THE EPICINE BUTCHER This cult favourite arrives at the legendary Market Theatre after delighting audiences and winning awards across South Africa and abroad. In this production, the Japanese story-telling art of Kamishibai is given a darkly hilarious, profane and utterly original revival. Kamishibai, literally translated as `paper play` originated as a form of children’s street theatre in the 1930`s. PREPARE CHEF ROB’S OLIVE TAPENADE CRUSTED KINGKLIP AT HOME WITH THIS SIMPLE RECIPE Olive tapenade crusted Kingklip with crab crushed new potatoes, Provencal vegetables & basil pesto A nice Mediterranean dish with Italian influences we prepare at the hotel. We are very conscious of using fresh ingredients of the best quality. It is your choice to make the tapenade & pesto but here are recipes if you would like to try it yourself: Tapenade: Ingredients • 1 garlic clove, crushed • 1 lemon, juice only • 3 teaspoons capers, chopped • 6 white anchovy fillets, chopped • 250g Calamata olives, pitted • ½ a cup of Italian parsley washed & picked • ground black pepper • 2-4 tablespoon extra virgin olive oil We like a smooth paste so it becomes easy to make we place in a blender and puree Pesto oil Ingredients • 50g basil • 30g pine nuts, toasted • 30g parmesan cheese, freshly grated • 1 clove garlic, peeled and crushed • 150ml olive oil • salt and freshly ground black pepper Ensure the basil is washed then once again place all the ingredients

For the dish • 2 portions of Kingklip • 200g baby potatoes (par cooked & cut into • 100g crab meat • 50g red onion • 50g baby marrow • 50g aubergine • 50g yellow pepper • 50g tomatoes • ½ a teaspoon chopped garlic • 1 teaspoon tomato paste • Tapenade • Pesto oil • Olive oil • Seasoning Prepare the vegetables dice them evenly, with the aubergine sprinkle with salt and allow to degorge. Once it has sat for half an hour rinse and pat dry For the kingklip preheat the oven to 200c, heat a pan on the stove, season the kingklip and cook on both sides for about 2 minutes a side (depending on the thickness of the fish). Place the fish on an oven tray and spread tapenade over the top of it. Finish cooking in the oven. In the same pan add a little more oil and heat add the pot add the potatoes to colour a little once they brown a bit add the crab & crush .Taste & season. In another pan heat some olive oil once warm add the onion, baby marrow, pepper & aubergine sauté to get lightly coloured add the garlic, tomatoes & tomato paste & allow to cook down, taste & season. Once the fish is cooked plate as desired & drizzle pesto

Marc Pendlebury, renowned whisky blogger and owner of the WhiskyBrother store, chats about the different “personalities” of whisky and how you can find the right match for your special someone. “What many people don’t know is that whisky is considered to have the greatest range of flavours out of all the spirit categories,” he says. “If you’ve tried one or two different whisky flavours, it’s not to say that you necessarily know what whisky tastes like.” Currently the most popular type of whisky across the world is blended whisky, which is made using grain whisky blended with malt whisky produced from a number of distilleries. You’ve no doubt come across brands such as Johnnie Walker, Chivas Regal and Famous Grouse – these are blended whiskies. Other big names in whisky include Glenfiddich, Glenlivet and The Macallan
– these are single malts which are the product of a single distillery and produced using only malted barley as their grain ingredient. Pendlebury explains that even within each brand of whisky, there is a diverse range of unique traits which makes it unhelpful to broadly categorise across the range. “What is most important to keep in mind is that, like food, your choice of whisky at any given occasion should be based on the time of the day, the season, the company and the mood. You need to select a flavour to fit the occasion,” he maintains. When purchasing whisky as a gift for someone else, there are three main factors to bear in mind. Most importantly, do they prefer single malts or blends? Are they already invested in a preferred brand or are they more adventurous and game to try something new? Ranging in price from less than R200 to several thousand rand, you’ll be able to find an appropriate gift on any budget. “It’s good to be aware that just because a particular whisky is more expensive, it doesn’t mean that it is of a higher quality,” cautions Pendlebury. “Similarly, age is not necessarily an indicator of quality

either. Young whiskies can be fantastic and older whiskies can be over wooded and unbalanced. I
still remember, when I returned to South Africa after being in Dubai for a while, I had 24 Hours to spend in Johannesburg and needed to make the most of my time. I decided to prioritise, by incorporating enjoyable experiences and meeting up with good friends. Careful planning made it possible for me, with the help of WiiDriveU Chauffer Drive, to get me around Johannesburg in the quickest and safest way possible as I had no time to waste. Arriving on a perfectly sunny day at OR Tambo, the first appointment was at SOHO Day Spa in Sandton City, massaging away the travel stress and taking care of the perfect manicure, pedicure and all the rest. My friends that joined me were so impressed, they still frequently visit SOHO for a much needed pampering on a regular basis. So we headed out to UKUTULA Game Lodge, outside Hartbeespoort Dam and enjoyed a walk with the lions and the lion cub interaction. On our way back to Johannesburg we stopped at The Hartbeespoort Cable Car to go up the mountain for lunch and enjoyed the perfect view of the Dam. I was so glad that I could spend a Saturday in Johannesburg as I was now able to attend a Matinee Broadway Show, The Jersey Boys at
As the day drew to a close I was super excited to go for dinner at Johannesburg’s latest and most extravagant restaurant, the opulent “Restaurant 500” at The Saxon Hotel. Once again I was able to impress my Friends with another outstanding experience of international standards in Johannesburg.

As I retired, exhausted but content to have had the privilege to once again enjoy an amazing day with those that mean the most to me and visiting places that mean so much to me. The next day started with an early rise to get to the launching site for Bill Harrop Original Hot Air Balloon Safari’s, to enjoy the views before returning to the Desert, home to me for a while. There was no better way to say goodbye to Johannesburg than having a bird’s eye view from a hot air balloon, an imprint never to forget and a place which I will return too again and again until I made it home. After landing we enjoyed a healthy Breakfast and it was time for me to get back to OR Tambo for my long journey ahead. 1. As a relative newcomer to performing comedy live, what is your take on the local comedy industry? I have only really done the Roast but I MC a lot of gigs where I try to be funny because nothing worse than being on a chair missing Modern Family and the person who has the mic most of the time is boring as Etv reruns. I think the local comedy scene is big and small at the same time. I feel just like any industry there are those who put work in and those that do not. I feel the ones that put work in want more people to join the industry and the ones that still have the same set from 7 years back, they do not want any new blood. I say make the circle bigger. Comedy belongs to the person who pays for the ticket. 2. How would you describe your on stage persona? I am myself on radio, I am myself on TV so I am myself on stage. 3. Is the role of women in the shaping of South Africa really changing, or is it simply being paid lip service? A bit of both because the true money comes in owning things, owning the shows and not just being paid to be on a bill. Women have just been allowed into the party so whilst it is good that women are allowed I am looking forward to us becoming more business orientated but we have to be in the business and watch it closely before we embark on bigger steps. 4. What is your favourite thing about JHB you would like to share with the Hello Joburgers?
Everything about JHB. The fact that the city never sleeps, I like that it is small and big all at once. When I hear people complain about seeing the same people I ask them if they have tried going to a coffee chop in Bedfordview...guarantee you, you won’t see anyone you know there. I like that if you get sick of JHB all you have to do is to be away from it to realize how much you actually miss it. 5. If you could choose one Johannesburg resident to be stuck in a lift with, who would it be? Does not matter who it is as long as they do not have body odour. That sh*t will ruin my day ! :-) 6. What advice would you give to anyone hoping to win a bar fight? Smile at the bouncers on the way in, that way when they come help they are on your side. 7. When/where will your next public stage show be, and what is it about? (Bitches) I am MC’ing the all female comedy show Bitches, it will be super fun and funny. We are also planning some skits. So it is basically balls to the wall only there wont be any balls on stage. Gold reef city 26 and 27th April. You can come on both nights.I will wear my hair differently each night, promise :)

TSOGO SUN’S BOOK A GUEST HOUSE AN EXECUTIVE GUESTHOUSE WITH THE HEART OF RURAL AFRICA
A
lways be ready to learn’ is the philosophy of the energetic owner of The Orchards Executive Accommodation in Midrand and member of Tsogo Sun’s Book-a-Guesthouse programme, Salome Tshungu. It’s a philosophy that, together with her hands-on approach and her heart for people, has paid off in her life and saw her qualifying with a Certificate for the UCT Guest House Management Course from the University of Cape Town in 2010 and winning Tsogo Sun’s Guesthouse of the Year Award in 2012. As the South African hospitality industry’s largest group of black women entrepreneurs – the 60 female guesthouse owners in Tsogo Sun’s Book-a-Guesthouse programme prepares for the announcement of the 2013 Guesthouse of the Year awards, Salome reflects on her year as the 2012 winner of the annual guesthouse award in Tsogo Sun’s entrepreneurial development programme. Salome was born to live a peoplecentred life. In rural Limpopo in a village called Wisconsin where Salome and her six sisters and brother were raised, the family’s home was a known and welcome stopover for people from distant villages who had walked long distances to retrieve their livestock from feeding pastures beyond their village. Salome remembers, “My father was a school teacher and my mother had studied domestic science. We had an outside room that was kept clean and comfortable for people seeking rest for the night. There was always a pot of food available and my mother’s homemade soap for them to wash with.” This early training was then underscored by her high schooling at Our Lady’s College, a Roman Catholic school near Polokwane. Salome embarked on a career of nursing, studying first at Baragwanath and then moving to the Elim Swiss Mission Hospital near Makhado (Louis Trichardt). After four years at Elim, Salome started her B. Admin at the University of Fort Hare in 1978, majoring in Personnel Management. During this time, Salome met and married Cliff and their two children were born. After many years of working in human resources in different industries, Salome was itching to do her own thing. “In 1993 I obtained a Coverall
SA franchise and began a cleaning business. We did well and were soon undertaking major cleaning jobs at various leading organisations. Then came a special turning point in my life. We had a cleaning contract in Ermelo, Mpumalanga, and a colleague and I had to stay at a guesthouse. It was the worst overnight stay I had ever experienced. That was when I decided that travellers to the town, especially black travellers, deserved a better experience. I bought a large house with an orchard of fruit trees – and the first The Orchards Executive Accommodation Guesthouse opened its doors in Ermelo.” In 2006 Salome decided it was time to give up her cleaning business and invest in another guesthouse, this time in Gauteng. It opened and in a short time had become a popular stopover for short and long stays by international and local travellers from many organisations. Salome was invited to join Tsogo Sun’s Book-a-Guesthouse programme in 2009, and is enthusiastic about the difference it has made to her business. The Tsogo Sun Book-a-Guesthouse programme is designed to assist the entrepreneurial development of accommodation establishments. It was through Book-a-Guesthouse that Salome completed her course with UCT – and it is through Booka-Guesthouse that she continues to have access to advice and support in all aspects of her business, while also being in a position to share her learnings with others. “Book-aGuesthouse means that I as a small business can belong to something bigger while maintaining independence.
