While I was writing my notes to you today, hundreds of Sandhill Cranes flew overhead in the crisp air, bugling loudly as they headed to locations further south. Their annual migration al ways sends me outside to watch and listen, and reminds me that the seasons are changing and the holidays are upon us.
I hope you’ll find some time to be mindful of the world around us as the season unfolds. There’s still lots to explore in our gardens, parks, forest preserves and other natural areas. Despite the whirlwind of our to-do and places-to-go lists, the wheel of the year turns once more, allowing us to close another chapter of our lives with grace. If we take a breath, we might notice December’s invitation to kick off our shoes, curl up in our favorite chair and drop down into our heart space.
Whether we light scented candles for ambience, drink cocoa while sitting around a bonfire or continue time-honored spiritual customs, welcoming the light can ignite hope when we need it most. By cultivating the inner sun, that place deep within us that blazes with resilience and plenty, we not only fortify ourselves, but everyone around us. Throughout the year, many of us invest in making healthy choices, but neglect soul sustenance. Swap ping trivial distractions for more face-to-face conversations, answering someone’s forgotten email or bringing a homemade pot of soup to a neighbor that is busy packing for a move creates a feast of light during all seasons.
“Thousands of candles can be lit from a single candle,” wrote Gautama Buddha, and perhaps we would be astounded to see how far the smallest gesture can travel. Inviting a friend that has no family to a holiday dinner or out for coffee, spending more quality time with a child or buying a gift card for the receptionist at the dental office begets a chain reaction of small joys. When we fill our bellies with everyday magic, slow down to finish a cup of tea, turn off the news and notice the crescent moon nestled in the twilight, we become more inclined to feel blessed.

Two Evening Recreation Options at Lake County Forest Preserves
Hikers, skiers and snowshoers can take an evening excursion on solar-lit trails in the forest preserves along the 1.3-mile fitness trail at Old School Forest Preserve, in Lib ertyville, and a 1.65-mile hilly section of the Millennium Trail adjacent to the winter sports area at Lakewood Forest Preserve, in Wauconda. Park at the Lakewood Winter Sports Area on the east side of Fairfield Road south of Route 176 or at the Old School main entrance lot on the east side of St. Mary’s Road, also south of Route 176.
Angelo Kyle, president of the Lake County Forest Preserves, says, “Walking the trails after the sun goes down is a nice way to gain a different perspective of the forest preserves.”
Regular preserve hours are 6:30 a.m. to sunset, but the illuminated trails and adjacent parking lots will remain open until 9 p.m. daily through March 12, 2023. The solar lights serve as a guide along the trails, but it is recommended to bring a flashlight or headlamp for additional illumination. Bicycles and horses are not permitted on the solar-lit trails after sunset. Dogs are allowed, but must be leashed. Rangers regularly patrol the areas.

Gemz and Boardz Café Opens in Chicago’s Avondale Neighborhood
Gemz and Boardz, a 90s-themed café, has opened in its new location at 3101 West Montrose Avenue, in Chicago’s Avondale neighborhood, selling crystals, jewelry, skateboards and skate board parts, with coffee which is included in one of their member ship plans. Their natural products include soaps, deodorants and skin care.
They plan to host events such as sip and paint events, pop-up shops, game nights and more, as well as renting out space for private events. Gemz and Boardz Café is a community space with a co working area where people can conduct business or do schoolwork.
Monthly memberships and daily passes are available. Coffee and tea is sold to brew at home. The venue also showcases work by local artists and vendors.

The McHenry County Conservation Foundation was awarded a $25,000 grant for Glacial Park prairie restoration by the Fairways Foundation. The funds will be combined with a prior $10,000 Enbridge Fueling Futures community investment grant to assist with restoration efforts on 21 acres at Glacial Park, in Ring wood, by purchasing rich and diverse native seed mix to convert land from row crops to high-quality prairie grassland
The project will restore habitat com munities to support grassland bird species and threatened or endangered species, including the monarch butterfly and the rusty patched bumblebee. At 3,439 acres, Glacial Park is one of the largest contiguous areas of publicly managed land in McHenry County.

Serotonin Theory of Depression Debunked
The idea that depression is caused by a chemical imbal ance specifically, a serotonin deficiency has been pop ular and influential since the 1960s, leading to the wide use of antidepressants. A recent multi- institution study led by the University of Reading, in the UK, and published in Molecular Psychiatry has debunked this theory. The researchers did a systematic review of studies on the topic and found no convincing evidence of an association between serotonin and depression, and no support for the hypothesis that depression is caused by lowered serotonin activity or concentra tions. The serotonin theory of depression has historically provided convincing justification for the use of antidepressants and may discourage people from discontinuing treatment, potentially leading to lifelong dependence on such drugs.
Under-Appreciating the Benefits of Solitude
Getting lost in our thoughts may improve problem solving, increase creativity, enhance imagination and provide a better sense of self-worth. But in the digital age, with imme diate and satisfying input at a finger’s tap, it is possible to be “solitude deprived,” says Cal Newport, a computer science professor at Georgetown Uni versity and author of Digital Minimalism.
In a recent study in the Journal of Experimental Psychology, psychologists asked a group of more than 250 university stu dents to sit and wait in a quiet room without doing anything. Researchers found that the students under-appreciated their enjoyment and engagement of “just thinking” and instead favored technology-driven distractions like internet news-checking. The results suggest an inherent difficulty in accurately assessing how engaging just thinking can be, and may explain why people prefer keeping themselves busy rather than taking a moment for reflection and imagination in their daily lives.

Morton Arboretum Going Solar
The Morton Arboretum has entered into a 30-year power purchase agreement with a subsidiary of NextEra Energy Resources to in stall a two-megawatt onsite solar array anticipated to meet 100 percent of the organization’s annual electricity needs beginning in 2023. Construction is scheduled to begin in spring 2023 and be completed next fall, and will produce about 3 million kilowatt
hours annually.

With its modern take on Old World alchemy, Philosopher’s Stone Apoth ecary is a place for physical healing, therapeutic counseling and spiritual growth. The center in Arlington Heights combines alternative services and holistic healing products to help cli ents reach optimal mental, emotional, physical and spiritual balance. Owner Virginia Gullo-Ciaccio strives to make everyone feel supported on their healing journey. “It’s a place for the community to come together and learn from one another,” she says.
Gullo-Ciaccio draws inspiration for the center from her Italian roots. “Growing up in a close-knit Sicilian family, I developed a deep respect for holistic remedies. Our ancestors worked in tandem with an inherent understanding of the natural envi ronment. They passed on the basic knowledge that organic foods, herbs, essential oils and precious stones contain preventative and curative properties that can be alchemized and used for natural healing,” she explains. As an adult, Gullo-Ciaccio naturally gravitated toward homeopathy and other alternative remedies. She was looking to add a passion project to her career as an attorney and opened Philosopher’s Stone Apothecary last May to share her love of holistic healing with the community.

Workshops and special events help clients explore their healing journey even further. The center offers one-time and multi-session classes in various topics, including Yoga w/ Journaling, Akashic Records Reading, Aura Photography and Sleep Coach ing. While some of these events are tailored toward individuals or small groups, there are also free commu nity classes for a larger group to get together.
“Opening our space for a weekly community healing circle was import ant to help our clients connect with themselves and each other. We started with a meditation circle and recently added a reiki circle that has been well received. These classes reinforce the healing power of vibrations and allow us to build off each other’s energy,” says Gullo-Ciaccio.
The center is a hybrid retail boutique that also offers various healing services. Clients can choose acupuncture, reiki, yoga, meditation, life coaching and somatic healing in one location. The practitioners also specialize in herbal medicine, human de sign readings, and nutrition and hydration coaching. “Having all the resources in one place and specialists who can complement each other makes it more accessible than hand-picking different treatments. The acupuncturist is more inclined to recommend reiki to a client if it’s also offered onsite. Clients feel supported and can try out modalities they might not otherwise have been exposed to,” says Gullo-Ciaccio.
For those looking to extend their healing practice at home, Philoso pher’s Stone Apothecary has a selec tion of unique products to enhance the experience. The specialty store includes a carefully curated collection of essential oils, salts, incense, sage, candles, teas, herbs, spices, stones, crystals and jewelry. “While our products are all the finest quality, we strive to keep them accessible. Clients can walk out with a $15 bracelet or a stone for a particular ailment without making a huge financial investment,” Gullo-Ciaccio stresses.
The ancient wisdom of an apothecary reminds us to slow down and stay grounded amid the chaos of the modern world. “Our society relies too heavily on external cues for approval and acceptance. It’s easy to lose your true sense of self and feel iso lated. We stress to our clients that real healing starts from within when we stay grounded and listen to our inner guidance. The traditional understanding of alchemy accentuates the belief that, ‘To heal is to evolve, and to evolve is to heal.’ If we can take that positive vibration out into the world, we’ll all be better off,” says Gullo-Ciaccio.

Transforming Our World WORKING TOGETHER FOR MEANINGFUL CHANGE

W ith all the chaos occurring in the world today, it is challenging to remain centered and not feel overwhelmed. Every shocking headline seems to pull the proverbial rug out from under us. Thought leader Laureen Golden explains the dilemma this way: “Psychologically, we were raised, educated and socialized in a world that no longer really exists. We have a new world that we must navigate, and we need a new psychology, a whole new way of being for that world. Reducing, compartmentalizing, separating things in order to understand them no longer works for us. It’s going to take work to get out of this paradigm.”
Drawing from her background in education and social work, Golden ponders, “How does that new psychology develop when
all our institutions charged with cultivating consciousness— schools, families, religious institutions and organizations—are set in the 19th and 20th centuries? Since learning is how we go from one paradigm to another, where do we go to learn the skills and the structures we need to be successful in such a complex world? We can’t do it individually. We must learn in collectives.” The paradigm shift envisioned by Golden offers an opportunity for us to access innovative methods of learning, discovery and connection, such as sociocracy (a self-governance system based on the equality of its members); systems thinking (an approach to complexity that looks at the whole and analyzes relationships, rather than splitting it into smaller pieces); permaculture (ex

ploring natural ecosystems as a whole); circle methods (thinking things through as a group); and Indigenous wis dom (focusing on the inter connectedness of all things).
All of these methods focus on an ethos of collaboration and teach us how to discern wisdom, which is different than knowledge. By engaging in these conversations and explorations, we learn that if we tug on any one part of the web of life, we tug the whole web—an important analogy for our times.
A BELOVED COMMUNITY CO-CREATING AN ISLAND OF SANITY THROUGH COLLABORATION
Instead of shouting, “The sky is falling, and the seas are rising,” in response to a world that is unraveling and expe riencing the growing realities of global warming, residents of St. Petersburg, Florida, are embracing resilience. To prove that the future is born in webs of human conversation, the city is counting on collec tive intelligence to emerge.
Among the tools city partic ipants are employing is The World Café, developed by Juanita Brown and David Isaac, which allows people to host group conversations around thoughtful questions. The concept is designed to evoke deeper listening and give rise to solutions for today’s challenges in a more conscious, intentional and stra tegic way. Forty citizens have taken The World Café facilitation course. Employing a simple and flexible format for hosting large group dialogue, this methodology enables participants to clarify the context, create hospitable space, explore questions that matter, encourage everyone’s contribution, connect diverse perspectives, listen together for patterns and insights, and share collective discoveries.
Other important work being applied is that of bestselling author and longtime community organizer Margaret Wheatley. Her train ing, which is designed to cultivate what she calls “Warriors of the Human Spirit,” arouses people’s inherent generosity, creativity, compassion and need for community. Known as a big-systems thinker throughout her 45-year career, Wheatley has concluded that the only opportunity for change is at the local level. Questions
that encourage collective learning became integral to creating cohesiveness in St. Petersburg this year.
Dr. Donella Meadows’ “systems thinking” has helped St. Petersburg participants understand that living systems begin as networks, shift to intentional communities of practice and evolve into powerful systems capable of influence. Also instructive has been “complexity theory”, which helped participants recognize human systems as organizations, families and communities.
“The city leaders felt conversations were important enough to invest $20,000 to cultivate a culture of conversational leader ship in the neighborhoods. Another $25,000 was granted by the Community Foundation of Tampa Bay to research the outcomes. Now, the Florida Council of Churches, University of South Flor ida, Community Foundation of Tampa Bay and The Connection Partners have received a Community Vibrancy grant of $14,500 to pilot conversations in three neighborhoods, spreading the skills in creating participatory democracy. Participants will host conversations in their own neighborhoods,” says St. Petersburg resident Sharon Joy Kleitsch, founder of The Connection Partners and a longtime catalyst for applying strategic actions based on the new sciences of complexity theory, strategic thinking and quantum science.
“Those who have used World Café as a tool know that a culture of conversation al leadership offers citizens the opportunity to experience a sense of oneness and connect edness. We’ve explored what happens when we share feelings of care, compassion and appreciation toward a beloved community,” says Kleitsch. “We found that group resonance, profound person al involvement and deeply engrossing, interactive conversation supports a City of Compassion and an International City of Peace, which St. Petersburg was chosen to be. I want to be sure that people understand that we do not have answers. Together, we are exploring pathways and listening for the answers to emerge.”
Since 2020, a thoughtful ly selected group of Florida activists—including partici pants from St. Petersburg— have been holding weekly online Zoom conversations that matter. In 2021, they were joined by participants from Ohio to study

“What we discovered after only two weeks was that we were ourselves a living sys tem connecting to itself and becoming self-organized,” says Kleitsch. “We became aware that we were learning together. We were sharing what we were learning around subjects such as honoring In digenous peoples, local food systems, the human right to clean water, reimaging capitalism and many more subjects. We’ve also bifurcated into a Sarasota [Florida] cohort. The key is, we were not random. We were a self-selected study group learning collaboratively, which is the best way I recommend activ ists study the Capra Course.”
Argerie Vasilakes, who is researching outcomes, explains that her work is ded icated to helping teams, com munities and organizations become more coherent. “I start with traditional ways of thinking about our relation ships with nature that native peoples have never forgot ten—humans are part of na ture, not apart from nature,” she explains. “To me, human organizations, communities, families and governments are also part of nature and examples of natural ecosystems. So, I naturally look at things from a living systems perspective.”
Vasilakes advises, “In a group that is learning together, such as those in the St. Petersburg neighborhoods, group con versations organized around questions specifically crafted for the context and desired purpose of the World Café evoke a deeper kind of listen ing, the most important factor determining the success of a Café. They spark learning conversations that can pro duce insights and innovation for meeting the challenges they face. Through practicing shared listening and paying attention to themes, patterns
and insights, participants begin to sense a connection to the larger whole.”
According to Wheatley, the important work is to fos ter critical connections. She believes it is not necessary to convince large numbers of people to change; instead, she suggests we connect with kindred spirits. THE HEALING POWER OF SOUND

F or centuries, humans have employed sound in an attempt to heal and cure. The ancient Greeks believed in the power of music, using flutes, lyres and zithers to treat illness and vibrations to alleviate mental disorders. Even today, military bat talions play music to boost morale.
“ Research shows that vibrations are the language of the body,” says Kyle Godfrey-Ryan, the founder of TUNE, a New York-based tech system designed to recalibrate the nervous system with sounds. “When we work with sound, we’re working with vibrations that can rebalance the nervous system and flood the body with endorphins.”
According to Susy Markoe Schieffelin, a healing practitioner at The Copper Vessel, in Los Angeles, “Sound vibrations work on a cellular level to recalibrate the body. Sound shifts vibrations in the body, both through entrainment—a process by which the vi brations of one object transform to match the higher vibration of another object—and by stimulating electric signals in the brain that support healing frequencies.”
Studies suggest that sound vibrations can unlock energy blockages, release tension and create calm and focus. For this reason, sound healing is frequently prescribed to manage conditions like anxiety, depression and post-traumatic stress disorder. Some practitioners also report anecdotal metabolic improvements, from lower blood pressure and decreased cholesterol levels to improved sleep.

Sound healing can take many forms, and each type has specific applications. For example, Schieffelin explains, “Gongs and Ti betan bowls are very clearing and grounding, while crystal singing bowls feel more uplifting and elevating.” It is up to the individual to find a style that works for them and their intended results.
SINGING BOWLS
Originating in 12th-century Tibet, these metal bowls come in different sizes, each producing a specific sound vibration that is said to work on a particular part of the brain or body. Several-sized bowls often are used together to create a holistic healing ap proach. They can be placed directly on parts of the body to stim ulate circulation and relax muscles. Singing bowls made of pure crystal quartz are popular for their pure sounds, and are believed to offer stress reduction, chakra balancing and mental clarity.
GONGS
Used in heal ing since about 4,000 B.C., gong baths, which combine different tones and melodies to fashion multi faceted vibra tions, may pos itively influence the mind and body by stimulating the vagus nerve. Godfrey-Ryan advises, “Gongs are amazing for trauma release, but gong work is very heavy, so if you’ve never played with sound before, this will be really intense.”
VOCAL TONING
Numerous cultures— from ancient Egyptians to Tibetan throat sing ers—have their distinct forms of vocal toning. Hindu mantras can be especially powerful for some people because they harness the energy of specific words and in tonations. Among prac titioners, seven distinct tones have been linked to specific parts of the body. It is believed that these vibrations can balance the body’s cells and open energetic healing, leading to targeted benefits.
TUNING FORKS
While mu sicians use these devices to ensure that their instru ments are set to the correct pitch, they also can be held next to specific parts of the body by individuals seeking healing vibrations, emotional balance and pain relief. “Tuning forks are fun because you can have a very strong somatic reaction within a few seconds—they’re very powerful,” notes Godfrey-Ryan.
SOLFEGGIO FREQUENCIES
Solfeggio frequencies are musi cal tunes or sound patterns designed to stimulate the brain by syncing brain waves to specific
healing frequencies. Each of the seven most popular solfeggio frequencies sets out to target a certain purpose, from improving relationships and awakening intuition to navigating change and letting go of fear.
BINAURAL BEATS
Binaural beats are soundscapes that create a gap between different frequencies. For example, the tune might have a tone of 210 Hertz (Hz) in the left ear and 200 Hz in the right ear, pro ducing an illusory tone of 10 Hz, also known as a binaural beat. Brainwaves are thought to automatically align themselves with this auditory tone, which may be useful for improving focus and reducing stress.
Sound healing is finding a permanent place in modern wellness culture as more people experience its rewards. While there are myriad ways to use sound vibrations for healing purposes, it is up to each individual to find the style that resonates with them and achieves the improvements they seek. With regular practice, they may even find relief that is cumulative and long-lasting.

Somatic Practices for Healing Trauma

Eastern cultures and ancient healing prac tices have long recognized the energetic connection between the mind and body, and in recent years, Western society has been moving toward acceptance of the mind-body connection. Many researchers recognize the importance of healing trauma on a somatic, or physical, level. Current re search within the fields of psychology and neurobiology acknowledges the impact psychological stress and trauma have on our bodies as far back as the moment we begin to develop in utero
Psychiatrist Dr. Bessel van der Kolk defines trauma as exposure to an event that overwhelms the central nervous sys tem. When individuals experience trauma, physiological survival mechanisms such as the fight-flight-or-freeze response
are activated. Lingering effects of these traumatic responses can be stored in the body long after the experience is over and the danger has passed.
Based on a 1993 study on the long-term effects of trauma, the National Center for PTSD explains that trauma can “trigger a cascade of neuronal, hormonal, and immu nologic effects that damage the body over time,” which may lead to chronic illnesses, such as cardiovascular disease, autoimmune disorders, and chronic pain. These effects can be passed down generationally as il lustrated by neurobiologist Dr. Dan Siegel’s research on intergenerational trauma.
During times of stress, such as the holidays, when our fight-flight-or-freeze responses are activated, we need to be aware of how our bodies respond to both
current stressors as well as triggers from past traumas. Once we become aware of our triggers and patterned responses, we can work on changing how we react from a more present and balanced state, emo tionally and physically.
Psychologist Dr. Arielle Schwartz explains that because “trauma leaves wounds on the body, imprints in the psyche and markers on our DNA,” healing occurs when we “attend to the impact of traumatic events on the body.” A somatic approach to healing trauma includes techniques such as increasing body awareness, grounding and repatterning limiting movements.
Here are four somatic practices to add to a healing toolbox to help cope with stress and trauma this holiday season:
BEFRIEND THE BODY
In a world where we are constantly being told that we are not enough, we rarely treat our bodies with the love they deserve. Befriend your body. Become aware of your sensations, physical cues and what your body is telling you. Listen without judgment, as though you are listening to a friend, then meet your needs with a sense of compassion. Self-care doesn’t have to look like a bubble bath. It can be as simple as placing a comforting hand over your heart when you feel upset and telling yourself it’s okay to cry.
FEEL FREE TO DANCE IT OUT
As children, we freely express ourselves through movement. As adults, we learn to sit still and hold in our impulses to move, which disconnects us from our bodies. Tune into your inner child. When you notice you are feeling activated and your body is responding physically to stress, move/ dance/walk/shake it out. When feeling

tense in a meeting or on a call, get up and shake out your legs. If feeling frustrated during traffic, dance to your favorite song. Excuse yourself to go for a walk or stretch in another room when feeling anxious at a family gathering.
CREATE A PHYSICAL SAFETY NET
Develop a ritual that can act as a physical safety net in stressful situations. For ex ample, if you tend to feel anxious during parties, prepare ahead of time by choosing a specific movement to practice whenever you are feeling anxious. This may be mak ing a fist and tensing on an inhale, then exhaling and letting go as a reminder to your nervous system that you are safe.
SEEK OUT HEALING TOUCH
Scientific evidence indicates that physical touch has healing effects on the body due to an increase in feelgood chemicals such as endorphins and oxytocin. Healing touch can include self-touch, as well as physical connection with a pet. This holiday season, give yourself the gift of healing touch: en gage in self-massage, pet your furry friend, hug your loved ones and seek out healing services such as reiki. You deserve it.
Trauma has many lasting effects, in cluding a loss of the ability to feel safe in our own bodies, but there are many so matic practices that can counteract these effects. Physical practices and alternative therapies such as yoga, meditation, dance and reiki can settle the nervous system and help convince the body that the trauma is no longer happening in the present mo ment. These healing modalities can help us reconnect with our bodies, reestablish a sense of safety and ultimately, reclaim our sense of self.

Health Benefits of Feeding the Gut THROUGHOUT
THE LIFECYCLE

Babies are born with a very underdevel oped gut microbiome, but with each day, environmental exposures help shape the bacteria in the gut. In breastfeed babies, human milk oligosaccharides in breast milk, including 2’-fucosyllactose (2’-FL), help promote the development of a rich gut microbiome.
2’-FL is able to evade digestive en zymes in the stomach until it reaches the lower gastrointestinal (GI) tract where it acts as a prebiotic, feeding bacteria in the gut. 2’-FL is uniquely available to beneficial bacteria in the gut—which helps their population flourish and benefits both gut and immune health— and its structure resem bles the structure of cer tain binding sites on cells in the lower GI tract. This allows it to act as a bind ing decoy for biological toxins and other external microorganisms that can disrupt the GI system.
According to a 2016 study published in the British Journal of Nutrition (BJN), breastfeeding in infants has been strongly associated with an increase in populations of beneficial bacteria, due in large part to the high content of 2’-FL. It also is associated with reduced risk of developing lower respiratory tract infec tions later in life, as well as other benefits including healthy brain development and cognition, according to a randomized pla cebo-controlled trial published in 2021 in the journal Microorganisms. For infants that are not breastfed, formula enriched with 2’FL and other human milk oligosaccharides supports the development of the intestinal immune system and gut barrier function, asserts a 2022 study published in Frontiers in Nutrition.
The benefits of 2’-FL extend beyond infancy, promoting the growth of bene ficial microbes throughout adulthood. As per a 2008 article in BJN, it stimulates the development and maintenance of the GI barrier, which can be impaired by stress, antibiotics, and chronic conditions.
In healthy adults, supplementation with 2’-FL was able to positively change the composition of the gut microbiome per the 2016 BJN study. Additionally, in adults with chronic GI conditions, consumption of 2’FL resulted in improvements in symptoms
specific to the intestines as well as more broad symptoms including quality of life, per a an article published in 2021 in the journal Nutrients
2’-FL is a naturally occurring compound in breast milk that jump-starts a baby’s gut microbiome and can help support the gut and resolve gut-related issues throughout life. Supplementation with 2’-FL can help balance the gut microbiome by increasing populations of beneficial bacteria, as well as feed them during times of acute GI stress.

PUT A HEALTHIER TWIST ON FAVORITE RECIPES

When hosting a holiday brunch, it may be tempting to serve breakfast and lunch classics like quiche, eggs Benedict and huevos rancheros, but many of these dishes can be full of hidden calories, un healthy fats and too much sodium. With a few easy modifications, healthier versions are possible.
According to Jessica Levinson, a New York registered dietitian and author of 52Week Meal Planner, it’s important to read nutrition labels, remove empty calories and introduce nutritious alternatives. As an example, yogurt and granola parfaits may seem innocent, but are often loaded with added sugar. “A serving size of most gra nolas is only one-quarter of a cup, which isn’t much, so use granola sparingly,” she says, adding that parfaits made with lowfat Greek yogurt and fresh fruit instead of jam are healthier choices.
Traditional quiches are usually made with heavy cream and a buttery pie crust. Levinson recommends a crustless ve getable frittata instead, as it is naturally gluten-free. “If you don’t want to skip the crust altogether, look for a pre-made, whole wheat crust or make your own,” she says. To eliminate dairy, consider using non-dairy milk and omitting cheese in the recipe.
For eggs Benedict, Levinson suggests skipping the hollandaise sauce, topping the poached eggs with mashed avocado and using a whole grain bread or English muffin for the base. “Instead of ham, try smoked salmon, which has beneficial omega-3 fatty acids,” she says.

Largeman-Roth likes mixing savory and sweet, to add variety and protein to the brunch plate. “Instead of just having a stack of pancakes, split it with your friends or family, and then have a small, veggie-filled omelet. You’ll feel much more satisfied.”
PLANNING THE HOLIDAY BRUNCH SPREAD
When putting together a menu, Levinson advocates incorporating all of the components of a balanced meal: lean protein, carbohy drates from whole grains, fruit and veggies, and low-fat dairy or plant-based substitutes. She says, “If you’re making pancakes or waffles, use whole grain flour when possible, and serve with a side of yogurt, fresh fruit and real maple syrup.”
According to Largeman-Roth, egg lovers will enjoy a veg gie-packed omelet or frittata with either potatoes or bread on the side, but not both. Watch out for fried foods and use sauces and cream sparingly or find substitutes. If the family is dining out, she cautions that brunch dishes are often served with extra sauces and syrups, adding sodium and sugar. “Try to ask for them on the side,” she advises. “It’s not about completely avoiding them, but it’s nice to be able to control the amount that you’re adding to your pancakes or waffles.”

CRANBERRY MIMOSAS
Cranberries put a holiday twist on a classic mimosa. Drier cham pagnes or sparkling wines are lower in sugar. Making cranberry juice from scratch with sweeteners like maple syrup or honey is a natural alternative to commercial cranberry juice. Prepare the cranberry juice the night before serving.
YIELD:
4 TO 8 SERVINGS
4 cups homemade (recipe below) or store-bought cranberry juice
1 cup orange juice
1 bottle drier champagne, such as Ultra Brut Rosemary sprigs for garnish
Fill four champagne flutes or glassware of choice approximately halfway with cranberry juice. Add 2 Tbsp orange juice to each glass.
Top each glass with champagne. Garnish with sprig of rosemary. Refill as desired.

HOMEMADE CRANBERRY JUICE
3 cups fresh cranberries
3 cups water
½ cup pure maple syrup or honey
Put fresh cranberries and water in a pot and bring to a boil. Turn heat to low and simmer for approximately 15 minutes until the berries soften and pop.
Using a fine mesh strainer or cheesecloth, strain the berries and return the juice to the pan. (Use leftover cranberries in smoothies, yogurt or relish.)
Gradually add maple syrup or honey until desired sweetness is achieved. Heat on low until sweetener dissolves.
Pour juice into an airtight bottle and refrigerate.

YIELD: 4 TO 6
SERVINGS
2 Tbsp olive oil
1 cup diced yellow onion
1 Serrano or jalapeño pepper, seeded and minced
1 cup diced yellow bell pepper
1 cup diced green zucchini
1 cup diced yellow summer squash
2 large garlic cloves, minced (1 heaping Tbsp)
1 tsp ground cumin
½ tsp turmeric
1 tsp sweet paprika
26-28 oz diced tomatoes
2 Tbsp tomato paste
2 tsp honey
1 tsp cider vinegar
1 cup corn, frozen, fresh or canned
½ tsp kosher salt
Freshly ground pepper ¾ cup crumbled feta cheese 4 large eggs
Chopped parsley, for garnish (optional) Za’atar, for garnish (optional)
Heat olive oil over medium-high heat in a large skillet (straight-sid ed skillet is preferable). Add onions; sauté 2 minutes. Add Serrano pepper and bell peppers; sauté 4 minutes. Add zucchini and summer squash; sauté 5 minutes. Add garlic, cumin, turmeric and paprika; stir until fragrant, about 1 minute.
Reduce heat to medium and add diced tomatoes, tomato paste, honey, cider vinegar and corn; stir in salt and pepper. Simmer for about 10-12 minutes until the sauce has thickened and reduced.
Turn off the heat and press the crumbled feta into the tomato sauce. With the back of a spoon, make 4 indentations in the sauce. Crack eggs one at a time into a small bowl and pour into each of the 4 indentations. Carefully drag a spatula gently through the egg whites, being sure not to disturb the yolks. Simmer over low heat for about 5 minutes, gently stirring the sauce and basting the eggs with the sauce. Cover and cook another 3 to 5 minutes for runny eggs. Cook longer for well-done eggs.
Serve with a sprinkling of parsley and za’atar, if desired.

SHEET PAN PROTEIN PANCAKES WITH BERRY SWIRL
Cooked on a sheet pan, these pancakes make clean up a breeze and can be prepared the night before. Buttermilk and protein powder add satisfying nutrients.
YIELD: 12 SERVINGS
Cooking spray
2 cups buttermilk
2 eggs, beaten
1 tsp pure vanilla extract
4 Tbsp melted ghee or unsalted butter
⅓ cup maple syrup
1¼ cups whole wheat flour
1 cup all-purpose flour
¼ cup vanilla protein powder
1 tsp baking soda
2 tsp baking powder
½ tsp sea salt
FOR THE SWIRL:
½ cup strawberries
½ cup blueberries
½ cup raspberries
1 tsp brown sugar
Powdered sugar, for topping
Preheat oven to 425 ° F. Line an 11-by-17-inch, rimmed baking sheet with parch ment paper. Spray parchment and sides of pan with cooking spray.
Whisk the buttermilk, eggs, vanilla, ghee and maple syrup together in a medium bowl. Set aside. In a separate bowl, combine the dry ingredients—whole wheat flour and salt. Add the wet ingredients to the dry in three additions until just mixed. Pour into the prepared pan and smooth the top.
Blend the berry swirl ingredients in a blender until smooth. Add ½ teaspoon of water if mixture is too stiff. Add small dollops of the berry mixture to the top of the pancake batter. Drag a wooden toothpick or skewer through the berry mixture to create a swirled pattern.
Place the pan in the oven and bake for 11 minutes, until lightly golden. Let cool for about 5 minutes, then sprinkle with powdered sugar. Cut into 12 squares with a knife. Enjoy warm with maple syrup. Can be stored in the fridge for up to two days.

Squash is a fabulous storage crop that offers filling, sweet, com forting fall and winter fare. When it is the season, nothing makes me happier than the smell of hearty foods roasting in the oven and the bounty that greets me at the table. This stuffed squash works well alongside an invigorating dish like Chicories with Warm Vinaigrette, Spinach and Grapefruit Salad with Toasted Pumpkin Seeds (try using the squash seeds!), Apple and Parsley Salad, or Deep-Sea Purple Kraut.
YIELD: 6-8 SERVINGS
FOR THE FILLING
1 cup dried French lentils
1 cup walnuts
2 Tbsp olive oil
2 cups chopped onion (2 med onions or 3 small)

Begin the filling: Soak the lentils in enough water to cover by 6 inches for 6 to 10 hours. Soak the walnuts in enough water to cover by 1 inch for 6 to 10 hours. Then drain both. Coarsely chop the walnuts.
Preheat the oven to 375° F (190° C).
Prepare the squash: Cut the squashes in half lengthwise and remove the seeds (consider saving them to roast). Rub the inside of the squash with oil and season with salt and pepper. Set the squashes facedown on a baking sheet. Roast for 40 to 55 minutes, depending on the size and shape of the squash, until the thickest part is just fork-tender. (If you cook it too long, the squash meat will start to separate from the skins, which will make it a little harder to serve.)
Meanwhile, continue the filling: Combine the lentils in a saucepan
with enough water to cover by 1 inch. Bring to a boil, skim any foam off the top, then reduce the heat and simmer for 2 to 3 minutes. Turn off the heat, let sit for 15 minutes, and then drain; this “steeping” will help the lentils absorb water and continue to cook without getting mushy or falling apart.
Warm the 2 tablespoons oil in a large skillet over medium heat. Add the onion and sauté until soft, about 5 minutes. Add the sage, thyme, rosemary and chopped walnuts, and cook until the fresh sage leaves turn bright green and aromatic or until the dried herbs are aromatic and tender, 1 to 3 minutes. Remove from the heat.
Drain any liquid from the roasting pan and turn the squash halves faceup. Scoop a bit of the squash from the neck to create more room for the stuffing. Dice that bit of cooked squash coarsely—it will be very soft, but cutting it will help make mixing it into the stuffing easier.
Combine the lentils with the onion mixture and season generously with salt and pepper. Stir in the diced cooked squash and cheese until just combined. Spoon the stuffing into the squash. Bake, un covered, for 15 minutes, or until the stuffing is hot through. (If you like, the squash can be stuffed ahead of time and baked just before serving.) Garnish with paprika and fresh sage leaves, if desired. Serve hot. I like to let people eat it right out of the skin, although sometimes the skin is tender enough to eat, too.

With the season of celebrations upon us, this easy recipe can be made both gluten-free and vegan, or customized for the occasion. After a sa vory dinner or holiday lunch, the Holiday Butter Board is a heart-healthy snack with a bit of sweetness, which pairs perfectly with a warm cup of dark, organic coffee.
YIELD: ABOUT 8 SERVINGS
1 pkg cream cheese or vegan cream cheese
1 Tbsp honey
½ cup pomegranate seeds, fresh ½ cup raspberries, fresh ½ cup blackberries, fresh ¼ cup almond slivers
2 Tbsp cacao nibs or mini chocolate chips
1 box gluten-free graham crackers and/or biscotti
Spread the cream cheese artfully onto the board, sprinkle with fresh fruit, drizzle with honey and sprinkle with almonds and cacao nibs.
Carefully leave one corner of the board empty for the crackers and bis cotti. Add any festive decorations to the board.
Serve as an appetizer or after-dinner snack, gently using the cracker or biscotti to scoop the filling off the board.

T eaching children the value of generosity and kindness is not just good for the world, it is good for our kids, too. Studies have shown that acts of altruism can boost the immune system, lower blood pressure, increase self-esteem, reduce depression and lower stress levels. Selfless contributions also can foster a sense of belonging, whether they are donating material things, sharing their time or freely conveying love and kindness. A magnanimous child is repaid with benefits that nourish the body and soul.
EMPATHY AND MIRROR NEURONS
To transform children into givers, they need to learn how to share and comprehend other people’s feelings. Known as cognitive empathy, it involves understanding another person’s emotions on an intellectual level, taking into consideration their situation and
anticipating how they might react.
Since the 1990s, scientists have been researching mirror neurons which respond to actions that we observe in the same way as when we actually perform those actions ourselves. These neurons play a consid erable role in the development of speech, language, learning, emotional intelligence, empathy and understanding, so children need to see and receive acts of giving and love to become givers themselves.

GIVING HEALS
With mental health conditions in children on the rise, charitable behavior can improve their mental well-being and help them secrete “feel-good” chemicals in the brain like oxytocin, dopamine and serotonin. “I think helping our kids experience the happiness that comes from giving to others is probably one of the most valuable ways we can nur ture generosity in them,” says Lara Aknin, an assistant professor of psychology at Simon Fraser University, in Canada. “It sets off this positive cycle. Giving makes people happy and happiness promotes giving.”
Functional MRIs of people that donate to charities have shown that the act of giving stimulates reward centers of the brain where endorphins are released. These hormones lower cortisol, improve blood circulation, lower blood pressure and heart rate, improve

Volunteering makes an immeasurable difference in the lives of others and creates a sense of purpose in the person doing it. Science has shown that engaging in volun teer work can decrease depression, reduce stress, increase longevity and help the person stay mentally and physically active. Volunteers get to meet others, develop new relationships and strengthen existing relationships with those that have similar goals and interests. There are many oppor tunities for children and parents to volunteer through school, religious and nonprofit organizations.
RANDOM ACTS OF KINDNESS AND GENEROSITY
Random acts of kindness and generosity include smiling, holding the door open for someone and reaching out to loved ones. Include a child in these activities and en courage them to do the same. “When you see your children being generous, point it out and praise them,” recommends The Center for Parenting Education. “Help them put into words the positive feelings they may have as they help others.”

The study also found that even in cases where people previously experienced mental health problems, social support was beneficial for mental health later on.
Love and secure attachments, such as those experienced through acts of giving, strengthen the body; help regulate emotions, attention and behavior; mitigate the effects of stress; and promote lifelong, healthy development.
The most important ingredient to develop a child with a healthy brain and body is love. Children need positive experiences for pathways in their brain and body to work. Developing em pathy for themselves and others increases emotional strength and self-regulation. Improve the life of a child—phys ically, emotionally and spiritual ly—by teaching them the simple of act of giving.

As we indulge in magnificent feasts and open gifts in cozy living rooms, let’s pause to express gratitude for all that we have and look for ways to help those less for tunate. ADOPT A FAMILY
Find a nearby impoverished family that could use a houseful of gifts, including toys, blankets and warm clothes, then do a little shopping and make their holiday dreams come true. Local social service agencies can help identify the lucky family.

Spend an afternoon making holiday greeting cards to warm the hearts of lonely seniors, U.S. armed service mem bers and children in hospitals battling serious illnesses. This is a great activity to do with kids—teaching them important lessons about kindness and generosity. EASY-TO-MAKE FESTIVE RECIPES TO DELIGHT PETS

The holidays are a great time to connect with loved ones, in cluding family pets. Although treats bring such joy to their lives, keep in mind that not all foods around the holiday table are safe for dogs and cats. There are, however, plenty of pet-safe ingredients, some of which are actually beneficial.
Cranberries, for example, have been classified as a “super food”, which means they provide many beneficial nutrients and antioxi dants, such as vitamins C, E and K, plus manga nese. They are also high in fiber, which supports gut health. When feeding them to a pet, it is important to choose 100 percent cranberries that do not contain any sugars or preservatives.
When cooking up a batch of pet treats, coconut flour is healthier than the traditional, all-purpose flour, because it contains more fiber, protein and healthy fats. It is also gluten-free, making it a better alternative for pets with allergies.
Beef gelatin is chock-full of health benefits for pets, as it contains amino acids that help break down food, repair body tissue, support the immune system and provide energy. Among its numerous advantages, gelatin strengthens bones, muscles and cartilage, while also improving gut health, skin and fur. Always check the ingredient list. Use 100 percent gelatin and make sure there is nothing else included, especially Xylitol or birch sugar.
Sweet potatoes provide a wealth of nutrients from which both dogs and cats can benefit. They are a good source of fiber and high in antioxidants, including beta carotene, which is rich in vitamin A and supports good cognition and lung strength.
Turkey breast supplies a wide range of B vitamins, including B 6 and B 12 . It also provides iron, potassium, zinc and selenium, which help support a healthy immune system.
All of these treats make great pres ents. Place them in a decorative container and gift them to pet-loving friends and family.

SWEET POTATO GUMMIES
This recipe is cat-friendly, but a kitty may not dive into the delight.
YIELD: DEPENDS ON MOLD SIZE
3 cups water
½ cup sweet potato
3 Tbsp beef gelatin
Silicone molds and cookie sheet
Measuring cup with a spout for pouring
Boil 2 cups of water. Remove the skin from a sweet potato. Dice the sweet potato and place ½ cup into the boiling water. Boil until the sweet potato is soft and then drain
it. Mash the sweet potato into a smooth consistency and set it next to the stove.
In a small saucepan, boil one cup of water. Once the water reaches a boil, quickly whisk in the gelatin. When the gelatin is dissolved, lower the heat and add the mashed sweet potato and stir over the heat. Pour the mixture into the measuring cup. Then quickly pour the hot liquid into the silicone molds. Don’t fill to the top. Because many silicone molds are floppy, place them on a cookie sheet prior to filling them.
The molds will need to be refrigerated to cool, so find a spot before pouring. Be ready: The gelatin will start to set up very quickly. Carefully place the molds into the refrigerator to set up for approximately three hours.
Remove the treats from the molds and break them into bite-sized pieces before feeding to pets. Store the gummies in a glass container in the refrigerator for up to three days or freeze until ready to serve. Thaw completely before serving.
HEALTHY CRANBERRY MUFFINS
FOR PETS
These muffins are full of flavor and nutrition, and are healthy for both dogs and cats, although a finicky cat may turn her nose up to them.
YIELD: VARIES
1 cup coconut flour
5 eggs
⅓ apple or ⅓ cup diced apple ⅓ cup liquid (water, or bone broth)
2 cups water
¼ cup cranberries
2 Tbsp melted coconut oil
1 tsp baking soda
Preheat the oven to 350 ° F. Rinse the fresh cranberries under cold water. Place 2 cups of water into a saucepan and bring to a boil. Place the clean cranberries into the water and boil until they pop, approx imately 5 minutes. Remove from heat and strain the cranberries. Set the cranberries aside to cool.
Remove the seeds and core from the apple. Dice ⅓ of the apple into small bits.
Mix the flour, eggs, apple, ⅓ cup liquid, melted coconut oil, cooked cranberries and baking soda in a large mixing bowl until well-blended.
Grease a muffin tin with coconut oil. Fill the muffin tins ⅔ full and place them into the oven. Bake for approximately 25 minutes or until a toothpick comes out clean. Carefully remove and place on a cooling rack. Serve as a special treat.
Place treats in a glass container and refrigerate for up to three days or freeze until ready to serve.Thaw completely before serving.
EASY TURKEY JERKY FOR PETS
This easy turkey recipe will have felines purring with delight. It’s a healthy snack for a cat and a great dog-training treat for the clever pooch.
YIELD: VARIES
Fresh, boneless and skinless turkey breast
Thinly slice the turkey breast into strips—the thinner, the better. Place strips on a dehydrator tray. Do not overlap the strips. Dehydrate at 145° F until the turkey is crispy, which can take between eight to 12 hours.
Allow the turkey to cool completely be fore removing it from the trays. Break into little bite-sized treats for cats and dogs. Store the jerky in a glass container in the refrigerator for up to a week or freeze until ready to serve. Thaw completely before serving.

T he holidays are upon us, and that means decking the halls, gath ering with loved ones, exchanging gifts and treats—and creating a lot of waste in the process. From Thanksgiving to New Year’s Day, Americans throw away 25 percent more trash than at any other time of year. That’s 1 million extra tons each week, primarily due to waste from holiday gifts and décor. Fortunately, there are ways to cut down on consumption to lessen the environmental impact of the holiday season without sacrificing any joy.
SAVOR LOCAL FARE
Ditch grocery store lines and instead shop for the holiday meal at a nearby family farm. By participating in the local food move ment, we will not only enjoy fresh, seasonal ingredients while
supporting the local economy, but also sustain farms that build soil health, promote animal well-being and offer a more delicious and nutritionally superior final product. Purchasing food directly from farmers also eliminates the extra packaging and the carbon footprint of transportation that comes with store-bought goods.
In addition to offering fruits and vegetables for holiday pies and soufflés, regional farms can also be good sources for locally sourced grains, holiday meats, baked goods and cheeses. Fes tive cocktails can be purchased from a neighborhood distillery, brewery or winery, many of which source their ingredients from local farmers.

When it’s not possible to gift an experience, shop locally for gifts made of natural materials, such as a beautiful, wooden, cutting board, a cozy pair of wool socks or a piece of pottery handmade by local artisans. Christmas stockings can create unnecessary waste for the sake of filling them to the brim. Try replacing plastic odds and ends with fruits, nuts or handmade treats like cookies or granola for more sustainable—and tasti er—stocking stuffers.
Instead of using unrecyclable gift wrapping paper, switch to a recycled alternative or wrap gifts in pieces of fabric, newsprint or kraft paper that can be repurposed or recycled. To eliminate shopping and wrapping altogether, give the gift of an experience, which allows loved ones to create lasting memories. Cater experiential gifts to the needs and wants of the recipient. An exhausted new parent will appreciate a restaurant gift certif icate or a coupon to pay for a babysitter. Give the budding golfer lessons with a local pro, the theater lover tickets to an upcoming show and the selfless caregiver a spa treatment to help them feel pampered and refreshed. For the person that seems to have everything, make a donation in their name to a worthy cause that matters deeply to them.

DECK THE HALLS
For the most sustainable holiday tree, opt for a potted or locally cut, native choice. Live trees protect the soil, serve as wildlife habitats and filter the air during the six to eight years they’re growing. They also create local jobs. After the holidays are over, the potted trees can be planted. Cut live trees should either be mulched or recycled, rather than thrown in a landfill.
MERRY AND BRIGHT
Making just a few simple swaps in gifting, feasting and decorat ing will ease holiday consumption and lessen its environmental impacts without subtracting any of the joy.

Holiday Reads for Nature and Environment Lovers

When David Lambe recently signed his new book, Now is the Time for Trees, at The Book Stall (TheBookStall.com), in Winnetka, the store was crowded. “We sold lots of books,” says sales associate Amy Anderson. “Some of the autographed copies of his books are still available for purchase. They would make great holiday gifts.”
Anderson and other local book purvey ors know the kinds of books nature lovers and environmentalists read. Here are some suggestions from Chicago area experts to purchase for friends and family during the holiday season.
Lambe is the chief executive of the Na tional Arbor Day Association, which published Now is the Time for Trees earlier this year. He and co-author Lorene Edwards Faulkner write about why planting trees is important in the 21st century. They also offer advice on ways to choose and plant trees (ArborDay.org/timefortreesbook).
Anderson also recommends The Tree Book, The Stories, Science, and History of Trees, published by DK in May 2022 (dk.com). The book features drawings, photos, identification tips and stories of trees around the world, including coast redwood and quaking aspen. As of January 2021, the publisher has pledged to use paper and paperboard that is Forest Stewardship Council-certified in making its products.
The Book Stall also recommends on its online holiday list for gift-giving Extinction: Our Fragile Relationship with Life on Earth, by Marc Schlossman. Published by Ammo nite Press in September, Extinction explores endangered and extinct species by going behind the scenes through the natural history collection of The Field Museum, in Chicago. “We think these are important, interesting books, based on what we’ve sold in the past,” Anderson says. “If you’ve got someone on your gift list who cares about the environment, these are good options.”
Chris Mahin, manager of Barbara’s Book store ( BarbarasBookstores.com ) on State Street, in Chicago, recommends Extreme: An Anthology for Social and Environmental Justice Published by Vagabond Books in late 2018,
the anthology celebrates the 50th anniversary of Earth Day in 2020. Edited by Mark Lipman, it is a collection of poems written by 82 authors worldwide, along with color photographs and drawings. Mahin attended the book’s launch in Los Angeles and listened to some of the poets recite their works. “It’s an impressive collec tion which deserves the praise it received from noted scholar Cornel West,” Mahin says.
West says, “This book keeps our flame lit and our fire burning.”
Barbara’s Bookstore sales associate So phia Devarenne suggests Upstream: Selected Essays, by Mary Oliver, published in 2016 by Penguin Books. “In this book of essays, Oliver meditates on how her identity as a reader and artist and her connection to the natural world are intrinsically in tertwined,” Devarenne says. “This collection is the perfect gift for anyone with a passion for both literature and nature.”
Another of her recommendations is Sacred Nature: Restoring Our Ancient Bond with the Natural World, published by Knopf in Septem ber. Author Karen Armstrong reveals ways ancient religions and cultural practices inspired a connection to the environment, while “modern-day humans are alienated from nature,” Devarenne says. “She argues that in order for humanity to meaningfully confront climate change, we must restore our spiritual relationship with the natural world. This thought-provoking book is a great gift for your scholarly environmentalist friends.”
Devarenne also suggests Merlin Sheldrake’s, Entangled Life: How Fungi Make Our Worlds, Change our Minds and Shape Our Futures, published by Random House in May 2020. “This is a fascinating deep dive into fungi and what a remarkably influential role it has played in human behavior and society,” Devaranne says. “Entangled Life is so packed with information and has such a wide scope, it is sure to blow any reader’s mind, even a mushroom expert.”
She also recommends a novel that envi ronmentalists may enjoy reading, A Children’s Bible: A Novel, written by Lydia Millet and pub lished by W.W. Norton & Company in 2020. It tells the story of children in an isolated vaca tion home when climate disaster strikes. “Mil

let uses a thrilling tale of survival to communicate the urgency of the climate change problem and critique the complacency of our current social and political cul ture,” Devarenne explains. “Lyr ically written and overflowing with powerful symbolism, this book is a thought-provoking page-turner.”
For young readers, she sug gests Wishtree , by Katherine Applegate, published in 2017 by Macmillan. “This is a heartfelt story for young readers where the main character is Red, an oak tree,” Devarenne says. “Red is the neighborhood’s ‘wishtree’, meaning people write out their wishes and tie them to her branch es. When an immigrant family moves in to the neighborhood, they face Islamophobia and cruelty at the hands of their neighbors. Red works with her animal friends to show the residents the value of empathy, friendship and tolerance. This is a perfect gift for kids or families who would love a book with these classic themes centered on humans’ relationship with nature,” Devarenne suggests.
Devarenne also recommends Braiding Sweetgrass, published in 2015 by Milkweed Editions. This book by Potawatomi author and professor Robin Wall Kimmerer details the traditions of Indigenous North American peoples relating to plants and discusses how these practices and philosophies could be integrated into the Western science world. “Both personal and scientific, this book of essays is a wonderful gift for anyone interested in botany,” she says.
Pam Johnson, manager of bookstores The Green Read, in Crys tal Lake, and The Green Spot (mcdef.org/bookstores), in Wood stock, also recommends Braiding Sweetgrass. Johnson says, “The author advocates turning to the traditional practices of indigenous people in our search for sustainability.” Both stores offer a wide range of gently used books in various genres, including nature and sustainability.
“Choosing a gently used book as a gift is a wonderful way to help the environment,” Johnson adds. “The bookstores sold over 21,000 books in 2021, preventing those books from potentially ending up in land fills,” she relates. “Any books that are unsellable, we recycle responsibly.” Proceeds benefit the Environmental Defenders of McHenry County.
Johnson also suggests Grandma Gatewood’s Walk: The
Inspiring Story of the Woman Who Saved the Appalachian Trail , by Ben Montgomery, published by Chicago Review Press in 2016. “It follows Emma Gatewood, a grand mother in her late 50s, in her journey on the Appalachian Trail in the 1950s,” Johnson says. “She became the first female solo through-hiker, as well as the first person to hike the trail three times, and because of all the media coverage, is credited with increased interest in main taining the Appalachian Trail. I was fascinated by all the interesting information and history about the trail throughout the book. And you can’t help but be inspired by Grandma Gatewood.”
Don Parker and Justin Pepper, co-editors of A Healthy Nature Handbook: Illustrated Insights for Ecological Restoration from Volunteer Stewards of Chicago Wilderness, published by Island Press in 2021, also offered some suggestions on green books to purchase for the holidays. Their book reveals successful restorations done by Chicago region volunteer stewards (ANa turesEscape.com). Parker agrees that Braiding Sweetgrass makes an excellent holiday gift.
Pepper also suggests Ever Green: Saving Big Forests, by Jon Reid and Tom Jovey, published this year by W.W. Norton & Company. “It’s a must-read for any of Earth’s citizens concerned with climate change and the role intact forests can play in avoiding some of the worst outcomes,” Pepper says, adding the book is highly readable.

He also recommends Owls of the Eastern Ice , published in 2021 by Macmillan. Pepper calls the book “a fun and informative behind-the-scenes look at field biology in the Russian Far East.” The book by Jonathan C. Slaght focuses on efforts to study and conserve Blakiston’s fish owl, the largest owl in the world. “It is a well-written and a compelling field journal full of unlikely char acters working under challeng ing conditions. Think isolation, frigid temperatures, unstable ice in changing seasons and tigers,” Pepper says.
The list includes Silent Earth: Averting the Insect Apocalypse, by Dave Goulson, published by HarperCollins earlier this year. “Insects are essential for life as we know it. Without them, our world would look vastly different,” writes Laura Sadler in an online blog about the book.
The online list also includes How to Give Up Plastic: A Conscious Guide to Changing the World, One Plastic Bottle at a Time, by Will McCallum, published by Penguin in 2018. The book features ideas such as throwing a plastic-free birthday party and ways to convince others to give up plastic.

Cytoplasm, the gelatinous liquid that forms the living material which fills our cells, is susceptible to the influences of emotional energy. When removing the viewing of sto ries that fuel fear, concern or outrage, the human being will maintain its true humanity or human nature and kindness.
Humanity is inherently kind. Derived from the Latin humanitas, meaning human nature or kindness , this word and its energetic basis is filled with goodness, professing the innately fundamental element of kindness that is fused into human nature.
When you know that a boat can inher ently float, you don’t need to add floatation devices to the bottom of the boat. The attention is best placed on maintaining the integrity of the shell of the boat. Likewise, in order to adequately be active in sustaining humanity, the first step is to believe and emulate that humanity is kind in nature, focusing purely on as many examples of humans being kind to themselves and others. Allowing this spiritual energy to unfold via thoughts and images, visualizing a continuous display of humans being kind, thoughtful and considerate, healthy and happy.
The next step is the Latin word sustento The action step of maintaining, supporting and sustaining; in this case, humanity. We collaborate in the most fundamentally au thentic ways, thereby honoring humanity, and be an active part of the support system that uplifts consciousness. The following will lay out straightforward tools for this

Nature is an essential part of human thriving, raising the mental, phys ical and spiritual levels to realign divinely. Increasing levels of endorphins, our body’s way of producing a natural high, can also happily be achieved by laughing, lovemak ing, chocolate, spicy foods and drinking a spirit or two.
Being inspired to use one or all of these tools to support the naturally human nature and kindness elements within us sets the foundation to do good works in the family, neighborhood, community and house of worship. The boat will inherently float when placed in water. When we are grounded in our humanity, we will inherently do good works. In this time of feast celebrations and generous gift giving, feed your own humanity first; setting up the ripple effect of kindness.
