MAY 12 The second annual Prayers for Kayleigh 5K and Fun Run will be held May 12 at Sparkman Park from 7-11 a.m. The event is for walkers and runners of all ages. Each Fun Run participant will receive a PFK 5K T-shirt. Awards will be given for the first place finisher in each division: children, women and men.
MAY 19 The Beeline Highway Classics and Cruisers Club will sponsor a fundraising car show for 4-H at the Extension Center, 3120 Highway 36 West, in Hartselle. This fundraising show will benefit local 4-H clubs and is a family-friendly event that is free for spectators. The Morgan County Cattlemen’s Association will sell steak sandwiches and refreshments on site. There will be popular-choice, first, second and third place prizes awarded, as well as door prizes. All types of cars and trucks are invited. The show starts at 10 a.m., and prizes will be awarded at 2 p.m. Registration costs $10 per vehicle.

F
Fred and Sandra Smith have built a life and career out of seeing the world and helping others do the same. The couple owns and operates Adventures Unlimited Travel in downtown Hartselle, and they said they enjoy playing a role in helping people plan their dream vacations. In its 20th year, the agency had humble beginnings in the corner of the Minor Furniture Store on Main Street, which was run for years by Sandra’s parents. Fred said what interested him most about opening a travel agency was being able to sell an experience and service rather than a product. “We had gone on several trips with the furniture business I guess that is what got me thinking that that might be something I would like to do, so I set up shop in the furniture store in November 1998,” Fred said. “I was really thinking about selling something I wouldn’t have to inventory. When you have product on the floor, you have to inventory it every year, and I was tired of doing inventory on the same sofa that never would sell. “Now I’m selling a service … This way I can sell every day, whether (someone) wants Hawaii or the next person wants a cruise.” Fred and Sandra see people from all walks of life come into Adventures Unlimited Travel – from people who know exactly what they want out of a vacation, to others who want to know their options. The couple said their personal experiences with many of the destinations they sell have helped their business thrive for two decades. “Typically, one of the first questions we’re asked is, ‘Have you been there?’ If we can say ‘Yes we have,’ then it gives a little bit of a sense of security because we can at least tell them what we experienced – maybe things, if we had to do it over, that we would avoid or do differently, or what we enjoyed,” Sandra said. “Only through experience we have learned that we can help direct people to what would be a good fit for them – depending on their budget, depending on their age, their interests, whether they’re beach people or mountain people, whether they like to cruise or they’re uninterested in cruising. “It gives us pleasure to get to help and guide people toward their dream vacation.”

Self-described “people-people,” the Smiths said they have maintained friendships with many they have met through their business. “We have just enjoyed so many friendships with people we’ve met, who have gone on trips with us or people whose paths we might never have crossed,” Sandra said. The couple hosts three or four trips a year for up to 50 people – they will leave next month on a Baltic

cruise. Fred said their hosted tours fill up quickly; the Alaskan cruise for this summer was booked in only a month’s time. Fred said a great deal of work can go into planning the perfect vacation – and he and Sandra are there to put their expertise to work for their customers. He has a foolproof method for helping customers choose their destinations. “I just give you a dart … and you throw it at the map, and it lands in water – you’re going on a cruise,” Fred said with a laugh. “No, seriously, we get that (question) a lot: ‘I want to do something, but I don’t know what to do.’ We try to plan in a way that will lead you to the trip of your dreams. It takes a little imagination on our part, trying to get that out of people. “If you’ve been on a cruise, and you’re hooked, then we don’t have to do much talking. We’ve been doing it for 20 years, so we’re doing something right.” Adventures Unlimited Travel has 500 customers, a third of whom will go on a trip hosted by the Smiths every three years, according to Fred. More years of helping vacationers and enjoying travel of their own await the Smiths, as retirement from the travel agency is not on the horizon. Fred and Sandra have been married for 46 years. The couple has two children and three grandchildren.

Southern Starz provides offseason competition for girls basketball

The heart and soul of small-town athletics are the high school teams. Friday night football, Christmas basketball tournaments and spring baseball are all events that can have a lasting impact on a community. Most people know how hard student-athletes train during the season, but what do these competitors do to stay sharp and improve in the offseason? For girls basketball, travel ball during the spring and summer months is without a doubt the best option – and there is perhaps no better organization than the Alabama Southern Starz. Many people might think AAU or travel basketball is too time consuming or simply not worth it, but according to program director Doug Bush, the results speak for themselves. “I think you just have to look at some of the players who have come through our program,” Bush said. “AAU basketball for girls is completely different than boys. There are no shoe deals. A lot of times these girls are out here competing for scholarships or to try to get better for the next level. Our program is not just trying to teach basketball lessons, but also life lessons.” Southern Starz – which was founded in 2000 – currently fields some of the top competitors in Madison and Morgan counties, who compete all over the Southeast region with the best in the sport. The idea is not to just grab players once it is clear they are good. Bush said Southern Starz encourages young girls to join the program in their early days of learning basketball. Hartselle’s Moriah Taylor is in her final year with Starz prior to entering her senior season with the Lady Tigers. Taylor led Hartselle to the Northwest Regionals this past season.
“You look at some of the best that we have had, and most all of them were with us for multiple years,” Bush added. “I went back and did the math, and the average amount of time that our players spend with us is 5.8 years. It’s not like we are just getting 11th-graders every year and piecing a team together. These girls all play with each other from a very young age.” Bush is no stranger to girls basketball. Having three daughters – all of whom showed interest in basketball at a young age – Bush found out about the Alabama Southern Starz in 2001 when his oldest daughter was encouraged to join the program and be a member of the initial graduating class. Being the businessman and visionary that he is, Bush saw the potential and the benefits of growing the program into what it is today. Now players such as Shakayla Thomas – a Florida State graduate who is expected to be a first-
round draft pick in the WNBA – got their start in competitive basketball with the Southern Starz. “You look at players like Shakayla, who was a McDonald’s All-American coming out of high school and who was selected as Miss Basketball in Alabama, and you know we are getting great talent and helping them develop their skills on and off the court,” Bush said. “The amount of talent in the Morgan and Madison county areas is incredible. We get players from all over the South, and we combine them with that local talent to field one of the top teams in the country.” If there is one thing that is clear, it is that Alabama Southern Starz has impacted north Alabama girls basketball for the better. Forty different athletes associated with the Southern Starz competed in this year’s regional and state final championships. In addition, eight of the 12 seniors competing for Alabama in the Alabama
vs. Mississippi All-Star Game were members of the organization. Travel basketball is elite in this area, and thanks to some help from the Starz, the future of girls basketball is very bright. Local athletes who are current members of the Alabama Southern Starz include eighth-grader Masyn Marchbanks of Hartselle; freshmen Jenna Walker of Priceville, Halia Morris of Madison Academy, Makiyah Parker of James Clemens and Saniah Parker of Jemison; sophomores Emily Bowman of Huntsville, Destinee McGhee of Madison Academy, Brianna Moore of Grissom, Alaina Taylor of Athens and Katie Jones of Decatur Heritage; and juniors Moriah Taylor of Hartselle Jasmine Grace of Madison Academy, Ariana Powe of Grissom, Kathleen Wheeler of Priceville McCarley Northway of Brewer and Jolee Cole of Danville.

Warmer weather is finally on the horizon, school is almost out and people everywhere are gearing up for summer vacations. Statisitcbrain.com found that more than 45 percent of Americans will go on a trip and between Memorial Day and Labor Day. Veteran traveler and owner of Journeys By Design Dena Nagel has some tips and tricks of the trade to help vacationers enjoy smooth sailing on any trip. Nagel has been in the travel business since 2010 and said her favorite part of the job is her relationship with her clients. “It’s so rewarding to help them plan their dream vacations,” Nagel said. “It’s one of the best ways to make lasting memories.” Nagel has a passion for travel and said some of her favorite destinations have been Costa Rica, Italy, Yellowstone National Park and the Grand Canyon.

What are the benefits of utilizing a travel agency as opposed to booking and scheduling on your own? A travel agent knows many of the hints that make your trip more pleasant and the pitfalls that make it less pleasant. We spend our days looking at air schedules, resorts and activities. We can help you prevent errors like booking into the wrong airport, not allowing enough time for connections or booking a cruise cabin that only has bunk beds. We love to share our knowledge of tips and hints from the experience we have gained through our own travel with our clients so they can have a seamless vacation. Many people don’t realize that in most cases, booking with a local travel agent is the same price as booking on the Internet or over the phone with a company. You really get their knowledge and customer service for no additional charge.

When is the best time to book a flight? You can read many articles that say about six weeks in advance in the middle of the week is the right time to book a flight. Since I specialize in leisure travel, I would never recommend waiting that close to the time of travel. The fare normally goes up if you wait that late, especially for a high demand destination; even if the price hasn’t increased, the perfect resort or cruise cabin that you have been looking at might no longer be available.

How do you go about planning a dream vacation? Start with doing a little research to see exactly what it is that you want to see and do. Make a list of the must do attractions and prioritize those to make sure you include them in your plans. Of course, many things factor in – like budget and length of time you are comfortable being away from home. Dream vacations are a process. A travel agent is always looking at the big picture to make sure all details of your dream are ironed out.

What should vacationers be aware of if traveling abroad? Many things, but safety is the most important.
How do you go about choosing a good location? Hotel? Local restaurants? I always find out the purpose of the trip. Then I research what is near the primary reason for the travel. It is often better to pay a little more and be in a convenient location than try to save money by booking on the outskirts of town, only to spend most of what you saved on transportation getting back and forth. Daycations are a must this summer, so take a look at these fun, nearby destinations. Point Mallard Park is only miles away from home, making it a perfect go-to daycation spot with family or friends. Located in Decatur, the water park boasts a safe area for children, speed slides for the adventurous, a lazy river, a pool with high dives and the world’s first-ever wave pool. Prices range from $15-20 for one-day entry, along with senior and military discounted prices, and season passes are available who might choose this day-
cation destination on more than one occasion. There is also a golf course right next door to change things up a bit. It’s the perfect place to relax and cool down in the water and experience a little bit of history all in one. Monte Sano State Park is a great place to go for something a little farther from home. It’s right outside of Huntsville, around an hour’s. Visitors looking for a longer stay can make use of the campgrounds for campers or tents, and there are cabins to rent, as well. Hiking trails lead to beautiful views of the whole city. The park is child-friendly, pet-friendly and affordable. Each trail notes a difficulty rating and length so hikers and bikers know what they are getting into.
People wanting a true outdoors experience without paying a hefty price might find that Monte Sano State Park is the place for them.

Just a little further away is the always-beautiful Lake Guntersville. It’s the perfect lake for taking a boat ride or sitting out on the public beach area next to the water. Lake Guntersville State Park has a lodge with a great restaurant inside for grabbing lunch or dinner. There is a public beach area, fishing, boat launch and rentals, trails and an overlook that offers a view over the lake. Cost is $3 per car or $15 for a bus of people up to 14. Visitors can golf at the Eagle’s Nest Golf Course or drop $3 in the honor box to enjoy boat ramp and trails. The beach has a roped off swimming area that is safe for children to enjoy the water. There is also a zipline course right next to the lodge. There’s just enough to do to keep vacationers busy there all day. The last place travelers might consider is High Falls, near Geraldine. This luxurious daycation destination is off the beaten path of Alabama’s backroads, but it is well worth the time taken to find it. There aren’t usually many people at the park because it is so well hidden, but once visitors are there, they won’t want to leave. Here at High Falls, visitors can cliff dive into a bath of clear water or lay out on the water-worn rocks, soaking

up the sun. There is water to wade through for those who don’t like the idea of jumping off a cliff to sit on the edge and enjoy the view. Check out the beautiful pedestrian bridge, as well. The sound of the waterfall will put people in the most relaxed state of mind to enjoy the day off. This trip costs nothing more than the gas to get there. With each of these parks being no farther than two hours from home, they make the perfect daycation destinations. FOOD Asian Salad
A crunchy salad recipe using coleslaw mix and ramen noodles, this retro Asian-inspired salad is always a hit!
Favorite Recipes
Ingredients: • 16 oz. shredded coleslaw mix • 1 cup diced snow peas or shelled edamame • 1 cup diced scallions • 15-oz. can mandarin oranges, drained • 1 cup sliced or slivered almonds • 2 packs Oriental-flavored ramen noodles • 3/4 cup vegetable oil • 1/3 cup white vinegar • 1/2 cup sugar Instructions: Combine coleslaw mix, snow peas (or edamame), scallions, mandarin oranges and almonds in a large bowl; set aside.
In a separate bowl, combine vegetable oil, vinegar and sugar, then whisk vigorously until well combined. Open ramen packages and remove the seasoning packets. Add the seasoning packets to the oil mixture and whisk until well combined. Cover dressing and refrigerate until ready to serve salad. When ready to serve, pour dressing over coleslaw mixture. Crumble uncooked ramen noodles then add to coleslaw mixture. Gently toss all ingredients until combined. Serve immediately. Notes: Wait to add the dressing and uncooked ramen until just before you’re ready to serve. You can substitute other nuts for the almonds – use what you like. Credit: southyourmouth.com
Fluffy French Toast
Raise your hand if you’re sick of soggy French toast? This recipe is the best thing since sliced bread. It’s French toast with no sogginess but all the flavor. Ingredients: • 1 cup all-purpose flour • 2 tsp. baking powder • 1 tsp. sugar • 1 tsp. ground cinnamon • 1 cup milk • 2 eggs • 1 tsp. vanilla extract • 12 slices Texas Toast (thick-sliced bread) Instructions: In a bowl combine all the dry ingredients (flour, baking powder, cinnamon and sugar). Stir together well. In an 8x8-inch square dish or wide bowl, whisk together the wet ingredients (milk, eggs and vanilla extract). Add dry ingredients and wet ingredients together and whisk vigorously. Batter will be lumpy. Heat a large nonstick skillet over medium-high heat. Begin dipping bread slices into the batter. Dip one side of the bread, flip it over and dip the other. Let excess batter drip off, then place coated bread immediately onto the pre-heated skillet. Flip when browned and then brown the other side, about four or five minutes per side.

FOOD Hawaiian Baked Chicken
This recipe Hawaiian Baked Chicken makes savory, sweet and crazy delicious baked chicken drumsticks with only four ingredients. Ingredients: • 1 pouch KC Masterpiece BBQ Sauce Mix and Dry Rubs (Sweet Honey) • 3/4 cup pineapple juice • 1 tablespoon honey • 1 1/2 lbs. chicken drumsticks Instructions: Preheat the oven to 400 degrees. Mix the KC Masterpiece® BBQ Sauce Mix and Dry Rubs (Sweet Honey) with the pineapple juice and honey and stir to mix well. Add the chicken drumsticks and marinate for 30 minutes.
Arrange the chicken on a baking sheet lined with parchment paper. Bake for 30 minutes or until cooked through. Serve immediately.

Italian Cream Cake
Rich, sweet and an amazing showstopper for any event, this cake is made totally from scratch. Ingredients: • 1/2 cup butter, softened • 1/2 cup vegetable shortening • 2 cups granulated sugar • 6 egg yolks • 2 cups self-rising flour • 1 cup chopped pecans • 1 cup milk • 1 teaspoon vanilla • 16 oz. coconut (about 2 cups shredded sweetened coconut), divided • 6 egg whites, beaten to stiff peaks For the frosting: • 1/4 cup butter, softened • 8 oz. cream cheese at room temperature • 1 lb. powdered sugar • 1 tsp. vanilla • 1/2 cup chopped pecans Instructions: Preheat the oven to 350 degrees. Grease and flour three 8-inch cake pans. Set aside. In a large bowl, cream the butter and shortening until
smooth. Add the sugar and beat well. Add the egg yolks and mix well. Sift the flour and add into the sugar and butter mixture, onethird at a time, alternating with the milk. Stir in the vanilla, one cup of coconut and the pecans. Fold in the egg whites carefully until no pockets remain. Divide evenly between the three prepared pans. Bake 25 minutes and turn out to a wire rack to cool completely. While the cakes bake, sprinkle remaining cup of coconut on a baking sheet and toast it in the oven alongside cakes until brown and nutty, about 8-10 minutes, stirring every couple of minutes to make sure it doesn’t burn. Then set aside to cool. For the frosting: Cream the butter and cream cheese until well mixed. Add the vanilla and powdered sugar and mix until well combined. Spread between layers of cake and on top and sides. Use your hands to press the toasted coconut all around the sides. Sprinkle pecans over the top.

Family history In August, I will have been married to my husband, Dan, for 40 years. Dan is a graduate of the University of Alabama with a degree in electrical engineering. I have a daughter, Emily who is married to Brandon Woodard. They have three children – Kadence, 6, Landon 3, and Brooklyn 2 months. They live in Gardendale. I have a son, Drew, who lives and works in Madison. Education I am a 1976 graduation of Morgan County High School. I attended one year of college at Florida College in Temple Terrace, Florida, where I met my husband. How long have you lived in Hartselle? I have lived almost 55 years in Hartselle. Job I have been blessed to be able to spend most of my adult life volunteering at my children’s schools, Boy Scouts, Girls Scouts, band, softball, teaching Bible class. About 10 years ago when my children left home, I was given the opportunity to work with our community theater group, College Street Players, in the role of costume coordinator/designer. I had created some costumes for my children in the past but had no idea what I was getting myself into. Through the years, I have costumed over 500 people. It’s been a privilege to work with some of the best people/families and they keep coming back! I love seeing the kids grow to become confident, dependable, caring, responsible individuals in life and in our community. Where is your favorite place in Hartselle? I love when I drive by the Train Depot. Almost 40 years ago, my husband and I were among the first to be married there. What is your favorite restaurant in Hartselle? I love the food and family atmosphere at OhBryans. I am thankful that we have Zaxsby's and Arby's in Hartselle. Why do you love Hartselle? Some people would call Hartselle a small and boring town. I call it a warm, welcoming, caring, close knit, safe, supportive community. Hartselle is a great place to raise a family. We have excellent schools and teachers. Hartselle offers so many good things for kids/families to be a part of. Hartselle is the best place to make great friendships and lasting memories.
