This is the story of Max, a little boy who couldn’t tell his mother he was hungry or sick or that he loved her; a little boy who was sad and angry; a little boy who was diagnosed with autism when he was 3. Max is now 5 and, with the right care and early intervention, is a completely changed kid

t’s a different story for each family as Arundel resident Heidi Dahlenburg will tell you.

Each person who lives on the autism spectrum has a unique experience.

Children with autism have challenges with social interaction and communicating, but they are also repetitive and can be rigid in their interests and behaviour.

Heidi’s 5 year old third child Max is autistic.

He’s among one in 100 Australians of all ages living with autism.

Every four hours an Australian child is diagnosed with autism. Max was diagnosed right before his third birthday.

He is not a high-functioning autistic boy.

Heidi says he is about mid-way on the spectrum.

“The best way to gauge it is that when he was 4 he had the speech and behaviour similar to a 2 year old,” she says.

Heidi says living with a child who has autism, before he was diagnosed and could get the help he needed, was distressing.

“He had some speech difficulties when he was 18 months old, but when 2 I knew something was really wrong. One day I was rocking him back and forth in my arms and he was just staring right through me. There was nothing there. He wasn’t present.

“He was withdrawn. We couldn’t take him anywhere and he couldn’t play or interact with other children. He couldn’t speak properly and started to scream when he needed something, but because he couldn’t communicate we didn’t know what he wanted.

“He couldn’t tell us that he was hurt or in pain. I remember a number of times he had such severe tonsillitis that he was almost hospitalised.

“It was so distressing. We didn’t know what to do.”

Heidi says little Max was diagnosed by May 2015

a paediatrician within 15 minutes of the consultation. It was a stroke of luck that within the first week of Max’s diagnosis the couple found out about Little Souls through a news story on a Sunday night current affairs program.

At the time Heidi and her husband Craig – who own an industrial supplies business - and their three children were living in Emerald, in rural Queensland, about 1200km from the Coast. They had tried everything. Heidi, a registered nurse, stopped work and stayed home to care for Max. But it was all too much.

“Emerald was just too rural and it was a real struggle living there. We had to wait 18 months for an appointment with Little Souls. During that year we flew to the Gold Coast every six weeks with Max to see a therapist.

“I was trying therapy at home and he was going to a special school, but he couldn’t cope and his behaviour wasn’t improving.

“We had three kids under 7 and I was trying to do it at home, but it wasn’t working.

“Just when things were getting really bad, we got the call from Little Souls. We had two interviews in four weeks, and he was offered a place.”

So the family packed up and moved to the Coast. Max started with Little Souls in October last year. When asked how he was now…Heidi simply says,“awesome”.

“I can even begin to explain how it’s helped,” she says. “He is a different kid. He now has conversations and is happy. His behaviour is just beautiful. We go out anywhere now, even theme parks like Dreamworld on the weekend.

We couldn’t have done that six months ago. His speech has improved. He couldn’t answer yes or no, now he says ‘Mum, look at what I’m doing.

“We are starting to see his personality.

He has a good sense of humour, is happy and social, and can do a lot of things he couldn’t before. He’s fun loving and he is getting better with other kids.

“It’s those things you take for granted. I don’t know where we’d be without Little Souls.”

Little Souls, in Arundel, is the only centre of its kind in Australia.

Heidi says the program focuses on early intervention and is one on one and tailored to each child, but they also have sessions each day with non-autistic children so they can learn from other normally developing kids, which is important because autistic children imitate.

“Most autistic children are not getting the help they need,” she says.

“Early intervention with children on the autism spectrum is the key and the best age to teach them is before they are 6 years old.

“It’s about getting them ready for school and teaching them to focus, non-verbal communication, social interaction and facial expressions, rewarding good behaviour, and braking everything down into little steps so they can understand things on a whole.”

For the Dahlenburg family, living with autism has been a journey.

“It turned our life on its head for a while, but now we don’t worry about the future as much,” Heidi says.

“Max’s future looks really bright and we are extremely proud of him.

“He’s inspirational and amazing, and sometimes I have to pinch myself because we’ve come so far.”

Little Souls currently has a Tax Appeal running with all funds going directly to help all of the children at the centre. There is also the annual race day on Saturday, June 20. For more information call 07 5563 1490.

Meet Insta-famous Rufus the dog hen Gold Coast photographer Jenelle Stafford picked up Rufus with her best friend from Sydney on September 6, 2013 her entire world changed forever. Since then she has lived vicariously through her dog, Rufus, who has Instragram (@themightyrufus), Facebook and a blog. Jenelle shares what it’s like to live with a web-famous dog.

Who is Rufus?

Rufus is my beloved smooshy-faced furchild. He is a purebred British bulldog bred from championship-winning stud dogs in Sydney.

How old is he?

He’s 21 months. He is 2 on July 5! Dear god, where has time gone? My baby is growing up.

What does he love?

Bacon, naps, Vegemite toast, lemonade icy poles, the beach, babychinos, riding on four-wheelers (quad bikes), farting audibly and generally making the human minion (me) do things for him.

What does he dislike?

Baths, chewy worming pills, anything

exhausting. Time for another nap.

He’s adorable and hilarious. Enough said.

What was your plan with Insta?

I just want Rufus to be famous! He is the light of my life, he makes me belly-laugh every single day without fail. I want to share the happiness he brings me with other people. I’d love to register him as a hospital dog but unfortunately he is a bit too snotty/ drooly/farty for the sterile environments.

If he is being naughty, or annoying, or hyperactive, when I’m trying to work, all I need to say is “Rufus, you wanna go for a walk?” and he stops everything and hides! Physically hides. He will crawl under the bed, under a pile of washing, behind a lounge chair or, failing any of those, he will put his face in a corner and refuse to make eye contact.

What does an ordinary day look like for Rufus?

Sit up unsteadily for the next half an hour trying to wake up, periodically flopping back down on the other side to fall back asleep.

Much snorting and struggling. Finally get up properly. Walk over to Human for goodmorning cuddle and pats and scratches.

Stare at Human eating breakfast until she gives me some Vegemite toast.

Pretty tired, might have a nap.

Go outside for a stretch and a pee - get bowled over by Phoebe, the Australian bulldog owned by the lovely people upstairs.

Being more widely accepted and talked about, cosmetic and plastic surgery can involve a range of surgical, non-surgical and non-invasive procedures and often a combination of both are used.

“One of the greatest fears people have when considering cosmetic enhancement, which prevents them from taking the next step, is that it will change their appearance

too much or they will look like they’ve had ‘work’ done. We only have to look at the celebrities in magazines to see this,” he says.

“So talking about it breaks down these barriers. It’s a far cry from how it used to be 10, 15 or even 20 years ago. The results are now very natural looking.”

Many people are also using cosmetic enhancement as a preventative measure to reduce the signs of ageing before it sets in.

“In past people would wait until last possible minute to have a procedure and it was often a last resort. But now the emphasis is different and it is all about maintaining the foundations of your skin and body with nonsurgical treatment,” he says.

“If you need a procedure, do it when needs to be done and enjoy the benefits for longer. The results that will be longer lasting too.”

Many people may agonise over their morals in having cosmetic enhancement because they want to age gracefully, but Dr Rosenbaum has a different take on it.

“I think it’s now the reverse. If you don’t do anything about ageing, it’s ageing disgracefully.”

Investing in property:

ne in four Australians will retire below the poverty line and the majority of these will be women.

“That’s simply Katie Marshall because women earn less than men. Anywhere up to 20 per cent less even though they are doing the same job, the same work and have the same qualifications,” says property investor and Chicks and Mortar founder Katie Marshall.

“Women generally have a varying work history. That is, they are more likely to take significant time out of the workforce to raise a family and then are more likely to take on part-time work instead of full time when they return to the workforce.

“It’s due to these points that, in particular, women are and will continue to retire on half the superannuation as men,” she says.

Katie says women are not prepared for retirement and unexpected events such as loss of their job, divorce or death of their partner could leave them in serious financial trouble because they are not prepared.

The Chicks and Mortar boss and author of Chicks and Mortar: A Woman’s Guide to Investing in Property wants to help women successfully navigate, understand and invest in the property market. She talks to Get it magazine editor Elizabeth Campbell.

What’s happening with property on the Gold Coast?

The Gold Coast property market has been in a slump for a long time. There was an oversupply of property and the Gold Coast’s May 2015

main economic driver, tourism, has dropped significantly since the GFC. But now property prices in some areas are increasing, houses are starting to sell again, vacancy rates are falling and rental prices are rising...all good signs.

There are also some great new projects completed, under way or proposed to regenerate the region, including: l The new light rail (with talk of extending it north to meet up with the rail line at Helensvale). l The new university hospital. l Work is under way to expand Pacific Fair, which will make it the largest shopping centre in Queensland. l The Commonwealth Games is approaching in 2018, which will stimulate more jobs. l Other proposed projects including the $7 billion mega resort/casino/cruise ship terminal.

Is there a trend with more women investing?

I haven’t noticed a trend with more women investing...but think there should be a trend and I would like to start one. Women have all the skills and abilities to succeed because: l We are intuitive and are able to tune into our internal risk metre easily, which is helpful when evaluating deals and opportunities. l Women are practical and can approach tasks and situations in a methodical manner, which means there is very little we overlook. l Women are logical and will seek out more information or ask more questions in order to make an informed decision.

l We tend to get the most out of our investment dollar making it stretch further and studies show when a woman’s financial situation improves, the community around her benefits also.

How can we do it successfully?

1. Know your current situation Before anything else you need to know your current reality. Work out where you are financially, money coming in and going out, how much you can afford to borrow and repay, your lifestyle, constraints, skills and abilities and your risk profile.

2. Know your end goal Know what you want to achieve, why you want to achieve it and when. This includes your retirement plans.

3. Gather your team Find the best broker, accountant, property adviser, financial adviser and solicitor you can, and share your current situation and what you want to achieve.

4. Create a plan Once you’ve worked out your end goal, you can then work out your plan to get there. This includes your property strategy, first step into the property market and every step after that until you’ve reached your goal.

5. Get educated Do research online, buy great property books, get out and network with propertyminded people. Ask lots of questions.

f you are looking to seriously switch off - and we mean completely – from everything in your life except the word “relaxation”.

Norfolk Island does escapism really well.

Perfectly, actually.

Here there are no traffic jams, no hustle and bustle and no hoards of people vying for that last inch of sand on the beach…nope, nothing stressful at all.

Instead there is fresh local produce, serene rainforest walks and cool turquoise water. It’s like another world.

Stepping off the plane, you’re on island time now and it’s slow. Slower than you’ll be used to.

It’s a great way to get into the swing of Norfolk Island.

Ask anyone who’s been and they’ll tell you same thing.

That’s how traveller Karen Quinlan felt too.

She makes Get it editor Elizabeth Campbell extremely envious when the pair sit down to talk about why we should all visit Norfolk Island at least once in our lifetime.

How was your holiday to Norfolk Island?

Very relaxing, Norfolk Island is like stepping back in time, it’s a curious combination of historical significance, 80s-style shopping and buildings; and a tropical island.

Why did you choose that destination?

My friend’s husband found a deal where kids could travel free, plus we had just got our scuba diving certificates. Our plans were to snorkel, scuba, and rest and relax for two weeks.

We wanted to go somewhere a bit different, May 2015

and it was also my girlfriend’s 40th birthday. She wanted a destination that was child friendly too.

We were there with five adults and six kids!

What did you do?

Snorkelled every day the weather allowed us to, kayaked, swam at Emily Bay, a few local tours to understand the history (General Island Tour and the Progressive Dinner Tour), fished, swam at our hotel pool, bushwalked, went to the Fish Fry, celebrated New Year’s and my friend’s 40th at Norfolk Blue Restaurant, celebrated Christmas lunch along with other locals and tourists; watched DVDs and read books; dined at the local cafes; and cooked our own meals.

What was the highlight?

Snorkelling at Emily Bay and kayaking to Anson Bay - we saw a beautiful big sea turtle on 32

the way to Anson Bay when kayaking and it was great fun tyring to launch the kayak on to the beach without crashing! Also Crystal Pool was beautiful.

Describe your holiday to Norfolk Island in one word.

Enigmatic!

What is your advice to other holiday makers to Norfolk Island?

Enjoy the beautiful reef on Slaughter Bay as well as the serenity of Emily Bay, and make the most of the slow pace - it’s island time!

accumulation starts. Two triggers we know of are child birth (sometimes it takes more than once) and the other is Menopause. Both have an effect on your body’s hormones and can lead to this fat storage.

Do Reduce your total intake of carbs.

Dont Count calories and eat less.

When you have taken in too many carbs, your body starts turning those carbs to fat. For most people that is between 120g a day and 400g a day (depending on muscle size and activity level). So rather than count calories, which you can do and still eat too many carbs, count your grams of carbs you take in a day. Carbs aren’t essential. Your body can make its own. But having some carbs will make you function better.

Do Eat lots of protein Dont Eat sugar and high GI carbs When you undereat protein your body will not burn through fat like it can. One argument for this is our bodies have remained unchanged for roughly 200,000 years. In that time food has almost exclusively been hard to come by (except the last 50 or so years) and so one trigger to let our bodies know that times are good and you can burn off the extra fat calories is protein. You ideally should be getting in between 1.2 1.8g per kilo of body weight per day. The misconception that excessive protein is bad for you still persists even though there is no evidence it does any harm other than make your body work a little harder to excrete it. And we all know sugar is doing you no favours.The most harmful form is fructose which is particularly high in Agave Syrup, Dates and fruit juice.

Other high GI foods that cause fast fat storage are things like white rice, bread and corn. (a complex topic I can go into at a later date) Do Lift heavy weights Dont Do stupid exercises like sit ups.

Lifting heavy weights may be the best kept secret in weight loss.

Lifting light for ‘toning’ is a waste of time and should be called cardio.

And lifting heavy for women, particularly over the age of 31, is extremely beneficial and almost impossible to put on much muscle. If you lift heavy, your metabolism will be raised for roughly 72 hours and that will make you a better fat burning machine. Avoiding silly exercises like sit-ups and isolated exercises helps too. For one, spot reduction is not possible… if it was, all that talking and chewing would have us overweight with skinny chins? Sit ups are particularly bad, by flexing your lower back and compressing the vertebrae you are wearing on a commonly injured body part with very little benefit (almost none). Stick to the multi joint lifts like squats, push ups, pull downs etc. They are better for your joints, allow you to lift heavier and are better for your muscles, and release more good hormones. Leave the fiddly little curls and kick-backs to the singlet crowd in the gym with hours every day to work out.

Shred stubborn fat Are you following a fat loss eating plan? Are you training regularly? Still unable to shred those stubborn areas of body fat? If you answered yes to all of these questions there is a possibility you are dealing with a hormonal imbalance hen a hormonal imbalance occurs it is almost impossible for that last area of fat to melt away unless we approach it in a more scientific way, says renowned personal trainer Sally Matterson.

Sally says there are three key areas the body stores fat but the good news is there are solutions to getting rid of it.

Jelly-belly fat Hormone responsible: cortisol Cortisol is a hormone released by the cortex (the outer portion) of the adrenal gland when a person is under stress.

Excess or continued high levels of cortisol contributes greatly to body-fat storage around the naval area.

Unfortunately, when we consume too many carbs, we produce too much insulin, which rather than being used for energy, gets stored as fat. Over time, this can cause insulin resistance, which means the body cannot tolerate carbs anymore. This is often reflected physically in fat distribution on the shoulder blades and the top of the hips, otherwise known as love handles.

Solution Insulin resistance can be corrected by controlling carbohydrate intake in the diet and taking EPA-dominant, pharmaceuticalgrade omega-3. This will help produce less insulin so when you do eat carbs they are used the way they should be – for energy.

Stress less! Easier said than done sometimes, but worth the effort. Focus on adopting regular sleeping patterns, taking up light activities, meditating, connecting with others and new activities Why does cortisol increase weight in this area?

When you are stressed, your body overproduces cortisol. Since there are more cortisol receptors in the abdomen, the body tends to hold on to fat in this area.

This unhealthy visceral fat (the fat surrounding your internal organs), can also increase inflammation and insulin resistance in the body.

Solution Stress less! Easier said than done sometimes, but worth the effort. Focus on adopting regular sleeping patterns, taking up light activities, meditating, connecting with others and new activities or professional help if required.

If stress is unavoidable, try supplementing with magnesium. Taken in the evening, this will act as a cortisol blocker and help relax the body, relieving anxiety, too.

versusthe new world

Quite often the question is asked, “Why do you have so many wines from around the world matched with your food” and “why are you not using all Australian wines?” he answer is simply that many international wines are much better matched with food.

Often they are in greater harmony and balance than the new-world styles when paired with food.

There is a great difference between a wine that one would like to sip on the balcony at home with friends and a wine that would be served with dinner.

Hence, the massive popularity of sauvignon blanc and pinot gris as wines to quaff on their own with their abundance of fresh fruit flavours and slightly higher levels of sugar.

One of the challenges facing us as wine educators is the development of palates and leading customers out of their comfort zones and into wines they may not be accustomed to.

Often wine that is regarded as an exceptional old-world wine can be perceived to be a disappointment by a customer and our passion and exuberance for the wine is overshadowed by their bitter disappointment of the consumer. The reason for this may be that they don’t understand the wine for its subtlety and consider the palate thin and lacking fruit.

In order to clarify this I think it is important to break down the differences of old-world and new-

world wines to give a greater understanding.

Old-world wines are from the areas in Europe who have been making wine for centuries and often their wine-growing techniques are steeped in tradition. Importantly, all their wines are “terrier” driven, whereby they taste of where they are made and even if two vineyards are just metres apart, they can be dramatically different. Burgundy in France being a good example of this with wines from hectare to hectare having completely different flavour profiles and mineral components.

Old-world wines have less obvious fruit characters and have much more mineral, savoury, earthy characters that are true to that particular region. Often the wines are matched with the produce or cuisine styles of the region.

New-world wines have greater extraction of fruit, left to ripen longer and often are more luscious.

They have a higher sugar and alcohol content and sometimes a greater use of new wood in the ageing process.

Whatever your persuasion, wine will always be the winner as the old and new-world of wine offers a flavour that appeals to everyone and every cuisine.

EPIC PUMPKIN PIE PANCAKES Serves 8

INGREDIENTS • 230g (2 cups) grated pumpkin (Jap or butternut pumpkin work well) • 260g (2 cups) quinoa flour • 250ml (1 cup) almond milk • 100g (½ cup) coconut sugar (or maple syrup) • 3 eggs • Pinch of salt flakes • ½ teaspoon pumpkin pie spice mix • 2 tablespoons coconut oil • Maple syrup and coconut ice cream, to serve METHOD: In a large bowl, put the pumpkin, quinoa flour, almond milk, coconut sugar and eggs, then add a pinch of salt and the pumpkin pie spice mix. If the mixture isn’t runny enough, add more almond milk until you get the consistency you’re after.

Pop the coconut oil into your frying pan over a medium heat and pour in about 60ml (¼ cup) of your mixture. Cook on one side for 2-3 minutes until the edges start to go golden and you can see bubbles starting to appear in the middle. Flip the pancake – it will only need a minute or so on the other side – then remove from the pan, keep warm and repeat with the rest of the mixture.

Serve with maple syrup and coconut ice cream.

MUM’S BAKED SALMON PATTIES WITH MASHED AVO Serves: 4

HUMMINGBIRD AND LUMBERJACK CAKE WITH ALMOND CREAM ICING SERVES 12

INGREDIENTS • 200g (2 cups) almond meal • 3 eggs • 1 granny smith apple, grated • 90g (½ cup) medjool dates, pitted and roughly chopped • 1 ripe banana, mashed • 80g (½ cup) small pieces of fresh pineapple (you can used canned pineapple) • 120g (1 cup) roughly chopped pecans • 60ml (¼ cup) maple syrup • ½ teaspoon ground cinnamon • ¼ teaspoon ground nutmeg • ½ teaspoon ground ginger • 1 vanilla pod, split and scraped (or a pinch of vanilla powder or a dash of vanilla extract) • Pinch of salt flakes • Handful of chopped pecans, for decorating FOR THE ICING: • 250g ricotta • 60ml (¼ cup) maple syrup • 2 tablespoons almond butter METHOD: Preheat the oven to 180C. Grease a 20cm spring-form cake tin with coconut oil. In a large bowl put the almond meal, eggs, grated apple, dates, banana, pineapple, pecans, spices and salt in the bowl. Stir well until everything is combined, then spoon the mixture into your cake tin and bake for 40-50 minutes.

To test if it’s cooked, insert a skewer in the middle. If it comes out clean, the cake is ready. If not, pop some foil over the top (to prevent it from burning) and bake for another 5 minutes.

Then remove the cake from the oven, turn it out on to a wire cooling rack and let it cool. To make the icing, put the ricotta, maple syrup and almond butter in a smaller bowl and beat until smooth. When the cake is cool, ice it and decorate with pecans.

INGREDIENTS • 1 × 200g piece of salmon, skin on • 1 egg, beaten ½ red onion, finely diced • 150g (1¼ cups) almond meal • ½ bunch of fresh dill, chopped (but save a few sprigs for dressing at the end) • Salt flakes and freshly ground black pepper • 2 tablespoons extra-virgin • Olive oil FOR THE MASHED AVO: • 2 ripe avocados • Juice and zest of 1 lime • ¼ bunch of dill, finely chopped • Salt flakes and freshly ground • Black pepper • 2 tablespoons extra-virgin olive oil METHOD Preheat the oven to 180C. Line two baking trays with baking paper. Pop your salmon on one of the lined baking trays and bake for just 15 minutes.

Leave the salmon to cool just a little then flake it into a bowl. Mix in the egg, red onion, 100g of the almond meal and the dill. Season with salt and pepper. Form the mixture into eight small patties, then roll the patties in the last of the almond meal.

Place them on the other lined baking tray, drizzle with olive oil and pop them into the oven to bake for 10 minutes.

While the patties are cooking, make your mashed avo.

Put the avo in a bowl and mash it with the back of a fork.

Add the lime juice and zest along with the dill, salt and pepper to taste and a nice glug of olive oil, then mix it about.

When the patties are cooked, place two on each plate, add a nice splodge of mashed avo and top it off with a few dill sprigs.

truly authentic Mexican restaurant is hard to find on the Gold Coast. But Compadres Mexican Restaurant and Bar in Broadbeach solves this problem.

Owner David Barnes has developed the menu to reflect his passion for traditional Mexican cuisine, using recipes passed down for generations.

With a cheerful greeting from the restaurant manager, my partner and I were ushered through the spacious bar at the entrance to the restaurant with a guided tour.

The well-stocked bar hosts a large selection of imported and local beers through to tequilas direct from Mexico.

We walked through the main dining room that can seat upwards of 80 guests in comfort and out on to an open courtyard, which the team fondly calls Eldorado (The Lost City of Mexico).

We were offered the drinks menu, which encompassed a large number of South American-influenced cocktails ranging from the hand-muddled mojitos ($12.50) to the Watermelon Tequila Fiesta ($13) and the ever-popular margarita ($16.50 to $17.50).

We sampled the Lychee Martini and the Watermelon Tequila Fiesta as we relaxed under the stars in the courtyard, perusing the main menu.

Our waiter Alex delivered an appetiser of toasted corn chips with hand-crushed avocado, while he explained the dishes on the specials board that proved popular with regular diners.

We ordered a few entrees to sample, with the first to arrive being the Tostada De Tinga ($16).

It comprised of slow-cooked pork marinated in spices and pulled over a fried corn-chip base, black beans, shredded lettuce, tomato, sour cream and coriander. Alex suggested a May 2015

The well-stocked bar hosts a large selection of imported and local beers through to tequilas direct from Mexico salsa to accompany the entrée to which we agreed. The salsas range from mild, warm, hot, very hot ($4.50) and Ay Carumba! ($5). I opted for hot and was not disappointed, although I did require a second glass of water.

The team understands that not all guests enjoy spicy dishes and are more than happy to the suggest options available.

Our second entrée was the Aros De Cebolla ($12), which translates to fried Spanish onion rings with jalapeno and polenta butter.

I had reserved a little of the salsa to add a bit more zing; which really wasn’t necessary. The flavours were just so well balanced that it didn’t require any adjusting or additional seasoning.

The batter on the rings was crisp with jalapeno flecks encased in it that added the pleasurable hint of spice without overpowering the senses.

Those diners seeking more fire in their dishes are welcome to try the chilli-infused table oils prepared by the chefs. The oils start off mild with bird’s-eye chilli and ramp up in order from jalapeno to habanero to the eyewatering ghost chilli, which boasts a fearsome reputation.

From the moment I read the specials board I knew there would be only one dish for my main course. The seven-hour slow-cooked Jalisco-spiced shoulder of lamb, served with fragrant rice and sauce. The meat fell from the bone and the tomato-based relish layered over the meat complimented the dish with an extra dash of moisture and texture. We had consumed so much food that the team placed the rest of the lamb in a takeaway box for me 44

to enjoy for lunch the next day.

I declined dessert, which is offered as a daily special explained by the waiter, as I could not possibly fit in any more food. I enjoyed talking with Alex about the origins of the menu. He said a few of the chefs were from Mexico, which helped to give the authentic experience the team were delivering. The menu is set out in Spanish with an English explanation and has a host of options that accommodate a range of palates. He also mentioned the ever-changing Monday to Friday $10 specials that are great value.

This is a restaurant where you can feel comfortable having a few drinks with friends or dining out in style with a well-thought-out selection of Mexican cuisine. The terrace hosts live acoustic music every weekend next to the fully licenced Terrace Bar that opens weekends or when business demands.

Hands up if you’ve ever been delayed in transit or had your daily plan thrown out by something silly like a traffic jam, and you’ve ended up, well, super annoyed? Yep, me too, writes Sarah Blinco nexpected changes to my plans have often meant major tantrums and freak outs. Recently I had an epiphany on this front though, which has pleasantly changed how I perceive time I once would have deemed “lost”.

Surprisingly, it all started at a crowded railway station, one drizzly Wednesday morning…

I was on a work trip in a capital city and relying on public transport to get me from A to B. That bit wasn’t so bad, as I was conveniently staying above a transit centre. On the morning of an important meeting, I turned up to discover major delays and up to a 40-minute wait. Brilliant! I started to panic – I’d only just arrive in time, if that.

Feeling flustered, pacing the platform as if that might miraculously manifest my ride, I considered the options. I could race to the station up the road to see if they had fewer issues (doubtful). Ed Sheeran could drown out my worries with his sublime voice (nah, feeling too impatient for music). Alternatively, Wi-Fi was on offer. I could press play on a lengthy podcast I’d hoped to listen to over breakfast.

I switched the webcast on, only to discover that what I had planned to listen to merely for general interest’s sake, turned out to be a half hour of motivating messages I needed to hear, now.The presenter even shared practical advice which I benefitted from in meetings that very day. I barely noticed the time fly by because I was so engaged. In fact, when a notification appeared overhead revealing there was a further five-minute delay, I was happy that I’d be able to listen to the end. I really did feel like a cheeky Universal intervention had actually “given” me the time to listen because it was important that I did so.

To be sure, the “best-laid plans of mice and men often go awry”, so why do we all too often default to stress and impatience when something doesn’t go our way? For me, it usually takes a lot of will power not to be dirty when my schedule is knocked out of play. I’ve always been a planner, early with deadlines and to meetings. Going with the flow is something I’ve had to learn and practice.

One of the themes the movie explores is what happens when life doesn’t go to plan, like when you miss your train (or find your May 2015

partner is cheating on you!). Therapist, Joleen Watson, comments on her website,“The movie (Sliding Doors) teaches that we can’t control the outcome – we can only control our actions and the choices we make in life. And we can continue to trust the process that there is something we are supposed to learn through the process of letting go.”

My moment on the train platform made me think of that film. I was rather chuffed to realise that being stuck wasn’t a waste of time, but indeed, a gift of time.

Whether it’s your taxi turning up late, or missing out on a job you thought you wanted, life happens, and it’s beyond our control. Last week I read that the presence of fear (which can be the root of many feelings including anxiety, worry, stress, jealousy, sadness and panic) is a sign that you are trusting in your own strength, rather than leaning on a power 50

greater than you. In other words, sometimes we have to let go of the schedule or plan, and have a little faith it will all work out in the end (even if it’s not the way originally imagined).

Aim to succeed, of course, just like I’d planned to catch the 8.07am train that morning.

But, when circumstances mean you have to change tack, if all else fails, try surrendering the worry. Give yourself a break next time you’re delayed or diverted, and consider what else you could take away from the moment instead.

A little timeless advice from Ralph Waldo Emerson (1803-1882), worth pondering next time your plans are thrown off course: “Finish each day and be done with it. You have done what you could. Some blunders and absurdities no doubt crept in; forget them as soon as you can. Tomorrow is a new day; begin it well and serenely and with too high a spirit to be encumbered with your old nonsense.”
