Welcome to the Get it travel and holiday edition. As I write this to you now, I’m in Far North Queensland at Trinity Beach, outside of Cairns, sitting by the sand. Already today I’ve been for a run, walked down to get a cappuccino, felt the sand squish through my toes, let the cool ocean water wash over me, had a dip in the pool and took a drive up to Thala Beach Lodge, near Port Douglas, where I’ve had a wonderful brunch. That was all before lunch time! I’m active by nature, so when I’m on holidays I’m no different. This is how I chillax. #feelingveryrelaxed (or was that the glass of vino I just had?). How do you relax when you’re on holidays? Do you go on adventures to climb mountains like Everest, check out a new country every time, or do you prefer to stay local and sit on one of our amazing beaches with a good book? I like to soak up and take in as much as I can when I’m in a new place; the people, location, food, activities and things to see, so I pack in as much as I can in the timeframe I’ve got. Whatever your idea of the ideal holiday is, remember this: “Travel is the only thing you can buy that makes your life richer”. I love this quote. Wherever you go, whatever you do, however you relax while holidaying, just make sure you take them regularly. Why not start this Christmas? If you haven’t got a break planned in the foreseeable future – Christmas or the new year - that’s your job right now. Start researching a holiday. t reads like a Celebrity “who’s who” list - Ellen DeGeneres, Neil Patrick Harris, Cynthia Nixon, Elton John, Melissa Etheridge, Michael Kors, and Rosie O’Donnell. And it is a celebrity who’s who list. It also happens to be some of the celebrities who are married to their same sex partner. And with the recent announcement of Australia’s Anthony Callea and Tim Campbell’s nuptials Rebekah Lamb LLB (in New Zealand), marriage equality Cassandra Pullos Lawyers is once again at the forefront of social commentary. With more than 60% of Australians supporting marriage equality in 2012 (according to a Galaxy poll), the push for politicians being allowed a conscience vote on proposed reforms to the Federal Marriage Act are being renewed and reinforced by advocates for marriage equality. Amongst the high profile celebrities, such as Hugh Jackman and Guy Pearce, is US President Barack Obama, stating that “No one’s equality should ever be denied… we will stand up for our gay and lesbian fellow citizens”. Marriage equality is an important human rights issue for all Australians and despite having well publicised and prominent support worldwide, it is still not a right available to Australians in their own country. The Australian Human Rights Commission considers that the fundamental human rights principle of equality means that civil marriage should be available, without discrimination, to all couples, regardless of sex, sexual orientation or gender identity. Whilst there has been amendments to various federal and state legislation to ensure same sex couples receive the same treatment or recognition in a number of forums, including in succession law, family law, entitlement to Government and spousal work related benefits, the opportunity to marry, a fundamental human right, remains elusive to the LGBTI community. As a result of this discrimination in regards to marriage, people within the LGBTI community are often ill-informed or unaware of their legal rights and entitlements. highnotes Australia’s soprano sweetheart Marina Prior will grace the Gold Coast for the annual Broadbeach Christmas Carols very Christmas after Australian soprano and actress Marina Prior has carolled her way from city to city, her family enjoys their own carol off. At home with friends and performers after she has clocked off for the year, the family have a Christmas carol concert on Christmas Day night. “It’s become a real family tradition,” Marina says. “Throughout the year the children search for the ultimate Christmas song to perform. They even practice. Everyone gets up and sings or some people will tell jokes.” Renowned for thrilling audiences across the country and highly regarded as the leading lady of the theatre stage, Marina has performed in countless productions in Australia throughout her career, including Les Misérables, Phantom of the Opera, West Side Story, The Secret Garden and Mary Poppins. She is also a regular at the televised Melbourne’s Carols by Candlelight and Sydney’s Carols in the Domain. But there’s one event that gets her in the festive mood and that’s hitting the high notes at the Broadbeach Christmas Carols, at Kurrawa Park, which will be held on Saturday, December 13. Having spent most of her life in Melbourne, this is the time of year Marina loves. “I always get excited about the festive season. I love coming to the Coast,” she says. “I don’t get here as often as I’d like, so the carols are a good excuse. “The Gold Coast has the first carols of season for me and it makes me stop and December 2014

I really enjoy the family vibe. “I’ll be singing Mary’s Boy Child, which is always a hit – and O Come All Ye Faithful with Denis Walter, plus music from Les Misérables and Phantom of the Opera.” “I always look forward to the Broadbeach Christmas Carols, it’s a wonderful event. I’m excited about getting up to the warmth and singing for the Gold Coast.” Not that she will have much time here, only a couple of days. But Marina and her husband plan to make the most of it. “I want to walk on beach, go to restaurants, swim and relax, and just be on holiday,” Marina says. “It will be nice to have a break. Even when you’re working you feel like you’re on holidays on the Coast.” 8

Broadbeach will be the centre of attention with the annual Christmas carols, at Kurrawa Park, on Saturday, December 13. Featuring Marina Prior and Denis Walter, who is synonymous with the festive season and featured in Melbourne’s Carols by Candlelight and Sydney’s Carols in the Domain each year, the premier line-up of free entertainment starts at 3pm with kids activities and then the carols at 5.30pm. The Boogie Woogies will also light up the stage, there will be a special appearance by Santa and his elves, and the night will finish with a spectacular fireworks display. Radio station 92.5 GoldFM will broadcast the carols live from 7pm. Bring your family, a picnic rug and Christmas cheer, and join in the festive fun. The 2014 Broadbeach Christmas Carols supports the Currumbin Wildlife Hospital Foundation, Gold Coast Community Fund and Give Me 5 For Kids.

wenty-year-old artist Michael MotteramSmith has creativity running through his veins and knew from a very young age he would only ever want to be an artist. His designs and artworks have been showcased at numerous Gold Coast events and exhibitions including Miami Marketta, the Design Corrupted exhibition, Gold Coast Show and Showtime productions. The spray-can artist from Hope Island has big plans and is in the midst of building an empire and starting a clothing line before he takes off around the world. How long has art been in your life? As long as I can remember! I started out drawing comic books and funny illustrations as a kid, then slowly moved into more detailed pictures. I’m self-taught through hours and hours of drawing. I try to do something creative every day. What was your first memory? Drawing cartoons as a kid. My maths books were full of cartoon characters instead of numbers! As my drawings became more detailed, I had the thought of going into tattoo art, but after I picked up my first spray can I was hooked. It’s a completely different art effect – there was no stopping me after that. When did you know it was going to be your career? Mum said if you do what you love you will never feel like you are working, so I enrolled with CATC Graphic Arts School. This was the beginning and fed my hunger to be an artist. My background in graphic arts has been invaluable December 2014

and I soon realised I could make a living out of doing something I was really passionate about. What is your medium and what sort of art do you create? I create all sorts of art, from detailed portraits to huge wall murals and graffiti art, depending on how I feel. For the really detailed art, I use finetipped pens or pencils. But for my wall murals and graffiti art I use spray cans, acrylics and airbrushing. Where do you work from? Currently I have morphed our home garage into a make-shift studio. I have paintings hanging from wall to wall and I use our driveway as my platform for large canvases and spray paintings. What does a typical day look like for you? Fortunately I’m a bit of a night owl and that suits this type of work. If I am painting for a company with a large factory, then that generally requires me to be there after hours. Sometimes I’m up painting until 1 or 2am, which means I

generally sleep in.Then I check the emails and do some admin work, but I always take time to do some sketching – ALWAYS. What is the ultimate outcome you could wish for with your art? To travel the world with my art and inspire others along the way. I hope one day to open my own art gallery. What’s next for you? I’m looking at getting into scenic art; building props and painting them for movie sets. I’d like to head to Melbourne and check out the art scene, but at the same time, I want to build my business here on the Gold Coast. I’m also designing my own clothing range Shmick Supply Co and travel is definitely on the cards. I think travelling will help me grow and broaden my diversity. Family holidays are what memories are made of and it’s never too late to start the tradition – even if you have adult children ith so many demands on our time, unplugging and getting away from work, school and our everyday routines is so important. Larne Wellington Research suggests Australians are abandoning holidays in favour of staying at work. This is more likely to be the case for young families, as it’s often more stressful to go away than to stay at home. But Australian studies have also found children and teenagers want more family time above anything else. With parents juggling home, work and extra-curricular activities, time together is precious. Positive Families director and principal psychologist Larne Wellington says that one of the top regrets parents have if their marriage ends or they become disconnected from their children is not making time for their family. “That last work email we sent, what we posted on Facebook or that new purchase won’t be the things we remember at the end of our life. We have to prioritise what matters most because living a life that December 2014

matters doesn’t happen by accident,” Larne says. Technology can dominate our attention more than the people who matter the most and she says we need to take a break and make time for family bonding. “Relationships can be difficult, but they are what matter most and holidays are important for family relationships,” Larne says. “For separated parents who aren’t the primary carer, holidays are often the only opportunity to spend an extensive period of time with their child. It’s these experiences that help them stay connected and create memories together. “I frequently see parents who are overworked, exhausted and who don’t have time to spend with their children. It’s work at the expense of family relationships. “It’s important to show our kids the meaning of recharging and sharing experiences together. It’s also good for our physical and mental health too.” The benefits of taking a family holiday can be of immense value to all family members, whether they are young or adults who have flown the coup. “It’s become more of a trend than in previous generations for adult children to go 18

on holidays with their parents or extended family, and if their adult children are happy to go, then why not? It’s a great way to spend time together and as the kids are adults they can also do their own thing,” she says. “Holidays create wonderful memories and family traditions. Some studies have shown that parents who are very deliberate in their planning — that is, thinking ahead carefully about the kinds of family practices they want to have — are more likely to have well-adjusted kids. By starting the tradition of family holidays early, it creates lifelong habits.” Studies have also found families who share in the preparations of a holiday are more likely to continue the tradition. “Parents should look at the year ahead and intentionally schedule in holiday time. If we don’t schedule it into our busy lives it’s less likely to happen. Kids of all ages can help plan and research holiday destinations. The key is planning,” Larne says.

We know our kids move less which has contributed to higher rates of obesity, depression and behavioural problems. “Holidays give children a feeling of belonging and a sense of identity, which boosts their emotional wellbeing.” There’s never been a better time to book a holiday. “Even though workload, lack of resources, scheduling conflicts or lack of funds can impact on our ability to take time off, parents need to make their health and their family’s health a priority,” she says. “So plan a few short breaks throughout the year and if possible take one longer holiday.”

Do we need to detox?

In the western world we think of having a “detox” as very new phenomena but this is not the case. Ancient cultures such as the Chinese and Indian (Ayuvedic medicine) have been using these principles to heal many ailments for centuries. When consulting one of these more traditionally trained practitioners they look for symptoms indicating whether the cleansing organs of the body are functioning adequately. These cleansing organs are the intestines, liver, kidneys, lymphatic system and the skin. If these organs are not working efficiently the day-to-day acidic metabolic waste products are left in our cells, joints, lymphatics and blood stream. normally perform these cleaning functions too. One of the best tools to assess whether your cells need a clean is with a live blood analysis performed by a naturopath or doctor. This will assess the functionality and nutritional status of the blood cells, the inflammation level in the blood stream and review oxidative stress markers. If these levels are outside the healthy range then a detox would dramatically help the functioning of the entire body. A detox program involves reducing the toxic burden of bad organisms in the gut. Gives the liver and kidney much-needed nutrients and antioxidants to perform its filtering function more efficiently and enhances the flow of the blood and lymphatic system. The best results are achieved when clean life style options are also undertaken. Dietary changes include increasing fruit and vegetables, especially the green ones. Incorporating fresh juices and restricting the intake of grains. The body needs lean protein and fish and vegetarian options are much less acidic. Increasing gentle exercise is often recommended. These programs often last between two and eight weeks depending on the results desired and when followed properly can result in weight loss, clean skin and increased mental and physical energy. How to survive Christmas

without looking like Santa There are two different and useful strategies to surviving the holidays without putting on the standard 2.5-3.5kg. One is how you approach the holidays as a whole, the other is surviving the inevitable binge days that occur his time of the year is especially important to make sure you don’t overeat carbs. It is very easy to do, so my number one recommendation is to actually count the grams of carbohydrate you consume in any one day. While the total amount of carbs you eat in a day will matter, what is also important is the quality of the carbs you eat. Carbs that hit your system quickly with a big dose of blood sugar will cause the storage-hormone insulin to come out in force and will help you become a fat-storing machine! Some of the biggest offenders are sugary treats, added sugar, processed foods, wheat, jasmine rice, corn, potato, pastries, fruit juice, chips, jam, dried fruit, cake and most breakfast cereals. So the question is then, how many carbs should you eat and if you can’t have WeetBix for breakfast... what can you eat? The answer to how many carbs isn’t an easy one. It is different for everyone based on your body type, genetics, activity level and your past years of consumption. Generally the more overweight you are and the more you carry around your mid-section the less you should consume to get back to health. If you are highly active, not overweight and have good muscle mass it can be as high as 150g a day. For those who really need to lose weight it can be as low as 50g a day, with some medical professionals suggesting even lower amounts. If you have a medical condition like diabetes, lowering your carbs might be the best thing for you, but any drastic change in your diet needs to be in consultation with a medical professional. If you are going to eat really low carb, there are two things you need to do. Eat lots of fibre, things like fibrous vegetables December 2014

(asparagus, broccoli, lettuce, rocket and spinach) and eat fat. I know we have all been conditioned to fear fat, but the truth is fat is essential to our life and starving yourself of it is bad for your health. The other side of the coin... life is too short to miss out on some holiday fun! So here are the tip to have a blow out and not stack on a bunch of weight. Don’t feel guilty: Feeling guilty for eating “bad” foods only leads to poor emotions that lead you to continue to eat “sometimes foods” often. If you are going to have some food you know isn’t good for you, enjoy it, then get back to heating well. Prepare your body: The best way to make sure you don’t stack on every gram of what you eat is to become more insulin sensitive in the weeks leading up to the event. Reduce your carbs, do some exercise and eat lots of veg. Start your day off well: The best thing you can do for breakfast is have some eggs with ham and veggies. It will give your body a great hit of protein to start the day and make sure you don’t store fat all day long. Use citrus juice throughout the day: Citrus juice (lemon and water) dampens your body’s response to carbs and lowers your insulin response. Green tea before your meal: Green 30

tea will help rev up your metabolism before you eat and get you burning more of what you consume rather than storing it. Drink lots of water: A hydrated body will always work better and if you are going to have a few champagnes it will improve your recovery. More exercise, especially the next day: The day after it is important that you get up and do some exercise, no matter how bad you feel. Not only will the exercise help you feel better, you will kick in your fat-burning hormones and start working on whatever damage you have done. Shame can been a constant companion for women with Polycystic Ovary Syndrome (PCOS). It can cling like a cloud of toxic miasma, clogging emotions and stopping the heart from letting anyone close as Danielle Mortimer knows too well olycystic Ovary Syndrome (PCOS) is an insidious illness that affects one in 20 Australian women of reproductive age. The symptoms of weight gain, infertility, excess hair growth and skin tags assault a woman’s sense of self-worth, made even worse by the lack of conversations around the impact of it. For many, the journey of shame starts with a diagnosis and grows over time as the symptoms exert themselves. Danielle Mortimer knows this shame. It has haunted her since she was 16 – feeling less than a woman because a baby is not an option for her and the hair on her face makes her feel manly. Now in her late 30s, she is only just beginning to peek out from behind the mask she constructed to start healing. She is speaking her truth to anyone who will listen and wants people to show more compassion for those who battle the chronic illness. Her healing began when she stopped hiding and started living. Danielle remembers well when the shame gripped her life. “I was in year 11 and went to the doctors because of painful and irregular periods,” she says. “After a battery of tests, over a six-month period, the results came back that I had PCOS. At the time, a diagnosis was not easy to get and there was not a lot of support. “Sixteen is a formative time for girls – exploring boyfriends and bodies, and the swirl of emotions that go with this. “All of a sudden I’m told I’ll never have December 2014

children, will probably grow facial hair and will battle with my weight for the rest of my life.” Danielle’s sense of who she was as a women was thrown into a spin. “The diagnosis made me feel like a fake; less of a female,” she says. “I was a studious, quiet person; not overly confident about myself. The PCOS diagnosis kicked me over the top – it just confirmed my perception of myself as not being worthy or attractive.” Danielle shut down and turned her emotions off to everyone. “I shut off the part of me that wanted children and relationships. I thought if I convinced myself I didn’t really want a baby or a partner, it would be less painful,” she says. Life became a roller coaster of losing weight, putting it back on, hiding facial hair growth and stifling feelings, and never sharing with anyone. About four years ago, this all changed. Danielle won a ticket to attend an emotional healing bootcamp. “As much as I did not want to go, because that meant exposing myself, I was in that much pain I knew something had to change. So I went. I was willing to do anything to start healing,” Danielle says. “I started to believe there was a different way to live. So much of my life had been about hiding and shame, and being petrified of people seeing me. I was ashamed of the effects of PCOS.” What Danielle has come to realise over the past four years is that hiding from her emotions was her way of dealing with the pain. “I should have done more to search for 32

answers but I just took everything I was told at face value. I know I needed to take responsibility for myself,” she says. Danielle says the bootcamp she went to focused on being a woman. “It was perfect for me. I found myself in a room of women who openly and joyously shared their emotions. “I had a choice to jump in or run. I chose to jump in. Since then I have attended many more bootcamps. Healing is a process; I have layers I am stripping down and it takes time. “Some days are great, while others I go back to my old ways…but I have learnt not to be so hard on myself.” Danielle says it is OK to be sad, angry and scared about PCOS. “I know now it does not define me,”she says. To help with healing Danielle also uses meditation. “It helps me touch on how I am feeling. I have started to talk to people about how I feel and about how the symptoms of PCOS affects me. Not talking about it only made the shame deeper; made it grow.” Another aspect of Danielle’s healing journey is publically talking about PCOS. Over the past 12 months she has created a website focusing on two of the main symptoms – hair growth and weight - she also blogs, has a Facebook page and shares her story with whoever wants to hear it. “Twelve months ago I would rather have jumped off a cliff than talk about it. Portugal: worth every second It’s hard to understand why so many Australians have been to Italy, Spain and France multiple times, yet have never gone one step further to investigate all the attractions that Portugal has to offer. We took the plunge this year and were so glad we did

he capital Lisbon has a definite “old Europe” charm with a history dating back to the seventh century BC. In the south there’s the Algarve region with its Mediterranean and Atlantic beaches, and the north has the unique city of Porto and the Douro Valley to explore. Then there are mountain villages, medieval castles and churches, and wonderful pousadas or inns to stay in. Perhaps most of all, there’s a food and wine culture that Australians can definitely relate to. And, dare we mention it, excellent shopping for footwear, leather, ceramics and trendy new designer fashions.

Lisbon

The logical starting point is Lisbon where you’ll find so many attractions that deciding how many days to stay will be a challenge.Three days minimum will allow you to soak up a bit of the city’s vibe, including historic churches, the splendidly restored St. George Castle, excellent museums and great walking tours. TIP: Forget your heels, runners are a must with the cobblestone streets. The funky little trams will get you around and the No.28 is a tourist must as it winds through the narrow streets and up the hills. Traditional Portuguese food such as bacalhau (cod fish), hearty meat dishes and healthy salads laced with arguably the world’s December 2014

Coimbra

From Lisbon, you can take bus or train (but a rental car is better and the highways are easy to drive) north to Coimbra. This is a university city with a long history dating back to Roman times and then to the Moors, who ruled the area until the 11th century. After that, Coimbra was the Portuguese capital for over a hundred years. One of the finest museums you’ll find anywhere is the Museu Nacional Machado de Castro, next to the university overlooking the city. There are also the medieval monasteries of Santa Clara and Santa Cruz, both with impressive stories to tell. At night the old town comes alive with tiny bars and restaurants befitting a university crowd and, if you’re lucky, you’ll find yourself in a small cafe where students dressed in traditional black cloaks perform fado, a unique song-form expressive of the Portuguese spirit. You’ll find yourself getting carried away with the emotion of it all and unable to resist that extra nightcap!

Porto

From Coimbra the road to the north brings 34

you to Porto, famous for its port wine industry and a must-see destination on any itinerary. The city stands on both sides of the Douro River, near the mouth, and is the headquarters of wellknown brands such as Sandemans, Porto Cruz, Croft, Dow and Taylor’s. All have showrooms and continual tastings for those able to stay awake (and sober). No need for a car here.

Douro Valley

Porto is also the jumping-off point for the Douro Valley with its spectacular terraced vineyards plunging down to the river and local inns and hotels ready to welcome Englishspeaking travellers. The regional cuisine uses fresh ingredients and represents some of Portugal’s finest. Much more could be written about this destination, but a little internet research will have you licking lips in anticipation. There are various ways to experience the Douro region; from tours (advisable if wine tasting), by car or river cruise. It’s no wonder that Portugal is enjoying renewed interest, particularly by Australians who love “lifestyle travel”. Sunburn and its effect on the skin e’ve all done it, stayed out in the sun just a bit too long, didn’t bother to reapply sun screen, and as a result suffered the burning consequences later. We know it’s wrong, but do we really consider the irreversible and catastrophic damage that has been done to our skin? International Dermal Institute education manager Emma Hobson answers the most common questions about sunburn and the effects it has on our skin. Why do we burn? A burn is the skin’s response to extreme UV exposure and indicates severe damage. In as little as 10 minutes of intense exposure the skin sets in motion a system of defence against this enemy. The first indication of damage is the initial visible redness. This is the body’s inflammatory response in situations requiring repair and is a result of dilating blood vessels. Inflammation may also lead to swelling and sensitivity of nerve endings, hence why it’s so painful to touch. The skin then starts to lose moisture and a feeling of dehydration and tightness sets in. Slowly skin cells start to thicken in order to provide protection and melanin pigment will be produced (tanning) all in an attempt to stop the UV from penetrating through to the deeper layers and damaging our precious DNA within our cells. The body copes with minimal amounts

These result in skin discolouration, loose skin, age spots, wrinkles, thickened skin and, of course, skin cancer. Why does the skin peel? Peeling after sunburn is your body’s way of getting rid of the damaged cells that are at risk of “losing control” and becoming cancerous. Due to this danger, the body kills all damaged cells with internal-repair mechanisms. This mass death of cells results in whole layers of damaged skin peeling off, only to be replaced by new cells underneath those layers. I have a sunburn, what should I do now? Drink plenty of water as you may be dehydrated. If the skin is severely blistered then seek help from a medical practitioner. Otherwise it is important to take down the inflammation and try to reduce damage to

the deeper layers of your skin. Take a very cool bath (no products added) and then blot skin dry. Avoid greasy creams as they prevent the skin from cooling and will make the situation worse. Rather apply a soothing after-sun gel generously to red areas and then stay out of the sun and the heat. Look for ingredients such as clove, liquorice, lavender, cucumber and yucca to reduce irritation, pain and redness. Also look out for an incredible ingredient called Japanese alder to accelerate the repair of UV-induced DNA damage. Couple this with ingredients such as algae and hyaluronic acid to rehydrate and you should be well on your way to a calmer skin. Avoid further sun exposure as your skin is still trying to heal. The skin is a great record keeper and even with a good after-sun product, irreparable damage is likely to have occurred in the form of future premature ageing. Think twice next time you decide to go unprotected because your immune system is listening.

So I would love to see the ladies elongating their dress hemlines and avoiding bandage dresses altogether. Jay: What is the number one thing men shouldn’t leave home without when getting dressed for the Magic Millions? A lovely, clean and polished shoe and nice socks. Men forget about their shoes, but they need a decent shoe and not a chunky sneakerlooking one either. It needs to be refined. No visible white sports socks. What’s one thing women shouldn’t leave at home without? Your headpiece should be your ticket for entry to fashions on the field. Without a hat or any headpiece your race wear is incomplete.

Jay: What is it about this event you enjoy being part of? Apart from the atmosphere and the excitement, I love the changes we’ve seen in the fashion in the last few years. The women are sticking to the protocol and expected dress codes while also being creative - and they look fantastic. I’ve been judging at the Turf Club for 12 years and it’s great to see the young crowd entering the fashions on the field and getting it right. Elizabeth: What is the number fashion tip you can give all race goers? Wear sunscreen, hydrate and have fun with your outfit! A cut above: Restaurant is a true icon dropped by Cav’s, as it is commonly known, to chat with owner Richard Cavill and the team, and also sample some of the world-class cuts of beef I had such fond memories of as a frequent diner in my youth. As I walked through the front doors I was greeted and given a detailed explanation of the menu and a glimpse of those prized cuts of aged beef waiting to be devoured. The choice cuts are available in full-size portions of 200g plus, or for the smaller appetite in half portions. The chilled display cabinet at the front of the restaurant holds the selection of quality meats so you may choose your own, or alternatively order from your table. I enjoy choosing my own and watching it hit the flaming char grill. I look for marbling in the steak and a nice strip of delicious fat right through the middle. The menu is versatile and offers great options not limited to just beef. My partner ordered the chicken fettuccine with crunchy bacon and parmesan cream sauce ($22.90), while I opted for my favourite cut of meat; the export rib fillet served with handmade coleslaw, roast Idaho potato and bacon sauce ($31.50). We added on the obligatory house fries topped with house seasoning ($4.90). When our meals arrived a short time later, first impressions were promising. The portion sizes were generous and the aromas emanating from both plates were fantastic. From first bite to last, my steak was cooked a perfect medium rare; a credit to the chef. No wonder such a large number of people have been through Cav’s doors. It is the perfectly cooked meals that have made this restaurant a true icon of the Gold Coast. December 2014

Since opening its doors in 1984, Cav’s Steakhouse in Labrador has satisfied the appetites of more than two million steak lovers. Many Gold Coast residents grew up passing the life-sized cow mannequins grazing peacefully at the restaurant’s entrance I asked to try some of my partner’s meal and was pleasantly rewarded by well-cooked pasta, with the parmesan cream not overtaking the subtle bacon or chicken flavour. While we continued dining I perused the rest of Cav’s menu and was pleased to see more options than I would expect of a steakhouse. There is an array of seafood items available, from ovenbaked Tasmanian salmon ($28.90) to 60-second flash fried calamari ($23.95), and the Daily Fresh Catch ($29.50). Cav’s Steakhouse signature dishes include steak Dianne served with creamy mash, sautéed vegetables and onion rings ($34.50), the Yahoo BBQ Ribs served with coleslaw, Idaho potato and sour cream ($33.50) and the Steak Caribbean, which includes barbecue prawns in a light garlic cream sauce ($36.90). Kids are well catered for at Cav’s with not only a designated menu that includes an ice cream dessert, but also a self-contained Kid’s Corner consisting of a jungle gym, arcade games and a bright yellow slippery slide. It was Richard’s wish for parents to enjoy 46

their meals while the kids enjoyed their experience as well. Food options for children include ribs and chips, steak and chips, chicken and chips, or fish and chips (all $12.90). The dining room in Cav’s is expansive and can seat 280 guests comfortably. The restaurant can be reconfigured to accommodate functions or meetings with catering requirements. The Spanish-styled décor is comfortable and timeless and the service is personalised. Judging by how the staff knew several people by name, shows the restaurant attracts many repeat customers. Next to the restaurant is Cav’s very own butchery. Since 2001, customers have been able to purchase the produce from the restaurant directly. It was so popular that in 2004 a new facility opened next door to accommodate demand. Cav’s Steakhouse is open seven days a week with lunch service beginning from noon. This is one rot that winemakers actively desire as it shrivels the grapes, intensifying the flavours and concentrating the sugars for a superb sweet wine. Great examples of noble-rot stickies are Sauternes from Bordeaux, Tokaji Aszu from Hungary and Semillon from NSW - the latter of which are very similar to the semillons from Sauternes but without the hefty price tag. n Late harvest The grapes of these wines are left to hang on the vines past the usual harvesting period, allowing them to become sweeter and more intense in flavour, resulting in a wine that is also sweeter and richer. n Icewine Icewine, or eiswein, is made from grapes that have frozen while still on the vine and

are harvested and pressed in that frozen state. As with noble rot, this intensifies the flavours and sugars. Characterised by honeysuckle, orange blossoms and honey, they are full of floral and fruity flavours. n Sweet sparkling Sweet sparkling wines are perfect for those unsure of stickies, as the bubbles and higher acidity make them taste less sweet

than they are. Moscato dâ&#x20AC;&#x2122;Asti is probably the most renowned sweet sparkling - light and only slightly fizzy, it has the added bonus of being low in alcohol and therefore great for sipping away on hot, sunny days. PRAWN NOODLE SALAD Serves 4

INGREDIENTS Salad • 125g vermicelli rice noodles • 400g cooked prawns, peeled and deveined • 1 cucumber, julienned • 1 carrot, julienned or coarsely grated • 1 red capsicum, sliced • 2 handfuls bean shoots • 4 spring onions, thinly sliced • 1 handful mint leaves, chopped • 1 handful coriander leaves, chopped • 1 long red chilli, deseeded, finely chopped (optional) Dressing • 6 tablespoons lime juice • 2 tablespoons soy sauce • 2 tablespoons fish sauce • 2 tablespoons sesame oil • 2 garlic cloves crushed • 1 long red chilli, deseeded, finely chopped (optional) • ½ tablespoon honey (optional) METHOD: Place noodles in a bowl and cover with boiling water. Allow to soften for 3-5 minutes, then drain and rinse with cold water. Drain again thoroughly. Combine prawns, cucumber, carrot, capsicum, bean shoots, spring onion, mint and coriander with noodles in a large salad bowl and gently toss to combine. To make dressing, shake ingredients in a jar. Taste and adjust to your liking. Pour over salad and toss together. Sprinkle with chilli. HANDY TIP: Wrap any leftover salad and prawns in rice paper rolls for the following day. December 2014

INGREDIENTS • 4 handfuls mixed lettuce • 1 avocado, cut into cubes • 4 nectarines, cut into wedges • ½ red onion, finely sliced • 600g cooked chicken, chopped • 1 handful basil, chopped Dressing • 2 tablespoons white balsamic vinegar • 2 tablespoons orange juice • 4 tablespoons olive oil • 1 tablespoon honey • ½ tablespoon wholegrain mustard METHOD Arrange lettuce, avocado, nectarine wedges and red onion on a salad platter or individual plates. Top with chicken. To make dressing, shake ingredients in a jar until combined. Taste and adjust to your liking. Pour over salad and gently toss together. Sprinkle with basil and serve.

RASPBERRY CHOC TINY TARTS Serves 4 INGREDIENTS Tart base • 125g chocolate biscuits, for example Chocolate Ripple • 50g butter melted • 85g (1 packet) raspberry jelly crystals • ½ cup boiling water • ½ cup raspberry coulis • ½ cup condensed milk or cream • Raspberries • Icing sugar Raspberry coulis • 1 cup raspberries, fresh or frozen • 2 tablespoons caster sugar METHOD To make raspberry coulis, place raspberries in a saucepan with caster sugar. Stir over medium-high heat until a sauce starts to form (about 5-10 minutes). Push through a sieve to remove the seeds. Discard seeds. To make the base, place biscuits in food processor and blend until fine crumbs form. Add melted butter and mix to combine. Press mixture firmly into base of mini muffin cups until it is compacted. Place in fridge while you prepare the filling. Dissolve the jelly with boiling water in a jug. Stir to ensure completely dissolved. Add half a cup of raspberry coulis and when slightly cooled add condensed milk or cream. Either completely combine the ingredients, or just stir a few times and leave a swirled effect through the mixture, then pour over chocolate crumb base in the mini muffin cups. Refrigerate for 30 minutes or until set. Serve topped with a raspberry and a dusting of icing sugar. HANDY TIP: Make double the coulis recipe and refrigerate or freeze remaining coulis for another day. 49

of your own way Are you blocking yourself from playing bigger?

ave you ever considered what your “default emotion” is? I’d not heard the term before, nor had I even placed any thought on the matter, until I came across an interview with Nisha Moodley, a women’s leadership coach. She says we each have default emotions − some people get sad easily, or angry or confused; often this is a way of escaping the discomfort of what we are facing, whether it be a conflict, fear of change or moving forward. We’re all up to big things these days. We have big ideas on what we want to create for our families, businesses and lives. While I believe anything is possible, that large void of potential can be scary at times. Those who know me understand I’m often doing crazy things, making wild manoeuvrers away from my perfectly fine comfort zone. I do wish I could sit still, but my mind − like yours − conjures big things and I find myself making significant changes every few years in an attempt to pursue these ideas, hopes and dreams. Those of you who don’t know me personally have probably worked this out already, based on what I write and blog about. I mention it not to advocate making wild changes, nor to preach that change can be positive. I bring it up because I know first-hand that while change more often than not leads to something amazing, it can be tough. Whether it’s self-imposed or change that has been thrust upon you, it requires time, perseverance and sometimes a lot of deep breaths to move through until you get to that place where you realise you’ve made it - and you can smile. So, “default emotions”. They usually run December 2014

rampant when we’re in a period of flux. Mine were at play recently when things were spinning around; change and choices flying at me swiftly. I could feel myself blocking it all with self-doubt and fear. I rationalised reasons for not trying things, rather than reasons why I should go for (or deal with) it. Interestingly, Nisha warns us to get familiar with such emotions and associated reactions. When you feel them creeping in, learn to recognise the emotions and check to make sure they’re not emerging in response to something that needs to be managed or overcome (such as fear, doubt, guilt or anxiety). By being able to recognise these signs, Nisha explains, we can learn not to let blocks stop us from “playing bigger”.Sometimes your default emotions will prevent you from taking the next − possibly daunting, but potentially gamechanging − step forward in life, love or career. How do you get through your own road-blocks? Nisha suggests we need to reconnect with what she calls “your North Star”, a combination of “WHY for you and WHY for the world.” That is:“Your‘why for the world’is what really inspires you and calls you to action (for example, better education for all children or animal rights), and the ‘why for you’ is what personally inspires and calls you to action (for example, do you long to write, create or nurture?).” The best bit about Nisha’s advice is she reminds us to stop trying to work it all out alone. Instead, touch base with friends and mentors who can quite often and easily help you move through confusion or worry, and remind you of what your strengths are and what life 58

adjustments are likely to complement you as an individual. “Develop your sisterhood, seek advice, share openly (the good and the bad), ask for assistance; help each other,” Nisha says. What better moment than Christmas time to round up the girls for a brainstorm and heart to heart? Soon it will be a new year, a time generally associated with change and goal setting. The notion of big change might not be where you’re at, or maybe you’re like me and you’ve just reached a particular milestone and presently looking around mystified and thinking, “OMG, what now?!”. An option I’ve embraced is to go back to basics. Slow down, breathe, take baby steps and reconnect with people (in person, not online). Avoid overwhelm by focussing on just one important thing you need to do each day, which will move you closer to “your North Star”. Stop to assess those “default emotions” too and consider the outcome surrounding your potential next steps. That is, if you were to remove fear, doubt and confusion from the equation, what decisions would you really make? Upon reflection, you’ll likely realise, as I have, that you are the one who has kept you playing small. It’s safe in that space, sure, but it’s the only thing stopping you from achieving your “more”.
