Editor's Note Festive season madness? Slow down, relax… we’ve got you’ve covered. Last year was the first time I have ever gone away over the festive season, and as much as I love the beach, it just wasn’t the same as being home with my family. You see, my family is big on Christmas. Correction: my mum is big on Christmas. She spends the day cooking up a storm, she dedicates the whole year to creating a giant bundle for our annual game of ‘Pass the Parcel’ and we have tons of friends over for lunch and festivities. It’s always the best day of the year – despite the mountain of dishes we have leftover. When we were kids, we’d always be home for the silly season because my mum could never figure out how to keep our presents hidden from us in a car for eight hours. Luckily, our Festive issue comes with a road-tripping article that will reveal all of the tips and tricks to travelling with children. Parenting author and expert, Nikki Bush reveals the secret to keeping them calm throughout the process, and stated that these are the best moments to make lasting memories as a family. If you’re anything like my mum, and usually spend your Christmas Day slaving over a hot stove, then you’ve got to read our piece on how to have a hassle-free festive day lunch. It’s got everything from recipes to cooking tips and

So if being trapped in the kitchen doesn’t appeal to you, there’s another option. Told you we had you covered! While most people head to the coast for the festive, I indulge in the quietness that settles over our City of Gold. Once the rush is over and the malls empty out, you don’t have to drive around for an extra ten minutes to find parking, all your favourite restaurants have amazingly fast service and everyone’s mood is a little brighter. People smile at you on the street and greet you at the checkout counters. It’s a transformation. My parting gift for you this festive season? Think about others. I know you’ve heard it a hundred times before, but there are people out there spending the festive season alone and out on the street. Volunteer one day of your time to a soup kitchen in the centre of Jozi, buy a few food parcels, wrap them up as gifts and make someone’s day. Give a little… that’s what this season is all about, right?

Complex Executive Chef The Indaba Head Chef, Christopher Groves joined the dynamic team in 2008 as an Executive Sous Chef, and quickly made his way through the ranks to Head Chef of the Chiefs Boma Restaurant - where he became renowned for his Beef & Beer Potjie and ‘Big 5’ Kebab. Prior to working at The Indaba, Chris worked abroad in a number of Five Star restaurants, and was mentored by the legendary Marco Pierre White, who is a 2-star Michelin Chef whose work ethos and creativity were an inspiration which Chris incorporates into his daily menus. Chris also worked on the Queen Mary 2, where he was the Demonstration Chef in the Chefs Galley – a popular
restaurant which showcases talented young Chefs. Once he took over the reins of the Indaba Hotel main kitchen in 2011, Chris added his own bit of flair and creativity to the menus and food presentation with great success. He also looks forward to becoming a firm favourite on the local dining front with the introduction of a new Bistro-style menu in Epsom Conservatory, which showcases his talented team and his love of food. Summer ipe c e Christmas R Pudding Serves 8-10 For the filling ½ cup cranberries ½ cup seedless raisins ¼ cup mixed citrus peel ¼ cup brandy 2 cups good chocolate ice cream, slightly softened For the spiced chocolate sponge layer ¾ cup cake flour ¼ cup cocoa powder 1 tsp baking powder 1 tsp mixed spice ½ tsp cinnamon ¼ tsp nutmeg ¼ tsp salt 4 extra-large free-range eggs ¾ cup castor sugar For coating and decorating 200g dark chocolate, melted To make the filling Pour boiling water over the fruits and peel and drain. Soak in brandy for 30 minutes. Drain and reserve the surplus brandy to moisten the cake. Mix the drained soaked fruits into the ice cream. Freeze the filling while preparing the cake.
To make the chocolate sponge Preheat the oven to 190ºC. Sift the flour, cocoa, baking powder, spices and salt. Using an electric beater, beat the eggs and sugar relentlessly until pale, thick and fluffy. Fold in the sifted ingredients. Line a baking tray with baking paper. Add the batter, flattening it evenly with a spatula. Bake for 15 minutes or until just firm to the touch. A tester inserted should come out clean. Invert onto a rack and allow to cool. To assemble Coat a typical Christmas pudding bowl with cooking spray. Slice the sponge through horizontally to make 2 thin layers. Cut out a round large enough to fit into the bowl. If necessary cut out a V from the round to make it fit easily. Pack in the filling. Cover with a round of chocolate sponge. Freeze until serving. Invert onto a plate. Coat the cake with melted chocolate (reserving some for decoration). Return to the freezer for a few minutes to set, or leave until serving. Drizzle the remaining melted chocolate onto baking paper and freeze to set. Decorate the pudding with shards of chocolate or a bunch of fresh cherries. Slice into wedges for serving.

Festive food done right! Stress less this festive season with these great tips… South Africans are pretty lucky when it comes to the festive season. The weather is amazing, so you can some snacks, side and desserts ahead of time and serve it cold. Chef Stacey Platts, owner of Infusion Catering and Events, dishes on how to make catering for your festive affair a breeze. Welcome drinks Choose a drink that’s easy to prepare, tastes amazing and can sit for a few hours without going funny. A drink that you can add alcohol to an hour or two before your guests arrive is ideal – just don’t forget to have a virgin version for children and those who don’t like to drink. Chef Stacey’s Christmas Sangria 2 X 750 ml bottles your favourite white wine, like Riesling 1 pomegranate 2 oranges, sliced thin 1½ cups cranberries 1 cup pomegranate juice 2 cups ginger ale Method In a large pitcher, combine the white wine, pomegranate arils, orange slices, cranberries and pomegranate juice. Allow to chill for at least one hour. Stir in the ginger ale and serve. Easy as pie, right?

Snack attack The first rule is – snacks and canapés should always be easy to prepare, simple to plate and be able to sit for an hour or two without spoiling while everyone mingles. You also don’t want to be stuck in the kitchen fiddling with your snacks all day. Chef Stacy suggests these simple, yet delish dishes… Beef Tartar on cucumber rounds – prepare the tartar ingredients the day before and just mix them all together when you need them. It’s also an ideal dish for your Banting followers. Griddled lime and Tequila prawn skewers with sweet chilli sauce – marinated overnight, seared before guests arrive and served at room temperature. Spiced nuts - they are easy, quick and can easily be made the day before. Quick starters Choose something simple that can be served cold, something you can pull out the fridge and place on the table without any fuss. A smoked salmon terrine with Melba toast is delicious, and can be made the day before. Prefer a warm option? Choose a recipe that can be prepared beforehand and popped into the oven just before serving. A caramelised
onion and goat’s cheese tart would be perfect for this and can be served with a rocket and walnut salad. The main event Now this depends on what your ‘traditional festive feast’ is made up of. Keen on having a gammon? Chef Stacy suggests poaching the meat in ginger ale, cloves and cinnamon for a few hours. It can then be glazed and kept in the fridge until it’s ready to be baked. A fan of lamb? Chef Stacy stole a recipe from her mom, who suggests slow roasting the meat for hours. Add a few cloves of garlic, rosemary, coarse salt and some olive oil to the meat, wrap it in tinfoil and pop the joint of lamb in the oven at 150°C in the morning, and by lunch-time you will have a succulent leg of lamb to carve up. Speed things up by baking your potatoes with your lamb for the last hour, turning up the heat for a delish crisp. Get creative with your roast chicken – it is for your festive table after all. Choose a stuffing that you love – Chef Stacey loves a mushroom, peppadew and feta stuffing but another great option is an apricot, toasted almond, sage and goats cheese stuffing. The chicken can be prepared the day before and then seared and baked on the day.

Method Whisk the brown sugar and mustard powder in a large bowl to combine. Add vinegar and honey, whisk well and strain through a fine-mesh sieve into a large metal bowl. Add eggs and whisk until blended. Place the bowl with the mustard mixture over a large saucepan of gently simmering water but do not allow the bottom of the bowl to touch the water as the eggs may scramble. Cook, whisking and scraping bottom of bowl frequently, until mustard is thick – takes about 5 minutes. Allow to chill before serving or divide into jars and chill. Select your sides Keeping your sides cold will help with the entertaining. A salad is simple, easy and always goes down well. Try a broccoli and green bean salad which can be blanched quickly and then dressed in olive oil, balsamic, garlic, mint and coriander. Simple, quick and delicious! Other favourite ingredients to add are baby spinach, toasted almonds, cranberries and sesame seeds.

Dive into dessert This is the grand finale – but remember, your guests will be quite full by this point, so keep it light, elegant and small. Chef Stacey recommends a Pavlova with lemon curd and fresh fruit. Or slices of watermelon with mince pies and fruit cake. A real winner – which will literally take you five minutes - is a caramelised camembert. Caramelise a few spoons of sugar and pour it over your camembert, and serve with some crackers, strawberries and grapes. Remember to stick the kettle on and have a pre-laid tray with coffee and tea at the ready. Parting is such sweet sorrow A parting gift is a lovely way to thank your guests for coming and it doesn’t have to be huge or expensive. Make it small and easy to carry. Mona Lisa Turkey Roulade Looking for a way to jazz up your turkey dinner? The chefs at Maximillien restaurant have perfected it, and it's enough to serve 8 of your closest friends and family. Ingredients: 2 slices of streaky bacon chopped 1 whole red onion chopped 1t rosemary & sage 375ml of chicken stock 2 medium sized chopped granny smith apples 200g dried cranberries 3 large turkey large turkey loins (breasts) 1t of coconut oil 1t infused truffle oil
1. Preheat the oven to 180 degrees. In a large nonstick pan cook the bacon over a medium heat for about 5-7 minutes until brown. Add onions chopped sage & rosemary, cook until the onions are soft. Add in 175ml of chicken stock & stir in the apples & dried cranberries, bring to the boil and reduce the heat & simmer until liquid evaporates and apples are moist & tender. 2. Remove from the heat & cool slightly. 3. Slice turkey tender loins length-wise, no cutting all the way through. Place each turkey loin between cling wrap pound to ½ inch thickness using a meat mallet. Discard the cling wrap. 4. Season the tender loins with salt & pepper on both sides, spread one third of the apple and

cranberry mixture over the tender loins, roll from bottom to top and tie using twine. 5. Heat oil in a large casserole over a medium heat, add tender loins, cook until brown on all sides, add remaining stock & fresh herbs – bring to a boil. Cover and bake at 180 degrees for 25mins. Remove from the casserole let it rest for 10 to 15 mins. Slice half inch thick slices. 6. Strain cooking liquid through a fine sieve over a bowl. Combine 2 tblspn of flour and cooking liquid stirring with a whisk and the remainder cooking liquid that is in the casserole & stir in the remainder of the apple & cranberry mixture. Cook for 1 to 2 mins until thickened and serve with the turkey.

Keep the festive bulge at bay! It can be difficult, but it’s not impossible, especially with these tips.
Here are our strategies for coping with the over-indulgence and late nights that are an inevitable, but enjoyable part of the festive season. Everything starts with breakfast
Start the day with a generous bowl of oats, topped with a handful of cranberries and a sprinkle of cinnamon. Yum! This will stabilise your blood sugar levels, which helps control your appetite later in the day.

Our best ‘morning after’ breakfast is a hearty omelette packed with nutritious veggies mushrooms for their energising B vitamins, tomatoes for vitamin C and onions for their liver-friendly sulphur compounds. Eggs are an excellent choice for the morning after because they provide choline - another nutrient that supports the liver. Add a sprinkle of cayenne pepper or a chopped chilli to boost circulation and rev up your recovery. If you can’t stomach a cooked breakfast, then go for a smoothie made with fruits like bananas, oranges or kiwi - these will help replenish the electrolytes lost due to the diuretic effects of alcohol.

Alcohol only supplies empty calories, so avoiding proper meals to compensate for a booze splurge means you’re actually losing out on valuable nutrients, just when your body needs them to help it regain normality. Outline the top and bottom eye and apply mascara to top and bottom lashes to dramatize the eye. Add black liner inside the water line if it’s a night out, otherwise keep the eyes natural by adding a nude pencil.

Germany Germany was the very first country in Europe to host a Christmas market. The Dresden Christmas market is a spectacle to behold, and has been running since 1435! If you’re visiting Germany during the December festive season, be sure to make a stop in at Munich and Berlin for a great festive experience. The Tollwood Winter Festival in Munich, as well as Berlin’s famous Christmas Market, are some of the best you will find anywhere.

in winter when the snow falls on the peaks and surrounding fields. Nativity displays, hand-made decorations and fun night markets, which offer goods like handmade Christmas ornaments, mulled wine and ginger bread are plentiful. It’s the perfect way to unwind after a day spent skiing or exploring. Salzburg is the birthplace of Mozart, so try catch a classical music concert or carol performance, which will surely top off your experience in Salzburg. Canada Montreal is the largest city in Quebec, a predominantly French speaking city that celebrates the festive season like no other. The celebrations begin in November already, with a spectacular annual Christmas parade. Over the festive season, there is certainly no lack of outdoor activities to participate in. Try sledding and skiing or strap on some skates at the outdoor ice-rink. There’s nothing more pleasant than gliding over the ice as snow falls gently around you. You could head downtown and experience an amazing Christmas light display, complete with trees and other decorations that really set the tone for a super Christmas holiday. Every Saturday during December, the city hosts a breath-taking fireworks display that adds to the festive spirit. The local Christmas market runs from December 5th to 24th, combined with an ‘In the Park’ festival, which features live performances, bonfires and yummy things to eat and drink.
Lapland, Finland The official home of Santa Claus is the perfect place to enter in to the festive spirit. Elaborate Christmas theme parks surrounded by thick snow is probably one of the best ways to spend a holiday. In the town of Napapiiri you’ll have loads of fun and experience exciting days exploring the Santa Claus Village. It’s not too far from the Arctic Circle and this destination is Europe’s Christmas capital. Expect live reindeer wandering around and you’ll have the chance to visit Santa’s workshop, and even meet up with the big bearded guy in the red suit! Parys Situated on the bank of the Vaal River in the Free State, Parys is an unwrapped gift for the festive season. There is just so much to do. For starters, 17 kilometres from Parys is the largest wild olive forest in South Africa. Parys is also home to South Africa’s 7th World Heritage Site – the Vredefort Dome, the older and largest known meteor impact site in the world.
Pilgrims Rest While the idea of a holiday in a ‘living museum’ might not excite some, there is definitely a market for lovers of local history. And watch it before you judge – your kid may just be one of them. Having said that, the entire town, declared a national monument in 1986 (and the home to early gold diggers – not the Playboy bunny type) lies in the magnificence that is Mpumalanga. It’s definitely worth a vacation. The likes of the Blyde River Canyon and God’s Window will make for those ‘wish you were here’ holiday snaps - and possibly take your breath away, once you’re done with the social media blitz of course.
Lads, there are three beer breweries in this town as well an exclusive distillery for brandy and liquors – with 52 different samples to taste. Tis certainly the season to be tipsy. Nikki says the most important thing to remember about kids and travel is that you need to remain engaged. Your eight-hour flight to London may have been the perfect chance to binge on series or catch up on your reading during your pre-motherhood days, but let’s face the facts. That’s not the case now. She warns that it’s when children don’t get attention that they start acting out, because they want you to notice them. The best way to avoid this is by touching base with them often during your journey. Keep snacks and drinks handy to avoid meltdowns and travel time can actually become quality, memory-making time.

For toddlers, Nikki recommends a ‘fun on the run’ bag. Fill it with forgotten goodies from their toy box – interactive board books with sound and touch elements, sticker books and toys that little fingers can bend and shape. “Essentially, your fun on the run bag should have something to eat, drink and play with,” explained Nikki, adding that small children have a short attention span, so pack several items that will keep them occupied for minutes at a time.
It’s easier to engage older children with games like ‘I spy’, ‘I went to the shops and bought…’ or ‘Twenty questions’. If they’re able to read and write, encourage them to play word games. Give them a long word – like hippopotamus – and take turns to see who can make the most words using those letters. Once you’ve reached your destination, you may notice that the children are put off by the unfamiliarity of the situation. Routine is your go-to here. Even if you don’t stick religiously to the same time, maintain your regular order like supper, followed by bedtime and bath time. It’s also a good idea to pack a bag of toys from home. You can take these with you if you go to a restaurant, and bring along a blanket in case festivities drag on and your little ones get tired. Bush acknowledges that travelling with kids can be a tall order - you’re asking children to keep still for a number of hours, something their bodies simply aren’t designed for. 7 minutes with Zandile Mzazi Born into a musical family and fast becoming a household name, Zandile is making huge waves on the local and international opera scene. She scooped up her first international singing award in Vienna in July 2016, and has even sung in a tribute concert in memory of Aimé Fernand David Césaire and Joséphine de Beauharnais, the first Empress of France.
Tell us how you got into opera. I was discovered at school under the baton of my mother. I also won a solo competition and got accepted at the University of Cape Town with very little knowledge about opera music. In my journey of discovering opera, my voice emerged.
Tell us what you enjoy most about your career. I love discovering new music. Challenging my own creativity and bringing the opera roles to life, infusing my own life experiences into them! I love learning new languages and meeting new people. Your dream performance would be for… Uh... Placido Domingo! I love his voice, his pure and natural musicality! He is incredibly passionate about creating platforms where young singers are discovered and have opportunities to launch their careers. The second ones would be… David Forrester and Andrea Bocelli. I keep their DVD’s at home and I just love their passion and how they manage to capture the attention of the audience. The ultimate performance spot would be… No doubt about it… the Metropolitan Opera House in New York and the Oscars in Hollywood!

What is your favourite part of the day? Early evening. It’s quiet and I can get a lot done because my energy levels are up! It’s also a great time to meditate too. Where would we find you hanging out in Joburg? If I’m not preparing for a concert, opera or a show, then you’ll definitely find me at home! Your favourite thing about Joburg is… The weather! There’s also so much to do, from cultural activities to family orientated activities. I enjoy going to art galleries and discovering small coffee shops. What three items can you not leave the house without? My phone (obviously!), my favourite bracelet and my handbag. Something no one else know about you… I absolutely love antique shops!
