Nazish Khan “Taking the Fashion World by Storm”
16 SEPT. / OCT. 2011
Spring/Summer 2011 collection was also showcased at the IIFA Samsara event. Headlined by Canadian-Indian actress Lisa Ray who also walked down the runway in Nazish’s designs, this was an outdoor event that took place on June 25 in the shadow of the Rogers Centre, the venue for the IIFA awards show. Nazish Khan was the only Pakistani designer to showcase her collection at IIFA Samsara and clips from her fashion show were also broadcast on Omni TV live.

azish Khan not only has a flair for visualizing complex designs, but can also communicate them to her clients, explaining meticulously everything from the types of fabric and embroidery to the color combinations. Since an early age, she looked up to her role model, her mother, for having good fashion sense and an eye for personalized designs. Not satisfied with the styles available in the market, she set out to show what is hot and happening. She started creating her own unique designs
appealing to the woman who wants to truly stand out. Nazish launched her brand Naz Fashion Bug in 2007 and since then, has steadily built a following initially in the Toronto community and now internationally as well thanks to embracing technology and the social web. She has a knack for turning clients into repeat customers with her friendly and helpful attitude, consulting with them to make sure their outfits bring out the best in them. She also specializes in customized wear based on special
requirements and made-to-order bridal wear. Naz Fashion Bug is now a fast-growing Pakistani Fashion brand that caters to men and women who are interested in the latest styles for party, formal wear as well as bridals. Her creations have taken the Toronto community by storm for being original as well as very wearable. Their combination of dazzling colors and chic cuts are what set them apart from other fashion houses. Naz Fashion Bug exhibitions are some of the most talked-about in the u SEPT. / OCT. 2011 17

city and are very well attended with people coming all the way from Ottawa and Montreal for their chance to look at, and get their hands on, the latest collections. Nazish has also been featured in the Toronto Star, Canada’s highest circulation newspaper. Nazish also showcased some of her more recent collections at the IIFA Samsara Fashion Show putting a stamp on the Bollywood scene. Lisa Ray walked down the catwalk donning a gorgeous creation in white and gold designed by Nazish creating a definite buzz in the audience. Even after her success as an entrepreneur, Nazish considers herself first and foremost a wife and a mother and therefore when she is not helping her clients look their best, she keeps to herself focusing on her family. 18 SEPT. / OCT. 2011

MG Designz was created and founded by Darick Mohammad Ghannie-Gangaram (Darick Gangaram). At the early age of 12 he discovered he had a talent, to create things by just looking at a picture. He learned how to transform a person, with hair and make-up and give them
confidence everyone should have. Getting his mother ready for any event she was attending started to become a hobby for Darick, His mother is his Queen and he loved making her feel like one. But he
never expected people to notice her hair and make-up, but they did. That is where the questions started “Who got you ready, your curls are still in and you look fabulous.” His mother told them that her son did, and everyone was shocked wondering how a 12 year old could do this with no training. Darick also known as DMG has an eye for things, he would look at a person and know how to make them look like a star. Then the word got around and now 8 years later DMG was created. DMG entered the industry working for another established make-up artist, but his freedom to express his talented was limited. That’s when he created DMG Designz with his friend Neelam Saini in 2008, and it has bloomed to where it is today. Struggling to show u SEPT. / OCT. 2011 29

ina Ahluwalia,India’s premier Conceptual Jewelry Artist, creates jewelry from her soul. Pieces of art inspired by her experiences and interaction with life. Her jewelry is her language, her expression and her way to place herself in the world. It is where she places her thoughts and emotions; it is her response to life.

Her jewelry is strongly conceptual and her design philosophy is subtle yet powerful. Inspite of being rooted in Indian craftsmanship, her work has a contemporary expression and an ability to connect at the emotive level. It also always has something ‘precious’ in it, sterling silver, semi-precious stones and deep thought. In the last 8 years she has worked on several commercial as well as conceptual

Victorian Style Jewelry The History and The Modern Era The History The Victorian Era started when Queen Victoria ascended the throne in 1837. It spanned over 60 years from 1837 to 1901. Jewelry designs from this era were coined as Victorian Style Jewelry. All throughout this era the designs were influenced by the life of Queen Victoria. The era started with a romantic period when young Queen Victoria ascended the throne and married Prince Albert. Jewelry designs in this period were mostly symbols of love like hearts, love knots, clasped hands, anchor and so on. Lockets that could hold a picture or a lock of hair were very popular. Gold was limited, so filigree work can be seen in the jewelry pieces of this period. Bright colored gemstones were used to reflect the happiness of Queen Victoria. In 1861 Prince Albert died. Queen Victoria was devastated and mourned for over 20 years. During this period jewelry designs became more heavy and dark. Black onyx and garnet were used along with black enamel. Around 1890’s the Queen finally came out of her mourning. Jewelry designs became flashy and 40 SEPT. / OCT. 2011
trendy. Diamonds were used in abundance. Symbols of life, like flowers and butterflies were incorporated in jewelry designs. Travel and sports were popular leisure activities. They influenced the jewelry designs towards the end of the Victorian era. The Modern Era The Victorian era ended in 1901 with the death of Queen Victoria but the fascination for it did not. Over the last century Victorian designs have been reincarnated in gold, and precious stones set in filigree work. These Victorian pieces of jewelry have become a collector’s item. Their ornate design with huge gemstones
makes them unique. However in the last decade or so Victorian Styles have influenced the fashion jewelry world. The Modern Era Victorian Style Jewelry is very affordable thanks to the fashion jewelry designers. They have incorporated Victorian styles in everyday wear. Today Victorian style jewelry pieces are made in gold or silver plated metal with semi precious and natural stones. Some are also using simulated gemstones to represent the colors of precious stones. Large pearls are also being set in Victorian designs. Some modern era jewelry pieces are given a Victorian finish to give a vintage effect. Although today’s Victorian style jewelry are made in precious metals or stones, designers have managed to capture the essence of the Victorian era. The housing market shows no signs of slowing down. “The unsettled situation in financial markets over the past few weeks did not appear to sap the confidence of GTA home buyers during the first half of August,” said Toronto Real Estate board President Richard Silver. “Revised forecasts for future Bank of Canada interest rate decisions coupled with the recent announcement by the US Federal Reserve, suggest that interest rate hikes in Canada are on hold at least until sometime in 2012. oday’s highly competitive market has caused the Realtor® community to develop and embrace new and exciting technology at an unprecedented rate. With the arrival of internet based social media such as Facebook, Google + and Twitter together with countless multiple smart phone applications, we have come a long way from the days when we jumped in the car carrying printouts of home listings and the latest local street map. Although the basic role of a Realtor® in a home sale - that of either buyer or seller representative - is no different, what we are seeing is a significant surge in the knowledge and tools required to do the job more effectively. Social media is becoming a relevant source for generating buyers and sellers. As well, professional internet based networks are becoming effective marketing tools for a Realtor®. The impact of Wi-Fi access, mobile messaging and social networking together with internet data that provides comprehensive local community mapping information 62 SEPT. / OCT. 2011
has been overwhelmingly positive. Although the quality and quantity of information you can expect to access is bound to continue evolving with new technology, an internet website or mobile wireless application will not take the place of a Realtor® for some time to come. How you want to engage with current
real estate technology is entirely dependent on your specific needs and expectations. People still need guidance, and they need it from a real person in a face to face situation. As your RE/MAX Neighbourhood Realtor® my most important resource, still remains the personal service and expertise that I bring to the table. My goal at RE/MAX continues to be that of bringing buyers and sellers together so they can have the optimal buying or selling experience. I think we can agree that buying or selling a home is far more complicated than surfing the internet to seek a destination and plan your holiday. It is my everyday role to guide my clients through the complexities of buying and selling a property, eliminating potential hassles, worry or stress.

by the beats and rhythms of Birmingham’s Bhangra bands. She was, just like many of us, the child who would save her lunch money to buy every single Bhangra album upon release. Over the years, even though Bhangra has always been a large influence in her musical style, she sought to accept and shape her music from a bit of Pop and Rock to even Hip-Hop and Bollywood. Her recent smash hit has been “2 Seater,” which will be on her forthcoming debut album, NINDYPENDENT. As Nindy continues to take Bollywood and the Urban South
Asian music scene by storm, we had the chance to catch up with her for a little 1-on-1 time. Tirusha: So let’s cut straight to the chase Nindy! What has the ultimate response been about “2 Seater”? Nindy Kaur: Hey T! Everyone has loved “2 Seater!” It has been a while since the track has released and everyone is still talking about it! The media has picked it up well, radio stations quickly picked up the track & it shot up on their charts, even the television stations added the track to u

ver the past few years, Toronto-based Punjabi singer, Nindy Kaur, has created a storm on the music scene. She’s been locking down major Bollywood tracks, releasing super-hit singles one after the other, landing the covers of major magazines, and oh, did I mention...she’s got her own clothing line in the works? Nindy Kaur, and no pun intended, is quite the independent woman. At the age of 10, Nindy Kaur first stepped into the music scene, as she was raised in the U.K. & surrounded

Fans are still talking about it via Facebook and Twitter and I really appreciate when even weeks into the release, you get a message from a fan telling you how much they love your song. Since you brought of Facebook and Twitter, tell me, how has it helped you stay in touch with your fans? More than Twitter, Facebook has been really great in staying in touch with everyone! towards others. It’s a warm feeling to be honest. I’ll give you a great example...just last week I had a photo-shoot. Fans always want to see images but really it’s a chaotic atmosphere during shoots. But this time, I wanted the fans to be involved. So in between doing make-up, hair, picking outfits, I was constantly posting pics from my Blackberry and commenting back to fans when they said they liked certain looks or styles! It was a great experience and I’d like to continue doing more of these things. Well said! When it comes to style, you definitely have a lot of it! Who are some designers you’d like to work with if you had the opportunity to?
Nindy Kaur with her husband, Manj Ral.
Thanks T! I think Manish Malhotra is a great designer. He’s got a great way of mixing Western styles with traditional Indian looks. I saw highlights of his latest collection from Lakme Fashion Week and I absolutely loved it. He had lengas, cholis, saris and gowns...it was truly FAB! His taste in color is great also. Simply put, I’d love to work with him; I think it would be a great
shoot if we had one! Rohit Bal is also a fab designer. His latest line was really flamboyant and popping colors. He too is another person that I think we could surely work some magic with! So boys if you’re reading....ha, ha! You truly are a fashionista! So tell me, anytime I see you, you’re always rocking a great
bag! Tell me, what does Nindy Kaur...a true fashionista, keep in her bag? Well whenever I go out, I always have my Louis Vuitton bag! Inside...hmm, well firstly my Blackberry! I need to stay in touch with my team and my fans; If there’s no Blackberry, there’s no contacting Nindy! I’ve also got my MAC lipgloss. I also keep my Chanel perfume, Madamoiselle. What are your current plans and what’s in store for Nindy Kaur for the coming months? Right now we’ve got a bunch of shows lined up...India, Dubai, Canada, we’ll be doing a lot of traveling, ha, ha! Of course, I’ll be working on my music at the same
time. I’ve got a few videos lined up for forthcoming singles as well. We’re pushing the Nindy Kaur clothing line heavily as well. Any final words for our readers and your fans? Thank you everyone for all your support! It’s because of fans like you that I enjoy doing my music and do it with a smile on my face everyday! Believe in your dreams and always do what you’re passionate about. Everyday is a new opportunity for you to do something great in life, so live it to the fullest! Be sure to stay in touch via Facebook and Twitter! I love you all and will continue to put out great tunes for you all to enjoy!! SEPT. / OCT. 2011 69
Deejay Ra’s 2nd Annual Music Video Night at IIFF Tampa Bay IIFF Tampa Bay made history in its inaugural year as the first South Asian film festival in the US to introduce a music video segment celebrating South Asian music videos as an exciting form of cinema. Well known music personality Raoul Juneja (a.k.a. Deejay Ra) returned to program and host this year’s music video segment, highlighting the growing independent movement of South Asian music artists from around the world. This year, IIFF Tampa Bay had a special focus on local South Asian artists from Florida, by presenting world premieres of two music videos “Roots” from singer/songwriter Prita Chhabra (directed by Toronto’s Umar Syed) and “Blow” by rap artist Ajaxxx (directed by Tampa’s Omar Shaikh). Well known British-American actor/musician Samrat Chakrabarti also presented a screening of his “So Far” music video, while attending IIFF Tampa Bay as part of his “Ashes” movie screening at the festival.

VISAFF’s purpose and vision is to “bridge the gap” between South Asian talent and mainstream audiences. The festival serves as a launching pad for integration through celebration and education. “Roots” screens on July 16 at 4:30 PM in the SFU Woodwards Building in Gastown, Vancouver. VISAFF, which takes place July 15-17, was founded by well known Canadian actresses Agam Darshi and Patricia Isaac.

Throughout his legendary career, Tiger Jeet Singh and his son former WWE Superstar Tiger Ali Singh faced off against a number of hard opponents. On Saturday, June 4th, they faced one of their toughest yet in the form of Mother Nature. With help from a number of tag team partners, one of them including their close friend Troy Newton, they were able to come up with another victory, ensuring that Tiger Fest 2011, their annual wrestling fundraiser show, was a major success in raising over $45,000 for the Tiger Jeet Singh Foundation in support of local charities. A formal cheque presentation of $15,000 was made today Wednesday, June 29 to Milton District High School towards the purchase of fitness equipment. Tiger Jr. is a former student of Milton District H.S. In addition, over $10,000 has been donated already towards the purchase of food for the Salvation Army and other local charities. The wrestling show was scheduled to be held at an open air venue in downtown Milton, Ontario. The lot, owned by Troy’s Diner, had been converted into a makeshift arena, with bleachers set up around the ring where the evening’s event was going to take place. Unfortunately, rain had been falling all afternoon, and the rumblings of thunder and high winds put the show in jeopardy. Not only would it be unlikely that fans would want to brave the elements, but even if they could, it would pose too much of a risk for the wrestlers to perform. Consequently, with less than two hours to bell time, Tiger Jr. made the call to move the show indoors. “We thought it was over when the Town shut down the Milton Street Festival” said a visibly distraught Tiger Jr, “but thanks to my dear friends George and Andrea Savard,

owners of Milton’s FirePower CrossFit and the rest of the team down there, we were able to change venues almost immediately to their indoor facility.” Led by head trainer Rob Fuego, the roster of Squared Circle Wrestling tore down the ring, transported it down the road to the FirePower CrossFit training facility, and set it up again, all in record time. In the meantime, the organizers started the mass communication efforts to inform fans that the show was still on, albeit in a different venue than originally planned. Judging from the approximately 1,500 in attendance, the message was clearly received. And it’s a good thing, because those in attendance were really treated to a great event. “We really didn’t have any other option but to proceed”, said Tiger Jr, “I mean we had promised to pay all of the wrestlers, some of which had flown in from the United States, we had hundreds of fans already converging into Town well in advance of the scheduled bell time, there were representatives from all three levels of government, including newly appointed Sports Minister of Canada, who had flown in from Ottawa that same morning, plus the Consul-General of India. However, even more pressing, was the fact that for the first time we were promoting a high school fitness competition, which the students had been preparing for the past several weeks. I just wouldn’t have had the heart”, says Tiger Jr, “to tell them all
their efforts were for not.” Before the bell, were some presentations to the winners of Tiger’s High School Challenge – with the main event being the students pulling a bus – and speeches from various political dignitaries, sponsors, guests, and finally Tiger Jeet Singh himself. Next up were some songs from Canadian recording artists Prita Chhabra and Khalel, and a rendition of Oh Canada by some students from Tiger Jeet Singh Public School. After the wrestling matches, every fan was able to get an autograph and picture with each of the wrestlers on the show, as well as The Destroyer, who was in attendance, Tiger Ali Singh and Tiger Jeet Singh. “Because this is a free event”, Tiger Jr says, “we are extremely grateful to our wonderful sponsors, which include Presenting Sponsor Scotiabank, Platinum Sponsors Gunding & Hans LLP, Desi Wear, Entripy, Rob Hans of Century 21, Gold Sponsors Best Western Plus – Milton Inn, Decks by Dave, Royal Park Homes, Andrin Homes and Orbit Studios.” For more information, visit www.tigerjeetsinghfoundation.com Tiger Fest 2011 Time Lapse: www.youtube.com/watch?v=KhYOy 8Ulhq8 Watch the official 2011 Tigerfest PSA here: www.youtube.com/watch?v=F74zjG RAO-4 JSEPT. / OCT. 2011 71

Does it burn?
Or isit too hot to handle? By Dr. Ramit Joshi

ry mouth as we may know is a condition of not having enough saliva in ones mouth. When dry mouth persists, it can make chewing, eating, swallowing and even talking difficult. It also increases the risk for bad breath and tooth decay because of lack of saliva’s neutralizing effects which help keep balance in the oral cavity preventing cavities and infections such as oral thrush which is fungal infection in the mouth. Dry mouth also known as xerostomia is a common problem which frequently is due to side effects of medications. This may improve with a new prescription or an adjustment of dosage once it is identified that you are suffering from dryness, a trip to MD is advised or using salivary supplements to keep the oral cavity moist and hydrated. Some patients think dry mouth is a normal part of aging because it is commonly found among the elderly. Experts say the main reason is that elderly people take more medications compared to the rest of the population but xerostomia does not discriminate with age. Anyone who suffers from stress or is extremely anxious can also suffer from dryness temporarily.
74 SEPT. / OCT. 2011
More importantly xerostomia may be a symptom of a serious disease that affects the entire body. Hence it is very important if one notices regular dryness, assessment of one’s physical health needs to be considered to eliminate any serious diseases whose symptoms may present in the mouth.

Patients at higher risks are also those who are undergoing cancer therapy to head and neck region which can affect the salivary glands production and nature of saliva. Patients who are immunocompromised like HIV/AIDS patients are at higher risks, uncontrolled diabetics and patients who have had Stroke, Alzheimer’s and Parkinson’s also can experience the dryness symptoms and oral infections with rampant decay. Dehydration also needs to be ruled out and keeping oneself hydrated regularly is advisable. Smoking cessation is necessary as smoking promotes regular dryness and chewing tobacco is equally not advisable. Patients who are chronic mouth breathers and snore also experience such symptoms and would need to use salivary supplements or appliances to control snoring and avoid mouth breathing. Diagnosis of Dry mouth can be done from patient’s experiences, symptoms, clinical examinations at the Dentist office or by various tests at the MD such as Blood work, measuring the flow of saliva called sialometry, radiographic
evaluation of the salivary ducts with the help of a dye called sialography to check for any blockage. Biopsy is performed to rule out any malignancy affecting the salivary glands. Being aware that oral hygiene is also affected by our diet – we should avoid spicy or hot foods, sweets, dry, sugary meals as they increase the risk of dental decay and cause more burning of soft tissue. Taking dentures out daily for 8 hrs is recommended to give the tissue time to settle and heal. Avoiding smoking, caffeinated products and improving diet rich in green leafy vegetables will help eliminate the constant burning that can prevail in such patients. Using Salivary substitute medications prescribed by your Doctor, drinking plenty of water, chewing xylitol containing gum and over the counter salivary products such as “Biotene” can help improve quality of life and reduce risk for dental decay, soft tissue ulcers and infections. Always keep in mind that it is very crucial to see your Dentist every 6months as your oral cavity is an integral part of your overall health.

Yoga Guide to Healthy Living, Less Stress and More Success. by Lisa Ware, RYT
Y
oga is a practical and enjoyable way to attain balance in your body, peace in your mind and focus for your spirit. The physical practice of yoga offers so many variations for everyone’s different needs. Yoga can be very physically active, depending on the style. Following are the fundamentals to living a happy, healthy and fit lifestyle. n Get enough rest: 7.5 hours is ideal for most people. n Eat foods that are colorful; ‘Eat the Rainbow’ and avoid too many soft foods. n Eat 4-7 small meals/large snacks a day, avoiding heavy large meals which tend to bog down your energy level and take time to digest. n Eat foods that you can identify their source; where did the ingredients come from? The closer to the Earth, the better for you as a general rule. Look for and go out of your way to make sustainable choices, do it for your grand children’s children. n Drink pure water, half an ounce per pound of body weight daily is recommended. If what you’re drinking isn’t just water, drink 100% juice, organic or non dairy milk, caffeine free and free from artificial color and fake sweeteners. Keep a travel bottle with you at all times. Americans are almost always within 25 feet of a water source and most go around dehydrated every day! Avopid soft drinks entirely, yes, even Sprite. Your body’s Ph levels immediately turn acidic and stay that way until you drink about 30 glasses of pure water to counter that one soft drink. All disease develops in an acidic environment. n Avoid wasting time and energy running around. Prepare your week in advance. n Plan major tasks for each role in your life and write them down. Be open to change, as change is the only constant in our life. n Set realistic goals, make lists. If you set your aim high and shoot for the moon you

may sometimes miss, yet you will land among the stars! n Do something every day to connect to a higher source or a bigger cause, however that connection relates to you most. n Whether it translates to giving time or resources for charitable works, setting your intention in prayer, meditation, in nature or sitting in quiet time; make this a daily commitment to yourself. n Allocate time for special friends and family. Keeping those relationships nurtured and caring about others makes you feel better and is want really helps us through the hard times. When life is stripped to the basics these are the people that matter most. Demonstrate random acts of kindness. n Learn something new! Set things to look forward to in one week, one month, this year etc. Read, study, travel, spend time at the barn or creating artwork… whatever lights you up! n Be good to your body. Do a physical activity daily! Sweat, focus, and get your heart rate up, change it up to keep it interesting, but most importantly HAVE FUN doing it! Yoga is a great way to achieve balance, relieve stress and gain awareness and focus, all in one hour on your yoga mat a few times a week! n One popular and active yoga style is called Vinyasa. This translates to being in the flow with each pose, as it teaches the importance of breathing during practice. n Most poses throughout the class are associated with an inhale and an exhale. n Learning to breathe may sound automatic, but not breathing fully is a stress reaction and can be a symptom, or even a cause, of many diseases. After learning techniques on your yoga mat, in class, you will develop new skills to utilize in real life. n You may quickly experience better
awareness, less reaction and more pro-action; plus getting more oxygen is always a lovely benefit. n Healthy living and doing yoga go hand in hand. As we grow and practice in yoga, we develop our character and learn to take that very important time to disconnect from stimulus, technology and the constant bombardment of our senses. This is called OVERSTIMULATION; we can learn to live in peace in a chaotic world. We instead find a moment for ourselves, away from our regular routine, for just a simple hour on our yoga mats. As we push ourselves physically in class, we also take what we learn and translate that to pushing through any hard situation in life. We then in turn help nurture our relationships through loving kindness with others and to ourselves, as we practice yoga without forcing our bodies and learning to observe rather than always press on. Yoga ultimately helps us respond with love by using our practice as a mirror. We see our self from a new perspective, developing discipline. This yoga is about developing character, learning to find stillness, getting stronger, more balanced and, of course, more flexible, in both body and mind. n By each of us committing to have a positive outlook and by utilizing these learned skills on our mat in real life off our mat, we will be contributing our small part to making our community, and ultimately our planet, a better place to live!

FOOD
STUFFED MOONG Ingredients: 1 cup whole green moong bean 1 small onion finely chopped A few sprigs of fresh cilantro chopped 1 tsp red chili powder or per taste 1 tsp dhania powder 1/2 tsp turmeric powder 1/2 juice of lime or lemon or per taste 1 tsp cumin seeds Salt per taste 2 cups whole wheat flour Oil for cooking
Mutter in Dahi Gravy Ingredients: 1 cup frozen mutter (Peas) 1/4 tsp mustard seeds 1/4 tsp jeera seeds 1 to 1 & 1/2 tbsp plain yogurt 1/2 tomato diced 1/4 tsp turmeric powder 1/2 tsp red chili powder or per taste 1 tsp dhania powder 1 tsp oil A pinch of garam masala (Badshah brand is preferred) Salt per taste Fresh cilantro for garnish
Directions:
Thaw mutter and keep aside. Mix turmeric powder, red chili powder, salt, dhania powder in dahi (yogurt). Heat oil in a sauce pan, add mustard seeds, let it splutter, then add jeera seeds. On a low flame pour the dahi mixture and stir. Use a whisk if needed to prevent curdles. Increase the heat to bring to a boil and until raw dahi smell is gone. Now add the mutter, bring it to a boil and finally add the tomatoes and cilantro for freshness and color.
HOMEMADE MINI RASGULLA Ingredients: 1 litre milk (1/4 gallon) 3 tbsps lemon juice 3 1/2 cups water 1 cup sugar pinch of cardamom pwd Directions:
Bring milk to a boil. Once it starts rising, add the lemon juice only in one spot. This makes the curdle to produce faster. The curdles are now called paneer or Indian cottage cheese. Now knead it well for a few mins. Make mini balls (about 15) and keep aside. Heat water in a wide vessel, 78 SEPT. / OCT. 2011
then add sugar and keep stirring till sugar dissolves completely. When the sugar syrup boils and starts bubbling, add the balls slowly one by one and simmer it for approximately 3 mins. If the balls go to the corner, move them to the middle. Keep in medium flame and close with a lid. Cook for about 10 mins opening the lid every few mins this is to ensure the vapour passes out not allowing the sugar syrup to ooze out. After about 10 mins, the balls would be closely doubled in size. Cool it completely and chill it for at least an hour before serving.
DAL PARATHA
Photo & Text: 365 Days of Pure Vegetarian
Directions:
Soak moong dal overnight. Drain excess water. In a non-stick pan, add 1 tsp oil, add cumin seeds. Then add the moong bean, sauté, add 1/4 cup water, cover with a lid and let it cook until soft. Keep an eye if the water drains to prevent burning of moong bean. Once cooked and water has evaporated, add the chili powder, dhani powder, lime juice, turmeric powder, salt, mix well and turn off the heat; let it cool. Then add finely chopped onions and cilantro. Mix 1/2 tsp of salt with flour and slowly add some water to it until it forms a dough. Cover it with a plastic wrap and let is sit aside for at least 20 mins. Take a small piece of dough and place it between your palms, make a round ball. With a rolling pin, roll the dough, sprinkle some wheat flour if necessary to prevent sticking. Roll to about 5 inches in diameter. Place a spoonful of moong bean in the center of the dough, pull the edges of the dough and cover the stuffing. Roll the dough further into a thin round shape about 10 inches in diameter. Heat a pan, place the rolled paratha. After about 1 minute on medium flame, flip it. After about 2 mins, drizzle 1/2 tsp oil on top of the paratha then flip it again. Press it with a spatula all over to form a golden brown color. Flip it to cook on the other side and get golden brown. Take it off from heat and serve hot with a side of plain yogurt, lime or mango pickle or ketchup.
Dosa Aloo Masala Ingredients: 3 medium aloo 1 small onion sliced 1/2 small tomato diced Handful of frozen peas thawed 1/2 small carrot diced (optional) A small piece of ginger A few kari leaves 1 tsp mustard seeds 1/2 tsp urad dal 1/2 tsp channa dal (optional) 1/2 tsp turmeric powder 1 green chili slit length-wise or per taste Salt per taste 1 tsp oil
Directions:
Boil potatoes, peel skin, and mash leaving some chunks. Heat oil in a sauce pan, add mustard seeds, let it splutter and then add urad and channa dal. Saute until they turn golden brown. Now add kari leaves, green chilies, ginger, onions, sauté until onion is translucent, followed by carrots. Sprinkle water, cover it with a lid and let it cook until almost done. Add peas and tomatoes, mix well then add the spices. At the end add mashed potatoes, mix well, add some more water if necessary. Bring it to a boil. Taste and adjust for seasonings. Tastes fantastic !!!
Vegetarian food made simple for everyday cooking “I am a food lover and thanks to my husband for being one too. I must admit that my real inspiration for cooking came from none other than the queen of Everyday Italian, Giada De Laurentiis. Thanks to her enthusiasm for cooking that has dug my hidden passion into something worthwhile. I will also add that my husband has a passion for food which merely goes to his upbringing; yes, my Mother-in-Law is an amazing cook and hence he has an inclination towards food cooked in a way which makes his taste buds jump in triumph! And last but not least, how can I forget my dear Mom who has always been a source of inspiration in creating simple yet very satisfying meals day in and day out. I hope to carry on the simplicity of preparing food from her and pass it on to my family and friends! “The recipes shared here are tested in my kitchen unless stated otherwise.” Priya Kothari 365 Days of Pure Vegetarian www.365daysveg.wordpress.com SEPT. / OCT. 2011 79
