elcome to our September issue, celebrating all things Spring. We’re absolutely loving the frocks on our cover and in our fashion pages this month, shot at The Strand in Coolangatta! They’re bright, bubbly, fresh and colourful, just like the contents of nutrition educator Jema Lee’s shopping basket. Jema talks to Get it about her experience going gluten-free and delivers some tips on how and why we can cut it from our diet too. If your home (or life) is in need of a bit of a cleanse, a declutter and spring clean is good for the soul according to the experts we’ve chatted to. Check out page 16 for some great tips to cut, cull, clean and reclaim your life. If you’re a coffee connoisseur, we have listed a couple of favourite local cafes for you to try out this month. And, our publisher Leanne delivers her verdict on indoor skydiving with iFly. One of the many great things about living on the Gold Coast is the array of talented and inspirational women who reside here. In this issue we talk to author Livia York, originally from Italy, about her experiences with domestic violence and how she has risen above her troubled past. We also chat to some fabulous ladies who trade high heels for work boots to trawl through swamps in their spare time, as members of the Gold Coast State Emergency Service. These ladies, and the rest of the SES, do such excellent work and their efforts are appreciated by us all. With hundreds of bloggers converging on the Gold Coast this month for a blogger training and networking event, we also explore the blogging scene and chat to four bloggers - including Chantelle Ellem, also known as Fat Mum Slim - about blogging for business and pleasure. When I started a blog more than three years ago, it was a novelty that allowed me to write more than just the column inches permitted during my day job as a journalist. I shared personal experiences and then, when I discovered I was expecting twins in addition to my then-1yo and then-2yo, I shared the pregnancy and newborn journey with readers. For me, blogging has turned into a second job and has provided countless benefits including friendships (real and online), amazing ‘colleagues’, interesting people and experiences as well as additional work opportunities. Popular online personalities, The Merrymaker Sisters also know all about succeeding online and have shared, with us, a couple of their delicious recipes that are sure to tantalise our taste buds. Waking up from winter Get it's Anna Davies isn't ready for spring (or summer) but is hoping these steps will turn that around. he flowers are blooming, the grass is greener and the pool is warming up to an almost bearable temperature. Yet here I am sitting in bed, covered in cake crumbs with legs hairier than a yeti after an Ashley and Martin treatment. For all its faults, winter provides plenty of opportunities for you to hide how gross you truly are. I can wear jeans to cover my luscious leg locks, I can sit inside all day without arousing suspicion, and I can wear layers to disguise the gravy stains that adorn 80 per cent of my clothes. It’s safe to say I’ve been hibernating, but the time has come for me to emerge from my Netflix cave and face the real world. How am I going to turn myself from a winter hermit into a beautiful springtime butterfly, I hear you ask. Well, read on for a tantalising to do list. STOP EATING GRAVY Comfort food is the cornerstone of my winter diet. If I had a dollar for every time I’ve incorporated gravy into a meal this winter I’d have enough money to never leave my hibernation hole. Unfortunately no one is paying me to eat gravy, so it needs to stop. I’m swapping slow cooker meals for rice paper rolls and salad. I’ll also replace the hot chocolates I’ve been guzzling with good old-fashioned H20. Not only is it heating up too much for these creature comforts, replacing them will make my skin glow like someone who has actually seen the sun in the past three months.

GET OUTSIDE Every time I reach for the remote I’ll grab the car keys instead. I’ll go and do things that I complained it was too cold for in winter, and will undoubtedly complain it’s too hot for when summer comes. It’s time for me to peel away from the sofa and get some sunshine and exercise in my life. Who knows, I might get a tan while I’m at it (I probably won’t, but a girl can dream). LOCK AWAY THE HOODIES Hoodies are great, but my relationship with them has become somewhat unhealthy. Aside from them being - for the most part pyjamas with a hood, anyone who wears a hoodie when it’s over 25 degrees either has something to hide or something to steal. Considering I don’t think I’ll be doing either of those things this spring, it’s time for me to break it off. So there you have it, I’ve made myself publically accountable for my winter sins. If like me, you have an insatiable appetite for gravy, this list might have been of some use. If not, congratulations, you’re 90 per cent of the way to being ‘summer ready’. Of course, the question remains: will I be able to curb my winter habits before summer slaps me in the face with a bikini? Of course the answer is: probably not. But who cares? 9

Rising above DOMESTIC VIOLENCE At age 74, Southport author Livia York is making a stand when it comes to domestic violence. She has turned her horrific experiences into a book to inspire and uplift others. t the age of 15, Livia York was raped in her home country Italy. The next week, she moved to Australia with her mother, as planned, but soon found out she was pregnant. She went on to have a child with, and marry, her rapist who continued to abuse her for many years before she had the courage to finally stand tall. “The physical abuse was so bad, that one night, I found myself with a pair of scissors in my hand. I told him: ‘Don’t you dare come near me’. It was not long after that I finally left,” Livia says. The proud Gold Coaster has told her story in her self-published book ‘RISE: The Abused Child of the Phoenix – A True Story’ . The book shares captivating details of Livia’s rich family history as well as darker moments. “I've closed the story with the events of the day when I freed myself of domestic violence, August 1969 when I was 27 years old, with my son, 11, and my daughter, eight years old, by my side.” Livia hopes to inspire anyone trapped in similar circumstances to

learn from her experiences, to take courage and free themselves from domestic violence before it's too late. “From the age of 15, for 12 years, I was caught in an abusive and violent relationship,” Livia says. “If we all talk about domestic violence we will make a difference and we will educate the next generation to respect and love one another.” Livia’s story is resonating with people from all over the world. “I hear from people every day. They know that they’re not alone,” she says. Livia has recently taken up poetry and has received global accolades including her recent appointment as Director – Australia, Writers’ Capital International Foundation, an international organisation for writers. As an up-and-coming guest speaker, Livia has recently presented at high schools to budding writers to inform and inspire. “I have more to come, stay tuned,” she says. for business (and pleasure) With hundreds of Australia’s best bloggers – as well as newcomers in the field – converging on the Gold Coast this month to attend an annual blogger conference and training event, Get it’s Lauren Paris caught up with four bloggers to chat about their experiences and how brands or businesses can get on board the blogging train. f you didn’t already know, blogging is more than just a glorified online journal. It can be big business and provide multiple income streams including advertising and affiliate revenue, sponsored posts, business growth and opportunities, collaborations and more. For businesses and brands, it’s important that they run, and regularly update, their own blog page - within the company website with useful content, in line with their content marketing strategy. When collaborating with bloggers, the impact or return on investment experienced by businesses and brands can be extraordinary when a blogger reviews or mentions their products or services. Chantelle Ellem, known for her blog Fat Mum Slim, has been blogging full-time for the past four years, enjoying amazing opportunities including overseas travel. The mother of two, who calls the Northern NSW region home, was once voted ‘Most Clickable Woman in Australia’. She is attending her fourth ProBlogger Training Event this month, and will be presenting at the event for the third time. “I have managed to [blog full time] by growing my blog with a steady audience and following, but also diversifying my brand enough that has some key focuses for my core audience; food, photography, travel, parenting, and inspiration.“I’ve also launched the Little Moments App which has been really popular,” she says. Gold Coast local Carolyn Waller started her blog Dress Me GC in 2012 after continually being asked for advice on what to wear and, more importantly, where to buy it from. “It started as a group email and slowly formed into a blog: Dress Me GC - Shopping, Dressing Up and Going Out,” she says. Carolyn says she regularly receives emails, comments and responses from followers and subscribers and enjoys working with brands. “It’s great to be able to help out both the shoppers and the shops who sell the clothes. It’s a win win for everyone,” she says. “Brands that invest time, take photos themselves, and clearly outline their expectations, usually find the outcome successful for both parties.” Emily Hawker who blogs at emhawkerblog is travelling to the Gold Coast from interstate to attend her third consecutive #pbevent.

“I'm going as much for the social and networking benefits as I am for the learning. That said, the program looks amazing this year. I’m particularly looking forward to sessions on statistics, YouTube and video editing. Emily says blogging has been a huge confidence builder for her and has helped her secure more copywriting and proofreading work. Her top tips for anyone considering blogging? “1. Start. 2. Right. 3. Now. Seriously, I think the pressure to perfect something that doesn't yet exist is too much. Start writing, publish it, learn, grow, and have fun doing so.” Amy Ahearn who blogs at Handbagmafia is attending her first ProBlogger event. “I want to network and socialise with other bloggers that I interact with so regularly online. I also want to learn as much as I can about growing an audience and connecting with other people,” she says. Amy started blogging around three and a half years ago but says she took a long time to “really get into it and engage with the blogging community”. “I [started blogging] because I had always written and shared opinions. I wanted to have a voice and connect with like-minded people and share what I was thinking. “The benefits for me have been varied. I've met great people, made new friends, collaborated with other bloggers, been paid to write for bigger websites like Kidspot and Mumtastic and been able to help people through my writing in some ways.” For individuals or businesses looking to boost their blogging, Amy says it’s important to make it look good. “Consistent design, colour schemes, fonts and visual appeal are highly underrated. It's what people see the minute they click on your website. “ Good quality content, that is well edited, is also crucial, as well as Facebook blogging groups or forums for support. “Other bloggers are your biggest cheer squad. They are generally only too happy to help out with technical questions and basics when you're new to it,” Amy says.

And many juggle jobs, careers, study and motherhood with volunteering their time to serve across a gamut of emergency and disaster situations. Age, backgrounds and experience is diverse among them but they all share a common thread – gratuitous dedication to helping vulnerable members of our community. The Gold Coast is no exception, with women serving the frontline from all six groups – Pimpama, Runaway Bay, Southport, Carrara, Springbrook and Coolangatta. Shannon Kelly has been an active member of the SES Southport Group for three years, joining through her compassion for Daniel Morcombe’s family. “I wanted to know who these people dressed in orange were who were looking for Daniel,” she said. “I wanted to help but I knew nothing about the SES other than they wore orange. “I had no skills when I first turned up but I remember walking through the doors and someone said ‘welcome to the orange family’ and years later it is still ringing true – SES is a like a big family.” Shannon, a 42-year-old mum of three, is now armed with an abundance of skills that have allowed her to partake in land searches, storm damage repairs, rescues and community events including schoolies, ANZAC Day, GC600 and the Kokoda Challenge. “I’ve learnt so many skills since I joined, from first aid and CPR to casualty handling, knots and search techniques,” she said. “I think people still don’t know what we do and many are under the impression we get paid. “There are many women in the SES and we do as good a job as the men, after all, we are all trained the same. “I’m proud to wear the orange uniform. [For] any women who are thinking about joining just do it, take a chance.” Jacky Metcalf joined in December in her bid to contribute to the community. The 27-year-old, who studied criminology and forensics at university, has already racked up hundreds of volunteer hours through training and activations. “I wanted to do something that was active, different and gave me the opportunity to learn new skills and be challenged in some way,” she said. “I didn’t realise there were so many training courses available and I have learnt so much already from proper searching techniques and how to tie a variety of knots to the structural components of a house and how to tarp a roof. “I enjoy learning and developing new skills and using these skills in real life situations. I also enjoy helping the community - whether it be locating a missing person, tarping a roof or assisting at a community event.” At the other end of the spectrum is Tracy

Ciardi, a 10-year veteran from the Pimpama SES Group. Tracy is well versed in a variety of operations and her qualifications allow her to chainsaw trees, participate in flood boat searches and rescues, conduct medical evacuations and help with traffic control. She was part of the 2011 Ipswich Floods SES crew where she assisted in K9 searches, flood rescues, condemning homes and flood warning door knocks. “I love that we are helping people in times of need and in emergencies and we are trained to assist QPS (Queensland Police Service) and QAS (Queensland Ambulance Service),” she said. “I’ve gotten so much more out of volunteering in the SES than I ever thought possible and that’s why I’m still so committed after 10 years.” Tracy was drawn to the volunteer organisation through her inclination to help people and said the SES presented her with situations that are a far cry from her office job. “Volunteering in the SES is as important to me as my job but most of the time SES is done outside of work hours,” she said. “I’ve learnt countless skills and qualifications, gained more confidence and enjoy the team work and team leadership. “All the new experiences, the training, the friendships and learning new things makes SES such a well-rounded volunteer service.” State Emergency Service Gold Coast Groups hold induction information sessions on the first Tuesday of each month from 7pm. Spring clean Now is the perfect time to clean and cull according to experts Jane Dufty and Katrina Springer. pring is in the air and there is no better time to get your home in order, according to Jane Dufty a Gold Coast based professional organiser. Jane says it’s no secret that mess causes stress and admits she has been training to be an organiser her whole life. “Growing up, I never really considered the impact that living in an unorganised and cluttered environment had on your mental and physical wellbeing. I just knew that it made me feel overwhelmed and anxious. I spent countless hours over the years helping family and friends get organised. I just never realised it was an actual profession until around 2012 when I started Sort This.” Jane’s business Sort This provides a range of services that include helping people to downsize or organise any room in their home, designing and installing new storage solutions, whole room makeovers, staging a home for sale, and assisting with deceased estates. “Hiring a professional organiser is like having a best friend that you can invite over to your home when it’s at its absolute worst,” Jane says. “There are no judgements, just hard work and a commitment to get a job done well. to be humble, empathetic and patient and understand the complex relationships that people can have with their belongings.“ According to Jane, the best way to get the most out of any spring clean is to reduce your clutter. “It’s time to embrace the urge to purge and rid your life of excess, because who has the time to clean and care for items they no longer need or want?” she says. Jane’s top tips to help you say goodbye to clutter, for good: MAKE A PLAN I’m a firm believer in working smarter not harder. Think about each space in your home and decide how it can add value to your life. What needs to be done? When are you going to set aside the time to do it? What will you do with items that you intend to donate or sell? Do you have the time to mend broken items or complete that project you never got around to starting? Our spaces should be functional and help us live our best life. If they have become more of a burden than a blessing, it might be time to make a major change. GET SORTED The best way to start any decluttering project 16

is to group like items together. The phrase “out of sight, out of mind” has never been more relevant than when you are staring at a pile of shoes that you have not worn in five years. It’s easier to decide what to let go of when you can see what you have. BE RUTHLESS Deciding what to keep and what to let go of can be hard, but it doesn’t have to be. Ask yourself, do you need it? Do you use it? Do you love it? Be honest. How does the item make you feel? Why are you keeping it? Never hold onto things because of guilt or fear. Don’t feel bad for donating that vase that Aunty Betty gave you in 1998. If it does not fit the life you live right now, let it go. Holding onto things because you “feel you should” or “just in case” will weigh you down and slow your progress. FOLLOW THROUGH It’s one thing to decide you want to get rid of stuff; it’s another thing to get it out the door. Don’t leave bags or boxes sitting around. It’s funny how items can start to creep back into your life. Put unwanted items in the boot of your car and make it a priority to drop them at the nearest charity bin next time you’re out. Throw out any rubbish. Return borrowed items. Do whatever you need to do to get it out the door.


Katrina Springer, aka Kat, from popular website The Organised Housewife.com.au started her website in 2010 as a way to share her tips and tricks for keeping a tidy home. “I wanted to share my recipes, printables, tips and ideas of how I keep my home clean and organised,” the Gold Coast mum of three says. She has since amassed a huge, loyal following and tells Get it one of the ways people can transform from unorganised to organised is through routine and creating new habits. “If you want to become organised, think of the three things that you would like to implement. For example, a tidy bedroom or clean kitchen. Then start with simple tasks within these spaces that will help make a difference, such as always making your bed each morning, or doing the dishes and wiping the kitchen bench. Small steps like this are achievable. Then once you have implemented these steps into your routine make additional ones; don’t put dirty clothes on the floor, put in a hamper. Or put away the clean dishes while you are waiting for your toast to pop or kettle to boil.” “The best tip to stay organised is to have a home for everything and when you use that item, to always return it to its home. This will keep the area tidy, [and] will prevent you from losing anything.” Recent organising projects Kat has featured on her website include: creating a new laundry routine, a system to make it easier to sort clean clothes; a new system for organising paperwork - without needing a filing cabinet - to help keep bills and other paperwork ordered and tidy; and organising the fridge to help keep it tidy, prevent food from spoiling, ensure leftovers get eaten.

“This also makes it easy to write a shopping list as I can quickly glance and see what I need to top up,” Kat says. DON’T GIVE UP Decluttering sounds easy, but it can be harder than we think. If it’s taken you years to accumulate the stuff, it may take longer than a weekend to get rid of it. Often when you are holding on to things that you no longer need or use, you are holding onto a memory, a story or the way an item makes you feel. Dealing with these emotions can be exhausting. If you feel like you’re getting decision fatigue, be kind to yourself. Take a break. Do something that uplifts you and try again. Letting go can be powerful experience and never be afraid to ask for help. It may seem like a long process, but I can assure you it doesn’t get done any quicker if you give up. Flying high Get It publisher Leanne Hart recently experienced an indoor skydiving adventure with iFly in Surfers Paradise. ’ve had the amazing experience of jumping out of a perfectly good aeroplane a couple of times, so to say I was excited about giving iFly a go, is an understatement. Upon our arrival we were greeted by the friendly team members and I was directed into the training area to suit up and was briefed with some helpful hints before taking the plunge. Bend your knees, keep your head up and relax. Oh yeah, easy! Being frightened of heights is not a good thing when looking down into the chamber but I can guarantee you, as soon as you step into the zone, adrenalin takes over and your instructor is your only focus. Having skydived before gave me the advantage of understanding how to hold the body shape, but our charming instructor Oliver was close on hand to make sure there wasn’t too much bouncing off walls. The Get It girls turned up in support September 2016

and my whole experience was caught on film, though thankfully not the part where I looked up and dribbled – which was actually really funny because I couldn’t do a jolly thing about it. The look on the girls’ faces was the first indication that we had lift off. Oliver every so subtly scooped me up and we were at the top of the tunnel in no time, a couple of times. It was exhilarating and a little scary at the same time. The instructors are amazing with their level of skill and ability to not only make you 24

feel comfortable and safe, but also make you seriously jealous when they get into the tunnel to show off their iFly prowess and ability to float like they are attached to invisible pieces of string. I loved it! Goodbye gluten Eradicating gluten from your diet can offer many positive health benefits according to Gold Coast nutrition educator Jema Lee, who says the process doesn’t need to be overwhelming. hen a family member was diagnosed with coeliac disease 16 years ago, Jema Lee’s family experienced a complete lifestyle shift – especially when it came to meal times. “It was an eye-opener and a learning experience, that’s for sure,” Jema says. The 30-year-old Broadbeach local said it wasn’t long before the benefits of living gluten-free started to show. “[Friends have] all wanted to know what I was doing and, perhaps most importantly, how I was able to put aside fatigue, blemishes, excess weight and more”,she says. With a wealth of experience under her belt, Jema now helps others with their food habits through her business Wellsome. Spring cleaning for your health We all know the adage that ‘summer bodies are made in winter’ but that doesn't leave much time if you live on the Gold Coast. So that leaves you with one option according to Jeff Osborne, the manager of Vision Bundall; start now.

ow, summer is almost here already. Can you believe it? The best time to start was yesterday, the second best is today. Good design beats will power 10/10 times. One of the most important things you can do is make eating well and doing some exercise as easy as possible for yourself. If you rely on will power you will come unstuck sooner rather than later. In an interview with Jerry Seinfeld, Barack Obama said that he eats the same breakfast every day and that someone else picks out his suit for the day - every single day - so he can avoid decision fatigue. He makes so many important decisions in his day that he doesn't want to waste them on little things. That’s smart. And you should do the same. Good design starts with knowing your weaknesses. Know when you are vulnerable. For me it is after dinner. If I finish dinner and I have had a particularly testing day, a beer or chocolate is what my body craves. Peanut M&M’s to be exact. Unless I have something available to fill that craving I will lose it and eat whatever I can. For me the solution is something like 150g of Rockmelon or a tub of Whey Whip Protein Ice-cream (Peanut Butter is my favourite at the moment). For exercise, make it as easy as possible for yourself. I own a Personal Training studio, walk past equipment to get to my office every day and yet I still can go days without exercise… easily. To avoid this, I book sessions with my trainers so I have someone holding me accountable, I play an organised sport where I can't let my team down, I have a running buddy that I go with every Wednesday - and I can’t let her down - and I enter things that make me set a plan and stick to it, like the Queenstown Marathon later this year. If you have these things, always have a packed exercise bag on you and plan it out you will be 100 per cent more likely to stick with it. September 2016

If it is body shape change you are looking for, exercise is important but the battle is won and lost with food. So here are a few tips to make eating well easier: l Look at your coming week and work out which days are the toughest. Plan for the week with special attention to those days. Set a food plan, do the shopping online and have the food delivered (it’s worth the time), do the food prep and cook a few easy meals for the week. My favourite is savoury mince with veggies – you just need good mince, tomato paste, tinned tomatoes and your favourite veggies. It works well warm and cold. l Make some easy to eat and store snacks. Try getting some chicken mince rissoles, make them into balls and cook them in the oven. Or get a jar and half fill with oats, add some milk and top with yoghurt, nuts and some berries and leave in the fridge overnight. In another jar you can make salad, along with some good dressing, and you have that ready to go in the morning. l If you have a sweet tooth, get some good options together. Rockmelon is good, so is really dark chocolate. If you are really pressed for time, I’m okay with using protein bars, shakes or my favourite Whey Whip Ice-cream. You only get a few grams of carbs (if you pick well), a good dose of protein, and a little fat. I know it’s not ideal but in the face of a busy day, it is better than eating nothing or eating some other options. So remember, make it easy on yourself by designing things in a way that winning comes naturally. Then when you rack up wins, you feel better and you are more likely to stick with it long term. Lose some of those winter kilos, get the blood flowing and get some good air into your lungs. Walking with intent and some planning is essential for pretty well every aspect of human health. Don’t plonk yourself on a treadmill in a gym expecting the same results either. You are effectively removing yourself from all the electronic devices and hustle and bustle common to most work places. The potential for negative affects on human health from electro magnetic radiation and frequencies, especially with wireless devices is well documented. Drink plenty of fresh water and avoid sugars and refined carbs as you are just as likely to convert those to lactic acid. Keep your diet low in acid forming foods and keep your proteins up, especially phyto proteins such as nuts, seeds, and legumes. Have fresh vegetable juices before or just after your walk. And don’t forget to chew your juice! It’s essential for the full benefit. Spring is a great time for a general health check too. entral auditory processing refers to the efficiency and effectiveness with which our brains and auditory areas decode and use information we hear. This process is essentially how well the ear talks to the brain and how well the brain understands what the ear tells it. When our brain and auditory system is working normally we are able to pick out the important parts of the sounds we hear, filter out any noise, and then fill in the gaps to make sense of what we have just heard. This complex process consists of a wide range of skills that help us to make sense of the sounds we hear. These include skills like locating the buzz of our alarm clock in the morning, focusing on a conversation in a busy cafeteria, and clearly understanding a teacher in a noisy classroom. However, when something goes wrong in our brain and auditory system, the ability for us to make sense of the sounds can become impaired, even though we can still ‘hear’ the sounds. A disorder of the brain’s auditory system most commonly results in difficulty understanding speech in the presence of noise, and could be the result of a Central Auditory Processing Disorder (CAPD). Identifying the causes of CAPD are often quite difficult. The individuality of brain auditory system organisation and the conditions that affect such organisation means that CAPD can affect individuals differently. Children who have chronic ear infections in their early years are at a greater risk of developing a CAPD. These can then carry on into adulthood where it is much less likely that an individual will be able to learn these skills. Common signs of a potential Central Auditory Processing Disorder in children can include; difficulties following instructions, poor

listening ability in noisy places, difficulty with learning at school, and being distracted or easily fatigued at school. Individuals with CAPD have a higher likelihood of behavioural, emotional, and social difficulties. Communication deficits and associated learning difficulties may adversely impact the development of self-esteem and feelings of self-worth. While these signs may be noticed early on, it isn’t until seven years of age that we can accurately diagnose a potential CAPD. The first step in testing for an auditory processing disorder is to conduct a hearing test. This is to establish whether the presence of a hearing loss may be a contributing factor. After ascertaining hearing thresholds we then test more complex auditory processing skills. For children, we offer a screening test of your child’s spatial hearing abilities that mimic a classroom situation. Following the

results of this test we can then proceed for further investigation of your child’s auditory processing abilities and identify any potential presence of CAPD. While there is no single ‘cure’ for CAPD, a number of remediation strategies for children can be discussed with your audiologist, which may include; listening strategies for the classroom, active communication techniques for daily life, listening exercises or computer software programs to improve auditory processing skills, and assistive listening devices such as FM microphones. Early identification and remediation of CAPD may potentially lessen the likelihood that these secondary problems may emerge. Happy, healthy recipes RAW TIRAMISU CAKE INGREDIENTS BASE • 1 cup roasted almonds • 1 cup shredded coconut • 1/4 cup coconut oil • 2 tbsp raw cacao powder • 1 tbsp rice malt syrup or honey • 1/2 tbsp ground coffee beans • 1 tsp 100% vanilla extract • Pinch of salt VANILLA LAYER • 1 cup cashews (soaked for at least 2 hours, rinsed and drained) • 1/2 cup coconut milk (canned) • 1/3 cup coconut flour • 1/4 cup coconut oil • 1 tbsp rice malt syrup or honey • 1 tsp 100% vanilla extract CHOCOLATE LAYER • 1 cup cashews (soaked for at least 2 hours, rinsed and drained) • 1 cup coconut milk (canned) • 1/4 cup coconut oil • 1/4 cup raw cacao powder • 1/2 tbsp ground coffee beans • 1 tsp 100% vanilla extract

METHOD: Line the base of a 20 cm spring form cake tin with baking paper and grease the edges with a little coconut oil. Start with the base. In a food processor/blender, place all the ingredients except the rice malt syrup and whiz until combines (about 2-3 minutes). Add the rice malt syrup, blend on low speed until a smooth butter forms. Transfer into the prepared cake tin and spread the base, making sure it's even, covering the entire base. Place in to the freezer. Rinse the blender and get onto the vanilla layer. Drain and rinse the cashews and place them into the blender along with the coconut milk, coconut oil, coconut flour and vanilla. Whiz until thick and smooth. Add the rice malt syrup into the blender and blend on low speed until combined. Spread the mix on top of the base layer, smooth out the top and place back into the freezer. Now onto the chocolate/coffee layer. Drain and rinse the cashews and place them into the blender along with the coconut milk, coconut oil, cacao, coffee and vanilla. Whiz until smooth. Add the rice malt syrup into the blender and blend on low speed until combined. Pour chocolate layer on top of vanilla layer and place back into the freezer for 2 hours or until set. Cut in to slices with a hot knife and enjoy. September 2016

HEALTHY BUTTER CHICKEN INGREDIENTS • 1 kg chicken thighs cubed • 1/3 cup ghee • 1/3 cup coconut milk • 3 tomatoes chopped • 1 onion chopped • 2 cloves garlic crushed • 1 lemon juiced • 2 tsp fresh ginger grated • 2 tsp turmeric • 2 tsp paprika • 2 tsp garam masala • 1 tsp chilli powder • 1 tsp coriander seed • 1 tsp cinnamon • Fresh coriander leaves METHOD: In a large saucepan on medium heat melt the ghee. Add the chicken thighs and cook until they just turn white. Set the chicken aside. In the same saucepan add the onion, garlic, lemon juice, ginger and all the spices. Cook for around 5 minutes until all the spices start to smell amazing. Add the chicken back to the saucepan along with the coconut milk and tomatoes. Turn the heat down to low and allow to simmer for 20-30 minutes. Serve with fresh coriander leaves.

BREAKFAST CASSEROLE INGREDIENTS • 300g free range mince • 10 button mushrooms sliced • 1 carrot grated • 1/2 brown onion finely chopped • 4 eggs • Macadamia oil for the pan • Salt and pepper METHOD In a medium heat fry pan add the oil and saute the onion until soft. Add the mince and cook until just brown. Add the carrot and mushrooms and continue to cook for a further 5 minutes. Turn the heat down to low and crack 4 eggs in to the mince and allow to cook for around 5 minutes or to your liking. Serve hot with avocado, salt and pepper!

Elizabeth Campbell discusses how to spring clean your life, survive and thrive. h, spring. Apart from the hay fever, how great is it when the season turns and the days get longer, the flowers come out to play, people stop hibernating and start living, the social calendar starts to fill up and we get to wear our pretty sun dresses? We spring to life. I love it (apart from the sneezing)! There’s just something beautiful about spring. We often feel motivated after a barelythere-but-long-enough winter, so it’s also a great time to de-clutter and spring clean as they say. Last year, I may have gone a little overboard with my “spring cleaning”. I basically got rid of everything I thought I didn’t need – then realised I needed quite a fair bit of it. Don’t you hate it when you go to look for something and can’t find it?! Did I really throw out that amazing dress… and those shoes… and that top… and where is the blender… has anyone seen my kitchen sink? I also deleted a relationship or two that weren’t going anywhere and sacked a couple of difficult clients. Maybe I went a little overboard. But I did feel great afterwards! This year, I’m going to tone it down a little. Some may even say it’s a bit boring. However, this spring clean is going to make way for a super Liz party season, so look out. AUDIT YOUR FINANCES I’m getting good at money this year and so part of my spring clean is to look at all of my spending and subscriptions to see what I need and what I don’t. Are there any areas where you can save some of your hard earned? DE-CLUTTER… EVERYTHING Go through everything and give away or sell what you don’t need. Last year I moved eight times. I know, it was a crazy time, but it means I don’t have a lot of unnecessary “stuff”. Still, I’ll go through every cupboard and that draw (you know the one) and declutter again. Maybe I can make a bunch of cash by selling some “stuff”. That will make my Dad really proud.

LIGHTEN YOUR LOAD Have you looked at your schedule lately? From Monday night yoga, Tuesday night kids’ activities, Wednesday date night, Thursday networking night, Friday night drinks with work colleagues, Saturday morning sport, Saturday lunch with family, Saturday night dinner with the neighbours and Sunday cleaning and getting ready for another week – phew, what a schedule. Maybe it’s time to clear it and make some changes to give yourself a bit more self-love time? SAY BA-BYE TO TOXIC RELATIONSHIPS This might be easier said than done, but you will feel so much better for it, let me assure you. Take a look at the people you surround yourself with;do they enhance your life or bring you down? Are your relationships really right for you? Remember, we are who we hang out with. CLEAR CAREER CHOICES While we are at it, what’s happening with your career - or lack thereof? A change is as good as a holiday. This is an area I look at regularly because we spend such a huge chunk of time at work or in our businesses and therefore we need to be excited and happy with our choices. If you’re not, put 43

a plan in place to make a change. Start looking for a new job, get a new client or take your business down a different path. I’VE GOT SKILLS THEY’RE MULTIPLYING I don’t think we spend enough time on personal development. What do you really want to do? We are getting deep now, but it may just be a case of dusting off some old loves or talents and getting back into them. Dancing, painting, running, or camping;whatever it is, start to schedule in some of the things you really (really, really) love. You’ll be surprised at the new lease on life it will give you. TIME TO GET HEALTHY AGAIN No more hearty home-style comfort foods! It’s indisputable that this will be the biggest area people start to spring clean because it’s time to get beach ready. There is always a huge emphasis on eating better, losing weight and getting active again. I’m getting back into routine after a massively busy year. I like to exercise twice a day – morning and night – and I love spring and summer for eating light meals. I’ll also be meditating to keep my mind in check. And taking an antihistamine to combat that dreaded spring downfall… hay fever. September 2016
