he Jozi Film Festival closed with a stunning star studded awards evening that saw international documentary feature film, A Billion Lives scoop up the award for Best International Documentary Film. Directed by Aaron Biebert, the controversial documentary revealed that the World Health Organisation predicts that a billion people will die this century from smoking – a terrifying statistic. After watching his friend die from lung cancer, director and executive producer, Aaron Biebert ventured across four continents,
interviewed a number of doctors, scientists and policy makers from major international health organizations to answer a few of the many burning questions regarding the safety and health concerns around the latest craze, vaping. E-cigarettes and vaping can help people quit or cut back in smoking, as they don’t contain tobacco or tar. Vaping is the process of inhaling water vapour through a personal vaporizer – the vapers tobacco free version of a traditional cigarette, which heats a liquid, which is mainly made using vegetable oil, to create water vapour. It is almost completely odourless and thousands of people have jumped on the vaping bandwagon. Spoiler alert – the startling film uncovered that compelling studies have found that e-cigarettes
and vapour products are 95% safer than smoking cigarettes and can save smoking related pre-mature deaths by 21%. A Billion Lives reveals how pharmaceutical companies, anti-smoking advocacy groups, tobacco companies, and even governments are to blame for the disinformation, over-regulation and banning of e-cigarettes worldwide. It truly is one of the must-see films of the year. “I am immensely honoured to have won this prestigious award and have hosted our African Premiere in South Africa. It used to just be food. Now we do a full coordination – weddings and event coordination,” she explained. That’s right – they’re the whole package. Karen and her hardworking team offer everything from unique designer menus of mouth-watering food to complete event management service, including event and floral designing, hiring and decor, beverages, front of house managers and even waiters. In fact, By Word of Mouth even has its very own venue – The Polo Room, so they’ve got everything covered. All you have to worry about is who’s coming to the most epic event of the year.

“If I could pick everything from a garden and cook it, I would. I like to know where my meat is from, to know where my fish is from and to pick my ingredients.” Which is why many of their ingredients are locally sourced.
So what inspired Karen to take on the challenge of starting her own business? She says that she always knew that she wanted to be a chef - her parents were exceptional cooks and she basically grew up in the kitchen. However, it was only after she returned to South Africa after working in London that she spied a gap in the market. “South Africa was still doing soggy sandwiches and tin-foil covered plates. I mean, you couldn’t even get sun-dried tomatoes. I knew I had value to add to the industry, that I could do something different from what other people had.”
We had the pleasure of watching Karen test a few of the recipes she’ll be showcasing during the annual By Word of Mouth Festive Workshops and Market event that’s set to take place in October. Needless to say – they look absolutely divine! Karen is calm and confident while she cooks, multitasking away as she chats up a storm and whips up delicious dishes. Her team is always close at hand to help out and together, they work like a well-oiled machine – which is brilliant considering the fast-paced, incredibly stressful industry they work in. hen The Hussar Grill first opened its doors in 1964, the owners probably had no idea that 52 years later, the restaurant would be the go-to spot for good wine and even better meat. Hello Joburgers, believe us when we say that you will not be disappointed by this spot.
With lush booths, cosy tables and bare-brick walls, the space is intimate and classy. Various wines and whiskies adorn the shelves and boards while the house specialities and special offers fill the walls. You can see the kitchen and hear the sizzle of grilling meat – it’s a comfortable spot with a relaxed, joyful atmosphere. If you’re anything like us then every once in a while, you get a hefty craving for a really good steak. We’re convinced that The Hussar Grill was created simply to satisfy that craving. They don’t mess around – there’s no artificial flavouring or sweetened basting on these hunks of beef – just pure flavour.

For starters we ‘uhm-ed’ and ‘aah-ed’ and finally settled on the Hollandse Bitterballen. It may look like a meatball, but it’s so much more… delicious beef bits and beef jus, mixed with creamy Béchamel which is then superbly crumbed and deep fried and served with tangy Dijon mustard on the side. They’re so incredibly smooth you won’t know what hit you. Another must-try is the Mussel Pot. The Hussar Grill stays true to its Capetonian roots with this wonder… a hearty serving of West Coast mussels that are so fresh they taste like they’ve come straight from the ocean, doused in a cream, fresh green herb, garlic and white
wine reduction and served with slices of crisp bread. Molto buono! For mains we indulged in one of the house specialities – the Hollandse Biefstuk. This perfectly portioned piece of beef fillet is speckled with coarse black pepper and flambéed in a delicious mixture of butter and brandy. We opted for chips on the side. Before you think it, it’s not overly buttery and you’ll be so consumed by the steak that you might just forget about your side dish. Our second favourite of the evening was the Chateaubriand, so tender and so soft, it literally falls apart under your fork. The succulent fillet is presented with a bowl of Béarnaise sauce on the side and then flambéed in brandy right in front of you! Dinner and a show? Check! That Béarnaise sauce is seasoned to perfection and is rich and creamy while still being delicate on your palate. All this paired with a sneaky bottle of Petit Plaisir 2013 Plaisir de Merle (not always featured on the wine list), recommended by the incredibly knowledgeable and helpful manager, who is more than happy to suggest pairings for those who aren’t in the know about all things vino. Amazingly, there was still room for dessert. If you’re silly enough not to try the signature dessert and in-house creation – the Chocolate Vodka Martini, then you’ve got to sink into the Hussar Grill Ice Cream. Home-made vanilla ice cream with all the goodies – peanut brittle, marshmallows, nougat, honeycomb and sprinkled nuts, drizzled in dark chocolate sauce. Can you say heavenly? Chef Chantel Dartnall
f there were a definition for everything that’s right with the world, award-winning chef Chantel Dartnall would be it. She adjusts her crown and starts her day of running a mini empire, loving every single step along the way.
Pretoria, while her family created Restaurant Mosaic and The Orient. We love the inviting atmosphere and welcoming ambience of this place - you can sense the family pride, the passion for food and for people. It’s no wonder Chantel finds inspiration from Mosaic’s gorgeous setting in the lush Francolin Conservancy in the Crocodile River Valley. “For me, it’s vital to serve visually appealing dishes that tell a story and stimulate diners’ senses from the moment the food arrives at the table.”
She’s an inspiration to many young women and has enhanced South Africa’s status as a gourmet destination. Chantel is a creator, an inventor and a magician - once you’re under her gastronomic spell, there’s no escaping!
When we asked Chantel what food meant to her, she so beautifully said ‘food is about featuring Mother Nature on a plate, where each dish is designed to reflect the beauty, harmony and purity that you find in nature.’ Restaurant Mosaic was one of the first restaurants in SA to be known for botanical cuisine, incorporating all natural elements and when you open the menu, you understand where this love stems from. The menu is ten pages long because each course is identified and explained.
Chantel grew up in the gorgeous Francolin Conservancy in Elandsfontein just outside of Pretoria, and having been a vegetarian before she started cooking professionally, we just had to know if she ate all her veggies growing up. “Yes, I certainly did eat all of my veggies.” After finishing school she enrolled at the Prue Leith College of Food and Wine in Centurion. After graduating, renowned UK chef Nico Ladenis offered her a position as a commis chef in his restaurant, Chez Nico at 90 Park Lane in London. “It was a big break. At that time, Nico was one of only two British chefs in possession of three Michelin stars, where after I worked with Michael Caines of Gidleigh Park in Devon.”

This is no typical restaurant dining experience, this is a voyage - an unforgettable, hedonistic culinary experience fit for the connoisseur. Her menu really entices the senses. Chef Chantel is a firm supporter of local suppliers and farmers. “It’s very important for any chef to create a strong bond with suppliers - especially the local farmers. We love the Paw Paw Lassi but nothing beats the Almond Butter smoothie, jam packed with banana, dates, Organic Maca, Organic Mesquite and plant-based protein powder, topped off with almond milk. The smoothies can also be bought and kept frozen for up to a month, which is a real winner! are intimate and cozy with just sixteen people per class. Most importantly we were told that it is a macaron (mack-ah-ROHN), darling not a macaroon (coconut based cookies). Next we were given a demonstration on how to create the perfect sandwich cookie. We couldn’t wait to discover how to master salted caramel macarons, blueberry, almond raspberry or even mojito macarons… but the task was greater than we could have imagined. These pint-sized cookies are not as simple as they seem and okay, we’ll admit it, they didn’t turn out magnifique. However it’s all about flavour right? And we had so much fun in the process. A delicious and healthy recipe from chef Jill Lee Okkers Chef Jill describes herself coffee mug hugger, recipe creator and avid eater, with an immense passion for all things food. She also has 13 years in the food industry, so she knows about food. Try her recipe for divine, fresh ceviche.
Kabeljou Ceviche with Miso and Nori Emulsion Serves 2 300g
of Kabeljou, skin removed and cut into cubes.
Dressing: 3 Limes, use the zest and juice ½ a birdseye chilli, chopped 1 Tbsp each of fish sauce and mirin ½ tsp of kosher salt Combine ingredients in a bowl and pour over the fish cubes. Leave to stand for 20 minutes in the fridge - the fish will become slightly opaque. For Miso and Nori Emulsion: 1 cup of mayonnaise 2 Sheets of Nori 2 Tbsp of white miso paste 2 Tbsp of water Blend all these in a high speed blender and put to one side.

Aileen Quinn ended up being cast as Annie in the film and was also in the Broadway production, but originally auditioned as an extra orphan. Aileen Quinn remains famous for her role as Annie in 1982 Cast preferences Bette Midler was the first choice for the role of Miss Hannigan but eventually went to Carrol Bernett. Albert Finney was not the first choice for Daddy Warbucks. Sean Connery just didn’t want to perform bald for the role. This one’s a winner! New Jersey’s governor signed a law to allow the child actors in the movie to work at night. In a movie about giving a young girl a fair shot in life, we find this story to be a real gem. Some of the scenes in the film were shot in the middle of the night. At the time, the New Jersey child labour law didn’t allow kids to make movies between the hours of 11.30pm and 7am. he South African national flag was first flown in April 1994, after the first free election in South Africa. It is designed by Frederick G Brownell and is the only flag in the world with six colours. The flag means different things to different people. According to the flag’s designer, the red symbolizes the blood that was shed during the various wars and conflicts in the country. It is also suggested that the blue represents the sky and the two oceans that flank the country. The green symbolises the farms and the rich, natural environment of the country, while the yellow represents the natural resources, particularly gold. What inspired your latest local release ‘Thinking about you’? Our latest release is actually ‘Find me in the Forest’ which was inspired by all our travels, touring abroad and getting a sense that you are floating from city to city, feeling very disconnected from home. I think we came to realise that ‘home’ will always be wherever we feel happy. ‘Thinking about You’ was our previous single which has been a much bigger hit than we had ever imagined! It’s a cover of a song by a group called London Beat from the 90’s. What’s the best advice anyone has ever given you? “Relax and enjoy the crises” - you can choose to stress about things or you can choose to not. The outcome is going to be the same so you might as well enjoy it!
