finales de Julio, cuando escribo este editorial, toda la Costa del Sol bulle de visitantes y pronto alcanzaremos el punto máximo de ocupación turística. Esta pacífica invasión de todas las nacionalidades, se suma a los propios españoles que poco a poco se sacuden esta crisis y vuelven a incluir en su presupuesto familiar el gasto vacacional. Parece que se están cumpliendo las previsiones y casi todas las plazas hoteleras y apartamentos están ocupados por turistas ávidos de sol y playa. La diferente amalgama playera, es más patente a orillas del Mediterráneo. Es aquí donde es fácil detectar de un simple vistazo, la variopinta calidad de visitantes que se “rebozan” en la arena de las Playas de Marbella. Los exclusivos beach clubs con batallas a base de chorros de champán a 500€, para un turismo joven y adinerado se alterna con los clásicos chiringuitos, donde la reina es la sardina al espeto, pasando por la concentración de carpas playeras con sus “tribus familiares” y su completa intendencia de neveras, tumbonas y piscinas hinchables. Cocina vanguardista que respeta la tradición
ensar que la oferta de restauración de nuestra zona es toda parecida o la misma es un error. Aunque es cierto que de los numerosos restaurantes que abren sus puertas al público cada año en Marbella, muy pocos sobresalen por un carácter diferenciado.

Este es el caso de DGust, nuevo Restaurante situado en pleno paseo marítimo de Marbella (Avenida Duque de Ahumada). En tan céntrica zona, rodeado de numerosos establecimientos enfocados al “turista de paso” con una carta de pizza, sota, caballo y rey, DGust es un restaurante que apuesta por diferenciarse del resto en cuanto a su propuesta culinaria y a su decoración vanguardista, igual que sus hermanos situados en Alicante y Granada.
La propuesta en precio es razonable, incluso económica, ya que puedes disfrutar de un menú de mediodía por 15€ o un menú degustación por solo 35€ incluido bebidas.
Con una carta equilibrada, nos propone de primero frescas ensaladas y verduras en tempura o a la parrilla, pasando por “caldos” tan apropiados para esta época veraniega como el gazpacho andaluz, el salmorejo granaino o la sopa de marisco con extracto de pescado de roca, siguiendo con más de diez platos de entradas con exquisiteces como los pimientos del piquillo rellenos de bacalao, pulpo gallego, vieiras glaseadas, berberechos salteados con gambitas al Jerez, rematando con los clásicos Foie de Canard-cru a la plancha sobre cebolla caramelizada y Jamón Ibérico al corte con pan crujiente y tomate.
Restaurante DGust ofrece una cocina vanguardista y comprometida que no deja de lado el respeto por la cocina tradicional.
Los aperitivos y copas por la tarde en su terraza “El Rincón de Evelyn” son deliciosos. Ideal para almuerzos de trabajo, y en esta época, cenas en su magnífica terraza.
Elegir como segundo entre Pescados o Carnes resulta difícil, si no opine sobre comerse un plato de Atún rojo de almadraba con verduritas, unas gambas rojas de Garrucha, unas cigalas frescas a la plancha, el lomo de rodaballo al horno o un pargo del día a la sal. O decida entre la paletilla de cabrito al horno, la presa ibérica o el entrecote

Although it is true that out of the many restaurants that open their doors to the public every year in Marbella, very few stand out as being different. Such is the case with DGust, a new restaurant located right on the Marbella sea front (Avenida Duque de Ahumada). In such a central area, surrounded by many establishments aimed at “passing tourists”, with a menu offering pizza and all the same old dishes, DGust is a restaurant that has set its sights on being different from the rest in respect of its culinary offer and its avant-garde decoration, the same as in its twin establishments in Alicante and Granada. With a well-balanced menu, it proposes a first course of fresh salads and vegetables in tempura or on the grill, and also “soups” that are so appropriate for the summer season such as Andalusian “Gazpacho”, Granada “Salmorejo”, or Seafood Soup with rock fish extract, followed by more than ten dishes offering delights such as baby peppers stuffed with
cod, Galician octopus, glazed scallops, cockles sautéed with prawns in sherry, concluding with the classic grilled Duck Foie on a bed of caramelised onion, and sliced Iberian ham with crispy bread and tomato. It is difficult to choose between Fish and Meat as a second course, and just as difficult to decide whether to go for the fresh red Tuna with baby vegetables, the red Garrucha prawns, the grilled Dublin Bay Prawns, the baked turbot fillet or snapper baked in salt. Or whether to decide on roasted shoulder of baby goat, Iberian pork “presa”, or Galician beef entrecôte or fillet steak or Argentine beef from the Pampas. The DGust Restaurant offers avant-garde cuisine with a commitment, which in no way turns its back on traditional cooking. Its prices are reasonable, even economical, as you can enjoy the menu of the day for15€ or a sampling menu for only 35€, drinks included. The aperitifs and evening drinks on its “Evelyn’s Corner” terrace are delicious. Ideal for business lunches, and at this time of year, dinner on its wonderful terrace.

EL CASTILLO THE CASTLE
Esta construcción se encuentra enclavada en el centro histórico de la ciudad y es la única que se ha conservado de la época musulmana. La medina de Marbella fue una de las ciudades más importantes de la “Rayya” (provincia de Málaga). La Marbella amurallada de los musulmanes abarcaba aproximadamente una superficie de 90.000 metros2. Sobre esta reducida área se extendería una trama de estrechas callejas, que todavía hoy conserva su trazado. This construction is set in the historic centre of the town and it is the only one conserved from the muslim era. The medina of Marbella was one of the most important cities or the “Rayya” (province of Malaga). The fortified Marbella of the muslims covered approximately a surface of 90.000 square metres. YACIMIENTOS ARQUEOLÓGICOS ARCHAEOLOGICAL SITES
Basílica Paleocristiana Vega del Mar (San Pedro) (s. IV). Rodeada por una necrópolis visigoda con más de 180 enterramientos de distinta tipología. Única en la Península Ibérica. Bóvedas o Termas de Guadalmina (San Pedro) (s. II-III). A 500 m de la Basílica. Además de su uso higiénico, eran un punto de reunión social. Villa Romana de Río Verde (Marbella) (s. I). Edificada como finca rústica en la que se desarrollaban actividades agropecuarias, en especial la fabricación del garum, pasta de diversos pescados cuyo precio alcazaba cifras exorbitantes en Roma. Monumento declarado Bien de Interés Cultural por la Junta de Andalucía, y protegido con el máximo nivel en el Patrimonio Histórico Andaluz.

Roman Villa at Río Verde (Marbella) (1st C.) Built as a country estate where fish farming activity took place, particularly the preparation of “garum”, a fish paste made from different fish, that commanded exorbitant prices in Rome. It has been declared a Monument of Cultural Interest by the Regional Government of Andalusia and is protected as being a high level example of the Historic Heritage of Andalusia.
