Merry Christmas ... happy New Year ... it’s all come about so quickly. On reflection, it usually does. Once past the age of 23 life seems to speed up. I can’t complain about this year though, it’s actually turned out to be pretty great. I’m particularly proud of where we’ve come to with Get it. A huge congratulations must go to our publisher (and awesome boss), Leanne, for taking the publication from strength to strength (even during challenging times). I know she’s going to throttle me when she reads this (I’ll have to get the note passed through production before she eyes it). Regardless, she deserves a little Christmastime praise. We’re also grateful to all of you - your interaction and engagement with our team is truly appreciated. When you leave comments on the website, Facebook and on Twitter, we do take notice (and reply where possible). In fact, we’re compiling all your feedback in an effort to continue improving Get it throughout 2013, and so we feature the stories and information you want to read. Enough on work though, it’s almost holiday time. What’s the plan for your days off this year? Dining, travel, music, laughter, presents, time spent with loved ones ... hopefully all of the above?! Whatever’s on the agenda, we’d like to encourage a back-to-basics approach to the holiday season: remember to take time for yourself, be mindful and kind to others; seek inspiration and motivation for the year to come. We’ve included features in December’s Get it that will hopefully assist on your path to achieving such goals. 4-6 January 2013, Surfers Paradise Gold Coast will be hosting an exciting new swimwear fashion festival in the New Year that will culminate with the Bikini Parade 2013 World Record Attempt on January 6, which will see the Coast attempt to win back its Guinness World Record for the world’s largest bikini parade from China. The festival will showcase swimwear from leading Australian designers, emerging designers and student designers on a beach stage on the stunning Surfers Paradise Beach. The aim of the new festival is to establish the Gold Coast as the swimwear capital of Australia and Southeast Asia. Cheyenne Tozzi and Josh mullane from Van Hoorn chat to missy Robinson about their exciting foray into the world of music Who is Van Hoorn? Van Hoorn is international model, Cheyenne Tozzi (Vogue, Harpers Bazaar and more), and guitarist, Josh Mullane (Australian actor/musician). Their first recordings were garnished out of a barn in the south of Sydney and have accumulated a huge response. They’ve opened for shows such as Vogue, David Jones, Mens Style and The Iconic, also playing alongside some of the best musicians in the world (The Kooks, Guy Sebastian, Van She...). Where did the name come from? Cheyenne’s mother’s maiden name (Dutch). How would you describe your sound? If Jack White and Lauryn Hill had a baby, Van Hoorn would be born. Cheyenne, is music your number one focus now, or are you going to be a slashie? Modelling is always going to be a big part of my life, but music at the moment has really taken off. I guess I’m going to have to sit in that slashie category for the moment! Has this always been the plan or was singing something you fell into? I’ve sung my whole life but never really took it seriously until late last year. It’s been a great journey. Has it been hard to step into a musician’s realm from the fashion industry, or have you found your reputation and contacts have helped? The fashion industry and music work hand in hand but I think there is a very fine line between falling into the category of ‘not another model turned singer’, and a model that has worked really hard to create such a unique sound as a musician. My band and I work long hours in the studio - just as hard as any other artists, so my reputation and contacts are delighted to help in any way. When is the first album due and what can we expect? We have just finished our first EP which is ready to rock ‘n roll. Think rustic vocals and solos. Not overly produced. It’s organic and raw. What is your touring schedule like for the next six months? We will be touring Afghanistan very soon, which we are super excited about. I think it’s great to show a little Christmas spirit for the people away from loved ones. Any gigs coming up on the Coast? Can kindness really make the world go round? in the spirit of Christmas, Sarah Blinco decided to find out how well received kindness is right here on the gold Coast
hristmas, it’s a time for giving, but in a world that’s become so ‘sad news heavy’, not to mention competitive, is there really kindness left out there; and is there indeed room for kindness anymore? Sadly, it seems kindness is more often than not dismissed as ‘weakness’. When the emphasis is on how badly we need to win jobs, houses, boyfriends, girlfriends, places in The X Factor - or how our big city streets are now seemingly saturated with crime, how can we consider that kindness is a positive personal attribute? While I agree senseless crime is rampant, and many in the world are scrambling over themselves and others for a slice of the so-called ‘better life’, I hate to think we’re really that selfish we forget a small act of kindness can go a long way to making the difference in the life of another person. On the flipside, are we so used to a lack of kindness in the world that we perceive a nice person as crazy, or sweet gesture as a threat? Following a good natured debate about this with friends, I decided to put ‘kindness’ to the test here on the Gold Coast. A number of my fab affiliates offered to assist with the experiment, in order to see what feedback we’d gain following a totally random act of kindness towards a stranger. Julia Wilson of Cubic Collective boutique in Surfers Paradise, and Lorraine Dawson in Coombabah both randomly offered to assist strangers who were struggling with bags of groceries. Julia says, “there was a lady in her December 2012

late thirties waiting at the traffic lights with her hands overflowing with grocery bags. At intervals she would place them on the ground to give her hands a rest - they were obviously too heavy to keep holding up while waiting for the green man. I looked, hesitated thinking she may think I am some crazy thief, and then said, ‘would you like some help with your groceries?’ She was a little startled at the offer and politely declined. She did say very sincerely and in a semi surprised tone, ‘thank you though. That is really... really... nice’. It is almost never that someone offers to help

I insist you don’t buy me a coffee.” She adds, “It was getting busy and I didn’t want to hold up the line and turn a kind offer into an argument with a stranger, so I let it go. I honestly meant well but the lady (aged 40-something) behind me wouldn’t have a bar of it.” Mum of two, Kellie Leigh (Pacific Pines) wasn’t too sure when or where her opportunity to perform a ‘random act of

Lorraine’s experience on the other hand, ended with her giving a stranger a lift home with her groceries; she says,“the lady was most surprised by my offer, which she very much appreciated”. Nicole Anderson (Arundel), decided to try a suggestion we’d all talked about - shouting the person in line behind her at Zarraffas a coffee. When she turned around to make the kind offer however, she was met by a
kindness’ would arise, but on a trip to a shopping centre it wasn’t very long before she had a chance to shine. “After our quick visit to Coles, we stopped at the sushi bar to grab a quick bite to eat. After collecting our rolls we walked around the back of the bar to the seats to eat. There we were greeted by a lady who was looking a bit weary, with her two kids - a boy and a girl - just a bit older than my two. There was quite a bit of mess on the table, and the kids were wrestling, both with drink bottles in their hands. She was doing her best to calm the situation, being in a public area, and all the eyes that are quick

Christmas kindness: 7 suggestions Obviously we’d advocate a nice attitude at all times, but in the spirit of the season, here are seven ways you might consider being kinder this Christmas. 1 The gift of charity.Did you know 70 per cent of us have bought a charitable gift in someone else’s name? Not only is this a terrific idea for those hard-tobuy-for family and friends, but it does the world some good by being a gift that keeps on giving. 2. Smile or say hello to strangers passing you by on your morning/evening walk or run.
to judge. I gave her the sympathetic, knowing smile, and she replied, ‘I shouldn’t have left the house today’, with a cringe on her face. As she said that, the water bottle propelled out of her son’s hand and landed all over the seat, floor, kids and us. This was a woman in need of a random act of kindness. I jumped at the chance to run and grab tissues, and help her mop up the mess. We both calmed the situation together and she thanked me quickly and walked away. A few minutes later she walked back, with a big grateful smile on her face and said,‘thank you so much for your help again!’ I genuinely think this act made a big difference to how her day was turning out. As a mother of two myself, sometimes when things just don’t seem to be going the way you planned for the day, and the kids are running rings, it takes that intervention from a third party or even a random stranger, to put you back on track”. Interestingly, it seems we’re all shocked and surprised when someone is indeed kind to us for no reason. How did we come to perceive ‘kindness’ as a foreign concept - have we forgotten what it is and why we need it in the world? Nadine Hamilton, psychologist from Positive Psych Solutions (positivepsychsolutions.com.au) in Oxenford explains a little further: “Kindness can be considered as the act of being considerate, respectful, caring, and showing charitable behaviour towards ourselves or other people. Kindness is also considered to be a virtue,
which essentially means it is a positive quality, and morally good. When we are kind to someone (and feel good about it), our body releases endorphins (or ‘happy chemicals’), which help us to feel good. If we have values around kindness, respect, and so-on and we are able to fully live in line with our values, this can then result in a sense of well-being (as our values are being met). If these values are conflicted, then we may experience some level of suffering (as our values are not being met)”. “There is continual research emerging in relation to the health benefits associated with kindness (or ‘positive emotion’), such as the field of Positive Psychology and research conducted by the Harvard School of Public Health. Positive Psychology encourages the use of random acts of kindness and gratitude, to assist us in achieving a sense of well-being. For most of us, we feel good when we are able to make someone else feel good - and likewise, it feels great to be on the receiving end of kindness,” Nadine concludes. In fact, it seems being kind extends to improving productivity in the workplace too, with the Australian Institute of Management magazine recently publishing: “Being nice is better for your bottom line. A major new research study by the Australian School of Business has shown a powerful link between productivity and compassionate leadership” [Management Today, October 2012]. It seems the majority of Gold Coasters are 17

Check details in the centre for ways you can help. 4. Organise a collection of clothes, books or toys for a charitable organisation. 5. Help wrap Christmas presents for shopping centres or organisations arranging gifts for the less fortunate kids in our community. 6. Offer dog walking services at the RSPCA or local animal shelter - this is a difficult time of year for these organisations as fewer volunteers are available, while a greater number of thoughtless and irresponsible purchases of puppies and kittens are made. 7. Make sure your family members, neighbours and friends all have someone to share Christmas with! indeed doing their bit for the sake of being kind, but in the spirit of the season, perhaps this piece might serve as a gentle reminder. It costs nothing to smile, to be polite, patient or offer a helping hand. We challenge all of you to do one selfless thing this week - perhaps you’ll even keep your kind act a secret? Pay it forward this month, and bring the true spirit of Christmas back to our sunny shores. December 2012

anctuary Cove’s festive season has kicked off with the raising of a Norfolk Pine Christmas tree at the entrance to The Marine Village, marking the start of a range of exciting school holiday events. Mulpha Sanctuary Cove general manager for marketing and events, Sue Thomson, says The Marine Village will be bustling with activity over the school holiday period.“We’ve really beefed up our events calendar over the holidays with a focus on free family events. All the events are about the community coming together to enjoy the lifestyle we’re so lucky to have at Sanctuary Cove”. Festivities will kick off on Sunday December 2 when The Marine Village comes alive to the sound of classic Christmas tunes, with Carols at the Cove providing a free evening of song and celebration for the whole family. talent and guest artists, and will conclude with a dazzling fireworks display. Just two days later Sea World Cruises will commence its 2012/2013 season of Broadwater cruises - an opportunity to live the Gold Coast high life for a day while cruising past some of the city’s most lavish homes. The cruises, which run until mid-May 2013, will dock at Sanctuary Cove with a special offer for visitors to cap off their journey lunching at Leo’s Latino Bar and Grill before exploring The Marine Village’s range of specialist boutique retailers. Continuing the family entertainment line-up, Mr Magorium’s Wonder Emporium will show at The Village Green from 7pm on Friday December 14, the first of four free outdoor movie events to be held at Sanctuary Cove each over December and January. The Muppets, Red Dog and Dark Shadows will also show on 28 December, 11 January and 25 January respectively. Movies are shown on the
second and fourth Friday of each month rain, hail or shine, with wet weather screenings moved into the Village Theatre. For those catching up on last minute Christmas shopping, free festive entertainment and activities will run outside the Village Theatre from Wednesday December 19 to Monday December 24. hether you love the festive season or not, it can be a stressful time of year. Juggling work, school holidays, family visiting, food preparation, the Christmas shopping, money, money, money, the list goes on and the inevitable outcome is we can end up more stressed than ever. It doesn’t have to be that way! What if stress was just like holding a glass of water? If you had a glass of water and you held it out to your side for five to ten minutes, we could all do that ok. What if we held it for 60-minutes, three hours, eight hours? We’d be in so much pain we’d be ready to snap. The same can be said for holding onto stress. Stress only becomes a problem when we hold onto it. The following is a simple technique that will help you to release stress periodically throughout the day, so you can stay in control this festive season. 2 MINUTES TO TENSION FREEDOM Sitting at your desk, in your car in traffic, on the couch or laying in bed – any of these is fine!
Gently close your eyes. Allow yourself to sink into the surface that your body is touching. Let go some more. Bring attention to your breath. Breathe all the way in, deep down to the bottom of your lungs, down into your diaphragm; on the outwards breath, become aware of any tension or tightness you have in your body and ask it to release, relax (feel it, see it releasing). Once again breathing in, filling all of your lungs; on the outwards breath, become aware of any remaining tension or tightness and ask it to release, relax. This time become aware of any tightness that you might feel around your eyes and consciously visualise, see it, feel it relax.Take that relaxation down into your cheeks, your face, head and scalp, down your neck and into your shoulders, feeling and seeing the relaxation flow down into your arms and through to your hands. Then back up your arms, down your chest, back of your shoulder blades, lower back, stomach, bottom, thighs, calves and down into
your feet, feeling and seeing the relaxation sweep through your body as finally you let go of the feet, and toes, feeling any remaining tension, tightness or anxiety seep into the earth. One last time, bringing attention back to your breath, breathing in, filling all of your lungs... let go even more deeply, enjoying a renewed sense of ease, an allowance of what is, and a knowing that whatever is happening now, everything will be - and you are more than capable of responding to it. Open your eyes. Repeat often. Practice a few times a day over the duration of a week. You will soon find it quicker and easier to release stress, to the point where you can simply bring attention to the muscles around the eyes and sweep the relaxation down your body in seconds. I will complete my apprenticeship in early 2013, it has been three years in total. What element of the job do you love the most? Hairdressing is more than I thought it could ever be. The opportunities to do exciting things like work on photo shoots and enter competitions is amazing. Mostly I like coming to work and being part of a great team of people and making my clients happy. What are the most valuable lessons you’ve learned ‘on the job’ at Paul & Paul

Tiffany Breed meets adam Wildman, an enthusiastic 18-year-old gold Coaster who is leading the charge promoting an exciting up-and-coming water-sport - flowriding Have you always lived on the Gold Coast? I was born in Blackpool, England and moved to the Gold Coast when I was three. I now live in Arundel. How did you get into flowriding? I first got into flowboarding on a cruise (Royal Caribbean’s Freedom of the Seas) in the Caribbean with my family, then I discovered it on the Gold Coast shortly after and began riding and honing my skills. For those who don’t know what it is, explain a bit more about flowriding? Flowriding or flowboarding is a sport in which a rider has either a bodyboard or a stand-up board, which they use on the wave... It’s essentially a cross between surfing, bodyboarding, snowboarding and wakeboarding... The wave is a thin sheet of water pushed across a trampoline type base at anywhere between 30-60 kilometers an hour. There are over 120 flowriders worldwide in over 20 different countries, with world championships held every year. What is it that you love so much about the sport? You can express yourself in so many different ways! It’s such an amazing feeling gliding through the water and landing all the tricks you’ve been working on for a while. Plus you meet great people and always have a laugh when you get smashed trying a new trick. December 2012

What have been your greatest achievements in the sport so far? My first ever competition which I placed 4th in, the Junior Australian Championships (2010), the year after I also placed 2nd in the Junior Australian Championships (2011). Also getting sponsored is such a great achievement in my eyes - by a local footwear company, Willi Footwear, and a US board company, WCB World Class Bodyboards. Who are the best flowriders in the world, and who do you look up to as your hero? My heroes in the sport and current world champions are Sean Silveira and Nick Nguyen, and also my good friend here on the Gold Coast, Nick Edmunds, who is Australian and Asian Champion 2011. What would you like to see happen for your sport in the future? I’d like to see the sport grow into something like you see with skateboarding or surfing. With big name sponsors, thousands of people at competitions, actually being able to make a career out of it, and hopefully one day make the Olympics or X Games. What are you doing in regards to helping promote flowriding? Here in Australia flowboarding doesn’t have a lot of support but we are gradually getting it out there. I have set up Facebook pages (AdamWildmanFlowboarder, or A Flo Team),
Instagram (@Ausflow and @adamwildman) and YouTube profiles (GoldieCoast), all about Australian flowboarding and also sent out a bunch of emails to clothing brands, magazines, local news and basically anyone that could help us get some publicity and support for our sport. What are your future flowriding aims? For the next three to four years I’d like to build the sport into something big in Australia. I’m also travelling to Europe next year to enter the European Championships which, if I win, would secure me a spot on the European team and a ticket to World Championships. My main goal in the next few years is to always keep improving, helping out beginners and introducing people to the sport; meeting new people in the flow world, publicising the sport and myself and, hopefully one day making some sort of career out of it. Where can we catch flowriding action in south east Queensland? Locally, flowriders are at Dreamworld and Wet’n’Wild and generally operate all year round. Why do you think flowriding is an awesome sport for Queenslanders to get involved in? Anyone can do it! You don’t have to be really surfy or anything; you can express yourself in so many ways and it’s just extremely addictive. If someone is interested in getting into the sport, what advice would you give them? Keep at it. Sometimes it takes a while to land that trick you’ve been trying for ages but the more you ride the better you get. Also never be scared to ask one of the pro’s for some help. They are always up to help and tutor people on how to ride.

itting with the agent and booking the tickets for our once-in-a-lifetime, fourcountries-in-three-weeks adventure was one thing. Booking accommodation added to the enthusiasm and the reality we were going. By the time we were deciding on must-see landmarks and attractions, the excitement was palpable. It was only in the last week before leaving that the realisation hit — three kids under eight and backpacking through Europe for three weeks—what on earth were we thinking!? With so much to see, do, and absorb in Rome and only four days to experience it all, the glorious city quickly became a blur of highlight after amazing highlight. A guided tour of the Colosseum and the obligatory photos with the ‘Gladiators’ are definitely a must-do. After sampling our way through Rome, consuming more pizza, pasta, and gelato than I thought was humanly possible, we headed north to Verona (home of Romeo and Juliet) then across to Venice for a gondola ride and a day-trip out to the surrounding islands. Sondrio, in northern Italy, was our next stop then a little further north to my family village of Caparé (Capararo) which is nestled perfectly against the Italian Alps. The Alps themselves are simply breathtaking — as imposing as they are stunning, with entire townships carved rustically into the mountainsides. We visited Colico, a northerly point of Lake Como, which offers an eclectic vibe appealed to both backpackers and wealthy alike. For us, this meant a massive wood-fired pizza lunch (of course!) for just 5. A quick border-hop into Switzerland provided an opportunity to take in the December 2012

spectacular Lake Lugano area and a spot of shopping at nearby Foxtown Mall. Knowing that the Italian leg of the trip was coming to an end was a little sad but the next stop was Paris — that seemed to help us all find some solace, especially the kids who were stoked to be spending three days at Paris Disneyland. Pre-purchased Disneyland tickets saw us avoid the hour-long queue for entry, but unfortunately did not help with the hourplus queues for rides inside the park. My only advice, wear sensible shoes and don’t believe the ‘happiest place on Earth’ hype — waiting in line for over an hour to sit on the Teacup ride for two minutes sparked many a tantrum (parents and kids). Our last five days spent in Paris were truly remarkable. Thoughtfully planned and impeccably clean, Paris is deserving of the title, ‘the City of Love, if only because it is so darn easy to fall in love with the city itself. We took in most of the key sights via a hop-on hop-off bus tour, on foot, river cruise, and by horse and carriage ride (all pre-booked). Paris offered many highlights, my fondest being a picnic lunch with a collection of the best cheeses, breads, macaroons, chocolates, and a bottle of French Champagne in Champ de Mars breathing in the Parisian lifestyle and the gorgeous Eiffel Tower. While the kids didn’t always understand the historical significance of the landmarks and attractions they saw, the perspective gained through experiencing diverse cultural influences (languages, foods, music, currency, lifestyles) has been invaluable. My number one tip to parents travelling abroad: book as much as possible prior to

The restaurant is open Thursday, Friday and Saturday nights (and last Sunday of each month for lunch) to off-site diners as well as

The main of tender, moist spring lamb fillets with seasoned vegetables left me feeling incredibly satisfied as I dined next to a large open fire listening to the classic musical voices crooning over the speaker system. To be able to dine like a Queen and within minutes be soaking in a spa bath overlooking some of Australia’s most beautiful flora is a magical experience and something I recommend for everyone, be it as a couple or a single.

PreParation tiMe: 2 Hours + Marinating 5 Hours or overnigHt CooKing tiMe: 90 Minutes serves 8-10
ingredients Homemade Peanut Sauce • 1-2 Tbs tamarind paste from a jar • 2/3 cup brown sugar • 1 tsp salt + more to balance at very end • 1L water • 2 Tbs lime juice + more to balance at very end • 500g salted, roasted, crushed peanuts Rempah (wet spice paste) • 20 dried, long red chillies*, deseeded*, soaked in boiling water until soft, drained and chopped • 2 cm (thickest part) galangal, peeled, thinly sliced, chopped • 2 stalks lemongrass, thinly sliced (use pale part only and remove any dry outer layers) • 8 cloves garlic, peeled, sliced • 15 small red eschallots or 3 medium Spanish onions, peeled and sliced • 200 ml vegetable oil Chicken or Beef Satays • Skewers soaked for an hour • 2 kg chicken thigh fillets, cleaned of sinew and fat OR 2 kg chuck steak Marinade • 2 cm (thickest part) galangal, peeled, thinly sliced, chopped • 8 stalks lemongrass, thinly sliced • 2 Tbs ground turmeric • 4 clove garlic, peeled, sliced • 10 small red eschallots or 2 medium Spanish onions, peeled and sliced • 1/2 cup brown sugar • 3 tsp salt • 1/2 tsp dark soy • 1/2 cup vegetable oil • 2 Tbs ground coriander • 2 Tbs ground cumin December 2012

Accompaniments (also to be dipped into the peanut sauce) • 2 cups jasmine rice, washed and drained • 4 cups water • 1 tsp salt • 1 fresh pineapple, skin and core removed, cut into 1cm thick triangles • 2 Spanish onions, peeled, diced into large 2 cm cubes and layers separated • 2 continental cucumbers, quartered lengthways and then sliced into 2 cm pieces MetHod Blend rempah ingredients until you achieve a fine paste. Set aside. Pour rempah into a heavy bottom saucepan or wok and bring to a medium heat. Stir continuously to make sure the bottom isn’t catching and cook until there is very little steam rising from the sauce. At this stage, the oil will have split from the spice paste, caramelising into a lovely dark red and developing a beautiful fragrance. Add water and bring to boil. Add tamarind, lime, sugar and only 1 tsp of salt and half the crushed peanuts. Bring to boil again, remove from heat and set aside until required. Add the remaining nuts and give sauce a stir just before for a nice bit of crunch. At the very end, TASTE. If you feel something is lacking, the sauce just needs some balancing with more seasoning or a squeeze of lime juice. Set aside. Cut the meat against the grain, no more than 2 cm wide at its widest, 1 cm thick and 3-4 cm long, irregular in shape but similar in size. Cover with cling wrap and refrigerate in a large mixing bowl. To start the marinade, blend all marinade ingredients to a fine paste. Tip all the meat and marinade into a snaplock bag. Massage meat through bag. Refrigerate for at least 5 hours or overnight. Grill for 15mins, turning sparingly. Serve with rice. 46

Pandan Crepes Stuffed with Coconut
PreParation tiMe: 15 Minutes CooKing tiMe: 30 Minutes serves 4
ingredients Pandan Crepes • 1/3 cup plain flour • 2 free range eggs • 1/4 cup full cream milk + extra to thin down if needed • generous pinch of salt • 1/2 cup coconut milk, fresh or tinned • 1/4 tsp pandan aroma pasta*/pandan paste • Vegetable oil for greasing Filling • 1/2 cup coconut cream fresh or tinned • 110 g Gula Melaka or dark palm sugar • 1/8 tsp salt • 1 cup dessicated coconut or freshly grated coconut MetHod In a medium mixing bowl, combine flour, eggs, 1/4 cup full cream milk and salt and whisk until silky smooth. Add a dash of the coconut milk and pandan aroma pasta and whisk until combined. Add remaining coconut milk and stir in gently with a ladle. Heat a 20-23cm non-stick frypan on a medium heat. With some paper toweling smear the tiniest bit of vegetable oil onto the entire surface of pan. Start
by ladling just enough (1/4 cup should be perfect) of the batter into the pan to roll and cover the surface. You have to work quickly as it should begin to cook instantly. When the crepe is perfect, it will start to crisp up on the edges. At this point lift up an edge with a butter knife and with both hands, carefully pick up the crepe to swiftly flip it over. No more oil is required after the first greasing as the coconut milk has enough fat in it. Repeat until all mixture is cooked. You should end up with crepes that are just under 2mm thick and thin enough to be able to see through to your hand. For the filling, combine coconut cream, palm sugar and salt in a small saucepan and cook on medium heat until the sugar is dissolved. Add fresh or dessicated coconut and cook until the mixture is moist and sticky but not runny. Remove from heat and spread out on a plate to cool before using. To assemble crepes, scoop 1 Tbs full of coconut filling onto the middle of the crepe. Spread it out into an elongated shape. First, fold the crepe in half, fold in 1/3 on each side and roll into long parcels like a spring roll. For the custard, combine all ingredients in a small saucepan and heat until sugar is dissolved. May be served warm or at room temperature. 47

GUYSEBASTIAN He’s been the voice of reason on Channel 7’s The X Factor, mentored the series’ last two winners, and has achieved international chart success with a brilliant 2012 single, Battle Scars - this Christmas, we’re loving guy Sebastian
t was over a late night planning meeting for the December issue of Get it that we started talking about Guy ‘Go the Fro’ Sebastian and how much he has achieved since we first met him on Australian Idol in 2003. Hard to believe it’s been that long since this charming (then) music teacher won our hearts with his truly beautiful, unique voice. Over the years he’s released many singles,all securing relative success within Aussie shores, but his profile has catapulted thanks to the success of The X Factor, and his mentorship of many a rising star. While all the judges on The X Factor come to the panel with their own set of worthy credentials, Guy has always stood out as the judge and guide who could truly empathise with contestants. On one hand, he’s got the musical knowledge and training to be able to genuinely advise performers on technicalities that need to be developed. On the other, he’s been all the way to the top of the mother of all music casting calls and competitions. In fact, the Idol he won when he was just 22 was the first of the series we saw here in Australia - it really set the bar for the national music competitions we’re now all so addicted to. Guy’s been a judge on X Factor since 2010, mentoring 2011’s popular winner, Reece Mastin, this year’s gorgeous superstar winner, Samantha Jade, and offering a wealth of sound advice to the talented line-up of 2012 acts. On top of his television commitments though, Guy’s had an exceptionally huge year. He’s a new dad to super-cute baby, Hudson, and he’s released his seventh, chart-topping album, Armageddon. The humble artist scored his sixth number one single in Australia from this release, making him one of the most successful charting artists in our history, alongside the likes of Kylie Minogue and Delta Goodrem.
LIKE IT LIKE THAT: 12 reasons why we love this nice ‘guy’ of Aussie pop-R’n’B: 1. He prompts us: Don’t worry, be happy (we haven’t had that musical reminder since 1988 (YouTube it if you don’t know what I’m talking about)! A nice sentiment though, no matter what decade we have it sung to us. 2. He co-starred with the ever-lovable Jennifer Hawkins in his music video for Elevator Love (2006). Could she be any more beautiful? 3. His exotic pedigree is intriguing. He was born (1981) in Malaysia to his father of Sri Lankan and Portuguese descent, and mother, of English and Portuguese descent. Further to this he was raised in India. He has three brothers, and his family migrated to Australia in 1988. 4. Guy’s represented us all over the world, including at the G’day USA showcases in America in 2011 and 2012, and of course the World Idol competition. 5. He writes great songs, for unique events. Receive the Power, a song written by Guy and Gary Pinto was chosen as the official anthem for the Roman Catholic Church’s XXIII World Youth Day (WYD08) held in Sydney in 2008. 6. Among many charitable commitments, Guy is currently an ambassador for the Australian Red Cross, World Vision Australia, and Golden Stave (the Australian music and entertainment industry’s charity fund raising organisation). 7. He’s a giver: Guy’s songs are frequently featured on charity albums, and he’s been known to make unofficial appearances at hospitals several times a year. 8. He’s done Grease, with Olivia Newton-John! For the Olivia Newton-John & Friends Concert in September 2008, held at the State Theatre in Sydney, Guy was chosen to sing a duet with
Olivia - none other than the iconic track, Summer Nights. 9. Guy and Ronan hit the stage in the UK too, in a really huge concert tour! He supported Boyzone - the Irish boy band that included fellow X Factor judge, Ronan Keating - on their 2011 UK ‘Brother Tour’, in memory of the group’s fellow band-mate, Stephen Gately, following his shock death in 2009. 10. Guy’s a grounded celebrity who has been with his partner, Jules Egan, for around 13 years, and married for four. 11. He’ll be enjoying this time of year with the rest of us, but particularly because Guy loves his cricket! 12. His brand new single, Get Along (from the album Armageddon) is about encouraging us all to make the world a better place. He recently told Sunrise on Seven that the video for the track was strategically shot all around the world, to “represent global life and love”, reflective of many of the lyrics in the song, such as,“it’s easy if they’re faceless to hate the other side”.
