he new year is always a time of fresh starts and good intentions, and this often involves giving up something. Whether it be sugar, alcohol or whatever your personal ‘bad habit’, the beginning of a new year often implies swearing off things … and denying ourselves many of life’s little pleasures in the process. So, I’m going to start my first editor’s note of 2020 with this thought: Instead of focusing on subtracting from your life this month, why not look to add something instead? First, I suggest visiting our Restaurant of the Month, the brand-new Dolci Bar and Pizzeria. The team behind the much-loved neighbourhood gem that is Dolci Café in Craighall Park has expanded into the neighbouring premises to bring us this pizza pioneer and buzzed-about hangout that proves that chefs can treat pizzas with as much care and creativity as fine dining. If you’re looking to say goodbye to your gluttonous dining pals without missing out on fine cuisine, head to one of our top ethical hangouts instead. These four eateries have given classic soul food staples a healthy makeover and offer something for vegetarians, vegans and raw food specialists alike. From there, make a beeline for one of our favourite happy hours that offer bang-for-your-buck. After all, if there’s anything Joburgers like better than eating and drinking, it’s doing so on a dime. One of my personal favourites is Winner Winner Jozi’s half-price cocktail special. Despite such a crushingly hip setting in Melville, the fried chicken joint offers cocktails like the Peanut Butter & Jelly Old Fashioned, Cereal Killer and Honey Rhubarb Whisky Sour. Finally, check out our top leisure activity picks for living your best life without breaking the bank – think a picnic on a long, sleepy summer afternoon at The Wilds nature reserve to admiring some of the best art in Jozi … for free. Another must-do this month is going to see Marvel Universe LIVE, happening at the Sun Arena Time Square in Pretoria from 24 January 2020 to 9 February. This live performance promises to be an action-packed show with non-stop special effects, aerial manoeuvres, pyrotechnics, martial arts, motorcycle stunts and vast 3D video projections – unlike anything fans have ever seen before. Regardless of whether this is completely accurate or not, it was obvious that we needed to develop a product that required no plastic packaging, and a shampoo bar was where we would start.

What advice would you give to someone who’s hesitant to switch from regular shampoo? It’s really hard to break away from the products you know and love, but I think we’re all starting to accept that it’s time we make some small changes to reduce our waste and our own environmental impact. Give one a go – hopefully you love it and never want to go back! Worst case scenario ... it’s one less plastic bottle into the ground.

News Cafe is on are journey to recreate their brand, starting with the revamp of News Cafes around Jozi and the introduction of their new cocktail menu, ‘A News Café Cocktail Experience’. The menu has removed the clutter of common drinks and only features a few classic cocktails as well as 10 carefully curated ones. hen the shop next to Dolci Café became available, owner-chef Jackie Righi-Boyd and her husband Clayton Boyd knew it was their chance to extend their restaurant’s offerings. This led them to partner with the O’ver Pizza team headed by Miss SA 2019 finalist, Lisa Stofella as well as self-taught baker and chef, Hamed Youseff and Reem Khami ... and Dolci Bar and Pizzeria was born.
Although the pizzas are the main attraction, the new bar shouldn’t be overlooked ... and nor should the cocktails. Prosecco Negronis, Strawberry Mojitos and our top pick, Jackie’s Painkiller made with gin, elderflower and lime, are just some of the impressive sippers on offer. And as for the bar snacks? Well, let’s just say you can definitely rule out the possibility of peanuts! Think, instead, fried chicken wings, pork ribs, crispy cauliflower florets and French fries smothered in truffle salt.
Like Dolci Café, the pizzeria is yet another unmissable culinary experience. Rather than making overcomplicated pizzas littered with toppings, which are a dime a dozen in this city, the new spot offers diners a choice of seven classic pizzas that are perfect in their simplicity. On the menu is the Antica Margherita, Diavola Piccante, Contadina, Calzone, Francese and O’ver – all made on a thin base and oven fired. Plus, the toppings are made in-house with local ingredients.
The actual space is also worth mentioning, as it boasts a stunning marble bar that occupies almost the entire length of the room. Behind the bar is a statement jade green wall with a narrow doorway to Dolci Café. The interiors are trendy and modern compared with the more classic interiors of Dolce Café, but homey touches like the stunning greenery dotted throughout the room and the vintage photographs hung on the facebrick wall opposite the bar give it a relaxed feel. Of course, the signature O’ver Pizza oven is also in sight.
For those who long for true Italian style pizzas that are modest in ingredients but bold in taste, we recommend the Antica Margherita topped with fior di latte (a semi-soft fresh cheese made in the style of Italian mozzarella), Italian tomatoes and basil. If you’re after something slightly more complex, the Francese will leave you more than satisfied with its mouth-watering flavour combination of smoked mozzarella, crisp lamb bacon, caramelised onion and berry balsamic reduction. However, we have to admit that the O’ver is a firm favourite, as it combines two of the best things in life: Smoked salmon and pizza. Seriously, how much better could it get?

he Mythos group is known for out-of-this-world Greek cuisine, and the recently renovated Mythos in Bedford Centre is certainly no different. With a fresh new look and even fresher flavours, it’s easy to understand why this restaurant is jam-packed even on a midmonth Saturday night. Although Mythos has many, many tasty options including seafood, poultry dishes and pastas, we recommend the meze for two because it allows you to sample a variety of dishes and there’s no better way to enjoy a meal than by sharing it. Expect generous servings of beef and chicken souvlakia, yiro beef, prawns, calamari, creamy chicken livers, tzatziki, taramosalata, a whipped cod fish dip (which might not sound appealing but is TDF!), pita breads and keftethes, otherwise known as Greek meatballs. If you’re not a meat lover, don’t despair as they also do an exceptional vegetarian meze that has some refreshingly different offerings from the usual, such as baby marrow keftethes that are deep-fried and marvellous when dipped in tzatziki. We also have to admit that Mythos does fantastic
drinks too. Their wine list is impressive and boasts a couple of must-try Greek wines. Plus, the signature cocktails present a multitude of gins – think peppered strawberry, watermelon and mint as well as grapefruit G&Ts. What’s more, the dessert options are unsurprisingly delicious. As they say, the proof is in the pudding – or in Mythos’ case, the rice pudding. Rizogalo is a traditional Greek rice pudding topped with a sprinkling of cinnamon and a whole lot of flavour. Though it may seem like the kind of thing you’d have at your gran’s after a Sunday lunch (and it might well be as comforting), it’s bound to become your new fave ... you can thank us later! Freddie is a born and bred Joburger who’s worked in prestigious restaurants around the world and has been at the helm of The Pot Luck Club in Cape Town for the past few years. Lucky for us, he’s back in Mzansi and is heading up one of the trendiest new restaurants in town.

TELL US ABOUT YOUR CAREER UP UNTIL NOW. While I was still in college I moved to Lisbon and worked at a bakery there. My grandfather used to be a pastry chef, so I was really interested in that. It was one of the best times of my life because I got to know my family there and I worked for a crazy baker who taught me a lot. In 2008 I moved to France and worked in a Michelin star restaurant for two years and in 2010 I came back home for the FIFA World Cup. During that year I was part of the group that opened The Fairway Hotel and the Brazilian soccer team actually stayed there, which was an amazing experience. After I left The Fairway Hotel I planned on moving to Peru, but decided that I wanted to stay in SA so I moved to Cape Town and worked as the head chef of The Pot Luck Club until I came back to Joburg in March. WHAT’S BEEN THE BEST PART OF WORKING AT BASALT? Opening it up and developing a whole new menu by myself has definitely been great. Also, creating a concept and watching it evolve. The menu is heavily inspired by my Portuguese heritage and my travels; the food is very global. It also has a more plant-based focus – with vegetables there are endless possibilities and that’s something that’s not celebrated enough in Joburg. WHERE ARE BASALT’S INGREDIENTS SOURCED FROM? Local producers. We have a great local fruit and veg supplier and have also managed to find a supplier who does pasture raised eggs and another one who does free-range, grass-fed beef. We also use the Abalobi App, which I used when I was at The Pot Luck Club. It was created by a lecturer at UCT who started working with small-scale fishermen and linking them directly to restaurants to promote sustainability. Basically, you go on the app see what fish is on the market, you order it and it arrives with a QR code that tells you where the fish was caught, who caught it and when it was caught. It used to only be available in Cape Town, but has now been expanded to Joburg, which is great because you know exactly where your seafood comes from.
WHAT’S YOUR FAVOURITE DISH TO PREPARE? Probably the pork belly because that dish was really inspired by my trip to Mexico last year where I learned how to make the spice paste. Usually I work with a lot of my dishes – some are really good from the beginning and some you have to work on, but this one was just great from the start. The technique and skill that I had to learn in order to make it was cool. Learning is important to me! DO YOU STILL COOK IN YOUR SPARE TIME? All the time. I love having my mates over for dinner and I enjoy cooking. Cooking at home is therapeutic because there are no deadlines, and nothing has to be perfect. Cooking for me is beautiful; it’s my way of expressing love. I’m only a chef, but at least I can still make people happy and I like the idea that I’m serving my fellow man in some way. Mediterranean dining … reimagined In November 2019, Hello Joburg Magazine hosted 50 of Joburg’s top food and lifestyle influencers at the launch of Ethos, Morningside’s new Mediterranean inspired restaurant. Here’s all you need to know about renowned Joburg restauranteur, Chris Tatsakis’ new venture that offers a sophisticated, intimate dining experience.

rom the moment our guests walked in – from the entrance hall, to the bar and tapas lounge, all the way through their tables – they were taken aback by the Ethos’ extravagant interiors, which were left up to Chris’ son, Giorgio, who’s currently studying a degree in interior architecture and design. Giorgio describes his approach to the interiors as “a take on a modernised authentic, Mediterranean style”. He adds that the interiors and design of the restaurant were conceptualised around the colours and unique features of the Mediterranean. With a combination of wood, brass, terazzo, marble, ceramic tiles and different textiles, the space can be described as contemporary with a Mediterranean flare. Chris says that they’ve been incredibly fortunate to use our local talent by teaming up with local artists as well as going international by importing a few items from both the United Kingdom and Australia. The evening kicked off in the stylish bar and tapas lounge with Tea Party cocktails – refreshing gin-based drinks made with rose and chamomile. Ethos also boasts a 12-seater private dining room that’s suitable for any occasion. Guests were then taken through to their tables in the main restaurant, where they enjoyed a variety of Mediterranean meals ranging from Italian, Greek and Spanish while grooving to the sounds of a live DJ. “Ethos has been a lifetime in the making and it’s more than just another restaurant; it’s an experience of the very Mediterranean soul that put us on this path in the first place,” says Chris.
Ethos offers South African dry-aged and wet-aged cooked on open fire on charcoal machines manufactured in Spain. Guests got to sample Angus and Wagyu beef from renowned farm, Sparta and Woodview in the heart of the Free State. They also got a taste of Ethos’ local cuts of Karan beef, which the restaurant puts through their own ageing process to add to the tenderness and flavour. Each dish was perfectly paired with wine selected by head sommelier, Duane Hendricks who took to Cape Town with Chris to capture a great selection of rare Cape Winemakers Guild wines. This magnificent new addition to the City of Gold’s dining scene is now open to the public and we highly recommend popping in to try the thinly sliced octopus carpaccio with baby pickled peppadews, garlic foam, squid ink and lemon aioli, green olive gel, dill vinaigrette and shoestring fries; tender-cooked creamy pearl barley with poached duck egg, asparagus shavings and fresh black pepper pecorino; and, of course, the whole line fish that’s wood coal grilled, rubbed with herbs and olive oil and filled with layers of tomato, olive oil and red onion. If you agree, hit up the Abstract ceramics exhibition where Cape Town-based contemporary ceramist Clementina van der Walt will be selling a broad, eclectic range of items, including utilitarian tableware, sculptural vessels, figurines and architectural wall pieces. Taking place at Kim Sacks Gallery until 15 January, this exhibition focuses on the concept of ‘abstract’, taking influences from the simplicity of traditional tribal masks; ‘wabi sabi’, the Japanese aesthetic philosophy centered on the acceptance of transience and imperfection; American abstract expressionism; and midcentury potters and artists such as Miro, Kandinsky and Malevich. Boundary-pushing conceptual artist Kendell Geers is back with a new exhibition. In Gozi We Trust plays on Ingozi, the Nguni term for danger or accident; Jozi, one of Joburg’s names; and the idea of In God we Trust. It’s also a subtle reference to Johannesburg, 2nd Greatest City After Paris, William Kentridge’s first animated film that came out in 1989. We know that Joburg is one of South Africa’s top three most violent cities to live in, and this exhibition examines the role that “threat and danger play in the construction of Johannesburg’s identity and the consoling habit of finding comfort through the beauty of art”. Geers says the work blends the emotional geography of suburban paranoia with the very real dangers that make Joburg one of the most psychologically complex cities in the world to feel safe. In performance artist Steven Cohen’s latest exhibition, There’s Glitter in my Soup!, he presents a new series of intimately crafted self-portraits that incorporate glitter, make-up, butterfly wings and his own DNA. Happening at Stevenson Gallery until 24 January, the promise in this exhibition is that the portraits will bear the memory of Cohen’s previous performances and the emotional tolls that they take on the artist before, during and after. In his own words, “It’s strange to make a work by unmaking one.”

This means that sending your team on the same gorilla trekking trip in Rwanda that you did five years ago simply won’t work today. We’ve rounded up the best advice for planning an incentive trip that keeps up with ever-changing trends. Select and know your target group The first step when planning an incentive travel programme is to select your target group. This could be management, employees, salespeople, a mix of departments or even your clients. From there, you’ll be able to plan a programme that’s of value to the individuals participating. If you think there’s no need to personalise anything because everyone loves relaxation and good fun, think again! While the main goal of the incentive trip may be to make a good impression, it should also add value. For example, if your target group are teams that don’t spend a lot of time together in the office, choose a format that supports connection building. If it’s customers, try fit some brand seminars into their itinerary.

Set reasonable targets – and track performance

Next, you need to establish reasonable tasks for your target group. Consider past performance and employee behaviour to identify reasonable tasks – this will boost motivation and morale. Compile an incentive travel checklist It doesn’t matter if your list of tasks is your own handwritten notes or a pre-built online template – building an incentive travel checklist is crucial! It will keep things organised and act as your personalised accounting book where you can calculate expenses and record applicable taxes. All the expenses related to the incentive trip should be reasonable and effectively risk-free – the expected ROI should match the initial budget. Keep in mind during the planning process that travel can be taxable to recipients under certain conditions, and special tax forms may be required.
Plan post-event activities Lastly, ensure that the incentive trip doesn’t end there. Survey your attendees, set up a photo-sharing competition or organise a post-event seminar to follow up on the trip. These activities don’t have to relate only to those who were on the trip – let your attendees share their long-lasting memories and impressions at public events too. DESK FOR SUCCESS Organise your workspace like a boss It’s a new year, which means it also might be time to update your workspace. It doesn’t matter whether you work from home or a high rise in the Sandton CBD – having an organised office means a more productive you.

INJECT INSPIRATION
Getting rid of the things you don’t need anymore may seem like an obvious step, but it’s a necessary one in most people’s cases. Things like broken pens, outdated calendars and old post-it notes just never seem to be thrown away, but a new year means this is your chance to purge your desk of all the things that are cluttering it up. Clutter is known to contribute to stress, anxiety and guilt, so getting rid of it is a sure-fire way to boost your productivity. As for the things you do need, make sure everything is organised well because let’s face it – you can’t be your most productive self if you spend the better part of an hour trying to find your notes from the last meeting.
If you’re like most Joburgers who spend an average of 40 hours at their desk per week, you should know that having a workspace you enjoy being in will make you more productive. Adding personal touches through photographs and desk accessories is a great way to do this. Hanging up inspirational quotes can be particularly useful for keeping you motivated during the week and at low points (cue Monday morning). Plants are also fabulous for bringing life an energy to a room – succulents, peace lilies and aloes are some sweet yet low maintenance blooms that are sure to do the trick!

Colours have been proven to have an effect on moods and emotions, meaning that they can evoke both physical and emotional responses. Use this to your advantage by choosing colours that represent what you want to achieve. Blue is most often associated with productivity and supports career success and growth, while green represents serenity and balance. If you’re in need of inspiration, then go for bright colours like oranges and yellows, or white if you want to stimulate good creative energy. Obviously, most people won’t be able to paint the colour of walls at their offices, so instead bring these colours in with small desk accessories.

The way you arrange things on your desk can also contribute to your productivity levels. Things that you’re frequently reaching for like your phone, lip ice and tissues should always be placed on your dominant side. It’s also important to embrace the idea of white space – so leave a portion of your desk empty. According to feng shui, the best placement for your desk is facing the door to your office, which is known as a commanding position. If possible, your desk shouldn’t be facing the wall or window, or be directly in line with the door.

His boyhood whims may not have materialised but Greg Shapiro, who’s now a partner in a corporate and commercial law firm, hasn’t done too badly at all. We caught up with him to talk about work and life ... and the so-called ‘balance’ in between. What did you want to be growing up? I’ve always enjoyed photography and travel, so I always wanted to be a National Geographic photographer but alas, it wasn’t meant to be. Instead, I took up law – I studied for five years at The University of the Witwatersrand and then did a further two years of articles before qualifying. Anything you wish someone had told you before you chose this path? I really wish someone would’ve told me to do vacation programmes during your studies and to be prepared for long hours. Who are some of your firm’s biggest clients? We have a wide variety of clients in the ICT sector, industrial sector, mining and private equity as well as high-net worth individuals. How do strike a work-life balance? It’s a challenge, but I try and do as much as I can during the week to ensure that there’s quality time with my family over the weekend. I also try and prioritise other aspects of my life to keep the balance How do you spend your down time? I’m constantly in search of the perfect coffee, so I often go to local coffee shops, such as Naked Coffee, Croft & Co and Loof. I also enjoy the outdoors, so on weekends I’m usually out trail running at Groenkloof Nature Reserve or Klipsrivierberg if I have the whole morning, or otherwise on the Delta Park greenbelt. Reading is another hobby of mine – Collectors Treasury on Commissioner Street in Joburg CBD always has a treasure.

What do you love most about Jozi? Definitely the diversity of space. There’s a city centre with traffic, loud noises and people from all walks of life as well as greenbelts running through the whole city with no cars, peace and serenity and hardly any people. I love the juxtaposition.
