How are we halfway through 2021 already? The year is absolutely flying by, with life after COVID-19 seeming to zoom along much faster, despite having less to do. The arrival of June also marks the start of winter. And while that means we get to pull out our jeans and boots (my all-time favourite footwear), the cooler weather doesn’t mean we have to coop ourselves up indoors. Because in Queensland, the cooler weather is just that – cooler. And since we’re blessed with beautiful weather all year round, there’s no good reason not to get out and enjoy everything the Gold Coast, and its surroundings, has to offer.

I have been at the Institute for over 10 years. 2. Take us through a day in your life. Dr Lucy Shewell
Balancing research, mentoring, grant applications and more, Research Scientist Dr Lucy Shewell talks to Get It Magazine about memorable career moments, exciting scientific discoveries and working on the Gold Coast at Griffith University. 1. Tell us about your work, and how did you get started in your career? I’m a research scientist at Griffith University’s Institute for Glycomics. My
Typically, I will be planning and carrying out experiments in the lab, mentoring students, analysing data, writing up data for publication, or preparing grant applications – sometimes trying to balance these things all in the same day. It’s not always easy, and there are many late finishes and work to be done at home. 3. What is something that surprised you about your field of work? It surprises me in research where your projects can end up. For example, we were working on a bacterial toxin that binds to a particular sugar, called Neu5Gc. It has been known for many years that cancer cells make this sugar while healthy cells do not. We modified this bacterial toxin to make it
recognise the Neu5Gc sugar better, and now are developing this into a cancer diagnostic test! 4. What are the perks of studying with Griffith University? Well for starters, you can’t beat living on the Gold Coast; the lifestyle is great and the weather is beautiful. Add to that the many study opportunities that Griffith University offers. At the Institute for Glycomics in particular, students get the unique opportunity to study alongside some of the world’s most outstanding research leaders and research scientists in the fields of cancer and infectious diseases, with access to state of the art facilities and equipment. It’s a winning combination. 5 . What’s your best piece of career advice? Say yes to opportunities that come your way, even if you don’t necessarily want to, as you never know where these opportunities may lead you.

Tell us about what you do, and how did you get started? I think of myself as a virologist researcher by day and a medical doctor by night. Some of my past roles have ranged from being a high school teacher, to science communicator, to medical doctor. The central theme that applies to everything I’ve done comes down to my love for science, and giving back to the community.

While you might not recognise the name at first, the Institute for Glycomics works to research and combat some of the world’s most serious diseases, and it’s all happening right here on the GC.

The Institute wasted no time in acting against COVID-19, and its researchers are working around the clock to fight this disease. Four teams of expert scientists from the Institute are using a multi-pronged approach to target the virus SARS-CoV-2 to discover new vaccines and drugs to prevent or cure COVID-19. Across the Institute, there’s clear recognition of the value of women in life sciences, with 49 per cent of its researchers being female, and active encouragement of employment and career progression for women in science. In addition, the Institute has established the Glycomics Circle, an impressive group of powerful women from the local community coming together with the sole purpose of supporting female scientists at the Institute for Glycomics. The women of the Glycomics Circle use their collective wisdom, connections and resources to raise funds and awareness for the Institute’s female researchers, students and facilities, and recognise their significant contributions to the Institute’s daily fight against diseases of global impact.
Calling the Gold Coast home, Griffith University’s Institute for Glycomics has been leading and facilitating essential biomedical research since 2000, boasting state-ofthe-art facilities combined with some of the world’s top researchers. The term ‘glycomics’ refers to the field that explores the structural and functional properties of carbohydrates (or sugars) and their roles in disease, and the Institute’s work is focused on identification, prevention and cures for cancers, infectious diseases and neurodegenerative disorders. With such unique research expertise, the Institute for Glycomics is the only one of its kind in Australia, and one of just a handful that exist around the world. Within the Institute, there are more than 200 working research scientists, research students and support staff, all striving to make the facility a world leader in the discovery and development of next generation drugs, vaccines and diagnostics for diseases that impact us globally.
that successfully eliminates mosquitoborne arthritis, current clinical testing for their malaria vaccine candidate (with malaria deaths topping 500,000 annually worldwide), vaccine development for the prevention of gonorrhea, and pre-clinical development for early detection of both breast and ovarian cancer, just to name a few. The arrival of the COVID-19 pandemic has reminded us all of the ongoing battle against global diseases, and for the Institute for Glycomics it presented a unique set of challenges. But with careful planning, their equipment and facilities were able to be maintained at a high level of operational capability with little downtime during 2020.
Collectively, the members have raised over $115,000, with these funds going towards supporting female early career researchers through scholarships, honours student scholarships, travel opportunities, and to aid the purchase of new equipment. Philanthropy plays an important role in progressing the Institute’s early-stage research, and 100 per cent of every donation goes straight to the laboratories. For the Gold Coast community, there are several ways we can contribute and engage with the Institute for Glycomics, either as an individual or as a corporate partnership. As 2021 unfolds, there’s no doubt that the Institute for Glycomics will continue to play a crucial role in our community and the world alike.
Founder and Director, Professor Mark von Itzstein AO, has international standing in glycoscience, medicinal chemistry and drug discovery, and he was awarded one of Australia’s highest honours in 2019, officially being named as an Officer (AO) of the Order of Australia in the General Division. In early 2020, he was also honoured with the Gold Coast Citizen of the Year award at the city’s Australia Day awards, a fitting way to mark the celebration of the Institute’s 20th Anniversary. – this weekend away was better than therapy! We’d been looking forward to this weekend away for months – no kids, no dogs, just the two of us, eating only local produce (that includes local wines!!) and breathing lots of country air. It didn’t disappoint – in fact, we loved it so much we’ve been back three more times. This is what the Scenic Rim does. The region is so authentic, that there’s no other place you want to be. Our weekend in Kalbar included staying at the incredible Herrmann House for two nights, visiting a carrot paddock (was carrotacular!), a long lunch at The Overflow GET IT June 2021
Estate 1895, firepit nights, an easy hike up Mt French, lots of time on beautiful country roads, cheese and kisses with camels! And it was better than any therapy session! Kalbar is an hour from Brisbane and about two from the Gold Coast. It’s a gorgeous town that’s home to around 1,000 people bang in the middle of carrot country (fun fact: each year the Scenic Rim produces 600 million carrots - if you put them end to end that would go around the world 2.5 times). Recent rain has brought the green, so there’s fat cattle in paddocks and happy crops readying for picking everywhere. It’s also one of the hubs for the famous Scenic Rim Eat Local Week that runs from June 29 through to July 4 eatlocalweek.com.au

We stayed at Herrmann House which is in a word, STUNNING. Originally, the site housed one of Kalbar’s oldest houses, until recently when the owners joined it with another historic Kalbar home to create this elegant homestead. The two beautifully restored and appointed homes are seamlessly joined by an extended BBQ and deck area. In total, four couples can stay in luxury (hint: it’s fantastic for a girl’s getaway). We preordered our Scenic Rim Farm Box which was waiting for us on arrival and brimming with local produce, wines and craft beers, which meant dinner was a breeze (even for a hapless cook like me). A special mention is needed for the CHEESE, particularly the Towri Sheep Cheese Blewe (blue), which is now a staple at home. With its designer
GET IT I TRAVEL interior, sleep-inducing king bed, six star linen, digital keys and stunning location, Herrmann House would not be out of place in the resort towns of Italy or Canada. This is what makes it so special. But it gets better – the awning in the deck area is home to a two Tawny Frogmouths, who have since had two babies which is wonderful (we haven’t BTW!!). HERRMANN HOUSE 37 George Street, Kalbar I like hiking alone and had the most therapeutic walk at Mt French (a short drive away) which rewarded me with a view back across Kalbar and the region, the perfect moment to appreciate the beautiful jigsaw of paddocks below. I could have stayed there all day, but I could hear the glorious calling of wine….. visitscenicrim.com.au/attractions/ national-parks-and-reserves/mountfrench/ Luckily, just 30 minutes’ drive away is The Overflow Estate 1895, a stunning vineyard and cellar door owned by the incredibly welcoming David Morgan. The winery spills down a gentle slope to the extraordinary Lake Wyaralong and is home to one of the best chefs I know, Richard Ousby. We had a lazy lunch off the menu (the roast pumpkin was magic), I had two glasses of the Montepulciano 2016 (wanted more) and we chilled. David told us that every one of their 2500 vines has a name and a personality, which put me to shame given often I can’t quite recall my kids’ names and we only have two!
Kalbar and home to hundreds of camels who love to smooch! This place is great for adults and kids. We fed the camels, took the dairy tour, leant lots, loved it and had a camelcino at the café! With full bellies and thankful minds, we cosied up for a quiet night in, ran a bubble bath and added boutique local bath products from Coco & Myrtle and stoked the fireplace. The days end in spectacular fashion at Kalbar, and watching the sun go down was really special. For the first time in about 10 years, we actually slept in (it’s that country air and food!)! We grabbed brekkie from Lovett at Kalbar at 79 Edward Street, Kalbar. This place is COOL! It’s home to famously local pies and sausage rolls, sandwiches and brekkie bites that absolutely hit the spot, and the best coffee we’ve had in ages. The cooler months are ahead of us, but in Queensland, our winters are normally beautiful sunny days with the perfect temperatures to be outside. Winter simply doesn’t stop us from doing what we love - spending time outside. For many of us, our outdoor spaces are our little oasis. It’s a space where we come together with our friends and families for Sunday lunches, afternoon drinks, a place where we can escape the inside and enjoy the fresh air. Being warm and comfortable for your afternoon gatherings is so important. This can easily be done by adding some throws and cushions. Adding textiles this way to your outdoor space will also help create a personal style, and is an easy way to connect the look and feel from inside to outside. Outdoor spaces are all about the ambience we create using different furniture and textiles. Another easy way to create the right vibe is through adding lanterns and solar lights. Don’t be afraid to go over the top, they can be easily placed in clusters on the table, on the ground or even hung from trees and plants! Wintertime is the perfect time for campfires and what better way to enjoy the outdoor than in front of an open fire with 20

Add some magic through lots of candles and mood lights, and for some added atmosphere, make sure you turn your tunes on. Updating your outdoor space doesn’t have to be difficult. The key thing to remember is that it needs to feel cohesive with your indoor space and reflect your personal taste and style. My Passion Gold Coast SUNS player Lucy Single sits down with Get It Magazine’s Holly Bartter to chat about the AFLW community, where she finds inspiration, and balancing work and play on the GC. GET IT June 2021

GET IT I REAL LIFE Just 18 years old, Lucy Single’s football journey began at Miami State High School, when she was asked to make up the numbers to qualify as a team in 2016. “My friend and I decided to try it out as a bit of fun, not knowing we would end up winning the AFL schools cup championship,” Lucy recollects. It was a significant moment for Lucy, who says her newfound joy for the game resulted in the continuation of her football experiences, which lead her to where she is today. In 2021, Lucy made her AFLW debut with the Gold Coast SUNS in round one against the Melbourne Demons.
“It is so important to have this network in my career in order to grow AFLW connections.”
And when she’s not on the field or in the gym?
She highlights the change in the women’s football space in recent years, which has seen increasing numbers of women drawn to the game.
“I’m currently working as a guest service agent and studying a bachelor of education, and when I have some time off, I will usually try to spend the day relaxing and recovering!” A Gold Coast girl, Lucy has several favourite places to relax and unwind.
BEING DRAFTED FOR THE SUNS WAS A DREAM COME TRUE
She’s played every game since, predominantly positioned in the midfield. “Being drafted for the SUNS was a dream come true and the experiences I have had this season will stick with me for the rest of my life,” she shares. As a new team member, Lucy has enjoyed the unique camaraderie that the sport provides. “After I was drafted, I felt as though I had gained 29 new sisters. It was a bit daunting being one of the youngest in the team but the older girls welcomed me with open arms,” she adds. As for the greater AFLW community, Lucy says it’s both supportive and exciting.
“Even close friends who have never touched a footy have joined their local football club! “That’s thanks to the exposure women’s footy has gained. The growth of women in sport inspires me day to day, so I can watch my younger sisters and future generations gain just as many opportunities as men receive.” Now in her off-season, Lucy is working closely with her coaches to maintain her strength and skills. “I’m currently doing two field, gym and running sessions per week,” Lucy explains.

“The Gold Coast is special to me - I absolutely love to go to the beach, or I will head to Springbrook and go for a bush walk.” As for international travel when it’s back on the menu again, Lucy is keen to explore. “I would love to go back to Osaka, Japan where my mum was born and also take a trip back to New Zealand.” While she’s only just beginning her glittering sporting career, Lucy’s favourite moment so far was kicking her first-ever AFLW goal against Carlton. “My teammates all got around me and I was lucky enough to have done it in front of a home crowd.” At the end of our conversation, Lucy shares with me her favourite quote: If you do what you love, you will never work a day in your life, and there’s no question that Lucy is following her passion and purpose all the way.

Mocktail Hour!
Dry July is almost upon us, and this year, the campaign will raise vital funds for Australians affected by cancer. By taking a break from the booze, you’ll help provide invaluable services, such as cancer care nurse support, new wigs, transport, accommodation close to the hospital and many more. It can be tricky to find alcohol alternatives that both healthy and delicious though, so we’ve called on mixologist, Nat Battagalia, from Mindful Mocktails, to share her favourite mocktail recipes, guaranteed to deliver on flavour and fun, and are quick and easy to make at any time of the day!
Cherry Burst Ingredients 5 cherries roughly chopped 1 lime, quartered 6-8 mint leaves 1 cup soda water Sweetener of your choice to taste, optional (see notes)
Method Place chopped cherries and lime in a glass. Add a little sweetener if using. Muddle together for about 1 minute. If you don’t have a muddler, use the back end of a wooden spoon. The idea is to get it small enough to fit though a straw. Clap mint together in your hands a few times to release the scent and add to the glass. Give the mint a gentle press with the muddler. Add ice and top with soda water. Garnish with lime wheels, mint and/or extra cherries.

Pomegranate Fizz
Half a lime cut in wedges 6-8 mint leaves 250 mls diet ginger ale
Method Place lime wedges and pomegranate juice in a tall glass. Muddle until all the juice has been pressed out of the lime. If you don’t have a muddler, use the back end of a wooden spoon or similar. Clap mint leaves together in your hands a few times to release the scent and add to the glass. Give the mint a gentle press a couple of times with the muddler. Add plenty of ice to the glass and top with ginger ale. Stir well. Garnish with pomegranate seeds, mint and lime. 29

Rose Lemonade This pretty, refreshing drink is perfect for one or a crowd. It looks so pretty served in a jug for guests, just increase the quantities. Ingredients 1/3 cup water 1/3 cup sweetener of your choice 1/3 cup rose dried rose petals (found in health food shops) Lemon juice Sparkling water
Method Add water and sweetener to a small saucepan and dissolve over medium-high heat. Don’t let it boil - you don’t want to water to evaporate! Turn heat to low, add rose petals and stir. Leave on low until the colour fades from the petals. It will only take a few minutes. You can remove from the heat and leave it longer to seep if you want a deeper flavour/colour. Strain and leave to cool.
To Serve Place 2 TBS rose syrup into each glass. Add 3 TBS lemon juice to each glass. Top with sparkling water. Add more lemon juice depending on taste and enjoy! NOTE: This recipe will make 3-4 serves.

Ingredients
Method
3 strawberries, chopped
Add strawberries, basil, lime and sweetener (if using) to a glass.
4-6 basil leaves (depending on your taste preference)
Muddle together for about 1 minute. If you don’t have a muddler, use a wooden spoon or similar - anything that will ‘smoosh’ all the ingredients together!

Why should we take a break from alcohol? It’s a great opportunity to press pause and reset for the month of July. How does alcohol impact our bodies, minds and overall health? This definitely depends on the frequency and amount you consume, as well as your medical history - consuming large amounts of alcohol can increase your risk of alcoholrelated illness including various types of cancer, liver disease, cardiovascular disease and mental health conditions. 3. Any surprising facts about alcohol? Alcohol impacts quality and depth of sleep. Some people think alcohol will help them sleep, and while initially it may help them get to sleep, it can very much impact the depth and hence quality of sleep, and duration. 4. What changes are we likely to notice when taking a break from alcohol? Some benefits can include improvements to mental health (‘hangxiety’), improved hydration, weight loss, improved sleep, increased energy, and clearer skin. 5. How do you advise your clients to incorporate alcohol into their lifestyles if they enjoy it when socialising? It’s important to have realistic goals which work within the client’s lifestyle. It is recommended that healthy adult men and women should have no more than 10 standard drinks per week, and no more GET IT June 2021
than 4 standard drinks on any one day. I also encourage them to drink water while drinking, and in-between drinks - this helps keep them hydrated.

We all have goals that we set ourselves, and things can popup that may hinder our progress towards achieving those goals - work, family commitments, sudden and unpredictable upsets to our routines. Life happens; we just have to take each day as it comes. When we experience these upsets, it’s important to remember exactly why we started, how far we’ve come, and the benefits and rewards we not only expect to receive in the future, but are already enjoying now.
One way to keep on track, regardless of what might be happening in our lives, is to apply variety to our activity schedules. As the old saying goes, variety is the spice of life, and who doesn’t want to spice-up their training schedule? There have been numerous studies conducted to ascertain the benefits obtained from participating in outdoor
activities. Exposure to the natural environment has been shown to improve overall health and well-being. Nature-deficit disorder, a term coined by Richard Louv in his book Last Child in the Woods, simply refers to the fact that human beings are not spending enough time in and with nature. He believes that this can lead to significant behavioural, emotional, mental and physical issues.
Depending on the type of activity you decide to do, exercising outdoors can be a great way to have some time to yourself and to recharge for the days ahead. This can be achieved through solo hikes along nature trails, or doing a high intensity interval session in the park. On the other hand, training with a friend, or friends, is fun. They can help challenge and motivate you and getting outside can also be a great way to catch-up with friends and family while enjoying a number of health benefits. Participating in outdoor activities has been shown to decrease stress, anxiety and anger, thus improving mood. Due to the inconsistent and varying nature of the environment, it challenges and 33
improves our mental focus. Our bodies are also challenged through the utilisation of more muscles, for example, due to the uneven ground cover, and depending on the intensity of the session, you can expect gradual improvements in your cardiopulmonary health. Being outdoors helps ensure we get adequate Vitamin D. Vitamin D is important for strong bones, muscles and overall health. The body absorbs Vitamin D from the UV rays of the sun. It’s important to remember that the body is limited in the amount of Vitamin D it can absorb and spending extended periods of time in the sun can increase your risk of developing skin cancer.
