This past month the Get it team received some very, very sad news regarding one of our regular writers. This lovely young talent will be sorely missed by the many she touched on the Gold Coast (us included) with her lively enthusiasm and optimistic nature. As we ploughed through April themes addressing what impacts us most as we age − family, friends, pressure to ‘be’, ‘look’ or ‘act’ in certain ways, we were struck with a sudden and harsh reminder that actually, life is short, often unfairly so. With this in mind, we would like to spread the word on a gentle reminder: take stock of what’s really important, act immediately and accordingly. We’ve been lucky enough to interview ever-more interesting and insightful women for this issue, including Getaway presenter, Catriona Rowntree, Jennifer McDonell of Mentor Online, and popular psychotherapist, Susie Tuckwell. These interesting ladies, among others, all reinforce the key to ‘ageing fearlessly’ is embracing not only family, friends and connections around you, but developing a positive relationship with yourself as well. Certainly, we have awesome technology, products and services that assist us to look fabulous − and that’s great; but it is really only worthwhile if you feel good too. Additionally, we’ve spoken to Nadine Hamilton of Oxenford’s innovative Positive Psych Solutions, and Pawsitive Psych Solutions (yes, you read correctly), who explains the value animals can have in helping us to lead happier lives. Nadine’s a wonderful example of one person who is using her specialised experience and individual passions in a way that benefits various other communities around her, and she’s living a life she truly loves.

How to wake up in a GOOD MOOD EVERY single day Would you like to wake up every single morning, full of energy, positivity and excitement about the day ahead? Eric Bailey tells us how... s a success coach, speaker and exprofessional athlete, people often ask me how I maintain my high energy levels and up-beat mood despite a gruelling schedule and a busy family life (I’ll be a grandad in June)! My answer: it’s simple. And it doesn’t matter whether you are a hard-working single mother, an athlete or a business professional; you just need to follow these two simple tips. It’s important to start your morning right because it sets the tone of your whole day. Do it correctly and it will put you in ‘the zone’, help you to be more focused, energetic and attentive. I know because every day I wake up at 4:15am buzzing and ready to go. Do it wrong, and every day is an uphill battle starting with low energy and a bad attitude! Tip #1: It Starts the Night Before The real secret is that it all starts the night before, because when you get your bedtime ritual right, the next morning is easy. If you want to start the day on a high, develop a night-time routine that will ensure you wake up with energy and positivity. My Night-time ritual: Here’s my night-time routine. Try it out, or a variation that suits you and you will be amazed at the results. > Skip the Booze: As a professional athlete, I have never, and don’t drink alcohol, so for me it’s a given that consuming alcohol
before bed really won’t help you. It depletes your body of vital nutrients and vitamins (including Vitamin B which affects your energy levels). Unless it’s a special occasion, cut any alcohol out and see how much better you feel the next day. > Don’t stay up for nothing: I normally try to get to bed around 9:30 to 10pm so that I can get enough sleep to wake-up early feeling refreshed. By this time, my body has used up all its competitive energy and I need to recharge my batteries for the next day. There’s no point sitting around watching TV, it’s time to recharge – so set an alarm on your phone and get to bed when you know you should. > Anticipation: Every night before I go to sleep, I conduct a mental checklist of what is on offer for me to create, design and do the next day to reach my goals. The anticipation of controlling my own destiny is exhilarating and empowering. I can’t wait to ride the roller coaster rides of life. That’s why I get up so early − with a smile in anticipation of what’s to come. I don’t want to waste a single day! > Relax/Meditate/Visualise: A great thirty minutes of mental visualisation of my goals and plans, followed by peaceful meditation and taking Isotonix calcium supplement sends me into a deep relaxed sense of tranquillity and high expectations for the next day, guiding me into a deep sleep. 9

Tip #2: Early to rise “The sun has not caught me in bed in fifty years.” ~Thomas Jefferson There is something magical in rising early, and preferably at dawn. This peaceful period before the rest of the world wakes up can be the most productive period of your day. When I started the habit of waking up early at 4:15am every day, I felt like I was not living before. The amount of progress, inner peace, and joy that I experienced all the day made me regret the years in which the sun always caught me in bed! There were no distractions and I was ready for the day ahead of everyone else. I experienced peace, energy and clarity as I organised my schedule before the craziness of everyday life got started. Just Try It! This works, so do yourself a favour and try it out over the course of one week. Get to bed nice and early on Sunday night and start on Monday. Begin with small changes, and just try to get up thirty minutes earlier than usual each day until you are waking at your desired time. You will love how you feel, give it a go! Get it’s fashion stylist chats to designer Alana McBain (showcasing at QT Fashion Week & Awards) about how a little blue Holly Hobbie sewing machine sparked the launch of her fabulous label, Mac & Bain
What triggered your desire to get into designing? I always wanted to become a fashion designer and started sewing after my grandmother gave me a little blue Holly Hobbie sewing machine when I was about six. I completed work experience with Prue Acton and Barbara Wilson in Melbourne in the late 80s and then moved from Victoria to the Gold Coast in the early 90s. Fashion designers were almost non-existent on the Gold Coast back then so I decided I should do interior design instead. After starting a family and a career as an interior designer (and perhaps a mid-life crisis) I decided to go back and study fashion design in 2009 and chase my original dream. What does showcasing at events like QT Fashion Week & Awards do for designers like you? It is such a great opportunity for Mac&Bain to be able to show the collection and reach a new audience since it is still such a new label. It is also fantastic to have such an important event for designers and fashion return to the Gold Coast successfully. What is this collection all about? The 2013 collection is called ‘The Golden April 2013
Girls’ and is a tribute to all the great ladies (grandmothers) from the past. Where do you discover inspiration? Other than the obvious trends, I tend to draw most of my inspiration from the fabrics that I like to find first before I do anything else. I love quality, interesting, textured fabrics that help me to create my next designs. What are your favourite trends from this season? Some of my favourite trends this season are the use of metallics (bronze, silver, gold and burnished metal) either in outfits or in accessories. The baroque trend, distinguished by beautiful, subtle prints; luxurious fabrics like velvet, leather, faux fur and lace; deep, bold shades with lots of embellishments from studs to crystals. Are you heavily influenced by the culture and weather of the Gold Coast? I am definitely influenced by the culture and weather of the Gold Coast. I am yet to design any proper winter items such as coats and jackets and tend to draw on the resort lifestyle when designing. Who are your fashion icons? Manning Cartell, Ginger & Smart, 14
Zimmermann, Lisa Ho, Kirrily Johnston, Alice McCall, Toni Maticevski (the list is endless). What is in store for 2013? Frank Warren is the creative mind behind the world’s largest advertisementfree blog, PostSecret.com. He’s travelling Australia this month on a sell-out tour and offers Get it a few amazing secrets of his own...
How long have you been running this site for now? The PostSecret Project started in November 2004 when I first invited strangers to mail me secrets anonymously on postcards. The ‘Sunday Secrets’ website began a few months after that. What’s your personal description of the PostSecret project? Even though there are books, a website, art exhibits, and events, I think of PostSecret as a community art project. It all starts with a safe, non-judgmental ‘place’ where people feel comfortable sharing their hidden truths, which can be soulful, funny, sexual or shocking – but always artful. For those unfamiliar with the concept behind PostSecret, how does it work? For years strangers from around the world have mailed me their secrets artistically rendered on postcards. I share them back with the world every Sunday at postsecret.com and in books and at PostSecret events. April 2013
It’s a simple (and successful) concept, what was the inspiration behind it? I think a boring job was one of the main reasons behind PostSecret – I was doing pretty mundane work copying medical articles but I was always drawn to doing something much more creative and meaningful. I also believe that a huge part of the inspiration behind PostSecret, that I have been able to see in hindsight, is that uncovering secrets I had buried in my past allowed me to reconcile with secrets that had been haunting me. I think I was always meant to be doing this and working with secrets. You were listed by Forbes as the fourth most influential person on the Internet − did you set out to host a world-renowned blog (over six million views per month) with successful spin-off media, or did it just ‘kind of happen’? My original goal with PostSecret was very modest, and that was to receive 365 postcards in one year, and now, I have received more than a 16
half-million. I knew that I would be fascinated by what people would send me if I could just earn their trust but I had no idea that the website would become the most visited advertisementfree blog in the world, or that secrets are simply limitless. You’ve enticed people from all around the globe to share their deepest, kindest, funniest but sometimes darkest secrets; were you prepared for people to start sharing issues of suicide, eating disorders, rape and so on with you? Before PostSecret began I had trained and volunteered as a suicide prevention hotline operator. Because of that, I think I was better prepared when heavy or dark secrets began arriving along with all the other types. I think that background, along with having many personal struggles myself, allows me to feel a sense of solidarity with others painful secrets. I think peoples’ reactions can be very personal and that can be the most powerful part of the project – that moment when you see a secret in someone else’s handwriting articulating your secret better than you could. It’s pretty powerful. How did/do you manage this kind of responsibility? Because nearly all of the secrets arrive anonymously it’s unfortunately not possible for me to respond individually. But I have been very pleased to organise several fundraisers for HopeLine and so far, the PostSecret community has raised over$1 million to fight suicide. Why did you decide to‘tour’this concept? The most gratifying part of the project for me is the PostSecret Events. At live events I get to share some of the secrets that have changed people’s lives and I can show images of secrets that were banned by the publisher. There are some video, audio secrets, and surprises too… I might even reveal one of my personal secrets! I also leave time for audience members to share their own secrets which is always the most emotional and memorable part of the evening. Transforming that safe, non-judgmental space from web to the real world seems to be where the project is leading me now. How has your life changed since the explosion in popularity of PostSecret.com? I was able to sell my previous medical research business, a few years ago, and now I get to spend 40 – 50 hours a week on secrets. My days are spent going through postcards and spending too much time on the web. I do a lot more travelling now which I really enjoy, most of the time. Do you have any advice for those aspiring to host a popular new-media format? My advice to anyone trying to make an impact on the web would be to try and find a way to give voice to the unheard. Find a new way to tell untold stories. Also, the more you monetise your site with advertisements, the less value it will have. Do you have a secret you can share with us? ow in its thirteenth year, The Josephine Ulrick and Win Schubert Photography Award is considered one of the most important annual surveys of contemporary Australian photographic practice. This highly anticipated award, with a total $30,000 in prizes and acquisitions, is a highlight of Gold Coast City Gallery’s exhibition program. This year’s guest judge is acclaimed photographer, Anne Noble, a Professor of Fine Arts (photography) at Massey University, Wellington, New Zealand. She is the Australia and New Zealand curator for the 2013 Photoquai Biennale. The Dunedin Public Art Gallery honoured her with a retrospective exhibition which toured from 2001 to 2003.

She was a recipient of an Arts Foundation Laureate Award in 2009 and has travelled to Antarctica on fellowships from Creative NZ and the US National Science Foundation. Her work has been exhibited in Australia, France, Germany, New Zealand, Spain and the United States and is held in numerous international collections.

Sarah Blinco engages the help of a wise mentor, Jennifer McDonell, in order to shed light (and life experience) on the ‘age old’ apprehensions around ageing
had to smile when I read a feature in Mindfood Magazine recently, that opened with words by Dr May Grogan who said, “Isn’t it ironic that while there are plenty of studies telling us what we need to do to live longer... we are simultaneously trying to avoid ageing and being perceived as old”. How do you feel about ageing? I suppose I haven’t thought a lot about it, I just try to enjoy each decade as if flies by. While I do miss the energy (and fast metabolism) I once had (and took for granted), I certainly wouldn’t trade the world-knowledge and life understandings I’ve gradually begun to accumulate. I do wonder though, is it possible to steer our lives towards ‘generativity’; to continue to live life to the fullest − creating, laughing, travelling, engaged no matter what our age? With this question in mind, I placed a call out to a number of channels in a bid to find an inspiring individual to share experience and insights with me. Jennifer McDonell, director of MentorOnline (mentoronline.com.au) inevitably caught my attention. She is proud to turn 60 this year, and wisely told me, “After six children, three divorces and several businesses, I am finally beginning the life I want to live”. Something about her words resonated with me, and I was definitely keen to hear more of what she was prepared to share. As the youngest of six children from a small Methodist community in Victoria, Jennifer explained at home, life as a child was basic and at times aggressive; although at other times happy and educational. Jennifer had three children under three in three years, all before she was 21 years old. By 25 she was divorced and by 30 re-married with another three children under two (premature birth then premature twins). After several longterm relationships − one violent − she reApril 2013
married again at 49. Between 2002 and 2006 she experienced several life-shattering events including serious illness, chronic fatigue, an airplane crash, her third divorce and massive financial loss. She went from literally ‘having it all’, to being ill, alone, in debt and homeless. She wryly jokes and says she’s been slow to re-partner and that her present relationship is a “work-in-progress”. With these many challenges in place, how on earth did Jennifer become an advocate for ageing fearlessly? “Simple”, she says. It’s all about mindset. “There are higher expectations around ‘not ageing’ now than ever before. However, the simplest and most enduring strategy to not ageing is to learn to ‘be happy’. This covers attitudes, beliefs, communication skills, relaxation and enjoyment”. She explains, “My own life had been very stressful, even violent and traumatic, when my

My children and grandchildren were displaying the patterns that my parents and grandparents displayed, especially the negative ones! There had to be a reason and there had to be a way to change it all. I was determined to find out. Once I completed training I was then on a mission to enlighten others to the simple truth about emotional and physical choice, and for the need to empower one’s self with constructive life and communication skills”. We’re bombarded with images and media 18
in effective communication skills, learning to express myself without causing an argument; learning how to ask for what I want is the key to not only resolving conflict but injecting passion and respect into relationships and life”. She adds she’s learned over the years,“Live from your heart; make sure you are enjoying what you are doing... Live from your head and learn skillful communication techniques that will assist you to express yourself clearly without aggression or blame. Lifestyle choices become your health outcomes, so choose to live with supportive habits, careers and
people. Have a life with many relationships and support groups. Have relationships outside all relationships. Let go of wanting to control other people... Be focused on what you need and want and leave others to manage their own lives... Embrace failure, mistakes and being told ‘no’ [career, relationships and so on], as they offer an opportunity to grow... Additionally, much can be achieved physically through appropriate use of nutritional supplements and tissue salts, exercise, stretching, technologies (such as laser and light therapies), learning to meditate, great skin-care and make-up are invaluable, and shape-wear, or ‘industrial underwear’, as [popular British stylist] Trinny calls it”. Jennifer ultimately sums up by casting an progressive eye on society. “Many people look and feel great at increasing later stages in their lives, so generally there is the ability to age well and actively if you chose to. It is fear of ageing and fear of missing out (lack of selfesteem), that causes many people to choose Botox and plastic surgeries at an increasingly young age, and yes, this is an age-old problem or common behavior pattern. It is completely missing the point to think that ‘good looks’ and ‘being attractive’ or ‘being successful’ are related to the physical body, when the ‘real key’ is being attractive (happy, relaxed, engaging and confident) within the emotional self that actually achieves happiness, great relationships and career success and the ability to age fearlessly”.
Top Tips for ageing fearlessly! Psychotherapist, Susie Tuckwell (susietuckwell.com.au), mines the latest research into the ‘fearless ageing’ mindset and offers tips to Get it on making the most of life.
#1 Ignore ‘age-ist’ stereotypes In tests to see if memory-loss is inevitable as we age, experimenters showed that two groups who do not have negative stereotypes about ageing (elderly mainland Chinese and older deaf Americans), had better memories than older hearing Americans. They had literally never heard that they should be forgetful! #2 Believe in the positives of living a long life Psychologist, Becca Levy, asked 600+ people to agree or disagree with questions such as,“I am as happy now as when I was younger” or “As you get older, you get less useful”. Twenty years later, those who viewed ageing most positively lived, on average, seven and a half years longer than those who held negative views. #3 Mindfulness is the latest buzzword When psychologist, Ellen Langer, provided incentives for nursing-home residents to pay attention to their environment, the residents with improved memory were more flexible in their thinking, more observant and – in a follow up study – only 7 per cent had died compared with 28 per cent in the no-intervention group. Langer’s lesson: Be attentive and interested in the world and people. 19
#4 Be curious, especially about your nearest and dearest Researcher, Tod Kashdan, found that curious people possess the optimal orientation to continually build a fulfilling life, especially in relationships. And relationship expert, John Gottman, says that being interested in our partner, sharing our days’ events and our feelings, is the fundamental cement for supportive long-lived relationships. #5 Build your coping strategies George Vaillant, in charge of the landmark Harvard Study of Adult Development, observes the best copers live longer and happier lives. Vaillant says copers care about other people, plan for the future, manage their emotions, find positive outlets for negative feelings and like to laugh. #6 Use time satisfyingly Work out who and what matters and spend most of your time in that space. Most people value human connections over things, yet we spend much of our time working for things, not people. #7 Everyone dies Get used to it, get energised by it. It’s long been understood animals, particularly dogs, have the ability to inspire positive well-being in humans, with much research now available to back-up such claims. Local psychologist, Nadine Hamilton, is working to change the face of the ‘pet psychology’ industry from right here in Oxenford. She tells her interesting story to Sarah Blinco. veryone who knows me appreciates I’m mad about dogs. My dog, Harry, is my baby; I stop random strangers in the street when I’m away from home to ask if I may pat their dog (mostly they grin and say it’s fine). My partner is the same, and we acknowledge that basically, dogs make us happy. Whether you’ve had a great or rubbish day, it’s nice to have a smiling being wagging its tail at you, no judgement or demands thrown forth, just love. As soon as Nadine Hamilton and I started chatting I realised she is one pretty cool chick. Nadine is managing director and principal psychologist of Positive Psych Solutions (positivepsychsolutions.com.au) in Oxenford. She’s worked in the industry for over nine years, and specialises in various areas including occupational rehabilitation, training, organisational psychology and general psychology practice. She jokes and says she’s part Australian / New Zealander / British, as she has spent a lot of time growing-up, living and working in all three regions of the world. Pets were always present in her life, and she maintains she’s always been passionate about being around and helping animals. So much so, Nadine originally considered becoming a veterinarian. “I really did want to be a vet, but eventually figured I was way too queasy to operate on animals, and I didn’t know if I could euthanize... I recall always being drawn to same area in library − the selfhelp and psychology section. I didn’t really know for a long time what I wanted to do, but eventually came across a book written by a psychologist, and went, that’s what I want to do! There was also some personal stuff behind the decision, particularly my cousin’s suicide. Initially I went in wanting to help people who are suicidal, but one of my first lecturers told me, you’ll change your mind about 20 times before you decide what to focus on. Ironically now I’m doing Doctorate of Education focusing on veterinarian well-being and the benefits of Positive Psychology. It’s weird how things go full-cycle.” Intriguingly, Nadine’s new research April 2013
FOR THE LOVE OF project also relates back to the issue of suicide. Nadine asks, “Did you know that of all the health professions, research shows veterinarians are four times more likely to commit suicide than the general population and twice as likely as any other health professional?” She explains this startling fact came to her attention during one of many visits to her local vet practice over the past few years, although the reasons aren’t so surprising: “It primarily has to do with euthanasia of animals. One vet described it to me as ‘severing that human−animal bond’. There’s also a lot of unrealistic expectations and pressure put on vets, often they don’t have anyone else to talk to, and due to their experience with euthanasia, they are more accepting of death... I’ve always had a love of the industry and animals and am passionate about helping others to look at what’s right in their lives rather than focussing on what’s wrong through positive psychology. We hope this research, and the introduction of an intervention program for vets will help with understanding all of this in the future.” 30
g o D It’s not just Nadine’s present study that sets her working alongside professionals in a career she had once seriously considered. You see, while Nadine has spent years helping other people, she and her family have consistently found solace with their pets. It’s through life’s experiences based around their cats and dogs that a number of important new projects − psychology and animal focussed − have evolved. “We actually did Pet Watch in 1997 which came about as a result of one of our cats disappearing unexpectedly. We were devastated. Three months later our second cat disappeared which was very odd and distressing. Out of this experience we noticed that many people posted ads in the paper for losing pets, while simultaneously others posted about finding the same pet.

We created Pet Watch, a non-profit group which essentially facilitated a lost and found service for animals. We got heaps of publicity − I was even likened to Ace Ventura which was funny... From there we joined forces with our vet to do pet first-aid courses. I was out walking my dog one day and found another dog that had been hit by a car. The pet first-aid courses here on the Gold Coast have since proven valuable and successful, and there are numerous lost and found services that have eventuated since Pet Watch. It’s amazing how everything ties in − my training as well as my love of animals.” Nadine goes on to explain that through these experiences, she met and brainstormed with many like-minded professionals with a psychology and animal-care background, and she noticed a gap in the market − there are few pet therapy services with a psychology pointof-view on offer in Australia. From this notion, Pawsitive Psych Solutions was born (pawsitivepsychsolutions.com.au). She explains, “Essentially what we’re focussing on is six-week programs, two-hours per week, covering issues such as ‘getting your bark back’ and ‘feeling pawsitively good’ (self-esteem and confidence), stress management and ‘dog-gone grief’ counselling. These will be group programs initially, and they will utilise two dogs at the beginning. The dogs help people to feel less anxious, and there’s lots of research now that shows owning and petting animals can have health benefits, such as helping to reduce blood pressure. Dogs in particular
are great for positivity. Coming home to a happy animal makes a difference in your day, they’re great companions and help people overcome loneliness; they’re excellent motivators for exercise... Dogs are also being used around the world to assist people who are anxious about flying, or to calm people who are scared going into a court case to give evidence... A side service we’ll also offer is helping people who aren’t confident around dogs but want to be, and also kids who aren’t confident walking to school. We’re aiming to make all kinds of animal therapy accessible for anyone interested in taking advantage of its benefits.” Pawsitive Psych Solutions even includes members of Nadine’s own family, namely her bouncy Labrador, Jenna. Although Jenna is still ‘in training’ she is responsible for updating the business Facebook page regularly, and will soon join counselling sessions to help cheer up the lives of those who walk into her ‘human’s’ place of work. Another helpful aspect of Nadine’s business model addresses the issue of grief. Many of us have experienced the loss of a pet, but hands up those (like me) who have felt self-conscious breaking down in tears thinking others would perceive me as stupid for ‘crying over a dog’? Nadine insists it’s important for anyone in this situation to know they’re not alone. She says, “Losing a pet is no different to losing a person. People talk about grief as if it’s only about people, but you can grieve over many things − losing a house in a fire, relationships ending. For many, pets are like children. They’re part of us. You’re caring for them, feeding them, 31
just as you do a child. When they die or disappear, it is a massive loss... The ‘Stages of Grief’ still apply [denial, anger, guilt, bargaining, depression, acceptance]... When we lost our last dog, my vet said, ‘you never get over it but you learn to get around it and deal with it’. Acknowledging and telling people is important. There’s a stigma around it that people don’t understand and some feel they have to suffer in silence. Through my experience in grief over a number of animals, I advocate it’s important to have little rituals... maybe a cremation, keeping photos around, planting a tree... keeping little mementos so you can remain attached to them... I want to share the message it’s ok to grieve though, and there are people who understand and care, in a personal and professional capacity.” I’m particularly impressed by Nadine’s story. She’s a true example of someone who utilises her passion, skills and training for a greater good, and additionally has identified groups within society who could benefit from not only research, but practical solutions. It’s obvious she truly loves what she does, and I believe that’s possibly why she’s so good at her job. Nadine insists she’s lucky to be in this place, and is especially chuffed when she can see a physical difference in a person because of her assistance. “It’s rewarding when you can see you’re helping someone and can see the changes, particularly when they’ve been really depressed. Often you don’t know what clients are thinking, so it’s always really nice when you see positive results and motivation returning.” April 2013

It probably won’t surprise you to discover that in our experience, many customers don’t actually enjoy the process of ‘shopping around for the best deal’ − many find it frustrating. People ‘shop’ because they don’t really have the faith in dealers

eople working in today’s dealerships, particularly at the luxury end, are often tertiary educated and understand the value of long term-vision. They are there to provide the right advice and exceptional service. Repeat business is essential, therefore relationships are important. With this in mind don’t feel intimidated or apprehensive about walking into a showroom. Give your sales consultant a chance to win you over with positive service and provision of information. The process of car purchasing does not have to become a combative encounter. Generally the sales person is only too happy to help you make the most appropriate decision. It’s important to remember too, that most people quickly forget a ‘discount’ received on a vehicle, however, will remember the years of service received from a dealer after the purchasing decision has been made. While satisfaction with the final pricing is critical, try not to make it the only consideration when
to offer truthful information. The good news however, is this can all change the next time around. Once you have dealt with a professional business for a few years in both the sales and service departments, you begin to build a rapport with the staff and trust in the service they are providing. Most customers will happily buy a second or third car from the consultant they originally dealt with provided the overall experience was positive. You cannot put a price on peace of mind, or the time saved by negating the need to ‘shop around’. Despite ‘bad press’, car dealers are usually professional, and spend hours genuinely trying to provide a great experience to customers. Bear in mind, asking for a ‘best price’ to compare to other discounted figures is tantamount to asking a dealer to tender for your business. In this instance, a dealer is unlikely to give you the ‘absolute best price’ to go shopping with, or may refuse to deal with you at all. Secondly, the act of ‘gathering quotes and doing your homework’ is incredibly time-consuming and fraught with uncertainty. To get the right deal you need to find the car and dealer you want to buy it from. Then make an offer. Don’t worry if you think it is too low – if the price cannot be achieved the dealer will come back to you with a counter price. It may take a bit of negotiating but if your consultant knows you are serious and ready to put pen to paper, you will achieve a much better result than if you simply ask for a written quote or verbal price to take shopping.

I’ve been lucky enough to discover some truly amazing spots boasting not only stunning views but sexy interiors and delectable menus. Three of my very favourites − totally free to enter, by the way − are spread across the world in London, New York and Hong Kong.
bright lights will inspire you Thanks to media images I’d fallen in love with New York’s rooftop spaces long before I ever visited the city, but 230Fifth’s heated rooftop bar / club / restaurant far surpassed my wildest expectations. In fact, this dazzling venue, spread across two extravagant levels, is what sparked my recent obsession with scoping out the best world bars at bird’s-eye level. As soon as you step foot into the rooftop garden level, you know you’ve happened across something extra special. The walkway to April 2013
the outdoor area is lined with racks of red robes which you can borrow to keep warm if it’s windy outside. The sky-scrapers of Manhattan surround the lavish open-bar area, and this place serves the very best Appletini I’ve ever tried. Head up to 230Fifth during the afternoon and ensure you’re there as the sun goes down. There is simply nothing more exhilarating than being in a location like this as the city lights-up into the evening, including the Empire State Building next door! It’s been voted as one of the city’s best rooftop experiences, and really is as good as the website implies (which you should visit to take the virtual tour). Be sure to pop downstairs to view the expansive penthouse dining and lounge area, surrounded by floor to ceiling glass panes which make the most of this glorious skyline. dining in the dark Hong Kong is brimming with cool skyhigh venues, but a fabulous recent discovery of mine was Aqua Spirit Bar, situated just off Canton Road in Kowloon. The electric ambiance is evident upon entering either two levels of this ultrastylish establishment. Smooth lounge beats emanate from the sound system, as diners and drinkers indulge inside one of Hong Kong’s best-kept secrets overlooking the breathtaking harbour. The atmospheric Aqua Spirit Bar is scarcely illuminated by interior lighting, because 360-degrees of the Hong Kong evening skyline works its magic to brighten the venue from the exterior. You’ll need a reservation to try the menu’s contemporary Japanese and Italian flavours, but you can drop by any time for a drink in the glamorous penthouse lounge. 37

H20 BROADWATER There’s a hot new gallery in town... In an effort to support emerging artists and bring more creative and artistic energy to the Southport CBD, Milada Theron and a group of her fellow artists have opened a new and exciting collective art gallery in the beautiful H2O Broadwater Building in Welch Street. The official opening took place in December with well over 60 guests attending the lively function. The art is as varied as the artists themselves, and ranges from abstract to works of super realism. Exhibiting artists are Milada Theron, Jonathan Madzinga, Del Hedger, Vicki Chambers and Vicki Ford along with Christine Starmer and William Meertens. Jonathan has worked as the artist in residence at the Gallery of Bulawayo in Zimbabwe and is currently the AIR at the Gold Coast Art School. He has exhibited and sold works all over the world. All the artists have been painting, exhibiting and selling their works for many years and boast a wealth of talent and skill.
This is a gallery with a difference in that the artists use the space as a working studio and there will usually be at least one artist painting in the gallery during opening hours. The aim is to produce works that appeal to all people at prices they can afford and to create a gallery space that is welcoming and warm. A painting rental scheme is another element that sets this gallery apart from others. Businesses are able to rent selected paintings for varying time periods. The art gallery also offers lay-by facilities and gift vouchers. The Welch Street Gallery welcomes new artists and hopes to work with other galleries to contribute to the growth of the arts on the Gold Coast. DINING with Chris Mcleay et amongst the trendy backdrop of Southport’s Ferry Road Markets is Spendelove Bar and Bistro. Spendelove has long been a local favourite and it is easy to see why, with the menu targeting a wide range of clientele. New owner/manager, Simone Munday, says her upmarket bistro offers modern Australian cuisine with something for everyone. I must say I agree. The breakfast menu has a uniquely European feel with an Australian twist, and with the likes of the Three Cheese Souffle with Tomato Chutney, flavour is set to meet head on. The lunch menu is well balanced with a mix of fresh sandwich options up to the more substantial. The Spendelove menu shows considerable thought with fresh and local produce being the star, alongside the many gluten-free options. The Spendelove Club Sandwich is my choice and it did not disappoint with the addition of avocado and cranberry, it’s a fresh take on an old favourite. I added the Grilled Haloumi as a side and thoroughly enjoyed the milky texture of the cheese, with the rocket salad adding crisp flavour to the dish. As I dine I see a range of dishes leaving the kitchen with the Hot Smoked Ocean Trout grabbing my attention. It was a shame it wasn’t for my table, but I’m glad to know I am welcome back at any time to sample some more house specialties. Spendelove recently added additional

seating which flows into the sunken foyer. A welcome inclusion is the striking wooden table that can accommodate up to twelve diners which is great for entertaining larger parties. Under the direction of Simone, Spendelove is set to open its doors for catered functions or weddings with numbers up to 200 guests. The big winner for this restaurant is its open-plan design. It is almost impossible to walk into The Ferry Road Markets without walking past Spendelove. The smell of the freshly roasted coffee beans floating out of the huge store front window, will be enough to
tempt the most discerning coffee connoisseur. Spendelove (spendelove.com.au) is open from 7am to 6pm, 7 days a week, with lunch starting from midday.

New executive chef adding flavour at RACV Royal Pines Resort lenn Bacon, the first Australian chef to be made a Fellow of the World Master Chefs Society, has been appointed Executive Chef at the RACV Royal Pines Resort on the Gold Coast. John Morris, General Manager of RACV Queensland Resorts, says some of the most distinguished chefs in the world belong to the society, a unique body that recognises the achievements of professional chefs. “We are excited to be able to attract a person of Glenn’s calibre and talent to the Gold Coast,” says Mr Morris. Glenn has worked in London and has held executive management positions throughout Australia and in Malaysia and Indonesia. Prior to joining RACV Royal Pines Resort, he spent five years at Hayman Island where his initial role was to lead the repositioning of the resort’s eight food and

ocated on the bustling outskirts of Broadbeach CBD is Saffron Indian Gourmet. The moment the large bifold doors begin to retract I know I am in for a pleasurable experience. The aroma from the kitchen is intoxicating, a mixture of sweet coconut and fresh curry leaves. Head chef, Lancy Mendonca, greets me at the door and guides me through the tastefully decorated restaurant. Lancy and his team are set to celebrate their fifth anniversary at the base of the Sierra Grand Building, and what better time to introduce a weekend special menu. Each weekend from April, Lancy will combine his passion for traditional Southern Indian cookery with freshly sourced organic produce from the local farmers markets. The twist being the weekend special menu will be strictly vegetarian. With today’s foodie trends leaning towards the more health-
conscious, the move shows real insight. Alongside the new weekend menu, Sierra Indian Gourmet will continue serving traditional fare that has made them one of the more popular Gold Coast restaurants. Dishes such as Lancy’s own Mangalorean Fried Fish or the must have Dosa (Southern Indian Pancake) are the house specialties and fit well with the soon to be introduced flat breads made from spelt flour or quinoa. Saffron Indian Gourmet’s menu has all the favourites you would expect, butter chicken, lamb madras and the likes, but it’s not until you try the Mysor Chilli beef that you know this restaurant is a cut above the rest. The restaurant boasts a separate private dining room that can accommodate up to 20 guests in luxury, although the other two dining rooms are equally appealing. Swimming sensation and kitchen king, Eamon Sullivan, is keen to encourage home cooks across the nation to give their families and friends a crunchy culinary treat this Easter by adding a handful of deliciously creamy home-grown macadamias to dishes.
Macadamia Crusted Prawns
with Aioli
(SERVES4)
INGREDIENTS • • • • • • • • • • • • •
20 prawns deveined and peeled 1 cup flour Good pinch of salt and pepper Good pinch cayenne pepper 2 eggs 1 cup macadamias 1 cup panko breadcrumbs 1 litre macadamia oil for deep frying 1 clove garlic 1 egg yolk 1 teaspoon Dijon mustard 200-300mls grape seed oil lemon juice to taste

For the prawns, combine flour, salt, pepper and cayenne pepper in a bowl. Crack eggs into a separate bowl and lightly whisk with a fork. Blitz the macadamias in a blender and combine with the panko breadcrumbs. To crumb the prawns, dust in the spiced flour, dip in the egg yolk then roll in the macadamia and breadcrumb mix. Heat oil to approximately 180˚C. To test, drop a piece of bread into the oil – it should go golden brown in about 10 seconds. Once the oil has reached the required temperature, drop about 10 prawns in and cook until they are golden brown. Remove and drain on paper towel. Repeat with remaining prawns. For the aioli, crush garlic and place in a bowl. Add a pinch of salt and pepper, the egg yolk and mustard and whisk until well combined. Add a few drops of oil, whisking constantly until the mixture starts to thicken. Slowly pour in the remaining oil in a thin, steady stream, whisking constantly, until combined and the texture is thick and creamy. Add lemon juice in 1 tablespoon at a time until the desired zing is reached. Serve the macadamia crusted prawns with the aioli as a dipping sauce and a green salad on the side.

Self Saucing Puddings
(serves 6)
INGREDIENTS • 1 1/2 cups self raising flour • 3/4 cup brown sugar • 3/4 cup milk • 1/2 cup raw macadamias, chopped • 1/2 cup white chocolate buttons • 50g unsalted butter, melted • 1 1/2 cup boiling water • 90g butter, chopped METHOD Preheat fan forced oven to 180˚C. Combine self raising flour, brown sugar, milk, macadamias, white chocolate and butter in a bowl and mix together. Then pour into 6 lightly greased 1 cup ramekin dishes. Combine boiling water, brown sugar and chopped butter in a jug and whisk until smooth. Gently pour over the batter in the ramekin dishes and bake for 35-40 minutes or until puddings are just set. Serve with vanilla ice cream.

INGREDIENTS • 1/2 cup macadamias • Zest of one lemon • 1/2 cup fresh breadcrumbs • 1/2 bunch mint • 4 racks of lamb, French trimmed • 2 tablespoons Dijon mustard METHOD Preheat oven to 190 C. Blend macadamias, lemon zest, breadcrumbs and mint in a blender until fine and moist. Seal the lamb racks quickly on an oiled frying pan, spread the mustard over the top of the racks, and coat with the macadamia crumb mixture. Place in the oven for 15- 20 minutes or until they are cooked to your liking. Remove and allow to rest in a warm place for 5 minutes. Serve with green beans and roast potatoes.

Following the successful launch of her beautiful book, A Grandmother’s Wisdom: Lessons learnt at my Nan’s knee, everyone’s favourite intrepid Aussie traveller, Catriona Rowntree, is on the Gold Coast for a special appearance
I think I’d love to be Catriona. Not only has she travelled the world continuously for the past 18 years (what a dream), but she’s managed a magic media career despite doubters, haters and those suffering tall-poppy syndrome who have tried to step in her way.She attributes much of her positivity and determination to what her nan taught her, and believes it’s the power of just one person that can make a difference on our individual paths to achievement. Much more than just a Getaway reporter (although for me, that would have been enough), Catriona reinforced to me during our catch-up there are so many things in life to be grateful for, but be mindful to prioritise what’s really important in the end − a key message of A Grandmother’s Wisdom, which I found to be an interesting, charming and insightful read. SB: Really lovely idea for a book; obviously this is dedicated to your own nan with whom you evidently shared a very special bond, but what sentiments do you hope to inspire in readers of this new release? CR: I’m thrilled I’ve been able to honour my nan, and for my family’s sake, that we’ve been able to create this keep-sake, even if just for my sons and nieces. I hope there’s something in this book that speaks to all people. It doesn’t just have to be a grand-parent relationship, but best friends, parents, siblings. It’s about how you can do anything with faith shown to you from just one person. It’s about how empowering it can be when you have someone in your corner who believes you can do anything. SB: Do you think we take the importance of family for granted now (in our busy contemporary lives), or is that just a negative stereotype? CR: I had someone ask me to do a speech once about how times have changed but I couldn’t disagree more. I think it gets down to each and every individual and family. What I see happening in my family, is my mother-inlaw has the most beautiful relationship with my children. I dare not crucify a whole new generation, I believe it’s very personal. If you want a beautiful relationship it can be achieved, and it comes down to how much time and patience you want to put into a relationship. SB: What did your nan think of your move into media? CR: She knew I was a chatterbox as a child and encouraged me to get into speech and drama. She turned a blind-eye when I spent April 2013
most of my school afternoons in detention for talking. The natural progression was that one day I’d be paid for talking! It’s a journey we enjoyed taking together. The only thing she didn’t like was when I risked my life for stories. SB: Which of her positive traits do you think have rubbed off on you? CR: I hope it’s being patient with other people, and listening to others’ stories − not interrupting or one-upping them. My nan and I both love other people’s company and learning their stories. I could see that anyone who came in my grandmother’s midst walked away illuminated. She would focus on them, never judge. Everyone felt they were a better person for being in her company. A mantra I try to employ on a daily basis, when frustrated or if you feel like yelling, choose kindness. SB: What have been some of your biggest learning experiences in becoming a mum? CR: You can never cuddle your baby too much. Everyone has no idea what they’re doing with their first child! I’ve also learned that babies love routine. And, when on a plane they need to suck on something on descent and ascent! Finally, a mothers instinct is always right. SB: What key message would you most like to spread throughout this book-launch campaign? CR: From my travels I’ve met some extraordinary people across all levels of life and I’ve seen first-hand it doesn’t matter how many trinkets you’re able to accumulate, if you’re going home alone or feeling lonely in yourself, none of it means anything. What’s important is feeling that you’re loved and you’re contributing to the relationships around you.
