when it comes to fruits. They’re also high in lycopene, which may promote cardiovascular health and helps prevent skin from sun damage. Regular consumption of this power fruit can help lower the risk of prostate cancer in men. Choose tomatoes that have rich colors- deep reds are a great choice. Today tomatoes are enjoyed worldwide— to the tune of about 130 million tons per year.

GARLIC

Although you may not snack on garlic cloves the way you snack on almonds, this herb is a must-have on your shopping list. This hearth-healthy herb not only reduces your body’s cholesterol and triglycerides, it protects blood cells and blood vessels from inflammatory and oxidative stress. As an added bonus, research published in the American Journal of Clinical Nutrition found that compounds in garlic may prevent cellular changes that may lead to cancerous tumor development and inhibit tumor growth.

SPINACH

Spinach offers twice as much fiber as other greens. So when you want a salad that’s going to fill you up, go for the spinach variety. Spinach is a nutrition superstar, even a fairly good source of iron. It’s loaded with vitamins and minerals, some of which are hard to find in other foods. May River Shrimp over Creamy Cheese Grits

Whether served at the kitchen table for supper, or in the dining room for a special dinner, a shrimp and grits meal is truly a luxury meal when made with freshly caught May River shrimp. Ingredients: 6 slices thick bacon, diced 3 tablespoons butter ½ cup chopped green bell pepper ½ cup chopped red bell pepper diced 1 small onion, chopped 1 clove garlic, minced Few dashes of Tabasco 1 pound large, or extra-large, fresh shrimp, peeled* and deveined (page 19) 1⅔ cups milk 2 cups low-sodium chicken broth 1 cup quick cooking grits 1 cup shredded cheddar cheese (or a mixture of shredded cheddar cheese and shredded parmesan cheese), plus additional cheese for garnish

Chopped scallions, for garnish Directions: Brown bacon in a large skillet. Stir in butter, pepper, onion and garlic and cook over medium heat for 5 minutes or until onion is translucent. Sprinkle with Tabasco. Toss in the shrimp and cook just until shrimp turn pink, about 4 to 5 minutes. Remove from heat and keep warm. Bring the milk and chicken broth to a boil in a saucepan; stir in the grits. Return the grits to a boil; reduce heat. Cook for 5 minutes, stirring occasionally. Add the cheese(s) to the grits and stir until cheese is melted. Spoon the grits into individual serving bowls and top with the shrimp mixture. Garnish with shredded cheese and chopped scallions. Makes 6 servings. *Cook’s note: You may either peel away all of the shrimp’s shell, or leave the tail on.

Ingredients: 1# crab meat (claw, backfin or lump) 1 lemon, zest and juice 3 dashes tabasco 1 tsp. Worcestershire ¼ red pepper, brunoise 1 tsp. Dijon mustard ¼ cup mayonnaise 1 Tbsp. fresh chopped chives ½ Tbsp. old bay seasoning As needed: Panko bread crumbs, finely ground olive oil Directions for the cakes : Combine crab meat, lemon juice and zest, tabasco, Dijon, worcestershire, red pepper

Ingredients for the remoulade: 3/4 cup mayonnaise 2 teaspoons Dijon mustard 1 teaspoon tarragon vinegar 1/4 teaspoon Tabasco sauce 2 teaspoons drained tiny capers, chopped 1 Tablespoon chopped fresh flat-leaf parsley 1 scallion very thinly sliced Salt and freshly ground black pepper.

Reasons to Use Apple Cider Vinegar Every Day

It’s effective for pretty much anything— your skin, your hair, your house, and even your pets can benefit from its qualities. Raw, organic, unfiltered and unpasteurized, apple cider vinegar is so much more than a salad dressing! 1. Apple cider vinegar can detoxify your home. It’s made from apple juice and is fermented to hard apple cider. It’s then fermented a second time to become apple cider vinegar. By using ACV in lieu of other products, we instantly decrease the consumption of unnatural chemicals in our homes and daily lives. 2. It can make your hair shine. I recommend recycling an old shampoo bottle, then filling it with 1/2 a tablespoon of apple cider vinegar and a cup of cold water. Pour the solution through your hair after shampooing several times a week for dramatic results. 3. Natural apple cider vinegar regulates the pH of your skin. Dilute ACV with two parts water, and spread the concoction over your face with a cotton ball to replace your current toner. You can do this at night after washing, and in the morning before you apply your moisturizer. 4. It can remove stains from teeth. Rub teeth directly with apple cider vinegar, and rinse with water. 5. It can soothe sunburnt skin. Add a cup of apple cider vinegar to your bath, and soak for 10 minutes to eliminate discomfort from sunburn. 6. Apple cider vinegar can be used as a natural aftershave. Fill a bottle with equal parts apple cider vinegar and water, and shake before applying to the face. 7. It’s an all-natural massage treatment. Rubbing apple cider vinegar on your hands and feet will give massage-like benefits and relief to tired hands and feet. 8. Apple cider vinegar can aid in weight loss. For daily weight management, add 2 teaspoons of apple cider vinegar to 16

Data shows some limited, yet significant, weight loss benefits from sustained daily intake of acetic acid (which is a main ingredient in apple cider vinegar). In a 2009 study published in Bioscience, Biotechnology, and Biochemistry, it was found that subjects that consumed acetic acid for 12 weeks experienced significant declines in body weight, abdominal fat, waist circumference and triglycerides. Triglycerides contribute to the bad cholesterol that we want to avoid. 9. ACV can help you reduce heartburn. Natural remedy experts say you should begin to feel relief very shortly after taking a teaspoon of apple cider vinegar followed by a glass of water. Note that apple cider vinegar will not give relief if you have an ulcer. 10. The use of apple cider vinegar is effective in repelling fleas on your pets. One part vinegar and one part water can be sprayed on your pets fur and rubbed in generously to the skin. Saturate the entire coat, and continue every day for a few days to a week. Any flea infestation will surely be gone.

How to shell (peel) and clean (devein) fresh shrimp Sue Ade, Food Columnist

Whether shrimp is peeled, or not, depends on how the shrimp is going to be used in a particular dish; deveining, on the other hand, is a matter of preference. Mostly, we devein shrimp for aesthetic reasons, but in large shrimp, the black intestinal vein can be gritty and full of sand, so if you’re planning to use large shrimp in your recipe, for full enjoyment, remove the vein. To be truly considered “fresh,” shrimp should be caught no more than 12 hours before making its way to your kitchen. Fully intact “whiskers” (also known as “antennae”), which begin to fall off as shrimp ages, is a good indicator that these shrimp have just come from the water. To shell Slip your thumb under the shell to open and gently pull the shell back, lengthwise, starting at the head end. If desired, leave the tail “feathers” attached. (The tail is decorative and can be convenient to grasp when making dishes such as fried shrimp.)
