“What we focus on expands.” It’s something I read recently and I tend to believe it is true. The week before this issue went to print, the Get it office was a hive of activity, but we seemed to be having one of ‘those weeks’ − you know the type, where everything that can go wrong does. In our world that means things like corrupt images, computer glitches and the ‘blue screen of death’, printers packing it in, staff or family members falling ill... By the look the cashier gave us when Leanne and I made a mad dash for the bottle shop, we’re certain she knew we were pretty keen to get our bottles of Sauvignon Blanc home. It was only Tuesday. Amidst the insanity we attended a day of training with local business coach and author, Sharon Jurd. It’s something we had had booked in for a while but as the day approached, we were more than a little stressed about how we would fit it all in. It was the evening before (over a glass of wine, surprise surprise) that we decided perhaps this is what we needed − to step away from our to-do lists and be motivated by a fresh perspective, because after all, what we focus on does indeed expand. As we’d hoped, the workshop proved to be extremely helpful and clarity returned. Of course, we were still anxious about our looming deadline, endless emails and long list of phone calls to return, but our mindset had readjusted and we were focussed again. At that point, things began looking up. March’s theme is ‘success’, a notion we know you are aligned with. Every day we have the pleasure of interacting with you who share this crazy life in common with us. Inspiring managers of businesses and households (often both), striving for the best for your families, generating personal accomplishments and fostering ideas, products and services for the greater good. We’re in a lucky time, where opportunities and attitudes benefit us in a way not experienced in history. By the same token, obviously life consistently delivers a hefty dose of overwhelming moments. We get it! But, if we can help just one person this month in your pursuit of success, take on board our lesson and reminder not to focus on the challenges, but instead, hone in on the elements you want to expand.

ENTERTAINMENT with Peta Yalg How do you transition between ‘mum’ and ‘comedian’? Some nights it’s hard, especially if the kids are sick and you’re still wiped out from the night before when you were cleaning vomit off the walls of the baby’s room between 2am and 5am. Other nights it’s a total relief to get on stage and do something so totally removed from being a mother. How have your views of women and the media changed since having your daughter? Having children, you notice the way the media grooms girls to lower their goals, and the fact that it starts pretty much from day one. I constantly have to turn the TV off during ad breaks because all the products aimed at girls all involve making themselves pretty or playing with baby dolls. How has being a mother changed your style of performance? I think I care more about what I do now. One day my kids will be aware of what I do for a living and I don’t want to be an embarrassment. What was your imagination like as a child? I grew up in suburbia in Newcastle, and there wasn’t that much going on in terms of entertainment for young people, so I guess in a way it made us be creative so we didn’t die from boredom. I think a boring environment is a blessing at that age. That’s why I try to make my children’s lives as dull as possible. When and where was your toughest crowd? So many to choose from! Edinburgh Festival audiences can be very difficult as people come for the weekend and get drunk early then they don’t know which show to see. They end up choosing one where they have to queue outside the venue − possibly in the rain, where they drink more and then the venue is hotter than Satan’s fireplace, so they get irritated, then dozy, and then they need a wee. The venue gets hotter and hotter through the hour, and by the time they leave, all they want is more beer and they decide to see another show because they’re only in Edinburgh for two nights. And if you’re really unlucky, that next show they see is your show. It can be difficult. Which performance were you most nervous for? I have a distinct memory of throwing up from nerves before a late night Festival Club gig when I first started out. Greg Fleet was MC, and he was so funny, he was just totally destroying the room. People were completely out of control with laughter, and I was back stage thinking, ‘how can I follow this?’ And I threw up. Then I went out and died on my arse. To this day, I blame Greg Fleet and have made it my life’s work to destroy him. What advice would you give to someone who suffers from stage fright? I find it helps to be so tired that I can barely remember the name of the venue, let alone worry about the audience’s reaction. My advice to anyone with stage fright is to have two kids. It’ll sort you out in no time. March 2014

Peta Yalg catches up with delightfully funny Sarah Kendall to chat about how she juggles the ups and downs of her two favourite roles: mother and stand-up comedian

Where is your favourite place to write? The café around the corner from my house. It’s run by an Aussie, and she blew everybody’s minds when she brought decent coffee to my suburb. What else do you write besides comedy? I do occasional articles, and I’m currently working on a book. And by ‘working on’, I mean I haven’t written a word since my son was born ten months ago. Like any profession everybody has their own advice to offer, what is one piece of advice that has stuck with you? I won’t say who gave me this advice as I think I’d run the risk of sounding like a name-dropping twat, but I was once advised to never to turn my back on stand up, no matter what other work came my way. TV gigs come and go, and no matter how successful they are, they always come to an end. Stand up is a comic’s bread and butter, and if you stay away from it for too long it becomes very hard to slot back into the pace of it.

LOCAL PROFILE with Riana Horner

Riana Horner meets effervescent local, Deb Oliver, who puts a whole new spin on the meaning of efficient time management ost of us are baffled by the question, ‘is it a pipe dream to want it all?’ Deb Oliver, an inspirational local mum, is sure of the answer. You just have to know what ‘it all’ is. Despite admiring how hard her mother worked, from a young age Deb remembers feeling jealous of the kids at school who had stay-at-home mums. She envied those parents who did tuck shop and cheered their children on at athletics, and so for a while she decided that in the future she would be a stay-at-home mum herself. After finishing school, it wasn’t long before Deb realised this path alone however, might mean for her, that she’d end up a little lost. Her life goal quickly altered and she made up her mind she would have a career too. Writing a list of everything she wanted, Deb was determined to have it all.“I wanted to travel, I wanted to be a stay-at-home mum and I wanted a career with an independent income.” It was around the time Deb’s second child was born that she noticed a gap in the online travel services market which offered clients the support of experienced and knowledgeable travel agents. Alongside another mum, she started up her own online travel business, and Asia Pacific Island Escapes (asiapacificislandescapes.com.au) was born. This venture enabled her to work from home as she’d desired, and she felt privileged to still have the time to spend with her children.“Back in my mother’s day there just wasn’t the luxury of balance. You either worked or you looked after your family.” While putting all of her efforts into starting up the business, Deb swiftly found herself devoted to taking care of her two children March 2014

and working simultaneously. She re-evaluated her list and began wondering if there was more to it. “Working from home, you don’t have the social lunches or chit chat over the copy machine.” Realising she had left ‘me time’ off her list, Deb decided to join training groups. Enjoying hard workouts with her new friends and winning adventure races, it wasn’t long before 10 kilometre challenges led to training for marathons. Deb was able to run her business, was always there for her children, and could keep fit with no lack of a social life! Upon getting to know a variety of people from the whole spectrum of her life, she realised that having ‘it all’ does indeed mean different things to different people, but her unique goal is to design a life that is her ‘all’. “I’ve never missed the soccer finals or the parent teacher meetings and that was always important to me.” Already inspired by how much she fits into her week, I was blown away when Deb tells me she is also studying for a Masters degree in International Tourism Hotel Management. With a mindful concern for something happening to her business, the decision to study gives Deb the confidence of a secure future for her family. Her very effective year planner helps her carefully schedule appointments and arrangements including study time. Despite often finding herself switching off past midnight, Deb laughs as she says, “The kids never complain about their workload when doing homework anymore.” Admitting to me that her schedule can be utterly manic, she occasionally finds one portion of her life receiving more attention 14

than others. However, her encouraging family are very appreciative of what she does for them. “The kids are so good, if ever the phone rings they stop talking and close the door so the television can’t be heard. They are good at hanging out the washing too!” Thanks to her work in the travel industry, Deb is able to whisk her family off to review beautiful locations and resorts in exotic places around the world, and she takes great pleasure in this treat. She says her kids always enjoy a ‘go to work with mum’ day. So to say, as a stay-at-home mum, career woman, traveller, amateur athlete and uni student, it’s certainly a manic life. Sarah Blinco explores the notion that charisma can be owned by anyone ome people just have ‘it’, don’t you agree? We’ve all got those friends who sparkle in any room, whether that room be filled with wedding guests, business networking attendees or a dinner party featuring new and old acquaintances. It surprises some to know that I’ve mostly struggled in a room full of people, particularly in a situation where I don’t know anyone. I think a lot of people feel the same way in those circumstances, but some find it more challenging than others. I’ve worked in radio, publishing and PR − all communications roles − but faced with a room full of strangers, or face-to-face with my favourite celebrity, I clam up. It’s in these situations that I long to be more like my partner, Cooper. He’s likeable, charming and can make people laugh, which is always key to breaking the ice. It really seems to come naturally to him, and his sister, for that matter (perhaps it’s a gene?). They seem to draw people to them effortlessly. Similarly, my friend Isiah is a cheeky little flirt (in the nicest possible way). I envy her as she always offers the perfect quip complemented with a sweet smile which delivers her to all manner of interesting situations. She strikes up business deals at cocktail parties and makes life-long friends on a plane ride from Brisbane to Cairns, all because she exudes a certain confidence that makes people in her presence feel special. Anyone who has met 102.9 Hot Tomato’s Emily-Jade O’Keeffe, will appreciate she is another one of those people who automatically lights up a room. She seems to be able to mix it with anyone and gathers ever more admirers along the way. Why is it beneficial to be able to charm your way through a crowd or situation? As we get older especially, it becomes increasingly important to connect with others − in job interviews, school communities, for business and career purposes and even for our own self fulfilment. I believe too, that we are potentially more isolated than ever before, because there are more people working remotely. While the Internet has opened up a whole array of fantastic communication options in the digital realm, many are missing out on real-world chances at developing and practicing interpersonal skills, which leads to a decline in confidence within social scenarios (that is, outside of Facebook). Incidentally, there’s a really interesting TED. com talk on this subject, Connected but Alone by Sherry Turkle. Back on topic however, imagine missing out on that perfect job or meeting someone who could turn out to be a wonderful friend or partner, all because you didn’t take a chance on an initial ‘hello’ due to fear? Charismatic communication is an essential skill that will help us achieve the things we want... there is a science behind confidence, it is not something some are born with and others are not horizon where you feel you would benefit from exuding just a little more of that Cooper/ Isiah/Emily-Jade confidence? Many of us, myself included, find turning on the charm, or its partner-in-crime, confidence, difficult. However, numerous international experts and authors are hopeful we’ll take them up on a secret they’re trying to impart. Apparently anyone can learn charisma! Charming Irishman, Owen Fitzpatrick, is one such advocate. In The Charismatic Edge, he talks about tactics we can use in the modern age to manage ourselves from the inside in order to become compelling communicators. Owen says charismatic communication is an essential skill that will help us achieve the things we want, including that promotion at work, to become a better leader, master public speaking, to build a business or sell more, to improve our love or social lives and networking skills. He maintains there is a science behind confidence, it is not something some are born with and others are not. In Glamour Magazine last year, he commented on an aspect of charisma, flirting, as a way of communicating, saying it is a handy strategy because flirting makes others feel good, so they are drawn to you. Additionally he supports the notion that to be likeable, you too need to see the good in everybody. In other words, remember that most people can sense negative vibes, so learning to like everyone means you will come across as genuinely nice, likeable and with any luck, memorable. Olivia Fox Cabane also explores how anyone can “master the art and science of personal magnetism” in The Charisma Myth. She agrees that charisma can be learned. There are methods you can utilise right now to develop self confidence, and tools that can be implemented in situations of stress or discomfort. On Olivia’s website, foxcabane. com/book/, there’s a large number of terrific free resources and exercises you can take advantage of to do just this. One area Olivia’s commentated on is the importance of eye contact in social situations, because our brains are hardwired to enjoy significant eye contact. In fact, according to a recent article in The Wall Street Journal, we’re now longing for it, because our obsession with and overuse of mobile devices is resulting in the decline of eye contact. If managed effectively, for example, during a handshake (see aforementioned link for Olivia’s “perfect handshake” technique) or conversation, when meaningful eye contact is broken, studies have shown we experience a type of separation distress, which as you can imagine, is pretty powerful subconscious stuff. Body language often reflects feelings and attitudes, and when you’re mimicking another person’s posture you actually begin

to understand more about him or her, and that can be the basis for real rapport. The label put to this behaviour in psychology terms is mirroring. Carol Kinsey Goman, author of The Nonverbal Advantage discusses mirroring on YouTube. She says, “When a colleague mirrors your body language it’s his way of nonverbally saying that he likes or agrees with you. When done with intent, mirroring can be an important part of developing business relationships and building rapport. Mirroring starts by observing a person’s body posture then subtly letting your body reflect her position. If her hand or arm is on the table, wait four or five seconds then place your hand or arm there too. If she smiles or leans forward, you do the same. You can adjust your vocal tone, volume or rate of speech to be more like the other person’s. When a person is closed off or resistant, the easiest way to increase her comfort level is to use mirroring. Just be careful not to mirror highly negative postures, such as both arms and legs crossed or an upper body that’s turned away. In business situations you know you’ve developed a mutual rapport when your partner begins to mirror you in return.” Being charming means taking the lead rather than relying on others to start the conversation, and one of the simplest tricks to this is mastering the art of conversation starters. Never spend more than three seconds in someone else’s space before starting a conversation − experts insist that any longer and it’s going to be awkward. Patsy Rowe of etiquette.com.au and author

of best-selling Business Etiquette, tells us, “[at a networking function] Head for the bar. This isn’t so you can drown your shyness, but buys you a few minutes to survey the scene. Look around. Is there anyone you know? If not, walk up to a group of say, three people. Not two, as they may have come together. Don’t pounce on them. Walk up slowly and say, ‘excuse me, I hope you don’t mind my joining you, but it’s my first time at this luncheon and I don’t know anyone’. However, don’t take over; nod and follow the conversation. If they ignore you (and we hope they don’t), keep looking interested then say,‘Oh, I’m so sorry, I’ll have to go. I’ve seen my boss arriving and I promised to keep an eye out for her. Thank you so much for letting me join you’. Move away from them to another group, and try again.” Patsy adds with regards to conversation starters, “Most of our networking is ‘business’, so, ‘where are you working?’, which leads to, ‘how long have you been there?’, and even, ‘have you always worked in sales/marketing/fashion?’. This will lead to films you’ve both enjoyed, books, hobbies, travel (and you don’t have to have travelled widely to talk about travel − read the travel sections in magazines and you can contribute to any conversation). Above all, when networking, remember to listen – it’s the most important part of being a good conversationalist as by giving people ‘hooks’ to talk about themselves (a topic they know a lot about) you’re making it very easy for them and they’ll go away saying,‘that woman is the most charming woman I’ve met in ages’. And really, you’ve been talking about them!”

Make an effort to have quality eye contact with the person you’re talking to. Look at their name tag and business card. Link their name to a unique aspect of their face. Notice the colour of their eyes. Soften your own face, breathe well and smile. Power down your mobile device to avoid distractions during a conversation. l Practice mirroring, keeping in mind it is a silent signal that you’re positively relating to the other person, and a powerful tool to master. l Write down a list of your own conversation starters, and practice 17

by instigating a conversation with a stranger this week, preferably in a context (e.g. business, school) that is beneficial to you. l Do some reading on the power of body language and touch so you can be aware of how you’re coming across in different social situations, and so you may utilise this understanding to communicate charismatically. l Develop your ability to focus on the good in people. Ask yourself,“What do I like about this person?” l Extend the ‘what’s not to like’ attitude to yourself − after all, positivity is without a doubt one of the very best people-magnet tricks. REAL LIFE with Sarah Blinco

Professor Sonya Marshall-Gradisnik from Griffith University is a biomedical researcher specialising in Chronic Fatigue Syndrome. She and her team are leading the way in extraordinary international initiatives being fostered right here on the Gold Coast You’re one of the world’s leading biomedical researchers specialising in Chronic Fatigue Syndrome (CFS). Can you explain some of your most exciting recent findings and what they mean for sufferers of CFS? The CFS research team that I lead has found significant changes in white blood cells in CFS patients. White blood cells are important as they are the cells in the blood that fight off infections, viruses and bacteria. We have found the function of these cells has been significantly reduced and we have also found significant changes in some genes that control the function of these white blood cells. Collectively these findings suggest these white blood cells may be involved in the pathology of this illness. Furthermore, it gives us hope that we may be able to identify CFS patients using these changes as currently there is no diagnostic test for CFS. Consequently diagnosis of CFS takes typically greater than twelve months which can be not only frustrating for the patients as they do not have a timely answer, but it is very costly to the healthcare system as a number of unrelated tests have to be conducted to ensure the patient is negative for these other tests prior to being confirmed with CFS. You’ve managed to secure several million dollars worth of competitive research grants. How difficult is this process, and how important it is to continue this research? It is extremely difficult to secure research funding for any type of biomedical research and applying for funding CFS biomedical research is I think even more difficult due to such factors of the stigma associated with this illness. However, in saying that, the Queensland government and the Mason Foundation, which is a national funding granting agency, have significantly provided me with research funds where the findings have been world first and suggest the possible involvement of the immune system in the pathology of March 2014

cutting edge this illness. I am very of proud these findings and the world first results we continue to report, as they are unravelling the potential cause of this illness as well as they show we may be coming up with some markers that may assist in early diagnosis of this illness. The development of a screening test using these potential markers we have found is an area that we are developing, as this test could be applied early in a patient’s illness which may not only help the patient and the physician, but also help reduce healthcare costs. 20

There still is a great deal of research to be undertaken in this area as my team as well as other groups at Stanford University are now focusing on genes and how cells communicate. We are only beginning to understand the possible role of the immune and the endocrine systems and potentially how they may be involved in the development of CFS, so this area of focus in CFS remains a high priority for our team and international groups as well. There is still so much to be done not only in the research area but also in helping CFS


patients with a clinic that has physicians where CFS patients can visit to work with their regular doctor to assist them with their illness. Finally, as CFS symptoms vary – some CFS patients are profoundly affected with not only being fatigued, but they are predominately affected with significant changes in memory function, cognition, cardiovascular and gastrointestinal health problems; these collective clinical symptoms and the severity of these symptoms need further investigations. You’ve established the first Australian CFS research/medical clinic at Griffith University; what will it mean for people to now have access to such a facility? There has been significant interest locally, interstate and overseas from CFS patients and clinicians. This clinic is located in the Griffith Health Centre, where our research centre is also located. Having the clinic and the research centre in the same building will enable patients to have access to clinical services as well as potentially participate in CFS research we are conducting. This model is truly unique as it is the only research and clinical services to be offered anywhere in the world to be housed under the same building which is unique and has not gone unnoticed by international agencies, such as the Centre for Disease Control and Prevention (USA) and members of the Medical Research Councils (UK) who visited in December last year. How did you originally become interested in this area of research? I am an immunologist and back in 2007 I met an amazing clinician from Queensland Health who was, and incidentally still is, as passionate about biomedical research in the area of CFS. Back then we both had a few ideas and tested them in a couple of small CFS research projects with one research student. Let us say the results were promising and it snowballed from there. What is your advice for young women aspiring to work in a science based career? There is no substitute for hard work; however, it is also important to surround yourself with positive people who also share your vision and are able to offer you guidance as well as keep you on track. It is always important to seek advice and listen to those around you as no one ever knows all the answers. These are key areas that I think anyone who would like a career in science may need to follow in the first instance, and then as your career develops establishing a network of people not only in science but outside your field to ask

I will not deny, a career in science is hard work and the hours are sometimes challenging. However, to develop a question that you can test and see if it is correct (or not) is truly wonderful as you are able to work like a detective and also think creatively − I have the best job! advice enables you to assess everything from different angles which is often invaluable. Always stay in contact with your peers as this is an invaluable network that will enable to you to tap into people that may have other resources and skills that you may need and it enables you to develop/complement your skill set as you progress throughout your career. I will not deny, a career in science is hard work and the hours are sometimes challenging. However, to develop a question that you can test and see if it is correct (or not) is truly wonderful as you are able to work like a detective and also think creatively − I have the best job! What are your goals for the coming couple of years? For the coming twelve months I have some big objectives as I would like to set up the first Australian Brain and Tissue bank for CFS patients. This will enable research to progress very rapidly as researchers would have access to tissue to assess potential changes in these tissues and how this may be key in the development of the illness. This ultimately may lead to clinical trials in the coming years. As CFS has varying severities, some CFS patients are isolated at home as they are house bound or bed bound and vary rarely are able to have consistent medical attention. These patients mostly communicate through social media and it is for this reason I would like to achieve 21

in the coming twelve months to fund raise for a mobile patient transport vehicle. This will enable patients to be collected from their homes and be transported to the CFS clinic or if they have other medical appointment as currently there is not such services available in Australia. I would like to raise the funds for such vehicles where patients in the south east Queensland area or Northern NSW region would have access to the CFS clinic and allied health services. The ongoing research that I lead I would hope grows from the current group of 10 to be larger, and is even more diverse in the area of developing a nursing model of care for CFS patients. Currently I am liaising with a national pathology collector to assist me with allowing me to have pathology collection sites in Sydney, Melbourne and Canberra for CFS patients so they are able to have their blood and tissue collected, where these specimens are transported to our research centre to further examine the possible role of the immune, genes and endocrine systems in the possible role of this illness. In turn, further enhancing the CFS research and clinical database that has been developed by the national research centre I lead. Sometimes the objectives I set may seem overwhelming, however, the challenges CFS patients face are far more significant, and for that reason I think my objectives are not too great. March 2014

He says that no matter how bad the addiction or what it is you do, the principles are the same and we can all apply them to the small or large demons that have us in their grip. “Whether it be drugs, alcohol, gambling or something more ‘socially acceptable’ like going to the gym excessively, shopping, nail biting, sucking on your hair, knuckle cracking, smoking or having too much sugar or coffee; you need that fix and you go through this whole cycle when you’re triggered by something.”Pat says once you’ve inevitably got that hit, you enter a phase of guilt, despair and shame and this often triggers another incident. While he says for serious addicts it’s necessary to live away from home and go through a twelve step program or similar, there are many elements of this process that can be used to beat our smaller bad habits and everyday mini addictions. TOP 5 TIPS 1 Get real about your addiction. Be honest with yourself and aware that this has become a problem and that there is now something in your life you can’t live without.This is always the first step. 2 Acknowledge your patterns and triggers.Who or what is it that sets off that desire in you? Why are you looking for the joy your addiction brings? 3 Be accountable to someone. A good friend you can call in times of need. Someone who understands your desire to beat your problem. Even have a friendly wager with others trying to beat the same thing. Make it fun! 4 Devise a plan. Don’t just say, ‘I want to stop my addiction to spending’. Decide how you’re going to do that. E.g. ‘I’m only going to spend $50 per week on lunches’. Or,‘I’m going to set up an automatic payment that takes 20 per cent off my salary and puts it in another account so I can’t see it and spend it’. Answer the ‘how’. 5 Find better alternatives (replace a behaviour with a behaviour). E.g. ‘Every time I want a sugary drink I’m going to have a sparkling water with lots of fruit pieces in it, or a diet option’ (in moderation of course). Remember, addictions, no matter how big or small don’t have to control you.

Money expert, Michelle Hutchison, shares the secrets on saving on credit card fees while you’re overseas (so you have more for shopping!) s a collective bunch, we Australians love travelling and the promise of new experiences. What we don’t love is the credit card bill waiting for us when we return. According to creditcardfinder.com.au’s ‘Debt-lag’ 2013 survey, we racked up over $400 million in interest on our credit cards from travel expenses alone. Using a credit card overseas is a convenient option that’s popular among travellers, but the interest can pile up and foreign transaction fees can be quite hefty. You can opt to use a credit card when travelling for the option of an extra line of credit, to save having to transfer funds onto a separate travel card which isn’t linked to your account, and to take advantage of the flexibility of multiple currencies. Some cards also offer travel benefits such as complimentary travel insurance or bonus points for overseas transactions. For this convenience, you can expect to be charged foreign ATM fees, foreign transaction fees and currency conversion fees on top of your regular interest charges and annual fee. But if you want to reap credit card benefits without getting into debt, there are ways to avoid these credit card fees while travelling. The first thing to do is read the fine March 2014

print. Check what your credit card provider will charge you for ATM withdrawals and balance inquiries, foreign transaction fees and currency conversion fees. There are some credit cards which do not charge you for certain fees, so compare your options online using a financial comparison site such as creditcardfinder.com.au to make sure you use the most cost-effective option. If you have existing debt on your credit card and don’t want to pay interest while you are away, you might want to consider a balance transfer. Some cards offer balance transfer rates of zero percent for up to 15 months, so you won’t incur interest while you’re away. Some cards also offer introductory purchase rates with no interest for up to 13 months so you can use your card to make purchases when you’re travelling and not be charged interest until you get back, as long as you make minimum repayments. While you can’t escape foreign currency conversion fees on credit cards, you can avoid excessive costs by steering clear of exchanging money at airports. Their rates are higher due to their convenient location, availability and demand. You should also keep an eye on foreign exchange rates and take advantage when 30

the rates are high by withdrawing more money. By doing this you can also minimise ATM withdrawal fees and transaction charges because you will exchange money less frequently. When you do withdraw money from ATMs overseas, you should check if there are any ATMs in your bank’s network that will not charge you a withdrawal fee. You should also check the locations of these ATMs before you leave your hotel so you don’t wander around for hours trying to find one. If there aren’t many partner ATMs around then you should consider withdrawing a larger amount of money to minimise the fees you will need to pay. Before you leave for your trip, it’s a good ideas to check if your card provider charges you a fee on top of the ATM fee when you withdraw money overseas. It could mean a double sting every time you want some cash. The best way to get the most out of your trip is to research everything before you leave and choose products to suit your needs. It’s worth spending the time to manage your finances while you’re overseas otherwise your trip could end up costing much more than you bargained for. It’s the hottest travel trend in years − creative holidays − where you can travel to any destination, be it Italy, Indonesia or Brazil, learn a new skill and be immersed in an exotic culture. Melina Hamilton gets inspired in Morocco love photography and exotic travel, but as a young female it’s often been hard to find destinations where I feel safe and comfortable taking pictures. After a little online research I discovered Frui Creative Holidays (frui.com.au), and decided to join them on a five night photography holiday in Marrakech, Morocco. I’ve always been intrigued by Marrakech for its mystery, labyrinthine souks, ancient medinas and characterful locals with plenty of stories to tell. Our group was staying in Riad Baraka, which is in the medina right on the edge of the souk. Riads are essentially hotels, but they have a more homely, traditional Moroccan feel. What was lovely about our riad was that all the rooms opened up onto a central openair courtyard and there was a stunning roof terrace with views across the city and the Atlas Mountain beyond. Marrakech is a very safe city, but the constant hustle and bustle can be quite intimidating if you’re a solo traveller. Our group was always accompanied by our photography tutor, Filip, and guide, Ahmed. They were a fantastic duo and it meant I could focus on taking pictures without worrying about getting lost. Our first stop was the Jardin Majorelle, or Yves Saint-Laurent gardens (named after the fashion icon who purchased it in 1980). This garden is a tranquil botanical haven with walls painted in the vibrant shade of ‘Majorelle Blue’. Here we were encouraged to focus on composition. Under the shade of exotic flora, Filip explained that the most important aspect of photography is composition. It was refreshing to hear, as I’ve never been one to obsess over the technical aspects of photography. Here we spent a relaxed morning exploring the gardens while capturing its beauty with our cameras. Every so often, Filip would catch up with me to offer some handy inspiration, “How about shooting from down here?” Or, “What about using this archway to March 2014

Even Ahmed chipped in with advice every now and then, “Don’t forget about the rule of thirds ladies.” I think he’s picked up a few pointers over the years! After a lunch of Moroccan breads and a mouth-watering kefta tagine overlooking the Jemaa el-Fnaa, Marrakech’s main square, we ventured into the souk. The souk is an ancient labyrinth of alleyways lined with shops and people haggling over fabrics, meats and jewellery. It’s a photographer’s delight, as shafts of light pierce the rickety roof and cut through the dusty air, creating effective ‘leading lines’ (a photography term I picked up during the morning). All around you are people rushing past on bikes and cheeky locals trying to entice you into their shops. It’s a magical place which takes you back in time; worlds away from Australia. 38

That evening our group gathered on the riad’s roof terrace to enjoy a sundowner and share our best photos from the day. It was all very informal. Against a distant call to prayer, Filip went through our pictures and explained what he liked about them and offered friendly advice for the following day’s shooting. There were eight of us in our group, mostly total novices and it was great to see that even though we’d been photographing the same places, we all had very different responses. I realised that I seemed to be attracted to abstract textures and lines, while others tended to photograph people or colours. Over the next few days,Filip encouraged us to develop our own individual photographic style, or ‘voice’, as he put it. We visited the Ben Youssef Medrassa, an old university of small study rooms covered by intricate cedar wood carvings. We also went to the El Badi Palace

and cut through the dusty air, the morning). at sunset where the stalks nest on the walls against a blazing golden sky. But what made this trip so special was the ‘behind the scenes’ glimpses of day-to-day life in Marrakech. We visited a communal, underground oven where locals drop off tagines on their way to work and pick them up on their way home. These ovens are a massively important part of the city, as they also heat the hammams, which are public baths where locals go to wash and share the latest gossip. I’ve never been one for a classic beach holiday. I’d much sooner get out there and explore a destination and let it get under my skin. This was certainly the case in Marrakech. Not only did I see a side of the city that I just wouldn’t have been able to access on my own, I was also encouraged to respond to it creatively. Returning home, I’ve made new friends, developed a creative skill, and I have a set of photographs that I am extremely proud of. 39

Lunch and dinner retain a similar menu, with new additions occurring regularly. Head Chef, Matt Loria, recently added the Province Plate for $25, which consists of chicken and lamb skewers, calamari, mini burger sliders and the already famous Province Polenta Chips. Many of the dishes are share plates, so the portions are generous for the price. The restaurant boasts a beverage list that 41

follows the motto of balance and nutrition. All the cocktails are made with real fruits and without the use of refined sugars or syrups, ensuring maximum freshness and flavour without the sugar rush. The wine list has a mix of Australian and international wines including some organic bottles and even a vegan wine that lends itself to the trendy style of the restaurant. Lorna Riley and the team have delighted customers over the past four years with upmarket café fare that is always served with a complimentary smile. Drop in for a coffee and cake, or for the diner in a hurry, take away options are always welcome. The large display cabinet holds the day’s delicacies with offerings changing by the season. Whether you are looking for a delicious coffee made from the freshly roasted Veneziano beans, a piece of the daily made quiche or a slice of something sweet, Café Nineteen has all avenues covered. Breakfast is the main service for Café Nineteen and the ever-popular 19 Breakfast with poached eggs smothered with homemade hollandaise, crispy bacon, mushrooms and tomato on Turkish bread is great value for $15. The Sumo is not for the faint hearted and consists of the same ingredients as the 19, plus sausage, hash brown and a generous serving of baked beans. Lunch has all you could want of a great Café menu. Selections include the Open Grilled Turkish sandwiches with crispy bacon, caramelised banana and Swiss cheese or homemade wraps rolled with mountain breads and filled with char grilled vegetables; all for under $13. Lorna has incorporated the clever use of the specials board to road test new meals.Many have become instant hits and will shortly be printed on the menu.The inclusion of the Calamari Salad for $16.50, which is served with mesclun lettuce, capsicum, cherry tomatoes, sliced red onion, sprouts, salt and pepper calamari and finished with a chilli lime and coriander dressing is a favourite amongst the locals. The salmon salad for $21.50 is also a popular choice, and consists of grilled salmon on a bed of Asian salad with chilli lime and coriander dressing. Dietary requirements are no issue for the team, and for a small fee, alternative breads are available with a mix of gluten free loaves, rolls and rye breads available upon request. ‘I eat like a mouse, so why do I still gain weight?’ Claudette Freeman explains... ver wondered why you eat so little food yet still accumulate excess weight? Have you ever felt it was unfair that all your friends around you seem to eat like ‘horses’ and remain slim, yet no matter how little you eat, you still cannot seem to lose it? It doesn’t make sense does it…? You see, there are pathophysiological aspects of disordered eating that transpire in the body, which means eating like a mouse will indeed cause you to gain even more weight. I know so many friends and clients who regularly skip breakfast, or often skip lunch because they are so busy at work, and when they do eventually get to eat, they crave carbohydrates and eat at the computer or on the go. Many of them eat very little food in an attempt to lose weight. There are three main hormones involved in creating a disordered eating habit and they each play a huge part in effecting weight, as well as promoting negative eating patterns. Those of you who experience periods when you ‘just don’t feel that hungry’, take note. Cortisol is a hormone triggered in response to psychological or physiological stress, and has been found to influence eating behaviours, and affect both weight and health over time. Cortisol also stimulates appetite and especially cravings. Researchers have demonstrated that patients susceptible to high cortisol consume an unbalanced high energy and high calorific diet, high in saturated fats and starchy foods on their stress days compared with patients with low reactors of stress. Furthermore, Cortisol is intensified during an underlying pattern of disordered eating due to an adaptive response to increased and activated energy stores. Leptin is an appetite suppressive hormone secreted by fat cells. In normal circumstances, it regulates food intake and energy expenditure and induces weight loss. When Leptin falls it stimulates hunger, positively correlating with BMI and fat mass. Despite the whole appetite mechanism aspect with Leptin being complex, it is assumed that when you starve or decrease food consumption, Leptin falls below your threshold and the brain senses starvation. This begins several processes in the body, bringing on severe hunger pangs until your body senses the Leptin back at its level. However, when you repeatedly starve or decrease food consumption, you become Leptin-resistant. This is where the body

stores more fat cells to secrete more Leptin in an attempt to tell the brain that it does not need any more food, but the brain does not receive the signal. The brain continues to feel starved. And if your brain cannot receive the Leptin receptor signal, you are going gain weight. Those who yo-yo diet and fluctuate heavily in weight usually experience a drop in Leptin when they lose weight, however, thyroid activity can be compromised as well as energy expenditure due to a lower basal metabolic rate. Furthermore, changes in brain activity occur with emotional and cognitive control of food intake. Some researchers conclude this explanation to be a metabolic disorder caused by severe nutritional deficiencies, while others assume high fructose/high sugar consumption to be the culprit, or simply an adaptation to the excess body weight and fat cells. Lastly, a polypeptide hormone, which is an appetite suppressant hormone secreted by the intestine in response to food intake is called Peptide YY. Its job is to modulate appetite via the hypothalamus, by binding to Y2 receptors which promote the appetite suppressive pathways. Peptide YY levels work opposite to Leptin, since they are elevated in anorexia and low in obesity and are inversely associated with BMI and 43

possibly involved with the HP-Adrenal axis signalling. To rebalance appetite-regulating hormones remember to: l Include a lean source of protein with every meal l Never skip breakfast or meals l Eat a big healthy breakfast l Relax in order to beat those hormones This will help to curb cravings, reduce Cortisol and Leptin levels and increase the Peptide YY levels. Important to note, the above explanation is only one of the causes of excess weight gain that is hard to combat with just diet alone. There are many other factors that need to be taken into consideration for those unable to lose weight through only healthy eating. Crumbed chicken (SERVES 4)

“Nonna Ida makes the best crumbed chicken and it wasn’t until recently that I discovered the exact reason why. My son absolutely loves this dish”. INGREDIENTS • 2 large chicken breasts (preferably free range) • 3 eggs • ¼ cup Scotch whisky • 1 garlic clove, crushed • 2 cups dried breadcrumbs • ½ cup parmesan cheese • 1 tablespoon powdered chicken stock • extra virgin olive oil Let’s start cooking Thinly slice the chicken breasts (about 3-4 pieces per breast). Use a meat tenderiser to lightly hammer each piece thin. Marinate the chicken: place in a bowl with eggs, scotch and garlic whisked together. Place the marinating chicken in the refrigerator for 1 hour. Place breadcrumbs, parmesan cheese and chicken stock in a bowl and combine. Remove a piece of chicken from the egg mixture and place in the breadcrumbs, thoroughly coating the chicken. Transfer to a plate and continue until all pieces of chicken are crumbed. Heat olive oil in a large frying pan over medium heat. Once the pan comes to temperature (breadcrumbs will bubble when dropped in), place chicken pieces in the pan. Cook on one side until golden brown, then turn and repeat. Once cooked, transfer chicken to a plate covered in paper towel. Repeat until all pieces of chicken are cooked. Minestra (SERVES 4) “Minestra—or soup—was always on the stove when we were children. Often before the main meal, we would be served a bowl of minestra. Nonna Ida adds tiny bits of her fresh pasta to her soup”.

INGREDIENTS • 1½ litres chicken stock (see page x) • Anything you want to add! Let’s start cooking My recipe is very simple: heat stock and add literally whatever you like to it! I like to add finely shredded spinach and often use frozen spinach bought from the supermarket. Have fun trying different combinations such as: • finely shredded spinach and pasta • cannellini beans and tinned tomatoes • red lentils.

Spaghetti Sauce (SERVES 5)

Don’t forget to add some parmesan cheese to the soup just before serving.

“Finding it hard to get young children to eat their vegies? Disguise them! I process the vegetables until they are so fine, my son won’t notice them – but he gets their goodness anyway”. A teaspoon of fennel seeds and/or a pinch of chili will boost the flavour of the sauce. If cooking for kids, I recommend adding a little fennel (but only if the sausages don’t already have the herb in them) but no chilli. This recipe provides enough sauce for a 250g packet of dried pasta or 5 serves of homemade pasta. Special cooking utensil food processor (if you do not have a food processor, a grater will work just fine)

INGREDIENTS • 6 Italian sausages • 1 garlic clove • 1 carrot • 1 stick celery • 1 small onion • 2 x 400 g tins diced tomatoes • 1 tablespoon tomato paste • ½ cup white wine (not sweet) • 1 tablespoon olive oil Let’s start cooking Using a small knife, remove casings from the sausages and set aside. Peel the garlic and onion. Chop celery, carrot and onion into pieces, small enough to fit into your food processor. Whiz them in the food processor for about 30 seconds until you have fine pulp. Fry up the pulped vegetables in 1 tablespoon of olive oil in a large frying pan over medium heat. Stir occasionally as the mixture cooks through. Whilst the vegetable mixture is cooking, use the food processor to blitz the sausage meat until it clumps together in a ball. Add to the frying pan and cook with the vegetables for about 5 minutes. Reduce heat to low and add the wine. Cook for about 1 minute. Add tinned tomato and tomato paste. Cook through for another 5 minutes. Whilst the sauce is simmering, put your pot of pasta water on to boil. Allow the sauce to simmer for as long as it takes to cook the pasta (about 20 minutes). Any type of pasta works well with this sauce. 45

He’s developed an innovative healthcare application, 1stAvailable.com.au, which means very soon, people the world over will be booking all medical appointments at whatever time suits them, online or via app − easier access than ever before We’d love some insight into 1stavailable. com.au (the health industry equivalent of wotif.com and realestate.com!)...? Isn’t it nuts that in this modern age of the Internet, we have to make appointments with healthcare providers (doctors, dentists, physios etc.) via the telephone and only when the practice is open. How often have you delayed access to healthcare because making that call during the day, during your working hours, proves difficult or inconvenient. We know that 60 percent of all Australians find the current process of both finding and making an appointment over the phone frustrating and inconvenient. Why do healthcare providers make it so difficult for us to access their services? Making an online appointment, 24 hours a day, seven days a week, either through a website or via a mobile app, makes sense. All healthcare practices need to get with the times and start thinking in terms of how access to services can be made easier for patients. Offering online appointments is key, but what patients don’t want to have to do, is have a different login ID, password, mobile app or website address for every new healthcare practice they want to visit. That would also be nuts. Hence 1stAvailable.com.au. Australia’s single destination to book any healthcare service online or through our mobile app. What initially inspired this idea? My business partner is a dentist, and it was his experience with patients expressing frustration at not being able get a hold of him easily that started the idea, and his experience with Wotif.com that triggered it. How’s it all going so far? The major challenge like anything new, is waking up the healthcare industry that this change is coming. The industry by and large does not like change. This is a change that is being driven by consumer demand. Like all industries, there are those natural leaders who are early adopters and they are leading the way. A large GP practice group in southeast Queensland (medicross.com.au) and a significant skin cancer group (southernsun. com.au) are great examples of this. Also, making adoption easy for practice staff has proven key, and integration with their practice management software is a major requirement.

What are your aims for developing it this year? Rapid adoption by healthcare providers is key, so that many more consumers get the experience they expect, that is, to find a healthcare provider near them online, and to be able to book different healthcare service types from 1stAavailable. So it’s all about getting to scale as fast as we can. What’s the coolest thing about being a dotcom entrepreneur? That others think you are cool as it incredibly hard work. Actually, more seriously, it’s about creating something that has not been done before, creating a new market and changing the way we do things − forever. What are some of the other most rewarding dotcom projects you’ve worked on throughout your career? I had the pleasure of working with most of the major .com companies in Australia through what was then Australia’s leading online application managed hosting company, Hostworks. This gave me the opportunity to work with and experience the rapid growth of Wotif.com, Ninemsn, SEEK, Carsales.com. au, Realestate.com.au, GraysOnline and many others. What’s your advice for others aspiring to work in this type of industry? Don’t let the veterans of the industry tell you what you can’t do. Anything is possible,

you just have to be determined enough. Also, find the folks that have had real experience with building something of scale online. Few actually have and it makes a massive difference to what you build and how you architect the solution. We built our original platform and architecture with former Wotif.com and News. com.au architects and developers. We built with the end game in mind. Lastly, it will all take longer and cost more than you think. What’s your view of the future when it comes to technology? It will be all about mobile devices and mobile apps. Local business websites will be redundant. Directories will be redundant. Calling anyone to make an appointment or reservation will be a thing of the past. Convenience will be what drives technology adoption with consumers leading the way and businesses fighting to find ways to engage with the new mobile methods of access. What’s your success mantra? Determination, passion and determination. Don’t let anything stop you. You have to believe in yourself and your vision. When you’re not working, where would we find you hanging out on the GC? On my road bike. Riding around the GC is just beautiful! I ride for both fitness but also to raise money for cancer research (check out visioncrusaders.com).
