Herbs are soft, succulent plants which usually grow in the temperate zone. Until recently cooks have had to make do with very few fresh herbs, such as sage, parsley, and thyme. Nowadays you can also find fresh oregano, parsley, sage, tarragon, rosemary, and thyme. Since herbs are at their best when they are young and freshly picked, it is well worth growing your own., but picking buying fresh from your local farmer’s market or grocery will do fine. Here’s a few to learn about.
Oregano
Flavor: Earthy; balances acidic tomatoes — hence common on pizza. Parsley Great with: Lamb, beef, eggs, beans, Flavor: Peppery and fresh; curly parsley is milder than eggplant. Notes: It’s closely related to marjoram (but more pungent), so they flat-leaf Italian. Great with: Salads, aren’t classified separately. vegetables (especially potatoes), pasta. Notes: Either variety is a breath Sage freshener. Flavor: Very aromatic and Rosemary woodsy. Great Flavor: Pungent aroma and pine flavor. with: Fresh sausage, Great with: Mediterranean dishes, lamb, holiday stuffing for turkey, rich poultry, fish, breads; add sprigs or finely meats like pork, goose and duck. chopped leaves to long-cooking stews. Notes: Deep-fried sage is a lovely Notes: When grilling, sturdier stems garnish. make good skewers; branches can be a basting brush.
Thyme
Flavor: Minty and citrusy Great with: Mediterranean dishes, stews, eggs, seafood, poultry; toss sprigs into boiling water to flavor steamed rice. Notes: Strip leaves from stems by pulling through fork tines.

Tarragon
Flavor: Reminiscent of licorice. Great with: Poultry, fish, shellfish, vegetables, vinegar and eggs; indispensable in the French béarnaise sauce. Notes: Two types; French is preferred over the more bitter Russian.

May 10th in the black box theater at ARTworks in Beaufort Town Center, Simply Grand presents a Mother’s Day concert, with melodies, loving lyrics, and special ticket prices~ $12 for all tickets, $7 for children. The concert begins @ 7:30, surrounded by a quilt show in the gallery, artists working in their studios, and the classrooms where creativity happens. After years of performing together locally and throughout Northeast Florida, Simply Grand was organized in 2010. The nucleus of the group includes Keyboardist Kenneth Varner, Saxophonist Gregory Whittaker, and Drummer Trevor Daniels. The trio of musicians soon discovered a certain chemistry and musical affinity that led to their formation of Simply Grand, a versatile musical ensemble that has a
unique ability to shift between Contemporary Jazz, Gospel, and Blues with ease. Geuka (pronounced: jay-yoo-kah) is an American award-winning visual artist, singer, songwriter, composer, and performance artist. Amiri Geuka Farris (his full name) received his Masters of Fine Art in Painting and B.F.A. in Illustration from the Savannah College of Art and Design and currently teaches Fine Arts at USC. He has performed in numerous cultural and event venues and has exhibited his multimedia works in museums internationally and is dedicated to integrating music and art. Experimenting with a wide range of musical styles, he fuses a mix of pop, hip-hop, techno, with dynamic images to create evocative artsongs and performances. He uses his artistic vision to bring about a universal new
sound – “a sound without violence, without overt materialism, and without bias or discrimination.” He strives to inspire people of all ages and demographics to come together in a myriad of ways through his music. Summer Berries and Memories By Eric Sayers-Executive Chef Beaufort Memorial Hospital
School was finally out and I was so excited! I didn’t know what I wanted to do but I knew the time was mine, or so I thought. I remember sleeping soundly that night in Connecticut, windows open, a cool breeze blowing through the New England sky. I also knew that spring came in like a lion, roaring with every assault on the poor grass and dad’s garden. I woke up the next morning after my parents went to work with a list. Ugh. Not what you want to wake up to after shaking off the dust of the third grade. Geeze, I just slid down the slide on my tummy! Does anyone get how I endured the whistles blowing and recess restrictions? Nope, no one cares. And now I have to get up early on my vacation to help pick blueberries??? Dad had three blueberry bushes and he covered each one with some kind of fine net cloth. He also got this silly blow-up snake one time; it was supposed to keep the birds away. I liked the snake a lot; I teased many a neighbor with it but believe it or not those birds got to those bushes, even with all of dad’s protections. I guess the lion

was gone in that New England weather and as the sun warmed I figured the lamb was here to stay. I did what I was told and went out in the grueling heat and endured all the birds and snakes and all the spring beasts. I picked a quart of blueberries! Amazingly some actually survived the relentless birds, they looked so plump and yummy. I collected all that I found and put them on the table for mom and dad to see when they got home. I would love to say that mom came home, found the blueberries and whipped up a batch of biscuits and we all enjoyed fresh blueberries and fresh churned cream from our cows and the cane sugar we had in the back yard. The reality is we ate all the blueberries. Dad even mentioned how big they were and I agreed. They were delicious and it’s amazing that nature needs no help from us. Many, many years later, I developed this recipe. If there are any berries left that is. This simply complements the beautiful summer fruit. Serves 4 ¼ cup blueberries ¼ cup raspberries ¼ cup sliced strawberries ¼ cup blackberries 1/8 cup sugar 2 TBSP Grand Marnier (optional) 2 TBSP orange juice ¼ tsp vanilla 4 Southern Style Biscuits or Shortcakes Whipped Cream, fresh Combine the berries, sugar and orange juice, let sit for 1 hour. Add vanilla and Grand Marnier (if using). Stir and let sit for another hour. Spoon over split biscuits or shortcakes. Top with fresh whipped cream. Enjoy summer!

The St. Helena Parish Chapel of Ease, a relic of the Lowcountry’s colonial past, has beguiled and haunted visitors to St. Helena Island for more than two centuries. It was built ca. 1740 to serve planters in St. Helena Parish who lived at great distances from the parish church in Beaufort and could not regularly attend services there. The ruin is significant as a relatively intact example of mid-eighteenth century tabby construction and was added to the National Register of Historic places on Oct. 6, 1988. The church was virtually abandoned when the planters evacuated the island in the fall of 1861. During the Federal occupation of St. Helena, the church was used frequently
by several of the Northerners who had come to the island to educate and train the freedmen. It was also used as a sanctuary by

Methodist freedmen as early as 1868, but was burned by a forest fire in February 1886 and was never repaired. Much of its historic fabric, including the church walls and much of its plaster, remains. A local legend from Lowcountry lore has drawn visitors to the chapel’s ruins for decades. As the story goes a headless man is said to haunt Land’s End on St. Helena Island. According to legend, he’s a soldier who was decapitated in battle and is looking to restore his head. The apparition looks “like a little swinging lantern, swinging back and forth,” but the scientific explanation for sightings of the ghost is phosphorescence. Gnarled and majestic live oaks add to the mysterious atmosphere. Visitors to St. Helena Island can also catch spectacular sunsets by following Land’s End Road to a county dock on the Beaufort River and Inland Waterway.

Homemade Peach Cobbler Recipe by Sara Simmons
Ingredients: 4 cups peeled, sliced peaches 2 cups sugar, divided 8 tablespoons butter 1 1 / 2 cups self-rising flour 1 / 2 cup water 1 1 / 2 cups milk Ground cinnamon, optional Directions Preheat oven to 350 degrees F. Combine peaches, 1 cup sugar and water in a saucepan and mix well. Bring to boil and simmer for 10 minutes. Remove from heat. Put the butter in a baking dish and place in oven for three quarters of melting.
Mix remaining 1 cup sugar, flour and milk slowly to avoid lumps. Pour the mixture over the melted butter. Do not mix. Spoon fruit on top gently pouring in syrup. Sprinkle with cinnamon, if using. The dough rises during baking. Bake for 30-45 minutes. To serve, spoon onto a plate and serve with your choice of whipped cream or vanilla ice cream.

Ingredients: 1/4 cup olive oil 4 cloves of garlic, minced 2 tablespoons sugar 2 whole lemons, one juiced and one sliced 2 whole oranges, one juiced and one sliced 1 tablespoon Italian seasoning 1/2 teaspoon paprika 1 teaspoon onion powder 1/4 teaspoon crushed red pepper flakes Kosher salt and freshly ground pepper, to taste 10-12 pieces (about 4 1/2 lbs.) bone-in chicken parts (thighs and legs are best) 1 medium onion (any kind), thinly sliced 1 teaspoon dried thyme, or fresh chopped 1 tablespoon dried rosemary, or fresh chopped Chopped fresh herbs (rosemary, thyme, parsley), for garnish, optional Directions Preheat oven to 400 degrees F. In a small bowl whisk together olive oil, garlic, sugar, lemon juice, orange juice, Italian seasoning, paprika, onion powder, red pepper flakes,
and salt and pepper. Place chicken in a rimmed 13-in. x 9-in. baking dish. Pour olive oil mixture all over chicken, turning pieces to coat all sides. Place parts skin side up and spread them out evenly in the pan. Arrange slices of lemon, orange and onion around and under the chicken. Sprinkle all over generously with thyme, rosemary, salt and pepper. Bake uncovered for about 1 hour, or until chicken is cooked and juices run clear. Remove parts to a serving platter and garnish with additional chopped fresh herbs, if desired. Enjoy!

Frogmore Stew Recipe by Melody Reid
Ingredients: 8 quarts water 3/4 cup crab boil seasoning 2 pounds red potatoeslarge potatoes cut in half 2 pounds smoked sausage links, cut into 2 inch pieces 12 ears corn - quartered 4 pounds large fresh shrimp, unpeeled 12 blue crabs cooked, cleaned and cracked down the center (optional)
Bring water and seasoning to boil in a large pot. Add potatoes and cook for 15 minutes. Add sausage and corn and cook for 10 minutes more. Stir in the shrimp and precooked crabs and cook additional 5 minutes. Serve and eat

Ingredients: The Cake ¾ cup (1½ sticks), plus 2 tablespoons unsalted butter, softened 1¾ cups sugar 8 large egg yolks, room temperature 2½ cups all-purpose flour, sifted 2½ teaspoons baking powder ½ teaspoon salt 1 teaspoon vanilla extract 1 cup fresh milk, room temperature 6 eggs whites, room temperature The Milks 2 (14-ounce) cans sweetened condensed milk 1 (12-ounce) can evaporated milk 1 (13.5-ounce) can coconut milk (not Coco Lopez Cream of Coconut) 1 teaspoon vanilla extract ½ teaspoon coconut extract 6 large egg yolks The Meringue 3 large egg whites, room temperature ¾ cup granulated sugar ¾ cup light corn syrup 1 tablespoon water 1 teaspoon vanilla extract ½ teaspoon coconut extract Directions: Fresh strawberries for decorating cake Preheat oven to 325 degrees. Grease and flour a 9 x 13-inch baking pan. For the cake: sift flour with baking powder and salt; set aside. Combine milk with
vanilla; set aside. On medium speed of an electric mixture, cream the butter and sugar together until light and fluffy. Add yolks. Slowly add flour mixture to butter mixture, 2 tablespoons at a time, then slowly add milk mixture; batter will be thick. In a separate bowl, beat egg whites until stiff; fold into batter. Pour batter into prepared pan and bake for 35 to 40 minutes, or until cake tests done. Cool on a rack. For the milks: in the container of an electric blender, blend milks and egg yolks. Place mixture into a non-stick pan and cook over medium heat, stirring constantly until mixture thickens and comes to a boil. Remove from heat and stir in extracts. Pour milks over cake. Let cake stand while making the meringue. For the meringue: place all ingredients in top part of a double boiler over cold water. Over medium-high heat, beat mixture continuously with a hand-held electric mixer until frosting stands in peaks, approximately seven minutes. Remove from heat and set aside. Invert cake on to a large, rimmed platter. Spread with meringue, and top with sliced, fresh strawberries. Serves 12 to 16.

With their honeyed scent and dulcet flesh, peaches are the darlings of summer stone fruit. Peaches’ natural sweetness lends itself to seasonal desserts like peach cobbler, peach pie, or even just simple peaches and cream. Perhaps because of its association with dessert, the fuzzy fruit is often overlooked as a nutritional powerhouse. Like a Southern belle, the sun-kissed peach has historically gotten more attention for looking and smelling pretty than for the substance it has to offer. Peach nutrition has been know about for centuries. They are thought to have originated in China as long as three thousand years ago. Peaches come from the stone family of fruits and have a large and pitted hard seed. The fruit of a peach has a large amount of fiber. As we all know fiber aids the digestive system tremendously, helping to prevent constipation as well as colon cancer. Some of the many other nutrients to be included in peach nutrition are niacin, riboflavin, calcium, iron, potassium, phosphorus and Vitamins A,B and C. Health Benefits of Peach • Peaches help make the skin healthy and also add color to the complexion. • It has been seen that consumption of peaches helps in the removal of worms from the intestinal tract. • Being rich in Vitamin A, peaches might help prevent cancer in organs and glands with epithelial tissue. • Peaches comprise of more than 80

GETTING AROUND THE LOWCOUNTRY It’s easy to get to beautiful Beaufort County - just a short drive from I-95 or US 17. Both roads run north-south along the east coast of the United States and connect to other interstates and major highways. Driving south on US 17, exit onto US 21 at Gardens Corner and enjoy the scenic marsh views going approximately 20 miles east into the downtown Beaufort area.
