Welcome to our first official edition of 2024! For many people, the start of a new year means making a list of resolutions with the hope of a better year. We don’t always stick to them, try as we might. For the last few years, I’ve chosen a word instead of a resolution for the year ahead. A word that sums up the way I’d like to live my life for the next 12 months.

As a counsellor dedicated to supporting individuals on their journey to self-discovery and growth, I often find that one of the most transformative steps a person can take is letting go of the past and embracing the potential of the future. It’s a powerful process that can bring about positive change and empowerment.

Last year, my word was ‘embrace’; the year prior, it was ‘focus’; and the year before that, it was ‘calm’. There was a reason for each, and I did my best to embody those words every day. This year, I’m choosing ‘truth’—living my truth, speaking the truth, accepting the truth about others and about life, and most importantly, being true to myself. It’s hard to believe we’re already in the second month of 2024. As always, January has flown by, and we now find ourselves in the month of love.

Letting go of the past doesn’t mean denying its existence or diminishing its impact. Instead, it involves acknowledging the past as a stepping stone, a series of lessons that have shaped who you are today. By releasing the weight of old grievances and forgiving both ourselves and others, we create space for new opportunities and personal growth.

At Get It magazine, Valentine’s Day (and month) means celebrating love, but not just romantic love. We celebrate family love, friendship, furbaby love, and, most importantly, self-love. In this month’s issue, we’re looking at how to spice up your love life, no matter what stage of your relationship you’re in, as well as how to get your head around dating apps if you’re jumping on board later in life or after a long-term relationship (that precedes online dating).

The past, with all its challenges and triumphs, can be a source of valuable lessons. However, holding onto it too tightly can hinder progress and limit our ability to envision a brighter future. Embracing the future is about recognizing that each day offers a new canvas on which to paint the life you desire.

Which brings me back to the word of the year. This year, I went rogue and chose a secondary word… and that word is FUN! That one is simple; I want to have more of it, and I hope you do too. HAPPY 2024!!!

Empowerment comes from understanding that you have the ability to shape your own destiny. It involves setting goals that align with your values and aspirations, and taking deliberate steps towards achieving them. By focusing on the present moment and making choices that reflect your true self, you gain a sense of control over your life.

ILLUMINATING CREATIVITY ON THE GOLD COAST Queensland Arts and Fashion Festival (QAFF) is set to make a lasting impact on the Gold Coast’s cultural landscape through its very own Fashion Week in May this year.

As a fun exercise, there are plenty of tools and questionnaires online you can each answer about your love life, or get old school with some paper and pens and brainstorm new ways to connect with one another.

Expand intimacy

Intimacy doesn’t just mean sexual contact or even kissing – it might be cuddling, caressing or simply being close. Avoid making intimacy a ‘routine’ and find ways to connect physically across the day, or if you can’t be together, send a cheeky text or photo during work hours (making sure no prying eyes will catch it!). Make time for a regular date night, even if this is cooking at home with phones away – low tech often leads to better connection.

Spicing it up in the bedroom can conjure up images of the 50 Shades of Grey series, but you don’t need to take it all so seriously. See what household items you could convert into creative bedroom accessories, mix up your lingerie with some new designs and enjoy playing – keep the laughs coming, as the more comfortable you both are, the better. No matter what stage your relationship is at, thinking about how you can better connect with your partner physically and emotionally will only bolster and strengthen your connection. It’s never too late to try something new, and with so many resources available online, there’s no excuse not to experiment!

: s p p A Dating The Good, The Bad & The Must-Knows Launching yourself back into the dating scene after a significant longterm relationship can be daunting even for the most confident of people. Matchsmith founder (and Get It Magazine journo) Holly Bartter shares with us her tips and tricks for starting your next romantic chapter after 40, staying safe and putting your best (digital) foot forward.

What dating apps are the most reliable, and which do you tend to prefer for your clients, especially those dating after divorce? With new apps coming out regularly, I lean towards my tried and true favourites – Bumble, Hinge, eHarmony and occasionally Tinder for the sheer volume. Bumble allows women to message their matches first, giving them an increased sense of control and screening, where Hinge is designed to create quality matches. Most importantly, avoid very niche or very new dating apps unless you know they work for you – you need the critical mass of users to feel motivated. This is especially true for my clients who have recently ended long term relationships, small wins early on are important. GET IT February 2024

What are your tips for creating a winning dating profile? Photos are king! While good banter and a great bio helps, you need to connect visually on these dating apps, so arm yourself with some headshots and a full body shot in the mix – avoid overly professional images or very blurry ones, both of which can be a red flag online. Get to know what you’re truly looking for and be able to articulate this. Are you seeking a companion as a friend that might develop into something more, or are you looking for marriage again? Authenticity is important, but don’t feel compelled to overshare – keep an air of mystery so that you’ve still got plenty to talk about on your first dates. 14

How can we stay safe while dating online?

How can we stay motivated to find new love?

Remember that you’re in control – you have no obligation to reply to a message, hand out personal details or accept an offer of a date if you don’t feel comfortable, or if something doesn’t seem right. Keep an eye out for profiles that appear “too good to be true” with perfect stock images and users that are pushing to exchange phone numbers and email addresses too soon.

Take breaks if the dating apps are getting too much, and remind yourself what the bigger picture is – dating apps are just a tool to get to the end result, and the dating should come OFF the app and into real life as soon as possible. Be open to meeting new people and honing your conversational skills – every date is one closer to your next great love.

Always meet in public places for your initial dates, and don’t be afraid to call out bad behaviour, whether this is unsolicited photos or messages, inappropriate conversations or aggression – you don’t “owe” anyone courtesy if they aren’t showing you the same.

Avoid the waste by wrapping presents using reusable tea towels and drawstring bags, baskets, clothing or boxes. Who doesn’t like gift wrap that is both cute and practical?

Make your home more sustainable While this can sound daunting, there are some quick changes you can make in your home to make it more sustainable, which can all be found on Green Specs. Inspired by the spirit of a coastal palette, and the pleasures of eating together, the menu is brimming with a bounty of Australia’s freshest and finest ingredients, with a particular focus on seafood – think freshly shucked oysters, bugs, and lobster. The setting sun which bounced off the gleaming silverware, throwing a golden hue over the diners, added to the romantic mood. (For an unforgettable fine dining experience, you could also opt for the Michelin-starred Coral Tang Court.) After a gloriously restful sleep, we headed upstairs to the indoor spa and fitness centre. As we enter, we pass the most stylish kids’ club we’ve ever seen. You’ll be sure to meet your workout goals when you’re lifting weights while soaring over the ocean. If you prefer the great outdoors, there’s the new 36km ocean walk to explore, or you can just flop down beside the outdoor pool. The town of Maleny is the ideal getaway for those seeking good food, breathtaking scenery, and, most of all, a place for you and your loved one. Words: Charmaine Yabsley

As we wind our way through to Maleny, Sunshine Coast’s pretty hinterland town nestled in the picturesque Blackall Range, our stress levels drop the higher we climb. If you’re not in the driver’s seat, then you’ll have the opportunity to take in the surrounding mountain panorama, pierced by the showstopping Glasshouse Mountains. As we head further upwards, the scenery becomes even more green and lush: rainforests are plentiful here, complete with easy-to-navigate walking tracks and waterfalls, where you’ll feel that you’ve not only left the real world behind, but entered a completely different era.

Victoria Manning, has overseen the transformation of this 185-acre estate since 2018. The gardens are a welcome carpet of alternanthera, which stretch out like the piped flowers on a wedding cake, while the agapanthus surrounds the purple leaves like waiting guests.

We drive through the market town of Maleny, a charming, friendly, and stylish street of cafes, food stores (including the eponymous Melany Food & Co), homeware stores and bookshops. There are charming alleyways to explore, pizza and cocktails bars that offer live music and even its very own brewery, The Brouhaha. The town is perfectly sized, making it easy to walk from one end to the other. We collect our supplies and goodies, before we head to our destination, Maleny Country Estate.

The estate is primarily a wedding venue – and what a memorable place it would be to tie the knot! The five-bedroom villa, which features, two living areas, three bathrooms and two kitchens and a huge games room, is handsomely and authentically decorated, with local art, and restored antiques, echoing the romantic nature of the venture. “We have tried to give the property the respect it needed,” says Amanda as she shows me a hair and makeup room, beautifully finished bedrooms and bathrooms and the jewel, the bridal suite. “We’ve spent a lot of time finding pieces that help us show the story of the estate and become part of our guests’ story too.” Amanda says many guests stay for several days, hosting dinners with family and bridal party members, or friends rent the space for an unforgettable significant birthday or event.

If the drive into Maleny was breathtaking, our entryway to the estate is a romance novelist’s dream come true. The driveway is flanked by liquid amber maple trees, arms reach across the space to form a canopy for guests to arrive under. We are welcomed by owner Amanda, who, alongside her father Michael Pelling, and stepmother GET IT February 2024

GET IT I TRAVEL The newest addition to the grounds, which already boast a chapel and belltower that fulfils the dreams of the most romantic bride, a tennis court, pizza oven, and croquet grounds, is the 20-metre swimming pool abutted by a newly-built summer kitchen and bar. Guests are invited to bring their ingredients and cook on the barbecue and enjoy the view. “We have guests organise a private chef to cook for them, or we can organise platters or readyprepared meals,” says Amanda. Perched on the edge of the estate’s hillside, the property also offers 8 chalet-style houses, a cottage straight out of a fairytale, and another four-bedroom apartment. It’s the ideal space for guests of the wedding party, part of a large group who have hired the grounds, or who are looking for a romantic escape for two (children are also welcome). Whether it’s the wedding venue, and therefore romantic theme that floats in the air alongside the tropical scent, or the sound of birds and wildlife calling, the moment you step foot on the estate, your heart will feel full of love.

There are vases of wildflowers, local art framed in antique wood and tongue-andgroove panelling, painted a soothing light grey. The beds are high and extremely comfortable. Again, attention to detail shines through. “Victoria sewed the bed runners and fabric headboards herself,” says Amanda. It’s these personalised touches that make us feel that our home has been created just for us and our romantic getaway.

Our cottage, built in the A-frame, chalet style, is Tardis-like with three double beds, carved out of a space that makes me feel as though I’m in the pages of Anne of Green Gables. Here again, the decor is both relaxing and impressive.

Outside, the deck overlooks the valley below, and you truly feel that you are floating high above the ground. The cabins are set far apart from your neighbours, too, which adds to the feeling of complete solitude and relaxation. Our cottage boasted a wonderful bathtub set inside a hollowed-out water tank. Lying amongst the bubbles, a glass of wine in hand, while listening to the laugh of the kookaburras as the sun sets, is a highlight of our stay. In front of the bathtub is a circular firepit with comfortable seating, for marshmallow roasting and wine sipping. (Our visit was in summer and too hot to light the fire, but in winter, this would truly be a scene straight out of a romantic movie.) The cabins are fully self-contained: it’s a wonderful idea, allowing you to enjoy your spoils from the town’s main street at the outdoor dining table. After we explore the nearby waterfalls and return for a drink on the terrace, our meal is all the tastier with the addition of the view and soft pink sunsets. As we enjoy a glass of wine, a delicious and filling platter from Maleny Food & Co of cheeses, quince, quiches and freshly-baked baguette, the clouds part to reveal a soft pink, heartshaped glow: the perfect ending to our romantic escape.

Twist and shout You’ll be shouting about these delicious recipes putting a yummy twist on basic ingredients. Vegetables never tasted so good.

Broccoli Falafels with Buckwheat, Egg and Herb Salad Prep time 20 minutes Cook time 30 minutes Serves 4

Ingredients: Broccoli Falafels: • 300g broccoli, coarsely chopped • 400g can chickpeas, drained and rinsed • ½ cup chopped mint leaves, plus extra to serve • 2 green onions, sliced • 1 clove garlic, crushed • 2 tsp ground cumin • 2 tsp ground coriander • 1 tsp baking powder • 1 tsp salt • 2 tbsp quinoa flour Buckwheat, Egg and Herb Salad: • ½ cup (85g) buckwheat kernels • 3 eggs • 1 bunch continental parsley, leaves chopped • 1 bunch coriander, leaves chopped • 1 small red onion, finely chopped Dressing: • 2 tbsp lemon juice • 1 tbsp apple cider vinegar • 1 small clove garlic, crushed • 1 tbsp olive oil • Salt and freshly ground black pepper • ½ cup (125ml) Greek yoghurt GET IT February 2024

Method: Broccoli Falafels: 1. Preheat oven to 200°C/180°C (fan-forced) and line a baking tray with baking paper. 2. Place broccoli, chickpeas, mint, green onions and garlic into the bowl of a food processor. Pulse until the mixture is finely chopped. Add remaining ingredients and process until mixture resembles fine breadcrumbs. 3. Divide the mixture into 12 balls and shape into small patties approximately 1cm thick. Place onto prepared baking tray, spray both sides with cooking spray and bake 15 minutes. Turn over, bake a further 10 minutes. Set aside.

Buckwheat, Herb and Egg Salad: 1. Meanwhile, cook buckwheat in boiling water for 15 minutes. Drain and refresh with cold water. Set aside. 2. Boil eggs for 5 minutes for medium boiled eggs. Drain, cool and peel. Cut in half. Set aside. 3. Transfer buckwheat to a large salad bowl. Add parsley, coriander and onion and toss to mix evenly. Dressing: 1. Whisk lemon juice, apple cider vinegar, garlic and oil. Season with salt and freshly ground black pepper. Drizzle ¾ over the salad and mix well. Mix remaining into the yoghurt. 2. Top buckwheat salad with eggs and serve with broccoli falafels and yoghurt. Garnish with extra mint.

Tips: • Wild rice, broccolini, eggs, almonds and dressing can all be prepared a day ahead and refrigerated separately. • Wild rice can be cooked in a rice cooker. • Substitute wild rice with black rice or brown rice. • For a shortcut, use microwave rice sachets.

Ingredients: • 150g wild rice • 4 eggs • 1 tablespoon olive oil • ¼ cup (65g) whole raw almonds • Salt and pepper to taste • 2 bunches broccolini, ends trimmed • 5-6 red radishes, trimmed and cut into wedges • 3 green onions, sliced • 1 small pomegranate, seeds removed • 1 ripe avocado, peeled and quartered Dressing: • 2 tbsp red wine vinegar • 2 tsp Dijon mustard • 3 tbsp extra virgin olive oil • Salt and pepper to taste

Method: 1. Cook wild rice according to packet instructions. Drain and set aside. 2. Cook eggs in a saucepan of boiling water for 5 minutes or until medium soft. Remove and cool immediately with cold water to stop cooking. Peel and set aside. 3. Meanwhile, heat oil in a non-stick frying pan over medium-high heat. Add almonds and pinch of salt and toss in hot pan for 1–2 minutes or until toasted. Transfer to plate and coarsely chop once cooled. 4. Cut broccolini into bite size pieces. Cook in the same pan as the almonds were toasted in, until lightly charred and just softened. Remove and set aside. 5. To make the dressing, whisk red wine vinegar, mustard, and season to taste with salt and pepper. Drizzle in olive oil and mix well. 6. Combine wild rice, charred broccolini, radish, green onion, almonds and pomegranate in a large salad bowl. Pour over half the dressing and toss gently to coat. 7. Cut eggs in half and arrange over salad with avocado. Drizzle over remaining

Wholemeal Date and Walnut Loaf Prep time 15 minutes Cook time 50 minutes Serves 8

• 160g (1 cup) pitted dried dates, chopped • 100g unsalted butter, chopped • 220g (1 cup) firmly packed brown sugar • 2 eggs, lightly beaten • ½ cup walnuts, chopped • 160g (1 cup) wholemeal plain flour • 150g (1 cup) self-raising flour • 1 teaspoon baking powder • Smooth ricotta, to serve • Honey, to serve

1. Preheat oven to 180°C/160°C. Lightly spray a 11cm x 22cm (base measurement) loaf tin with oil and line base with baking paper 2. Place dates, butter, sugar and 180ml (3/4 cup) water in a saucepan and stir over medium heat gently bringing to the boil. Remove from heat and set aside to cool. 3. Place date mixture in a large bowl. Add eggs, walnuts and wholemeal flour, then sift over the self-raising flour and baking powder. Spoon mixture into prepared tin. 4. Bake for 45–50 minutes or until golden and a skewer inserted into the centre comes out clean. Set aside to cool in tin for 10 minutes before turning out onto a wire rack. To serve, toast slices and spread with ricotta and drizzle with honey. Or spread simply with butter.

Ingredients: • 3 egg yolks • 1 whole egg • ½ cup (110g) caster sugar • 2 tsp lemon zest • ⅔ cup (160ml) lemon juice (approx. 2 lemons) • 125g chilled butter, diced • Pancakes and blueberries to serve

GET IT I RECIPES Tips: • Begin checking the thickness of the curd at 6 minutes cooking time. • Dip a spoon into the curd then run your finger over the back of it. If it leaves a clean line in the curd, it’s cooked enough and ready to cool. • Microwaves vary in type, wattage and size, so cooking times may vary. Use cooking times as a guide. • Curd will thicken as it cools. • Spoon into a container, cover and refrigerate for up to 2 weeks.

Chocolate Hazelnut Crêpe Cake with Chocolate Sauce Prep time 10 minutes Cook time 20 minutes Serves 4 or 10-12 crêpes

Crêpes: • 2 eggs • 2 egg yolks • 125g plain flour • 300ml milk • ½ tbsp castor sugar • oil spray • 250g hazelnut spread • 2/3 cup thickened cream, whipped

Chocolate Sauce: • ½ cup thickened cream • 1 tbsp brown sugar • 100g dark chocolate, roughly chopped or broken into pieces

Tips: • Add 1 tbsp of hazelnut or coffee liquor to the chocolate sauce for that special indulgence.

Place eggs, yolks, flour and milk in a bowl and using a whisk, mix to a smooth batter. 2. Heat a non-stick frying pan, and spray lightly with oil. 3. Pour in some batter and swirl the pan around to evenly and thinly cover the base. Cook until lightly browned before turning, then cook other side until lightly browned and cooked through. Set aside and repeat the process until all of the batter is used. 4. For the chocolate sauce, place cream and sugar into a saucepan and bring to a simmer. 5. Add chocolate, then remove from heat and stir until smooth. 6. Place into a jug and set aside to cool 7. Place one crêpe onto a cake stand or plate, spread with hazelnut spread and whipped cream. Spread another crêpe with hazelnut spread and whipped cream, then place on top of the first crêpe and repeat this process until the last layer of crêpe. 8. Before serving, pour the chocolate sauce over the crêpes. 9. Serve with fresh strawberries, raspberries or blueberries.

Method: 1. Combine egg yolks, egg, sugar, lemon zest and juice in a large heatproof microwave-safe bowl. Whisk with a balloon whisk until combined. 2. Add the diced butter and place onto the microwave turntable. 3. Follow manufacturer’s instructions to reduce microwave power to 50%. Cook uncovered for 7–10 minutes, stirring every minute until mixture is thick enough to coat the back of a wooden spoon. (See tips) 4. Cover the curd surface with plastic wrap to prevent it from forming a skin. Let cool to room temperature, then refrigerate until cold. 5. To serve, spoon lemon curd onto pancakes and top with fresh blueberries 31

Get more out of your

summer fruit

1. With the current cost of living and the price of healthy food on the rise, we know how frustrating it can be to throw away forgotten foods from the back of the fridge. Not only is it costing you money, the environmental impact is huge with annual food wastage totalling approximately 1.3 billion tonnes (that’s one trillion three hundred billion kilos!). Almost half of the fruit and vegetables produced worldwide fall within this number. Understanding how to preserve the freshness of your fruit and veg can save you time, money and be more nutritious. As a Nutritionist for The Fast 800 programme, here are my top tips to extend the life of fresh produce and minimise food waste.

Ethylene is a natural gas produced by fruit and can accelerate the ripening process of ethylene-sensitive fruit and vegetables. To prevent this from happening, keep fruit that is high in ethylene gas like apples and bananas separate from your other fruit and veg (unless you’re trying to speed up the ripening of your avocados).

I nvest in storage containers with airtight seals

Investing in quality storage containers will slow down the oxidation process and preserve nutritional content. Airtight containers create a protective barrier that helps maintain the purity of the produce – glass is ideal, but any container will do. This simple switch can make a significant difference in extending the shelf life of your fresh fruits and vegetables.

T ailor the temperature of your storage

Different types of fruits and vegetables thrive in varying temperature conditions, so by tailoring the temperature of your storage you can significantly prolong freshness. For example, tomatoes are best stored at room temperature, while leafy greens prefer cooler environments. 35

Shop smarter

Smart shopping is a key component; reducing food waste while maximising nutrient variety. By incorporating smart shopping practices and meal planning, you not only enjoy the benefits of fresh produce and cooking, you will minimise unnecessary waste.

Befriend the freezer

Frozen vegetables can be just as nutritious as fresh, as they are snapped frozen when harvested. They can also be far more costeffective as they’re often cheaper and have a longer shelf life once purchased. Incorporate frozen produce into smoothies, stir-fries, and soups for a quick and nutritious addition to your daily meals.

Try Top-to-Tail cooking

Embrace “top-to-tail” cooking for fruits and vegetables by using the entire plant, including stems, leaves, and peels, in your recipes. This is not only good for the planet, but also enhances the nutritional profile of your meals. An easy switch is to stop peeling your veg, just give them a thorough wash. GET IT February 2024
