The magazine you are reading will be my final issue as Editor of Hello Joburg magazine. Gosh… it’s been a heck of a ride, that’s for sure. One, I hope, you’ve all enjoyed taking with me. But now it’s time to bid you farewell as I embark on my own new and exciting journey. Don’t fret… this issue is still packed with all the goodies you’ve come to expect from Hello Joburg. Our Restaurant of the Month is a little piece of Italian heaven, and it doesn’t stop there! We visited Hello Tomato and golly, what a delight! You’ve got to try their Frozen Custard dessert for yourselves to see that we’re not being overdramatic here. A
true inner-city escape - the exterior of the Sandton Sun building belies the jewel that lies inside. From lush décor and furnishings to exquisite service and tasty meals, not to mention the views, the Sandton Sun certainly has it all! Our first stop for the evening was to pay a visit to the spa, which was certainly not long enough, and everyone was treated to the most relaxing hand massages, the perfect way to unwind after a busy and stressful day. Next, we headed up in the lifts to the very top floor of the hotel where the doors of the Presidential suite swung open to reveal the stuff that dreams are made of. We wouldn’t dare to hazard a guess as to the price per night, but we certainly enjoyed this once in a life time experience and the tour was filled with the ooh’s and aah’s of amazement from our guests. After wine, canapes and of course, selfies, we headed down

to the San Deck restaurant – our last destination for the evening. The private dining area was decked out beautifully for our group, who got to meet Chef Gerard Vingerling who manages the Sandton Mile hotels with grace and aplomb. From starters to desserts the food was nothing short of amazing, and we also managed to get in a quick chat with Chef Gerard too. A night of delicious food, exquisite food and great company! How do you feel about the internet in the wellness industry? The internet is a fantastic platform, and that includes social media. So many people are embarrassed about their weight, for example, and would much rather consult via the net. I’m also able to reach so many more people because of the internet; people that need assistance and information surrounding wellness and health. What’s the strangest thing you’ve been asked in business? Being in the baking industry, you won’t believe the requests we get. Cake with no flour, eggs and sugar. But we specialize in this, so I always make a plan. Just call me the Olivia, Pope of Baking! What are your goals for 2018? My passion is Women Empowerment, and with that I have a couple of amazing projects lined up for 2018. On the agenda is a national roll out for Touch Cookies; an exciting workshop where we chat with women about self-esteem, self-defense, health and wellness… all the tools we as women need to empower ourselves in an otherwise cruel society. I’ll also be working on The Candice Robbertze Foundation - with this organization we assist numerous other charities in need. We’ve just been approved by the 3rd largest organisation in the world, so it’s going to be huge for us. We’re officially one of the largest health bakeries in SA! Arnold Sports Festival back at
Sandton
Convention Centre We just love Sandton Convention Centre - from the feeling of grandeur you get stepping up to the enormous entrance through to the lattice work of escalators that can be seen through the domed glass windows. But of course, what interests us most is what is going on inside! May sees the return of the largest sports festival of its kind - the Arnold Sport Festival and we can't wait to check it out!
T
his year for the first time, the festival will extend onto Alice Lane which runs behind Sandton Convention Centre and will be closed off for the festival weekend to accommodate various sporting activities. Included in the new codes are exciting sports such as beach tennis, ice hockey, e-sports multiplayer video game competitions, speed cubing, and many more. Shaun Bird, GM of SCC, says, “Hosting this vibrant and huge sports festival annually is a highlight on our event calendar and a challenge that we thrive on. Every single space in our 22 000 square metre venue is used effectively – every floor, room, and loading bay – to accommodate the over 15 000 athletes who participate, the upward of 62 000 visitors and spectators, as well as the exhibition showcasing a range of sports and fitness products from about 250 exhibitors.” Says Wayne Price, organiser and shareholder of the Arnold festival in South Africa with his wife, Michelle, and president of the SA Body Building Federation, “We have been delighted with the growing success of the Arnold festivals held at Sandton Convention Centre for the past two years – we could not have asked for a better-suited venue.”

Serves: 1 - 2 Prep time: 10 minutes Cooking time: 10 minutes Method In the Airfyer basket place 3 frozen Fry’s Chickpea and Roasted Butternut Balls and 3 frozen Fry’s
Chickpea and Quinoa Falafels side by side, with a bit of room in between each ball. Air fry for 10 minutes at 180°C, or until crispy on the outside and the Butternut Balls have become golden. If you don’t have an Airfryer, simply cook according to the packaging instructions. To make vegan mayonnaise Add 1 heaped tbsp of cooked chickpeas (from a tin works well), 20ml of white balsamic vinegar, the juice of 1 lemon, 1 heaped
tsp mustard, 1 tsp xylitol and seasoning into the jug of a handheld blender. Add half an avocado (if serving all the mayonnaise within an hour or two), if using. Blitz until thick and creamy. With the head of the blender still in the jug, start pouring 150ml oil mix (grapeseed oil, avocado oil, olive oil and coconut oil) in while lifting it up and down until the oil emulsifies with the rest of the ingredients. Taste and adjust seasoning. Layer the salad ingredients in
a glass jar. Layer 20g baby butter lettuce and 20g baby rocket leaves first, then 100ml of blanched corn, followed by 100ml of blanched peas. Then add the Butternut Balls and the Falafels, and finally, layer 2 Peppadews®, finely sliced. She’s all about delicious low carb, vegan, vegetarian, comfort food and mouthwatering bakes. Serves: 2 Prep time: 10 minutes Cooking time: 30 minutes Method • In a saucepan add 1/2 cup cracked freekeh, cover with 1.5 cups water and add a pinch of salt. • Bring to a boil then reduce heat and allow to simmer for 15 minutes, until the grains have absorbed the water and then set aside. • In a small oven safe dish, arrange 200grams of Rosa or cherry tomatoes (you can slice them in half or leave whole), drizzle with 5ml of olive oil and 30ml of balsamic vinegar, and add one sprig of fresh rosemary. • Roast in a hot oven at 180 degrees Celsius, until blistered and set aside. • In the meantime, place 1/2 cup of chickpeas (you can pat them dry with a kitchen towel) and 1/2 cup of sunflower seeds in a small saucepan over medium heat and allow to toast for 5 minutes. • Assemble your salad by mixing the cooked freekeh with the roasted tomatoes (the liquids left behind too), chickpeas, sunflower seeds and add a few pickled onions (or add a spoonful of kimchi). SUPERFOOD SALAD Veggie Noodle Bowl – Everyone loves Jacksons Real Food Market, so of course we had to get a recipe from them. And all the ingredients can be found in one of their spectacular stores. Method • Prepare 75gram of gluten free noodles as per the packet instructions. • Place the noodles, 40grams of carrot sticks, 5 grams of finely chopped spring onion, 30grams of sliced cucumber, 62grams of shredded cabbage and 5grams of finely chopped fresh mint and 5grams of finely chopped fresh basil in a mixing bowl. • Add the herbs, 2grams of crushed garlic, 5grams of fresh chili, 100grams of chickpeas and 15ml of gluten free soy sauce. • Toss the salad to cover ingredients with sauce. • Top with 14grams of mixed seeds and garnish with edible flowers. 5 www.jacksonsrealfoodmarket.co.za U @jacksonsrfm @jacksons_real_food_market f @jacksonswholefoodsmarket
GOLDEN VEGETABLE SOUP WITH PESTO AND SEEDS Recipe developer, food stylist and food photographer Dianne Bibby, from Bibby’s Kitchen, is warming our soul with this hearty soup recipe… Serves: 10 Prep time: 10 minutes Cooking time: 45 minutes Method • Heat 2 tablespoons olive oil and sauté 1 diced onion until soft. Stir in 1 minced garlic clove and cook for another minute. • To the onions, add 2 diced leeks, 3 diced stems of celery, 2 peeled carrots and sauté for 5 minutes. Add 500g butternut chunks, 2 peeled orange sweet potatoes, 3 medium zucchinis’, half a head of broccoli and half a head of cauliflower, 800g tinned chopped tomatoes, 1 teaspoon of oregano, 1 de-stalked and chopped stem of fresh rosemary and ½ teaspoon of dried red chilli flakes. Season with salt and pepper. • Pour in 1.75 litres of vegetable stock, cover partially with a lid and simmer for 40 minutes or until the vegetables are tender. • Transfer to a blender and blitz until smooth. • Return the soup to the pot and add 1 cup of milk. • Heat through. OMAR
KOENAN Head Chef at AtholPlace Hotel and Villa Age is just a number, so don’t be fooled by Chef Omar Koenan’s youth – in his 25 years he’s accomplished several things that would make a seasoned (excuse the pun) chef green with envy.
He started in the restaurant industry at the tender age of fifteen. Two years later, when it was time to choose a career path it was the culinary road that intrigued him. His mother took him to the local culinary school, and as the doors swung open Omar was intrigued with the students in their uniforms and all the shiny equipment. During his studies the young chef got to work with some of the best in Holland, progressing quickly up the ranks from pastry chef to a position in the kitchen of a 2-star Michelin restaurant – the third best in the country. It was a dream come true for Omar, but he soon realised what hard work the restaurant industry is – an average day in Michelin restaurants is from 8am to 1am, and that’s with no breaks! It was also here that he learnt about the amount of waste that happens in restaurant kitchens. Considering the expensive foods and ingredients they were serving, reducing the amount of ingredient wastage became very important to him. After five years of hard work, the 21-year-old

came to Cape Town on holiday, and in true Hollywood fashion, met a girl and fell in love. Fast forward a few years, trips back and forth and two small children later – and Omar moved to South Africa full time. It was at his residency as villa chef at Ellerman house that his flair for creating on the fly was realised. “This was an amazing experience; some days I was cooking five-course dinners, and others I was making pizza,’ he laughs. “It’s all about what the guests want and making what they love – this is the key to being a great private chef.” He moved on to the Queen Victoria Hotel, dabbled with starting his own restaurant and then received the call to come to join the team at AtholPlace Hotel and Villa.
Omar has only been here for two months, but in that time has reduced food cost wastage by 50% and supplied fresh inspiration to the kitchen team who are thriving under his leadership. “I want to crack the industry – I want to be in the Top 10 in South Africa. What’s more beautiful than making people happy with food? Making people forget their conversations and revel in the food is what it’s all about.” stresses Omar.

t may be tucked in a corner, but you can’t miss it – bright red with pops of green, Hello Tomato welcomes you with the scent of pizza dough, melted cheese and perfectly cooked pasta. The menu is a delight; each dish has a clever, punny name (which we loved!), and offers diners delish pizza’s, steaming pasta’s and pasta bakes and even some ‘fowl play’… To start, we jumped into the Club Med Strips; chicken strips coated in crisp breadcrumbs, parmesan cheese and oreganum, served with a heavenly Napoletana dipping sauce. Soft inside, crisp outside and that sauce – a revelation! After that, we were only too ready to sink our teeth into a pizza. We opted for the Fab pizza with a healthy Banting cauliflower base. Cooked to perfection, the base
was crisp and firm; an ideal plate for the divine toppings of Feta, avocado and bacon. Being greedy, we also ordered a portion of classic meatballs in a mince and tomato sauce, served with penne – a dish that’s aptly named the Lady and the Tramp. The moon hit our eyes like big pizza pies, and it was amore! The meal was divine; the penne was ginormous and perfectly cooked, the meat tender and moreish. While the food will have you coming back again and again, it’s the service you’ll really appreciate. Everyone at Hello Tomato has a smile on their face and is more than happy to answer any questions you have about the food. Although, the only question you’ll be asking is ‘please sir, can I have some more?’

The Rock All Day Diner, Kyalami and Design Quarter is an evolution of the brand, with its namesake from the woodfire and coal rock grill, upon which many of the Mediterranean meals are prepared. The chicken Excalibur, dramatically served on a sword, is one of Chris’ signature dishes at The Rock. With consistency

We recently went exploring in Dainfern Square Shopping Centre and were excited to discover 011 Dainfern by The Baron. Now, when one thinks of The Baron, you think huge, busy, packed with families and kids and although 011 Dainfern is part of the Baron group – this is something totally different.
T
ake a name you can trust and compress it in size, add some epic décor, an extensive wine and gin list and a whole bunch of pizazz and you have 011 Dainfern. Toting themselves as a Gin Bar and Restaurant, 011 Dainfern is the place to be for lunch (it was busy on the Wednesday that we visited) and Friday nights see an inhouse DJ playing lively beats for the after-work drinks crowd. We loved the bar that is certainly the focal point of the restaurant and is presided over by a giant train station clock, complete with brass pipes, alluding to the front of a railway train – in fact the entire restaurant carries a 1930’s train station theme, slick and polished and more formal and edgier than The Baron – but still carrying that stamp of trusted quality that we all know and love. They have been open since September 2016 and are growing in leaps and bounds. In fact, they are proud of the fact that they are constantly evolving and changing as they go. Their initial wine list had only 20 wines on it – now it is exponentially bigger as they grow. They also have a wide variety of local beers on tap – including many craft and artisanal varieties that we love. The food menu still carries your favourite steaks and grills but add to that delicious open sandwiches and salads and their ladies lunch specials is great – a salad and a glass of wine for R 80 – what more do you need!? We tried the Grilled Salmon with Enoki mushrooms, roast potato squares and a pea purée, as well as the Bacon and Chorizo Pasta and the Quesadilla – all were delicious and good portion sizes. We also really love that if you are not in the mood for a heavy/filling meal – especially if you are having a business lunch and still need to go back to the office, there are lighter options available. 011 Dainfern is open for lunch and dinner (and anything in-between), seven days a week. Whether you are looking for a quick cocktail or an elaborately garnished Gin, this is the place to be. No bog-standard G&T’s here, Hello Joburgers! These babies come in wine goblets, beautifully presented and accompanied by fresh fruits and herbs that match the botanicals of the gins they are created with. This is literally the “theatre of restaurants” and we were duly entertained! peaks, witness the happiest Impala and Zebra in all of South Africa. Along your hike, you can also enjoy the marvellous bird life including six species of hawks and breeding nests of the black eagle. The hikes are challenging but rewarding, and the view is worth every gruelling step. Following the grand trek, make sure you demand a loaf of their home-style farm fresh baked bread and have a dip in the pool or a picnic in the gardens. If you’re staying the night, build a braai and a fire outside and listen to the tooting of the owls. P.S. Rustig will be revamping their kitchen and restaurant and they’ve hired a brand-new chef, so expect to be wowed. This should be completed in the next few months but for now it is a self-catering facility. They are closed on Mondays.

You were born and raised in Cape Town. Stroke our ego and tell us three things you love about being a part of the Jozi scene. So far, it’s the pace within the work scene as people are very driven and ambitious in Joburg and produce results rapidly. I also love the passion, extravagance and love put into the restaurants as I am quite the foodie. Thirdly, the property/ rent price is so affordable, you can live in a much bigger place for the same price compared to Cape Town. What has been the lowest point in your career? Some people making incorrect assumptions and being nasty for no reason. Another low was coming so close to an amazing

But I’m a firm believer that everything happens for a reason, so it really isn’t something that I think about anymore. How’s it been being a part of the Top Billing family? It has been life changing and incredibly fulfilling! I’m still grateful every day for all the opportunities, people I get to meet, the stories I get to hear, lessons I get to learn and places I get to see. What are some of the perks of the job? Being able to experience things I couldn’t before, and meeting and interviewing incredible
people. Three memorable interviews I did for Top Billing include Zikhona Sodlaka; she was the first person I ever interviewed and is someone I look up to. She was incredibly kind and helpful. Another highlight was Henry Cavill; Because I mean… he’s super man! He’s even more gorgeous and taller in person! Last but certainly not least, DJ Naves and DJ SPHEctacula; we had a ton of fun on our getaway shoot. Define beauty in three words… Kindness, heart and selflessness. A slice of pecan pie or a traditional malva pudding? Malva Pudding - nonalcoholic though, as it tastes way better!
