It’s just one of the stories we have in this month’s edition that focuses completely on you. In fact, our whole April edition is “all about you”. We know how hard you work, in your job or business, at home, with your family, friends, plus all the odd jobs and errands you do just because you’re awesome.
Links Hope Island is proud to showcase the immense talents of Brisbane sculptor, Carly Kotynski and award winning photographer, Danielle Lancaster in an exclusive exhibition open to the public. For the first time the talented pair will exhibit together and will share their love of mother nature through their unique pieces.
I’ve been mapping out and planning my goals for the year (they’re changing a lot already) and one of them is to do more of the things that make me happy and are all about me. I’m a Gemini, so that’s easy; everything’s always about me … Oh, and I get distracted easily. Where was I?
Carly’s scultpures will feature intricately woven wire bringing her pieces to life whilst Danielle’s humanity portraits will take in her many adventures through Cambodia and highlight the stories of each of the subjects. Works will be on sale to the public.

There are plenty more, of course, but I’m committed to making some time in my calendar each month so I can wade my way through them all.

Transforming your
life
A Gold Coast mum who came from the most horrific circumstances has been able to completely turn her life around. Here’s Karin Jansma’s inspirational story
he was a single mum of three, working three jobs, suffering depression, moving house and had just come out of a domestic violence situation. Gold Coast personal trainer Karin Jansma says she was lost and just a shell of her former self. That was less than a year ago. “I can’t believe it. This was me 10 months ago and I look back now and so much has happened in that time,” she says. Karin found that instead of going downhill and eating junk food, sleeping in, staying in bed and becoming more introverted, she went the opposite way. “I started training more at the gym because I felt it was a good way for me to honour myself. I started gaining more energy and feeling stronger. I was getting my confidence back,” she says. “It is so important to just start and get help when you need it. Show up and hand your life over to those who are strong and can help.” That’s what she did when she met personal trainer and founder of Zone Transformation Specialists Brandon Clift. “Brandon helped me so much. He met me at the gym and helped keep me accountable. He has such a great energy and I knew he genuinely cared about my feelings and emotions. He worked with me and helped turn my mood around so I felt more empowered every day,” she says. Brandon helped Karin so much that only six months after meeting him she was on a stage in Las Vegas in a fitness competition. “I was always teaching yoga but I found I
was losing my drive. You give a lot of energy in that industry and I didn’t have enough myself because of the relationship breakdown, stress and being a mum. Inside I felt broken. “So I simply started with a goal and that was to be my best and happiest self. In the beginning I didn’t think about the outcome in Las Vegas. I just wanted to feel better. “The exercise helped, but Brandon’s energy just makes you forget all your worries and you walk away so happy that you just turned up. “He told me about a fitness model competition on the Gold Coast that he was competing in and encouraged me to give it a go. “It gave me something else to work towards. Getting up on stage would show everyone that I was proud of who I am. So I took his advice and I won the 2015 Muscle Mania Australia Fitness Model Classic Champion at Robina in September last year. “It was addictive because I was feeling so empowered. I felt amazing and everything just snowballed after that,” she says. In November last year, Karin was in Las Vegas for the Fitness America Weekend World Titles and ranked 18th in the world out of 45 women. That was only her second ever competition. “I have never looked back. I can’t believe all the bad things happened,” she says. “It goes to show what you can do if you have the right support and trust in that guidance.” Today, Karin works as a personal trainer with Brandon to help empower other mums to be the best version of themselves physically, mentally and emotionally.

You don’t need to sacrifice one thing for another - you can integrate healthy, wealthy and wise as one, says Nikki Fogden-Moore s a business owner and mother of three teenagers who all have full schedules, sometimes it can be difficult to inject vitality into your own life, says Gold Coast entrepreneur Salome Borg. “Running a business that requires my full attention means I really need to be sure that I am the best version of me every day,” she says. “I owe it to myself to not only look after myself by eating well, but also physically and mentally. Just like my body needs exercise so does my mind, there’s nothing better than listening to a motivational or inspiring podcast to exercise my mind while I’m outside pounding the pavement first thing in the morning,” she says. “The beauty of being an entrepreneur is being able to decide where I want to work for a few hours, so I head to the beach. It brings me joy, it makes me smile and gives me clarity.” According to the Vitality Coach Nikki Fogden-Moore, these are just a few of the simple things you can do each day to help restore personal and business vitality in your life. In 2015 it was quoted 64 per cent of people were stressed. Overwhelmed, exhausted, stuck in a rut, wading through mud and emotionally burnt out. No spark, no mojo, just monotony. Make exercise a part of your day: This is simple, do it every day. Get rid of digital devices from the bedroom: Turn your sleep routine into a place of peace, calm and real rejuvenation. The 1 per cent rule: The last, but most important, piece of advice I have for you is the 1 per cent rule. If you want to bring your business and your personal vitality to life, take each element that has been eluding you - health, personal finance, family or friends and add 14.4 minutes in your day dedicated to that. That’s 1 per cent of 24 hours. After 100 days you’ll be 100 per cent better off. You can’t argue with the stats. 10

People don’t tend to just buy a product, they tend to buy from someone they like and trust. Personal branding and the way you are seen by the customer is very important. 2. Leverage social media It is crucial small businesses have a solid presence on social media depending what platform their customers prefer to engage with. A strong marketing strategy is essential in every industry that means social networking on LinkedIn, Twitter, Instagram, Facebook or all of the above. Here he shares some of his insights. What great things are happening in the property market on the Gold Coast? The Gold Coast market has continued to grow significantly in the past 12 months and, while the international inquiry has slowed, this has been more than counteracted by significant interstate interest in our market. While southern markets cool down, the focus is shifting to markets that offer more scope for growth and return on investment – and that’s putting the Gold Coast on the investor’s map. The buzz of the Commonwealth Games and significant infrastructure and development projects under way and on the horizon, confidence is sky high and building. What does the recent rise in land value mean for buyers and sellers? The main point is the increase in land valuations is a reflection of the growth that has already occurred in the market. It should give buyers confidence the upward trend has commenced and now is the time to get on board the cycle on its way up. he answer to this important question depends on whether or not you have a valid Will. There are technical requirements for the preparation and signing of a Will for it to be deemed valid. To ensure your estate is distributed according to your wishes rather than via a legislative formula that determines who gets what, make sure you obtain legal advice and make a Will. Pay now, save later The costs to your estate will be substantially greater if your Will is challenged in court or has to be proven as your last Will. If you die without a Will, the costs of obtaining letters of administration to distribute your estate will be substantially greater than the cost of making a Will. Having a Will also prevents confusion, conflict and stress for your family. Be prepared People often say: “I don’t need a Will because I am too young” or “I don’t need a will because I don’t own a house or a car”. These are common misconceptions and they are wrong. The value of your estate may be worth more than you think. You may have superannuation, receive an inheritance, or in the event of an accidental death, the proceeds from an insurance payout will need to be distributed.

No wonder we are overwhelmed, anxious and stressed out. You’ve probably asked yourself, ‘how on earth do you get more time in the day?’. How does 30 hours a month sound? Time-management expert Kate Christie says she helps women get back precious time to spend on themselves. Thirty. Hours. A. Month. That’s an hour a day just for you.

Ask the next person you greet in the street “How are you?” and chances are the response will be “I’m busy!”. Busyness seems to have acquired significant social status, says the Time Stylers’ founder and director. “But don’t be fooled, busyness is not a badge of honour. It’s an insidious, time-sapping disease. I truly believe that busyness is a lifestyle choice and you can choose not to be so out of control. I challenge you to reject being ‘busy’. Stop being constantly accessible. Stop saying ‘yes’ to every request that comes your way. Stop letting your kids have a week full of after-school activities,” she says. In getting back your 30 hours of

lost time a month, Kate says it’s crucial you spend at least some of that time on yourself. “Put it this way, if you eventually burn out trying to ‘do it all’ you will be replaced by a team of people to pick up where you left off. So, if it takes a team to replace you, how can you honestly maintain the pace of doing it all yourself? ‘Me time’ is critical to your health, happiness and for you to be the best version of you.” Aristotle said, ‘We are what we repeatedly do.’ In other words, we are creatures of habit, says Kate, so it’s crucial to implement and then sustain great time-management habits. “Managing your time well is not about

Like any bad habit, poor time-management habits can be hard to break. Just like starting a diet, quitting smoking or starting an exercise program, recognising and then adjusting your habits takes work. “We are constantly accessible via our multiple portable devices and this results in a huge drain on our time. However, it’s more how we choose to use our device. We often don’t use our time well. For example, on your 20-minute train trip why use your device to surf social media when you could use it to listen to a business podcast or learn a new language?
When asked if it’s just a case of poor time management or simply trying to get too much done in the time we have, Kate says it’s both. “In terms of multitasking, it is a commonly held belief that as women, we are great at multitasking, and more so that we are awesome for our ability to multitask. But this is a furphy. Research by Meyer has shown multitasking - the act of juggling more than one task at a time or quickly jumping in and out of tasks - amounts to a 40 per cent productivity loss,” she says. “Focus on one task at a time and you will quickly get through more each day. “Saying no and mapping your time so you know where you are losing it can help alleviate the pressure. Insource what can you get your kids to start doing for themselves? I think it’s important to think of your time as money. If you earn $50 an hour and you spend an hour a day on Facebook, that’s costing you $18,250 a year. Always ask, ‘is this the best use of my time?’.”
Because you’re worth it Patricia Vlahek is the founder and managing director of a successful osteopathic business and until having her first child, she had fine-tuned her ability to grow and manage her business in 40 hours a week and maintain a great work-life balance. Then she found herself juggling her responsibilities to her business and her team, plus those as a new mum to son Ante. “Having always been in control of my time management at work and home, I found it challenging to maintain the same level of timemanagement discipline at home,” she says. Kate says most people aren’t fully aware of where your time goes. This isn’t unusual, but you need to know
where you’re currently spending your time. Patricia wasn’t aware until she started mapping it. “What an eye opener,” Patricia says. “I started mapping one day of the week and was shocked at how scattered I was. In reflecting on my time, I had no plan for the best use of it and I constantly felt rushed and pressured. It was making me angry and short with others. “I am now aware of the costs of not living by my values – anger, impatience and poor quality of business work, frustration and guilt. I have started structuring my week, booked in ‘me time’ and my husband has also looked at how he spends his time. I feel lighter. I feel in control and empowered, and I’m fair to myself. I have definitely saved time – more than 30 hours a month.”

Time-styling tips
Kate consults to big and small business, government departments and C-suite executives on smart time management; how to maximise productivity at home and work; and how to retain top talent via smart time-management strategies. Here is her five-step process to get more hours into your day whether at home or at work. Self-aware: Understand your values (where do you want to spend your time) and your time-management challenges (your key pain points). This gives you a baseline. Map: Map a typical week to see where you spend your time to help you understand your habits. Once you know in detail where you spend your time, you can identify exactly what you need to change. Analyse: Take your map and segment each task into one of four time segments. Musts (tasks you have to do); Wants (tasks you want to do); Delegates (tasks you can get someone else to do) and Rejects (tasks you can do smarter or not at all). Reframe: From your map and time analysis identify exactly what you are going to start doing differently. Take control: Establish an action plan to ensure you implement and then sustain your new time-management habits.

decision maker Decision making is an essential part of life, so it’s time to get good at it e make decisions every day – in both our personal and working lives. They can be as simple as what time a meeting should start, or as complex as the best strategy to adopt for a business. Michelle Gibbings is a change and leadership expert and the founder of Change Meridian. She says regardless of the decision’s complexity, making a bad decision can have negative consequences. To get things done - and done well - you need to make good decisions. So if you want to step up and be more influential, it’s time to master the art of decision making. Know your bias Bias pervades decision making. This is because most people don’t make decisions on facts alone. The brain discards information that doesn’t fit with its world view and it takes shortcuts when it makes decisions. Consequently, you can be blind to the obvious and closed to other people’s opinions. Be conscious about the decision you are making and alert to influencing factors and how you are processing information. Challenge your mindset Examine the mindset you are applying to your work and relationships. Letting assumptions drive your thought processes and, ultimately, behaviour, can negatively impact your decision making and interactions with colleagues and stakeholders. Instead be curious and invite different opinions as “out of the box” thinking often comes from unexpected quarters. Don’t silence the dissenters People are easily swayed by the opinion of others. Be alert to when a group or team is ignoring the person who is raising the dissenting idea. It may be this person who April 2016

So if you want to step up and be more influential, it’s time to master the art of decision making helps ensure the group doesn’t fall into the trap of “groupthink”. Ignore hierarchy Talk to people at all levels of the organisation. Hierarchy can interfere with the information you receive as it can be filtered and sanitised before it hits your desk by people who are trying to paint a situation in the most favourable light. Talking with people across and up and down the organisation ensures you know what is happening, and are therefore better able to make a good decision. Get deliberate Be deliberate about what decision you are making. Identify who needs to be involved and what decision-making process you are using. It’s easy to get distracted, so be clear on what you need to do to get the decision made. Multitasking and good decision making are not a successful combination, as you lose concentration and productivity as you switch between tasks. Know your options Decision making is essentially making a 18
choice to do one thing, rather than another. It helps if you are clear on the options that exist and the likely consequences or outcomes of those options. Often choosing to do one thing, prevents you from doing something else. Understanding the trade-offs mean you are making the decision with your eyes wide open. Be determined Making a decision can be hard work. Some decisions are easy as the best path forward is quickly identified. Other decisions are more complex as the solution is not easy to find. Be comfortable with the fact that sometimes you need to make a decision with incomplete data. The world is complex and the solution to a problem may not be straightforward. In these situations, maintain your focus and determination to make the best possible decision based on what you know at the time, says the author of Step Up: How to Build your Influence at Work. Get some sleep When your brain is tired it eagerly takes the path of least resistance and this is where it gets dangerous. Taking the path of least resistance means you will let expectations and assumptions drive how you think and act. Make the decision No decision is a decision in itself. Procrastinating will not make the decision process any easier. Be clear on when the decision needs to be made and put in place the process or framework to make it happen. Reflect on it Not all the decisions you make will be good or bad. Take the time to reflect on important decisions. What happened? Did it turn out as you expected? If not, why not? What could you do differently next time?

MAZON - The word alone immediately conjures up images of the exotic, the enigmatic and the adventurous. All of that is true for anyone fortunate enough to visit this amazing area of South America and one of the world’s largest biospheres so essential for the continuation of life on the planet. My entry point for my Amazon adventure was the remote “wild west” city of Iquitos in Peru. This jungle city was once a booming rubber town and it is still possible to see the signs of opulence in some of the residences. But, it is the river, the Amazon that controls and determines life in the area these days. Iquitos is one of the rarest cities in the world – a large city that has no entry road by car with access restricted to either boat or air traffic. Arrival into Iquitos can be confrontational with the signs of burnt-out hulks of drug-runner planes lying beside the runways and the ever-present humidity and bustle of life. On my last visit to Iquitos I was fortunate to see just how people’s lives in the city and surrounding areas are so at the mercy of the river. Torrential storms and rain had swollen the mighty Amazon to record levels with much of the city under water and with no option other than await the annual dry season when river levels drop considerably. some idea of a ‘locals’ life in this city which, because of its remoteness, comes with a slightly dangerous underbelly.I was personally escorted through the market by local police acting as “security” for tourists and experienced no issues other than absolute amazement at the range of food - a smorgasbord of food Amazon style … from piranha, to monkey heads, giant snails and much more. This part of the city virtually floats on water when levels are high, making it truly one of the most memorable experiences on any Amazon journey. So, with an air of expectation and anticipation, I boarded my River Amazon cruise vessel, the MV Arapaima. No five-star multi-decked cruise ship this is, and nor should it be. This is true Amazon cruising with a suitable level of comfort for the Western traveller. With a capacity of only 26 passengers this is how you explore the Amazon’s upper waters from Peru down river to Leticia in Colombia. Yes, that Colombia! For the next four days the experience builds with cultural and environmental experiences found nowhere else on Earth. I certainly didn’t expect to find a small but very active sugar cane liquor distillery along the vast banks of the Amazon. If you’re brave enough take a sip of this local “fire water” and wander around the factory, you’ll be watched eagerly by the local kids cradling baby sloths as replacements for the western kitten or puppy. We took a side excursion downstream to the mouth of the Napo River and ultimately the village of Pevas situated at the mouth of Palometo Creek. Pevas is also the home for renowned Amazonian artist Francisco Grippa and what a home he has! Constructed in a rambling fashion over many years, the home sits on a hilltop overlooking the town. A visit to the studio to meet the fascinating man and a climb to the
observation tower for a stunning view over the Amazon River basin is something to be remembered. It’s here we have an encounter with the local Wuitoto Indian community including a magical time spent in the small primary school where a group of happy young Amazonian kids sang us local songs. In return they received a lesson in English and how to sing Aussie, Aussie, Aussie Oi Oi Oi. A truly life-changing experience seeing the smiles on these quite primitive people still living life much as it has always been. And so it continued … evening Caiman spotting, fishing underneath the Amazon treetop canopy for piranha, exploring rainforest along virgin trails in search of monkeys and bird life. Cruising this majestic river as a massive storm approaches, the sky darkening as the mass of cloud sweeps closer, is a sight to see. Being enveloped by wave after wave of torrential rain to be followed by brilliant sunshine is almost impossible to describe. You just have to be there! The Amazon breathes life in so many ways and is definitely one of the most life-changing experiences I have had. The sunrises and the sunsets are glorious and an evening meal on the sun deck prepared from local meats and vegetables is beyond description. Leticia or is it Santa Rosa or even Tabatinga? Our journey concludes at this city where three countries merge – Peru, Colombia and Brazil. There are few places on earth where within 30 minutes you can be in three different countries. The Amazon continues to amaze,confound and mystify our world. Under severe pressure, change is certainly coming to this vast area of our planet and so there will never be a better time to experience one of the world’s truly last wild places. The Amazon – it’s OUT THERE. See it while you can. 27
GETTING THERE The best entry point for Iquitos is via Lima, Peru. Lan Airlines fly regularly from Sydney to Lima with connecting flights (or overnight stop) available. You must be in possession of an onward international ticket to enter Peru and Brazil. Of course, you must also be in possession of a valid passport with a minimum of six months prior to expiry. VISA Australian and New Zealand citizens do not require a Visa to enter Peru however a Visa is required for Brazil. Visas can and must be obtained in Australia before departure. Give yourself ample time as the Brazilian Visa can take some weeks to process. HEALTH If you are entering Peru or Brazil from infected areas of Africa or the American continent, a Yellow Fever vaccination is required. No other obligatory vaccinations are required although the following are recommended; Hepatitis A, Typhoid and Cholera. Malaria tablets must be taken when travelling along the Amazon. Consult your travel doctor for best and most suitable options as well as overall recommendations for vaccinations and so on. It is suggested you also take a basic medical kit with you to cover the obvious potential medical situations – colds and flu, stomach disorders, cuts and bruises. TRAVEL INSURANCE Travel insurance when visiting remote areas like the Amazon is absolutely essential. Ensure suitable cover is taken to ensure maximum insurance for medical treatment and evacuation. My passion for fashion has been ongoing since my Grandma taught me to sew when I was 9 years old. Before you get down to “out with the old, in with the new”, first you must take a good look at your body shape … and love what you see! Now, This is necessary to get the most out of your wardrobe so you feel as amazing as you look. When it comes to fashion and styling, I have several rules to make it effortless so you have a simple and easy wardrobe where you wear absolutely everything. Here are my top five rules: 1. If you haven’t worn it in two years, it’s time to set it free. 2. One in … one out. Every time you purchase a sensational new piece, something of your partner’s has to go! No seriously, how much do you need each season? 3. The five-way rule; every piece has to be worn five different ways. For example, a simple crisp-white classic shirt can be worn tucked into a highwaisted skirt or pant; with jeans and the front half tucked in; over the top of a strapless dress; buttoned to neck

with a statement piece of jewellery and a print girly skirt or open as a layered piece. 4. Go shopping in your wardrobe, you never know what gems you will find in there to revamp. 5. Have a wish list and plan out how your

Paleo, Pritikin or Pizza Hut? Which foods really can boost our brain, asks Dr Jenny Brockis
t seems hardly a day goes by that we are not bombarded with new advice on what to eat, what not to eat and the next big thing guaranteed to keep us healthy. Much of this is often contradictory, making it hard to know the difference between fact, fiction and wishful thinking. Dr Jenny Brockis, the Brain Fitness Doctor, says years of nutritional research has revealed how our choice of foods influences our memory, general cognitive skills, mood and mental wellbeing. “Our food choices influence how well our kids learn (and behave) at school. It affects how well we operate in the workplace and, of course, how well we maintain our cognition as we age,” she says.“If you are fed up with being made to feel guilty, unsure or confused as to the best foods to eat, despair not, as help is at hand to reveal what really counts to keep our bodies and brains healthy.” In 2014 Katz and Mellor undertook a meta-analysis of all mainstream diets to see if one diet really did provide a significant advantage. What they discovered was that most diets had some merit, however, the one most important attribute that stood out by the proverbial mile was this: Eat. Real. Food. This means enjoying a wide selection of different foods that are preferably fresh, locally sourced and unprocessed. Eliminating certain food groups – such as carbohydrates, fats or proteins - just makes it harder to eat in a balanced way. Adding in a bucket-load of vitamins doesn’t substitute for healthy food choices either and the so-called super-foods are insufficient on their own. The author of the book, Future Brain: The 12 Keys to Create your High Performance Brain, says the top contenders for boosting focus, memory and better cognition are the Mediterranean diet and MIND diet. You may be already familiar with the Mediterranean style of eating – leafy greens, cold-water oily fish such as salmon or mackerel or other lean protein, deeply pigmented berries such as blueberries and strawberries, some seeds and nuts, some whole grains, a good dollop of olive oil, a small glass (125ml – I did say small!) of red wine, and Bob’s your uncle. Even if he isn’t your uncle following the Mediterranean diet has, in longitudinal studies, been linked to better cognitive health, improved mood and better memory. Beyond the crystal clear waters of the Med, the new kid on the dietary block is the aptly called MIND diet. What’s particularly exciting here is studies of this way of eating (which is similar to the Mediterranean diet) have been associated with a 35 per cent lower risk of Alzheimer’s disease. It incorporates all those foods shown by research to be good for the brain and it’s easy to follow. What are brain-friendly foods? Martha Morris, from Rush University Medical Centre, suggests you pick from the following 10 food groups: 1 Go green. Mum was right, eat six servings a week of leafy green vegetables such as spinach, kale and Asian and salad greens. 2 More veggies. Not all vegetables are green, so include a wide variety of different coloured veggies on your plate. Have at least one of these every day: Carrots, capsicum, eggplant or squash. It’s your choice. 3 Go nuts. Previously maligned for being guilty of causing weight gain, nuts are packed with good fats and vitamins. Five serves a week (that’s five small handfuls) is all that’s required. 4 Berry delightful. Two or more serves a week of blueberries, strawberries, blackberries or cherries to pack a powerful antioxidant punch. 5 Beans. Lentils, chickpeas, kidney beans or baked beans, just eat beans three times a week. 6 Whole grains. For those not allergic or coeliac, go for three servings a day. 7 Go fish. Naturally fish would need to be included for the omega-3 content. Have it once a week. 8 Chicken. Chicken or turkey twice a week. 9 Olive oil. Extra virgin for your salads and cooking. Don’t heat the oil too high. 10 Wine. One glass a day (that’s 125ml). 38

Time to make it all about you ou have to look after yourself to be able to look after anyone else effectively” is a phrase we have all heard repeatedly. Yet true as it is, it is a phrase that is easily overlooked and neglected in our busy lives. I am optimistic that this or another article in this magazine will provoke you to actually do something for yourself... and with that in mind, I’m going to do something for me. I have been in the fitness industry since 1997 - that’s almost 20 years (I don’t feel or look that old!) - and five years ago I came across Vision Personal Training, a franchise company in the health and fitness sector. I was so impressed by the systems Vision had developed to make getting client results simple that I got involved and a year later I bought my own franchise in Bundall. It amazed me to see how this fantastic business model helped people who “hated the gym” go from unfit and unhealthy to be in the best shape of their life - and these results have replicated themselves consistently. I had always been a “nerd” when it came to anatomy, physiology and nutrition, but this was an approach that changed everything and I had to get involved. So with many years of experience under my belt, my aim is to help you answer this question: Where do most people go wrong when starting a health and fitness program? Well, a lot of the time either with or without a trainer, people will try to count calories or, neglect to do anything at all about their food. They then struggle to achieve results or worse, they get results and then stack the kilos back on just as fast if not faster. Measuring calorie intake is impossible. The labels on the foods and websites where you get the numbers from have been proven to be skewed by up to 10 per cent. You may ask 10 per cent which side? High or low? Good question. It could be either; meaning your estimate is off already. From there, what is also impossible is to calculate is how many of those calories you actually absorb? Your absorption rate is dictated by your hormonal environment and your gut bacteria. Then, how many of those calories do you use versus how many of the calories do you store? How many calories do you burn? So as you can see, even bothering to count them is futile. There has to be a better way. There is - and that is what Vision Personal Training does so well. (I wish I had the space to explain it. You will have to just come to one of our seminars to find out exactly how it works). But it isn’t even our way of managing clients’ food and exercise that makes Vision Personal Training amazing. Until this year I didn’t really get it, but now I do. It’s the people we have here. The clients in our studios are an amazing bunch. So supportive of each other and super friendly. Many of them have even started going on holidays with each other - like walking the Milford Sound last year. The biggest driver of that community, however, are my amazing trainers. I know lots of places say it, but I can prove it. Not only do they all spend a minimum of three hours a week, every week working on improving their craft, they learn, read and study every week. I demand it. They constantly assess and evaluate their performance and every week we compare and work with each other on stats like who is getting the most clients results and why. As the owner, I know down to each individual client if you are on track to reach the goal you set with us or if you have fallen behind. We have also won a bunch of national awards, including National Personal Trainer of the Year 2014, Queensland Personal Trainer of the Year 2015, National Weight Loss Challenge Winner 2015, Number 1 Studio in QLD 2015 and for January and February 2016, first Female Master Trainer and second Female Master Trainer. he options are endless when it comes to boosting your hearing in noisy places and there are strategies you can use that don’t have to include hearing aids to aid your communication in these environments. Position yourself correctly If you don’t have any hearing aids, or you have older more primitive hearing aids, then positioning in noisy restaurants is crucial. Many people sit in the middle of the noise and are unable to hold a conversation due to the competing noises all around them. If you sit in a corner, or with your back to a wall, then there is no competing noise behind you. Instead, the noise is all in front of you and you can pick out the people talking at your table above most of the other restaurant noise as they are closer. If you have a hearing aid with a directional microphone able to reduce noises behind you then you would do the opposite. By facing the wall you minimise the unwanted noise source in front of you and your hearing aids will reduce the level of noise behind you. Use microphones linked to your hearing aid Another feature in hearing aids that can dramatically improve hearing in noisy environments are Bluetooth or FM microphones. Some come in a lapel mic form and others in a larger microphone format, such as disguised in a pen or a notepad. If it’s extremely noisy and you can’t hear anything then you can get whoever you’re speaking with to place the lapel microphone on their collar and it will pick up only their voice (no other background noise) and stream it via Bluetooth or FM directly to the hearing aids. If you want to hear more than one person, you can use the pen or notepad’s FM systems and place them down the other end of the table and they will pick up only the direction they are facing and send it back to the hearing aids.
How to hear better in noisy restaurants One of the downsides for people with hearing difficulties is that it can be hard to hear in noisy environments Use lighting Good lighting is also very important. We all rely on an element of lip reading to help us out when unwanted background noises are actually louder than the people we want to hear. Having good lighting on people’s faces aids this strategy. Use both ears! When someone talks to you from the side turn your head to look at them instead of tilting one ear towards them. Supplement your hearing with the visual lip-reading cues and maximise their voice to both ears. This is particularly important for those with
directional hearing aids as the hearing aids are only focusing on the sounds in front not the side. Get their attention Lastly get someone’s attention before you start talking to them so they are looking at you from the start of the conversation and you can utilise the visual cues. If they, or you, are looking elsewhere there is a pretty good chance that, by the time you do see their face, the context of the conversation will be lost. John Burchell shares some worthy viewpoints to get you thinking and assist in making positive culinary choices ow do you think of food? Food is many different things to many different cultures and is often first thought of in terms of culinary desires and the media rich images of how food should look and taste. As the consumer industry grows with businesses looking for new ways to define themselves, the concept of food has evolved into art forms, scientific creations and alchemic wonders and taken to the extremes for the senses. The question I ask is, what do you want your foods to contribute to your life and have you given thought to the rules you might apply to food? Rules for foods are broken into several categories and the priorities will vary depending on your choices as to the role foods play in your life. What foods appeal to you? What cooking methods appeal to you? What flavours are you drawn to? The basic flavour senses are salty, sour, bitter, sweet, spicy and pungent. Texture may be a priority. Is food for pleasure? If so do you consider pleasure in every meal and do you associate pleasurable foods with “bad” foods? Many of the best health orientated foods can be pleasurable. Do you consider food as fuel for the machine? Do you have specific allergies or intolerances? Have you ever explored incorporating foods as corrective nutrition for illness or weight issues? Do you consider

the level of processing of a food or the additives to a food? Foods in their raw form can be difficult to source unless you grow or produce your own, so the “biggy” in foods is sourcing what it is you’re after. Homogenised,pasturised,hydrolised,modified and preserved foods are a no brainer. If that’s your shopping trolley, then you’re easy to shop for. If on the other hand, garden-fresh and free-range produce is your preference, then there is more research required for reliable sources, or you may consider setting up gardens and growing poultry. Even a few salad and herb pots on the patio can enhance your whole eating experience. Here are some things to consider: Foods are often produced with volume and aesthetics in mind rather than taste and nutrition and are most likely long term cold stored or preserved. Many foods are “quality enhanced” through
use of colours, flavours and texture alteratives. Herbicides, pesticides and antibiotics are all unseen and unlisted processes to consider. There is no precedent of a generation living on such foods and early results of observations suggest long-term health may not be sustainable where diets consist only of “processed or modified” foods. Many of these processes reduce the nutritional aspects of foods by reducing plant enzymes, vitamins and minerals. Some foods have high levels of undesirable components; soy is a good example in having high levels of oestrogen like phyto-steroids. This article is to get you thinking and is not so much in the negative as it is to give information to assist in making positive culinary choices. In a future article I will look at food categories for consideration in corrective nutrition and some guidelines on keeping all your culinary desires within reasonable health orientated limits.

KING PRAWN BUCATINI Recipe from Gambaro Seafood Restaurant INGREDIENTS PRAWNS • 500g bucatini or any other pasta of your choice • 1 onion, finely chopped • 2 cloves garlic, chopped • Pinch chilli flakes • 50ml extra virgin olive oil • 20 green prawns, peeled and deveined • 60ml dry white wine SAUCE • 50ml extra virgin olive oil • 1 onion, finely chopped • 3 cloves garlic, chopped • 400g tin whole peeled tomatoes • 60g caster sugar • Salt and pepper to taste • 6 leaves basil, chopped TO SERVE • 1 tablespoon flat parsley, chopped • Juice of 1 lemon • 100g unsalted butter • Sea salt to taste • 30ml extra virgin olive oil • Flat parsley to garnish METHOD

To make sauce, heat olive oil in a saucepan, add in the finely chopped onions, garlic and sauté until translucent. Add the can of peeled tomatoes and simmer for 40 minutes until the tomatoes start to soften and can be crushed with a potato masher. Add in the sugar, salt, pepper and basil. Check taste and seasoning. In a deep pan, put hot water and salt for pasta. Boil pasta until just cooked. Simultaneously in a large saucepan sauté onion, garlic and chilli flakes in olive oil. Add in the prawns and sauté on high heat, add white wine to deglaze. Then add the prepared sauce and simmer until the prawns are just cooked. Add hot, drained pasta to the sauce. Sprinkle flat parsley, lemon juice and butter, stir the pasta through the sauce, and adjust the seasoning with sea salt. Finish by sprinkling more chopped flat parsley and extra virgin olive oil over the top.
KINGFISH TAIL IN ONION BRAISE Recipe from The Fish House INGREDIENTS • 1kg kingfish tail • 2kg of brown onions, finely sliced • 1 tbsp garlic, chopped • 300ml white wine • 600ml chicken stock • 2 roma tomatoes, grated • Juice of 1 lemon • 1/2 a bunch of parsley, chopped • 200ml extra virgin olive oil • Salt and white pepper METHOD: To make braise, sweat down onions in a pan until translucent. Add chopped garlic and allow to cook for 2 minutes. Add white wine and keep sweating until mixture has reduced by half. Add stock, grated tomato, lemon juice and parsley, then simmer until tender. Adjust seasoning to taste. Pre-heat oven to 180C. Lay kingfish in flat tray, pour over the braise, add olive oil, cover with baking paper and aluminium foil and place in oven for 35-40 minutes or until kingfish is cooked to taste.
FINGER LIME MOUSSE WITH PASSIONFRUIT, BLUEBERRIES, DRAGONFRUIT AND COCONUT Recipe from Thomas Corner Eatery INGREDIENTS • 100ml lime juice • 4 egg yolks • 150g caster sugar • 125ml hot milk • 1 gelatin leaf, soaked • 6 finger limes, fresh • 250ml cream, lightly whipped • 1 dragonfruit • 1 punnet blueberries • 2 passionfruits • 1 coconut, grated • Zest of 1 lime METHOD: Whisk the lime juice, yolks, sugar and hot milk over a pot of boiling water. Continue to whisk for around 15-20 minutes until a ribbon stage consistency occurs. When ready, remove from heat and place over a bowl of ice. Add soaked gelatin leaf, cool until room temperature and add finger lime pearls and lightly whipped cream. Fold all together and pour into moulds. Set in refrigerator overnight. Garnish with dragonfruit, blueberries, passionfruit, grated coconut and lime zest. 43

In my time as a serial single lady I’ve been on my fair share of what can only be described as truly terrible dates. While this by no means makes me some sort of dating Dalai Lama, it has taught me a few things about what not to do on a date… t all started in the dark, baron land of Tinder. For those of you that don’t know, Tinder is very possibly the worst and best thing that has ever happened to single ladies since Spanx. Essentially it’s a dating app that allows you to judge potential mates on a handful of photos and a few lines of prose. Genius, right? Its success stories are few and far between, but as a single girl I decided I had to see what the fuss was about. I have to admit I was addicted to Tinder for some time. It’s like online shopping for men, a dangerous combination of my two greatest weaknesses. I have since realised that online shopping for clothes takes less time and involves less disappointment. However, when I first got Tinder I would spend hours flicking through the profiles of potential suitors. That’s when I saw Prince Charming. I honestly can’t remember too much about his profile other than the fact he had a photo posing next to a troll from Lord of the Rings. The fact this set off butterflies is probably the reason why I am single and still foraging for a man on Tinder. We organised a dinner and movie date; the perfect rendezvous for two people that aren’t sure whether they actually like each other. April 2016
It was a low-risk date, if anything it was a boring date. Or so I thought. Arriving at the cinema we had a few moments of awkward small talk before buying our tickets. Except we didn’t buy our tickets because there were no tickets. The movie had sold out. Terrified at the idea of a date that involved prolonged conversation, we decided to walk a couple of kilometres to a different cinema. On the walk, I got to know my date which I have since learnt is a bad decision 80 per cent of the time. This is when the first bombshell of the night dropped. He didn’t really like Lord of the Rings. My heart was in tatters, but I soldiered on. I like to think it’s what Frodo would have done! We purchased tickets at the other cinema and decided to go and eat; maybe food could fill the hole in my heart like it had countless times before. Burgers seemed like the safe option for a picky eater, but I’ve never been so wrong in my life. I somehow managed to order the spiciest burger on the menu. It is at this point in the evening that I had to conduct a DIY eye bath in front of my date. I was bruised but still hopeful. Things really took a turn for the worst when he offered to give me a lift home on his motorbike. Fast forward 30 minutes and we’re pushing his stallion up a hill after discovering it was out of petrol. Why did I agree to do it? Perhaps for love. Perhaps I’m a good person. Or perhaps I underestimated how heavy a motorcycle was and didn’t want to catch the bus home. Regardless, I pushed that bike for what seemed like an eternity only to discover the petrol station wasn’t open. It was a low, I must admit. Prince Charming talked at length about his poor life choices while I scrambled for my inhaler and longed for Beyonce’s thigh power. Scratch that, I just wish I was Beyonce. I bet her and JayZ don’t have these problems. I stop day dreaming about Queen B and Prince Charming calls his dad to deliver a jerry can and walks me to the bus stop. It’s 1am. I am on public transport and my eye still kind of hurts from chilli.
