Medidas que ha implementado el Gobierno de Yucatán

Ante los casos confirmados de COVID-19 en Yucatán, el Gobernador del Estado, Mauricio Vila Dosal, implementó medidas y acciones para evitar la propagación del Coronavirus. • Es indispensable el uso de cubrebocas al salir de la casa para realizar las compras o ir a los centros de trabajo considerados esenciales. Si no se porta el cubrebocas, la persona será acreedora a sanciones establecidas en la ley. • El Gobierno del Estado en acuerdo con el Consejo Coordinador Empresarial (CCE), anunciaron los nuevos horarios escalonados para proteger a la ciudadanía yucateca y reducir los casos de coronavirus. Dichos horarios quedaron de la siguiente manera: Sector de la construcción (lunes a sábado 7:00 am a 6:00 pm); sector industrial (9:00 am a 7:00 pm); servicios profesionales y sector gubernamental (9:00 am a 5:00 pm); comercios del centro de Mérida (10:00 am a 7:00 pm) y comercios fuera del centro (11:00 am a 9:00 pm) actividades controladas, con números reducidos de asistentes (ballet, música, con excepción instrumentos de viento; pintura, escultura, cine, literatura y fotografía), de lunes a viernes, de 6:00 am 9:00 pm. Información completa en reactivación.yucatan.gob.mx • Instalación de un comité conformado por los mejores epidemiólogos y expertos en salud pública y privada de Yucatán, para que asesoren al Consejo Estatal de Seguridad en Salud que estará sesionando permanentemente • Se suspende el otorgamiento de la Fuerza Pública para desalojos de inmuebles, para que ningún ciudadano sea desalojado de su casa durante la contingencia. La Fuerza Pública seguirá atendiendo los casos de violencia familiar, en los que se requiera separar del domicilio al agresor.

El pájaro Toh, el ave de las tierras sagradas mayas POR AGUSTÍN GONZAGA

México cuenta con una gran diversidad de especies de aves, se estima que hay unas 1400 especies, es decir el 20% de la avifauna del mundo habita esta región; nuestro país ocupa el doceavo lugar a nivel mundial y el primero en Norteamérica. Un importante porcentaje se localiza en la Península de Yucatán y dentro de ellas se ubica el pájaro Toh cuyo nombre científico es Eumomota superciliosa, es una especie nativa y representativa del territorio yucateco que además de prestar servicios ambientales, funciona como indicadora de la salud de la zona de selva en donde se encuentra. Como dato curioso, su nombre es onomatopéyico porque el sonido que hace es “mot mot”. Su canto es una manera de delimitar su territorio, pues de esa forma anuncia ser el dueño de éste porque de ahí se alimenta.

Igualmente, tiene una cola desnuda que termina con la forma de una pequeña raqueta emplumada, que mueve como si fuera un péndulo, por lo que también se le conoce como el “pájaro relojero”.

Su alimentación es variada, consiste en insectos, frutos de diversos árboles y hasta de pequeños reptiles, lo que le permite permanecer en un mismo sitio por mucho tiempo. Es considerada un ave de la tierra maya, pues vive cerca de los territorios que los mayas consideraban sagrados, tales como los cenotes. El pájaro Toh juega un papel importantísimo en el ecosistema al ser un regulador, el hecho de encontrarse con uno, significa que esa selva es sana y como servicio ambiental, es dispersor de semillas a través de las heces fecales que distribuye en su vuelo.

The Toh bird, the Bird from the Sacred Maya Lands Mexico has a great variety of birds. It’s believed there are 1,400 species in total. This means that 20% of the all of the world’s bird species lives here. In fact, our country occupies the twelfth place worldwide and the first in North America for avian species. An important number is located in the Yucatán Peninsula. One of them is the Toh bird, or the turquoise-browed motmot (Eumomota superciliosa), a native species, that is representative of the region. The Toh bird, among other things, is a good indicator of where scrub forests become tropical forest zones.

Tengo viviendo 10 años en la ciudad y siempre voy a Slow Food Market, un mercado de productores que ha tenido la misma ubicación desde hace 11 años en la Calle Reforma entre la Avenida Cupules y Avenida Colón, pero realmente existe desde hace 13 años. Este lugar es muy especial porque es un mercado de la tierra, en todo el mundo solamente hay 69 mercados de este tipo, México tiene 2 y uno está en Mérida. Slow Food Market Yucatán es sumamente especial, sus vendedores respetan y cumplen estrictamente los estándares de calidad, ya que en sus productos no pueden usar químicos. La mercancía que ofrecen y producidos por ellos están totalmente libres de sustancias dañinas, así que vas a

obtener alimentos completamente limpios. Entre los muchísimos productos que venden son hierbas, hortalizas, miel y carnes, aunque éste último no es necesariamente orgánico, está libre de químicos al estar hechos en casa. Además, encontrarás frutas, vainilla y tres vendedores de pan de diferentes tipos. Realmente hay una gran variedad de puestos. Dentro de la misma plaza que ocupa Slow Food Market, también hay cafés y restaurantes, después de realizar tus compras puedes comer o tomarte un cafecito.

I have lived in the city for a decade and I always go to Slow Food Market, a farmers’ market, that although 13 years old, has been located at the same location for 11 years right on Reforma Avenue between Cúpules and Colón avenues. This place is very special because there are only 69 Slow Food markets in the world; Mexico has two, including this one in Mérida.

¿Sabías qué? En marzo ocurre el fenómeno astronómico del equinoccio en tierras yucatecas. En el Castillo de Chichén Itzá se puede observar el descenso de la serpiente emplumada (Kukulkán) en las escaleras; en el Templo de las 7 Muñecas ubicado Dzibilchaltún, los rayos solares se alinean en la entrada y salida de dicha construcción, creando así un fenómeno impresionante de luz y sombra. Ubicada en la Calle 60 por la avenida Colón del Centro Histórico y a una cuadra de Paseo de Montejo, fue construida en 1915 según en su página web oficial www.elpinar. com.mx en pleno auge henequenero en Yucatán. Sin embargo, otras fuentes mencionan que se construyó en 1905. Ha tenido varios dueños, le perteneció a Humberto Peón, luego la compró Alberto Bulnes Guedea, la reformó para venderla a José Trinidad Molina Castellanos. Los años no le han cobrado factura a el pinar, sigue intacta en su arquitectura.

Cosmovisión maya y rescate del bordado en el Palacio Cantón: Una larga hebra Si estás caminando y conociendo los atractivos de Paseo de Montejo, no te pierdas la oportunidad de visitar la exposición temporal “Una larga hebra” de la artista Elena Martínez Bolio, ubicada en el segundo piso del Palacio Cantón. Esta muestra artística que te sorprenderá y que es el resultado de 3 años de investigaciones, estancias y convivencia con las mujeres de la comunidad de Xocén perteneciente al municipio de Valladolid, rescata la tradición del bordado, la vida cotidiana y la cosmovisión ancestral de las comunidades mayas.

n esta exhibición audiovisual está conformada por más de 100 recreaciones artísticas distribuidas en 5 salas temáticas. En la primera sala apreciarás una choza maya híbrida que refleja los cambios que han ocurrido en estos tiempos donde se

han creado y tejido historias. En las salas 2 y 3 denominadas “el solar y de lo íntimo” narran hechos mediante hipiles, sábanas, camisones, prendas íntimas y réplicas antiguas de vestimentas de portabustos. Por su parte, en la sala 4 nombrada “Ellas y ellos, la vida y la muerte” enseña la fe-

This artistic ingenuity will surprise you; it is the result of three years of research into the skills and connivance among women from the Xocén community near the municipality of Valladolid. These women have rescued their embroidery tradition, part of the daily life and the worldview ancestral of the Maya communities. 16

ore than 100 artistic recreations are distributed in five thematic rooms and integrated in the audiovisual portion of the exhibition. In the first room visitors see a Maya house hybrid that reflects the changes that occurred during the times when the textiles were women and created. In the second and third rooms—“el solar y de lo íntimo” or “the sunlit and intimate”—there are narrations explaining events through hipiles (sundresses), blankets, nightgowns, underwear,

and vintage copies of push up bras. In the fourth room, named “Ellas y ellos, la vida y la muerte” or “Her and Him, Life and Death”—contrast the feminine and masculine, including the uncertainty and the motherhood. Finally, in the fifth room, titled “La vida sigue” or “Life Continues”—there are the faces women who, through their gazes and wrinkles, tell their respective stories and dreams. Salpicón de Pulpo con Castacán

RECETA (sirve 4 personas)

En nueva edición de “Sabores de Yucatán”, tenemos el gusto de presentarte al Chef Carlos A. Trejo que cuenta con más de 10 años de experiencia en el ramo gastronómico. Ha tenido la oportunidad de trabajar para varias cadenas importantes y en 3 restaurantes AAA. Ya establecido en Mérida, Yucatán, se le ofreció la oportunidad de trabajar como Chef Ejecutivo del restaurante Siqueff. Actualmente, está como Chef invitado en el restaurante Ostro Cucina Bar desde noviembre del año pasado. Entre sus especialidades se encuentran la cocina mexicana, mediterránea, libanesa, steak house, panadería europea, pescados y mariscos, caribeña, hindú, turca y oriental. En esta ocasión, nos comparte una exquisita receta para cocinar “Salpicón de Pulpo con Castacán”, un manjar que te deleitará tus papilas gustativas. A continuación, te dejamos con la exquisita receta para consentir a tu familia. ¡Provecho!

Ingredientes • 1 pulpo de 1 kg aprox. • 200 grs de castacán • 1 manojo de cilantro local • 2 tomates • 1/2 cebolla morada • 1 manojo de rabanitos • 3 naranjas agrias • 1 chile habanero • 1 aguacate mantequilla • Sal de mar al gusto • 1/2 taza de fécula de maíz (maizena) • Aceite para freír Para cocinar el pulpo • 1/2 cebolla blanca • 1 dte. de ajo • 2 hojitas de laurel • 2 limones • Sal de mar Preparación 1) Lavar perfectamente el pulpo, quitarle el pico, ojos y vísceras. 2) En una olla con agua hirviendo, exprimir el limón, poner la cebolla, el ajo, laurel y sal, llevar a hervir nuevamente. 3) Asustar el pulpo, esto se realiza sumergiendo 3 veces en el caldo hasta que se ri-

cen los tentáculos, se deja el pulpo dentro del caldo, se tapa, se baja el fuego y se deja en cocción lenta por 40-50 min. 4) Una vez cocinando el pulpo, se detiene la cocción en un baño con hielo, se enfría y se corta en trozos medianos. Reservar. 5) Mientras se cocina el pulpo, se lavan los vegetales y se corta los ingredientes del salpicón, tomate en gajos, cebolla en juliana, gajos de rábano y hojas de cilantro, se pelan las naranjas agrias y se corta el aguacate en cubos. 6) Se corta el castacán en trozos medianos. 7) En una sartén mediana, calentar el aceite, pasar los trozos de pulpo por maizena, sacudir el exceso y freír el pulpo hasta que quede dorado. Se escurre el exceso de grasa y se reserva. 8) Para preparar nuestro salpicón, en un bowl se mezclan tomate, cebolla morada, rábano, el castacán y el pulpo. Después se le exprimen 2 naranjas agrias y se agrega el cilantro fresco y se sazona con sal de mar. 9) Se sirve en una fuente mediana, se decora con aguacate en cubos y gajos de naranja agria. Se acompaña con tortillas de maíz o tostadas y chile habanero al gusto. ¡Disfruta!

Octopus Salmagundi with Castacan By Chef Carlos A. Trejo

In a new edition of “Flavors of Yucatán,” we are happy to present you Chef Carlos A. Trejo who has more than a decade’s experience in the gastronomic field. He had the opportunity of working at many important companies and at three AAA restaurants. Once settled in Mérida, he worked as Executive Chef at the Siqueff Restaurant. Since November 2020, he has served as Chef at the Ostro Cucina Bar Restaurant. Among his specialties are the Mexican cooking, Mediterranean, Lebanese, steak house specialties, European bakery, seafood, Caribbean, Indian, Turkish, and Asian dishes. Here, he shares us a delicious recipe to cook “Octopus Salmagundi with Castacan,” a dish that will you enjoy. (Castacan are friend pork rinds and skin, available at local markets.) Now, we share you the delicious recipe to pamper your family. 20

RECIPE (SERVES 4 PORTIONS) Ingredients • 1 octopus (approximately 1 kilo) • 200 grams castacan • 1 bunch local coriander • 2 tomatoes • ½ purple onion • 1 bunch of little radishes • 3 sour, or Valencia, oranges • 1 habanero chile • 1 avocado butter • Sea salt to taste • ½ cup cornstarch • Oil to fry For cooking the octopus • 1/2 white onion • 1 garlic tooth • 2 laurel leaves • 2 lemons • Sea salt Steps: 1) Wash the octopus thoroughly, removing the peak, eyes, and internal organs. 2) In a cooking pot with boiling water, squeeze the lemon, put the onion, garlic, laurel and salt, and bring to boil again. 3) Submerge the octopus 3 times in the broth until the tentacles curl. Let the octopus simmer inside the broth, cover, and lower the heat and allow slowly cooking for 40-50 min. 4) After the octopus is cooked, bath in ice to stop the cooking. Once cool, chop medium chunks. Set aside. 5) As the octopus cooks, wash the vegetables, chop the salmagundi ingredients: tomatoes by their segments; julienne an onion, radish, and coriander; peel the sour oranges; and chop the avocado into cubes. 6) Chop the castacan into medium chunks. 7) On a skillet, warm the oil, add the octopus’s chunks and cornstarch, shake off excess and fry the octopus until come crunchy. Drain the oil excess and set aside. 8) To make salpicon, in a bowl mix the tomatoes, purple onion, radish, castacan, and octopus. Then, squeeze 2 sour oranges and add the fresh coriander and sea salt. 9) Serve on a medium plate, decorate with avocado cubes and slices of sour orange. Add corn or toasts and habanero chili for tasting. Bon Appétit!

Me percaté que detrás de todo y de cada una de las ediciones especiales o de aniversario que sacan a lo largo del año, hay un proceso creativo bastante complejo. La cervecería es una empresa 100% yucateca que tiene una filosofía muy padre y vanguardista, ya que tienen un equipo de primera. Me gustó muchísimo la descripción de Gerardo sobre la cerveza especial del mes del amor, la cual se caracteriza por esas notas un poco ácidas y al mismo tiempo, poseer sabores florales. Nos expresó apasionadamente de qué manera hay que servirla en el vaso y con qué alimentos acompañarla. Durante la plática me transmitió lo que él quería para que pudiera conceptualizar en mi mente que un postre sería el maridaje perfecto con esta cerveza. Su color me llamó demasiado mi atención, se puede apreciar y distinguir claramente el color predominante de la Jamaica, su increíble espuma rosa me sorprendió al quedar perfecto con una edición que celebra el amor y la amistad.

GRUTAS LOLTÚN (Flor de piedra): En el acceso NAHCAB (colmena) lo recibirá el bajorrelieve de EL GUERRERO DE LOLTÚN, dios que emerge del inframundo. En

visita guiada asómbrese con formaciones abovedadas, estalactitas y estalagmitas; bóvedas como LA CATEDRAL, impresionante, LA MAZORCA, EL CAÑÓN de gigantescas rocas. LAS COLUMNAS MUSICALES destacan el sonido “Loltún” al ser golpeadas; LOS HALTUNES (sartenes) con agua fresca y rebosante. Pinturas rupestres de manos, animales y rostros.
