Wonder woman 2015 Women in Business Awards of Australia, Business Woman of the Year, Alana Beattie says working for herself is the best decision she has ever made hen Coffee Roasters Australia founder and marketing director Alana Beattie first started working, her dream was to work for a large organisation and have her own office. “I had no idea what I was going to be doing, but I loved the idea of it. Once I got there though and had been in ‘the system’, I realised I wanted more. I wanted the freedom to make my own decisions and to own the work I was doing. The only way I saw this happening was to go out on my own,” she says. Coffee Roasters Australia was that step – and luckily she took the plunge because Alana is the 2015 Women in Business Awards of Australia Business Woman of the Year. “Taking the leap to being in business has been one of the best decisions I have ever made, I only wish I had done it sooner,” she says. “I was so overwhelmed when I found out I had won the award. It was an amazing feeling to be benchmarked against outstanding women in business. It has given me a great sense of accomplishment and allowed me the time to reflect on my journey so far and all that I have done. “If my journey can inspire just one person to follow their dream then I would be thrilled and so happy that I shared my story. Just don’t be afraid to take risks and make mistakes. From risks and mistakes, we can create some of our biggest achievements. “I think it is so important to share women’s achievements. With over 50 per cent of the population being female, we need to empower them through platforms, such as the Women in Business Awards of Australia, as they are a huge contributor to the success and growth of this country.” Juggling motherhood and an international business is an element Alana is still working on, but she says owning a business gives her more flexibility. “I am not sure whether I have this quite right yet but I am very lucky to be able to November 2015

The 2015 winners include: manage my own time, which allows me to be there for my children and get involved in their schooling and things that are important to them,” she says. “For example, I coach my son’s rugby team at school. In order to do this I need to be available on Tuesday afternoons and Saturday mornings. I am very lucky I can work my schedule around this so I am available to be there. I love doing it as it allows me to be involved in his school environment and I get quality time building valuable memories with him.” Coffee Roasters is a specialist coffeeroasting equipment distributer and manufacturer. While Alana says the award win has opened up many more opportunities, the business is forever evolving. “In January, we opened an office in Hong Kong, Coffee Roasters Asia, as we start focusing on international markets as well as the Australian market. Coffee Roasters Asia was established to provide our base for our planned expansion into South East Asia. We believe the coffee market in South East Asia is 5-10 years behind Australia, but we predict it will catch up quickly,” she says. he’s a successful model, you may have even seen her on The Bachelor, but bullying has played a part in Natalie Sady’s life since she was at school. More recently in her adult life, she was the subject of trolling and online bullying. Statistics show one in five Australians are bullied and bullying in workplaces costs the Australian economy $30 billion a year. It’s a constant topic in the news, most recently with Lorna Jane and Canberra hospital facing bullying claims, while a psychologist has declared long-term school camps can be the scene of the damaging effects of bullying. Another story suggests Facebook unfriending is a form of bullying. Natalie knows bullying all too well. “I, unfortunately, was bullied at school. It was often a case of being picked on whenever a modelling job I had done came to the attention of the girls I went to school with, “I never told anyone about the work I did, but when it was published and they saw it, it gave them ammunition to call me stuck up and all sorts of other names,” she says. Bullying reared its ugly head again when Natalie appeared as a contestant in season one of The Bachelor Australia. “More recently, I had to deal with a lot of trolls online when season one of The Bachelor Australia was airing. People were horrible with the comments they were making about me. I was called disfigured, people questioned whether I was male or female, and apparently my voice was offensive. “When you are on TV, I think people assume you aren’t real and you don’t have feelings, and they have a right to say whatever they like about you. In reality, we are all very real and even if we try to dodge conversations about ourselves online, sometimes it’s impossible to avoid. “To have such horrible things being said made me feel incredibly isolated and there were days when I completely shut off from everybody around me. It made me question everything about myself; if I was disfigured, was I a good person and if I was good enough. “I have no issue with people disagreeing with my views in life, but to be

What is bullying? According to the Bully Zero Australia Foundation, bullying is when an individual or group uses its power and strength to repeatedly, deliberately and intentionally use words or actions against another, or a group that hurts, harasses, humiliates verbally, physically, psychologically or electronically making the victim feel oppressed, traumatised and powerless. Bullying is not l One-off incidents that have not repeated. l Bad mood or disagreement with someone’s point of view. l Apologising for behaviour immediately. l Accidently bumping into someone unintentionally. l Statement of dislike towards someone. l A single act of telling a joke that has no intention to make the other feel hurtful or embarrassed. l Expressions of unpleasant feelings regarding others. l Non-verbal behaviours such as being excluded, not playing with someone, choosing different people or groups to play with. attacked in such a personal way was brutal. Luckily, I had incredible people in my life who really picked me up when I was down. They listened when I needed to talk, they defended me online and on radio and tried to share, with these people that seemed to hate me so much, who I am and what I am really like. If I didn’t have those people, I’m not sure I would have made it through that experience as well as I did. “I have learnt that people who are happy in life and with themselves never feel the need to tear others down. Those people who do write such hateful things aren’t happy in their own lives. It’s this philosophy that helps me, even to this day.” Natalie’s experiences left her wanting to shine a light on bullying in the hope to stamp it out of society and so she became an ambassador for the Bully Zero Australia Foundation. “At a function, while the show (The Bachelor) was airing, I met the founder and president of Bully Zero Australia Foundation Oscar Yildiz and I started talking. I was interested in the organisation because of my own experiences. I loved what Oscar was doing and how passionate he was about teaching people about the effects of bullying and helping those who had been bullied. From there Oscar asked me to become an ambassador for the organisation,” she says. “It has been an incredible honour for me to be an ambassador for a cause I care so much about. One of my favourite parts of being an ambassador is going to speak at schools and sharing my experience. It is incredibly rewarding to have someone come up after a presentation and hear their experiences or that I had helped them.” Natalie says she loves being part of Bully Zero Australia Foundation because she is part of an organisation that is fighting to change the attitudes of all Australians and, in turn, their behaviours. “Sadly, I don’t think we’ll ever be able to fully stamp bullying out of society, but I do think we need to try. It’s Spring Carnival time once again and I am sure you are all eager to dress up and enjoy the festivities, but if you are stuck for inspiration on choosing your outfits then I have some great styling tips for spring race wear. It’s definitely an exciting time of the year for race-goers, especially if you are lucky enough to be at Flemington Racecourse, in Melbourne, but you can apply my styling tips for any racing event - not just the big day. AAMI VICTORIA DERBY DAY The colour theme of this special day that marks the start of the racing carnival is black and white. Monochromatic tones, when put together very well, can be so chic and elegant. For a softer and fresher take, try layering white on white, which will also help to keep you cool during the summer heat. As this is one of the most respected days of the races be careful to watch your hemline. Fitted pencil skirts and dresses over the knee are a perfect choice and so on trend. MELBOURNE CUP DAY It’s the race that stops the nation and draws attention worldwide for both its horse racing and fashion. The race wear for this event is always vibrant and individual, so dare to be different by putting on a bold colour. The same rule goes for your headwear; make your hat or fascinator a standout piece while keeping your accessories minimal. I love block colours such as yellow, red, hot pinks and blues on Melbourne Cup day. A jumpsuit with one solid block colour will look amazing and stylish on this day; look for inspiration from designers like Balmain, Stella McCartney internationally and from home Bec and Bridge, Kookai and Ellery. Also check out Cue store for bold prints, which are a big, hit and wide-leg pants with long-sleeve blouses for that ’70s inspiration. The reality of “having it all”, as we have come to know it, is utterly exhausting, according to women’s wellness expert Dr Linda Friedland. “We have prided ourselves in our capacity to do it all; raise a family, build a thriving career, maintain relationships and stay on top of it all. The reality is that something always gets sacrificed. It is neither work nor the children, but rather our energy that takes the brunt.” “In truth, for most of us ‘having it all’ is not a philosophical debate because the majority of women who choose to have a family, most certainly need to work at the same time. “We should be asking another type of question entirely: ‘How can we possibly do it differently?’. It is not necessarily the combination of work commitments and family responsibilities that depletes us. It may be lack of flexibility in our work environment, insufficient childcare options and myriad other issues. But mostly it is the self-imposed

unrealistic standards we set for ourselves that get in the way of achieving peace of mind. Here are five tips to get on top of it 1. Forget about balance The reason we feel so frustrated much of the time is that the balance we are pursuing just doesn’t exist. So long as we are chasing an unattainable goal, there is no hope of getting close. What does work-life balance even mean? There is almost always more work, than family time or me-time. The prudence is in being super disciplined in establishing strong and effective lifestyle strategies and sufficient recovery time. 2. No awards for being superhuman Working hard is essential, however, the need to persistently prove yourself and go beyond the call of duty is not. These common characteristics of executive women are both unnecessary and the classic cause of much of the burnout and breakdown experienced. Your time outside of the office should be spent on you and the people you care about. And don’t hesitate in asking for help either. 3. Be bold, dig deep “Put your hand up and be bold and be courageous. Be prepared to back yourself, be prepared to have a go,” says Gail Kelly

The simplest way to recharge energy is by breathing, and learn to practice mindfulness and meditation. 5. Recharge the batteries In “having it all” neither work nor family are generally sacrificed, but rather your own needs. Ensure you structure some time for yourself to defuse your stress and recharge your energy, such as a regular massage. Keep well hydrated, exercise moderately and eat the most nourishing foods. The catch-22 of this problem is that when our cells have high levels of free radicals they can’t produce energy properly and this creates even more free radicals. This is why a lot of elite athletes “burn out”. It is also the

cause of chronic fatigue syndrome. The way our bodies mop up this oxidative stress that damages cells is through antioxidants. These come from healthy foods, such as fruits and vegetables. We also manufacture our own antioxidants within our cells. Ageing and disease occurs when we are exposed to more free radicals than we have antioxidants to mop them up. The problem with taking antioxidant supplements is that some free radicals are actually necessary for the cells to cope with stress and to fight infection. How do we get around this problem? The answer is with molecular hydrogen. Molecular hydrogen has been well documented in medical research since 2007. What has been your biggest achievement? Apart from being married to the man I love for the past 35 years, I have enjoyed building a successful business in jewellery from the ground up with a lot of hard work and determination. Seeing my dream realised with the first Mariana Spirit of Design shop opening at Paradise Point this year has been a wonderful addition. Why do you love what you do? What girl doesn’t love to be surrounded by beautiful jewellery? It is so exciting to be part of the designing process of an international jewellery brand that is sold in all the major fashion capitals of the world. How do you define success? Happiness. If you don’t love what you do, it is time to look for something that you are passionate about. Loving life is paramount. What do you do in your down time? Spend time with family, enjoying good food and wine and working in our lovely garden. I also love to travel to beautiful and exotic places around the world and soak up the atmosphere. Happily ever barter Gold Coast bride found a novel way to beat the blowout price tag of a wedding with all the frills by using Bartercard to pay for her special day, trading haircuts for everything from limousine hire to honeymoon accommodation. about PCOS

Polycystic Ovary Syndrome (PCOS) is a distressing disorder which affects one in five women r Timothy O’Dowd, Gold Coast gynaecologist, says PCOS can be difficult to understand but it is a prevalent issue in our community and, as women we need to understand it. “Recent research shows PCOS goes beyond initial infertility issues or problematic periods and skin. It is an indicator for greater and more long-term health problems,” he says. “The exact causes are unknown, but there are well-recognised genetic and environmental factors that contribute. Fortunately, there are well-established medical and cosmetic therapeutic options for patients.” What is Polycystic Ovary Syndrome? With PCOS the ovaries overproduce the male hormones testosterone and androstenedione, which stops the process that leads to ovulation and egg release. This means there are less ovulations a year and therefore fewer opportunities to fall pregnant. This problem gives the “polycystic” change, recognised only by an ultrasound. The characteristics include acne, excessive hair growth on the face, chest and abdomen, period disturbance and/or delayed fertility. For some reason there is a resistance in muscle and other cells to normal levels of insulin. As a result extra insulin is produced. Eventually the body can’t cope and Type 2 diabetes can develop. High insulin levels facilitate the deposition of fatty tissue and also compounds the abnormal hormone production in the ovaries.

Pregnancy concerns In addition to difficulties in achieving pregnancy, PCOS patients are more likely to have pregnancy-related complications such as miscarriage, gestational diabetes, high blood pressure, greater likelihood of requiring a caesarean and a higher likelihood of the baby being admitted to intensive care units after delivery. Life-long concerns Metabolism: Although PCOS can be present in healthy-weight individuals, studies show a strong relationship between obesity and PCOS. The insulin resistance and excess insulin production, which is common to both conditions, may lead to Type 2 diabetes and its later consequences, heart and blood vessel disease. Blood tests often show abnormal cholesterol and lipids, which are related to heart disease and stroke. Mental health: In recent years research has explored the mental health aspect of PCOS sufferers. Eating disorders, bipolar disorder, anxiety and depression are common in PCOS patients. Obesity, bodyimage, infertility or chronic diseases may all contribute to these findings. What about cancer? Cancer of the uterus (endometrial cancer) is associated with both PCOS and obesity. This cancer can probably be prevented by engaging in long-term surveillance. Promotion of regular periods through medication or weight loss will help reduce this cancer risk.

Why diets don’t work There are a number of reasons a diet doesn’t work, according to weight loss expert Kylie Ryan

Diets ask you to change too many habits all at once Every diet has its own list of favoured foods and restricted or banned foods. Each time you begin a diet, you need to buy special foods and cook in a special way. That’s different food than you are used to, and different recipes than you make, all which involve changing many unconscious habits and doing them consciously. This takes a lot of mental effort and much more time. Studies show in order to effectively create a lasting change to habits, you must only change one at a time and stick to that habit consistently for about 60 days in order to embed it into an unconscious level. When you attempt to change 20 or more habits on a new diet it is no wonder that many people only last a few days. They ask you to favour general advice instead of your own body’s intuition Diets are all about the celebrity diet guru who is spruiking them. Many diets have some common beneficial advice. Who can argue that most people could benefit from eating more vegetables and less sugary, processed foods? However, the core issue that prevents lasting change is that the diet sets the dieter up for failure because it teaches them to value some external authority instead of their own body. Your body knows what it needs to eat, your body knows when it is full. Your body knows when you need to rest. They restrict calories and send your body into starvation mode The core method of dieting for weight loss is calorie restriction, which may be dramatic through something ridiculous like the cabbage soup or lemon detox diet, or less dramatic in something like the 12WBT. But calorie restriction is calorie restriction. Studies have shown after just a few weeks of calorie restriction, your metabolism adapts and drops its needs to the new level, this means that your body thinks you are starving and has adapted to conserve energy. This means you are more likely to store fat while on the diet and more likely to store even more fat afterward.

They rely on willpower and deprive your brain of glucose to make good decisions Diets are all about willpower, forcing yourself, restricting yourself. What diets don’t tell you is that willpower runs out … fast. Your brain needs glucose to make thoughtful decisions and after “willpowering” your way through a diet all day, you are scientifically set up for a cookie blowout between 5-9pm. This has been proven. They do not help you to deal with the root cause issues of why you are overeating Diets are all about the quick fix, “eat this - get skinny - be happy” is the core message. However, diets never address the core reasons why you have overeaten in the first place. This often has to do with emotional stress, unresolved trauma, self-esteem or relationship issues. Without dealing with these driver issues and teaching you better strategies for handling your emotional stress, the minute your life gets difficult you will return to food for comfort. They teach you to obsess and judge the data of food, exercise and your body There’s nothing surer than calorie counting to make you crazy about fat, sugar, protein and carbs in your salad, smoothie, or banana bread. The thing is, those numbers don’t tell the whole story. There’s also a whole lot of other essential nutrients in the food that cannot be accounted for in those numbers, and the guiltier and shameful you are about eating, the more you are likely to overeat. They are not enjoyable and bring out your inner rebel Diets are not fun. They are a means to an end. You go on a diet because you want to be slim for the wedding, reunion or for that summer bikini; they were never meant to be a long-term solution. Ultimately, diets don’t work because on so many levels they don’t feel good for your body. It feels like you have a strict teacher telling you what to do and your inner rebel wants to go and do the opposite. Diets will not get you the result you’re really after. Alcohol and weight loss: Are they possible? Physiologically, alcohol consumption does not directly result in fat storage – so alcohol cannot be turned into fat uess what? It’s the over-consumption of food (particularly fats and carbohydrates) like nuts, chips and dips you eat when you are enjoying your crisp white “chardy” or “cleansing ale” that are the problem. To put it simply, when alcohol is ingested your body treats the beer, wine, spirits and mixers like a toxin. It wants to process it first and as quickly as possible, so it sends the toxins off to the liver. Any other stored carbohydrates are no longer required as a fuel source and these “carbs” consumed with the alcohol are quickly stored in the muscle cells and liver. Unfortunately, our liver is not a bottomless pit so excessive drinking can cause an over-supply of carbohydrates to be stored as fat. The facts are simple; alcohol has 29kJ of energy per gram, which is almost double the energy value of 1g of carbohydrates. So it is going to take your body almost twice as long to burn up the alcohol - with the knock-on effect of delaying your body’s ability to use its carbohydrates and fat stores. Let’s compare foods and alcohol in terms of energy intake: Imagine you’re at a party and you consume 5-6 bourbon and colas over the course of a six-hour timeframe - this may be thought to be quite acceptable. However, consider how you would feel (and how it would look) if you ate 10-12 slices of bread at the same party. That’s the food equivalent of the 5-6 bourbon and colas. But wait there’s more: l Alcohol is a diuretic: It causes water loss and dehydration, not to mention the loss of valuable minerals like zinc, potassium, calcium and magnesium. Fluid balance, muscle movement and chemical reactions are affected if these minerals are not maintained. l Alcohol and sleep don’t mix: Although alcohol might induce sleep, the sleep you get isn’t very deep sleep so you ultimately get less rest. l Alcohol doesn’t fill you up: In fact, it will stimulate your appetite, not like the comparable amount of energy you get from food. Research has also demonstrated by drinking before or during a meal, your willpower and inhibitions are reduced. So the chances of you consuming more food than you normally would eat are much higher along with poor choices like a kebab and chips. l Alcohol and the “bank”: You can’t store up your carbohydrate intake in a “bank” by skipping meals beforehand and then “withdraw” them at the bar or party. You will be so hungry by the time you get to the function that you’re much more likely to munch on all those salty, fatty snacks. l Alcohol and salt: Peanuts, pretzels and chips are all salty, making you thirsty and encouraging you to drink more. Avoiding these snacks can help limit the damage. Here are eight tips to help you minimise the effects of alcohol: 1. Drink water, or at least a diet soft drink, in between each alcoholic drink. 2. “Blind refills”… Put a clean coaster on top of your beer or wine glass to stop automatic “top-ups” by other party goers. 3. Eat a healthy protein-rich meal before going to the bar or party. 4. When drinking spirits, use water or diet soft drinks as the mix. 5. When drinking beer or wine, choose low-alcohol and lowcarbohydrate varieties. Corona is one of the lowest and has no preservatives in it, which means less hangover. 39

6. Be aware of the foods you eat in the hours prior to and while drinking. Steer clear of high-carbohydrates and fat-rich foods. 7. Watch the foods you eat over the next few days as a drinking session will supply your body with a higher-than-normal carbohydrate intake and may easily lead to fat gain. One of the best things to do is reduce your carb intake the day of and the day after. 8. A low-to-moderate exercise session may be useful on the day after a party to work off the oversupply of energy (but keep up water consumption, as exercising when you are dehydrated is not recommended). So now you have an understanding of the impact of alcohol on your health, you can make an informed decision on when and where you think it is appropriate to consume an alcoholic beverage. The automotive industry has long known that women seal the deal on the choice of car and boat dealers and brokers have come to realise this as well. Summer is on the horizon and there’s no better way to enjoy the long, hot days than on your boat. SPAGHETTI AND MEATBALLS

Serves 4

INGREDIENTS • 1 cup almond meal • ½ cup almond milk • 3 small garlic cloves • 250g beef mince • 250g pork mince • 2 eggs • 2 tsp dried thyme • Salt and pepper • 1 tbsp olive oil, to cook • 1 red onion • 2 garlic cloves • ¼ cup fresh parsley leaves (+2 tsp to serve) • 2 tbsp fresh rosemary leaves • 1 tbsp olive oil, to cook • 2 tins of good quality tomatoes • Salt and pepper • 1 packet spaghetti • Pecorino or parmesan cheese, to serve METHOD

Combine almond meal and milk in a large mixing bowl and leave to absorb for a few minutes. Once ready, crush in garlic and add mince, eggs, thyme and seasoning.Roll tablespoon-size balls from the mixture. Heat oil in a large frypan on med-high heat. Once hot, cook meatballs for 5 or so minutes until browned. Remove meatballs from the heat and set aside Finely dice onion and crush garlic. Finely chop parsley and rosemary. Add oil, onion and garlic to a large clean frypan on medhigh heat. Once aromatic and tender, add tomatoes, herbs and seasoning to taste. Mix well to combine, add meatballs and turn to a simmer. Cook for 15 minutes or until sauce is thickening and meatballs are cooked through. While sauce is cooking, heat a large saucepan on high heat. Once rapidly boiling, add spaghetti and cook to al dente. Serve cooked spaghetti with meatballs, sauce, herbs and cheese.Cook the cumin, chilli powder and garlic in the pan until fragrant, being careful not to burn it.Add the cubed eggplant to the pan and cook until soft and lightly browned. While the eggplant is cooling, layer the rocket and spinach on a large white plate. Top with eggplant, haloumi and scatter with the pomegranate seeds.

CHUNKY LETTUCE, AVOCADO AND CUCUMBER SALAD Serves 2 INGREDIENTS • 1 cup iceberg lettuce • 4 small Lebanese cucumbers • 2 small avocados • 1 tablespoon eschallot • Salt and pepper • 1 tablespoon macadamia/olive oil • Juice of ¼ lemon • Fresh dill, to serve METHOD: Wash and cut lettuce into small and chunky pieces. Wash and dice cucumbers. Peel and dice avocados. Peel and finely slice eschallot. Combine all these ingredients in a mixing bowl. Season to taste, add oil and lemon juice. Coat well and serve with dill.

BERRY ICE CREAM INGREDIENTS • 2 cups Greek yoghurt, unsweetened • 5 tbsp rice malt syrup (honey or maple syrup will work also) • 2 stalks fresh mint, leaves picked • 2 cups frozen mixed berries • ½-1 cup ice cubes • 1 punnet fresh blueberries, to serve • 4 tbsp cacao nibs, to serve (optional) METHOD: In a small food processor, whizz the yoghurt, rice malt syrup and mint until well combined. Add frozen mixed berries, ice cubes and whizz again until smooth and well combined. Divide blueberries between bowls or serving glasses, top with the ice cream and optional cacao nibs to serve.

impressive food The Links Restaurant & Bar, located within the Links Hope Island Golf Course, has long been a favourite with golf enthusiasts and Hope Island locals

ith a recent revamp and some returning talent to the helm of the kitchen,I was excited when I received the call to go and put the new menu through its paces at Links Restaurant & Bar. I arrived for lunch with a colleague and was impressed by the opulence of the provincial styling of the main dining room. From the beautiful timber mosaic feature wall at the entrance to the well-dressed tables with crisp white linen, no expense has been spared on decoration. The restaurant can hold up to 55 guests in the main dining room, with alfresco space available upon request, and a separate bar area that meets the adjoining terraces. The modern Australian menu has influences of Mediterranean flavours with a gentle touch of Asian-inspired ingredients for good measure. Our first course to arrive was the bruschetta of toasted olive Vienna, vine tomato, fetta, balsamic and pesto ($14.90). The dish was vibrant and full of colour.The breads were crisp and seasoned well.The balsamic reduction was drizzled sparingly over the dish as to not overtake the ripe vine-tomato flavour, which allowed for the herb pesto to shine through. Enjoyable. The entree course arrived and once again the plating of the dishes was immaculate. The nicoise of Japanese seven-pepper seared tuna, parisienne potato, green beans, olive tapenade, tomato, egg and vinaigrette ($19.50) had an unexpected kick. The seven-pepper seasoning was a unique flavour. Spicy, yet, not overpowering of the tuna. The edges of the fish were seared evenly and the seven-pepper crust was delightfully crisp. The second entree was the slow-braised pork belly with carrot puree, vanilla compressed apple and jus ($16.90). I love pork belly. This dish was no exception. The vanilla apple was a pleasant surprise and partnered the smooth puree of carrot exceptionally well. The pork was cooked superbly and the seared finish in the pan left the rendered belly moist with a crisp top. Main course was next and while they were being prepared, we enjoyed a nice glass of chilled November 2015

sauvignon blanc from the Marlborough region, while admiring the scenic surrounds of the golf course through the large bay-style windows. Arriving shortly after was the slow-braised rib of lamb, sautÊed spinach, pumpkin and saffron yoghurt ($26.90). The fall-apart ribs were meltin-the-mouth perfect. The meat was still in tact, meaning it had been handled with care throughout the cooking process – always a good sign with a braised lamb dish. The spinach, pumpkin and semidried tomatoes worked well to balance out the robust flavours of the lamb. The salmon with rosti, pickled fennel, orange, bacon crumble and salsa verde ($26.90) arrived next. The meal was quite large, with the rosti almost as big as the salmon; definitely value for money. It is always a test to see how a chef serves salmon. Ben James and his team do it exceptionally well. Crisp skin and medium rare. Perfect. The citrus flavour from the orange segments didn’t clash with the tartness of vinegar from the pickled fennel, and the bacon crumble was an added textural bonus. What was supposed to be a light lunch turned into a feast and I could not have been more pleased. Currently running at Links Restaurant and Bar is the Prawn Stars Lunch special. For $25, you have the choice of a deconstructed prawn cocktail, or prawn laksa with bok choy and coconut rice or the garlic chilli prawns with rocket, toasted ciabatta and burnt lemon. Included is a glass of wine from a selected range. The snack menu on offer at Links is a popular choice for golfers after a hard day on the course. Available daily, prices range from $7.50 for garlic bread to $20 for the top-of-the-line prawn deluxe pizza. All tastes are catered for with a range of gourmet sandwiches and nibbles also on the menu. Links Restaurant & Bar is open seven days a week for breakfast starting at 6.30am and lunch from 11am. Dinner is open on Friday nights only and, to avoid disappointment, reservations are recommended. t was the morning of the NRL grand final and my team had finally made the cut. An exciting moment in history ensued, when it became official (according to Facebook, at least) that Queensland now owned New South Wales. Even for those not into football, the game was one to watch and relish. Ten long years it took for me and my fellow Cowboys fans to make it back to this very stage, and my household was one of the many truly divided. Small issue though, Cooper and I were outside the country for the big event and I incorrectly assumed my footy-crazy man would have the viewing options sorted. However, following a good few hours of tapping away and swearing at his mobile devices and last, but not least, my laptop, I worked out that he’d not actually researched how we could live-stream outside Australia, or who we could even Skype to get a remote glimpse of the action. Several frantic calls to pubs around 10am proved fruitless and then the pièce de résistance, we’d not anticipated daylight saving kicking in across NSW, so the game had started before we could pursue any other options for taking in the live action. So, I sat in our little living quarters, sombrely nursing my cowboy hat in my lap, reminiscing about the time 10 years ago, when a group of us gathered at the Boardwalk Tavern at Hope Island to watch the Cowboys flog the Tigers. Only, of course, they didn’t. How depressing. We wandered out into the sunny day that was. Cooper’s phone smugly pinged us a sound each time the Broncos scored; my thumb was numb from updating Twitter every few seconds to check the #NRLgf conversation. It was close,

winning spirit right?! Broncos supporters − family and friends − continued to update on WhatsApp, each conveying love for their team, but all commenting that they quietly hoped the Cowboys would do well too. Pretty words. I want a win! As our morning coffees brewed, Cooper looked at me over his iPhone and delivered news with restrained excitement,“Broncos have got it!” I proceeded to sulk. My team deserved this win. Ding. It was my brother, Josh, on Facebook messenger, and his note went something like this, “Holy $#I*, did you see that?” “No, we’ve been locked out of viewing, thanks international copyright laws, good stuff. Cowboys should have won though, rigged...” Evidently, I was taking it well. There was a delay, before he replied,“They still might... they just equalised with 0 seconds!”. The vibe felt to me like we actually all came together.No matter what team,city,town or colours we each favoured; whether we generally watch sport or not, and despite our own Titans sadly being out of the mix, a unique spirit presented itself this year. I call it, being a Queenslander. The moral of my story? I’ve got a few, actually. Cowboy hats never get old. Also, as much as we love them, never trust your man to refine the finer details of an important plan (organise your own Wi-Fi and login). I recommend too, holding on to this winning sentiment, after all, how proud and fortunate we should feel to hail from the Sunshine State? Importantly, let’s take a lesson from the Cowboys (my winning team ... in case you forgot) and remember that no matter what happens, or how much time might pass, you should never, ever, give up on your dreams. Hold on to the vision of your prize in sight. I know, sickeningly sentimental, but true. Now go celebrate, it’s party season after all, and I think we’ve all earned it.
