COVID-19

Medidas que ha implementado el Gobierno de Yucatán

Ante los casos confirmados de COVID-19 en Yucatán, el Gobernador del Estado, Mauricio Vila Dosal, implementó medidas y acciones para evitar la propagación del Coronavirus.

• Es indispensable el uso de cubrebocas al salir de la casa para realizar las compras o ir a los centros de trabajo considerados esenciales. Si no se porta el cubrebocas, la persona será acreedora a sanciones establecidas en la ley.

• El Gobierno del Estado en acuerdo con el Consejo Coordinador Empresarial (CCE), anunciaron los nuevos horarios escalonados para proteger a la ciudadanía yucateca y reducir los casos de coronavirus. Dichos horarios quedaron de la siguiente manera: Sector de la construcción (lunes a sábado 7:00 am a 6:00 pm); sector industrial (9:00 am a 7:00 pm); servicios profesionales y sector gubernamental (9:00 am a 5:00 pm); comercios del centro de Mérida (10:00 am a 7:00 pm) y comercios fuera del centro (11:00 am a 9:00 pm) actividades controladas, con números reducidos de asistentes (ballet, música, con excepción instrumentos de viento; pintura, escultura, cine, literatura y fotografía), de lunes a viernes, de 6:00 am 9:00 pm. Información completa en reactivación.yucatan.gob.mx • Instalación de un comité conformado por los mejores epidemiólogos y expertos en salud pública y privada de Yucatán, para que asesoren al Consejo Estatal de Seguridad en Salud que estará sesionando permanentemente • Se suspende el otorgamiento de la Fuerza Pública para desalojos de inmuebles, para que ningún ciudadano sea desalojado de su casa durante la contingencia. La Fuerza Pública seguirá atendiendo los casos de violencia familiar, en los que se requiera separar del domicilio al agresor.

• Refuerzo en las tareas de limpieza y desinfección en todos los edificios públicos e invitación a la iniciativa privada a hacer lo mismo. Asimismo, se realizan limpiezas en el transporte público (combis, taxis, y autobuses).

• El regreso a clases presencial del ciclo escolar 2020-2021 no será posible por el incremento de contagiados.

Esta medida es con tal de proteger a los alumnos y maestros.

• Revisión y filtros en el Aeropuerto de Mérida para vuelos del extranjero y revisión en vuelos nacionales.

• Instalación de filtros para revisión de todos los pasajeros en las terminales de camiones CAME-ADO. • Realización de pruebas de COVID-19 en las colonias con mayor número de infectados con el objetivo de cortar cadenas de infección.

• Apertura de las zonas arqueológicas cuando el Instituto Nacional de antropología e Historia (INAH) lo permita el 1 de septiembre. Además, se podrán llevar a cabo eventos sociales, bodas, bautizos, Quince años, entre otros festejos, de lunes a domingo, igual respetando las restricciones de movilidad nocturna; en áreas cerradas, será permitido un aforo de 50 personas, y en lugares abiertos, de 100 personas.

Como pasó con los asentamientos mayas en su momento, estos sitios resplandecían y con el tiempo fueron abandonadas por distintas razones, repitiéndose el mismo patrón, pero en diferentes épocas.

Uluch. Se tiene conocimiento que el único lugar abandonado en Yucatán es Misnebalam, pero no es así realmente. Uluch fue un pequeño poblado que actualmente está perdido entre el monte. La comunidad más cercana a éste es la comisaría de Cosgaya. Como todas las haciendas henequeneras, este sitio resplandeció gracias a la producción del henequén y cuando llegó a su fin, los pobladores abandonaron la finca.

Lo que prevalece hasta la fecha es un pequeño templo, en

Ciudad Maya . En sus buenos tiempos, la “Ciudad Maya” funcionó como un restaurante y centro de entretenimiento, en la actualidad es un lugar “apagado”. El motivo de su nombre es debido porque en su interior se mandaron a construir réplicas de los edificios arqueológicos de Chichén Itzá como la Pirámide Mayor, el Observatorio, el Caracol e incluso hay una réplica del Cenote Sagrado. En su momento se convirtió en un destino atractivo para los turistas y yucatecos. Los que tuvieron oportunidad de ir cuando funcionaba el establecimiento, comentan que en el día de su inauguración se presentó la vedette Olga Breeskin quien gozaba de una impresionante fama en aquella época. Se dice que orquestas y bailarinas provenientes de Cuba se presentaban en el ex restaurante. Se rumora que, en algún momento, Niurka hizo acto de presencia en la ciudad maya.

Maya City. In its heyday, the “Maya City” functioned as a restaurant and entertainment center. Today it is off the beaten path. The reason for its name is due to the fact that it contains replicas of the archaeological buildings of Chichén Itzá, such as the Greater Pyramid, the Observatory, and the Caracol. There is even a replica of the Sacred Cenote. At the time it became an attractive destination for national tourists and Yucatecans, alike. Those who had the opportunity to go when the establishment was in operation, comment that on the day of its inauguration the star Olga Breeskin, who enjoyed an impres-

Tradición decembrina yucateca:

Las Ramadas

A partir del 1ero. de diciembre y hasta el 15 del mismo mes, la tradición de los niños yucatecos es salir durante las tardesnoches a cantar las ramadas, una especie de cánticos y villancicos navideños para pedir su “aguinaldo” casa por casa para luego dar inicio a las posadas.

n otros estados de México como Veracruz, Tabasco, Oaxaca, Campeche y Quintana Roo, se le conoce como rama. Centrándonos en Yucatán, todo lo que se recauda en las ramadas es destinado para que se lleve a cabo la posada entre los niños que participaron. De acuerdo con Arquidiócesis de Yucatán, las ramadas surgieron en el siglo XVI cuando los frailes estaban evangelizando a los mayas. Al igual que las posadas, las dos tradiciones son de origen religioso, en específico en el pasaje de la biblia de la peregrinación de María y José en las vísperas del nacimiento de Jesucristo, ya que habían pedido “posada” de una vivienda a otra para que naciera Jesús.

Antes de que los infantes comiencen a cantar en las viviendas, primero se reúnen para adornar las cajas de cartón con imágenes o fotografías de María, José o de otros santos como la Virgen de Guadalupe. En el interior de la caja se coloca una veladora encendida para que ilumine la imagen, mientras que otro niño sostiene una alcancía para que reciba las monedas. La nomenclatura de “ramada” se debe porque los pequeños suelen decorar la caja con ramas de palma o limonaria para simular el arbolito de navidad.

Las ramadas se suelen realizarse en todos los rincones de Yucatán, los niños cantan de una casa a otra para que reciban su aguinaldo. La letra de la ramada es alusiva al viaje que tuvieron que realizar los peregrinos antes de que Jesús viera la luz por primera vez.

Yucatecan Holiday Tradition: The Ramadas Between the first and fifteenth of December each year, it is a tradition for children in Yucatán to go out during in late afternoons and early evenings to sing the Ramadas, a kind of Christmas songs similar to the carolling traditions in the United States and Canada. They go house by house asking for their “Christmas gift,” a cash donation. This is the start of the holiday known as the “posadas.”

In other states of Mexico such as Veracruz, Tabasco, Oaxaca, Campeche, and Quintana Roo, it is known as Ramas. Focusing on Yucatán State, everything that is collected in the ramadas is destined for the posada that the children who participated then enjoy.

According to the Archdiocese of Yucatán, the Ramadas emerged in the 16th century when the friars were evangelizing the Maya. Like the posadas, the two traditions are of reli-

gious origin, specifically in the biblical passage of the pilgrimage of Mary and Joseph on the eve of the birth of Jesus Christ. They had asked for a posada, or a place to stay for the night, from one house to another just as Jesus was about to be born.

Before the children begin to sing at the houses in the neighborhood, they first gather to decorate the cardboard boxes with images or photographs of Mary, Joseph, or other saints such as the Virgin of Guadalupe. Inside the box a lighted candle is placed to illuminate the image, while another child holds a piggy bank to receive the coins. The nomenclature of “ramada” is due to the fact that the children usually decorate the box with palm branches or lemon trees to simulate the Christmas tree.

Ramadas are usually performed in all corners of Yucatán State.

Children sing from one house to another so that they receive their Christmas gift. The lyrics of the ramada are allusive to the journey that the pilgrims had to make before Jesus saw the light for the first time.

Nuevos Deportes en Yucatán

Due to the health restrictions Covid-19 warrants, many things have not only changed, also, they had to adapt to circumstances. Our lifestyle has undergone changes, but we always find alternatives to do what we enjoy. Exercising, for instance, is one of the activities that is becoming a priority and is adapting to the new normal.

Debido a la situación actual en la que nos puso la pandemia, muchas cosas no solo han cambiado, también se han tenido que adaptar a las circunstancias. Nuestro estilo de vida ha sufrido cambios, pero siempre encontramos alternativas para hacer lo que nos gusta. Por ejemplo, ejercitarse es una de las actividades que se están volviendo una prioridad y se está adaptando a la nueva normalidad.

Ahora buscamos actividades en lugares abiertos como en la naturaleza y sin aglomeraciones. En Yucatán tenemos muchas actividades que se ajustan a la nueva normalidad y que nos ayudarán a tener una vida más saludable y evitar los lugares cerrados.

La apnea o buceo libre (freediving) es un deporte extremo, el cual tiene como base la suspensión voluntaria de la respiración dentro del agua, mientras se recorren largas distancias o se desciende hasta grandes profundidades. La apnea está en crecimiento en la Península, ya que tenemos los escenarios ideales para practicarla.

Yucatán cuenta con varias reservas naturales y una gran cantidad de bosque a las afueras de la ciudad, en especial en los pueblos de la Península. El senderismo y el trail running son las alternativas perfectas, tenemos un sinfín de senderos al aire libre rodeados de naturaleza, no solo nos mantendrá en forma, sino que nos hará salir de nuestra zona de confort y conocer más de nuestro Estado.

El kitesurf es un deporte extremo de deslizamiento sobre el agua, el viento es un factor determinante porque propulsa

el “kite” unida a tu cuerpo mediante un arnés, para que navegues en una tabla encima de las olas o realices maniobras en el aire que ni el delfín más saltarín podría realizar. Este magnífico deporte nos mantiene al aire libre y por supuesto, con sana distancia. Puedes practicarlo en las costas yucatecas como Progreso, donde también se encuentran varias escuelas para que puedas realizarlo de manera segura.

Yucatán State has several nature reserves and a large amount of forest on the outskirts of the city, especially in rural towns. Hiking and trail running are the perfect alternatives, we have endless outdoor trails surrounded by nature. Not only will it keep us in shape, but also, we will maintain our comfort zone and learn more about our state.

Kitesurfing is an extreme sport of sliding on water, the wind is a determining factor because it propels the “kite” attached to your body by means of a harness, so that you can navigate on a board above the waves or perform maneuvers in the air that only the most agile dolphin could perform. This magnificent sport keeps us outdoors and of course, with social distance. You can practice it on the Yucatecan coasts like Progreso, where there are also several schools so you can do it safely.

esde el 2 de noviembre, las playas de la costa yucateca fueron reabiertas, así que ya podrás visitarlas siempre y cuando cumplas con las medidas sanitarias como usar cubrebocas, aplicarte gel antibacterial y mantener una sana distancia. Déjanos recomendarte algunas de las tantas playas que hay en la costa de Yucatán y arma tu itinerario de estos destinos turísticos.

Sisal es un puerto pesquero y un espléndido lugar si deseas tener un día relajado y maravillarte con sus escenarios naturales. Entre sus atractivos se encuentra el Fuerte de Santiago, construido con el propósito de proteger al puerto de posibles invasiones piratas, sin olvidar mencionar la ex-Aduana Marítima, el faro y el muelle.

En Las Coloradas podrás dar un paseo en lancha bajo la supervisión de un lanchero quien te dirá datos interesantes de la fauna y vegetación que hay en la ría y en los manglares. Al llegar a las salineras te enamorarás de las aguas rosadas, aprovecha la oportunidad y tómate una foto teniendo a las lagunas como un buen fondo de paisaje. Antes de abordar la lancha, date un “baño maya” con una especie de barro blanco que te dejará la piel tersa.

Sin duda, Progreso es la playa más conocida de Yucatán, un auténtico paraíso con atractivas atracciones como el Malecón Internacional, además de que esta playa cuenta con la distinción de Blue Flag que reconoce su limpieza.

En Chicxulub Puerto podrás caminar en su muelle turístico y pesquero. Según con diversos estudios, hace muchos millones de año cayó un meteorito que acabó con la vida de los dinosaurios y debido a su impacto, se formaron los cenotes en la Península de Yucatán. ¡Bienvenido otra vez a las playas de la costa yucateca!

Cuarto Blanco del Museo de la Ciudad de Mérida The White Room at the Museum of the City of Mérida

El Museo de la Ciudad de Mérida en la búsqueda de llevar la cultura a todas partes, creó “Cuarto Blanco, Espacio Neutral de Arte” un nuevo programa de exposiciones virtuales donde se exhibirán las obras de diversos artistas residentes en la ciudad. Cuarto Blanco surgió de la idea de contar con un espacio neutral, cada 15 días tendrán una nueva exhibición virtual con un tema en particular, desde fotografía, pintura, escultura, grabado, diseño, moda, gastronomía, arte objeto, arte utilitario, arquitectura, graffitti, etc.

The Museum of the City of Mérida, with the purpose of bringing culture to throughout, created “Cuarto Blanco, Espacio Neutral de Arte,” or “White Room, Neutral Space for Art.” This is a new program of virtual exhibitions where the works of various artists living in the city are exhibited. The White Room emerged from the idea of having a neutral space where, every 15 days, a new virtual exhibition with a particular theme, from photography, painting, sculpture, engraving, design, fashion, gastronomy, object art, utilitarian art, architecture, graffiti, and so on, will be showcased.

El Murmuro de la Soledad es muestra virtual y 100% que consta de una serie de 25 imágenes tridimensionales. Otras de las exhibiciones de Cuarto Blanco es Lavive Massa Geded, nombre de la fotógrafa e integrante del Colectivo Viva la Foto. A través de su lente de su cámara y de las fotografías que capturó en las calles

de Mérida y los rincones de Yucatán, ofrece un recorrido visual que persigue la belleza de la cotidianidad. Por último, Espejismos de Katya Lara Ancona es una amalgama de sombras que absorben y atraviesan la materia en el acto de observar en la mirada sutil de la energía lumínica.

The “Murmuro de la Soledad,” or “The Murmur of Solitude,” is a virtual and 100% sample that consists of a series of 25 three-dimensional images. Another of the White Room’s exhibitions is by Lavive Massa Geded, name of the photographer and member of the Colectivo Viva de la Foto (Living Photographic Collective). Through her camera lens and the photographs, she captured in the streets of Mérida and the corners of Yucatán, she offers a visual journey that pursues the beauty of everyday life. Finally, “Espejismos,” or “Mirages” by Katya Lara Ancona, is an amalgam of shadows that absorb and pass through matter in the act of observing in the subtle gaze of light energy.

En esta nueva edición de “Sabores de Yucatán”, te presentamos la extraordinaria colaboración que tuvimos con la Chef Regina Escalante quien nos compartió una receta para preparar Tostadas CEVIXEC con frutas de la región con las cuales se prepara la deliciosa ensalada de frutas en las fechas del Hanal Pixán: el xek. No te tomará mucho tiempo en cocinar estas deliciosas tostadas cuyos ingredientes aportan muchas vitaminas y proteínas. Sin más por el momento, te presentamos la receta. ¡Provecho!

RECETA PARA 4 TOSTADAS INGREDIENTES • 4 tortillas de maíz de molino • 1/2 litro de aceite • 200 gr de pescado • 1 pieza de toronja • 2 piezas de mandarina • 2 piezas de naranja • 1 pieza de limón • 100 gr de jícama • 1 manojo de cilantro •Chile piquín • Sal • Pimienta • Aceite de oliva • Hielos

reginaescalanteb PREPARACIÓN 1) En una olla semihonda, vierte el aceite vegetal. Cuando alcance los 160 grados, coloca las tortillas y fríelas, procurando que conserven su forma plana. Luego de dos minutos de cada lado, retira del aceite y coloca las tortillas sobre un plato con papel absorbente.

2) Prepara un plato hondo grande con hielo y coloca otro plato hondo de menor tamaño por encima.

3) Retira la piel y espinas del pescado y cortarlo en cubos de aproximadamente 1 centímetro.

4) Coloca el pescado en el plato hondo “frío” y exprímele el jugo de un limón. Deja

reposar por 5 minutos.

5)Retira la piel de los cítricos y las supremas, procurando no dejar semillas. Corta de igual manera en trozos pequeños.

6) Pela la jícama y cortarla en cubos pequeños.

7) Finalmente, corta el cilantro y mezclar junto con el pescado todos los ingredientes, sazonar con sal y pimienta y chile piquín.

8) Coloca el CEVIXEC sobre la tostada, decora con brotes de cilantro y láminas de jícama. Espolvorea un poco de chile piquín y vierte un poco de aceite de oliva. Sirve y… ¡A disfrutar!

In this new issue of “Sabores de Yucatán,” we present the extraordinary collaboration we had with Chef Regina Escalante. She shared a recipe to prepare CEVIXEC Tostadas, a dish made with fruits from the region with which the delicious fruit salad that is prepared in connection with the Hanal Pixán (Day of the Dead) celebration: the xek. It won’t take long to prepare these delicious toastadas whose ingredients that are rich in many vitamins and proteins. Without further ado, we present you the recipe.

SERVES 4 TOSTADAS INGREDIENTS • 4 corn meal tortillas • 17 ounces of oil • 7 ounces of fish • 1 piece of grapefruit • 2 pieces of mandarin • 2 pieces of orange • 1 piece of lemon • 3.5 ounces of jicama • 1 bunch of coriander • Chili pepper • Salt • Pepper • Olive oil • Ice

PREPARATION 1) In a semi-deep pot, pour the vegetable oil. When it reaches 320 degrees Fahrenheit, place the tortillas and fry them, ensuring that they retain their flat shape. After two minutes on each side, remove from the oil and place the tortillas on a plate with paper towels.

2) Prepare a large bowl with ice and place a smaller bowl on top.

3) Skin and debone the fish and cut it into cubes of just under half an inch.

4) Place the fish in the deep “cold” plate and squeeze the juice of one lemon. Let it rest for five minutes.

5) Remove the skin and fibers from the ci-

truses, mindful to remove the seeds. Cut the same way into small pieces.

6) Peel the jicama and cut it into small cubes.

7) Finally, cut the coriander and mix together with the fish all the ingredients, season with salt and pepper and chili pepper.

8) Place the CEVIXEC on the toast, garnish with coriander sprouts and jicama slices. Sprinkle a little chili pepper and pour in a little olive oil.

El fenómeno sucede el 21 de marzo y 21 de septiembre respectivamente, durante la mañana. Desde las 5:00 hrs., la gente acude a la zona arqueológica para presenciar los equinoccios de primavera y otoño.

REGIÓN “PUUC” (Cerro o serranía): Sus habitantes asentados en tierra roja y fértil, desarrollaron una cultura muy propia. Su arquitectura destaca por su forma simple, planos alargados, columnas sólo ornamentales, rica y elaborada decoración de piedras formando mosaicos; casi excluye la figura humana, sobresale casi con obsesión CHAAK (dios de la lluvia) que es representado tanto con la trompa hacia arriba, petición, como hacia abajo, agradecimiento, con visión Estético-Religiosa del que dependían sus cosechas y su agua potable, almacenada en CHULTUNES (cisternas) creados por ellos. Entre en íntimo contacto con ellos y la naturaleza.

GRUTAS LOLTÚN (Flor de piedra): En el acceso NAHCAB (colmena) lo recibirá el bajorrelieve de EL GUERRERO DE LOLTÚN, dios que emerge del inframundo. En

visita guiada asómbrese con formaciones abovedadas, estalactitas y estalagmitas; bóvedas como LA CATEDRAL, impresionante, LA MAZORCA, EL CAÑÓN de gigantescas rocas.

LAS COLUMNAS MUSICALES destacan el sonido “Loltún” al ser golpeadas; LOS HALTUNES (sartenes) con agua fresca y rebosante. Pinturas rupestres de manos, animales y rostros.

YAAL UTZIL A medio kilómetro de la Hacienda Mucuyché se localiza Yaal Utzil, considerado el cenote más azulado de Yucatán. Es de tipo abierto de caída libre, cuenta con escalera de 12 metros de longitud para acceder al espejo de agua. El cenote mide 25 metros de largo por 39 metros de ancho y una profundidad máxima de 49 metros.
