A play by Athol Fugard, John Kani and Winston Ntshona, a new production of the award-winning classic play Sizwe Banzi is Dead will premiere at the Market Theatre, before touring international stages in 2015. The creative collaboration between Athol Fugard, John Kani and Winston Ntshona produced South African classics in the early ’70s that dominated the theatre landscape locally and globally – with Sizwe Banzi is Dead and The Island being among their most revered works that continue to be reproduced around the world today. he fact is that the one thing that separates the authentic Italian from a doubtful Italian is passion and love. Forget planning and executing the perfect dish, what enhances the flavor and savors the essence of any meal is cooking with desire and That’s Amore. That’s Amore restaurant is a charming spot in Parktown North. Defined by character and a genuine personality the restaurant boasts a romantic ambience. Simple and quaint, warm and satisfying, they say first impressions last and my first impression was one of grace and culinary flair. The menu changes daily and is small. For starters I tried the Caprese salad with Buffalo Mozzarella. Not just any ordinary cheese, this cheese travelled all the way from Italy, unfrozen! That’s correct, the cheese flew thousands of kilometers one hundred percent in its freshest form and that is exactly how it was served on my plate. Highly impressive. Moving onto main course I opted for the Spaghetti E Vongole packed with imported clams, garlic and parsley served on a cradle of homemade spaghetti. Moreish, especially beside a glass of Italian imported vino. And the grand finale had to be the Babba Alla Crema Pasticcera. This being a traditional Neapolitan sponge cake, soaked in rum-flavored syrup and served with a homemade Italian custard cream. I could have possibly had a second helping. Perhaps even a third. I welcome That’s Amore with open arms. The location provides a cozy and pleasurable atmosphere whilst the restaurant delivers in pizzazz. he arrival of Codfather Sandton Skye, heralds the beginning of the succulent summer seafood season. With oohs of surprise and aahs of delight, the Codfather Sandton Skye is an appealing addition to Joburg. The appeal is a beautiful, modern design with a touch of sophistication and contemporary glamour. The restaurant is comfortable yet consistent, casual yet fresh. If it is elegance you are after, the Codfather Sandton Skye delivers exactly that. On a first visit to the restaurant, we feasted on simply, some of the best seafood in Jozi. Available are a large variety of fish, local line fish, game fish and shellfish. The king prawns and langoustines are tasty and tender. The Kabeljou is grilled to perfection as are the Calamari tubes, infused with impeccable spicing and seasoning. The flavour combinations of the seared Tuna with bokchoi
are on point whilst the seared Salmon is served fresh daily and is packed with zest. The seafood is prepared beautifully and simply, the focus is on the fish and the natural flavors of the fish, which shine through. If you are more of a carnivore, the fillet with Madagascan pepper sauce is heavenly and so are the faultless French-fries served on the side (and yes we would return… just for the fries). The secret behind the outstanding menu is flavourful food, garden-fresh ingredients and perfect wholesomeness. The sweetstemmed vegetables and crisp crunchy salads, which accompany the meals, are considered a delicacy themselves. It’s unpretentious cooking resulting in wonderful meals. Expect exceptional food and service! Now with it officially being summer season, our preferred part of the restaurant has to be the oyster bar. Indulgent, spectacular and
innovative. It is the hero of the restaurant and allows for a contented evening out with friends, sipping on champers, and spoiling in mouthwatering oysters. Another lovely addition to the restaurant is the pool deck/garden. Suitable for spring or summer, the outside location lends itself to sunshine filled days, drinking cocktails, nibbling on sushi and having a dip in the pool. chef of the month Chantel Dartnall, Executive Chef at Restaurant Mosaic at The Orient hotel speaks to us about her love of fish, her favourite meals to make and the importance of tasting everything you make. Q What have been some of the challenges working in a male-dominated industry? When I started out cooking, both the kitchens I worked in were exclusively run by men. I was actually the first woman that any of the two head chefs had ever had working in their kitchens. I think it was as much of a challenge for them to adapt to working with a woman in the kitchen as it was for me to establish myself as a worthy chef in their eyes. So, I played the role of the youngster that didn’t know much, so that they could teach me as much as possible. They felt that they had a young protégé on their hands to whom they could transfer their knowledge, and I must say that it really worked to my advantage. Nowadays, however, there are so many young and talented female chefs on the rise as well as world renowned Michelin Star Chefs, that I don’t think one would be able to call the industry ‘male dominated’ for much longer.

By Anina Meyer It is the season to celebrate, indulge and sparkle; and this recipe of Doughnut Bites with Chocolate Ganache is no exception. It is the ultimate Christmas morning treat for the family, and can be whipped up in no time. The batter for the doughnuts are ridiculously easy to make. Be sure to oil your hands before rolling them into balls. Simply deep fry these beauties, dunk them in castor sugar and serve it with dreamy chocolate ganache. Merry Christmas everyone! Ingredients: • 2 cups flour • ¼ cup melted • 2 teaspoons baking butter powder • vegetable oil for • ¼ cup sugar frying • a pinch of salt • castor sugar to • 1 egg coat • ¼ cup milk • 2 tablespoons • ¾ cup of full cream butter plain yogurt • 4 tablespoons milk • a dash of vanilla • 150 gr slab essence chocolate Method: • In a mixing bowl combine flour, baking powder, sugar and salt. Mix. • In another mixing bowl, whisk the egg and add the milk, yogurt and essence. Mix. • Add the wet ingredients to the dry ingredients and mix. Add the butter and mix until incorporated. Set aside. • Heat the oil in an deep saucepan until hot, oil your hands and roll small balls of dough. Deep fry them until golden brown. Drain and coat with castor sugar. • For the ganache, melt the butter, milk and chocolate over a double boiler until melted. Serve and enjoy. Makes 25 – 30 bites. Christmas and craft beer ‘Tis the season to get cooking! Rob Heyns shares his love of food and beer and the combination of them both in a delicious festive recipe.
R
ob Heyns, our resident craft beer guru from League of Beers, has been sharing his craft beer teachings with us. Rob takes us through some awesome recipes where craft beer steals the show and proves its versatility. The great thing about our sizzling hot South African Christmases is that they go so well with all of my favourite things: our national pastime (braaiing), being outdoors, and last but never least, a chilled brew. So, for fear of sounding more metro than I am, I have found another great way to enjoy craft beer (and no, not as a lotion... although that bears looking into). These recipes are so simple that even a beer geek like me can make them taste amazing. Whether you’re into traditional family meals or a simple Christmas braai on the beach, there’s something new for everyone here.
BEAST OF THE DEEP MUSSEL POT AND DEVIL’S PEAK BEER BREAD I just had to re-visit this old favourite by the guys at Beer Country. If seafood over Christmas time is your thing, this mussel pot is guaranteed to be a hit. And there’s bacon in it. What’s left to be said? As an alternative for the beer bread, you can also try a dark ale (maybe our Westvleteren Brewery Extra 8 Belgian Strong Ale) or a good stout (try our BrewDog Dog B stout) for great roasted flavours, but any craft beer works well with this recipe. The bread goes perfectly with a full-flavoured cheese like cheddar and a fruity chutney. Ingredients • 1 kg bag of sustainably farmed Blue Ocean Half Shell Mussels • Sea salt and freshly ground pepper • Oil • 1 large onion, finely chopped • 2 cloves of garlic, finely chopped • 1 handful of parsley, finely chopped • 1 handful of chives, finely chopped • 1 handful of spring onion, finely chopped • 1 bottle Beast of the Deep unfiltered lager,1 swig for you, the rest for the pot • 250ml fresh cream (double cream is even better) • 1 packet streaky bacon
Method 1 Fry the bacon in a non-stick pan slowly to get it nice and crispy – don’t rush it. Alternatively grill it in the oven on a roasting rack until crispy. Allow to cool, then chop roughly and set aside. 2 Heat a little oil in a medium potjie pot over the coals or a medium pot on the stove. 3 Fry onions until they start to get a bit of colour then add your garlic and fry for a couple of minutes. 4 Pour in the beer and bring to a boil. 5 Add the mussels and steam with a lid on for about 4–5 minutes. 6 Take off the heat and stir in the cream and all the greens. 7 Serve with generous amounts of bacon sprinkles and plenty of beer bread for mopping up. 8 Once the mussels are finished, drink the remaining beer cream sauce with a straw.
THE DEVIL’S PEAK BEER BREAD Makes one loaf or pan Ingredients • 3 cups of cake flour • 3 tsp of baking powder • 1 tsp of sea salt • ¼ cup light brown sugar • 1 Devil’s Peak Golden Ale – tropical, fruity flavours make epic bread •¼ cup melted butter (or more if you’re feeling generous) Method 1 Preheat the oven to 180°C. 2 Mix dry ingredients together, then pour in the ale and mix until combined. 3 Spread the sticky dough into a greased or baking paper-lined pan. 4 Pour the melted butter over the dough and pop it in the oven. 5 Bake for roughly 45 minutes. When the crust starts to turn golden, you’re just about done. If you really want to give it a golden tan then put the grill on for a couple of minutes, but keep an eye on it – it’ll burn quickly. 6 When you’re happy with the colour remove from your loaf tin from the oven and crack some sea salt over the top.

he inimitable, always-entertaining, highly-versatile and often-outspoken Steve Hofmeyr is on his way to Carnival City on Saturday, 6 December to promote his newest album Toeka 3. The artist, who recently celebrated 25 years in music, has just released the long-awaited third album in the successful Toeka series, reinforcing his place as one of the hardest working, critically and commercially-acclaimed South African artists. “Steve Hofmeyr has a massive following in our region and we are delighted to give his fans the chance to see him perform live on our stage. We might not have an ocean or spectacular mountains, but Joburg has excellent weather all year round and golfers, given the choice, would much rather play in bright sunshine than wind and rain. GEMS ON OUR DOORSTEP: Krugersdorp Observatory Irene Kyalami Wanderers Observatory may be the oldest golf course in Johannesburg but there is nothing “old” about their facilities or the course. They have an excellent clubhouse and modern bar. A great view on the 18th hole from the verandah and a core of members and staff that welcome visitors with open arms and mile long smiles. At Observatory golf club you T-off as strangers and finish your round as friends.
Playing Golf can be intimidating. It’s like learning to drive and then finding yourself on the same racetrack as Sebastian Vettel or Lewis Hamilton.
