I manage the whole design process from a client’s perspec tive: from the concept phase to supervising the consultants involved in the development of the project’s details.
Is it a demanding job?
At a time of great fervour in the real estate market, we are developing dozens of projects in the UAE and beyond, from skyscrapers to mixed-use buildings, villa neighbour hoods and special projects.
Your greatest satisfaction so far.
Since 2013, I have been watching a multitude of projects transforming the city’s skyline, with the advantage of being able to figure out how the users evaluate them, considering how fast the buildings are coming up.
The project you are the most proud of?
It is the Dubai Creek Harbour district: 7.3 million square meters, 700,000 of which designed for parks and public spaces, 60,000 for cultural activities, 900 thousand for commercial uses, 5,800 for residential use, 24 hotels and many other uses which are transforming this area into a new urban centre and much more.
Is being Italian an added value?
The real added value is having been raised surrounded by the beauty of our urban, landscape and cultural spaces. What are the most interesting architectural works in Dubai from a sustainable point of view?
An emblematic project is the The Mohammed bin Rashid Al Maktoum Solar Park: it is a 77-Km2 area of photovoltaic panels with the world’s largest innovation and research center on sustainable energy. A few of your favourite places in Dubai in terms of archi tecture, art, design and food.
Definitely the DIFC, full of art galleries and restaurants from Cipriani to Zuma and Amazonico. A place for those who love architecture, design and arts, off the tourist path, is Alserkal Avenue: industrial warehouses converted into art galleries, design ateliers, cultural spaces. For a glimpse into the local traditional architecture I suggest Bastakiya and Al Seef: Dubai’s oldest neighborhood, renovated to artisan workshops, restaurants, markets, with a lovely view over Dubai’s lagoon framed by the old town.

Frankie Dettori is a living legend of horseracing, one of the world’s most celebrated jockeys. He has ridden the winners of over three thousand races and has won dozens won for the fourth time the Dubai World Cup, the world’s
stars, one for each child: Leo, Ella, Mia, Tallula, Rocco. He is known and loved across the United Kingdom as no other Italian before or since. A dear friend of the Royal Family, he late Queen Elizabeth II horses for thirty years,

The late Queen was a great horseracing fan. She loved horses and I rode her horses for thirty years. I met with her many times and she always made me feel at ease.
I adored the late Queen Elizabeth II and he is an amazing man who will be a fantastic King. The en tire family are wonderful and have been very kind to the world of horseracing. He will be brilliant.
My father was as famous and good as any other jockey of his generation. He worked his way up from being a humble stable lad to winning classic races in England and was champion in Italy for so many years. I’m so proud of him.

I don’t know, but it’s in the thousands and I’m very grateful for having lived a wonderful life so far.

HIDDEN GEMS OF JUMEIRAH DISTRICT
Behind the imposing skyscrapers, stretching out for miles along the coast, a strip of land overlooks the Gulf.
Jumeirah, which not surprisingly means ‘beautiful’ in Arabic, comprises the most beautiful villas and homes in Dubai. ‘The Beverly Hills of the Middle and pearl hunters, represents an oasis of peace in the sparkling and hectic epicentre of the city. The streets of sand-coloured ter raced villas of Jumeirah are pop ulated only at certain times, fol lowing the rhythm of the hot and sunny Arab countries in stark contrast to the Dubai that never sleeps, with its constant bustle. Apart from the residential area, Jumeirah is known for some of the iconic places and buildings in Dubai.
Towering north of Jumeirah street is the famous Burj al Arab, one of the region’s most famous the world’s most enormous Swarovski crystal ceil ing. Built to resemble the billowing sail of a dhow, the traditional Emirati boat, the structure faces the open sea, just as the United Arab Emirates looks to
the future representing the avant-garde approach of the emirate’s leadership. Not far from the sail-shaped building of Burj al Arab, Jumeirah hides its small pearl: the Souk Madinat Boutiques with fabrics and Abayas alternate with spice shops and cafes in an atmosphere that savours all of Arabia. Inside, it is an endless maze of tiny al leys and wood-framed walkways, with a colorful treasure trove of little stands that sell all kinds of clothing and local trinkets. The Souk Madinat is even crossed by a small water channel on which traditional Emirati boats offer tours across the creek. These Emirati-style gondolas are the perfect way to wind your way along the tranquil waterways. Souk Madinat is certainly a des tination within a destination!

We were told about this innovative project by Vito Mol lica, Group Culinary Director and Executive Chef, who passed on his philosophy to Head Chef Ilaria Zamperlin and the entire team, along with the secrets of his most successful dishes, based on re spect and preserving the natural
dients, always measured, never vulgar or redundant, but which leave their mark in the memory of those who taste them. His is a perfect mix of professionalism and thoughtfulness which goes beyond the kitchen, creating the familiar environment to which the name of the restaurant re fers, which for guests becomes a home to return to, certain to
come that makes a difference. How did the Chic Nonna project originate? Chic Nonna originated from the desire to create a re
where guests can experience real Italian hospitality. The authenticity of the cuisine is one of the cornerstones of the menu, as indicated by the use of term ‘nonna’ or grandmother as part of its name.

What kind of experience have you designed for your Dubai guests?
In Dubai, as in the rest of the world, everything that is Italian, from fashion to design to cuisine, is synony mous with excellence. We have therefore tried to offer
seasonal raw materials, and with impeccable service able to recount our dishes and our origins in a one of a kind, elegant place with a truly iconic design. What makes this restaurant unique?
Without doubt, the idea of designing a place where people come not only to dine but where they can also be entertained. In fact, both in Florence and in Dubai, in addition to the restaurant, there is the upscale lounge with sophisticated design, lighting and music, where you food and service typical of our restaurants.
Something that was a nice surprise in Dubai?
An encounter that amazed me was with the owner of a farm. A grower of vegetables, espe cially of those native to the Maghreb, who has chosen to locate his farm in the middle of the desert. And they are truly excellent products. Let’s browse through the restaurant’s menu – the cult dishes, the one for lovers of tradition and the one for the more adventurous. We have included many Italian traditional classics on the Chic Nonna menu, such as crêpes or raviolini del plin al tavogliolo (stuffed pasta shapes served in a napkin), but also many of my signature dishes such as cavatelli and oil with prawn tartare. environment like that of Dubai?
The two places give me a different energy. In Florence, I feel the responsibility of being in the heart of a his toric city rich in art, inside a place where illustrious personalities lived over the centuries. Being able to be custodians of this building, enhancing it through a multiplicity of experiences, is the real purpose and objec tive of the project. Dubai, on the other hand, is a city that never stops, a city of the pres ent and the future. Here the atmosphere is very engaging and there is great competition
services and entertainment. There is continuous striving to meet the expectations of a very demanding clientele that chooses as different restau rant every evening, and so has to be amazed each and every time.
What do you love best about Dubai?
Most of all the architecture, the buildings, the design. I often stop to look at these imposing buildings from outside and in. Every time I’m enchanted and think of the brilliance of the architects who designed them.
What are the next steps in the Chic Nonna project?
At the moment we are consolidating these two projects in Florence and Dubai, but the goal is to develop new openings in other destinations around the world in the not too distant future.
