Aliza Graham An Arty Academic

Chatting to Aliza at the beginning of a new year is quite liberating and inspiring. She knows where she’s going and what she needs to do to get there and don’t you dare stand in her way. Arts and academics have never been so entwined as with this inspiring teacher, actor, director and singer, who’s also busy with her master’s degree in counselling psychology. She lives in Doornkloof, Centurion, which she describes as a welcoming and family orientated environment. “There is a lot of community involvement and the community leaders really try to do fun things to get people to interact with each other.” She says that the pace of the suburb is slow and peaceful. To unwind, Aliza and her husband, Stuart, enjoys visiting the Roodeplaat Dam. “There are some lovely resorts around that area that give you a break without having to go out of the city.” For Valentine’s, though, they like to be creative. “We never go the commercial or restaurant route.” They would much rather pack a picnic basket and enjoy each other’s company at the National Botanical Gardens or Jan Cilliers Park or they would cook a fancy dinner. “One year I made a Salmon Wellington.” They also take turns – one year Aliza organises Valentine’s Day and Stuart takes responsibility for their anniversary and the next year they swop. Aliza is a firm believer in community involvement and feels that Pretorians should be much more involved, especially where there is a great need. She suggests residents act on things that matter, like helping kids who can’t afford extra lessons with their homework, visiting Watloo or Centurion SPCA for some volunteer work or helping out at a local child and youth care centre. “There are so many options for Pretorians to invest their time into. It is so easy to fade into the masses in a big city. By reaching out, you are also reaching within yourself.” Aliza seems to be reaching out, in and up high. Who would have thought that bush babies, also known as nagapies or Galagos, roam the streets of Brooklyn?

fter living in Brooklyn for two years, I can only attest to the possibility of bush babies living in its trees. I’ve never seen them. I’ve only heard their strange baby-like cries and the convincing comments of community members. Many might think it’s hearsay, but too many residents have heard them and some claim to have seen them – bush babies roaming the Jacaranda-lined streets of Brooklyn. There is a mutual agreement among residents in Brooklyn, a neighbourhood known for its charming residences and embassies, that at night there are bush babies that come out to play. Not many residents have evidence to prove it, but these nocturnal creatures’ squeaking cries can often be heard while sitting outside in the early hours of the evening. Anne Crafford, who has been living in Brooklyn for quite some time, says that they have visited her garden often between 2014 and 2018. She says they stopped coming after

bushbabies are one of the reasons Craigavon’s tree layout has been carefully considered. The area’s residents have even taken it upon themselves to make the suburb a safe environment for these primates. According to The Endangered Wildlife Trust (www. ewt.org.za), there have been sightings of the Southern Lesser Galago in the Jacaranda the bats started eating the fruit she put out and she wonders if that is the reason why they don’t see the nagapies anymore. According to her, they were quite fond of the grapevine they have in the garden and after reading up on what they eat, she started putting out fruit on the birdfeeder. In summer the whole bush baby family would pitch for dinner. Native to continental Africa, it’s not too surprising that they are found in the area, but it is still strange that they prefer a residential area, rather than the wild. Then again, Brooklyn is one of the most tree rich suburbs in Pretoria and with that comes a variety of insects which, in addition to fruit, bush babies feed on. The Jacaranda trees also boast the perfect resting and breeding sites, with hollowed out trunks and tree holes that offer protection. One can’t help but wonder if it’s the same type of bush baby as those residing in the leafy suburb of Craigavon in Johannesburg. According to monkeyland.co.za the Lesser

City: “In Pretoria and environs there have been several reports of groups living close to human dwellings, and even sightings in the Acacia thornveld that surrounds the Union Buildings.” INTERESTING FACTS ABOUT BUSH BABIES: They live in moist areas with short grass. Fire is their biggest threat because they are incapable of moving over large distances despite their impeccable jumping skills. Bush babies are preyed upon by owls, snakes, servals, African Wild Cats and genets. (Interestingly enough, a genet has been spotted in Evert Kleinhans, one of the Brooklyn residents’ gardens before). Samuel’s career in cuisine began when he started working as a sculler in the kitchen at Mount Grace Hotel. This role ignited a passion for cooking in him and he immediately aspired to become a skilled and learned Chef. He then enrolled at the Mafikeng Hotel School and did his practical experience at Le Franschhoek Hotel for three years after that. He has worked under excellent chefs like Trevor Boyd, Gerand Van Statend, Frank Lebbe and Matlhomola Thame who he credits for shaping his journey as well as teaching him lessons, techniques and invaluable skills. Now as the Executive Chef at the Regency Apartment Hotel, Samuel commands his own kitchen and hopes to grow young talented chefs in the same way that his role models assisted him.

Tell us what you do each day? My work day starts very early as we start with breakfast set up at 06h00. We host a lot of business travellers and embassy delegates who are in Menlyn on business trips and require an early breakfast as part of their schedule. After this, I check in with my team for a brief meeting and then go through emails. I then inspect the menu, check the fridges and stock, order the fresh produce and plan for the remainder of the day. If we have conferences or large scale events then the day runs a bit differently. How long have you been with the hotel? We launched the hotel in June in 2018 and I joined at this time. It’s been very exciting to start something like this with a hotelier as passionate as Siyanda Dlamini. I have loved watching the hotel go from strength to strength and be so busy for a hotel that is only six months old. I really believe in African brands and our hotel is a 100% African brand. Why did you want to become a chef? I was the eldest child at home and had to look after my siblings, making sure that they had something

How would you describe the food in your restaurant? I love using fresh ingredients to create depth of taste and texture. The restaurant at The Regency Apartment Hotel is suited to the business district in terms of menu sophistication but our food is healthy because we use the local farmers for fresh produce and seasonal ingredients. What are some of your signature dishes? Seared Norwegian salmon with vegetable stir fry and aioli and Beef fillet served with bone marrow and root vegetable Madeira jus. How often do you change your menu? About every three months. What would we find in your fridge at home? Plenty of fresh fruit and vegetables, but also plenty of wine and beer. It’s all about moderation!.
