The Lion and Safari Park unveils The Battle of Kalkheuwel Blue Plaque On Friday 26 October 2018 The Lion and Safari Park had the honour of unveiling the first Blue Plaque in the Greater Magaliesburg Region at the site of the battle of Kalkheuwel (where the Lion & Safari Park is situated today) in the South African War 1899-1902 hosted by the Magaliesburg Association for Culture and Heritage. The Battle of Kalkheuwel took place on 3 June 1900. What process should one follow when picking paint for a project? Paint comes in a variety of top coat sheens as well as either Enamel (oil-based) or PVA (waterbased). Generally, enamel is used on steel and PVA on walls. Higher sheen and textured PVA externally and low or mid sheen internally. Enamel also comes in an eggshell (low sheen) or high gloss (high-sheen). Enamel is also great for wood as well as doors and bathrooms. Once you have established which paint/finish you require, you simply go ahead and choose your colour at your local hardware, taking a rough measurement of the area to help get the correct quantity required. Three things people should know when choosing a contractor? 1. References from previous jobs 2. Must be accountable for their work. 3. They should guarantee the paint and the paintwork. I would also advise meeting face to face with the owner, preferably on site and really understanding the process and timelines involved. Your top DIY tips? 1. With paint, Preparation is key. You need to paint a perfectly smooth wall to get a perfectly smooth finish, so fill and sand all cracks, scrape and peel all loose paint and prime all those areas. 2. Always use drop sheets to protect the floors and tape to mask the area that you are painting. 3. When choosing a colour, rather get small samples (1litre) of the paint and select off a painted area as opposed to picking and ordering off a paint swatch. What is your favourite thing about Jozi? The Rosebank Revival The suburb to live, work, eat and play.
Once on the verge of a steady decline, Rosebank has been revived into a vibrant, multi-cultural, cosmopolitan suburb of Johannesburg. Whilst it has become a business hub for corporate head offices, the district also provides plenty of entertainment in the form of shopping malls, restaurants, markets, hotels, cinemas, art galleries and nightclubs making it a trendy residential area, business hub and tourist attraction.

osebank was part of the original farm known as Rosemill Orchards which was owned by a Mr Lorenco and was one of the first suburbs in Johannesburg to have trolley-bus transport. History repeated itself decades later as it was also one of the first Gautrain stations in modern history – making it a convenient location for those commuting to Pretoria and OR Tambo International Airport. From restaurants and coffee shops which spill on to sidewalks or rooftop venues with endless views, foodies are spoilt for choice. For those looking for cultural experiences, you’ll find art galleries, art deco architecture and a variety of art-house movies at Cinema Nouveau in Rosebank Mall. ou’ve survived the drive into Maboneng and, if you’re a typical Joburger, you worried for nothing and are 100% safe. As you arrive you’re welcomed by handsome gentlemen in black ties, offering a valet car service, which of course you accept because that only happens in NYC. As you enter this exclusive, secluded Jozi gem it feels as if you’ve stepped into a time machine, where everything is right in the world, where waiters wear bow ties and red velvet waistcoats. Now what you won’t believe is that this special haunt used to be an old parking lot. Not the hipster-cool, industrial style parking lot that you’re imaging, this was basically an old, broken-down space with nothing to offer. However, the geniuses behind this eatery changed the space into a 150-seater restaurant. A restaurant, where, from
breadsticks to bathrooms, everything looks, tastes and feels spectacular. Dining under the hippest light fixtures, with a cigar lounge and a bar made from ceiling panels from one of South Africa’s first ever mansions, this is where your every dream becomes a reality. It’s quite simple really, the Marabi Club has solidified an identity and is rich in culture and tradition. They’ve managed to anchor themselves in our minds and hearts with their unique mix of traditional South African plates alongside French and Belgium style dishes. Chef Vusi continuously changes the menu, and fortunately for him, there are no windows because we would surely be spying for a sneak peek if there were. There are 21 items on the menu to choose from (five being vegetarian dishes). The KGQ- deepfried quail with kimchi slaw, Japanese mayo and chimichurri and the oven fired broccoli
with wasabi and hazelnut butter are both destined to be devoured. Also, we have to mention the weird but wonderful miso carrot dessert served with a buttermilk sorbet. Keep an eye out for their soon to be launched mampoer cocktails and while the live music is playing till 12h30 am they serve wood burning pizzas from 10 pm. The kitchen doesn’t close, and you’ll be taken care of until the second you leave. There is also a Newmark Hotel above the restaurant called Hallmark House. What was originally used as a diamond polishing-centre in the 1970s, the prime establishment is now considered to be a Maboneng must-visit. n 17 October 2018, Hello Joburg Magazine hosted local foodie influencers at the last #HelloRecommends event for the year. A group of 20-something bloggers flocked to Calisto’s Portuguese Restaurant in Bedford Centre for an evening for year endthemed foodie festivities – and you can bet it was an evening to remember! Over the decades, Calisto’s has built up a reputation for serving up the most lip-smacking Portuguese food in Jozi, from the tastiest piri-piri chicken to prawns that are served by the kilo (hmm, hmm!). We wanted our guests to enjoy a full Calisto’s experience, so they were treated to a three-course à la carte meal paired with handpicked wines. On arrival, guests sipped infused gin-and-tonics and other cool concoctions off the cocktail menu. They then took a seat at our long, intimate table and Omesh Misra, owner of Calisto’s Bedford Centre, came over to give everyone a bit of background on the Calisto’s brand and the Bedford Centre restaurant. Owner Omesh’s passion for fine food is contagious and definitely got everyone starry-eyed for the time they’d all been waiting for – food, glorious food! For starters, guests tucked into dishes including fried squid heads, mussels in a white wine sauce,

French snails, spicy deep-fried chicken wings and Atlantic oysters. For mains, we saw all types of different dishes come out of the kitchen – fillet trinchado in a creamy Madeira sauce, Madagascan steak adorned with a luxurious green pepper sauce, Calisto’s’ signature seafood rice, lobster thermidor in a sauce of mushrooms, cream and shrimp, Mozambican style curry with medium prawns, coconut milk and masala, and many, many more. Amongst our guests, the standouts included the classics, being the steaks and the prawns. The star of the show was hands-down the seafood platter – a lusty spread of calamari, prawns, hake and mussels with rice or chips, served sizzling hot and cooked to perfection. By the time everyone had scoffed down their mains, the wine was flowing, and the festivities were in full force – but that didn’t mean that our guests were going to forget about dessert. The evening ended on a sweet note with sweet treats like chocolate mousse, cheesecake, an ice cream trio, peppermint tart and mixed fruit sorbet. The firm favourite at the table was the frozen biscuit cake though – decadent layers of cake, chocolate, ice cream and cream – which everyone agreed was worth every last calorie! MARNUS SCHOLLY
He’s worked in the kitchens of luxury bush lodges and at big-name restaurants like Forum Homini’s Roots Restaurant. Now the head chef at Clico Restaurant in the heart of Rosebank, we decided to find out a little bit more about Marnus, from his favourite easy-drinking wines to the kitchen gadget he can’t live without.
Marnus went on to spend a year at Hotel Izulu before moving out of town and taking up a post at Singita in the Kruger Park. Here, he spent much of his time working alongside some of South Africa’s most dynamic chefs and thrived under the guidance of the executive chef who he says had so much passion it was contagious. After a three-year stint at Singita, Marnus and his wife left the bush to move back to Joburg and he re-joined Roots Restaurant. While working under the watchful eye of his chef role model, Adriaan Maree, Marnus’s whole concept of food and flavour evolved. “I was amazed by the

flavour, detail and precision that Adriaan could bring to a plate,” he says. After just four months at Roots Restaurant, Marnus was again coerced to move out of town and back to the bush with an irresistible offer to be head chef of Savannah Private Game Reserve in Sabi Sands. He says that working there taught him a lot about what it meant to be a true chef, going back to basics and being humble. After three years, Marnus was given the opportunity to be sous chef at Clico Restaurant at Clico Boutique Hotel. “I saw this as an excellent opportunity to propel my career,” he says. Just 11 months later, Marnus was promoted to head chef and now runs the kitchen with his sous chef, Neo. “We have a lot of fun developing new dishes and refining existing ones.” Marnus’s cooking style is inspired by greats like Raymond Blanc, Marco Pierre White and Michelle Roux Junior, as well as local chefs, Adriaan Maree and Bertus Basson. His favourite cuisine is South African with French discipline, with his signature dish being braised pork belly with parsnip, mustard and honey puree served with a
pork and rosemary jus. “I like to stick to my roots,” he says. As for his favourite kitchen gadget? Marnus says the one thing you always need on hand is a good-quality sharp knife. Describing wine as ‘the soul of many good conversations’, Marnus says it is unfair to make him pick just one favourite. He has a few – Catherine Marshall Peter’s Vision 2015, Mulderbosch Cabernet Franc 2015, Rijks Pinotage Private Cellar 2012, Vondeling Chenin Blanc, Spider Pig Pinot Noir and the list goes on. When he’s not in the kitchen, Marnus is kicking back at home or enjoying some time out at an outdoor market like the Neighbourgoods Market or Market on Main. An Honest Review… DOUGLAS + HALE

Lerato's CORNER James Diack is synonymous with fine food and wine, so when the Coobs chef and wine-lover announced that he was transforming his Parktown North eatery, The National, into a brand-new wine and cocktail bar concept called Douglas + Hale, I couldn’t wait to go and give it a try. I snatched a booking for a Saturday afternoon lunch for two at Douglas + Hale a few weeks after it opened its doors in late September. The location of the eatery is spot on – tucked away on a quiet side street off 7th Avenue, it is just the place for al fresco dining – whether with that someone special for a romantic dinner or a group of friends for a social lunch. Upon arriving, my lunch date and I grabbed a table outside on the beautiful deck that’s kitted out with dark wooden tables, funky light fixtures and pot plants galore. To kick-start our weekend lunch, we each ordered an Aperol Spritz, which we couldn’t fault. (PS: all the cocktails are served with glass straws as an eco-friendly alternative to plastic straws – I love that!) We didn’t order any wine, but it’s worth mentioning that this spot has a truly remarkable wine list, with bottles ranging from just R100 all the way up to thousands of Rands. Deciding what to eat was a tough decision. While the menu doesn’t have The National’s famous wild boar mac ‘n cheese, it has loads of other options ranging from bitsy tapas-style options to main meals like burgers, spicy fried chicken and lamb sausage tagliatelle. In other words, it’s still comfort food central! I decided to opt for something different – a crispy tofu and glass noodle bowl with coconut broth – while my friend went with a chicken and spring onion sandwich with hand-cut fries off the lunch menu. Our dishes both arrived swiftly and although mine looked tantalising and oh-socolourful, it was a big disappointment. I was expecting something amazingly flavourful but found the dish to be very bland with little to no Asian flavour profiles. To add to that, the fried tofu was – I hate to say it – soggy instead of crispy, so I didn’t end up eating more than a piece or two. As for the sandwich, it was served on gorgeously fresh ciabatta bread and was seriously tasty however, the portion was almost embarrassingly small. For R75, you’d expect more than two tiny ciabatta slices sandwiched together. The food definitely left a lot to be desired. While Douglas + Hale has an incredible setting – one that really makes you feel like you’re somewhere in Europe on a hot summer’s day – and serves up absurdly good cocktails, I found the food overrated so perhaps when I visit again (I’m bound to as it’s already emerged as a neighbourhood favourite in The Parks) I’ll skip the eats or stick to dishes that James Diack’s restaurants are known for.

Not only is this one of the funkiest locations of 2018 but they also offer live music on a Sunday. So, while basking in the Parks snooty sunshine with a good old Guinness, be prepared to be wowed.

While on the hunt for a hotspot, The Foundry wasn’t on our radar as we weren’t madly impressed with their previous food offering. But of course, we are greedy to be in the know and so we gave them another shot and boy were we blown away. We loved our meal so much so that we visited again twice, the following week. So, here’s why we dig it. The menu has a great variety of options from bites to small plates, grains and greens, burgers, pizzas and sharing boards too. It’s not overly complicated and they haven’t tried to be everything for everyone. Also, they serve a mussel pot, I mean that’s reason enough to visit. Fresh Belgian style mussels with a slice of toasted ciabatta, salivating yet? Well how about this melt in your mouth moment; their new buttermilk fried chicken burger. Not just ordinary style fried chicken, oh no! This chicken is smothered in panko crumbs and buttermilk served with tangy slaw, naartjie dressing, pickles and a maple, mustard mayo drizzle. Mmmmmmm. Veggies rejoice because there are ten items on the menu for you to choose from, we recommend opting for the Rainbow Bowl, it’s a vegan bowl of virtuousness. Besides the black rice and chimichurri avo, they also add sesame tofu, roasted sweet potato and superfood veggies. Healthy sure but absolutely delicious too! The three deadly bar sins

We go out and drink a lot in order to write articles on what you should order when you go out. And for that, you’re welcome! But this month we have the inside scoop from the other side of the bar counter. A recent chit-chat to some of our local bar friends shed light on what not to order and what not to do at a bar. So, here’s how to avoid being ignored by a grumpy tapster. Surprise me You’re a grown up. For beer sake, when you order a drink at a bar, know what you want to order. This is not your mom asking what you want for your birthday. Nothing annoys a bartender more than the person who says “surprise me” when the crowd from the hen party behind you are shouting for tequilas. Even worse is when they do serve a drink of their choice and you decide it’s too sweet or too strong. In the same vein, if you don’t know it, don’t order it. It is highly annoying when you are shouting above the music trying to describe this amazing drink you once had as the bartender rolls their eyes in frustration. So, if your order goes along the lines of…. I think it has (insert alcohol) and tastes like (insert adjective), rather opt for something you are familiar with. No more Mojito! Most bartenders cringe when you order a Mojito – especially after 11 pm when the bar is packed, and the crowd is thirsty. Not only is it a time-consuming drink to make but it’s also wrist intensive with the muddling
of the mint and a good shake at the end. It also leaves your hands all sticky, requiring a wash before the next order. #annoying! People who order Mojitos are also likely to order a few because they’re refreshing and easy to drink – so the bartender knows they’re in for some extensive handy work. Don’t be surprised if after your first order, the bartender ignores you for the rest of the evening or passes you on to someone else. Hell no H20 Come on, you’re in a bar after all! Haven’t you seen the movie Coyote Ugly? Ordering water in a bar is really no good for your street cred either. And believe us when we tell you that nothing annoys a bartender quite like the person camping at the bar, taking up space for other customers and ordering tap water without tipping. If, however, you are a drinking, paying customer taking a quick water break, different story – that can be tolerated. If not, maybe go order a milkshake at the Milky Lane. Other things that annoy bartenders Don’t poke the bear: reaching across the bar to touch the bartender is not a good way to get their attention. It’s creepy and irritating. Beware of the whistle: Shouting or whistling to get a bartender’s attention is tacky. If you are waiting at the bar with cash in hand, the bartender knows what you want and will get to you when they can. One by one: A good bartender knows the drill and has an optimal workflow. They want to get your order and get rid of you. Don’t order a drink, wait for it and then order another one. It’s frustrating for the bartender and the crowd alongside you waiting to order as well. Julian Short has been topping the social scene recently with his delicious cocktails and trendy Instagram page. As the mixologist and bar manager of the speakeasy-style cocktail bar Sin + Tax, we just had to catch up with him for our December poison of the month! After all, it’s the season for celebration so why not celebrate with some killer drinks in hand! “My poison of choice right now has to definitely be Vermouth. What is vermouth? Technically, vermouth isn’t a spirit but a fortified wine - a flavoured, aromatized wine that’s had its ABV boosted with some kind of neutral alcohol and has been flavoured with a variety of herbs, botanicals, and spices. Why? Well, besides the fact that it's super tasty and delicious, it's also low ABV, which is perfect for long happy summer days spent day drinking in the sun. There are many different styles of vermouth, most notably sweet and dry. Although vermouth is one of the most widely used classic cocktail ingredients of all time, it has lost some of its popularity with the younger generation, which is sad, but I would like to change that. I have put together three simple, fun and a rather palatable summer style cocktails using my favourite South African vermouth, Caperitif.ˮ

This tasty tipple was designed for the current seasonal menu at Sin+Tax (love, spring) and is wonderfully refreshing. You may need to do some prep before you invite your friends over for brunch.
This is a lovely twist on the classic G+T and my absolute favourite Sunday brunch cocktail, perfect for all-day day drinking.
I designed this simple, stirred-down cocktail one early morning after a pretty long and exhausting 20-hour shift at the bar. Best enjoyed with laughter and good company.
(Single serving) 40ml Dill infused Blanco Tequila (I recommend Altos Plata) - (take 5 strands of dill and steep them in the tequila for at least 24 hours) 20ml Honey Water* (equal parts honey to water 1:1) 20ml Sugar Snap pea infused Caperitif (bruise a small handful of sugar snaps and steep them in caperitif in your fridge for at least 24 hours) 30ml Fresh Melon Juice (freshly pressed Green spanspek is my favourite) 1 egg white (optional)
50ml Caperitif 200ml Tonic Water (I recommend Chinchona Grapefruit Tonic) Garnish this drink with 1 salty caper and a long orange zest. (the caper for the saltiness and for the pun)
If you find this drink a tad too dry or strong, please feel free to add a splash of tonic, lemonade or sparkling water. Method: Place all the ingredients into your favourite tumbler with solid cubed ice and stir for 15 seconds. those were the days. Today is a different story. Getting us to part with our devices is often time a painful and anxiety provoking request. From bold signs to stern voice-over narrators asking patrons to refrain from flash photography and requesting you turn your phone off, you’d swear people were being asked to make life-threatening choices. In most cases, the majority of the audience complies and at least turns their phone on silent. But often there’s that one cowboy who doesn’t. Don’t be that guy! #justsaying Dress Code Some people still dress up in their best gear for a show and that’s cool but today people are a little more relaxed and toned down when it comes to dress code. Anything goes from a pants suit and blazer to a little cocktail number. We only have one disclaimer. With the advent of air conditioning, courtesy of Willis Carrier in New York in 1902, in almost all local theatres, bringing something warm to wrap over your shoulders is most certainly advised. Having said that, if ever in doubt, we always think it’s safer to be over-dressed than underdressed. Smart casual always works. Silence is golden Your grandparents have probably told you that back in their day, those who attended the theatre did so with a certain amount of pomp and ceremony. And more importantly, they behaved well. Due to sugary drinks, alcohol and a general degeneration in discipline, today’s theatregoers are often a lot less considerate to their theatre neighbours. Talking to your friends, singing over the artists, muttering to yourself about the poor performance or heckling actors on stage is never a good idea and is a sure way to get yourself glared at,
kicked out or banned. Like we said – don’t be that person! Interesting theatre facts • Modern Western theatre is largely inspired by the Greeks. • Ancient audiences stomped their feet to show appreciation. • The idiom “break a leg” is a popular way to say good luck to performers before a show. • Kabuki is a traditional Japanese form of performance that involves only men who will also play female roles. • And closer to home, the popular Market Theatre was opened in 1976 operating as an independent, non-racial theatre during the country's apartheid regime. • Internationally recognised, well known South African playwrights include, John Kani, Athol Fugard and John van de Ruit

It goes without saying that our throw-away society has a seriously detrimental effect on the environment and it’s up to individuals, companies and industries to start acting to effect change. Find an eco-friendly venue The first step in organising an eco-friendly conference is seeking out an environmentally conscious venue that has everything you need. A quick Google search will help you identify venues in your province that are sustainable and act ethically. If not, there are a few questions you can ask the venue to determine if it is sustainable, such as about its recycling processes and commitment to reducing waste. Make a normal venue an eco-friendly one If it turns out that the venue you would like to hire out is not sustainable, but you would still like to use it, there are small changes you can implement to ensure that your event is as eco-friendly as possible. A great starting point is to ditch singleuse plastic and think about how the venue can save energy. Another easy way is to simply opt for a venue that is centrally located for everyone, including delegates, speakers, suppliers and caterers, so that carbon footprints will be lower.

This may not be the norm at conferences but introducing it will drastically reduce your food waste and give delegates the option to enjoy more of your delicious food at home – it is a win-win. In addition, try to manage your guest list as best you can so that you get accurate numbers for your event and do not over-cater. And it as simple as that! South Africa’s most versatile venue
The Johannesburg Expo Centre pulled no punches in 2018 with yet another calendar of successful events. If 2018 was anything to go by, there is a lot to look forward to in 2019.

t has been an exceptionally busy year for us and a great year for the industry too” says JEC CEO Craig Newman. “To have a calendar that is packed with events throughout the year speaks volumes to the extensive experience and capacity of the South African meetings, incentives, conferences and exhibitions industry (MICE)” There were many highlights from the last year, The Rand Show and Electra Mining to name just two. This year’s Rand Show numbers spoke for themselves. With approximately R50 million injected into the Gauteng economy, over 900 part-time personnel hired and more than 200 000 people who attended the show, the positive impact to the country is evident. And those are just some of the statistics off the back of only one of the many events hosted at our venue each year. These are the golden nuggets that make the work we do so satisfying. We’re changing lives, one event at a time.” A quick snapshot of the Electra Mining Africa 2018 Exhibition is further testament to an excellent year. The event, held every two years at The Johannesburg Expo Centre tells the story of an industry aggressively on the march taking major technological strides with no
intention to slow down. There were thousands of visitors who attended this year’s show over the five days to see the latest innovations across mining, industrial, electrical, power, transport and related industries. With over 20 000 parking bays and over 150 000 m² of space, the JEC’s indoor and outdoor multi-purpose facilities were more than equipped to handle the volume of people attending the show and facilitate the large scale, often customized exhibitor stands. So what can you look forward to in 2019? The JEC has yet another impressive lineup of events planned. One of the most renowned Electronic Dance Music (EDM) Festivals in the world, Ultra SA returns in March 2019. Next year will mark the Ultra SA Music Festival’s sixth anniversary in South Africa bringing with it the world’s top EDM DJ’s with unparalleled stage designs and top-tier productions to more than 40 000 South African EDM fans. Next year’s Rand Show in April 2019 is particularly significant as it marks the 125th installment of the family event. Without giving away all the secrets, event goers can expect the biggest and most interactive event to date with all the old favourites as well as some new and exciting elements for the entire family. And in June 2019, Heinekein will paint the JEC green as they host Sonic State with a talented music line up and screening of the UCL Final. All that’s left is getting your table ready for the biggest meal of the year! We hate to be the bearer of bad news but, leftover confetti and paper Christmas crowns just won’t cut it anymore. But, fear not! We’ve rounded up some of our top tips for making this years’ feast a memorable one!

planning. It helps to find some inspiration and look for creative and unique ideas. Pinterest is a great place to start. Create a festive board and pin anything and everything that gets your creative juices flowing. 2.DECIDE ON A THEME Incorporate a specific colour scheme, pattern or texture. Deciding on a common element to carry throughout your décor will make the table look more refined and extra special. Start with a neutral base like a crisp white tablecloth and then add pops of your chosen colours. If you’ve chosen something like stars as a theme you could then bring in this element with your napkins, confetti and placeholders. You could also opt for organic décor which has been a huge trend this year. Pine cones, green foliage and mistletoe would all work well for this. Keep your theme simple and work with only a handful of elements to avoid a cluttered look. 3.CREATE A UNIQUE CENTREPIECE Now that you’ve got your theme down its time to get creative. Your centrepiece should be eye-catching and should incorporate your own unique flair. When creating your centrepiece take into consideration the size of your table, you don’t want it to be too big and have to squash it in but, you don’t want it to be too small and disappear amongst your place settings either. Wreaths, flowers and candles all work great here.
4.ADD A PERSONAL TOUCH Handwritten menus or personalized place settings will definitely make your guests feel welcomed and special. You could simply just include a card for each guest letting them know why you appreciate them or opt for personalised crackers which are also a great idea and can be so much fun! Whatever you decide to do just remember small gestures go a long way in making your celebration a memorable one. 5.INVOLVE THE FAMILY AND HAVE FUN Setting up the table can be a fun activity for the whole family. Get the kids to help out with small crafts and decorations, after all, the festive season is about spending time with your loved ones so be sure to make every task as fun and inclusive as possible.
