The winter chill is finally letting up, spring is in the air and it is time to turn out in the trendiest styles this season has to offer. The great thing about fashion is it is limitless. I

n 2007, Anita was one of the 50 artists invited to celebrate the Canada Council for the Arts’ 50th Anniversary with Governor General, Her Excellency the Right Honourable Michaëlle Jean and was featured in Anokhi Magazine’s 2010 “Sexy & Successful List”. She is an award-winning Canadian actress, playwright, and dancer raised in Port Moody, British Columbia. As an acting graduate of the National Theatre School of Canada, Anita holds a Bachelor of Arts degree in English, Theatre and South Asian Languages from the University of British Columbia. Dancing for over 15 years, she initially began her classical Indian dance training in Kathak and went on to train further in Bharat Natyam and Odissi. Soon Anita began working as a Dora Mavor Moore nominated choreographer at institutions like The Second City, The Centaur Theatre and The University of Alberta. Her first love is theatre and she is a well-known Canadian theatre artist who has performed everywhere from Canada’s Stratford Festival to India’s Museum Theatre.

She is best known for her self-written one-person dance/drama “Fish Eyes”, Fish Eyes has toured across Canada and internationally for 8 years to much acclaim and has toured to high schools as part of “Kid’s Helpline” and the “411 Initiative Tour Program” to raise self-esteem in young teenaged girls. In addition, Anita has been the long-time Playwright-in-Residence at Nightswimming Theatre using pop culture references and everyday experiences to explore race issues that plague South AsianCanadian women. She also mentors young women of colour wanting to create performance pieces that speak to social issues.

While performing in Toronto, she caught the eye of Deepa Mehta (award-winning director of the Academy Award nominated film “Water”) whereupon she was cast as Emerald in the film adaptation of Salman Rushdie’s novel “Midnight’s Children”. Earlier Anita had been hand-selected to play the romantic interest to Shawn Ashmore in the 9/11 focused film “Diverted”. She is widely recognized for her awardwinning performance of Davinder Samra in the CBC/Force Four film “Murder Unveiled”.The film was an adaptation of the real life story of a young Canadian girl, Jaswinder Kaur Sidhu, who was alleged to have been killed by her family for marrying a low caste auto-rickshaw driver. Anita received her first acting award at the Asian Festival of First Films in Singapore for this role and has been a prominent media voice in speaking for Jaswinder’s cause through the online campaign “Justice for Jassi” and other crimes against women. A

nju Modi has been an integral part of the Indian Fashion Industry right from its nascent stages. Having started her label in 1990, she has worked in the industry for 24 creative years. She has been a quiet but strong force in the vehement increase in growth, awareness and potential of fashion in India. A graduate in Arts & Psychology from Ranchi Woman’s College, Anju Modi began her illustrious journey with no formal training in fashion & design. A revered couturier, her designs have been incensed with passion, romance and seduction. The label ‘Anju Modi’ is synonymous to beauty, panache and elegance, which over the past two decades has mesmerized all ardent followers of fashion. She is a founding member of the


Fashion Design Council of India, and is currently an active Member of the Board. In 2006 she was one of only four Indian Designers selected for Heyers Fashion Festival in Paris, organized by the Chambre Syndicale, also organizers of the Paris Fashion Week. In the same year, she was also invited to present her collection at the Miami Fashion Week. In 2009, she was requested by the Department of Tourism to show during their international event India Calling at the Hollywood Bowl in Los Angeles. Over the years she has shown at multiple fashion weeks, collaborative events and charities across the globe. Her couture collection ‘Devi’ received much critical appraisal and commercial success with one of the country’s leading actresses, Madhuri Dixit, walking the ramp as the muse for the collection. The designer was also awarded the Elle Style Award 2012 (India Re-invented), and was most recently approached by the visionary director, Sanjay Leela Bhansali, to design the entire look for Deepika Padukone and Priyanka Chopra for the movie ‘Ram Leela’. Not only has the film gone on to become a phenomenal success, Anju Modi has been lauded and applauded by the entire spectrum of fashion and national media for her spectacular work in the film. Very recently she has also been awarded the Life OK Screen Award & the Star Guild Award for Best Costume Design in 2013. Behind the scenes Anju Modi has tirelessly been working with master artisans across the country. She has delicately revived age-old Indian techniques, long forgotten. In weaving, vegetable dyeing, block printing and old traditional embroidery she has created an extensive library of research and development. She has also been working on contemporizing traditional crafts like Chanderi Weaving, Kota Fabrics, Varanasi Zari work and Bandhani printing, to fulfill the needs of a market and niche that she has created. With India at the center of her inspirations her designs have evolved and her vision enriched. Each ‘Anju Modi’ collection continues the exploration of developing a modern design voice while simultaneously drawing a new story from the rich traditional vocabulary of Indian design and craft. Anju Modi retails through her stores at

DLF Emporio and Crescent, New Delhi with clients based out of the US, UK, Spain, Hong Kong, Singapore and most of the Middle East. Research and development work in various villages and their craft. Years 1990 to 1994: Developed new blended fabric in Varanasi, reviving the classic traditions of working Real as zari. (Real silver thread) Years 1992 to 1994:Worked and developed colourways and designs in Venkatgiri (A.P.). Years 1993 to 1995: Moved towards ‘Kutch’ area. ‘Bandhani’ a very fascinating craft was reinterpreted in a contemporary way by giving it geometrical patterns and neutral colourways. Years 1995 to 1997: Developed Kota fabrics (Rajasthan, Bagru and Sanga-neri prints). Produced a range of reversible jackets, pajamas and blouses. Years 1998 to 1999: Improved and developed variations in the Bandhni tie and dye techniques and explored vegetable dye and prints in Bagru, Sanganer Years 2000 to 2001: Modernization and improvement of Chanderi village weaving and patterns. Currently developed the Lurex yarn weaving in silk chanderi fabric.

Years 2001 to 2002: Khadi - Developed yarn with slubs and fine rich fabric then styled into casual comfortable yet trendy silhouettes. Years 2003 to 2004: Developing new designs with UNIDO in KotaDoria under cluster development programme with 1500 craftsmen and artisans. Currently, developing prints on the fabric with Rajasthan sector. Years 2005: Working for “Holistic Craft Village” - A research and development center as a project with FDCI Year 2006: Developed ‘boiled’ wool and woolen knits to design ‘angarakha coats’ she was one of the designers, along with Rohit Bal Manish Arora and Rajesh Pratap Singh who were selected for Heyers fashion festival in Paris, organized by the Paris fashion week, organizers. Year 2008: She has been nominated for Marie Claire’s made in India Awards Special Honours category “Best Craft Revival” in 2008. All these years of designing in these village sectors, has helped improve the economic situation of the craftsmen & weavers. Year 2010: Nominated by Marie Clarie for ‘Best Indian Designer Award’ was Requested to Present her collection at the Handloom Week by Ministry of Textiles. MAY / JUNE 2014 13

imple Monga, founder of Kala Wearable Art, unveiled her luxurious collection of scarves at the Spoke Club, Toronto, Ontario to a select audience and the fashion media, at an invitation only event. The event showcasing exclusive designs on the highest quality cashmere wool from the remote regions of Himalayas, involved products ranging from Sophie Hallette lace to the 400 year old craft of precious metal embroidery called Danka. Dimple created Kala-Wearable Art to indulge her love of Indian handicraft and traditional arts. The vibrant colours and intricate patterns of her scarves represent

Romance, colour, style and creativity flowed down the catwalk when Bollywood’s top designers, showcased their latest collections. Summer was in full bloom as the Hotel Grand Hyatt Ballroom turned into a mini forest. Tree trunks curved elegantly along the ramp. Clumps of blossoms and creepers flowed down from the ceiling. New introduced materials are organic leather, leather from cows bred for organic meat production in Swedish farms, and organic silk that is silk cultivated in organic mulberry trees. This year’s Conscious collection is full of key fashion pieces made by more sustainable materials and perfect for the spring. The key piece is a bright orange dress that is longer at the back and made from Tencel with polyamide and a loose-cut kaftan covered in a hand-drawn zebra print. ikram Vij was born in India in 1964 and lived in New Delhi and Bombay until the age of 20, when he migrated to Austria. While he was there he received his chef certificate from the Salzburg Hotel Management School.Vikram moved to Canada in 1989 to work at the Banff Springs Hotel in Alberta. He became a certified sommelier from the International Sommelier Guild in 2000, and is passionate about pairing wines with his cuisine. In September 1994, Vikram opened Vij’s Restaurant in Vancouver, BC. In early 1995, his wife, Meeru Dhalwala, joined him and the two began collaborating on the menu. 2014 will see the move of Vij’s Restaurant to a larger location on Cambie Street. As well, Vikram will be opening a new concept restaurant in South Surrey called My Shanti. In 2004, Vikram and Meeru opened up a second restaurant and market called Vij’s Rangoli. The market sells Vij’s At Home, a line of prepackaged gourmet curries, which are based on popular recipes from Vij’s Restaurant. In order to keep up with the growing demand for the packaged meals in BC, and to expand the availability of the

products across Canada, a purpose-built food production facility in Surrey, BC, was constructed as the headquarters for Vij’s Inspired Indian Cuisine in early 2011 where the packaged meals are cooked by hand. Vij’s Restaurant has become infamous in Vancouver, across Canada and now globally as one of the finest Indian dining experiences in the world. In 2003, New York Times food writer Mark Bittman said of Vij’s that it was: “…easily among the finest Indian restaurants in the world.” Vikram has been involved with the Chef’s Table Society of British Columbia, Farm Folk City Folk Organization, Ocean Wise Sustainable Seafood, UBC Farm fundraisers and the Green Table Society. As well, Vikram and Meeru’s dedication to the work done at UBC resulted in the funding and opening of Vij’s Kitchen, a state-of-the-art culinary learning facility at the University of British Columbia, dedicated to teaching the chefs and nutritionists of the future about ethnic food and cuisine. Vikram was a guest judge on Top Chef Canada in 2011 and 2012 and he was the guest of honour in a 2013 Top Chef Canada

episode dedicated to Indian cuisine. That episode also featured the Vij’s At Home line of packaged meals, which were sampled by the contestants. He is also a judge on the first ever Chopped Canada show, which premiered on Food Network Canada in January 2014 with the highest premiere ratings for the network, and he is a judge on CBC’s Recipe to Riches, which began airing in February 2014. In 2014, it was announced that Vikram Vij would be joining the cast of the CBC’s top rated show Dragons Den, as one of two new Dragons. The show features eager entrepreneurs pitching their business ideas to a panel of Dragons who assess and discuss the idea before either deciding to invest or dismissing the pitch. In June 2011, the BC Food Processors Association honoured Vikram with the Rising Star Award. In October 2011, he was awarded The Ernst and Young Entrepreneur of the Year award for the Pacific Region’s Hospitality and Tourism category. In 2012, Vij’s Railway Express was launched onto the streets of Vancouver. It is a mobile food truck serving up top quality Indian curries to people in downtown Vancouver


for weekday lunch and at private catering events. The truck was based on Vikram’s travels by rail throughout India and in 2013 was awarded the inaugural People’s Choice Award from Air Canada’s enRoute Magazine, as Canada’s Best New Restaurant. In March 2013, Vikram hosted the world’s first ever live-streamed cook-along, Cook Live With Vikram Vij. As part of Vikram’s goal, to make Indian cuisine accessible to all, people were encouraged to join him live online and cook a family meal at the same time, taking instruction from an award-winning chef. They were able to Tweet questions and photos as the curry was being prepared. The first cook-along received more than 10,000 hits. Vikram and Meeru have published two award-winning cookbooks: Vij’s: Elegant and Inspired Indian Cuisine, (which won the Cordon d’Or Gold Ribbon International Cookbook Award), and Vij’s at Home: Relax, Honey. Marinated Lamb Popsicles

with Fenugreek Cream Curry

Prawns in Coconut Masala This recipe can be served as an appetizer or passed around with drinks. On its own, the masala goes well with naan or rice.You can substitute canola oil for the ghee in this recipe but remember that you will lose some flavor. Don’t substitute butter. It is difficult to cook cumin seeds alone in butter, as you need to keep the heat relatively high and the butter ends up burning and sticking to the bottom of your pot. Also, use a good-quality coconut milk.You don’t use very much but you want to be able to taste it in your recipe. Adding a larger quantity of a low-quality coconut milk just makes this dish runny. If we can’t source any wild prawns, we use prawns farmed in the U.S., specifically California, rather than Asian-farmed tiger prawns. The farming practices of many tiger prawn farms in Asia are considered highly questionable by organizations monitoring healthy and/or sustainable seafoods. Prawns cook very quickly – 2 to 3 minutes on average – so watch them closely to avoid overcooking them. Ingredients: • 30 prawns, shelled and deveined • 2 tsp salt • 2 Tbsp ghee or canola oil • ½ Tbsp cumin seeds • 2 large onions, chopped • 3 large ripe tomatoes, finely chopped

Marinated Lamb Popsicles with Fenugreek Cream Curry This is the signature dish at Vij’s—probably the most famous and most popular. The size of the lamb popsicles depend on the rack of lamb you buy. If the popsicles are bigger, then four per order is usually enough. This recipe is for 30 medium-size popsicles, with five per order. Serve these popsicles over turmeric new potatoes. Serves 6 Ingredients Lamb: • 1/4 cup sweet white wine • 3/4 cup grainy yellow mustard • 1 tsp salt • 1 tsp ground black pepper • 4 lbs French-cut racks of lamb, in chops Curry Sauce: • 4 cups whipping cream • 1 Tbsp salt • 1 tsp paprika • 1/2 tsp ground cayenne pepper • 1 Tbsp dried green fenugreek leaves 70 MAY / JUNE 2014

• 1/4 cup lemon juice • 1/4 cup canola oil • 3 Tbsp finely chopped garlic • 1 tsp turmeric Lamb: Combine wine, mustard, salt and pepper in a large bowl. Add lamb and coat well with the marinade. Cover the bowl with plastic wrap and refrigerate for 2 to 4 hours. Curry Sauce: In a large bowl, combine cream, salt, paprika, cayenne, fenugreek leaves and lemon juice. Heat 3 to 4 Tbsp of the oil in a medium pot on medium heat and sauté garlic until golden. Stir in turmeric and cook for 1 minute. Stir in the cream mixture and cook on low to medium heat for about 5 minutes, or until it is gently boiling. Finish Lamb: Preheat a stove-top cast iron grill or barbeque to high heat. Place lamb on the grill and cook for 2 to 3 minutes per side. To Serve: Serve popsicles piping hot off the grill. Place four to five lamb chops on each plate. Pour the cream curry over the meat or ladle it into a small bowl and use it as a dipping sauce for the popsicles.

• 2 Tbsp coconut milk, stirred • 2 Tbsp red wine vinegar • 2 tsp chopped green chilies • 3 bunches green onions, white and green parts chopped Serves 6 Directions: Place prawns in a colander and rinse under cold water. Allow excess water to drain. In a bowl, combine prawns and 1 tsp of the salt. Cover with plastic wrap and set aside in the refrigerator while you are making the coconut masala. In a large frying pan, melt ghee on medium-high heat (or heat oil for 1 minute). Add cumin seeds and allow them to sizzle for 30 seconds. Add onions and sauté 5 to 8 minutes, or until dark brown but not burned. Stir in tomatoes, coconut milk, vinegar, chilies and the remaining 1 tsp of salt. Cook for 5 minutes, or until tomatoes are cooked through. Add green onions and stir well. Add prawns, stirring constantly until they become pinkish-orange. This will take about 3 minutes. Immediately remove from the heat. To Serve: Place 5 prawns on each of six small shallow plates. Top each serving with one-sixth of the coconut masala. Alternatively, divide the coconut masala evenly among six shallow plates, then top with 5 prawns per plate. Wine: A Pouilly-Fume or Sancerre wine is a great sipping wine with this masala.

Spicy Cauliflower “Steak”

Spicy Cauliflower “Steak” (From Vij’s at Home: Relax, Honey by Meeru Dhalwala & Vikram Vij) Ingredients: • 1 head of cauliflower, outside stalks cut off • ½ cup cooking oil • 1 ½ cups pureed or crushed canned tomatoes • 1 Tbsp finely chopped ginger • 1 ½ tsp salt • 1 tsp turmeric • 1 Tbsp ground cumin • 1 Tbsp ground coriander • 1 tsp ground cayenne pepper • 10 cloves (optional) •3-inch cinnamon stick (optional) Serves 6 to 8 (Depending on size of the Cauliflower) Preparation: Cut cauliflower, as you would a pie, into 6 pieces if it’s a smaller head and 8 pieces if it’s a larger one. Wash and carefully place large cauliflower pieces in a colander to drain. Combine oil and tomatoes in a large wide

pot on medium-high heat. (Since the pot is large, you may need to turn it on to high if your stove burner is small.) Add ginger, salt, turmeric, cumin, coriander, cayenne, cloves and cinnamon; stir well and sauté for 3 to 4 minutes, or until oil glistens from tomatoes. Reduce the heat to low while you mix in cauliflower. Carefully place each large piece of cauliflower into the pot and gently stir so that the tomato masala covers all the pieces. If necessary, use a large spoon to ladle tomato masala into the nooks & crannies of the cauliflower pieces. Increase the heat to medium, cover and cook for 8 to 10 minutes, stirring once halfway through. When you stir, if you notice that the cauliflower isn’t cooking, increase the heat. If it’s sticking to the bottom of the pot, decrease the heat. Pierce once of the larger pieces with a knife to see if it is soft (not mushy). If necessary, cook cauliflower covered, for another 1 to 2 minutes. (If florets have broken apart because they overcooked, don’t worry; this dish is still delicious.) Stewed Cinnamon-Scented Lamb Curry (From Vij’s Elegant & Inspired Indian Cuisine by Vikram Vij & Meeru Dhalwala) Ingredients: • 4 to 5 Tbsp ghee or canola oil • 1 Tbsp cumin seeds • 2 large onions, chopped • 7 large cloves garlic, chopped (about 1 oz) • 1 Tbsp finely chopped or lightly crushed ginger • 2 Tbsp ground cumin • 2 tsp ground coriander • 1 tsp turmeric • 10 cloves • 1 cinnamon stick, 2 inches long (add another 1 inch stick if you prefer stronger) • 1 tsp ground cayenne pepper • 1 Tbsp salt • 5 ripe tomatoes, chopped (about 1 ½ lbs) • 1 cup plain yogurt, stirred • 1 cup water • ¼ cup canola oil • 2 lbs leg of lamb, fat trimmed, cut into 1 ½ inch cubes • ½ cup chopped fresh cilantro Serves 6 Preparation: Melt ghee (or 4 Tbsp of oil) on medium heat in a large, heavy stock-pot. Add cumin seeds and sauté until they sizzle, about 45 seconds. Add onions and sauté until golden brown, about 8 to 10 minutes. Add garlic and sauté 2 to 3 minutes, or until golden brown. Stir in ginger. After 1 minute, add ground cumin, coriander, turmeric, cloves, cinnamon, cayenne and salt. Cook on medium heat, stirring regularly, for 5 to 10 minutes or until ghee (or oil) separates from the spices. Add another tablespoon of ghee or oil if spices are sticking to the bottom of the pot. Add tomatoes and cook for 3 to 4 minutes, until ghee (or oil) separates again and glistens. Stir in yogurt and cook for another 1 to 2 minutes, then add water (add an extra cup of water if serving with rice). Bring to a boil, and then remove from the heat. In another large, heavy frying pan, add ¼ cup oil (make sure there is enough to lightly cover the bottom of the pan). On medium to high heat, sauté lamb, stirring regularly, until you notice small, thin lines of blood on the meat. Remove from the heat and transfer meat to the stew. Return stew to medium-low heat and cook covered, stirring occasionally, for 2 hours or until meat is cooked through. Add more water, ½ cup at a time, if the stew becomes dry while cooking. This should be a moist, thick curry. To Serve: Just before serving, remove cinnamon stick and cloves. Stir in cilantro. Ladle equal amounts of curry into each bowl. Wine: We enjoy this dish with the spiciness of a Zinfandel.

The Power of Simplicity A single defining principle came to characterise the Ghost design process – to harness the power of simplicity. The notion that no complication should ever distract from driver or passenger pleasure, informed every facet of the design and engineering process. An uncompromising approach to materials and craftsmanship remained and traditional visual tenets were re-imagined to express the car’s modernity and dynamism. For example the stately presence of Phantom’s grille made way for a softer, less formal design – its subtle

curvature more akin to a jet air-intake than traditional pantheon facia. Flowing ‘yacht lines’ and powerful flanks hint at the car’s inherent dynamism, whilst traditional Rolls-Royce DNA is expressed in the elevated prow, large uninterrupted surfaces, long bonnet and short overhang. Ghost Series II – Design Evolved The eye is immediately drawn towards the re-sculpted headlights, with unbroken daytime running lights framing a new, more dynamic shape, giving Ghost Series II a distinct visual signature from the front.

This blends perfectly with revised surface treatments to the front of the car. A tapered ‘wake channel’ on the bonnet, emanating from the Spirit of Ecstasy’s wings, evokes the sight of a jet’s vapour trail, hinting at the car’s dynamism. Subtle re-sculpting of Ghost’s bumpers creates a stronger stance and a sense of extra width and height, whilst the contemporary aesthetic is further enhanced with the addition of chrome inserts to the front air intakes, which now feed more air cooling to the front brakes. The seats are available with three-level heating as standard with optional massage function and can be reclined for comfort. Chrome surrounds to the sun visor lights and a new soft-feel dashboard treatment enhance the car’s premium tactility, whilst sumptuous natural grain leather can now be optionally extended to the A and C pillars. The instrument dials and clock have also undergone subtle enhancements with individually applied polished metal chaplets around the dials evoking


Discreet Technology for a Calm Atmosphere On opening the car’s coach doors, one is met with a calming, light and uncluttered space. Occupants can work, relax or simply enjoy the pleasure of driving in a cosseting, peaceful atmosphere, assure that they are fully connected to the outside world of business affairs through the car’s peerless connectivity suite.

Calmly Connected Accessed through a one-touch call button or the Spirit of Ecstasy Rotary Controller, on-board Wi-Fi facilitates email, file sharing, telephony and video-conferencing. The user is also able to watch televised business news in order to remain ahead of the game. Navigation assistance is summoned by the same one-touch call button. Then by simply saying “Navigate to Piccadilly in London” or wherever else the owner wishes to go, directions that anticipate and avoid unnecessary delays are offered. Should a delay occur or our owner needs to talk to his business associates, Ghost Series II makes this as effortless as possible with the same one-touch system. The command “Call Giles” automatically connects the call. At the end of the conversation,

a command such as “Play Radio” will return the driver directly to the in-car entertainment options. Spirit of Ecstasy Rotary Controller This Spirit of Ecstasy Rotary Controller presents a touch pad (rather than a touch screen which might leave unsightly fingerprints at driver and passenger eye level), with the ability to write characters by finger, as well as the ability to scroll through function menus by turning the chrome dial and pressing down to select its functions. The system recognises English, Latin and Arabic characters as well as Mandarin, to assist drivers in China, where character selection can otherwise be a time-consuming process.

Bespoke Audio Eighteen individually-tuned speakers, with both theatre and studio settings, deliver a pure ‘larger than live’ sensation. Two bass speakers located in the boot complement seven speakers meticulously placed throughout the cabin. Two ‘exciter’ speakers in the roof-lining bring the sound to occupants’ ear level creating a completely unique listening sensation. The system utilises a highly sensitive microphone to constantly monitor ambient exterior noise, subtly adjusting the volume and tone settings accordingly to ensure the system delivers consistent perfection. The technology complements this, with frequency and phase correction for individual speakers eliminating potential loud and dead spots caused by outside influences. 80 MAY / JUNE 2014

Illuminating technology shows the way In addition, automatic dipping of full-beam headlights has been replaced with revolutionary new glare-free technology. When a car approaches, light is deflected to ensure the oncoming driver is not dazzled. Ghost Series II drivers therefore enjoy the safety benefits of constant full-beam visibility. A day-time running bar frames Ghost Series II’s contemporary light design, giving the car a distinctive signature whilst augmenting safety at the same time. Satellite Aided Transmission Satellite Aided Transmission utilises GPS data to allow the car to see beyond what the driver sees, anticipating their next move based on location and driving style. It uses this information to select the most

appropriate gear from the Ghost Series II’s 8-speed ZF gearbox to ensure the driver is able to appropriately exploit the power from the Rolls-Royce 6.6 liter twin-turbo V12, ensuring an effortless and seamless drive experience. Dynamic Driving Package and Suspension Enhancements Re-designed front and rear struts married to new steering gear and adjusted dampers significantly increase Ghost Series II’s cornering ability, whilst enhanced feedback levels can be felt through a thicker steering wheel.
