Embrace the Mediterranean Diet for a Gift of Longevity this Christmas

If there’s any doubt that Christmas time is approaching, the blazing sun will quash it.

The holiday season is fast approaching, and while it’s a time of celebration, it can also bring about increased stress. Beyond the immediate emotional toll, psychological stress can have a lasting impact on our bodies, potentially accelerating the ageing process. This Christmas, consider gifting yourself the promise of longevity and vitality by adopting the Mediterranean diet, a lifestyle that nourishes both body and mind.

It’s hot. And with the weather well and truly heating up, it’s a constant reminder that the festive season is just around the corner. So this year, I’m preparing early in the hope that December won’t sneak up on me like it did last year and leave me scrambling for everything Christmassy.

The Toll of Stress on Ageing

Stress is a natural part of life, but chronic or prolonged stress can lead to a cascade of negative effects on our health. One significant consequence is premature aging. When we’re stressed, our bodies release hormones like cortisol, which can lead to inflammation and oxidative stress. These processes can accelerate cellular ageing, contributing to wrinkles, grey hair, and more.

After failing to supply the annual advent calendars last year, I’ve already purchased this year’s supply (we have them for November and December). The Christmas tree is ready and waiting to go up early in November (yay).

The Mediterranean Diet: A Path to Rejuvenation

But I have discovered one problem. It seems our Elf on the Shelf has found itself a new home. Unfortunately, he can’t be found in the place he was last seen. He’s MIA, and that gives me grave concerns about his expected arrival come November (yes, we do everything in November).

The Mediterranean diet is not just a meal plan; it’s a way of life. Rich in fruits, vegetables, whole grains, lean protein, and healthy fats like olive oil, this diet is renowned for its numerous health benefits. It provides a wealth of vitamins, minerals, and antioxidants, which counteract the ageing effects of stress.

Do children notice if a new elf comes to town? Does the new elf pretend to be the old elf? Or should he come with news that the previous elf has retired?

Moreover, the Mediterranean diet has been linked to improved cognitive function and a reduced risk of depression. By nourishing your brain, it can help you better cope with stress and enhance your overall emotional well-being.

These are the anxiety-inducing questions I’m grappling with as we speed through to the end of the year.

Embrace the Gift of the Mediterranean Diet

Christmas traditions and requirements are never-ending, but there won’t be any complaints from me.

This Christmas, consider the Mediterranean diet as a gift to yourself. It’s a present that keeps on giving, not just during the holidays but throughout your life. Start by gradually incorporating Mediterranean elements into your meals.

I’m a Christmas tragic, and I love every second of it, including the stressful parts!

Olive oil: Swap out butter and other cooking oils for hearthealthy olive oil.

So, while everyone else is complaining about the arrival of Christmas decorations in the shopping centres, I’m counting down the days. And the carols will be blasting in my car before they hit the supermarkets.

Fruits and vegetables: Make them the star of your plate, providing essential nutrients and antioxidants. Fish: Incorporate fish, especially fatty varieties like salmon, for Omega-3 fatty acids, which are beneficial for both body and mind.

This year, more than ever, we need some Christmas cheer, so I encourage you to join me! Let's start early and enjoy a little Christmas magic while we can.

Whole grains: Choose whole grains like quinoa and whole wheat over refined options.

How did your own life experience influence the 40 Over 40 Project?

At 46, I came to a pivotal realisation that I didn’t recognise myself anymore. I had taken on the roles of a devoted mum and a busy business owner, but somewhere along the way, I had become a mere shadow of my former self. It was high time to reconnect with the person I once was, to find meaning within myself and in society’s eyes. That’s when the idea of a makeover photoshoot materialised. Little did I know just how incredible the journey would turn out to be, how it would impact not only my life but also the lives of others, and how it would lead to so many amazing friendships.

What does sharing these stories mean to you?

Seeing these women embrace their stories through my camera fills me with pride. It’s not just about me but also about the incredible women who stand in front of my lens. I’ve seen firsthand how these empowering photoshoots can completely transform lives. It’s amazing to witness the change that happens during our sessions. I often show them a quick peek at the photos on my camera, and almost every time, they’re blown away by what they see. They usually ask if my camera has some special filter because they can’t believe it’s really them!

Can you share a moving story from the transformations in this project?

There are so many moving stories, but one that will always stand out and gives me goosebumps is this one. This gorgeous lady rang me as she’d been gifted this photo session from a friend. She wasn’t too keen to come in as she was so shy, I spoke to her for a long time until she felt comfortable. When she came in, the nerves were still

there, after makeup we took it slow. I showed her some photos, and let her know how amazing she was doing. She relaxed a fair bit and was having fun. A week later when her husband and her came to look at the photos, there were so many tears! Hubby wanted all the photos as it had been so long since he’d seen her so happy. That moved me, they bought their photos, and it was a special time. I didn’t think too much about it until I received a call from my client about a year later. She wanted to thank me, I assumed it was just because she loved her photos. It was so much more. This beautiful woman was in a very dark place that first time she rang, wanting to end it all due to an injury at work which had left her unable to do many things. Apparently after the photo session, and then seeing her photos turned her life around. She felt different, confident and worthwhile again. So much so, she thought she’d try her hand at modelling and extra work! I feel so grateful that I have the power to change lives like this.

Many people believe that the road to a healthy weight is paved with tiny portions and constant hunger. However, I’m here to tell you this isn’t necessarily the case. Contrary to popular belief, you don’t always need to reduce your portion sizes to reach your goal. First and foremost, it’s essential to understand that not all calories are created equal. Instead of obsessing over portion sizes, we should prioritise the quality of the food we consume. Opt for nutrient-dense, wholefoods that provide your body with the essential vitamins and minerals it needs. Creating a balanced and nutritious plate is a fundamental step toward maintaining good health and managing your weight effectively. A well-rounded plate should include a variety of foods from different food groups to ensure you get a wide range of essential nutrients. Here’s a general guideline for what your plate should look like:

Other things to note: Healthy Fats • Fats such as olive oil, avocados, nuts, or seeds are essential for good health and fueling up with these foods will enrich your body, keep you fuller for longer and help to re-sensitise your body to insulin.

Fermented Foods

Fill your plate with colourful, low calorie non-starchy vegetables like broccoli, spinach, cauliflower, mushrooms and dark leafy greens. These are rich in vitamins, minerals, fibre, and antioxidants, plus there’s no need to count the extra calories (even on fasting days)

Good Quality Protein (at least 60g)

Allocate at least 60g of high quality protein on fasting days (and a little more on non-fasting days). This can include options like: – Meat (chicken, beef, lamp, turkey and more) - Eggs – Fish and seafood – Beans and legumes and wholegrains – Tofu or tempeh

Fermented foods, such as yoghurt, kimchi, kombucha, kefir and sauerkraut all contain healthy bacteria and reduce the amount of disease-causing bacteria in the gut.

Hydration:

Vegetables (as much as you like!)

If you include dairy in your diet, you can add a portion of full fat yogurt or milk. Alternative milks can be fine too if you’re intolerant to dairy or don’t like the taste – just watch out for added sugars, additives, flavours and refined oils.

Remember to drink plenty of water throughout the day (the recommended daily intake varies, but a general guideline is around 8-10 cups per day for adults). It’s essential for overall health and can also help control appetite.

Limit Added Sugars and Processed Foods:

Minimise the consumption of sugary beverages, snacks, and ultra-processed foods. These items are often high in calories and can lead to weight gain, plus they can upset your gut.

It’s crucial to pay attention to the timing of your meals. When you eat can be just as important as what you eat. Instead of constantly snacking throughout the day, try to stick to a structured meal schedule with regular intervals. Another key aspect of successful weight control is mindful eating. Paying attention to the taste, texture, and satisfaction that food provides can make a significant difference. By savouring your meals and eating slowly, maybe even putting down your knife and fork between each bite, you’re more likely to recognise when you’re full and avoid overindulging. Incorporating exercise into your daily routine is another important component of weight control and better health, as is stress management and positive sleep patterns. Chronic anxiety and stress can directly impact stress hormones such as adrenaline and cortisol but also through the kick-on effect of copying with the stress through eating. By adopting a holistic approach, you can achieve your goals without constantly feeling hungry or deprived. It’s about making positive, long-lasting changes to your lifestyle rather than simply cutting down on portion sizes. Letters of Hope: How Handwritten Notes are Transforming Mental Health

Founder of Letters of Hope, Abbie Williams, has turned her own experiences with anxiety and depression into a powerful force for change. This remarkable initiative began as a simple passion project, and has now blossomed into a global movement that leverages handwritten letters to uplift individuals in their darkest moments.

Can you tell us more about your personal experience with anxiety and depression and how it led to the creation of Letters of Hope?

I started to struggle with anxiety and depression quite severely in my teenage years. I remember being in Year 6 and attending my high school open day. When I got home, I was physically sick from the anxiety that I had felt that day. That was the very first time I remember thinking ‘this has gone beyond butterflies in the stomach feeling’. Unfortunately, being so young, I didn’t have the confidence to ask for help so these symptoms got worse throughout my teenage years. I finally asked for help as an 18-year-old after having panic attacks at university and embarked on my own recovery journey. GET IT November 2023

What inspired you to start Letters of Hope and make it your mission to break the stigma around mental health? In 2017, I moved from England to the Gold Coast. It was a huge step for me, and my mental health was put to the test.

Whilst navigating this, I was struggling being away from my family. We resorted to writing letters. I very quickly started to recognise how uplifting this was. Firstly, having something to look forward to. Secondly, the days a letter was there, they made me feel seen, cared for, loved, and not alone. I decided that I wanted to be able to give that same feeling to other people who were struggling, and that is when I started Letters of Hope. It started very simply with me sharing a post around on social media and it grew from there. 22

Can you share a memorable or touching story of how a letter from Letters of Hope made a significant impact on someone’s life?

I remember one of the very first Letters of Hope I sent. Someone had reached out and shared that they were severely depressed to the point that they had not left the house, and barely left their bedroom, for weeks. I sent the letter off, and a couple of weeks later an email hit my inbox. Attached was a photo of the person holding up their letter of hope with a huge, beaming smile on their face. They let me know that on the day the letter arrived, they read it and finally left the house. They took themselves to see a movie and for a massage. That is the first time I think I realised that this simple act could lead to bigger impacts.

ow do you select and train the H individuals who write these letters, and what kind of messages do they typically include?

Anyone can register as a volunteer letter writer on our website. Most of our volunteers write from a place of lived experience which is incredibly impactful. We encourage people to speak from that place and to encourage the person they are not alone and help is out there. Volunteers then send their letters to the Letters of Hope PO Box, I read each letter and match it to a recipient, and every envelope is packed with helplines, support contacts, and coping strategies to encourage that next step.

In the context of your work, can you share some tips for practicing self-care and maintaining your own mental health as an advocate and founder of a mental health charity?

What advice would you offer to individuals who want to help friends or family members struggling with their mental health but are unsure where to start?

Oftentimes, we get so worried to have the conversation that it may result in us not having the conversation at all. My best message for people is this: if you are coming from a place of genuine care and concern, it is very hard to get it wrong. That care and concern will often shine through and ensure that the person feels less alone.

I recently also started a new self-care activity that I do every day. I created an album in the Photos app on my phone, and every day I take a photo of one thing that I am grateful for or that I find beautiful. I add it to the album. I now have an album that I can open up and look at when I feel down, that reminds me of all of the things I am grateful for in the world.

I think it is also important that we ask for help. Speak to someone that you trust when you are struggling. We have come such a long way and most people are supportive, understanding, and compassionate.

What has been the most rewarding aspect of your work with Letters of Hope so far, and what keeps you motivated to continue this endeavour?

This time last year we had 6 volunteers, and we now have 600. We have sent 2,800 letters to over 24 different countries. We have sent letters to people as young as 7 and as old as 96. Mental health conditions are not impacting one group of people, but every layer of society no matter what walk of life a person is from.

What are your long-term goals and aspirations for Letters of Hope? How do you envision the organization’s growth and impact in the future?

I look forward to seeing that movement continue. We have already started doing some work with schools to inspire our youth to value kindness and compassion as well as build mental health awareness. The plan for the future is to build on this further so we can reach more students and schools.

Island dreaming If you’re planning your next European summer vacation, look no further than a trip to Mali Lošinj, Croatia, where you’ll rediscover your love for travel, food and wellness. Words: Charmaine Yabsley

“Welcome to the Island of Vitality!” Goran, the lean, smiling masseur beams at me, welcoming me to the spa room. “Here you will finally feel well.” We are at the Belluvue Hotel in Lošinj, a three-hour ferry ride from Pula, a Roman town that boasts its very own amphitheatre and lively restaurant scene. (You can also hire a car from Pula or Lošinj airport and arrive via the bridge linking the island to the mainland. If you want to arrive in true style, the hotel also offers a private jet service in a six-service plane to deliver guests to Lošinj airport.) The island itself seems unchanged, despite its increase in tourist interest over the past decade. And while the hotel is sparkling new and shiny white, looming like a cruise ship over Čikat Bay on the sparkling blue Adriatic Sea, the building, and the island itself, retains its old-fashioned charm. However, it is small enough to feel intimate and secluded, with wide sweeping views of the bay and grounds through floor-to-ceiling glass windows. Situated on the seafront on the edge of the bay, the tree-lined promenade encourages you to explore (by foot or bikes hired at reception) the smaller, even more isolated inlets, where boats bob merrily on the crystal-clear waters, alongside pedalos, aqua park, stand up paddle boarders and enthusiastic swimmers. The hotel is just a short 15-minute walk into Mali Lošinj’s Old Town, where you’ll find a harbour so quintessentially authentic you may think you’ve wondered onto a Hollywood set. Here you’ll discover an array of restaurants, tourist shops, wine tasting offerings and island entertainment. Take your time to wander in the back streets 24

It’s an unforgettable day of cliff jumping, snorkelling and exploring the islands of Susak, Unije, Ilovik, Blue Cave and Bijela Beach – all delivered with Croatian charm and humour. Or, if you prefer to stay horizontal and venture no further than the pool bar, there is no better place than the Bellevue. Start your day with breakfast, served buffet-style in the Bava Restaurant, where you can indulge on the sumptuous offerings, or enjoy a wellness shot at the juice bar. Vegans and gluten-free diets are catered for, and there is a wellness menu and offerings if you’re serious about rediscovering your vitality during your stay.

Finish with a nightcap at the Alto Rosso lounge bar, or wander next door to the Ibiza-like bar where 90s hits pump out, creating the perfect end to a day – and holiday – filled with health, happiness and vitality.

As we arrived at the height of summer, the days were long and hot, with temperatures reaching up to 36 degrees. Thankfully, the hotel’s spot on the water’s edge allowed us to enjoy a refreshing early morning swim in the breathtakingly clear waters, before heading inside to the award-winning Spa and Wellness centre. The retreat takes up the lower floor of the hotel and is just what tired travellers (and harassed parents) need to rest and rejuvenate. Here, in the hushed, curtain-lined rooms you’ll find everything you need to restore your vitality. Guests are welcomed to the Spa clinic with a beautifully mindful ritual: we were presented with two test-tubes and a snack on a silver tray, each promised the key to better gut health. Already in true ‘relaxation mode’, we each headed for a treatment. Goran, my wellness practitioner, delivered a strong and invigorating massage while I was balanced on a water-filled table. By floating on water, my muscles were more supple and receptive to deep tissue work – much needed after several weeks of hotel beds. Afterwards, we were encouraged to visit to Cryosauna, the Finnish and ‘bio soft’ saunas, steam room, cold plunge pool, relaxation with waterbeds and heated stone beds. The gym beckoned, but we were too relaxed to consider a workout, but promised ourselves we’d visit the next morning after our morning dip. Instead, we headed to the hotel’s private beach club, enjoying some further relaxation on the sun beds, positioned invitingly on tiered stone slab platforms overlooking the bay’s water. The kids ran between the indoor and outdoor pools (with pool bar and restaurant) and jumping from the jetty into the azure waters. The staff were on hand to deliver water, snacks and lunch to our sunbeds – the only effort required was to sign the chit. The hotel’s footprint is impressive, yet offers several cosy places to relax and read your book, or even enjoy an outdoor massage or jacuzzi. Much like Lošinj itself, there is charm and secrets to uncover at every turn. Rooms are large and, best of all, offer adjoining spaces for children, so there’s no need to cram together (although

Try to keep your water intake up throughout the day especially in the summer heat so you don’t end up gulping down a glass or two before bed and disrupting your sleep by having to make trips to the bathroom at night. It’s the time of year to be ‘merry’ but calories from alcoholic beverages, especially mixed cocktails filled with liqueurs, fruit juices, and syrups or creamy drinks like eggnog add up quickly. Try to keep to ‘single ingredient drinks’ like wine or beverages that use a water-based mix. Don’t forget that for every glass of red wine you drink it takes approximately 21 minutes of walking to burn off the calories! 27

Vegan Maple Spring Rolls

Summertime sessions!

The warmer weather is all about seafood, poke bowls and vegetarian delights. Enjoy the taste of summer with these delicious recipes.

A deliciously balanced blend of flavours that is 100% vegan and enhanced with maple magic!

Ingredients: For the Tofu: • 200g firm tofu • 15ml olive oil • 30ml soy sauce • 15ml hoisin sauce • 15ml pure maple syrup (preferably amber syrup for its rich taste) • 2.5g ground ginger • 2.5g garlic powder • 2.5g onion powder • 1 pinch of chilli flakes • Juice of ½ lime For the Vegetable Rolls: • 1 cucumber, diced • ½ red cabbage, sliced • 1 yellow pepper, cut into batons • 2 avocados, sliced • 3 carrots, grated • ½ head of Romaine lettuce • 15 rice paper sheets • Mint, 2-3 leaves per spring roll • Basil, 2-3 leaves per spring roll For the Peanut Dipping Sauce: • 200g peanut butter • 150ml coconut milk • 50ml soy sauce • 45ml maple vinegar • 45ml pure maple syrup (preferably amber syrup for its rich taste) • 1 garlic clove, crushed • 22.5ml lime juice • 2 pinches of chilli flakes • Handful of peanuts for decoration

Maple Zucchini Ricotta Roll Ups For a light snack, perfect for sharing and impressing your guests with these roll ups never fail to impress!

Ingredients: • 2 zucchinis (about 5 cm thick), green or yellow • 125g ricotta • 30ml pure maple syrup (preferably golden syrup for its delicate flavour) • Salt, to taste • 62.5g parsley, chopped • 30g chives, chopped • Ground pepper, to taste • Espelette pepper GET IT November 2023

Method: 1. Use a vegetable peeler or mandoline to slice the zucchini lengthwise into ribbons 1-2 mm thick. 2. Place ribbons onto a clean cloth and allow to dry. 3. In a small bowl, combine the ricotta, maple syrup, parsley, chives and salt and pepper. Adjust the seasonings as you see fit. 4. Spread a thin layer of the ricotta mixture onto each zucchini strip. Roll them up and place vertically onto your serving plate. Sprinkle with Espelette pepper and garnish with sprigs of parsley or chives. 28

Method: To make the Tofu and Sauce: 1. Mix all ingredients together (except tofu) until combined. 2. Heat a large skillet over medium heat and add the mixture, the cubed tofu and a pinch of salt. 3. Pan fry until the tofu is a light golden colour on 3-4 sides, about 5 minutes. Wait until each side has browned before turning for easy release from the pan. To make the Rolls: 1. Fill a shallow, wide bowl with warm water. 2. Lightly wet the surface of a chopping board. 3. Dip a rice paper sheet into the bowl of water and circle the paper around so that the entire surface is moistened. 4. Transfer the rice paper sheet onto the wet board. 5. Place a lettuce leaf on top of the rice paper. 6. Then, lay the vegetables, tofu, mint and basil on top, about ½ to 1 inch away from the bottom of the sheet. 7. Starting from the bottom of the sheet, start rolling everything towards the middle. 8. Fold the left and right sides of the wrapper towards the centre and finish rolling up the spring roll. N.B. If you find that the sheets are quite stiff, let them sit on your cutting board for an extra 10 to 15 seconds to soften. Then, roll up the spring rolls. To make the Dipping Sauce: 1. Put all dipping sauce ingredients in a food processor then blend until smooth and creamy. 2. Pour into a serving dish and top with peanuts.

Ultimate Maple Seafood Platter As the weather warms up, make sure to try our ultimate seafood platter – it’s a crowd pleaser!

For the Seafood Platter: • 8-10 cooked king prawns • 8-10 fresh oysters, shucked • 1 cooked lobster • 1 packet of smoked salmon or gravlax • Lemon wedges, to serve • Caper berries, to serve • Fresh dill, to serve • Parsley, to serve

To make the Maple Cocktail Sauce: 1. Place the tomato ketchup and mayonnaise into a bowl. 2. Whisk to combine, slowly adding the cream. 3. Continue whisking until thick. 4. Stir in the lime juice, tabasco and maple syrup. 5. Transfer to a container or glass jar and place in the fridge until ready to use.

For the Maple Cocktail Sauce: • 2 tbsp tomato ketchup • 4 tbsp mayonnaise • 1 cup double cream • 2 tbsp lime juice • 1 tsp tabasco • 2 tbsp pure maple syrup (preferably golden colour for its delicate flavour)

To make the Maple Mustard Dip: 1. Combine the mustard, maple syrup and maple vinegar in a small bowl. 2. Whisk in the oil and stir through the dill. 3. Transfer to a container or glass jar and place in the fridge until ready to use.

For the Maple Mustard Dip: • 3 tbsp mustard • 1 tbsp pure maple syrup (preferably amber syrup for its rich taste) • 1 tbsp maple vinegar • 2 tbsp extra virgin olive oil • 1 ½ tbsp fresh dill, chopped

To make the Glazed Lobster: 1. In a saucepan, combine all the ingredients except the chopped chives. 2. Cook over a medium heat, stirring continuously for around 5 minutes or until the mixture thickens. Set aside to cool. 3. Using a brush, glaze the lobster and sprinkle with chopped chives

For the Glazed Lobster: • 100ml pure maple syrup (preferably amber syrup for its rich taste) • 50ml maple vinegar • Splash of bourbon • 3 leaves of lemon myrtle (or lemon thyme) • 1 pinch of salt • 1 tbsp chives, chopped 29

To assemble the Platter: 1. On a large, cooled serving platter, arrange the glazed lobster, prawns, salmon and oysters. 2. Top with the caper berries, lemon wedges and fresh herbs. 3. Serve immediately with the dipping sauces and dig in! GET IT November 2023

Maple Salmon Poke Bowl

Mini Tropical Maple Pavlovas

For a nutritious lunch, this poke bowl is packed full of goodness.

A sweet delicate delight with a Canadian twist!

Ingredients:

Spicy Maple Sauce • 125ml soy sauce • 125ml hoisin sauce • 125ml rice vinegar • 30g sambal oelek • 60ml maple syrup (preferably amber syrup for its rich flavour) • 60ml lime juice • 60ml toasted sesame oil • Salt and pepper

• 4 egg whites • 200g maple sugar • 300ml thickened cream • 1 tbsp pure maple syrup (preferably golden colour for its delicate flavour) • 1 pineapple, cut into cubes • 2 passion fruits • 1 tsp desiccated coconut • 1 lime, zested • Fresh mint to garnish

Poke Bowls • 400 g jasmine rice • 454 g fresh salmon, cut into cubes • 35g sesame seeds • 1 mango, diced • 1 red pepper, julienned • 2 ripe avocados, sliced • 1/2 cucumber, julienned • 2 carrots, julienned • 4 green onions, minced • 1/4 red cabbage, shredded

Method: Spicy Maple Sauce 1. Combine all sauce ingredients in a bowl and set aside. Poke Bowls 1. Cook the rice according to package instructions. Allow to temper. 2. Place salmon cubes into a mixing bowl with the sauce, stirring gently to coat. Let them macerate 15 minutes. 3. In a frying pan, toast the sesame seeds dry for 2 – 3 minutes until golden brown and fragrant. Reserve. 4. Divide the cooked rice into four serving bowls. Place salmon cubes in the centre of each, on top of the rice. Arrange the rest of the ingredients nicely around the salmon and sprinkle with the toasted sesame seeds. Garnish with a light splash of sauce and serve immediately. GET IT November 2023

Method: 1. Preheat the oven to 90°C. 2. Add egg whites to a stand mixer with the whisk attachment, mix on low, increasing to medium until the egg white become foamy peaks. Then, add maple sugar a few tablespoons at a time until it’s incorporated, and the meringue becomes stiff and glossy. 3. Pipe the meringue out onto the prepared baking sheet using a large round star nozzle. 4. Bake the meringues for 3 hours. 5. Whisk the cream and maple syrup in a bowl to form soft peaks and spread on top of each freshly baked meringue, then top with a mixture of pineapple cubes and passion fruit seeds. 6. Sprinkle over the desiccated coconut and lime zest and decorate with fresh mint.

Maple Lemon Lime and Bitters A fresh citrusy twist on a classic Aussie tipple.

Maple Rum Balls

Ingredients:

• 90ml lime cordial • 4 drops of bitters • 180ml vodka • 60ml pure maple syrup (preferably dark syrup for its robust taste) • 2 lemons • 2 limes • 1l lemonade

1. In a 1.5 litre jug, add cubes of ice until half full. 2. Squeeze the juice of one lemon and one lime over the ice. 3. Slice the other lemon and lime and reserve to garnish. 4. Add the lime cordial, maple syrup, bitters, vodka and stir. 5. Top up the jug with lemonade. 6. Add a slice of lemon and lime to each glass, placing the rest in the jug, then serve the cocktail.

These bite-sized treats are the perfect after dinner treat. Featuring the warmth of Canadian maple melded with the kick of rum!

Ingredients: • 400g plain sweet biscuits • 60ml pure maple syrup (preferably dark syrup for its robust flavour) • 400ml condensed milk • 3 tbsp dark rum • 1 tsp vanilla extract • 50g cocoa powder • 50g desiccated coconut • 1 pinch of salt • 1 pinch of ground cinnamon

Method: 1. Place the biscuits into a food processor and process until fine crumbs form. 2. In a large bowl, add the biscuit crumbs, half the desiccated coconut, condensed milk, maple syrup, rum, cinnamon, vanilla and salt. 3. Mix the ingredients together with a wooden spoon, then place in the fridge to rest for an hour. 4. Place the remaining desiccated coconut into a bowl or onto a baking sheet. 5. Spoon out a tablespoon of the mixture and use your hands to roll it into a ball shape, it should be about an inch in size. 6. Place onto a baking sheet and repeat until all the mixture has been rolled into balls. 7. Refrigerate until ready to serve. 31

Their mission: to make a difference in the fight against Parkinson’s disease. Their goal: to raise crucial funds for the Shake It Up Australia Foundation, Australia’s leading funder of Parkinson’s research. The inspiration behind this charitable endeavor is deeply personal. One of the gym’s most loyal clients, who has been part of the ‘A Body 2 Fit’ family for an impressive 27 years, has been living with Parkinson’s disease for a decade. He’s also a fervent supporter of the Shake It Up Australia Foundation, a not-for-profit organization that channels its resources into groundbreaking Australian research aimed at slowing, halting, and ultimately curing Parkinson’s. The ‘A Body 2 Fit’ community, along with their client, has formed their most ambitious charity team to date – ‘Tri 2 Shake It.’ Comprising 67 members of all ages and fitness levels, this spirited team is gearing up to tackle the Kingscliff Triathlon scheduled for November 26th.
