Welcome to the latest issue of Essential Macau and a warm welcome to the teritory. December and January are very special months here – so, in plenty of time for the celebrations, the festive season kicks off with the 2nd International Film Festival and Awards Macao. With an array of selected films from around the world - screened in the presence of famous directors and celebrities - film buffs can immerse themselves in their favourite movies once again.

Under the influence of Western culture, Christmas is celebrated in Macau with gusto. The Historic Centre, in particular, adorns itself for the occasion with twinkling lights and festive decorations.

The Macau Light Festival features 3D mapping that turns many of our landmarks into stunning light art installations. In this season, there’s nothing better than to treat yourself to some festive fare with great deals throughout the city on dining in selected Christmas buffets around town. In preparation for that special dinner, don’t forget to create that perfect personal look with the cosmetic products from our holiday special edition.

In this issue we also prepare to bid farewell to the outgoing year and welcome 2018, with a new menu at famous Cantonese restaurant Fok Lam Moon, premium sake at Wynn Palace, and Michelin starred Italian restaurant Casa Don Alfonso at Grand Lisboa.

The new menu, like the décor, is filled with elegant surprises. Diners can discover traditional Cantonese flavours rarely experienced elsewhere like Deep-fried Sesame Ball. The dough of the sesame ball is so thin it is transluscent.

Sumptuously rich in flavour, yet light in texture, it goes without saying that only an excellent chef ’s techniques and craftsmanship could accompany this creation.

Moreover, four newly introduced dim sum dishes accompany an array of imaginative Cantonese main courses. The talented culinary team here upgrades the classic dim sum Shrimp Dumpling - by using fresh Boston Lobster. The delicious and crispy lobster perfectly matches the chewy dumpling wrapping. Another highlight is the Whole Abalone Puff. The puff is baked to perfection with precise control of temperature and finesse. Topped with an abalone prepared by traditional cooking methods and gold foil, this puff will surely satisfy your taste buds as well as your eyes. For healthy eaters, the Steamed Assorted Mushroom and Black Truffle Buns and Steamed Iberico Pork with Morel Dumplings are the best healthy choices which are both delicate and nutritious.

Fook Lam Moon chefs are very inventive, and are happy to incorporate non-native ingredients in their cooking. The new à la carte menu also features a plethora of dishes cooked with special ingredients that will surprise diners’ taste buds. The must-try dishes include the Sautéed Mantis Shrimp with Fish Roe and Kale which uses precious roes with a special sauce that brings out the umami nature of shrimps as well as the Braised Prime Beef Rib with Hawaii Papaya which perfectly mixes sweet and healthy papaya with tender beef to create a one-of-a-kind tasting experience. 쐽 澳门精华 | 2017年 12月- 2018年 1月 | 11

THE PRIDE OF SOUTHERN ITALIAN CUISINE “See the sea of Surriento, the buried treasure it has! Those who travelled all over the world haven’t seen anything like it.” The old song “Torna a Surriento” (Come back to Sorrento in English) describes the stunning environment of the islands in southern Italy.

There has the radiant and enchanting sunshine, endless shoreline and lush plants, it is the most stunning stretch of coastline anywhere in the world. The unique climate and geographical environment give birth to the abundant crops as well as the one-of-kind delicious cuisine. Inspired by the amazing cuisine of the Sorrento peninsula and the Amalfi Coast in southern Italy, Ristorante Don Alfonso 1890 was born. This world famous restaurant is nestled in a 19th century Neapoletan building, it is filled with bright colours lilac, yellow, orange and pink - which look lovely with the natural, Mediterranean light, transporting guests to the extraordinary atmosphere of Southern Italy. Since 1986, the kitchen has used produce from its own dedicated farm called Le Peracciole, just a few miles away along the coast facing the island of Capri. All the dishes here are based on three principles: Mediterranean character, first class quality of the raw ingredients and modern food

styling. Preserving thousands of years of old food tradition from the Sorrento Peninsula and Amalfi Coast, Casa Don Alfonso provides an authentic Italian experience.

The 2nd edition of IFFAM invited Mike Goodridge as Artistic Director. Goodridge brought the unique and invaluable experience of being a jurist at over 25 international film festivals as well as having been former CEO of Protagonist Pictures, engaging in film finance, production and distribution. Seeking to further enhance IFFAM’s international stature, famous Hollywood actor Jeremy Renner widely known as ‘Hawkeye’ - plus popular Hong Kong actress and singer Miriam Yeung, famous actor Donnie Yen and Korean super

idol D.O were invited to represent the Festival as its talent ambassadors.

The Festival kicked off with Paddington 2, a British family-friendly movie directed by Paul King. During the seven-day Festival, IFFAM featured various highlights including Competition, Gala, Flying Daggers, Best of Fest Panorama and Crossfire, featuring genre films selected by directors. The competition focused on first and second-time filmmakers who were likely to attend and likely to remember Macau for their future films. Almost 50 fantastic works from various countries and regions were shown during the Festival, including Macao Special Presentation ‘Love is Cold’.

IFFAM Industry Hub and Master Classes were also conducted during the event. In order to provide an opportunity for all filmmakers and other practitioners to explore new avenues through networking, exchange and showcasing of their work. The signature event Master Classes invited renowned directors John Woo and Pang Ho-Cheung to share their amazing experiences, insights and advice with all participating movie lovers.

In celebration of Macau recently being designated a UNESCO Creative City of Gastronomy, the 2nd IFFAM also featured gastronomic elements, The Last Recipe and The Cake Maker were shown during the festival. 쐽

Born in Hong Kong and raised in Macau before moving to London, her upbringing in different places has helped enrich her skills in design and gemmology.

“I believe in jewellery that has stories and meaning behind it. I like to incorporate different chapters of my life into my jewellery. A lot of my collection is inspired by growing up in Asia”, she says.

Apart from our collections, when we do bespoke we also do the story telling as well.” Ho said.

Founding her own jewellery brand - Sarah Ho London in 2006 - rather than in her Asian hometown, she chose a place to start her business where fewer people would know about her family. “I wanted to prove to myself that I could do it on my own. I think my family will feel prouder if I come back with something that has already been established rather than set up here.” Ho explained.

Maybe in other people’s eyes the members of well known families surely have fewer difficulties operating their own business but it is not necessarily the case. “My family is very fair. They don’t help me in investment, they help me in advice,” she says. “I’m glad they do it this way.

Otherwise you wouldn’t learn. I’ve made my mistakes; I learned the hard way and hopefully slowly and slowly I can build a better brand...

It’s always difficult when you come from a well known family. Because everyone thinks it’s easy.

We need to work harder to let people know we are serious.”

Asprey had the same feeling, he says.

Where there’s a will, of course, there’s a way.

Both Sarah Ho London and William & Son have won a good reputation throughout the world and created a portfolio of private clients for bespoke commissions.

COCKTAIL RING COLLECTION This is the second collaboration between William & Son and Sarah Ho, and is the first time William & Son have come to Macau.

“We did collaborate with Sarah four, five years ago. We met her at a jewellery fair in Italy and got on very well with her. Every year, we have new young designers showcase their works in our store. Sarah did a very nice collaboration with us. Now we’re taking another step further with a second collaboration with the pendants and earrings.” Asprey explained.

The collection - comprising four cocktail rings in amethyst, aquamarine, morganite, citrine and rose quartz - was launched in 2014,

in addition to the new drop earrings and pendants in white or rose gold with amethyst, aquamarine, rose quartz or morganite.

“It’s been such a pleasure to work with the team at William & Son. I loved the idea of using the patterns from the gun engraving which is part of their heritage and not usually related to their jewellery so the pieces have a story to tell and make a statement.” Ho said.

“I found they have an incredible workshop in the London Store, where they hand engrave the short gun for hunting. So, I started to think about how men can have the gun and the women can have the jewellery. This is the inspiration”, she laughed.

“If a husband and a wife come in and the husband is very interested in guns, the wife will get a little bit bored. So, we take care of her with jewellery; if the husband buys the gun she will get the consolation prize. This works very well”, William added.

“Apart from the heritage of William & Son, this collection also has Sarah Ho’s signature as well, which is prominent on the jewellery like the earring they tuck behind the ear when you wear them. Most of my earrings are designed with that signature”, said Ho. The devil, as ever, is in the detail. Both these two brands love hiding some tiny details in secret places that are not easy to find; for example, the ‘lace’ pattern in all of Sarah Ho’s designs and the detachable setting of William & Son’s jewellery. Without exception, this collection also hides some secret details. When connoisseurs look through the stone, they can see the motif of William & Son on the back of the ring.

The gem stones, which Sarah believes have different healing powers, are chosen after careful consideration: “Clients can choose the rose quartz for love, amethyst for the balance of mind.” This collection also features William & Son’s aquamarines, one of the most popular gemstones of the brand. “My favourite piece of this collection is also the aquamarine.”

This won’t be the end of the duo’s collaboration. “We want people to come back. We sell one thing, it is not the end. We like to build a relationship with them. You have to know what your clients like. Not only the person; we want the whole family to get involved. We need to go forward and come up with new ideas. reated in 1950, the Panerai Luminor marked a chapter in the history of Officine Panerai. With notable water-resistance and an Angelus automatic movement with an eight-day power reserve (which reduced the watch’s charging time considerably and the likelihood of water getting in through the crown), the Luminor quickly became the symbol of excellence of the Italian manufacturer.

The legendary model was reinvented in 2016 but kept the essence of the original. With a redesigned case, the slimmest and most versatile ever to be created by the brand, the Luminor Due became “the second chapter in

the history of Panerai”. Combining exclusive design and sophisticated technology, this collection personified a sporty spirit, yet still able to adapt to every occasion.

This year, the watchmaker has added four versions to the Luminor Due line. New materials, dimensions, colours and technical solutions are the features that first jump out in these latest models.

The Luminor Due 3 Days Titanio, with a hand-wound P.1000 mechanical movement, made entirely in-house and visible through the sapphire crystal back, has a power reserve of three days. It features a sportier character, with a thickness of just 10.5mm and a 42mm case in brushed titanium with a polished bezel.

The dial is blue, with a sandwich structure and a satiné soleil finish.

As for the Luminor Due 3 Days Oro Rosso, with the same measurements as the titanium version, it displays a polished red gold case and an ivory dial with contrasting blue figures. The calibre is a sophisticated skeletonised version called P.1000/10. The large brush-finished bridge covers more than half the surface of the calibre and was developed to ensure that most of the mechanism could be seen. Worth mentioning is that the P.1000 movement also includes a device that stops the balance wheel and zeroes the seconds hand when setting the time, to ensure the perfect synchronisation of the watch with a reference time signal. Both models have blue crocodile strap (lighter in the

gold model) and are water resistant up to a depth of 30 metres.

There are also two new versions in the Luminor Due 3 Days Automatic line: the first in titanium, with a blue dial and a crocodile strap in the same colour, and the second in AISI 316L stainless steel, with a dark grey dial and brown crocodile strap. Featuring a case with a diameter of 45mm and a thickness of 10.7mm, they contain Panerai’s most sophisticated automatic movement, the calibre P.4000, with a three-day power reserve and an offcentre rotor that rotates in both directions. The steel model holds the skeletonised version, the P.4000/10, with a 22-carat gold oscillating weight decorated with clous de Paris.

The sandwich dial boasts a satiné soleil finish and a minimalist design, bar hour markers and a small seconds dial at 9 o’clock. Like the other hand-wound versions, these are also water resistant up to 30 metres. 쐽

his year marks the 150th anniversary of Macau jewellery brand O’Che, founded in 1867 in the reign of Qing Emperor Tongzhi.

The name ‘O'Che 1867’ was originally ‘Ourivesaria Che Lee Yuen’ whilst ‘Ourivesaria’ is Portuguese for goldsmith and ‘Che’ - or ‘Tse’ in Cantonese - is the Romanised form of the family's Chinese surname. During the war,

Macau was an important base for gold importation. Every day, much gold from Africa and Europe was shipped here for metallurgy purposes, with O’Che one of the participating goldsmiths.

Craftsmanship and quality are the cornerstone on which the brand’s reputation has been built.

Up to now O’Che is arguably the most dynamic brand in Macau.

“My great-grandfather was an apprentice in a traditional goldsmiths; 150 years ago he set up the first store in Macau to sell and fix gold ornaments for his neighbours,” says Stephen Tse, the Executive Director and fourth generation of O’Che.

Sincerity and continuous innovation is the philosophy of O’Che. During these 150 years, the brand has upheld this faith and concentrates its attention in providing the best products to clients. O’Che still stands out from the fierce competition.

“Macau is a special place where many casinos are assembled,” says Tse. “Therefore, pawnshops and jewellery shops can be seen everywhere. To overcome the strong competition in the Macau jewellery industry, we have to conform to the trend of the times but still need to follow our philosophy at the same time.”

After studying abroad, Tse returned to Macau and started to take charge of the family business.

He brings many new ideas and changes to the brand, like establishing sub-brand Ring Master.

“Considering the requirements of different clients, our stores can be classified in three different styles” Tse said. “To serve our old loyal local clients; we have two traditional goldsmiths on the Macau Peninsula. For younger local clients we have one sub-brand selling fashionable jewellery.

Countless tourists come from Mainland China in Macau. To serve these clients, O’Che has set up four stores in shopping malls and casinos.”

Today, O’Che has seven stores in Macau. Not only traditional gold ornaments and jewellery from Italy can be found in them but original designed jewellery collections. O’Che’s designs reflect the cultural and aesthetic values of its origins – Macau, where East meet West, inspired by the beauty of Oriental and Roman art. The Abacus Collection is one of the most iconic creations of the brands. Abacus is a very traditional calculation implement widely used in Macau. The exquisite little Abacus is available in rose god, white gold, 18K gold and decorated with diamonds.

Retaining business is harder than winning it, thus O’Che understands the importance of keeping pace with the times. With e-commerce booming, O’Che certainty has its response strategies.

“O’Che will open our online store very soon,” says Tse. “At the same time we also have plans to collaborate with famous Chinese e-commerce company Jingdong.”

hree-hundred and forty-two carats of extraordinary diamond, of absolute purity and the perfect colour: “This is a truly exceptional stone, but we did not wish to treat it as a mere trophy, but instead to prepare it for a destiny worthy of its stature,” explains Caroline Scheufele, co-president of Chopard, about the rare stone discovered around two years ago in the Karowe mine in Botswana – in the same place as the second-biggest diamond in the world, the Lesedi La Rona, with 1109 carats. Christened The Queen of Kalahari (a symbolic reference to the Kalahari desert, where the Karowe mine is located) and comprising 23 diamonds – five of which weigh more than 20 carats –, this stone inspired the most precious fine jewellery collection from the Swiss maison. “Faced with this rough diamond, we had a number of potential options. I wanted to explore every possibility and to represent all diamond cuts,” says Caroline Scheufele. And so, six pieces that reflect the creative wealth and savoir-faire of the Chopard workshops were born.

The highlight of this collection is the Garden of Kalahari necklace, with several variations: a simple choker worn by itself; adorned with a flower; or adorned with a flower and another three pendants, the largest diamonds of the collection – a 50-carat round brilliant, a 26-carat heart shape, and a 25-carat pear. Two of these pendants (the heart-shaped and the pear-shaped diamonds) can also be worn with the earrings that are also part of this collection.

The Garden of Kalahari also features a bracelet comprising two emerald-cut diamonds, two rings (one of which has a 20-carat cushioncut diamond) and a watch. 쐽

t is a story almost as old as Formula One itself: manufacturer enters Formula One, creates a super sports road car and sells the world the idea that it is an F1 car for the road.

But really, it isn’t. Yes, some technology may filter through, but a road car and an F1 car could never be alike.

Well, until now. The new AMG Project One is the closest anyone has ever got to building an F1 for the road. It is a celebration of speed and performance, but also a self-tribute to a company that turns 50 in 2017 but that has never felt so young or so alive.

present it is. AMG Motorenbau und Entwicklungsgesellschaft mbH (AMG Engine Production and Development, Ltd.) was the brainchild of former Mercedes-Benz engineers Hans Aufrecht and Erhard Melcher. In fact, AMG stands for Aufrecht, Melcher and Großaspach, the city where Hans Aufrecht was born.

Established in Burgstall an der Murr, it soon moved its facilities to Affalterbach, where it still exists today. Since the beginning, AMG tweaked Mercedes-Benz models in various ways, with one purpose: to make them faster.

Obviously, early AMGs were a very left-field choice, and Mercedes themselves had no part in the development process. From custom-made engines, AMG moved on to custom-made cars and created a whole range of upgrades and accessories for numerous models, namely the famous W123 and W124 E-Class and the flagship S and SL variants.

In the early ‘90s, with AMG products gaining widespread recognition and the threepointed star wanting to take the fight to BMW M cars, a deal was signed to sell AMG-powered cars in official Mercedes-Benz showrooms.

Success was instant, and less than a decade later, in 1999, Mercedes bought a 51% stake in

AMG, taking control of the company and paving the way for a full integration of product lines.

The rest, as they say, is history. Some of the greatest cars ever made have AMG badges on them, and the brand went one step further in 2012 when Mercedes named their F1 team Mercedes AMG Petronas.

Since the introduction of the hybrid era in Formula One, for the 2014 year, Mercedes AMG have won every driver and constructor championship. The stats are impressive: out of the 78 races held since 2014, Mercedes AMG have won 62. Lewis Hamilton is now a fourtime world champion – three titles with AMG –, and Nico Rosberg came out on top in 2016.

If Mercedes wins in 2018, it will match Ferrari’s all-time record of five consecutive world championships. It sure seems to be going that way and maybe even beyond.

That means AMG is on a high at the moment: brand awareness skyrocketing, championships coming in and cars selling like hot cakes (100,000 cars in 2016 and 2017 has been even better). So what could they do to prove they really are on top at the moment? Well, not much else, except maybe the fastest road car the world has ever seen. 0-100km/h? No one knows yet. 0-200km/h? That takes less than six seconds. Less than six seconds after the driver presses the accelerator, Project One will be travelling at 56 metres per second.

How? Simple, really: it uses the F1 car’s engine. Not something like it, but the actual

However, the Project One is more about its drive system than anything else. It was developed by the same AMG High Performance Powertrains engineers that created Lewis Hamilton’s car, at the F1’s factory located in Brixworth, England.

It is, put simply, the most advanced propulsion system ever seen in a road car, comprising one hybrid, turbocharged combustion engine and a total of four electric motors. One electric motor has been integrated into the turbocharger, another has been installed directly on

the combustion engine with a link to the crankcase and the two remaining motors drive the front wheels. The complexity is unlike anything ever seen before in a car anyone can drive to the supermarket.

Because Formula 1 rules dictate a displacement of just 1.6 litres, the engine needs a lot of other ways to find power. Therefore, it was fitted with direct injection and electrically assisted single turbocharging. To achieve high engine speeds, the mechanical valve springs have been replaced by pneumatic valve springs and it can easily reach speeds of 11,000 rpm. The 18,000 rpm the F1 car makes would be impossible to

The electric motors that drive the front axle are absolutely state-of-the-art units, providing rotor revolutions of up to 50,000 rpm, 30,000 rpm more than any other motor on the market.

The high-revving nature of the engine is additionally boosted by a high-tech turbocharger. To extract maximum performance, the exhaust gas and compressor turbines are separated from one another and connected by a shaft that features an electric motor with approximately 90 kW which, depending on the operating status, elec-

It is possible to drive the car in pure electric mode, but the V6 engine is automatically called upon service if a certain amount of acceleration is demanded. As for numbers, they are mindblowing: with the Race Start function engaged, which is what Mercedes calls its launch control system, acceleration from zero to 200 km/h takes under six seconds; 0-100km/h will probably be around 2.5 seconds. The choice of transmission was not an easy one, but AMG decided to develop an entirely new unit especially for this car. An 8-speed manual transmission is activated hydraulically and can be operated in automated mode or manually using the shift paddles. The

promise is of lightning-fast shifts and a tremendous feel for mechanical involvement. Compound ceramic brakes ensure huge stopping power and work as energy recovery elements as well, recharging the battery every time the driver presses the brake pedal.

The racing car feel is also present inside, with racing seats and exotic materials laid all over the cabin. A driving position that closely mirrors the F1 car is sure to give drivers a sense of occasion like in no other car. The MercedesAMG Project One will be produced in a limited run of 275 cars at a price of €2.275 million each, before local taxes. Mercedes have had more than 1000 clients interested in the car.

collaboration with Mandarin Orient is also very special. I gave a speech about creativity. The New York Times contacted me and asked: ‘Would you like to give a talk about your art?’ I did it, and Mandarin Oriental was invited to that speech; their GM was there. They found my art perfectly fit their new lobby lounge.”

This young artist, from Sabah in Malaysia, is very enthusiastic about the environment. “This piece I title ‘Bloom’,” said Red in front of her artwork. “Mandarin Oriental gave me a rough direction; they wanted to do something with the lotus, which is representative of Macau. I really like the meaning of the lotus in Chinese, how they bloom from a murky condition.”

Like the past works of Red, this artwork is made of special materials and presented in a very unique way. “There are around 10,000 flowers. The hand-pipe is kind of like how you pipe a cake - instead I use paint rather than butter cream!”

At that moment, she took out her piping tools and paints, demonstrating how to pipe the flowers. “It took me and two assistants around a month to do this. My mum also helped me.

Actually, the inspiration came about three, four months ago when my mum took a cake decoration course. I saw her doing the flowers and I thought it was a way to preserve a flower: I done this before using real flowers. They just died after three days; I hope I can preserve this piece.”

She had already piped a rose and a dahlia.

“In the beginning, I sketched the whole pitcher.

After piping all the flowers, I started to stick them on the major part. Then, I started to put other flowers like apple flowers to make the background. ” Over the past few years, Red has created a lot of temporary art pieces using many novel materials from daily life such as teabags, cups, sunflower seeds and balls. “After studying in Australia, I went to Shanghai. What really caught [my attention] was how cheap we can get things on Alibaba and Taobao. I started to collect all this stuff that I could buy at a very low price. I can

buy 20,000 cups in blue and get them delivered to my house in two hours at a ridiculously low price,” she laughed.

The work that made Red famous was a piece featuring a basketball to draw the portrait of famous Chinese NBA player Yaoming, saying: “In 2012, I started to put my creative process on the video platform for friends and family. I didn’t expect to receive such interest from viewers.”

“I always get inspiration in my life. At that time, Yao was very famous and I could see him on the news. So I did this piece,” following which Red did a portrait of singer Jay Chou and film Director Zhang Yimou utilising coffee and socks. These enabled her to find the favor of legendary actor Jackie Chan, who asked Red to create a unique art piece for his company. “I felt very honored to have this chance to create a piece for Jackie Chan,” she said. “I spent two months staying there to finish it. Every day, he came to see me and offered comments. It was quite interesting.”

Having used so many materials to create these art pieces, nothing seems strange to her anymore. Red also shared an interesting experience about her past work. “Teabags are a little bit different to me. I used 2,000 teabags to dip into water to get the colors out. I shipped this piece to Switzerland. It took some time to get there because the Customs had to open the boxes to check them bag by bag to make sure they were all tea. It was quite funny,” she laughed.

Her passion and her energetic words told us she would definitely wow the world with her unexpected creativity. “My next goal will be to use garbage. I come from Sabah, a holiday destination. There is a famous island and it’s a little bit polluted: I’m thinking of collecting the trash there to make a piece. I may make it like a documentary.” 쐽

After avoiding bankruptcy following a drop in demand in the last recession, Vista Alegre has managed to adapt to the market with a new direction and has taken its rightful place once more as one of the biggest international leaders in porcelain and crystal.

“Besides the fact that the sector isn’t easy, due to the high production costs, Vista Alegre had several changes in shareholders, mistakes were made and its various layers ended up creating a serious financial problem,” says company director Nuno Barra, in conversation with Essential. While many suggested that the only way to save the company was to relocate the

adds. “Unlike various international brands, which no one knows where they are produced and present products of dubious quality, Vista Alegre has won over the market because of its identity. used by various European royal houses, the White House and the best international hotels –, in the last few years, Vista Alegre has accomplished the difficult balance between classic and contemporary. “In 2010, the company was the mirror of the last 30 years. It withdrew into itself and focused completely on a classic style, and the younger segments didn’t relate to the brand. You couldn’t touch the products in the stores, everything was inside glass cases; there was a total mismatch. We managed to demystify Vista Alegre,” notes Nuno Barra.

This approximation to the younger markets has been a formula for success and, actually, a return to the brand’s roots. “If we visit the Vista Alegre Museum (also in Ílhavo), we can see that

it was always very bold; it kept up with the artistic movements, without fear or worry of challenging or raising awareness. A good example is the cubist animals,” says the director.

Besides the porcelain, Vista Alegre has also developed notable work with crystal in its Alcobaça factory. Although Atlantis as a brand was extinct and now bears the Vista Alegre name, the know-how of the artisans and technicians has been harnessed to develop surprising pieces in this material, having garnered several international design prizes in the last few years.

Through collaborations with international designers such as Jaime Hayon and Marcel Wanders, Vista Alegre has been able to bring new energy to the brand. They still work with

through a service with cobalt blue decorations. All of this, as always, with the monitoring of an internal design team and with a clinical eye. “The first collection that Wanders presented was all vetoed; it didn’t relate to us at all,” reveals Nuno Barra.

Despite these impressive collaborations, among which is a collection from the Christian Lacroix Maison, innovation within the brand has come from another initiative created after the group was acquired in 2009: the ID Pool. Consisting of artistic residences in the factory, lasting between three and six months, of young designers from various places around the world, ID Pool has been an important factor in bringing a new dynamic to

the factory. By combining the curiosity and imagination of the designers with the savoir-faire of the artisans, this programme has taken production capacities to the limit, resulting in some of Vista Alegre’s most successful products, such as the most commercially successful service – Transatlântica – designed by the Brazilian Brunno Jahara, or the pieces from Lebanese duo david/nicolas, who picked up prizes such as the Red Dot, Wallpaper and German Design Award.

“When designers arrive, we give them a briefing of all the products we need in the collection.

They walk around the factory, speak with the technicians, ask about the reasons behind things and pose challenges. If the developed product has quality, we produce it and give it exposure.

All areas of the company should have this type of initiatives; it’s the only way to stay connected to modern-day needs, with what is going on. The entire south-central part of the island is a magnet for shiny skyscrapers, contemporary dining, shopping on a dizzying scale, and all the comforts and pleasures of 21st-century living. WHAT TO DO, WHERE TO STAY One such modern marvel that almost defies description is the impressive Gardens by the Bay, a lush 101-hectare park built on reclaimed land and opened in 2012. Two sizeable conser-

vatories – Flower Dome and Cloud Forest – are complemented by a sprawling open-air park dotted with various gardens and dominated by the Supertree Grove, a collection of 18 tree-like structures that are both visually arresting and environmentally useful. The supertrees range in height from 25 to 50 metres, comprising a concrete core and steel frame, planting panels, and a wide-arcing ‘canopy’ topping the structure.

The supertrees overlook the entire park and, along with the vast domed conservatories, are its most iconic elements.

Strolling the magnificently landscaped gardens is free of charge (though entrance to the conservatories is not), and Gardens by the Bay is accessed by the nearby Bayfront MRT station.

ake, or Japanese rice wine, has been popular in Japan for over two thousand years. Even with its long history in the Land of the Rising Sun, not many people are familiar with this wine outside Japan. Michelin-starred Japanese fine dining restaurant Mizumi at Wynn Palace introduces high-end sake maestros Matsunotsukasa to Macau.

Matusunotskasa literally means the great pine tree. Founded in 1860 in a small city, Shiga in the centre of Japan, the city is famous for Lake Biwa, the country’s largest lake. For over a hundred years, Matusunotskasa still insists in engaging with a purity of spirit, respecting nature and deepening its understanding of Japanese culture.

Different from the rice wine of other countries, brewing sake requires more intricate steps for its smoother texture and magnificent flavour.

The source of water, rice and yeast have a bearing on the quality of sake, simple things that make Matsunotsukasa outstanding. Brewing at

Matsunotsukasa starts with carefully selected local ingredients, including sake-specific rice grown nearby and water drawn from 120 metres underground. The brewing water they use comes from the underflow of the Echigawa River, which rises in the Suzuka Mountain range. The water there - hard and full of minerals - greatly helps the fermentation of yeast.

Rice is especially critical for brewing quality sake. In 1988, Matunotsukasa started to use rice grown locally in the village of Ryuou or from the old Tojo area of Hyogo Prefecture. Strongly respecting nature, the brand has dared to adopt organic rice-fielding. This is very rare in Japan because typhoons destroy many fields every year.

“There is a beautiful lake near our factory.

This prefecture is very strict. I started to think of protecting the beautiful nature and adopt organic rice-fielding,” says Tadayuki Masuse, the Managing Director of Matunotsukasa. Apart from typhoons, climate warming is threatening organic rice-fielding.

“I travelled to France and found a very interesting way to fight climate warming,” he says. “It is a little bit strange. We use a very thin

organic paper to cover all the rice fields. This way was established thirty years ago. This thin paper can protect the rice from the sunshine.

This paper can be dissolved into water.”

Matunotsukasa also considers the sustainability of his fields, starting a new style of cultivation leaving fields untilled and flooded throughout Winter, avoiding agricultural chemicals and synthetic fertilisers. This cultivation approach keeps the fields flooded once the rice is harvested, which has been found to encourage the growth of micro-organisms and restore the original natural ecosystem through the action of the food chain: “Here, you will find frogs and even turtles in the organic fields,” says Master of Wine Kennichi Ohashi.

After harvesting, all the rice is sent for painstaking milling by brewery staff. The flavour of sake is influenced by koji, cooked rice inoculated with the fermentation culture aspergillus oryzae. Matunotsukasa produces the koji-inoculated rice by the box method and brews it with the brand’s unique yeast cultures using sokujo or kimoto starters as appropriate to the style of sake.

To ensure the success of the complete fermentation, staff brew the main ferment in small batches at a very low temperature and store bottled sake on site at 5ºC or lower Now, at Wynn Palace, guests can enjoy all the signature products of Matsunotsukasa; namely, Matsunotsukasa Daijinjo Junmai Kuro, Matsunotsukasa Junmai Ginjo Raku, Matsunotsukasa Kimoto Junmai, Matsunotsukasa Junmai Ginjo Azolla and Matsunotsukasa Junmai Ginjo Ryuou Yamadanishiki. Matsunotsukasa Junmai Ginjo Ryuou Yamadanishiki is considered the brand’s signature product. Made with the finest Yamadanishiki grown each year by contract farmers in Ryuou, its fresh aroma accompanies a palate that melds juicy fruit flavours, rounded umami and transparency comparable to a fine white wine. “The best temperature to drink Junmai Ginjo Ryuou Yamadanishiki is 10-15ºC.” says Mr. Masuse. To pair with this premium sake, mild food is advised, adding: “Matsunotsukasa sake is very delicate. It’s perfect to pair with high quality fish filet which is only the texture. et’s forget for a moment the prestige built over the course of millennia, the same prestige that makes the cheapest wine from the Champagne denomination cost as much as the most expensive counterpart from other denominations. The same prestige, even, that makes the most expensive Champagne cost as much as some of the rarest and most sought-after wines in the world, in the region of several thousand euros/dollars.

As of some years ago, the conditions to make excellent sparkling wines were favoured by new technological discoveries, in particular the use of encapsulated yeast for a second fermentation in the bottle. This new process reduces the labour and production times enormously, by eliminating the intermediate stages.

But let us start from the beginning. Fermentation is the process that turns the sugar held in the grape juice into alcohol. During this process, carbon dioxide is released. The sparkling wine has a large amount of carbon dioxide imprisoned, a gas that, afterwards, is released in gracious little bubbles that give the wine more volume, more roughness, more pleasure. Several methods can be used to make a sparkling wine.

Carbonic gas can be injected directly into a tranquil wine, but these wines are harsh and vulgar.

tranquil wine, and imprison the resulting gas in a closed receptacle to promote better integration. If the receptacle is a huge closed steel vat, the method is called Charmat, and some of the world’s great sparkling wines are made this way.

Perhaps the best known are the ones from Asti, an Italian DOCG in the Piedmont region. Snobbier oenophiles will turn up their noses at an Asti because there are many cheap, mediocre products, but there are also some extraordinary Asti wines that are worth discovering, with their creamy mousse, frivolous and exciting mouth, and abundant and provocative foam, with an excellent balance between a light sweetness and embedded acidity.

But the best method to imprison the gas is to do a second fermentation in the bottle, where the cork is reinforced so that it doesn’t give way, and replaced with the traditional cork stopper covered with a wire frame before it goes on to the market. This is the method used in Champagne, and was for many years called méthode champenois, until the French capitalised on their influence in the wine world and demanded – quite rightly – that champenois was only used in Champagne. The method was thus renamed classic method or traditional method.

The classic method sparkling wines listed below show that it is possible to achieve excellence in many terroirs around the world. Each

one has its own specificity, bottling light, sun, earth, brilliance, dedication and convictions.

This is a journey that doesn’t include Champagne, but one that could make us go back every so often.

Gramona Celler Battle Gran Reserva Brut Gramona originates from Celler Battle, founded in 1881 at the height of the phylloxera crisis, which almost destroyed the European vines. Today, the Gramonas manage 124 hectares of vineyards in the Alt Penedès region, half their own and the other half rented out forever, The planted varieties are Xarel·lo, Macabeo, Chardonnay and Pinot Noir, and the agriculture is organic and biodynamic. This Celler Battle Gran Reserva is made with Xarel·lo and Macabeo, and is aged on its fine lees, with cork stopper (instead of the usual bottle cap) for 120 months. It isn’t a Brut Nature, but with its 7g of sugar per litre it falls into the Extra Brut style, with precision, complexity and depth.

FRANCE, CRÉMANT D’ALSACE Valentin Zusslin Brut Zéro Clos Liebenberg The Domaine Valentin Zusslin was founded in 1691 and has had 13 generations of Zusslins taking care of the vineyards. Located in Orschwihr, south of Colmar, it has vines on the slopes of Bollenberg, Clos Liebenberg and Grand Cru Pfingstberg. The viticulture has been biodynamic since 1997. The Clos Liebenberg is a blend of Riesling (10%) and Auxerrois (90%) that ages for 40 months in the bottle for a mineral, pure and saline profile.

FRANCE, CRÉMANT DU JURA Domaine Andre et Mireille Tissot BBF Extra Brut Blanc de Blancs Bénedicte and Stéphane Tissot make this crémant from vineyards grown following biodynamic principles. The grapes are Chardonnay and Pinot Noir, complemented by a bit of Poulsard and Trousseau. BBF has just the two first varieties, and spent five years on fine lees to develop its smoky character and creamy texture.

Fermented in used barrels and then made into sparkling and kept in a cold cellar, it is a wine full of character with its lively acidity and a toasted, seductive profile.

SOUTH AFRICA Silverthorn Jewel Box, Méthode Cap Classique With vines in the Constantia valley, near Muizenberg, Silverthorn makes this Jewel Box with a blend of Chardonnay and Pinot Noir, which ages for 42 months before dégorgement, to give it a rich, complex and substantial mouth.

For a lighter and more captivating style, there is The Green Man cuvee, made only with Chardonnay.

ALEMANHA Solter Riesling Réserve Berg Roseneck 2005 Sekthaus Solter, located in Rüdesheim, was founded in 1988. They make their wine from their own vines, just eight hectares in the Rheingau region, with organic agriculture since 2009. Half the production is Riesling, but they also use Chardonnay, Pinot Noir, Pinot Blanc, Pinot Meunier and Gewürztraminer. They only make Brut and Extra Brut.

UK Nyetimber Blanc de Blancs Brut In the south of the UK lies the South Downs, whose soil and climate are very similar to that of Champagne. The Nyetimber Manor vineyards were planted in 1988 and are today the largest in the country, with 141 hectares with Chardonnay, Pinot Noir and Pinot Meunier.

Gusbourne Blanc de Blancs In the Kent region lies Gusbourne Estate, which dates back to 1410. The vines were planted in 2004 with Chardonnay, Pinot Noir and Pinot Meunier. Launched in 2010, the 2006 harvest already impressed with their quality. Besides the Blanc de Blancs and the Brut Reserve, there is a rosé of a delicate colour and aroma.

BRAZIL Adolfo Lona Órus Rosé Pas Dosé Made following the traditional method in the Garibaldi municipality, in Rio Grande do Sul, this is a blend of Chardonnay, Pinot Noir and a little Merlot. Pas Dosé is synonymous with Brut Nature, i.e. there is no addition of sweet wine (expedition liqueur) before going on the market.
