TIFFANY & PATRICK Love makes a splash

A spilled drink doesn’t usually lead to true love, but it did pave the way for Tiffany and Patrick Wilson to find each other. Tiffany was on vacation with her family at a condominium in Orange Beach, Ala., in early July 2010. She was relaxing poolside when a boy accidentally knocked her drink over. During the ensuing apologies, she met Patrick, whose friend is the boy’s father. “That led us to hanging out the rest of that weekend,” Tiffany said. While they enjoyed their time together, Tiffany initially didn’t think their paths would cross very often afterwards. “Me being from Bay St. Louis and Patrick being from New Orleans, I didn’t think we would see much of each other,” she said. Who was she kidding? Bay St. Louis is less than an hour from New Orleans. This love wasn’t going to let a few miles get in its way. “We kept in touch and took turns going to each other’s home town every weekend. I moved to New Orleans in 2011, and we built a home in Madisonville, La., in 2015.” On Labor Day 2016 weekend, Tiffany and Patrick were back in Orange Beach, this time as a couple. But they weren’t alone. Their families were there, too, as well as his friend and his son. The whole group went to Cobalt, Tiffany’s favorite restaurant in Orange Beach, where Patrick stunned her. “He chose the city we met and my favorite restaurant in Orange Beach to propose and had our closest family and friends (including the young boy who knocked my drink over at the pool where we met six years prior) there to witness it!” she said. Her Mississippi roots led Tiffany to choose Gulfport for the wedding – specifically, The Venue at Southern Oaks Farm. “I have never felt more special than I did on my wedding day. To see how many people from out of town came in to celebrate our love for one another was amazing,” Tiffany said. There was one member of the wedding party who made the day even more special. “My Paw Paw was the man to walk me down the aisle,” she said. “He has dementia, but on that day he knew who I was, and that is a day I will always cherish in my heart.” The newlyweds went to the Dominican Republic for their honeymoon and stayed at the Hard Rock Hotel Resort & Casino. A week later they moved to Nashville, Tenn., where Tiffany works as a cardiac sonographer at Vanderbilt University Medical Center and Patrick, a veteran of the U.S. Army, works as a delivery specialist at PFG.

KIM & AARON Stronger the second time around

When Kim and Aaron Rhodes met in 1998, she was managing a store, and Aaron, who was in the military, got a part-time job there. A work friendship soon developed into a mutual attraction, and sparks began to fly. “We started dating and got married a couple of years later,” Kim said. Then problems arose. Problems that didn’t appear to have a solution and grew bigger and bigger. “We were both very young, and the marriage didn’t last,” Kim said. “Over the first 15 years after our divorce, we did not have the best relationship with each other.” Their young son, however, provided a bridge to help his parents gradually find mutual ground. “We grew to a point where we started to become friends through coparenting our son well,” Kim said. That teamwork began paying off. Before they knew it, Kim and Aaron found that a little ember remained from that spark that they thought had long been extinguished. That renewed P. 28

interest led to a date. Then another and another. And then Kim and Aaron found that their love was rekindled. Soon a more permanent reconciliation appealed to both of them. That led Aaron to think about his second proposal to his love. “We discussed marriage a few times, but she didn’t know when it was coming,” Aaron said. “I chose a location that she would least expect a proposal. I knew she would want to share the special moment with her sister, so we planned it together. I proposed, and she said yes, but still in disbelief that it was happening. I can remember her saying ‘stop playing’ until she saw the ring and her sister crying.” Kim and Aaron decided to get married on their original wedding date. And even with all the excitement, nerves and busyness of the day, there was one special moment on that second wedding day. “It was seeing both families there together in one place loving on each other,” Aaron said. “The families

always have had mutual admiration for each other.” The Coastians went to the Bahamas for their honeymoon. Aaron is now a retired military veteran, and Kim, who is from Pass Christian, is a housewife. Kim has some words of advice, gleaned from years of experience. “Life isn’t always perfect and true happiness doesn’t come easy. It’s overcoming obstacles,challenges and fighting to be together. This timeframe is the most critical when it comes to planning your wedding.

From a practical perspective if you are not an organized person, you should immediately hire a planner or a consultant to help guide you through the process. Many planners on the Coast also do fullservice design so you can have your cake and eat it too by telling the designer what you want and letting them assist you with all of the details. In some cases, a caterer or reception venue coordinator can help you with some details (linen choices, rental items, room layouts or seating plans). But generally, you want your chosen vendors to focus on what they are good at. These are the items you should deal with immediately because in most cases, there are limited options depending on the size of your wedding. During this time period you should: Book your ceremony and reception venues Select and inform your attendants Begin developing your budget Start your guest list Interview and book the following: • Planner • Band/DJ • Caterer • Photographer • Videographer • Officiant Book your ceremony and reception venues

Purchase your dress. MONTHS S elect your wedding party’s attire. Dress availability and alterations can take up to six months, so start this item as soon as possible. Have your guys fitted for their tuxedos as soon as possible as well. S et up your wedding website, hashtag and handles. R egister at a minimum of three major retailers with online offerings at least one local gift registry store. P lan for your out-of-town guests. Reserve a block of hotel rooms at several different hotels with varying price points. These hotels should be as close to reception location as possible. S ettle on an invitation design and begin the proofing process. Your invitation may go through several renditions before it’s just right, so give yourself plenty of time. If you are planning on having your invitations hand addressed, hire a calligrapher now. S tart planning the honeymoon. Make sure your passport and any necessary shots are up to date if you will be traveling out of the country.

M eet with the officiant and then plan your ceremony. If you are required to attend counseling or attend classes related to your particular faith, begin these as soon as your officiant says to. A rrange transportation for yourself and any guests. O rder your cakes. S tart your day-of timeline. Work with your planner and other vendors (DJ, photographer) to schedule any special moments you want to be sure are documented.

B uy the shoes you will wearing and bring them to your first dress fitting. P urchase your veil. P lan a hair and make-up rehearsal with your stylist. Make sure they are available for your big day. V isit your DJ’s website and peruse his or her play list. Make sure let him or her know what songs you definitely want (especially your first dances) and more importantly, those you don’t want to hear at all. If you are planning on live entertainment, make sure they can perform your first dances or have the availability to play them digitally. P lan the rehearsal dinner. Settle one the guest list and reserve the venue. F inalize invitations and place the order. Some processes can take up to four weeks to print, so give yourself plenty of time to make sure they are

D on’t leave your toasts to chance. MONTHS Ask a select list of people to give toasts or speak at the wedding or rehearsal dinner so they have time to craft a well-considered speech. P lan the program and readings so your readers will have time to rehearse. S econd dress fitting. Plan to purchase your undergarments this same day. F inalize the orders of the ceremony and reception P rint programs P urchase wedding rings M eet with your planner or other wedding pros and finalize your day-of schedule. Type up the timeline and send it to all of your vendors (this includes photographer, caterer, baker, decorator and church coordinator). The more you plan, the less stress and drama there is on the day of. F inalize the menu and flowers I f you are having a number of out-of-town guests, plan welcome gift bags. These need be as simple as a bottle of water, a few snacks and a list of some of the more popular tourist sites where you live.

M ail invitations. RSVP cut MONTHS off should be about 10 days before the wedding. S tart writing those thank you notes. You’ll thank yourself for getting a head start on this! C hange up date night with dancing lessons. Dancing to your first dance several times with some expert guidance can help ease those jitters. P lan your photography shoot list and then meet with your photographer to make sure he/she knows exactly what moments you want captured. F inalize your playlist with your band or DJ.

M eet with your planner for any last minute adjustments or confirmations you feel you need to be reassured about. A sk a trusted friend who is not in the wedding party to be your day-of “Helper.” This person is your planner if you’ve hired one. They will handle things like paying vendors, handing out tips and making sure your wedding party is on the dance floor. S end wedding timeline to wedding party. P ick up wedding dress. W rite checks for vendors, put checks and tips in envelopes to be handed out at the event. S chedule mani’s and pedi’s for you and your girls the day before the wedding. A ssemble and distribute welcome baskets. P ack for honeymoon.

B e sure to update your personal documents if you are changing your last name: Driver’s license, passport, insurance paperwork, bank accounts, etc. T ake a moment to call your loved ones and say how much you love them and appreciate how they helped you all through this process. CAPTURE YOUR DAY

Be sure your photographer knows what is most special to you

Here are other suggestions that will ensure you get the best photos representing your big day. • A solid timeline of wedding events. Include ceremony times and highlights and make sure this timeline includes the names of your bridal party and important family members. For the reception part, actual times (e.g.: “8:12 — first dance”) are less important than an order of events. Your planner will help you stay on track and will make sure all parties needed for the photos are present. • Have a meeting with your photographer to go over exactly what is most important to you. For instance, if

your veil was worn by your grandmother, you will want to be sure your photographer knows this so they will make sure it gets the attention it needs. • Don’t burden your photographer with too many details like handing them a list with 100 “must have” photos. Of that 100, probably 75 of them are obvious. You want your photographer focused on the events around you, not focusing on a piece of paper. While it may seem really obvious what photos you want, sometimes a list does help narrow what is most important. TIPS TO HELP MAKE YOUR CAKE STRESS FREE By Stephanie Costa Owner/pastry chef, Sweet Enchantments Each time I build a cake, whether simple or intricate, if a new set of eyes is watching, the comment is always the same: “You make it look so easy!” Now, of course, I have been doing this for years and have found a rhythm that can be learned only through repetition. But – especially back when I taught college pastry – I had to learn to slow down and really focus on a few tips of the trade that would help any beginner, or even expert, improve their wedding cake game.

TIP NUMBER ONE, FROZEN CAKES.

This may sound odd at first, but hear me out. I bake all of my cakes in advance. Don’t get me wrong, they are extremely fresh and made of the highest quality, but I do this for stability and structure. As each cake is baked, it is cooled, wrapped in plastic wrap, and then frozen overnight so that as I put the cake together, I do not have to worry about the buttercream melting or the cake crumbling.

THE SECOND TIP IS TO HAVE FRESH BUTTERCREAM.

I will always make fresh buttercream the morning of the wedding to have silky smooth buttercream with which to decorate. The evening before, I will crumb coat the cake with buttercream, but the day of the wedding, it is essential to have soft, silky buttercream to create a flawless, smooth exterior to the cake. Not to mention that with the ever-changing weather on the Coast, buttercream can be affected as it settles, due to humidity and other factors.

LASTLY, AND PROBABLY MY MOST IMPORTANT TIP OF ALL, BE SURE TO HAVE BOBA STRAWS. BOBA STRAWS? YES!

These are the super fat straws you find at many Thai restaurants for their famous boba tea. The tea features large tapioca pearls that need a fat straw to transport them. The same fat straw is an amazing, inexpensive support dowel when stacking cake tiers. Now, to decide one of the final details: flowers. It’s time to complete the look for your bridal party and also decorate the venue. If you’re not familiar with flowers, this can feel like a daunting task. Fear not, a professional florist can pull everything together and you won’t have to lift a finger! Here are five reasons to invest in a professional florist:

1. CHOOSING FLOWERS

Many flowers have a season in which they are available, prettiest and most inexpensive. Your florist will know what’s available and also what can be substituted. Flowers come in many sizes, shapes and colors. We know which varieties complement each other within your color palette. How many flowers will you need? Flower bunches are sold in various stem counts, and some foliage is even sold by weight. Your florist will create a “recipe” for each design to know just how much product to order.

2. TIME

Prep work begins on Wednesday for a Saturday wedding. Buckets are washed, vases cleaned, boxes unpacked, flower stems trimmed and leaves removed. This is all happening while you and your bridesmaids are enjoying mani/pedis and mimosas. Would you rather be removing thorns or celebrating at your bridal luncheon?

3. ASSEMBLY

Flowers are messy. Water, leaves, stems and wet cardboard are not things you want cluttering up your kitchen or the wedding venue. Flowers also take up a lot of space and need to be kept cool. Transporting sloshing water buckets is not for the faint of heart. Strategic planning goes into every delivery and set up a florist does.

4. DESIGNING

After all of the preparation comes the actual designing. Flowers do not easily fall together to create the flawless look you see in magazines. It takes a trained eye and many years of practice to make even the most natural designs come together. A professional florist has the tools and supplies necessary to make sure arrangements are sturdy and flowers stay fresh.

5. STRESS

You may be a very creative, energetic and planning-oriented bride who is willing to take on all of the above challenges. But is that what you really want to do in the days leading up to your wedding? Gulf Coast Weddings recently chatted with Lisa Bradley, director of Business Development & Hospitality & Resort Management at Mississippi Gulf Coast Community College.

GCW: PLEASE TELL US ABOUT THE HOSPITALITY & RESORT MANAGEMENT CENTER. HRMC: We are a 5,000-square-feet event center that can accommodate events up to 350 people. We have several rooms of flexible space, some small enough for the most intimate occasions. Our facility offers a boardroom, classrooms and a café for meetings and events in addition to our ballroom space. We offer catering through City Line Café, which is an extension of our culinary school. Catering is provided by our instructor chefs and culinary students. We allow outside food and drink as well. GCW: BEFORE WORKING AT MGCCC, WHAT WAS YOUR BACKGROUND IN THE HOSPITALITY INDUSTRY? HRMC: I have worked in event management for nearly 20 years in nonprofit organizations, local government and professional sports. My background is in corporate events and professional sports. However, the Hospitality Center has given me an opportunity to work on weddings, receptions and parties of all shapes and sizes. I have worked with local businesses for decades and have relationships that serve us well in the event business. GCW: WHAT WAS ONE OF YOUR FAVORITE WEDDINGS AT THE HOSPITALITY & RESORT MANAGEMENT CENTER? HRMC: We have done a number of themed weddings, mostly vintage chic or Hollywood glamour, but last year we had a couple do a Halloween-themed wedding that was done very tastefully and was well-planned and executed. It was such a fun event and very different from what we do on a day-to-day basis. GCW: WHAT WISDOM WOULD YOU OFFER BRIDES LOOKING FOR A WEDDING VENUE? HRMC: Look for flexibility in a venue. Look for a space that allows you to customize every aspect to achieve your vision. Plan in advance and go back as many times as you need to be comfortable with the plan. Also, be aware of hidden costs and fees. Our facility provides tables and chairs, as well as setup and breakdown, at no additional cost. Feel free to ask the venue for advice; if they’ve held hundreds of weddings, they likely know what will work best for you. If a venue says “only 100 people will fit in this space,” listen to them. Don’t risk being uncomfortable at a time that should be enjoyable and memorable. P. 56

GCW: WHAT ARE SOME QUESTIONS YOU RECOMMEND THAT A BRIDE SHOULD ASK IN HER CONSULTATION WITH A VENUE? HRMC: If you’re using an outdoor venue, you should always have an indoor backup plan. Ask about additional time for setup and cleanup and what the expectations are. If the venue offers catering, seriously consider using those services to cut down on the chaos of multiple vendors. Ask about “extra” spaces such as dressing rooms or catering preparation areas that you can use. Definitely ask about hidden costs, such as table or linen rental fees, security or added gratuity or service charges. GCW: WHAT IS SOMETHING GULF COAST WEDDINGS READERS MAY NOT KNOW ABOUT THE HOSPITALITY & RESORT MANAGEMENT CENTER? HRMC: We offer complimentary planning services to help you decide how you can achieve your vision. Our rooms can be resized for a more intimate setting or to accommodate a large function. Registry Tips: Most big box stores allow you to post your registry online making it super convenient for guests to select items that are shipped straight to your door. You will more than likely want to register with smaller, local gift stores as well. You will also find that these shops have local and regional gift offerings as well that not only help you stock things you need but can help with your decorating too. Register for things you want and need but also register for things you may not use now but likely will as you mature in marriage. Fine china and crystal may seem frivolous at the moment, but will make future entertaining easier and will remind you of your wedding day and the give you fond memories of the guest who gave you a special piece. One final thought, if you already are set up and don’t really feel like you need a formal registry, consider allowing your guests to make a donation to your favorite charities. Nearly all reputable charities allow this. Like any gift though, be sure to acknowledge it with a thank you note.

Every year, there are surveys among travel consortia like Virtuoso that predict the best honeymoon destinations are around the world. (Spoiler alert: Italian cities are eternal favorites!). This list is used by travel advisors around the world to fulfill dream honeymoons, and is truly a “you can’t go wrong” list. The coming year is a most unusual one because of so much devastation in the Caribbean. Hurricanes Irma and Maria upended life, but in fact, nearly 70 percent of resorts were not damaged by the hurricanes and are eager to delicately tout that they’re open for business, according to Frank Comito, chief executive officer of the Caribbean Hotel Association. The CHA is an organization that represents hotels and tourismrelated businesses in 32 Caribbean

destinations and they have created a site where travelers can learn the latest on travel to the Caribbean: caribbeantravelupdate.com. Top destinations on the travel survey are Hawaii, Europe, the Caribbean, Tahiti, Costa Rica and Mexico. For those wanting the best all-inclusive value, Mexico and the Caribbean have some great destinations and luxury resorts that will spoil you. For those who want an exotic pristine beach, Hawaii is not as far as you think. It’s only five hours flying time from Los Angeles. And if Tahiti is the big dream, it’s only one movie past Hawaii! Many bungalows in Tahiti feature glass floors or coffee tables where you can watch the fish, or open the glass and feed them! Want to go somewhere off the

beaten path? Other top destinations on the survey are New Zealand, Peru, Canada, an African safari and the Maldives. To avoid disappointment, do your research early, and book early. The resorts that offer the best value for your money, no matter what your budget, have their best rates when booking well in advance and also will typically fill up many months in advance. Use the internet as a guide, but there is no advice better than talking to a travel advisor who has been to many destinations and can help you find the perfect fit. The world is an awesome place and your honeymoon is a perfect time to start discovering it together… for many years to come.
