The Lowcountry’s Devin Taylor of The Detroit Lions #92 By Dante Juanito The Lowcountry
is celebrating one of its own and wishing him the best of luck. After a very successful collegiate career at The University of South Carolina, Beaufort’s Devin Taylor is making his transition into the Nation Football League. The Detroit Lions drafted the 6-foot7 266 pound defensive end earlier this year. Taylor joins a list of NFL players from Beaufort County that include names like Boyce Green, James Saxon, Wayne Simmons, Donnell Washington, Ron Parker and current Jacksonville Jaguars fullback Greg Jones just to name a few. Back on June 22nd friends and family put on Devin Taylor appreciation day. The event was held at the Beaufort Town Center. It featured music, food and drinks along with children activities. Everything was free. People also had the chance to get autographs and take pictures with the new NFL player. Taylor had just completed mini camp and was looking forward to getting into summer practice. He stood head and shoulders over most people that he took pictures with him but was friendly to all. He says he is appreciative of his hometown being supportive. “I thank everyone for coming out. I like coming home and I want to do more stuff like this in the future for my community.”

His hometown is proud of him as well. Beaufort Mayor Billy Keyserling addressed the crowd and told them that it is great to have young people putting Beaufort on the national map in a positive way. He also referenced American Idol winner Candice Glover. Of course Taylor has some proud parents, Maybe that’s why football players always love to say hi mom when the get some television face time. Sylvia Cuyler is Taylor’s mother. She says he always loved playing the game of football and she has watched him from pee-wee leagues up through college. She says she doesn’t plan to stop now. “We will be making some trips. It may be a little colder but we will be there.” Cuyler also helped to plan the festivities for her son. She says it was a way to give back to the community. “We just wanted to say thank-you to the community for the support.” Cuyler was a New England Patriots Fan but she says now her team is The Detroit Lions.

Catch of the day is dinner tonight at Fiddlers Seafood By Ruth Ragland Associate Editor
It’s no surprise that family-owned and operated Fiddlers Seafood Restaurant in Ridgeland offers family-friendly dining as well. Donna Rowell and her husband Billy are lifetime residents of Ridgeland. They’ve been in the restaurant business for 14 years and it’s the freshness of the seafood on their menu that sets their place apart. Billy Rowell has been a commercial fisherman for more than 30 years and it’s his catch of the day that’s served up in the restaurant. “It started out with just takeout, we had the fish market and the restaurant and together,” Donna explained. They sold that operation and have had a restaurant and separate seafood market for the last seven years. All of the Rowells’ children have helped in the business through high school and college and now their younger son Jordan runs the seafood market at 572 S. Green St. Their daughter T’Lene works for the city of Ridgeland. Their oldest son Joey is a firefighter and there’s an array of hand-pattied specialty burgers on the menu named for members of the Ridgeland department featuring their favorite fixings. The range of seafood offerings runs the gamut from homemade soups and salads to Lowcountry boil, crab legs and platters with 16 sides like fried okra, summer squash and green tomatoes to choose from. They try to buy produce locally and

even pick some fresh from their home garden. Donna recommends the grilled shrimp or tilapia for the health conscious. On Fridays and Saturdays Fiddlers serves bone-in fish for the seniors who grew up loving it that way. Shrimping season is here and the Rowells are hoping for a better year than last year for their customers who crave peel-and-eat shrimp. The easy-going atmosphere creates camaraderie among diners, Donna says. “Mostly it’s a local hang out, casual and kid friendly with no alcohol,” Donna said. “If I get real busy my regulars will get up and talk to everybody to make sure everybody’s comfortable,” she said. And if she runs out of prepped fish Rowell can clean some on the fly — you can’t get fresher than that. Fiddlers Seafood Restaurant is open year round from 11 a.m. to 9 p.m. Tuesday through Saturday at 7738 W. Main St. in Ridgeland. For more information call (843) 726-6991.

Carolina Southern Chicken Bog!

Southern chicken bog is one of the most-loved comfort dishes in the Carolinas. We produced rice and of course many chickens ran around on our properties. This hearty dish fed big families and many workers at one time. Big iron kettles with lids were used in its preparation. Many variations exist but it was rather easy to make. Just chicken, rice, seasonings, and maybe a couple other additions if you like. 5 to 6 lb. fat hen 1 large onion 1 stick of butter 2 lbs of long grain rice, (not instant or par-boiled)
maybe-- a green pepper 8 ounces of bacon salt and pepper. Put your chicken in a good pot, cover with water (8 cups plus) cook for two hours, lightly boiling and let cool. Take 4 cups of rice, put in a bowl and cover with cool water from your sink spigot. Pull your chicken and debone, discard the skin, pour about a cup from the top of the chicken stock off, rid the fat! Clean your pot, brown the bacon, onion and diced-up pepper, now add 6 cups of chicken broth, drain water from the rice, pour into pot, add seasoning (here pepper is important) and butter. Bring to a boil, then finish on low, stir (very little) about an hour; crumble bacon on top and serve.

Frogmore Stew, aka Low Country boil, is an simple and easy one-pot seafood feast. “Being a Beaufortonian, this has and will always be my favorite dish.” Frogmore Stew has become an east coast favorite at many restaurants from Florida to Virginia. Know matter how many names this dish gets...Beaufort Stew, Low Country Boil, and etc. the die hards will always call it Frogmore Stew. Ingredients: 8 quarts water 3/4 cup crab boil seasoning 2 pounds red potatoes- large potatoes cut in half
2 pounds smoked sausage links, cut into 2 inch pieces 12 ears corn - quartered 4 pounds large fresh shrimp, unpeeled 12 blue crabs cooked, cleaned and cracked down the center or leave whole(optional) Bring water and seasoning to boil in a large pot. Add potatoes and cook for 15 minutes. Add sausage and corn and cook for 10 minutes more. Stir in the shrimp and precooked crabs and cook additional 5 minutes. Serve and eat
Mediterranean Burgers
Recipe by Family Features
Servings: 6-8
Ingredients: 1 1/2 pounds ground beef or lamb 1 medium onion, diced 1 egg, lightly beaten 1/4 cup minced parsley 1/4 cup minced mint 1 tablespoon paprika 1/4 teaspoon cinnamon 1/2 teaspoon cayenne pepper 1 teaspoon salt 1 tablespoon ground cumin Juice of 1 lemon 3 tablespoon olive oil 1 large pickle sliced thinly in rounds 4 romaine lettuce leaves 1 large tomato, thinly sliced into rounds 8 hamburger buns, split and lightly toasted 1/2 cup Sabra Hummus, choose your favorite style In medium bowl, combine ground beef or lamb, spices, lemon juice and egg. With wet hands, shape into 8, 3 1/2-inch diameter, patties. In large grill pan, warm 3 tablespoons olive oil over medium heat. Grill burgers until nicely browned on each side, about 3-4 minutes. Place bottom of buns on plates. Spread layer of hummus on bun. Top with burger, sliced pickles, lettuce and sliced tomato. Spread more hummus on top of bun. Press on bun tops and enjoy.

Hummus Garlic Bread Servings: 4 1 loaf French bread, about 12-14 inches long 1 container Sabra Roasted Garlic Hummus 1 - 2 tablespoons chopped garlic 1/2 cup grated parmesan cheese Preheat broiler. Slice French bread in half lengthwise. Set aside. Mix Sabra Roasted Garlic Hummus and garlic together in small mixing bowl. Spread hummus mixture on French bread halves. Place bread on baking sheet. Sprinkle with parmesan cheese. Broil bread on wire baking rack located in the middle of the oven, not too close to the broiler. Broil 2-5 minutes or until edges are crispy and cheese is browning. Watch bread closely as broilers vary greatly in their timing. Cut each half of bread into quarters. Serve warm.

Ingredients: ¼ pound bacon, snipped into ½-inch pieces (use a scissor) 1 cup onion, diced ¾ cup celery, diced ¼ cup flour 6 cups chicken stock ½ cup white wine 1 teaspoon salt or to taste ½ teaspoon white pepper 1 teaspoon thyme leaves ¾ pound small red potatoes, scrubbed and quartered 4 cups fresh corn kernels (about 8 medium ears)
2 cups milk 1 cup cream 3 cups coarsely shredded cooked chicken Directions: In a large saucepot, sauté bacon over medium heat, until crisp. Remove bacon from pan, drain and reserve on paper towels. Add the onion and celery to the drippings, cover and cook until vegetables are just tender; do not allow to brown. Stir in flour and cook until flour absorbs all of the bacon fat. Add the chicken broth and wine; bring to a boil. Lower heat, season with salt and white pepper; add thyme. Add the potatoes and simmer for 15 minutes. Add the corn, milk, cream and chicken and simmer for 10 minutes more. Ladle soup into bowls and garnish with reserved bacon. Makes 8 servings.

1/3 cup(s) extra-virgin olive oil 3 tablespoon(s) fresh lemon juice 2 teaspoon(s) kosher salt 1 teaspoon(s) Tabasco 1/2 teaspoon(s) freshly ground pepper 1 8-pound seedless watermelon, scooped into balls with a melon baller or cut into 1 1/2-inch chunks 10 cups chilled 1/2 pound(s) feta cheese, crumbled 2 cups 1 1/4 cup(s) pitted kalamata olives, coarsely chopped optional 1 small sweet onion, cut into 1/2-inch dice 1 cup(s) coarsely chopped mint leaves
Minty Lemon Refresher Recipe by Rachel Russell
Ingredients:
8 cups of water 3 lemons, thinly sliced or 3 squeeze lemons 1 cup of fresh mint
Directions In a large bowl, whisk the oil, lemon juice, salt, Tabasco and pepper. Add the watermelon, feta, olives and onion and toss gently. Garnish with the mint and serve lemons. Combine all ingredients into your container and place in fridge. Let soak for at least 1 hour. Let mixture soak overnight in your fridge to enhance the flavor.

Summer and watermelon are inseparable. Watermelons are found almost everywhere in the world. Although we can find watermelons in our markets throughout the year, the season for watermelon is the summer when they are sweet and of the best quality. No other fruit can we find so crunchy and thirst quenching like watermelon.
The health benefits of watermelon are really great. No matter how it is sliced, it is packed with some of the most important antioxidants found in nature.

. It is an excellent source of vitamin C and a very good source of vitamin A, particularly through its concentration of beta-carotene.

The beautiful red watermelon is also a source of the potent carotene antioxidant which is called lycopene. These antioxidants travel throughout the body neutralizing free radicals. Free radicals are substances in the body that can cause much damage to us. They are able to oxidize cholesterol, making it stick to blood vessel walls and thicken them which can lead to hearty attack or stroke. The lycopene which gives fruits the attractive red color that we find in watermelon can help reduce the risks of prostate cancer.
4. It is a surprising fact that watermelon is the only fruit that contains higher concentrations of lycopene than any other fresh fruit or vegetable.
