On Tuesday 24th September 2013 South Africa will be celebrating Heritage Day, otherwise known as National Braai Day! Heritage Day recognises aspects of South African culture which are both tangible and intangible: creative expression such as music and performances, our historical inheritance, language, the food we eat as well as the popular memory. For all South Africans, no matter what age, race or religion, a Braai is the most sacred of events used to celebrate birthdays, wedding anniversaries, corporate functions and in fact any auspicious occasion.
The team at Hello Joburg are not only celebrating our heritage on the 24th but in fact are going to celebrate throughout the month of September. Having this in mind, we have compiled a special ‘Heritage Month Issue’ bringing you all the latest event, dining and leisure information that will keep you busy well into the month. Firstly, if there is only one thing you get to do this month, you must go and see the hit musical Umoja which is on at The Victory Theatre until the end of the year. Umoja tells the moving tale of indigenous South African music - from the earliest rhythms to 21st Century kwaito. If you are entertaining foreign visitors this month or would just like to get a taste of true South African heritage then this is a show not to be missed! Have a look on our calendar pages for more events and shows on throughout Heritage Month. If you’re hungry for something new on the menu then check out our Dining Out pages which are jam packed with new dining destinations, chef interviews, recipes and dining out specials to keep your hunger at bay. One of our featured restaurants this month is the new and exciting Stella E Luna restaurant in Parkhurst. I can definitely recommend any of their mouthwatering pizzas, prepared in a traditional wood fired oven. ARTS AND CULTURE: 47 AN INNER CITY TOUR BY DLALA NJE Last month, Dlala Nje, Johannesburg’s most vibrant addition to the city’s cultural landscape, led a night tour through Yeoville.
The theatre was bought in 2004 by Joe Theron, who spent 30 million rebuilding a new 450-seat theatre (with wheel chair access) with a jazz bar and a 280-seater restaurant that flows up on to the roof with panoramic views of the northern suburbs.

The restaurant offers an a la carte or set menu which varies from traditional African meals to authentic Italian. THEATRE: CINDERELLA A new era in South African ballet and dance arrives with spring in September when South African Mzansi Ballet (SAMB) uncovers its glittering new production of Cinderella. MIKE’S KITCHEN The Country’s And Greatest Family Restaurant
B
ack in Greenside in 1972, Mike Illion (Oom Mike to the ‘laaitjies’ ) noticed that there were no quality restaurants to go dine at. Even Tannie se ‘kombuis’ wasn’t up to scratch any more. Once the apple eventually hit the ground and the paw-paw hit the fan, Mike’s plan was set into motion. A plan that would change Greenside and South Africa forever... to build the country’s and greatest family restaurant. He went around the whole town (as far as Poffadder and
‘duskant’ De Aar) to all the farmers, ensuring that his restaurant would have the freshest ingredients for all its meals. Even the aunties at the local ‘tuisnywerheid’ worked up a real sweat, (their cheeks wobbling and

looking like rosy apples), tasting and sampling all of Mike’s recipes. Mike even had to persuade his old army pal Hennie, to give up his Oumas famous rib-basting recipe, which was to form the basis of all Mike’s famous ribs. (We all know of course, who copied Oom Mike’s basting... well they tried to). Mrs Viljoen and Oom Mike worked until very late at night testing the boerewors recipe (wink-wink). Oom Mike’s new venture had the whole town a buzz (A total ‘toestand’) As he chipped away at the centrepiece, people asked, ‘‘What will he call it?’’ ‘‘What food will he
serve?’’ For months, Mike had the town in awe, as they slowly saw his masterpiece unfolding. Chefs were brought in for training, ads were placed in koerant for waiters and

staff. The whole idea was coming to life. After filtering through queues of waiter wanna-be’s, Mike assembled his team, ensuring that nothing was left to chance. All staff had to attend intense training sessions, lots of dress fittings and rehearsals. They had all their aprons and ‘kop-doeke’ made ‘nommerpas’ while learning all about customer service, good values, product knowledge and how to pour a ‘lekker’ draught. Eventually it was time for the great reveal. On 27 September 1972, the whole of Greenside came to a halt. The aunties spent the whole day dolling themselves up for their night out. The kids ran around in excitement, because that night they were going to eat at Oom Mike’s Kitchen. (No more eating at the Royal Hotel). That night, history was made. People arrived anticipating a meal but received a total kitchen experience. The smell of delicious ribs and steak filled the restaurant. The sight of over-flowing, delicious salads cap-
tured the senses, making everyone’s mouth water for miles. For hours, food streamed to tables and empty plates returned to the kitchen. (Even old Hennie was caught, under the staircase, licking his plate). The opening of Mike’s Kitchen was a great success. Mike and his team to this very day, strive for excellence in food and hospitality. CLASSIC POULTRY DISH RE-INTERPRETED FOR ZONNEBLOEM One For The Pot And One For Us

nspired by Zonnebloem’s plush,
plummy Merlot, food fundi Andy Fenner has re-interpreted an old French farmhouse favourite. Instead of chicken, he uses quail for this superb, slow-cooked dish that will have everyone fighting for the last drop of sauce made with a full bottle of the wine. The Merlot’s red fruit, chocolate and mocha tastes give depth and substance to the dish. To make the most of the meal, echo those delicious flavours by serving another bottle of the beautifully layered and soft-textured red from one of South Africa’s favourite cellars. Quail au Vin, with Zonnebloem Merlot 2011 Ingredients: 3 whole quails, cut into bite-sized portions by your butcher (or you can do this easily at home), and keep the carcasses aside for the stock 1 onion, 1 carrot and 6 whole black peppercorns (for the stock) 150g panc-
the heat down and let it simmer until you need it. Meanwhile, cut the pancetta into short strips. Place with the butter, into a thick-bottomed casserole dish and gently cook over moderate heat. Stir, from time to time (it mustn’t burn). When golden, remove and place into a bowl, leaving behind the fat in the casserole. Season the quail pieces with salt and pepper to taste and place them in the hot fat in the casserole. Turn them when the skin begins to get a nice golden colour. Be careful not to burn the skin (this is crucial to the end flavour of the dish). When you’re happy with the colour of the meat, lift the quail out and add to the bowl with the pancetta. Add the onions and carrot to the casserole and cook slowly, stirring from time to time, until the onion is translucent and it has gone some way to dissolving some of the casserole juices. Add the garlic. Return the quail and pancetta to the casserole, stir in the flour and let everything cook for a minute or two before pouring in the cognac and wine.

Melt the additional butter in a small pan. Add the small peeled onions and then the mushrooms. Allow to cook until golden and then add to the casserole with a seasoning of salt and pepper. Check the quail after 40 minutes to see how tender it is. Turn the heat up and let the sauce reduce and thicken. It should be glossy. Instead, creativity and choice are credited for the enhanced experience they are more likely to provide to patrons. A Silver Award represents a score of between 60% and 70%, a Gold Award between 71% and 80%, a Platinum Award 81% and 90%, and a Diamond Award over 91%.“

This has not been the case at all as I have a formidable team that strive to get it right all the time.

A: If you look at all the

Cornuti however has always been a destination restaurant.

What is your favourite dish on your menu?
A: At Cornuti Stella e Luna we
have introduced a new concept of eating which is based on the
Venetian version of Tapas called Cicheti - this is what you will find all the Gondoliere, and boat taxi drivers and hotel staff eating at the various cicheterie in the back streets of Venice. The idea is sitting at a table and ordering various small plates of different foods and sharing them with friends at the table. Start with our dips whilst you are waiting for your pizzas if that is what you have ordered, they come with our super thin pane di musica or music bread, grisini and other in-house backed breads. My father was born in Verona and that same concept of eating happens there too they are neighbours after all. Cicheti must be washed down with an Aperol Spritz (an orange based apperitivo mixed with prosecco and a dash of soda) - It is the right way to eat, relaxed and delicious.

Q. What is a typical day like in the kitchen of DW Eleven13?
A: Modern South African cuisine. Joburg is such a melting pot of different cultures, and at the same time very cosmopolitan. Mixtures of French, Asian, Indian and African flavours blend well together but at the same time we have a very simple mantra which is: intense flavour and creative, colourful cuisine that looks and tastes wonderful.
A: DW eleven-13 is a very busy place to work; there is always so much to do. We are usually fully booked for dinner two weeks ahead of time so my staff come in at 8:30am and prep for lunch. While they are doing lunch we prep certain items for dinner. We usually work through the day till 10:30-11:00pm. My staff works for 65-75 hours a week. Each week we plan innovative dishes and communicate on what we can change and

A: I, like any other cook have had a few dishes, which I have had issues with but with trial and error I was victorious. Q. If you could eat anywhere in the world, where would it be? As the term cognac can only be used for brandies made from grapes grown and distilled in Cognac, the Richelieu International and Richelieu 10 Year Old are classified as brandies. Further confirming their excellence, the Richelieu International and the Richelieu 10 Year Old also won gold at the International Spirits Challenge (ISC).
Last year, the Richelieu International was judged the world’s best blended brandy by ISC judges.

JOZI’S NEW CRAFT BEER CRAZE
H
ow does one describe Craft Beer? Well there are various forms of definitions but to put it simply it is beer that is brewed the traditional way or a beer that is brewed by hand rather than by a machine. The Craft Beer world has taken off world-wide, being led by the US and the UK is closely trailing behind them. Craft Beer brewers use only the highest quality of ingredients, ensuring that it is all natural and they avoid using any sorts of preservatives and flavourings. The trend has finally hit the South African shores and numerous restaurants and pubs have taken to this trend. This month I have visited two awesome pub style restaurants and I have summed up some of the best Craft beers that they offer.
The Wolf Pack in Parkhurst is one of the places I recommend for one’s weekly dose of Craft Beer. Aces Lager is one of their most popular Craft Beers, but they also offer Brauhaus Pilsener, Brauhaus Weiss Bier, Devils Peak Kings Blockhouse and Jack Black of course. But my absolute favourite would have to be the Clarens Cherry Cider. It’s pink, pretty, light and tasty. My next stop was also in Foundry, in Parktown North. The most popular Craft Beers in this part of town is Franky Four Fingers and both Jack Blacks. he 100 year commemoration of the Land Act provides an unparalleled opportunity to experience the stories of land in South Africa in ways that have not been told before. The exhibition offers insights into the complexity and contested nature of our landscape, and asks questions about how the land is signified and used, and the multiple meanings it has for those who live on it. Travelling in time from the past to the present day, Umhlaba 19132013 exhibits work by more than 30 photographers, and draws on the collections of 12 archives in order to sketch the history of land dispossession and its legacies, seen through the eyes of photographers who have engaged with these issues for over a century. Struggles over land, child labour, forced removals and last ditch stands are threads in the visual narrative; while a musical component to the exhibition expresses the deep passion and attachment aroused by land. This exhibition has travelled from Cape Town where it has already been shown at the Iziko National Gallery. During the run of the exhibition Paul Mashatile Minister of Arts and Culture commented about the importance of the exhibition: “We are building a new nation, united in our diversity. Today, a century later, government is still grappling to try and ensure that land is distributed to all those who work it. ast month, Dlala Nje, Johannesburg’s most vibrant addition to the city’s cultural landscape, led a night tour through Yeoville. The tour began with sundowners on Yeoville Heath, adjacent the water tower. Dlala Nje co-founders, Michael Luptak and Nickolous Bauer, then led the group into Yeoville for a taste extravaganza of West African cuisine. “You will be blown away by the hospitality of the place,” says Bauer about local hotspot, Kin Malebo village. He recommends the pesa-nzela grilled tilapia washed down with a chibuku. Luptak recommends West African styled restaurant, La Cameroonaise, for what he believes is, “the best grilled fish you’ll ever eat”. The two founders of Dlala Nje continue to rave about Yeoville, a hidden gem in Jozi, buzzing with warm hearts and enticing souls. They endeavor to break the negative perceptions people have of the inner city. After walking through the streets of Yeoville, the group indulged in starters at Kin Malebo. Fish heads were the order of the day, with a side dish of mfumbwa and pondu. Music burst through the speakers while locals – from all parts of Africa - shaked their hips to the rhythm.
Finally, the group hopped aboard a taxi back to Hillbrow to retire for a nightcap and breathtaking views on the 52nd floor of the newly revamped penthouse suite of the iconic Ponte Towers. Dlala Nje is a Games and Cultural emporium situated at the base of Ponte City in the heart of Hillbrow. Dlala Nje is currently engaged in several initiatives that will not only empower the residents of Ponte but also dispel the very negative perceptions Jo’burgers have on the inner city and Ponte itself. The shop is a hive of activity for the building’s residents and nearby Hillbrow, Berea and Yeoville. Both young and old have a safe environment to congregate and socialise. was fortunate enough to get the opportunity to sit down with the hysterical Ndumiso Lindi, to discuss the proud moments of life, Jozi and it’s wonders, comedy material, motivation and of course the truth behind the famous hat...
Q: Tell us about growing up in the township of Zwelitsha.
A: My people right through...
Those dusty streets of Zone 10 made me a survivor and a go getter. Yes my parents raised me but my community also made me. It’s true when they say it takes a whole village to raise a child. And if I decide to go left, my neighbour had the right to punish and point me to the right direction. I come from a place where people made best with what they had and when there were events and traditional functions the community supports each other.
Q:
Now, you’re in Jozi, in the limelight! Does it ever become tedious or mundane?
A: Life in Jozi keeps reinventing
itself, it’s like an app that needs to be updated after a year or so. If you’re bored in Joburg there’s something
wrong! You’re doing something wrong. Go to Cape Town and meditate on it.
Q:
How would you describe your material? And where do you get the inspiration to adapt, be diverse and remain unique?
A:I do observational material
mostly, those things that we all do or experience as humans regardless what colour we are. And if its a topic that another person wont understand it’s a matter of explaining it in a build up to the punch line. As a performer you need to convey the message not only based on what people hear but also on your actions For example: I could be saying something in Xhosa but my hand signals are explaining what I’m saying to the person who doesn’t understand the language. Just a few tricks that come with experience.
Q:
What are you most proud of in your life, that you feel most satisfied with- love, family, comedy?
A:All three have made me who I
am today. Without the love from my family my comedy wouldn’t exist.
First of all I thank God and my folks for giving me that bessing to do what I love as a career. My family are the best fans I’ve ever had. They’re a funny bunch too, like I talk about them in my comedy a lot to a point that one member will feel left out or neglected if I don’t mention them on stage...crazy I know. I’m a married man now so that has to be one of the proudest moments of my life... more material coming from that.
