I never played with Barbies much as a young girl. I can’t remember whether that was because they didn’t represent me (tall, blonde hair, big breasts, skinny waste), or if I just wasn’t interested.

Maybe I just didn’t receive any as a gift so wasn’t really exposed to them.

As a result, I didn’t have any strong feelings about the Barbie movie, aside from huge admiration for whoever was responsible for the incredible marketing campaign.

My nine-year-old daughter isn’t massively into Barbies either. She has a few, most were gifts from family or friends, but rarely plays with them.

So, she wasn’t at me to watch the much-hyped film either.

But when I received an invitation to the premiere, the buzz was simply too much for me to resist.

We scoured our wardrobes for something pink, to no avail, so after much pleading, we took to the shops and found my daughter a barbie dress from Big W. I found a pink top for myself too.

It was just as well, as the premiere was a sea of pink. Literally everyone was dressed in theme for a movie that evidently evoked much nostalgia for all generations.

I’d read, of course, that Barbie had been dubbed a “feminist” film, but I was doubtful, and the first 15 minutes or so confirmed by doubts.

Half an hour in though, and the tide was starting to turn.

Barbie was feeling a little bit feminist. As the film progressed, it became a little bit more feminist.

I found myself invested in a movie, I only went to for the hype and my daughter (and because the tickets were free).

By the end, I was even more impressed with the marketing behind Barbie than I was in the beginning. Not only has Mattel secured a whole new generation of Barbie fans – they’ve done so without the guilt – after all, Barbie is now your new feminist icon.

So, if you’ve resisted the crowds and are still sitting on the fence, take it from a non-Barbie fan, it’s worth donning the pink.

When I hear about the effects of climate change, which are pretty obvious at the moment with wildfires and record temperatures in the northern hemisphere, I feel sad and sort of helplessly exhausted.

I want us (as a planet) to avoid the man-made catastrophe, the Anthropocene, that is coming. I want our politicians to STOP BLOODY TALKING ABOUT IT and do something drastic and meaningful.

But I personally feel pretty ineffectual. I buy second-hand clothes, I recently bought a hybrid car (more for the tax advantages, if I’m honest), and I recycle. I also fly on planes, use a wood fire to heat my house, and eat lots of lovely, juicy meat. I vote green and try to consciously think about my consumption, but I also love online shopping (especially slightly pissy Instagram shopping). It feels, however, like a tiny, minuscule drop in the vast ocean of fossil fuel consumption and greenhouse gas emissions.

I have decided that the thing that will work for me is to love and appreciate the environment I’m in. To swim in our gorgeous ocean, walk in our rainforests, and marvel at all the fabulous creatures I see. I live on Mudgeeraba Creek, and I have a real, LIVE platypi in my backyard. That is almost inconceivably amazing.

The Gold Coast has a bit of a reputation for flashy, trashy reality TV and crappy souvenirs. There is an element of wheeling and dealing, crime, and grift in the scene to be seen. Fake boobs and white shoes, but where we live is pretty amazing. In one day, you can go from Springbrook’s ancient rainforest, with lyrebirds, pythons, and waterfalls, to the beautiful beaches with humpback whales breaching off shore.

Being actually IN the environment soothes my feelings of hopelessness towards the environment. I feel that the more people who appreciate and value the natural world, the harder we, as a species, will work to preserve it. So be curious and show your kids the green frog in the drainpipe. Explore and enjoy because my personal feelings of helplessness are just that: helpless. But communicating my love and joy for my part of the world is contagious and may just make a difference.

One Business at a Time

If you have a passion for carbs and social justice, the Bread & Butter Project is the perfect recipe.

Celebrating its 10 year anniversary, Australia’s first social enterprise bakery, stands as a symbol of resilience, hope, and a shared commitment to create a better world. Since its inception in 2013, this visionary initiative has transcended the boundaries of baking, investing 100 per cent of its profits into training and employment pathways for individuals seeking refuge and asylum. The Project has delivered over 81,000 training hours and helped 65 people graduate as professional artisan bakers in the last decade, helping them find employment in Australia’s hospitality industry.

The program has welcomed baker trainees from a range of countries, including Iran, Iraq, Syria, Jordan, Sierra Leone, Congo, Somalia, Afghanistan, Pakistan, Myanmar, Thailand, Mongolia, Tibet, Sri Lanka, Fiji, Papua New Guinea, and more recently, Ukraine.

Co-founder Paul Allam said the success of The Bread & Butter Project was a testament to the power of social enterprise and the positive impact it can have on marginalised communities.

“By providing a supportive workplace that empowers trainee bakers and equips them for their new life in Australia, The Bread & Butter Project continues to help create a brighter future for many,” said Mr Allam.

“I’m extremely proud of all we’ve done in the past decade, however there’s still so much to achieve and as the business continues to grow and evolve, we look forward to making a positive impact on the lives of many more refugees and asylum seekers coming to Australia.”

A renowned Sydney chef and baker, Mr Allam helped establish The Bread & Butter Project after he visited an orphanage on the Thai-Burmese border with his wife Jessica Grynberg in 2011.

There, the pair met a group of refugee women and taught them how to bake bread, establishing a social business that supports the women and the orphanage to this day, and in turn inspiring the creation of The Bread & Butter Project.

Within the walls of this bakery, trainees embark on an empowering journey, participating in a 6-8 month paid training program that goes beyond baking skills. The program offers completion of a TAFE qualification, hands-on training, ESL tutoring, and invaluable work placements. For many, it is their first paid job in Australia, a stepping stone towards a brighter future, irrespective of their previous qualifications or lack thereof.

The Bread & Butter Project has woven a rich tapestry of compassion, resilience, and unity, serving as a powerful reminder that every loaf of bread holds the potential to nourish not only our bodies but also our collective humanity.

LED Light Therapy has been used to treat a number of skin conditions for years. Only recently has LED light therapy gained traction for cosmetic purposes. LED light therapy is a non-invasive and painless treatment with evidence to serve a number of cosmetic and medical purposes, such as rejuvenating the skin, combating acne, reducing signs of ageing, and improving wound healing.

But how does it work?

Believe it or not, your skin cells actually have receptors called photoreceptors that react to light of various wavelengths, aka different colours, which then stimulate various processes that can lead to collagen production, skin repair, anti-inflammation, or even anti-bacterial effects. Different wavelengths will produce different effects, so your desired impact will determine which coloured light will be best suited to you.

For example, blue light has been found to possess antibacterial properties against P. Acnes, the bacteria that can cause many forms of acne. As such, it can be a handy treatment to complement other acne treatments for clearing out breakouts. The best part is that some studies suggest the effects carry on for several weeks after a treatment course.

Near infrared light, on the other hand, can reach much deeper into the skin than blue or other shorter wavelength light and has been shown to enhance circulation and stimulate regenerative pathways, which results in increased collagen production, antiinflammatory effects, reduced swelling, and better healing from wounds and bruises.

Not all LED treatment lights are built the same. Different devices will vary in the quality and number of LED bulbs, which affect whether the right frequency of light is emitted, the intensity of the light produced, and thus the effectiveness of the treatment. Some modern LED lights also have built-in technologies to concentrate and maximise the amount of light delivered to your skin. So do take care to do a bit of research when selecting LED light devices, or consult a reliable health provider.

Some major advantages of LED therapy are that it is non-invasive, non-thermal, and non-ablative. This means that it does not cause any damage to the skin, does not involve any post-inflammatory hyperpigmentation, and has no downtime at all. This also means LED therapy is safe for all skin types and skin tones. With its versatility and excellent tolerability, LED light therapy can be excellent as a standalone treatment or a complimentary addition to other treatments like micro-needling, lasers, radiofrequency, or post dermal filler injectables.

With many of us needing to buckle down and trim the household budget, every little bit counts. Who doesn’t love a clean house, or at least, aspire to have a Zen-worthy neat and sparkly home. It’s this desire to be clean –or fear to be seen as unclear – that leads to Australians spending more than half a billion dollars each year on household cleaners.

While some work well, many are simply over-priced hope in a bottle, that promise miracles but deliver limited results. Further, the environmental aspects of many commercial cleaners are concerning. First, there is the plastic containers they come in and then there are the overly harsh (and in some cases toxic) ingredients themselves.

With the cost of dishwasher tablets rising, it makes sense to make them yourself. And it’s not just about the cost to your wallet –many tablets are covered with the synthetic polymer polyvinyl alcohol products, however not all PVA breaks down totally, with some of it becoming micro-plastics.

The good news is that you can make your own dishwasher tablets simply and easily using ingredients you can find in the supermarket aisle.

Ingredients

• 1 cup bicarbonate of soda

• 1 cup Lectric washing soda

• ¼ cup Epsom salts (or cooking salt)

• ¼ cup Citric acid

• ½ tablespoon dishwashing liquid

• Orange or white vinegar (or plain white vinegar)

Method

1 Combine all dry ingredients in a bowl.

2 Add in the dishwashing liquid and then gradually stir in the vinegar, around half a teaspoon at a time. The mixture will fizz as you add in the vinegar: this is normal.

3 Once the mixture is crumbly and wet, spoon into a plastic or silicon icetray.

4 Press down firmly and allow to harden overnight.

Pop out, and then store in a dry, airtight container and use one per wash as you would with commercial dishwashing tablets.

Beauty with a Conscience: Lash Therapy Australia’s Natural Approach

How did you come up with the idea for Lash Therapy Australia and what inspired you to venture into the eyelash and brow products market?

It was at the beginning of the Pandemic when all beauty salons closed, and our lash extensions were quickly falling off. We were left with bare and brittle lashes, and we were on the search for a solution to that. Whilst searching for this solution we found there was no natural ingredient lash serums for people with sensitive eyes. This is when the idea came together, and we set out to create a range of products that we were assured would provide results without any risk of irritation or damage to our health.

How has being best friends impacted your business model? What’s it like working all together?

Working with your best friends is great. However, we are all so close now we consider each other family more than friends. We started out with a solid base of respect and understanding for one another. And while it also comes with its challenges as conflict is of course going to arise in any work environment, it is the way you cope and build strategies around these problems that arise to prevent future complications becoming an issue again.

How important is social media in promoting and growing your business? Can you share some strategies you’ve used to engage with your audience and build a strong online presence?

We pride ourselves in bringing out products that actually work, sharing our amazing before and after results is what drives a lot of traffic and reflects the authenticity of our brand. We utilize every social media platform to do this. Our biggest platform would be TikTok as we have a cult following with many influencers also sharing their “lash routine” and “GRWM” using our products.

What challenges did you face when starting Lash Therapy Australia, and how did you overcome them? Any advice for aspiring entrepreneurs in the beauty industry?

We didn’t anticipate our rapid growth, so managing stock levels during these periods and selling out constantly was very stressful.

The advice we would give to young entrepreneurs is to just go for it and don’t give up. You don’t need to know every aspect of owning a business from day one, you learn and grow along the way. Keep passion and persistence. Hard work and dedication pay off.

How do you stay up to date with the latest trends and innovations in the eyelash and brow industry?

Constant research and being heavily active on social media would be key to our success, we also ask our customers in Q&A’s what new products they would like to see in our range.

In terms of sustainability and ecofriendliness, what steps has Lash Therapy Australia taken to ensure its products are environmentally conscious?

We aim to deliver premium natural beauty products, with only the best ingredients. Throughout our lives we faced the common struggle of ineffective, overpriced, harsh chemically enhanced beauty products. We set out to create a range of products that we were assured would provide results without any risk of irritation or damage to our health.

All of our products are cruelty free, and we also have a line of vegan beauty products.

How do you handle customer feedback and ensure that their needs and preferences are met? Have there been any instances where customer feedback influenced product development or improvements?

We regularly read reviews and touching base with our customer service team that bring up any issues, particularly within the mechanics behind a design and how we can improve it within our manufacturing process. If there are any issues, we always ensure we trial products and receive a lot of samples until we perfect the product run for it to launch successfully preventing less problems.

As influencers in the beauty industry, how do you balance authenticity with the commercial aspects of promoting products? How do you maintain trust and credibility with your audience?

Sharing real results from real people maintains authenticity and trust within our brand.

We are very selective with the promotion style we use and only partner with influencers with a genuine love for the brand and products.

What are some of the biggest lessons you’ve learned since starting Lash Therapy Australia? Is there anything you would have done differently in hindsight?

A big lesson we have learnt through our business journey is to accept help from others and to delegate tasks. As our business rapidly grew, we were very hesitant in the beginning to share the responsibilities and tasks outside of the 3 of us. When we eventually implemented a third-party logistics and hired customer service support we were able to truly dive into the important tasks of growing the business while maintaining high standards for our customers’ experience.

We are constantly learning new ways to improve our business on the daily, however we believe this will always be the case. We are passionate about evolving as society does and tailoring our business to suit anything life has to throw at us.

Enjoy Your Beer without the Bloat!

We’ve all got excellent memories of hanging out with friends on a summer day, drinking beer straight from the can. But pouring a beer out into a glass is the easiest, single best thing you can do to make sure you’re getting the fullest experience of that beer as the brewer intended. Here’s why:

Appearance – pouring your beer into a glass both reveals exactly what colour the liquid is and forms the marvellous head.

Aroma – bottles and cans only have tiny openings, which barely let any aroma out. And besides, your mouth covers them entirely when you drink. Pouring a beer gives your nose the chance to enjoy the beer, not just because of the wider opening of the glass, but because the head that forms releases those aromas into the air for you to smell.

Taste – since most of the flavour we experience is shaped by our sense of smell, the flavours are much fuller and more nuanced now that the aromas are free. Why wouldn’t you want to maximise the flavour of your beer?

Mouthfeel – when you drink straight from a bottle or can, an excess of carbon dioxide erupts in your mouth in a foamy reaction, taking over aggressively. When you pour into a glass first, you get to sip beer with the right level of carbonation, so you can appreciate the body and texture as you’re meant to.

Beat the bloat!

The beer in the bottle or can is full of dissolved CO2. As soon as it gets the chance, that CO2

will escape the liquid by forming into bubbles; this is called ‘nucleation’. When you pour a glass of beer, you see this foamy reaction as it happens, and it forms a head on top of your beer –where it belongs. You know where that frothy reaction doesn’t belong? In your stomach. When you drink straight from a bottle or can, you cover the tiny opening with your mouth and pour the CO2filled beer into your mouth and straight down your throat. And the whole way down, those thousands of bubbles are escaping from the liquid like passengers trying to flee the Titanic. Welcome to Belchtown. Next stop: Bloatsville. Whenever someone blames beer for making them gassy, I ask if they poured the beer into a glass first. Because if they didn’t, then it’s not the beer’s fault – it’s because they caused a chemical reaction in their stomach instead of pouring the beer into a glass.

Life-Changing Tech:

As women, we’ve often been taught from a young age to be aware of our surroundings, to not walk alone late at night and to learn to defend ourselves, but what happens when the risk of violence comes from your own home?

Gender-based violence is still a critical national issue, with one woman dying at the hands of their partner every 10 days. We speak to Friends With Dignity’s Melissa van der Burgt, who leads the National FriendSafe program, about the new safety wearable that offers a lifeline to individuals from all walks of life at risk of domestic violence across Australia.

Can you share how this program came to life?

The FriendSafe Program was developed throughout 2020, when the CEO of Friends With Dignity wanted to launch a new practical program that would actively support someone impacted by DFV and currently at risk, bringing them safety and security at a touch of a button.

Friends with Dignity already had a number of other programs supporting survivors to get back on their feet through its Sanctuary Program, and supporting children who would otherwise miss out on extra curricular activities through the Scholarship program.

The FriendSafe program was about giving back the ability to get help when most needed in a discreet and safe way.

‘Safety at the touch of a button for DV victim-survivors.’

I have seen an ever-increasing need for programs like this which is heartbreaking. The real life stories I hear every day are becoming so unbelievably desperate and I can’t see things improving any time soon. With the current cost of living pressures, the rental crisis and post covid mental health challenges, the services Friends with Dignity provide the community are in high demand.

How do the FriendSafe tech aids work?

The FriendSafe Personal safety devices leverage mobile phone technology and reliable 24/7 monitoring support team. The DFV survivor and their DV support Worker will develop a Safety Plan that is personal to their situation. As part of this Safety Plan, the Support Worker will assess if a FriendSafe Personal safety device could be a useful tool in their safety toolkit. If so, the Support Worker will apply under our sponsorship program where a FriendSafe device and a full 12 months of monitoring will be provided to the at risk individual at no cost to them or to the referring agency.

A comprehensive Safety Plan is attached to the device and should the client require immediate discreet assistance, they just need to push and hold a button on the device for 3 seconds. This will trigger a response from the 24/7 monitoring centre ensuring no call for help goes unanswered. The monitoring centre will have access to information that can support emergency services in triaging the call appropriately (for example, information around DVOs in place, whether children could be present, whether there is a history of weapons use), and they will be able to listen in on the device to gauge how risky the current situation is – they will also be able to pass on GPS locations to the responding emergency service team.

Being able to press a button to receive help, rather than picking up a phone to call for help, can ensure the at-risk person is not put in any escalated danger, and allows them access to emergency support when they have no access to a phone.

Can you share a little more about the kinds of people who will utilise these devices?

We currently have FriendSafe devices in almost every state and territory in Australia. We support people from a very large range of nationalities, ages, genders and this makes the program so accessible to all, regardless of their specific situation. Our youngest device wearer is 10 years old, and our oldest is well into her 60s. We provide safety from current partners, ex-partners, family members – the list goes on.

How can someone access a device?

Anyone being supported by a DV Support Agency or Worker can access this program via our sponsorship option – this is where you would work with your Support Worker to ensure this device is best for your situation. Accessing the program in this way will mean we will loan a device and cover the cost of 12 months of 24/7 monitoring to help give back some safety and security.

If you are looking to purchase a device outright from us, we can also support you in this while helping you work through how this device could support you in your personal situation.

Running this program does not come cheap and in many cases people impacted by DFV do not have the means to cover the costs of this type of thing. At Friends with Dignity, we don’t see safety and security as a luxury, we see it as a necessity which is why we do our best to fund as many of these devices as we can at no cost to the survivor. Do you think we’re likely to see more tech innovation coming about in the personal safety space?

There is absolutely research being conducted in this space. As much of this technology relies on mobile service, it can be very limiting to those in remote areas, so this is a problem that still needs solving. There is also the concern that the safety devices really need to be easily concealed. The smaller the technology is, the easier it is to hide in things such as necklaces, rings or bracelets. The current size of device required for this technology, I think, is still a little chunky.

"A topographic map opens up the whole world to you. You’d read the book before seeing the film, and it’s the same with understanding how to read a map before you go on a hike." We’re standing in the early morning mists in Jamieson Valley, in the Blue Mountains, as our guide, Caro Ryan from Lots a Fresh Air (www.lotsafreshair. com), prepares us for a morning of hiking and exploration. Her enthusiasm for map reading and understanding her beloved mountains is infectious. The sun may not have peeked over the towering ridges, but we – two adults and two children—are fired up and can’t wait to explore.

Our goal today is to explore the Jamieson Valley, a few kilometres south of Katoomba, the main town in the Blue Mountains. Caro, a deputy unit commander with the NSW SES Bush Search and Rescue team, is passionate about visitors to the area discovering the magic of the mountains as well as understanding the risks of exploring the trails. Her advice is sensible, and she takes pains to encourage people to explore without putting themselves or others at risk. "Choose a hike that’s within your capabilities," she says. "Be realistic about your fitness levels and capabilities; there are a lot of stairs and inclines, and it takes

a toll on your body. Take water, snacks, and first aid supplies, and always let someone know you’re going on a walk and where you intend to be." She’s right. Our four-hour trek is tiring but worth it. The views over the valley and mountain range are breathtaking, as the eucalyptus-hued mountains glimmer in the winter sunshine. The day before had seen a late-season snowfall, blanketing the picture-perfect towns of the mountains in inches of white powder. Clumps of snow still clung to the branches, and small puddles iced over, adding to the story-telling element of our hike.

There are many stories to hear in Katoomba. One of the most famous Dreamtime stories of the Blue Mountains is the tale of the Three Sisters. According to the legend, there were three beautiful sisters from the Katoomba tribe who fell in love with three brothers from the neighbouring Nepean tribe. However, tribal law forbade them to marry. As a result, a powerful elder turned the sisters into stone pillars to protect them from harm during a tribal battle. He intended to reverse the spell after the danger had passed but was killed in the conflict. The sisters remain as the striking rock formation we are hiking today.

The Blue Mountains are home to significant rock art sites, which serve as important cultural and historical records for the Indigenous peoples. Part of our walking journey through Wentworth Falls and Jamieson Valley gave Caro the time to share some of these stories, along with many of her own escapes. so captivating, in fact, that our four-hour trek passed by in a flash (and without complaint) by even the smallest family member.

The Blue Mountains are perhaps the perfect family holiday destination. It may be due to the numerous outdoor activities guaranteed to keep all family members happy or the wide range of award-winning restaurants and cafes to enjoy the local produce. Whether you prefer a hearty hike over the hills or would prefer to sip wine by the fire, there’s something for everyone to enjoy.

What to do

After our morning’s trek, we gave our feet a rest and jumped on the Blue Mountains Explorer Bus sightseeing tour of the main tourist strip (www.explorerbus.com.au).

The hop-on/hop-off activity, uniquely held on a refurbished London bus, gave us the perfect view of the area, sailing high over the streets that clung to the side of the cliffs. There’s time to enjoy the majestic views at the various stops, and the drivers are a wealth of local knowledge.

Make sure you take the time to visit each of the jewel-like towns that make up the necklace of the mountains: Leura, Katoomba, Blackheath, and Wentworth Falls are just a few of the many beautiful places to visit to shop, stroll, and sip. There are mouthwatering chocolate shops, designer clothing stores, old-fashioned diners, record stores, and art galleries to be discovered. You can spend hours wandering from store to store, stopping only to refuel at the many delicious cafes or restaurants. We made sure we had booked a table at the Avalon in Katoomba. Once the Savoy Theatre, the restaurant and café retained their theatrical past, with costumes, art, and décor on display and as delicious as the menu. Our window seat gave us views over Leura and Jameson Valley, so time your booking for lunchtime or for sunset. The restaurant also hosts local musicians and DJs, along with different events to highlight the wide range of cultural talent in the area. (www.avalonkatoomba.com.au)

When we were done exploring the hiking trails and offerings of the high streets, we rejuvenated with a cocktail or two besides the fireplace at the newly opened Kyah Hotel. The modern mountain retreat boasts the hotel, onsite restaurant Blaq, and newly opened spa. Billed as ‘what happens when fresh mountain air collides with playful Palm Springs-inspired design’, Kyah’s décor successfully competes with its location: think on-trend archways, curves, and cutaway interiors; art deco-inspired furnishings; and an abundance of space. The revitalised hotel comprises three separate accommodation buildings (each named after one of Katoomba’s famed Three Sisters) that flow into a welcoming central lobby and entertainment hub.

The highlight of our stay here was Blaq (named for its location, Blackheath), overseen by Executive Chef Mate Herceg (who is also the General Manager). His mouthwatering menu focuses on a garden-to-plate philosophy that allows the best fare of the Blue Mountains to shine by prioritising hyper-local, seasonal, and sustainable produce. Our meal here was memorable for all the right reasons: melt-in-the-mouth meats, crispy fries, and decadent deserts put the icing on our perfect day.

When we were ready to lay our weary heads to rest, we headed to our generous two-bedroom suite, which sleeps up to five people. Kyah also offers different room formats and configurations for those travelling with families.

The next morning, we were feeling the effects of our hike, so we headed to the sauna and wood-fired outdoor hot tub— a relaxed start to the day and a muchappreciated respite to slow down and enjoy the ocean of greenery that was so different from home yet just as stunningly beautiful.

5 Ways to Boost Your Sleep and Maximise Your Energy Every Day!

Sleep is one of the most underappreciated aspects of overall health, one that’s often sacrificed in the short-term where the results come to fruition in the long-term. Not getting enough sleep can lead to hormone imbalances, increased appetite (therefore weight gain), lack of recovery which can lead to injuries and lower mental cognition capacity.

The simple habit of sleeping 8 hours each night can lead to being a strong, healthy, full of energy human with a firing brain and perfect function, yet many of us can’t seem to get it right. We play on our phones, have irregular bed times, have too much alcohol which leads to functioning nowhere near our capacity.

Let’s take a look at 5 simple ways to boost your sleep

1. Be consistent: Set a regular bed time and wake time. Just like setting your alarm for work each morning, set an alarm to go to bed each night to remind you to be in bed to get your full 8 hours. Creating that routine of consistent sleep timing will help your body fall into a great maintainable pattern.

2. Set your bedroom up for optimal sleep conditions. Make sure the room is quiet, dark, cool and without distractions that could keep you awake. Having a winddown routine can help signal your brain that it’s time to get some rest.

3. Stop viewing devices around bedtime. Get into the habit of putting your phone, iPad, laptop or TV away from you before sleep. Entering bed time, we want to calm our brain down to prepare to sleep rather than stimulating it with sensory overload from screens.

4. Avoid large meals, caffeine and alcohol around bed time. Taking in large servings of the above means your body needs to break down this food or drink before it can enter deep sleep, therefore your metabolism is sped up to work through and process the nutrients. This doesn’t allow the body to fully go into a deep sleep to relax.

5. Exercise daily. Sometimes after a large day at work and/or exercise we feel as though we are so tired that we fall asleep as soon as the head hits the pillow. On the opposite end, when not exercising and stimulating blood flow we won’t burn energy and feel the need to rest and recover at night which leads to restless, broken sleep.

Egg

-cellent

Wholemeal Date and Walnut Loaf

Prep time 15 minutes

Cook time 50 minutes

Serves 8

Difficulty Easy

Ingredients:

• 2 eggs, lightly beaten

• 1 cup dates, chopped

• 3 tbsp butter

• 1 cup brown sugar

• 1 cup water

• ½ cup walnuts, chopped

• 1 cup self raising flour

• 1 cup wholemeal flour

• 1 tsp baking powder

• Spray oil

• Icing sugar for dusting

Method:

1. Preheat oven to 180°C.

2. Place dates, butter, sugar and water in a saucepan and stir over medium heat gently bringing to the boil. Remove from heat and set aside to cool.

3. Place mixture into a bowl and add eggs, walnuts and wholemeal flour, then sift over the self raising flour and baking powder.

4. Spray a 15cm x 25cm loaf tin with spray oil, line with baking paper and spoon in the mixture.

5. Place into the oven and bake for 45 – 50 minutes or until fully cooked. Remove from the oven to cool for 10 minutes, then turn out onto a cooling rack.

6. Dust with icing sugar, slice and serve.

Cheese and Broccoli Fingers

Tips & Hints

• Great in a lunch box or served with soft cheese or blue cheese.

• This loaf is suitable to freeze. Slice it up and freeze so you can toast up a slice whenever you like

Method:

Prep time 15 minutes

Cook time 45 minutes

Serves 4

Difficulty Easy

Ingredients:

• 2 head of broccoli (650g), cut into florets

• 5 eggs

• 1 cup light thickened cream

• ½ cup self raising flour

• 3 green shallots, thinly sliced

• 1 cup grated tasty cheese

• ¾ cup finely grated parmesan

• Micro herbs, to serve

1. Preheat oven to 180C. Grease and line a 30cm x 20cm x 3cm deep lamington pan with baking paper.

2. Half fill a medium saucepan with water and place over a high heat. When water comes to the boil, add broccoli and cook for 5 minutes or until just tender. Drain and rinse under cold water. Roughly chop.

3. Whisk eggs, cream, flour, salt and pepper (if desired) in a large bowl. Add broccoli, shallots, ¾ cup tasty cheese and ½ cup parmesan. Stir until well combined and season with salt and pepper. Gently pour mixture into prepared cake pan and spread evenly. Sprinkle with remaining tasty and parmesan cheese. Bake for 35 minutes or until golden and set.

4. Cut slice into wedges or fingers and serve sprinkled with micro herbs.

Carrot and Muesli Muffins

Method:

Prep time 15 minutes

Cook time 20 minutes

Serves 4

Difficulty Easy

Ingredients:

• 4 eggs

• 300g wholemeal self raising flour

• 300g muesli with mixed fruit*

• 200g Carrots, peeled and grated

• 160g brown sugar

• 1 tsp ground cinnamon

• 165ml olive oil

• 12 muffin papers

1. Preheat the oven to 180°C and place muffin papers into a large muffin tin.

2. In a bowl combine flour, muesli, carrot, sugar and cinnamon.

3. Lightly whisk the eggs, add the oil and pour into the flour mix. Mix with a wooden spoon until well combined.

4. Spoon evenly into the muffin tins. Place into the oven and bake for 15 minutes. Insert a skewer into the middle of one of the muffins and if it comes out clean the muffins are ready. Rest in the tin for 5 minutes, then transfer to a cooling rack.

Can be eaten warm or cool. Refrigerate in an airtight container if not eating same day, or freeze for up to 1 month, and remove from freezer to thaw when ready to eat.

Tip

• You’ll achieve the tastiest result if you select a muesli that is full of fruit!

Air Fryer Taco Boats

Prep time 15 minutes

Cook time 45 minutes

Serves 4 boats

Difficulty Easy

Ingredients:

• 8 eggs

• 2 tablespoons milk

• 2 teaspoons garlic powder

• 1 bunch broccolini, trimmed and cut into 4cm lengths

• 2 tablespoons olive oil

• 200g button mushrooms, sliced

• 2 cups (240g) grated cheese

• 8 Stand ‘n Stuff soft tortilla boats

Method:

1. Whisk eggs, milk and garlic powder together in a large bowl.

2. Steam, microwave or boil broccolini until just tender. Cool under cold water to prevent overcooking. Drain and set aside.

3. Heat oil in a frying pan over mediumhigh heat. Cook mushrooms until golden and softened, about 5 minutes.

4. Sprinkle half the cheese into the base of 8 tortilla boats. Divide mushrooms and broccolini into boats, pour ½ cup of egg mixture into each. Sprinkle with remaining cheese. Place 4 boats into an air fryer basket and cook at 160°C for 20 minutes. Repeat with remaining boats.

Tips & Hints:

• Oven method: bake in oven 180°C (fan-forced) for 25 – 30 minutes.

• Store cooked taco boats in the refrigerator for 2 days, or wrap and freeze separately for 1 month. Defrost in the refrigerator overnight. Reheat in the microwave, or in the air fryer on low for 10 minutes.

• Place unused tortilla boats in a sealed container and refrigerate or freeze.

• Other flavour combinations include chicken and corn, pesto and salami or feta and spinach.
