Hello readers, before the ladies tours are back into full swing for the 2015 season in March, February will see the Hong Kong Ladies’ Close Amateur and Mid Amateur Close Championships and several LET events happening in Australasia. After the Ageas HKPGA Championship, local heroes will now look forward to the First Leg of the HKPGA 2015 Order of Merit which will be held from 30 to 31 March. Competitive golfers, are you ready for another season? While a lot of you are making the most of the Chinese New Year long weekend with all types of Chinese celebrations ranging from sumptuous food, Chinese crackers to lots of visits and gatherings, why not enjoy what FORE GIRLS has prepared for you as well? We particularly love our profile stories this month, with our cover girl Caroline Masson, a player currently competing both on the LET and the US LPGA Tour, alongside the stories on Nancy, Yvonne and our junior girls, all of which proves that while seeking to advance in the game is important, you should never forget to look around for all the opportunities that golf has opened up for you, from making friends to realising a lifelong dream! Born and raised in Gladbeck, Germany, Caroline Masson is a current Ladies European Tour (LET) and US LPGA Tour member. Caroline was first introduced to golf by her grandfather who took her to the golf course as a child where she soon fell in love with the game. Coming from a sporting family where her father was a tennis coach, Caroline did play tennis for a while but realised that tennis was not the sport for her long term. She much preferred testing herself mentally and physically against the elements and landscape of a golf course.

Q. What is the 27-point rule for the LPGA Hall of Fame? LPGA 名人堂 27 點的規則是甚麼?

A. The LPGA require its golfer to reach 27 points before recognising them as LPGA Hall of Famers. A player gets a single point for an LPGA victory and two points for a major championship victory. A player also gets one point for winning the Vare Trophy and one point for the Rolex Player of the Year Award. The LPGA Tour Hall of Fame, established in 1967, has long been recognised as the most difficult Hall of Fame in which to gain entrance than any other sport. In 1998, the LPGA Tour Hall of Fame became part of the World Golf Hall of Fame, which is housed at the World Golf Village in Florida. There are currently a total of 25 players who can be inducted in the LPGA Tour Hall of Fame, only three of which are still currently active on the tour. A. Bettye Danoff is also known as ‘Mighty Mite’. Not only is she one of the best female golfers from Texas, she is also one of the LPGA's 13 founders. She passed away in 2011 at the age of 88. She picked up the game at the age of six when her parents opened a driving range and a nine-hole golf course, the Sunset Golf Centre in Grand Prairie, Texas, which still belongs to the family today. 貝蒂.丹露芙不僅是美國德州女子高球史上數一數二的選手,也是美國 LPGA 巡迴賽 13 位創辦人之一。她在 2011 年去 世,終年 88 歲。她在六歲時到父母開辦的練習場和九洞高爾夫球場,繼而初次接觸高爾夫球。該球場名為日落高爾夫中 心,位於德州大草原城,至今仍然屬於她的家人。

Q. What is the difference between an amateur golfer and a professional golfer? 一個業餘球手和職業球手之間的區別是甚麼?

A. The purpose of the Rules is to maintain the distinction between amateur and professional golf taking sponsorship and financial incentive out of the picture for amateur golfers. In recent years, the Rules have changed and amateur golfers are allowed to receive support from a governing body, which helped the growth of golf tremendously. An amateur may now receive expenses, payment or compensation for giving golf instruction as part of a programme that has been approved in advance by the governing body. So the only difference left is that if an amateur plays well at a professional tournament, they can only receive the prizes but not prize money. 訂立賽規的目的是維持職業球員和業餘高爾夫球員的區別,令贊助及財政等刺激因素不會對業餘球員造成影響。可是, 近年來這些規則起了變化,現時賽規允許業餘球員獲地方或國家的監察機構支持;這種變化對高爾夫運動的成長及推動 起了極大的作用。業餘球員現在可於監察機構的同意下,收取教授高爾夫而得來的薪金或比賽日常支出。唯一的分別是, 業餘球員如果在職業賽上取得好成績,則只能獲取獎品而不可收取獎金。

郵輪女王 自她從加拿大回來後,鍾姚賽玉 (Nancy) 在 1996 年 1 月加入 鐵行輪船公司,後來自組公司負責公主遊輪及皇后遊輪的總代 理事宜,及至其郵輪業務分拆至嘉年華集團,亦是當今全球最 大的郵輪集團。然而,這一切都要從 1987 年,Nancy 和丈夫 被邀請登上一次奢華的郵輪假期開始。當時他們從北京上船, 在日本神戶下船,這一趟旅程,為 Nancy 播出未來事業王國 的前奏。

Simon Says Current General Manager Simon Graham offered his thoughts on Morton’s in Hong Kong. With 20 years of experience in the industry, Simon started as a busboy progressing to front of house and then to the kitchen and finally to General Manager.

In that time, Simon worked at several restaurants starting with a leading Italian restaurant called La Trattoria located in the Landmark before moving on to open his own restaurant Panevino in the Mid-levels. This was followed by the General Manager position at Jimmy’s Kitchen and then a period of change at a few places in Hong Kong and short stay in London before Simon returned to Hong Kong to manage The China Tee Club where he stayed for four years. In 2011, Morton’s beckoned and now Simon is adding his wealth of experience to the Morton’s brand. In the competitive environment of Hong Kong, Simon has focused on ensuring the consistency, standards and quality of not just the food but also the service at Morton’s. He believes that “you should treat your guests as you would want to be treated”. Additionally, their committed and loyal staff, some of whom have been with the restaurant for over 10 years provide a wealth of knowledge and experience coupled with a rigorous and extensive training programme ensures that guests are well looked after. This is the reason why guests return time and time again and what Simon feels sets them apart from the competition.

The Team is Everything Of course, their signature Prime 20 ounce New York Strip may also have something to do with attracting guests as well as the popular Rib eye steak. Naturally, Simon cites the food as the foundation that a restaurant is built upon with the ambience, lighting, views and genuine friendly service as the other essential parts that make up the whole package. Consistency is the key and maintaining it is a constant challenge as the industry progresses and diner’s tastes

and expectations change. Simon has seen significant growth in revenue while managing Morton’s in Macau and is aiming to replicate this success in Hong Kong. He feels that the success has to come from the team. Hence, he is always striving to improve the team members, be it in the kitchen or front of house by providing training that can allow his team to develop and provide opportunities. As Simon put it: “The stronger your team, the stronger your business will be”.

True to Itself As the General Manager of a steakhouse it was only fitting to ask how Simon likes his steak. Medium rare with a warm red centre was the answer. Whilst this was his preference, it did not mean that this is how a steak should be eaten which is often a topic of discussion. Simon’s view was that it is the individual’s taste and their preference that counts. He simply would like the guests of Morton’s to enjoy their dining experience. That said, he is more than happy to guide ‘but not influence’ providing recommendations depending on the cut of beef. Simon would like to see a second outlet in Hong Kong and continue to maintain the consistent qualities and standards ensuring Morton’s remains a reputable leading steakhouse in Hong Kong. The Coffee Academics A native of Hong Kong, Jennifer Liu is a conscientious, independent woman who has followed her dreams and passions to turn them into a successful business. Having travelled extensively, studying in a boarding school in Toronto, Canada then in New York for five years for a degree in Architecture, Jennifer returned to Hong Kong of work. It was during the dot.com boom of the early ‘noughties’ that Jennifer first entered the foray of business starting then selling an internet business before leaving Hong Kong once again for Europe. It was in Europe that Jennifer would gain the inspiration for her current business.

What she realised was that Hong Kong was lacking in the European style of coffee shops and also coffee drinking was in its infancy and people were not as educated in the art of coffee. Hence, after spending time researching in Italy, she began her journey into the coffee business where caffè HABITŪ was first founded. However, shortly after their 15 outlets became popular with loyal customers, the pure enjoyment of a coffee shop and affixed preferences from customers could only lead to the birth of The Coffee Academïcs (TCA) which sees a breakthrough from coffee consumption to coffee edification.

Ethical and Educational The concept of TCA is not just about providing a social environment to drink coffee but to provide a complete service where Jennifer and her team can educate people in the whole process from the coffee bean to the coffee cup. Her team, noteworthy enough, is comprised of young, creative individuals that constantly offer innovative ideas that will create and accentuate the vibe of TCA’s coffee culture. Their venues provide regular sessions on roasting and blending with a food menu that has specific items such as Spanish churros with TCA house blend ice cream

and many more snacks to complement the particular coffee. “Coffee is very much like wine, just as French wine matches better with French food, coffee beans grown from a certain area is best paired with foods produced within the region,” explained Jennifer. “This is because the climate and soil plays an integral part to the taste of food.” From her days studying where her fellow students were advocates of ‘going green’, Jennifer was very much influenced by this approach in life and as such has transferred this to her business today. Jennifer proudly spoke of the fact that they grow their own mushrooms out of coffee residue served on their breakfast menu and source organic and fresh produce.

Back to Basics Jennifer’s team has been very clear in their objective to target a specific audience and maintain the correct basics so as not to lose their identity amongst the many coffee chains in Hong Kong. Her team as a birthday gift created the ‘JWF’ blend as a personalised coffee blend that encapsulates the personality, identity and essence of Jennifer. Currently sold in their outlets, her team hopes that coffee drinkers will get a sense of what Jennifer represents. A unique way of serving the JWF blend is through ice drips, a method that infuses ice and coffee where the consumer can taste the true art of roasting and the quality of the beans without the camouflage of milk and sugar.
