COVID-19

Medidas que ha implementado el Gobierno de Yucatán

Ante los casos confirmados de COVID-19 en Yucatán, el Gobernador del Estado, Mauricio Vila Dosal, implementó medidas y acciones para evitar la propagación del Coronavirus. • Es indispensable el uso de cubrebocas al salir de la casa para realizar las compras o ir a los centros de trabajo considerados esenciales. Si no se porta el cubrebocas, la persona será acreedora a sanciones establecidas en la ley. • El Gobierno del Estado en acuerdo con el Consejo Coordinador Empresarial (CCE), anunciaron los nuevos horarios escalonados para proteger a la ciudadanía yucateca y reducir los casos de coronavirus. Dichos horarios quedaron de la siguiente manera: Sector de la construcción (lunes a sábado 7:00 am a 6:00 pm); sector industrial (9:00 am a 7:00 pm); servicios profesionales y sector gubernamental (9:00 am a 5:00 pm); comercios del centro de Mérida (10:00 am a 7:00 pm) y comercios fuera del centro (11:00 am a 9:00 pm) actividades controladas, con números reducidos de asistentes (ballet, música, con excepción instrumentos de viento; pintura, escultura, cine, literatura y fotografía), de lunes a viernes, de 6:00 am 9:00 pm. Información completa en reactivación.yucatan.gob.mx • Instalación de un comité conformado por los mejores epidemiólogos y expertos en salud pública y privada de Yucatán, para que asesoren al Consejo Estatal de Seguridad en Salud que estará sesionando permanentemente • Se suspende el otorgamiento de la Fuerza Pública para desalojos de inmuebles, para que ningún ciudadano sea desalojado de su casa durante la contingencia. La Fuerza Pública seguirá atendiendo los casos de violencia familiar, en los que se requiera separar del domicilio al agresor.

En esta edición especial de “Explorando Yucatán” te compartimos la experiencia que vivió Pedro Hernández, fotógrafo y videógrafo de Explore Yucatán, tras su visita en Acanceh y Mayapán en esta nueva modalidad y modo de visitar los destinos turísticos del Estado. ¡Vamos a explorar Yucatán!

na salida a los lugares mágicos del Estado siempre es una de las mejores dosis de armonía y paz personal que puedes encontrar. Un sábado en la tarde decidí retomar la costumbre de visitar los pueblos cercanos de Mérida. Una de las comunidades que tenía en la mira era Acanceh, aquella ciudad maya que dentro de su centro histórico tiene una estructura maya que da esa sensación de sincretismo vivo entre lo maya y la civilización actual. Sin pensarlo mucho, al día siguiente en la mañana tomé el auto y me encaminé sobre la carretera Mérida-Cancún rumbo hacia Acanceh. Al llegar a Acanceh caminamos tranquilamente por las calles visiblemente llamativas y nos encontramos con un enorme letrero que mostraba una cercanía con el mítico lugar del que siempre había escuchado: Mayapán.

Vimos que la legendaria ciudad maya estaba a unos cuantos kilómetros de distancia y no lo pensamos ningún segundo, nos dirigimos a ese destino. Cuando llegamos nos informaron que los visitantes nacionales no pagan la entrada en día domingo. Luego de tomar nuestras medidas correspondientes como la desinfección de manos con gel antibacterial, mantener la sana distancia y el uso obligatorio de mascarilla dentro de las instalaciones, nos adentramos en el mágico asentamiento

Exploring Yucatan: Acanceh and Mayapán In this special edition of “Exploring Yucatán” we are delighted to share with you the experiences that Pedro Hernández, photographer and videographer of Explore Yucatán had, during his visit to Acanceh and Mayapán as part of a new initiative to visit various tourist sites in Yucatán State. Let's explore Yucatan! “An excursion to the “magical” places of Yucatán State is just what the doctor ordered to find personal balance and peace of mind. On a recent Saturday afternoon, I decided to return to my habit of visiting the towns not far from Mérida. One of the communities I settled upon was Acanceh, that Maya city that, within its historic center, boasts a structure that is considered representative of the ancient beliefs of the Maya and the contemporary Yucatecan society. Without thinking much about it, early the next morning I got in my car and headed on the Mérida-Cancun highway headed toward Acanceh. When I arrived at Acanceh, I walked calmly through the visibly striking streets. Soon,

I came upon a huge sign that indicated how close I was to the mythical place that I had always heard about: Mayapán. The legendary Maya ceremonial center was but a few kilometers away. I didn’t hesitate for a second before heading out to that destination. When I arrived I was told that national visitors—Mexican citizens and permanent resident foreigners—can enter free of charge on Sundays. After taking the appropriate health measures—using antibacterial hand gel, maintaining a social distance, and wearing mandatory face masks—I entered this magical place. Mayapán was one of the last Maya cities inhabited prior to the arrival of the Spanish. Yucatecans know this archaeological site as the “mini Chichén Itzá” because its structures are similar to those of Chichén Itzá—the Seventh Wonder of the World—although on a smaller scale. La leyenda de amor del pájaro cardenal En lo más profundo de una selva maya, se encontraba un maravilloso reino. El príncipe de ese lugar se llamaba Chacdziedzib (pájaro cardenal), estaba perdidamente enamorado de la hija del guardián del Cenote Sagrado, Nicté-Ha (flor de agua).

Un día, el Gran Sacerdote convencido de que Chacdziedzib debía contraer matrimonio con alguna hija de un rey, se opuso al amor que tenía por con Nicté-Ha, se convocaron a los grandes señores, quienes decidieron que la hija del guardián del Cenote Sagrado debía morir. El bufón de la corte escuchó todo, le avisó al príncipe y éste ordenó a su mejor guerrero que fuera a buscar a la princesa para traerla al Palacio Real, donde se casarían. El noble guerrero emprendió camino para cum-

plir la misión, pero en la oscuridad de la noche lo asesinaron. El bufón fue testigo de los hechos, cuando le llevó las noticias al príncipe, agarró su arco y se dirigió al Cenote Sagrado en busca de su enamorada. En esa noche de luna, veló su sueño bajo las ceibas. Al amanecer, Nicté-Ha fue a mirarse en las tranquilas aguas del Cenote, el príncipe se acercó a ella y la abrazó. The Love Legend of the Cardinal Bird Once upon a time, in the depths of a Maya rainforest, there was a wonderful kingdom. The prince of that realm was named Chacdziedzib, which meant “cardinal bird.” He was madly in love with NicteHa, the daughter of the Guardian of the Sacred Cenote and whose name meant “water flower.”

That dawn, Nicté-Ha went to perform her ablutions in the calm waters of the Cenote. It was there that the prince approached her and embraced her. An arrow came out of the shadows and pierced the maiden's chest, however, killing her. Her limp body fell back and sank into the waters of the Sacred Cenote. Las Reservas Naturales de Yucatán POR AGUSTÍN GONZAGA

En Yucatán tenemos la fortuna de contar con innumerables sitios naturales que seguramente dejarán sorprendidos y maravillados a sus visitantes. A continuación, te platico algunas de las reservas naturales que no puedes perderte en tu próxima visita

Reserva Ecológica de Cuxtal Está situada en un área en el sur de Mérida formada aproximadamente por 10,757 hectáreas, las cuales fueron designadas como reserva desde el 28 de junio de 1993. Esta zona es uno de los sitios naturales que más se cuidan y preservan en todo el Estado. También es cuna de aves migratorias que durante su viaje descansan un rato en sus alrededores. La reserva cuenta con una hacienda donde disfrutarás de diferentes actividades como paseos en trucks, áreas verdes para acampar, juegos infantiles, senderos donde podrás caminar, criadero de venados y al igual que puedes visitar el cenote que se encuentra en la reserva. Reserva de la Biósfera de Río Lagartos Ubicada entre los municipios de San Felipe, Río Lagartos y Tizimín, durante tu visita podrás estar en contacto con diferentes ecosistemas como selva baja y mangle. En la reserva puedes realizar actividades eco-turísticas, las cooperativas locales se encargan de fomentar acciones de conservación y protección entre los visitantes a través de un programa de educación ambiental. Es considerada una de las principales zonas de anidación de aves como el flamenco rosa, cigüeñas, espátulas rosadas, ibis, garzas y gacetas. Reserva natural de Oxwatz Localizada a 80 kilómetros de Mérida, deberás pasar por Izamal hasta llegar al municipio de Tekal de Venegas, en donde se encuentra la recepción. Una vez 6

que llegues ahí, te recibirá un guía quien te acompañará hasta llegar a la entrada de la reserva ecológica. El recorrido en automóvil dura aproximadamente dos horas. Aquí podrás hacer muchas actividades como senderismo a la zona arqueológica Baxaatún, recorridos en bicicleta al Cenote Kukula, paseos en kayaks en el ojo de agua, practicar el snorkel, así como también visitar las aguadas que se encuentran ahí. Yucatan State Nature Reserves by Agustin Gonzaga

In Yucatán State we are fortunate to have countless natural sites that will surely leave visitors surprised and amazed. Now, I will write about some of the natural reserves that you cannot miss on your next visit. Cuxtal Ecological Reserve Located south of Mérida, it consists of approximately 10,757 hectares (26581 acres), and was designated a reserve on June 28, 1993. This area is one of the natural sites that are most cared for and preserved in the entire State. It is also home to migratory birds that stop here for a while in its surroundings during their migration patterns. The reserve has a farm where you will enjoy different activities such as truck rides, green areas for camping, children’s games, trails where you can hike, deer breeding zoo, and at the same time, you can visit the cenote, a freshwater, natural sinkhole, that is in the reserve. Ría Lagartos Biosphere Reserve Located between the municipalities of San Felipe, Ría Lagartos, and Tizimín, is a must-stop on your visit. Visitors can get in touch with different ecosystems, such as lowland tropical scrub and mangroves. In the reserve visitors can engage in eco-tourism activities. Local cooperatives are in charge of promoting conservation and protection measures carried out through an environmental education program. It is considered one of the main nesting areas for birds such as the pink flamingo, storks, roseate spoonbills, ibis, herons and gazettes. Oxwatz Nature Reserve A short 80 kilometers (52 miles) from Mérida, one must go through Izamal until reaching the municipality of Tekal de Venegas, where the welcome entrance is located. Cuando nos adentramos más y nos empapamos de información acerca de la cultura maya, siempre aprendemos algo nuevo en cuanto a su idiosincrasia, costumbres, etc. En materia de artefactos, los objetos de jade son una de las obras de arte más impresionantes que dejaron los antepasados que alguna vez habitaron a lo que hoy conocemos como Yucatán y Centroamérica. When we dig deeper and soak up information about the Maya culture, we always learn something new about their idiosyncrasies, customs, and so forth. When it comes to artifacts, jade objects are one of the most impressive works of art left by the ancestors who once inhabited what we know today as Yucatán and Central America.

Por mencionar algunos de los descubrimientos más antiguos destacan las perlas sencillas y sin decoración descubiertas de las tumbas de Cuello, yacimiento arqueológico situado en el norte de Belice, los cuales se cree fueron manufacturados entre 1200 a 900 a.C. En aquella época, el arte del grabado en piedras era desarrollado por los olmecas quienes comenzaron a trabajar con el jade mucho antes que los mayas, por la civilización tolteca es considerada como la madre de todas las civilizaciones prehispánicas mesoamericanas.

En territorio centroamericano se hallaron una diversidad de jades con distintos tonos de verde y azul, como el diópsido, crisopacio, albita, serpentina, y la piedra mixta que consiste en la mezcla de jadeíta y diópsido.

Los mayas heredaron y adoptaron parte de su ideología que reflejaron en muchos de sus símbolos. Cuando los mayas empezaron a trabajar con el jade, emplearon medios sencillos en su tratamiento. Cortaban con ayudas de cuerdas un trozo plano de madera dura o incluso con pizarra, herramientas que impregnadas de la arena que es un material abrasivo, la obsidiana y el polvo de jade se frotaban repetidamente contra la piedra. Una vez cortada por la mitad, se comenzaba a trabajar en ambos lados de la misma. THE IMPORTANCE OF JADE IN THE MAYA CULTURE, THE PRE-HISPANIC GREEN GOLD A vast majority of jade artifacts date from the Classic period. Over time, however, pieces of jade have been discovered that come from the Pre-Classic period. Some of the oldest discoveries, for instance, are simple and undecorated jade beads discovered at the tombs of Cuello, an archaeological site located in northern Belize. These artifacts, believed to have been created between 1200 to 900 BCE, stand out. At that time, it was the Olmecs who developed the art of stone engraving, long before the Maya came into the scene. It should be noted, however, the Toltec civilization is considered the mother of all Mesoamerican pre-Hispanic civilizations. Throughout what today is Central American, there are a variety of jades with diffe-

rent shades of green and blue. These include diopside, chrysopic, albite, serpentine, and the mixed stone that consists of a mixture of jadeite and diopside. The Maya inherited and accommodated part of their ideology to reflect many of the symbols they valued, including jade. When the Maya began to work with jade, they used simple techniques in handling the stones. They cut a flat piece of hard wood or even with slate with rope aids, tools that, employed sand, which is an abrasive material. In addition, obsidian and jade dust were repeatedly rubbed against the stones. Once cut in half, work began on both sides. If the cuts were too deep, striking it against another stone that acted like a hammer split the stone.

Museo Casa Manzanero, espacio cultural que honorífica a Armando Manzanero

Armando Manzanero (Q.E.P.D.) es considerado como uno de los mayores exponentes musicales del bolero quien tocó millones de corazones a través de sus hermosas composiciones como “Somos novios”, “Esta tarde vi llover”, “Contigo aprendí”, por mencionar alguna de sus más de 400 canciones compuestas y escritas por el yucateco. Conocido como el “Rey del Romanticismo” por siempre vivirá en las mentes de los mexicanos, especialmente de los yucatecos. En Mérida hay un espacio dedicado a su gran legado musical que dejó, se trata del Museo Casa Manzanero el cual fue inaugurado el 11 de diciembre de 2020 y que contó con la presencia del compositor meridano quien recibió este homenaje en vida. Este espacio cultural rinde honor a la carrera musical de Armando Man-

zanero mediante fotografías, objetos y mobiliario que pertenecieron a uno de los máximos exponentes de la música romántica, se ubica en el centro comercial Paseo 60 en la calle 60 entre 35 y Colón, Local 17, en la Zona de Paseo de Montejo. Esta museografía es única en su tipo al contar con tecnología que permite

que los visitantes puedan interactuar en sus espacios. Si deseas recordar a Armando Manzanero, el museo abre de martes a domingo en horario de 10:00 a 22:00 hrs. El precio de acceso es de $50 pesos por adulto y $30 por niño.

Ensalada de calabazas al grill con queso tipo Cotija por Chef Ceci Galván

RECETA (4 porciones)

Tras su visita en el Rancho Kampepén y probar el queso Cotija que elaboran 100% de manera artesanal, en esta nueva entrega de “Sabores de Yucatán” la Chef Ceci Galván nos presenta esta exquisita receta que puedes preparar desde la comodidad de la cocina de tu hogar, se trata de una “ensalada de calabazas al grill con queso tipo Cotija” que seguramente deleitará tus papilas gustativas y saciará tu hambre. Sin más por el momento, pongamos manos a la obra y cocinemos este nutritivo y delicioso manjar ¡Provecho!

Ingredientes para la vinagreta • Ralladura de un limón persa • ¼ taza de jugo de limón persa (colado) • 1 cucharada de vinagre de cidra de manzana • 1 cucharadita de mostaza de buena calidad • ½ cucharadita de sal • ¼ cucharadita de pimienta • ¼ taza de miel de abeja • ¾ taza de aceite de pepita de uva o de aceite vegetal Ingredientes para la ensalada • 1 calabaza local rebanada a lo largo • 2 calabazas italianas cortadas en tiras gruesas • 1 manojo de cebollitas de Ixil • Aceite de oliva para el grill • ¼ cucharadita de sal de mar • ¼ cucharadita de pimienta negra • 90 g de queso tipo Cotija desmoronado • ¼ taza de pepitas tostadas • Hojas de epazote picadas • Aguacate local partido en cubos Preparación 1) Prepara la vinagreta: En una licuadora, vierte todos los ingredientes y licua a

velocidad baja hasta emulsionar, luego vierte a un frasco y reserva. 2) Calienta el grill (parrilla) a fuego medio, barniza las calabazas y las cebollitas con aceite de oliva y sazona con sal y pimienta. 3) Tuesta las pepitas en una sartén de 3 a 4 minutos o hasta que estén fragantes. Reserva. 4) Asa las cebollitas en el grill por 3 minutos, acomoda las calabazas y ásalas de 2 a 3 min por lado o hasta que se marquen las rayas del grill. 5) Acomoda en un platón las tiras de calabaza, las cebollitas de Ixil, el aguacate local y deja reposar por 5 minutos. Espolvorea el queso tipo Cotija desmoronado, las hojas de epazote y vierte vinagreta al gusto. Espolvorea las pepitas y sirve tibia la ensalada. Vinagreta en Thermomix (TM3, TM5 o TM6) Coloca todos los ingredientes en el vaso y emulsiona 20 seg/vel 5 Tip: Puedes cambiar las pepitas por nuez de la India o piñones ¡Disfruta!

RECIPE (SERVES 4 PORTIONS) Ingredients for the vinaigrette • Zest of a Persian lemon • ¼ cup Persian lemon juice (strained) • 1 tablespoon apple cider vinegar • 1 teaspoon of good quality mustard • ½ teaspoon salt • ¼ teaspoon pepper • ¼ cup honey • ¾ cup grapeseed oil or vegetable oil Ingredients for the salad • 1 local squash, sliced lengthwise • 2 Italian pumpkins cut into thick strips • 1 bunch of Ixil onions • Olive oil for the grill •¼ teaspoon sea salt • ¼ teaspoon black pepper • 90 grams of crumbled Cotija cheese • ¼ cup toasted pepitas • Chopped epazote leaves • Local avocado, diced Steps: 1. For the vinaigrette: In a blender, pour all the ingredients and blend at low speed until emulsified, then pour into a jar and reserve. 2. Heat the grill over medium heat. Brush the squash and onions with olive oil and season with salt and pepper. 3. Toast the pepitas in a skillet for 3 to 4 minutes or until fragrant. Set aside. 4. Grill the onions for 3 minutes. Then place the squash on the grill for 2 to 3 minutes on each side or until thegrill marks are visible. 5. Arrange the pumpkin strips, the Ixil onions, and the avocado on a plate and let it rest for 5 minutes. Spread the crumbled Cotija cheese, the epazote leaves and pour the vinaigrette to taste. Sprinkle the seeds and serve the salad warm. Tip: You can change the seeds for cashew or pine nuts

En esta nueva edición de “Explorando Yucatán” te presentamos la travesía que hizo la Chef Ceci Galván en el Rancho Kampepén dedicada a la producción agropecuaria y venta de productos derivados de la leche como quesos, yogurt natural, etc. Como en la anterior entrega, Ceci ahora utilizó el queso Cotija que produce este rancho con el cual preparó una exquisita receta que puedes consultar en nuestra sección de “Sabores de Yucatán”. Sin más por el momento, te dejamos con la editorial. La visita al Rancho Kampepén que es un proyecto 100% familiar fue una experiencia enriquecedora. Desde que llegamos, Aníbal Solorio quien es el encargado del sitio y fue nuestro guía, nos dio explicaciones súper claras acerca del rancho. Me gustó muchísimo ver la relación y el respeto que siente por los animales. Du-

rante todo el recorrido nos explicó de manera muy detallada las ventajas de los sistemas silvopastoriles, los cuales utilizan en el rancho y que ayudan a mejorar los suelos degradados, al igual que contribuyen a la reforestación y reducen los gases de dióxido de carbono y el metano que producen los gases del efecto invernadero. La tía de Aníbal, Doña Silvia, elabora queso Cotija 100% de manera artesanal con sus propias manos. Me dio a probar un poco y debo reconocer que sabía exactamente igual al queso que una de mis alumnas de cocina me había regalado anteriormente. El tiempo de maduración de este alimento es de entre 2 a 6 meses. Vale mucho la pena transmitir a los lectores de Explore Yucatán, el valor de estos productos y, sobre todo, del sistema silvopastoril que, en mi opinión, es lo más importante que tiene el Rancho Kampepén, sin olvidar que respetan mucho a los animales. Incluso, se preocupan demasiado en evitar la deforestación para no dañar al medio ambiente, continuamente están reforestando todas sus áreas.

Explorando · Rancho Kempepen In this current issue of “Exploring Yucatán” we showcase the journey that Chef Ceci Galván took when she went at Rancho Kampepén. This ranch is dedicated to the agricultural production and sale of products derived from milk including cheese, natural yogurt, and so on. Ceci used the Cotija cheese produced at this ranch with which she prepared an exquisite recipe that you can read about it in our “Flavors of Yucatán” section. Without further ado, here is Galván’s account: “The visit to Rancho Kampepén, which is an entirely family-owned farm, was an enriching experience. From the moment I arrived, Aníbal Solorio, who is in charge of the facilities and was my guide, gave me super clear explanations about the ranch. I really enjoyed seeing the relationship—and respect for—the animals. Throughout the tour, he explained to me in a very detailed way the advantages of silvopastoral systems, which are used on the ranch. These practices help to improve deplenished soils, as well as contribute to reforestation and reduce carbon dioxide and methane gases, responsible for greenhouse emissions. Aníbal’s aunt, Doña Silvia, makes Cotija cheese

entirely in a traditional way by hand. She gave me a taste and I must admit that she tasted exactly like the cheese that one of my cooking students had given me earlier. The maturation time of this food is between 2 to 6 months. It can’t be understated the need to convey to Explore Yucatán’s readers the value of these products and, above all, of the silvopastoral system that, in my opinion, is the most important thing that Rancho Kampepén has—in addition to their respect animals. Indeed, they are cognizant of avoiding deforestation so as not to harm the environment, they are continually reforesting all their areas.
