Bluffton, SC – The Greater Bluffton Chamber of Commerce will host a special “Taste of Bluffton” street fair, celebrating the unique flavors of the Lowcountry, on Saturday, April 13, 2013, from 11am to 5pm. The inaugural family-friendly event, presented by Covert Air, will take place in the Bluffton Village, between the Bluffton Post Office and Bluffton Library, and feature Live entertainment, a street dance and a variety of vendors selling samples of their most mouthwatering cuisine. Beer, wine and other beverages will also be available for purchase. The event is open to the public and there is no charge for admission. Dining Pleasures From The Past THE DEVILED CRAB,

A
a LowCountry favorite has almost disappeared here!
tradition in the Lowcountry, 55 years ago my father would give us a string with a chicken neck on the end, we would wade a couple of feet into the river in front of our home and 40 minutes later we had a bucket of fresh local Atlantic blue crab. Dad would throw them in a big pot of boiling water with a seafood seasoning. While we cooked and cleaned the crab he told us, “We’re going to make deviled crab.” I can remember him saying that deviled crab originated in Florida, near Tampa during a cigar workers strike in the 1920s. It was shaped in an oval to be held with one hand. During this time crab was very plentiful and inexpensive; it was fed to migrant workers, labor forces. Stale Cuban bread was used with Latin American spices making it easy to carry with you to work. Locally we were taught to make deviled crab and place it back into the crab shell, serving it for dinner. Really good deviled crab is hard to find

now — crab cakes have taken over. Today you can just purchase a pound of good crab meat and prepare your own deviled crab. Here is our simple family recipe. DEVILED CRAB: 1 cup of cracker crumbs 2-3 tablespoons of butter 1 pound of claw or lump crab meat 1/2 cup of mayonnaise 1 1/2 tablespoons of Worcestershire sauce 1 1/2 tablespoons of a good mustard 1 hard cooked egg, chopped fine 1 teaspoon of hot sauce 1 tablespoon of Old Bay seasoning (early on, it was a Cuban spice-my father used). Mix well and place in your foil or real crab shell.....Put a solid small butter cube on top, now cool for several hours (to let seasonings attach ). Bake at 350 degrees 4 inches from the top of the oven around 15-20 minutes (until it’s nice and brown)
NOTE: Good deviled crab isn’t found here now — good crab cakes have taken over!

Proprietor Tim Singleton’s inspiration for his recently launched eatery is homegrown — his mother and grandmother. It’s his family’s first entry into the restaurant business but the menu draws on the dishes that kept them coming back for more at the dinner table at home when he was growing up. “We’re really excited — our restaurant represents her authentic soul food,” he said of his grandmother, Ruby Lee. “Macaroni and cheese, collard greens, sweet potato pecan pie, fried chicken, oxtails — I can keep going on and on and on. She did a lot of things well.” “We wanted to honor her name and put a business together that represented all the qualities of her life to honor her life — she represented class, integrity,” he said. “She was an incredible cook and more importantly she was an incredible black woman that took care of her kids, her kids’ kids and her grandkids’ kids.” While it’s his grandmother’s life he wants to celebrate in naming the place Ruby Lee’s, Singleton is also proud to have his mother Deborah Govan as a partner in the venture. “She knew she wanted to be a part of it,” he said. “She came in on it and she inspired me to make it the best thing going.” “Strong black women don’t get a lot of credit,” he said. “But there’s nothing like a mother’s love and support to carry you through a lot of adverse situations.” Singleton has enlisted the help of his entire family in getting Ruby Lee’s up and running. It’s important to him to offer a family-style ambience welcoming customers from ages 8 to 80. The location at 46 Old Wild Horse Road on the North end of Hilton Head provides easy access whether you’re coming onto or leaving the island. Singleton prides himself on serving food made from scratch at Ruby Lee’s and buying local seafood and produce. “We take our time and do it right,” he said of Lowcountry favorites like she-crab soup. “We want to support the people around us as we build our business up.” Patrons can also look forward to daily specials of the kind of fare that “just warms your belly,” he said. “That’s the thing that’s going to separate us and make people want to try us.” Ruby Lee’s Sports, Blues & Soul Food also features eight high-definition flat screen TVs for catching live sports action and a full-service bar with a great wine list. Some of the best known names in local entertainment can be found performing live on Wednesdays and Fridays. Natural Household Products to Use in Spring Cleaning By Kathryn Vercillo www.kathrynvercillo.com Are you getting ready to do your spring cleaning? Do you want to try to keep that cleaning low-cost and green? Many people are interested in using natural products that are chemical-free. The problem is that many of the green cleaners on the market are expensive. But you don’t actually need those products for green spring cleaning. You can use normal household products instead. 1. Baking soda. This is probably the number one natural product that most people already know how to use in the home. It’s a natural cleaner that is most commonly used to get rid of bad smells in the refrigerator. It also deodorizes in other parts of the home and is great for cleaning stinky things like carpets or rugs. If you’re going to be doing some deep cleaning of pots, pans and Tupperware this spring then you should use baking soda there, too, since it will aid in deodorizing them. Additionally, the slight grittiness of baking soda makes it a really great cleaner for areas of the home that need to be scrubbed and scoured. 2. Hydrogen peroxide. You probably keep this product around your house because it’s great at killing bacteria. This doesn’t just work on your cuts, either. Hydrogen peroxide can be used to kill bacteria and mold all throughout your home. This helps to keep your home safe for everyone who lives there. Hydrogen peroxide is great to use to clean the walls and floor of your home and it can even be used to clean the toilet. You’ll want to dilute it with hot water when using it. 3. Lemon juice. There is a reason that there are so many cleaning products on the market today that have a lemon scent to them. This fresh scent is associated with a clean feeling do to the fact that lemon is a great antibacterial product. Lemon juice is a nice-smelling cleaner that helps to deodorize and freshen the home. It is also a natural bleach alternative. It can be used to clean glass, especially stained coffee pots. It can also be used to clean any copper that you might have in the home. 4. Olive oil. You would not believe how many uses for olive oil exist that have nothing to do with food. It’s a terrific home cleaning product that is used in particular to polish up your home. It works really great on all types of wood so you can use it on floors and furniture. It can also be used to polish stainless steel which makes

it a terrific spring cleaning agent for kitchens and bathrooms. And if you notice any squeaky doors or hinges while you’re doing your spring cleaning then you can also apply a bit of olive oil to end that problem! 5. Pure castile soap. This is the one product that you might want to purchase that you don’t necessarily already have around the home. This is a natural form of soap that is safe for the home. Dr. Bronner’s is a popular brand name but you can choose other brands as well such as Elysian Dream or Shadow Lake. Pure castile soap will work well in all areas of home cleaning that require soap. A great tip is to combine this ingredient with either salt or baking soda when you want to scrub an area clean. The grittiness from the salt or baking soda will assist in the scouring of areas such as the tub or the sink. The soap will help to really get these areas clean. This soap can also be used on laundry stains and even to clean your pets. You might also want to use a little bit of lemon juice to improve the smell. 6. Salt. Salt has a bit of that same grittiness that you get from baking soda (although typically a bit more so). For that reason, it’s a terrific product to use when trying to scrub or scour your home. Salt also has deodorizer properties. It can be used to clean your dishes, especially greasy pans since it will soak up the grease. It can be combined with soap or vinegar to make a stronger cleaning agent. 7. Tea tree oil. Like olive oil, tea tree oil can be used to polish up your home. However, it does more than this; tea tree oil is known for its ability to kill germs. You can combine it with water in a spray bottle and use it to clean out mold and mildew from areas like the bathroom. You might also want to add this to your laundry to protect it from mildew and mold. 8. White vinegar. This important product is great for helping to clean your home. The reason for this is that it’s an anti-bacterial product that is capable of destroying germs. It’s also good for killing any mold that you might have starting to grow in your home. Very few ingredients that you see on the list cost very much at all. Most of these are probably ingredients that you already have around your home. By choosing to use these as natural cleaners this spring, you’ll be able to really freshen up your home at a low cost. And you won’t have any nasty chemicals to contend with in your home!

Hardeeville’s Got Talent: Adult Edition

Hardeeville’s Got Talent: Adult Edition is the second installment of Hardeeville’s Got Talent with children from the local community; this is a program provided by The Parks and Recreation Department of City of Hardeeville. The inaugural event happened July 2012 7pm in the Hardeeville community room; it was well received by participants and community. The talent included youth rappers, singers, dance performances and a saxophonist.
The criteria for the event are the performances have to be 3-5 minutes long, no profanity and be a local resident. Hardeeville’s Got Talent: Adult Edition was held February 11, 2013 7pm in the Hardeeville Community Room. The program had 13 contestants, three judges, score tally and music equipment donated by Saved by Grace. The entertainment
ranged from gospel rappers, singers, praise dancers, rhythm & blues, jazz, monologue performance and country western. The prizes were: 1st place: $75 master card gift card & plaque, 2nd place: $50 master card gift card and 3rd place: Free oil change. This event was to showcase and display the talent in Hardeeville, SC . The next events that will display this type

Easy Green Velvet Cupcakes (Family Features)
Makes 24 servings Ingredients: 1 package (18 1/4 ounces) German chocolate cake mix with pudding 1 cup sour cream 1/2 cup water 1/4 cup unsweetened cocoa powder 1/4 cup vegetable oil 1 bottle (1 ounce) McCormick Green Food Color 3 eggs 2 teaspoons McCormick Pure Vanilla Extract 1 container (16 ounces) cream cheese frosting or Vanilla Cream Cheese Frosting (recipe follows) Green sprinkles (optional) Directions Preheat oven to 350∞F. Beat cake mix, sour cream, water, cocoa powder, oil, food color, eggs and vanilla in large bowl with electric mixer on low speed just until moistened, scraping sides of bowl frequently. Beat on medium speed 2 minutes. Pour batter into 24 paper-lined muffin cups, filling each cup 2/3 full.
Bake 20 minutes or until toothpick inserted in center of cupcake comes out clean. Cool in pan 10 minutes. Remove from pans; cool completely on wire rack. Frost with cream cheese frosting. Decorate with sprinkles, if desired. Minty Green Cream Cheese Frosting: Stir 1/2 teaspoon McCormick Pure Peppermint Extract and 1/2 teaspoon McCormick Green Food Color into canned cream cheese frosting or Vanilla Cream Cheese Frosting. Vanilla Cream Cheese Frosting: Beat 1 package (8 ounces) cream cheese, softened, 1/4 cup (1/2 stick) butter, softened, 2 tablespoons sour cream and 2 teaspoons McCormick Pure Vanilla Extract in large bowl until light and fluffy. Gradually beat in 1 box (16 ounces) confectioners’ sugar until smooth. Makes 2 1/2 cups.mixture in a glass serving bowl. Chill until serving.
Easter Deviled Egg Recipe by Sabrina June Ingredients: Ingredients 6 large eggs 1/4 cup mayonnaise 1 teaspoon dijon mustard 1/4 teaspoon salt 1 teaspoon paprika salad cube, diced bell pepper option-for the eyes red bell pepper, cut into tiny triangles, option- for the beak Directions Place the eggs in a pot and cover with cold water. Bring the water and eggs to a boil over high heat. When the water comes to a boil, turn off the heat and let sit for 15 minutes. Drain off the hot water and cover with cold water to cool the eggs. Place the yolk mixture in a zip lock bag and cut a whole in one end to make a piping bag. Squeeze the yolk mixture into the egg white, place the olive “eyes” and red bell pepper “beak” into the yolk mixture and top with the remaining egg white.
Fresh Double Strawberry Pie Recipe by Tom Witt Ingredients: 1 (9 inch) pie crust, baked 1 1/2 quart fresh strawberries 1 cup white sugar 3 tablespoons cornstarch 3/4 cup water 1 cup heavy whipping cream Directions: Arrange half of strawberries in baked pastry shell. Mash remaining berries and combine with sugar in a medium saucepan. Place saucepan over medium heat and bring to a boil, stirring frequently. In a small bowl, whisk together cornstarch and water. Strawberry Lemonade Recipe by Angie Mcgowan Ingredients: 6 lemons, juiced 1 pint strawberries 2 cups water 1/2 cup sugar 2 cups water Directions: Juice lemons and add juice to a 2 quart pitcher. Place strawberries and 2 cups water in blender.

In a small bowl, whip cream until soft peaks form. Top with whipping cream. Add layer of strawberries over whipping cream. Chill for several hours before serving.
Blend until smooth. Add to pitcher. Add 1/2 cup sugar and 2 cups water to a small saucepan, and heat until it dissolves. Let cool and add to pitcher. Fill the rest of the 2 quart pitcher with water and stir well.
Recipe by Tiffany Barker 6 servings Ingredients: 1 Lb boneless, skinless chicken breasts 1 cup diagonally sliced celery 1 cup diagonally sliced green onion 1 cup mayonnaise 2 TBL Dijon mustard 2 TBL honey 1/2 cup toasted chopped pecans 1/2 cup craisins 2 cups baby romaine or other dark leafy greens Directions: Bake chicken breast for 20-30 minutes. While chicken cooks, mix mayonnaise,
Dijon, and honey and whisk until well blended. Slice celery and green onion. Cut chicken into large chunks and mix together with celery and onion. Mix chicken mixture with the mayonnaise mixture. Add pecans and craisins and toss well. Arrange romaine or other greens in a bowl.

Getting Around the Lowcountry It’s easy to get to beautiful Beaufort County - just a short drive from I-95 or US 17. Both roads run north-south along the east coast of the United States and connect to other interstates and major highways. Driving south on US 17, exit onto US 21 at Gardens Corner and enjoy the scenic marsh views going approximately 20 miles east into the downtown Beaufort area. Driving south on I-95, take Exit 33 at Point South and connect to US 21 for a direct route into the center of Beaufort. Driving north on I-95, take Exit 8 onto US 278 toward Hilton Head Island and directly into the Bluffton area and the southern part of Beaufort County. This route connects to SC 170, across the Broad River into the city of Beaufort in the northern part of the county.
