I love this time of year on the Gold Coast. The sun is shining, water glistening, fast cars lap our city’s streets and the energy is electric. The Gold Coast 600 is on very shortly and I can’t wait to see what 2012 brings. I remember one year, my gorgeous mate Kellie, and I were hanging out with some of the crew from Conrad Jupiters. We were watching the V8s cruise around the track but were distracted ... as NRL’s Johnathan Thurston and Willie Mason dropped by for a chat. Giggling like school girls, we were ... or perhaps that was the champagne and sunshine (my nemesis). Three lovely ladies who know all about V8 Supercars, sporting celebrities, and champagne, no doubt, are the Gold Coast’s very own WAGS of motorsport, Julia Ingall, Bree Johnson and Janine Patrizi - we caught up with them exclusively for this issue! I have many favourite memories filed away from Octobers past - good times spent with friends. On that note, we’re proud to promote the Girls Night In initiative, raising money for women’s cancers, and a terrific opportunity to do something meaningful with your own mates. For this issue I had the pleasure of talking to Ra Churchin, Queensland ambassador for the event. If there was ever anybody to inspire us to support a worthy cause, it is this beautiful young lady.

LOCAL PROFILE with Sarah Blinco
HEROES of the MODERN AGE Sarah Blinco meets Ra Churchin, Queensland ambassador for the Cancer Council’s Girls Night In, and a contemporary so inspiring she brings tears to her eyes. was recently introduced to Ra Churchin. She’s about my age, 34, young, I’d say. She’s a gorgeous Gold Coaster, former travel agent but particularly passionate about art and snowboarding. Like me, she’s got dreams for the future, loves spending time with girlfriends, is keen to globe-trot, and enjoys shaking her booty in Zumba class. Unlike me, she spends her days not sweating the small stuff because she’s had to go through something that I personally (and very fortunately) haven’t had to, nor could I imagine - breast cancer. They say Australian women have a one in nine lifetime risk of developing breast cancer. One in nine. That could be you; or your friend, sister, auntie, or as in my case, mum. It’s the most common cancer for women today, however it’s important to remember that thanks to fundraising, research is ongoing; and because of research, treatments, procedures, equipment and training improve every year. In fact, most women do survive breast cancer now. My mum is testament to this, as is the lovely Ra. In Ra’s case, there was no apparent reason for this cancer to have appeared. Her key message, especially given the young, supposedly ‘unlikely’ age of 32 when afflicted with the disease, is “listen to your body”. “Looking back, I feel that possibly some of the stress I felt the year before being diagnosed was my body desperately trying to tell me something was wrong,” she adds. Eventually a noticeable lump emerged, but at first Ra ignored it. “I didn’t want it to mean anything. It got to a point where it was an obvious though... I went to get it looked at. Initially I was misdiagnosed, [even following] a mammogram, ultrasound and three or four FNAs (like a biopsy)... That was around September 2010. Funnily enough, the body screams messages at you when things are wrong, so at the start of 2011 I went back for a routine check-up with my normal GP. I mentioned I had a lump that was apparently benign. She didn’t tell me, but she had alarm bells going off when she felt the lump and so ordered another ultrasound and biopsy which is when we found out I had cancer. Following October 2012
this experience, I’ve become an advocate of girls listening to their bodies and encourage everyone to follow up if something doesn’t feel right.” Ra is genuinely grateful that she always felt looked after following this diagnosis. “At first everything happened really fast... I felt an overwhelming sense of attention and safety though, and was blown away by the instant care.” Her personal journey, understandably, was tumultuous. “Emotionally I never really felt, ‘why me’; I just went with it. It’s like being on a conveyor belt, you just keep going in one direction to get through it... I went through some very down times. It was very confronting and emotional sometimes, but I always did that in my own quiet time,” she says. “I cried every time at chemo because it’s frightening. The first lot of chemo was the really hard stuff. I had severe nausea, fatigue. My hair fell
overcome fears. You begin to live a life without fear.” Ra adds, “While you can never fully come to terms with it [cancer], you do go a long way towards it because if you don’t, you’re going to live a life of great unhappiness... I still wake up in the morning and I smile. I use the good things in my life to be happy and positive about... Because of modern medicine, love and support from my family and friends, and a lot of positive affirmations, I have been able to get through all my treatment.” Ra is also working to raise awareness, and as such is this year’s Queensland ambassador for Girls Night In (www.cancer.org.au). “I
the beauty in it [the experience] is being able to overcome fears. You begin to live a life without fear. out and my eyes were really inflamed. It gave me premature menopause, so I was on an emotional rollercoaster. At the same time, I was on steroids, which makes you climb the walls. You don’t sleep, and they cause all sorts of horrible side effects.” It’s at this point in my conversation with Ra that I realise she’s been putting on a particularly brave face. She swings from being positive about outcomes to recalling trying times, and it’s this raw emotion that really strikes a teary note with me as I hear what she has been through. Ra has had both breasts removed and endured twenty rounds of chemotherapy, but the tumour has been removed and thankfully there was no cancer in her lymph nodes. She’ll continue to be monitored closely, and after three years will be deemed ‘in remission’, and after five years with no further cancer she will be declared ‘cancer-free’. She tells me, “the beauty in it [the experience] is being able to 12
wanted to get on board with it because I’ve got firsthand experience in how far we have come in modern medicine, but there is still much more we have to learn... Girls Night In is a simple thing to do. Just register - it’s an opportunity to spend time with your friends and instead of spending money on clothes and alcohol on a ‘big night out’, put that money towards funds for the campaign.” On a personal note, this spirited survivor is looking forward to a future of global snowboarding adventures and is expanding her business (www.romeoalphagallery.com /www.facebook.com/romeoalphagallery). “Before I was lost, and I used to always focus on others. Now I identify with things that make me happy - like painting and snowboarding - and I pursue them. These things inspire me... I’ve just been signed up by an art gallery too, Rodney Ramage Art in Southport, where I’ll be selling my original work, so that’s exciting!”

4. Recent events? I’ve just recently returned from Mercedes Benz Fashion Festival Sydney where I did the hair for the Bec & Bridge runway show. Do you believe you contribute to a positive work environment? Or, are you one of some 86 per cent of professional Australian workers who have snubbed a colleague in the office? Sarah Blinco investigates surprising new findings indicating bad behaviour is indeed rife in Aussie workplaces, and seeks suggestions on how we can all make a difference.
ach day when I head out to do the school pick-up - that is, collect my fiancé, a year five teacher - I glance around at what the little folk are up to. Generally it’s all still the same as when we were in primary school. Boys kick their footballs around, challenge each other to games of handball and occasionally give someone a cheeky nudge. The girls on the other hand are much more subtle. It’s often easy to spot the little kid who is out of favour for the day, in the corner on her own. If any woman can tell me they went through school without experiencing how downright nasty some other girls can be then I say, how awesome for you! We like to believe that schoolyard bitching is something that is grown out of, but is it? Does immature nastiness and teasing really dissipate as we ‘mature’? Findings have only this month been released from a study by SACS Consulting into counter-productive workplace behaviours (CWBs), and ladies, we ain’t looking pretty. General bad behaviour includes taking unnecessary sick days, ignoring OH&S policies or procedures, becoming distracted by non-work related matters, and, women were found more likely to infringe against the organisation they’re employed by! As in the schoolyard, safety and October 2012
bullying have emerged as major concerns, with one finding indicating 86.6 per cent of employees had ignored or snubbed someone at work at least once, and 41 per cent had done so sometimes or more frequently. Sadly, this type of behaviour often escalates, causing grief and emotional turmoil for many in the fold. Local marketing consultant, Wendy Hoffs, tells us how bitching escalated into something much more at a former workplace: “I once worked for a company that represented beautiful skincare and lifestyle brands.

Over time, I noticed that several of the staff tended to subtly pick on others or make their life hard in small but personally significant ways. Across a number of months, the nastiness escalated to the point of tears and incessant chatter, inside and outside of work hours, about what was going on. Even those of us who weren’t directly being victimised were being impacted by the negative energy at work. It got to the point 18
where everyone was seriously unhappy until eventually several staff left. With a new turnover of staff came an opportunity to implement strategies designed to prevent such negative behaviour reoccurring. It certainly reduced productivity, and I was fairly keen to move on to a new place of work following the experience,” she says. SACS Consulting, the Australian human resource and organisational psychology consulting firm who undertook the research into bad behaviour in the workplace, believe it is the first comprehensive study of its kind in Australia. Andrew Marty, psychologist and managing director of SACS Consulting says he was surprised by the relatively high levels of negative behaviour identified, and believes the findings have significant implications for Australian employers. He says many clients who had seen the findings were surprised and concerned by how common some behaviours are. “Identifying CWBs is important for employers as they can cause staff energy levels, drive and commitment to work to drop. They can also create a downward spiral into truly negative behaviour such as widespread bullying and harassment. This in turn affects productivity and profitability of a business and the overall quality of the workplace culture.” Is it only the responsibility of management to curb anti-bullying

behaviour though? This is acceptable in school, when adults are often required to facilitate negotiations between otherwise immature minds. However, shouldn’t we as adults with fully developed, functioning brains, work to behave a little bit better if for nothing else than professionalism’s sake? The Australian Human Rights Commission website (www.hreoc.gov. au) states that yes, employers do indeed have a legal obligation to provide a safe workplace, free of bullying and harassment. It also states that as bystanders “we all have a moral responsibility to help create a positive, safe workplace.” Boss, bystander, bully or bitcher - isn’t it time we just got on with our jobs? If you’re struggling with negativity for whatever reason, psychologists and business coaches agree - channel that energy into a positive activity like yoga, meditation, gym, karate or sport. Most of us spend a vast majority of our lives at work, and the days certainly run much faster when we’re free to be productive and happy. Life and business coach, Lisa Phillips (www.lisaphillips.com.au) offers a checklist and advice. Do you find you can’t help but gossip about people at lunch? Instead of focusing on what you don’t like about someone, try to focus on what you do like. If you can’t find anything nice to say, then don’t say anything. Realistically, unless it is someone you know really well, your judgements are just based on your own perception and are often projections of our own behaviour traits. For example, if you bitch that someone always leaves the office at 5pm, this could be down to the fact that secretly you resent your own long working hours. We often bitch about someone, as deep down we may feel resentful or even envious of their behaviour or good fortune. If other people spend their time bitching to you, remember you don’t have to agree or buy into it. You can simply listen without passing any judgement. Don’t feel you need to feed gossip and negativity. Rather than bitching about work or other people, or even the fact you dislike your job, take responsibility and take action to resolve it! Do you find it makes you feel better to snap or be nasty towards co-workers or employees? Generally people are not fond of the office gossip, and snappy angry behaviour is not something to feel good about. Negative people spread resentment around the office, and always bear in mind that if you think it’s ok to bitch about 19
people, they will be bitching about you too! If someone presses your hot buttons, respect yourself enough to reply calmly and assertively rather than being snappy. You will gain more respect with co-workers and managers by doing this. If you are the sort of person who often snaps at others, then people will begin to avoid you and you will develop a reputation for being unapproachable and unprofessional. FIVE QUESTIONS TO ANSWER HONESTLY 1) Do you always look for what you believe is ‘wrong’ with someone before looking at what is nice about them? 2) Do you quickly make a judgement about someone based on what they look like? 3) Are you part of a group of people who regularly get together and talk about others behind their backs? 4) Do you put someone down if deep down you believe they are doing a better job than you or if they want to make changes in your work environment? 5) Are you constantly complaining about how much you hate your job? If ‘yes’ is the resounding answer to any or all of these, it’s time to reflect and possibly change tack or attitude. October 2012

While the faces of drivers will no doubt grace many news pages over the coming few weeks, we thought it might be nice to meet the local women of motorsport. Did you know a number of the WAGS (that’s, wives and girlfriends) live it up right here on the Gold Coast? It’s our pleasure to introduce you into the glamorous lives of Julia Ingall, wife of two time Bathurst 1000 winner, Russell Ingall; Bree Johnson, wife of V8 Supercar driver, Steve Johnson, and Janine Patrizi, wife of Michael Patrizi. Bree Johnson Day job? At the moment I’m enjoying being an at-home mum. I have less than six months until our youngest starts school and I’m very fortunate to have the opportunity to be able to stay at home with her. How did you meet Steve? We met through a mutual friend. We were not too keen on each other at first. It took quite a while for us to get to know each other, and Steve in a dress (that’s another story!) to spark something. Were you interested in motorsport before you got together? It was definitely something I had to learn about. I’d never even seen a race before meeting Steve, I was more into motorbikes. I grew up with a brother who raced motocross and I raced myself from the age of three until I was about ten. October 2012
What’s the coolest part about being married to a supercar star? I’ve come to really love the sport itself but it’s also opened up a world of great opportunities. There are definitely perks - we’ve been to great events over the years and met some really exciting people all through being involved with V8 Supercars. My most memorable moment would probably be having a hot lap with Steve – it really gives you an appreciation of how tough it is to drive those cars around a race track.
Aside from the upcoming supercars challenge on the Gold Coast, what are you most looking forward to over the coming year? I’ve always loved the Gold Coast race... Apart from that, I absolutely love Bathurst. Steve and I drive down in a motor home which we stay in at the track and it’s also another opportunity for us to spend some time together - I always love a good road trip.
You’re evidently ‘the woman behind the man’ – how important is the role of a supportive partner? I think anyone’s role as a wife is important but I guess with motor racing - as with other sports - you need to be quite selfless. It’s a very consuming industry... but I wouldn’t change it for the world - I love our crazy life.
Day job? I work for Gold Coast Oral, Maxillofacial and Implant Surgery administration and patient coordinating. I’ve had a few different jobs over the years due to us moving all over the place, but this is something different for me and I’m really loving it.
Your hubby obviously loves cars and racing. What are your favourite things in life? I’ve found I really love baking cupcakes. I’m forever getting requests for my cupcakes, especially for my ‘Jim Beam and Honey’ ones, so I’m in the process of designing a webpage where I’ll make cupcakes and also sell some lovely decorating items and gift ideas. It’s exciting and nice to have something of my own to focus on. Is Steve away a lot, or does your family travel with him? He is away a lot, this is the most difficult part of what he does. We miss out on a lot things like weddings and birthdays which is unfortunate, but we always make sure we have at least one family holiday a year. 30

How did you meet Michael? We met just over ten years ago at an AFL game in Perth. I was only 16 at the time! How time flies. Were you interested in motorsport before you got together? I had no idea about motorsport before I met Michael, but over the years I’ve developed a bit of an interest in it. I think I’ve had to! I really love watching Formula 1 - and V8 Supercars, of course. What’s the coolest part about being married to a supercar star? It’s totally unrelated to the sport, but I would probably say his cooking! He is a great barista too. You’re evidently ‘the woman behind the man’ – how important is the role of a
Bree supportive partner? The ‘supportive partner’ role for me has been a big one. Over the years we’ve moved overseas and back twice, then to Melbourne, and now we’ve been on the Gold Coast for just over three years. As much as I miss home (Perth) and my family, I wouldn’t change anything we’ve done. Your hubby obviously loves cars and racing. What are your favourite things in life? My favourite thing to do in my down time is spend time with my husband and two dogs, Narla and Buddy. Because Michael is on the road (or in the air) quite a bit, I really enjoy it when we just have a weekend at home to relax with the dogs. I also love a bit of online shopping. Is Michael away a lot, or do you travel with him? I like to travel to Michael’s races because his racing is part of my life too, and I don’t want to miss any of it! I don’t like watching it on TV because I like to know where he is on the track and know his times and if there’s anything wrong. I also want to be there to see him on the podium, which will hopefully be very soon. I’m very lucky my work is flexible and happy to let me go with him. Aside from the upcoming supercars challenge on the Gold Coast, what are you most looking forward to over the coming year? I am very much looking forward to the upcoming Gold Coast 600, but I am really excited about Bathurst this year. Being the 50th Anniversary of the great race, it’s going to be a huge event, and I think it’s going to be a very close, exciting race too.
Janine Julia Ingall Day job? I’m a full time mum to two awesome, vibrant little girls and in my spare time, handling all of Russell’s business affairs. How did you meet Russell? I met Russell when I was 14 and Russell was 22. Russell was racing go-karts and so was my brother. We clashed immediately. Over the next few years we bumped into each other around the karting circuit but never had any interest in each other. Russell moved up to Formula Ford and I started in motorsport photography in the late 1980s. We met up at the Adelaide Grand Prix in 1988 where I had gained accreditation as a photographer and he lived not far from the track. We spent a bit of time together that week and starting dating not long after. Were you interested in motorsport before you got together? I was really interested in motorsport photography as a teenager and started following the Australian Touring Car Championship in the 1980s where I was getting work from a few of the publications and teams. It was my love of motorsport that led me into photography and I have always loved all forms of motorsport from Formula 1 to V8 Supercars. What’s the coolest part about being married to a supercar star? We have travelled to some of the most amazing places around the world and met so many interesting people... Aside from the obvious things like when Russell won his two Bathursts or the Championship... a highlight has been meeting my childhood hero, 31

I think for the wife to be supportive is key as this is not a normal life. There are massive stresses on a race car driver and a lot of time away from home. If the wife cannot accept and support this, it just makes things more difficult and ultimately will not work. Your hubby obviously loves cars and racing. What are your favourite things in life? I love to travel and fortunately motorsport has taken me to some pretty unbelievable places. Is Russell away a lot, or does your family travel with him? Russell is away a lot. Not only is he away for the racing schedule, there is also PR and sponsor commitments that have him on a plane, sometimes several times a week... Now the kids are older, I have very supportive family close by that help so I can travel with Russell more... Trying to work out everyone’s timetables is a constant juggle, but I am getting better at it. Aside from the upcoming supercars challenge on the Gold Coast, what are you most looking forward to over the coming year? I am really looking forward to our annual Christmas family holiday. Where that is going to be we are still negotiating, but most of all, looking forward to Russell signing a new deal for next year and going out and giving the championship a good shake up. The ‘Violet Hour’ is a very feminine collection, it’s based on feminine floral prints mixed with blocks of vivid pastels. The collection includes 100 per cent silk resort-wear and also some really beautiful full pieces What was your inspiration? I recently fell in love and have been getting spoilt with bouquets of beautiful flowers and whisked away to romantic destinations sipping cocktails by the pool. This collection is all about feeling beautiful and falling in love. White Sands has really taken off in the US, was that surprising for you? It’s definitely a surprise how well the label has been received. White Sands has been showcasing in America for four years now and it’s really great that we are getting taken notice of and also taken seriously. October 2012

You’re starting to delve more into outer garments, can we expect to see more clothing from White Sands in the future? Ideally yes, I love designing resort-wear, as this is what I wear; it’s what I live in! We definitely want to grow the resort collection. What is next on the cards for White Sands? We have already started working on a 2013 collection, which will launch in Sydney at Australian Fashion Week next April. It’s always exciting looking ahead and growing our international market is definitely something that’s on the cards for us. oat enthusiasts and families are expected to flock to the Gold Coast Marine Precinct this November 2, 3 and 4 when the Gold Coast International Marine Expo returns for the second time. This years event boasts a number of ‘firsts’ including an abundant of new product releases, new attractions and more interactive displays, making it one of Australia’s most innovative boating lifestyle marine expositions. Gold Coast International Marine Expo spokesman Stephen Milne said more than 20,000 people are expected through the gates over the three-day, free admission event. “These brands will be displayed over a 2.5 kilometre circuit and the Expo will once again support our valued community groups, the Rotary Club of Coomera River, Sailability, Wasp Creek Rural Fire Service, Paradise Kids and the Westpac Life Saver Helicopter Rescue Service. The not-for-profit event will showcase the latest products and services from Australia’s
leading marine manufacturers, from kayaks to superyachts and everything in between. More than just a boat show, the GCIME has been dubbed Australia’s “working boat show” as it features live technical demonstrations and attractions every 30 minutes over the three action packed days. The GCIME also provides a unique and educational behind the scenes view of the marine industry. There will be a significant number of ‘firsts’ and new releases at this year’s event including the new Kawasaki 3013 ultra 300x Jetski launched by Jetski World; Tailored Marine’s new TMA27 Recreational Centre Console trailer boat; the new 445 SUV from Riviera, which has never before been seen at a Queensland boat show and the new generation of wind generators by Silentwind which has just arrived in Australia; just to name a few. “We also have an exciting line-up of entertainment this year with the RAAF Roulettes performing an aerial acrobatics
display at 12 noon each day, the Yamaha Supertank Travelling Fishing Show, the Jetlev Jetpack Flyer Australia, a Class 2 Offshore race boat display and the opportunity to meet the drivers from the Queensland division of the Australian Power Boat Association. The Wine Bar + Grill, Broadbeach Having lived on the Coast for a couple of years I had heard from many a people about the fabulous steaks at Moo Moo but apart from attending a couple of ladies lunches, which I might add, are an institution in themselves, I was yet to be part of the privileged many who had succumbed to the delicious meat fest located in the heart of Broadbeach.
s the name suggests, Moo Moo is renowned for their delicious array of bovine feasting however, unlike the traditional “steakhouses” of the past this stylish venue has gone above and beyond to make your dining experience one to remember. Although swathed in leather and cowhide, the interior is far from masculine. Sleek, sophisticated and with a vibrant atmosphere this iconic venue caters for an after dinner drink with friends or work colleagues as well as an unforgettable dining experience. From the moment of arrival greeted by experienced friendly staff, we were met by a Host with extensive knowledge and passion, not only for the restaurant but also in life. After discussing our dietary requirements (my allergy to mushrooms) we gave our fabulous Host free reign on our orders. What came out was a feast fit for a King! With a menu that includes some of the most incredible cuts of steak, it’s no wonder the awards just keep on coming for this fabulous venue. Crispy pork belly, pan seared scallops with raisin dressing, Mooloolaba tiger prawns with angel hair pasta and rosemary gnocchi with braised wagyu – and that was only for entrée. Although renowned for steak, Moo Moo’s menu also includes fresh oysters, chicken, fish, pork and duck.

Vegetarians are also catered for with main options as well as an extensive list of sides. When it came to ordering the steak, it was refreshing to be able to be educated by our experienced waiter who not only gave us a lesson in marble scoring (the quality of the meat). When Wagyu or meat is graded it is scored on several factors, including fat and meat colour, and marble score. The marble score ranges from 1-12, with 12 being the highest score. In Australia we are not yet certified to score above 9, so if the assessors think the meat is of the highest quality they score it with a 9+. Generally good Wagyu ranges from 6-9+. We were lucky enough to have a cut of wagyu that had a marble rating of 9+ and it was like nothing I’d ever tasted before. Buttery, tender, moist, no other steak can ever compare. The sides were incredible; broccolini and snow peas with chilli + garlic, Hand picked green beans w. sambal oelek, coconut cream + eschalot and Roasted baby carrots, cummin + preserve lemon all just as delicious as the mains. 40

INGREDIENTS • 1 x 180g packet of Eskal Gluten • Free Marshmallows • 3 fresh passionfruit • 1/2 carton of whipped cream • 1/2 small tub of Farmers Union • Natural Greek Yoghurt METHOD
With Summer just around the corner it’s time to start trimming the fat from all those winter feasts with this great easy dinner for two, and yummy allergen (and guilt) free snack and dessert!
1. Cut the 3 passionfruits in half and remove the pulp with a teaspoon. 2. Melt the marshmallows and passionfruit pulp together in the microwave until dissolved. Allow to cool at room temperature. 3. Fold in natural yoghurt and whipped cream. Pop into the fridge for a further 20 minutes and you’re ready to serve. 4. BON APPETIT!
Chicken Fettuccine
with Vegetables
(serves 2)
INGREDIENTS • 250g SlimOrganic Fettuccine • 400g Lean Chicken breast, sliced into strips • 100g Cherry Tomatoes, cut into halves • 1 Small Brown Onion, sliced • 50g Baby Spinach Leaves • 1/4 Cup of Red Capsicum, thinly sliced • 1/4 Cup of Yellow Capsicum, thinly sliced • Cup of Light Cream • Tbs Olive Oil • I Garlic clove, crushed • Salt & Black pepper add to taste • Parsley to garnish METHOD 1. Prepare SlimOrganic Fettuccine as per directions per pack. 2. Heat oil in fry pan, add chicken cook until browned and remove from pan. 3. Add crushed garlic, onion, red and yellow capsicum cook until just tender. Return to pan, add cream and heat through. 4. Add SlimPasta Fettuccine to pan and toss thoroughly, add spinach leaves and cherry.

Chocolate Brownies
INGREDIENTS • 85g Eskal Noble Choice Dairy Free Dark Chocolate • 45g Eskal Noble Choice Dairy Free Dark Chocolate (chopped for topping) • 75g Nuttelex (non-dairy butter alternative) • 3 free range eggs • 275g golden caster sugar • 85g gluten free flour • 40g pure cocoa powder • 1/2 tsp salt METHOD 1. Pre-heat oven to 180 C or 160 C fan-forced. 2. In a double boiler, gently melt 85g Eskal Dairy Free Dark Chocolate with the Nuttelex. Remove from heat and allow to cool slightly. 3. In a separate large stainless steel bowl, using an upright mixer or hand-held beater, whisk the eggs and golden caster sugar together until doubled in size. The mixture will appear to be a pale golden colour. Have patience as this may take anywhere from 3-8 minutes depending on your equipment. 4. In three parts, fold your melted chocolate and butter into the egg and sugar mixture. Then sift the gluten free flour, cocoa powder and salt, fold in until just combined. Do not over mix. 5. Line a 10 x 14 cookie tray with baking paper. Pour in the brownie mixture and spread evenly. The trick to this light, rich brownie is baking it thinner than traditional size. Cover with chopped Eskal Dark Chocolate pieces. 6. Place tray on middle rack in pre-heated oven. Bake for 20 minutes; gently shake the tray to see if the middle ‘wobbles’. If yes, bake for another 5 minutes. Check again; it should be soft to the touch and just hold its shape when the tray is moved. Allow to cool completely before removing from ray. When ready, cut into desired shapes with a clean, sharp knife. 43
Suggestion A great addition to the fruit platter is Eskal Gluten Free Marshmallows half dipped in melted chocolate. Refrigerate until the chocolate sets and then alternate between dipping chopped fruit and chocolate-coated marshmallows. Yum!

Can cooking, dancing, finding love, singing and losing weight in public really make you happy? Sarah Blinco discusses the realities of ‘real-life TV’ and seeks insider tips from Beauty and the Geek’s, Hadassah Venn. t seems, for better or worse, reality television has made a come-back. For a while there I honestly thought it was all subsiding, but with the return of Big Brother (and the insanely long audition line it attracted in Brisbane from 2am on try-out day), perhaps I was wrong. I wasn’t ever partial to reality television. I don’t quite understand why people are so obsessed with watching it. Then there are those obsessed with being IN it. Instant celebrity equals instant millionaire which of course means an easy ride into the future - doesn’t it? Admittedly this year I’ve been hooked by a few ‘reality’ productions (much to my fiancé’s disgust). I’ve checked into Farmer Wants a Wife, The X-Factor and Beauty and the Geek (c’mon - there’s a guy who can roar!). Then there’s my other ridiculous obsession, Made in Chelsea. They’re rich, bitchy, sipping endless glasses of champagne and wearing (or buying) expensive clothes in the heart of London. I love it! The glamorous life we’re invited to indulge in. That said, how ‘real’ is this ‘scripted reality’? Perhaps a topic for another time. What is it really like for the cast ‘behindthe-scenes’ (ie. the edits left on the cutting room floor)? And what happens to them afterwards - is it really fame and fortune? More realistically, it appears as if it’s an ‘opportunity’: evolved networks and an enhanced profile. I’ve had the pleasure of working with a few past reality stars. They’re pretty cool people, and to their credit, they’ve used their ‘reality fame’ in positive ways, subsequently forging careers - not without a lot of hard work though! Rebecca Dent, Gold Coast gal, Big Brother 2007 star, and now popular radio host for the Southern Cross Austereo Network has spent years dedicating the majority of her week to presenting breakfast radio shows, television music specials and live event broadcasts. Long hours, hard work - not instant millionaire stuff, but rewarding all the same. Similarly, the lovely Hadassah Venn (pictured), who also hails from southOctober 2012
east Queensland, has used her sometimes challenging experience on 2009’s Beauty and the Geek (BATG) as a pinnacle in her evolution to confident, well-connected beauty business entrepreneur. Hadassah was just 22 when she starred in the series. She’d never had designs on being a star.
